Opimian’s Wine Consultant Jane Masters MW is a graduate of Bordeaux’s famous Institut d’Oenologie and was elected to the Institute of Masters of Wine in 1997.

Fluent in French and English, Jane is currently a member of the Council of the Institute of Masters of Wine, regularly speaks at industry seminars and is a Panel Chair for the International Wine Challenge.

Some of you may know that I have a particular penchant for Champagne. Indeed my nickname at university was Champagne Jane so I am always very pleased to have a good reason to taste and drink Champagne. I recently visited Gardet based in Chigny-Les-Roses in the Montagne de Reims region, renowned for its top vineyard sites for the black grapes that go into Champagne. Winemaker Stéphanie Sucheyre not only makes a fine range of Champagnes, but she makes them at a value that cannot be beaten. Another area dear to my heart is the South West of France and Cognac in particular. After university, my first job in France was in Cognac. Opimians have been shouting out for more brandies and so we are pleased to offer a new, wider selection of postprandials and aperitifs. Lamblin Fils has been producing wine for Opimian for nearly 40 years and was recently presented with the Founder’s Cup at an event held in Montreal. What better occasion to taste an old bottle of their Chablis Premier Cru, Mont de Milieu 1990 demonstrating the quality and longevity of these wines. Due to two short harvests, high demand, and having been undervalued for many years, prices in the Chablis region are on the up, but these wines still represent good value in the overall context. Also included in this cellar offering is a selection of Brazilian wines.

Vinícola Salton was the first winery to be established in Brazil in 1910. It remains familyowned and is run by the Salton family who emigrated from Italy. Their speciality is sparkling wine, but they also produce interesting still wines. The Rosés from Château de Sours, a selection of wines from the Southern Rhône, Paul Sapin’s Southern Hemisphere wines and blended Malt Scotch Whisky from Pràban na Linne add to a very special cellar offering.

Brazil

The Campanha vineyards are located in the extreme south of Brazil, close to the border with Uruguay. This region, though relatively new, has great quality potential.

Vinícola Salton Bento Gonçalves This is the very first Opimian offering of Brazilian wines. Based in Bento Gonçalves in the Serra Gaúcha, Salton is the largest producer of sparkling wines in Brazil. Established in 1910, it was the first winery in Brazil and is still family-owned. The Salton family emigrated from Italy and this has a most definite influence on the style of wines produced. The Serra Gaúcha is the mountainous region in the northeast end of the state of Rio Grande do Sul located at the southern tip of Brazil.

Salton Moscatel, Serra Gaúcha, Sparkling Wine Delicious and refreshing, the Muscat grapes were cultivated on stony clay soils, poor in organic matter and nutrients, in the mountainous Serra Gaúcha region at 750 metres in altitude. Reminiscent of Italian Asti Spumante, it has fresh grapey aromas, low alcohol at 7,5%, and perfectly balanced sweetness. It was fermented in airtight stainless steel tanks and is a good pairing with patisserie and any not overly sweet desserts.

Salton Intenso Brut, Malvasia, Serra Gaúcha, Sparkling Wine The Malvasia grape is planted throughout the Mediterranean. Vinícola Salton grows Malvasia at 600 metres on mountain soils, where infertile stony clays produce fresh, light sparkling wines similar to Italian Prosecco. After gentle pressing the juice was clarified and fermented at a low 12°C for a month, producing a very pale wine with delicate floral aromas. Soft and easy on the palate, it is youthful and has lemon citrus acidity.

Tasting the Salton Intenso Sparkling Traditional Method Brut, it is no wonder that Champagne houses such as Moët & Chandon were sniffing around Brazil in the early 70’s. Not only does it have the potential to produce quality fizz, but it is a huge market itself. As someone who loves Champagne, I am often disappointed by other Traditional Method wines. Outside the French Champagne region, wines produced in the same way must be labelled Traditional Method. Not so in this case. Produced from 70% Chardonnay and 30% Pinot Noir, the wine is quite golden in colour, showing an intense, mellow bouquet with toasty oak and hazelnuts, good complexity and depth on the palate.

The Campanha region is the driest region of the three cultivated by the Vinícola Salton. Large differences between day and night time temperatures allow the grapes to mature slowly. The Chardonnay vines are on deep, sandy, dry soils at 350 metres above sea level. It has all the hallmarks of a quality Chardonnay; intense white fleshy fruits, harmonious toasty oak and fresh lemon acidity. 20% of the blend was fermented and matured for six months in North American oak barrels with weekly “bâtonnage” to add extra succulence.

Salton Intenso Cabernet Franc, Campanha Gaúcha, 2012 It does not have the intense leafy flavours that are often apparent in Loire Cabernet Franc. This is more discrete with woodland fruits, and mellow flavours. The grapes were de-stemmed after picking and put straight into tank where they were fermented at below 25°C for two weeks.

Salton Intenso Merlot, Serra Gaúcha, 2010 This is a spicy style of Merlot with hints of tobacco and lavender. Merlot is considered to be the rising star of the Serra Gaúcha region where these grapes are grown due to its early cycle, allowing them to ripen before the onset of the rains. Cultivated at 700 metres, the grapes were hand-sorted prior to fermentation, fermented at low temperature with selected yeast and subsequently aged in French and American oak barrels. It is concentrated with nice ripe fruit, good weight and firm tannin on the finish.

Salton Intenso Merlot Tannat, Campanha Gaúcha, 2011 An equal blend of Merlot from Serra Gaúcha and Tannat from the Campanha region to the south, it has savoury, liquorice characteristics. Still showing youthful and lacking expression, it will improve with more time. All the grapes were hand-harvested into small boxes with the grape varieties fermented separately. The wine was aged for six months in French oak barrels.

2013 has been a challenging vintage for many, in Bordeaux as much as in any other region. It is a vintage which will separate the men from the boys; those that have the experience and put the effort into the vineyard and those that merely pay lip service. I was at Château de Sours in September. It was a beautiful sunny week with glorious sunshine during the day, but cold at night with high humidity. The previous week it had rained, the forecast was suggesting the rain would be back the following week, yet the grapes were not fully ripe to be picked. Proprietor Martin Krajewski and winemaker Valérie Valmy were in the vineyards daily checking acidity and sugar levels, everyone on standby to pick as fast as possible as soon as the grapes were ready.

Réserve de Sours Brut, Sparkling Rosé This Sparkling Rosé is produced from an equal blend of Merlot and Cabernet Sauvignon. Pale in colour, it has herbal and crushed raspberry fruit aromas. The grapes were picked in mid-August of 2011, and after primary fermentation in stainless steel tanks, the wine underwent a second fermentation in bottle, following the same method used to produce fine Champagne. It was subsequently aged on lees for 24 months, capturing all the bubbles and creating a fine mousse. Dry with lively, vivacious acidity and a lingering finish, it is perfect as an aperitif or served with sushi and other Asian dishes.

La Source du Château de Sours, AOC Bordeaux Rosé, 2012 Only tiny quantities of La Source du Château de Sours Rosé are produced each year from a special parcel selection of the best blocks. The Rosés produced at Château de Sours improve every year and La Source is currently one of the finest oaked Rosés in the world. The wine was fermented 30% in new oak barrels, 20% in one year old barrels and 50% in stainless steel resulting in a complex bouquet with notes of nutmeg, bananas and earthy fruits. Structured on the palate following nine months ageing on lees with regular “bâtonnage”, it has great depth and poise.

A late start to the growing season with budburst in April was followed by a cool spring. Erratic weather in June, with blisteringly hot days interspersed with cold wet days, caused growers to be vigilant at all times. In July temperatures soared, but the vines never truly caught up so harvest started late. Despite this, the Rosé tasted in tank had nice red fruit flavours with good acidity and balance. Produced from 70% Merlot and 30% Cabernet Franc, the grapes were machine-harvested as soon as they were ripe, gently pressed and fermented at low temperature.

Lamblin Fils Maligny-par-Chablis Lamblin Fils was recently awarded the Founder’s Cup by Opimian in recognition of the long-standing partnership between the family and Opimian. Lamblin Fils was one of the first producers to make wine for Opimian nearly 40 years ago. Michel Lamblin, his son Alexandre and their respective companions were in Montreal to receive the Founder’s Cup and to celebrate with Opimians. A great occasion and a good excuse for Kenneth Christie MW to dig out an old bottle of Lamblin’s Mont de Milieu, Chablis Premier Cru, 1990 which tasted superb! Prices in the region have been soaring through the roof. A combination of the wines having been undervalued for many years and two small crops in 2012 and 2013 has generated demand that is far outstripping supply.

Despite the increase, Chablis still represents some of the best value from Burgundy.

Petit Chablis, AOC, 2012 The Petit Chablis appellation lies in discrete plots scattered around the outskirts of the main Chablis appellation. Lamblin Fils sources grapes for its Petit Chablis at the rear of Maligny, and across the river Serein around Lignorelles, Beine and La Chapelle-Vaupelteigne.

The 2012 Petit Chablis has nice white peach blossom and nectarine aromas. A soft attack on the palate, it is honeyed, with good depth and weight; a real step up from the Bourgogne Blanc, structured with firm acidity and a long, mineral finish.

Chablis, AOC, 2012, Fleur d’Acacia The cuvée Fleur d’Acacia is produced with a more fruity style in mind for drinking relatively early. Elegant aromas of white blossom, jasmine and herbs are followed by a more mineral characteristic on the palate, with fresh green apples and honey flavours persisting. Acacia blossom is an aroma often used to describe Chablis wines. The vineyard plot in “haut Maligny”, used to produce this particular cuvée, is also surrounded by them, hence the name Fleur d’Acacia.

Chardonnay

The Chardonnay vines were planted over 40 years ago in the family’s home village of Maligny, a mere ten minute drive from the village of Chablis which gives the appellation its name. The age of these vines ensures wines with good fruit and weight, peachy flavours, and a succulent palate, although the nose was a little closed at the time of tasting. This is concentrated, showing the age of the vines. The lack of use of oak provides a true expression of the Chablis terroir.

Chablis, AOC, 2011, Élevé en fût de Chêne Lamblin Fils uses only second and third fill barrels to produce their barrel-fermented Chablis. The result is a wine where the oak is apparent as spice and coconut, but is not dominant. There is no mistaking the Chablis characteristic expressed in its honeyed flavour, good acidity and long, persistent finish. 70% of the blend was barrel-fermented and matured, then subsequently blended with non-oaked Chablis, creating a perfect balance.

Chablis Premier Cru, Vaillon, Premier Cru Contrôlée, 2011 The Premier Cru of Vaillon is on the south bank or rive gauche of the river Serein and is orientated to the north.

This exposition and the ensuing morning sun tend to create tighter more restrained mineral styles. The 2011 has a delicious minerality with limes, fresh green apples and marzipan. On the palate it is starting to express honey and spice, with good depth and the potential to develop.

Chablis Premier Cru, Mont de Milieu, Premier Cru Contrôlée, 2012 As one drives the short distance along the north bank of the river Serein, northwest from Chablis up to the family’s home village of Maligny, to the right are the gentle slopes of the Grand Crus and some Premier Crus vineyards of Chablis. Mont de Milieu lies on this side of the river and Michel Lamblin remembers planting the vineyard here with his grandfather when he was just 14 years old. The south-facing slopes on the north bank of the river benefit from its terroir and warm exposure to afternoon sunshine, creating concentrated wines with great potential for cellaring. These wines often require years before they really demonstrate their full potential. Kenneth Christie MW used the recent awarding of the Founder’s Cup to Lamblin Fils as a good reason to dig out a bottle of their 1990 Mont de Milieu.

Chablis Grand Cru, Vaudésir, Chablis Grand Cru Contrôlée, 2011 One of the finest terroirs in the region, Vaudésir sits on a slope facing directly south and down towards the river Serein. The full afternoon sunshine produces wines which are concentrated, rich and honeyed with the characteristic limey finish of great Chablis. In 2011, the harvest was very early and the large crop initially produced caused some concern that the wines may be diluted as a consequence.

This has really turned out not to be the case. The Vaudésir 2011 from Lamblin Fils is now showing good development with concentrated spice and apricot flavours. It will continue to mature for years to come.

Saint-Bris Sauvignon, AOC, 2012 The small Saint-Bris appellation lies 30 kilometres southwest of Maligny and is something of an oddity.

The 100 hectares of vineyards are located around the small town of Saint-Bris-le-Vineux roughly halfway between Paris and the Côte d’Or. Unlike any other wines in Burgundy, it is produced from Sauvignon Blanc and Sauvignon Gris, therefore closer in style to the Loire’s Sancerre or Pouilly-Fumé which lie an additional 100 kilometres southwest. The 2012 has elegant aromas of elderflowers and gooseberries. Light-bodied, it ends with a crisp floral note and would go wonderfully well with oysters.

Bourgogne Aligoté, AOC, 2012, Fruits d’Été The vast majority of white wines in Burgundy are made from the Chardonnay grape. The Aligoté variety can produce wines that are quite tart and neutral in flavour if not mastered correctly. The Lamblin Fils 2012 has subtle fruits on the nose with flavours of melons and fresh apples.

It can be served with a dash of Crème de Cassis fruit liqueur as is the tradition in the region. Named after a once mayor of Dijon, Félix Kir, he offered it to visiting dignitaries and delegations, thereby promoting two local products at once. They can be from a given area, or a blend of different provenances within, hence there are a wide range of styles. The grapes for the Lamblin Fils Bourgogne Chardonnay are sourced in the north around Saint-Bris-le-Vineux just 20 kilometres from Chablis and so have more in common in terms of style with northern Chablis vineyards than other areas of Burgundy.

Côte de Beaune-Villages, AOC, 2012 The grapes for this Côte de Beaune-Villages were cultivated around the villages of Sampigny-lès-Maranges, Cheilly-lès-Maranges and Dezize-lès-Maranges at the southern tip of the Côte d’Or. The wine is a pale ruby colour with aromas of cassis and herbs. Quite light in structure, it has a persistent flavour, good acidity and fine tannins; it is suitable for early enjoyment.

Aloxe-Corton, AOC, 2011 With a real step up in quality, the vibrantly garnet-coloured wine gives off scents of cedary spice, coconut and red fruits. The oak contributes a really spicy characteristic which complements fine red fruit and herbal flavours. With a velvety texture, good depth and a long finish, this is an elegant, classic style of Burgundy which is delicious now and will continue to develop for a number of years. The Aloxe-Corton vineyards lie at the foot of the Le Corton hill.

This isolated hill, capped with woods, rises from the plain at the northern end of the Côte de Beaune and serves as a marker as one moves into the Côte de Nuits.

Nuits-Saint-Georges, AOC, 2011 The Nuits-Saint-Georges 2011 requires a little more time and will continue to develop in bottle. While restrained, it has a complex bouquet with notes of red fruits, smoke, meat, spice and tarragon herbs. On the palate the tannins, while ripe, are somewhat firm and will soften over time.

The Côte de Nuits is red wine country. It is also the most northern area in Europe to produce great fine red wines. It is therefore vital that the Pinot Noir grapes are sheltered from frosts and exposed to the warm sun to allow them to ripen before the cold and damp of autumn sets in. The early vintage in 2011 produced fully mature grapes with concentrated wines matured in oak barrels.

Cassis de Dijon has become known around the world and was made popular by Félix Kir, mayor of Dijon, who served blanc-cassis to visiting dignitaries. It is made with the original blackcurrant variety known as Noir de Bourgogne which grows in fields surrounding the town of Dijon. This variety was used in the past due to its intensely aromatic $38.33 $230.00 flavour although it is little used by producers now due to its fragile nature and susceptibility to adverse weather conditions. The vine peach, as the name suggests, is commonly found in vineyards, particularly in Burgundy. Orange amber in colour, aromas of fresh peaches, peel and orchards jump out of the glass. Les Roches Bleues, IGP Pays des Maures, Blanc, 2013 The Massif des Maures forms part of the coastal ranges of Provence stretching from Cannes to Marseille. A succession of forested ridges and hills, which while only reaching 800 metres, the Maures is mountainous terrain.

Vines are cultivated on lower slopes of schist. Sauvignon Blanc grapes were harvested and left for a short time on skins prior to gentle pressing and fermentation. The wine is light and refreshing with zesty acidity.

Les Roches Bleues, IGP Pays des Maures, Rosé, 2013 This is a blend of the three traditional southern French varieties; 40% Cinsault, 30% Grenache, 30% Syrah.

The grapes were crushed and left for a very short time on their skins producing a wonderful pale pink colour.

Appealing peardrop fruit aromas are followed by a light palate with zingy acidity. This wine is made for early enjoyment.

Les Hauts de Ciane, IGP Pays des Alpilles, 2012 The Alpilles are a small range of mountains located about 20 kilometres south of Avignon, rising out of the Rhône Valley plain. The lower limestone slopes are planted with olive trees and almond trees among wild maquis or scrub.

Vines are sited on stony limestone clay soils. Produced from 100% Merlot, Les Hauts de Ciane has a winey nose with red fruits and plums. It is soft and ripe on the palate with good balance.

Coeur d’Epis, Valréas, AOP Côtes du Rhône Villages, 2012 Despite there being only 5% in the blend, there is most definitely a Mourvèdre characteristic adding complex leather and musky notes to the dark cherry fruits.

Produced from a blend of 75% Grenache, 20% Syrah with Mourvèdre, the 50 hectare vineyard is located between the villages of Visan and Valréas facing south, south-east.

Coeur d’Epis, Sablet, AOP Côtes du Rhône Villages, 2013 The 16 hectare vineyard is located in an area known as the “Plan de Dieu” close to Châteauneuf-du-Pape on typical red and white gravel and sandy soils. The vines are 40 years old, producing concentrated grapes.

The Grenache and Syrah were harvested and vinified separately, then blended to mature. Plums, damsons and cherries combined with fresh sour cherry acidity produce a vibrant wine.

Babington Brook Shiraz, South Eastern Australia, 2013 Shiraz was first introduced to Australia in the mid-19th century and is one of the most successful red grape varieties to be grown there. Champagne Gardet Chigny-Les-Roses

The northern climate, the highly chalky soils, and the know-how all contribute to produce fizz that other areas in the world struggle to replicate. Gardet makes stunning Champagnes. One of the smaller Champagne houses, it proves small can be beautiful. The region is dominated by large houses such as Moët & Chandon who produces approximately 26 million bottles per year. Owned by the Prieux family, Gardet was established in 1895.

The young and beautiful winemaker Stéphanie Sucheyre captures the traditional heart of Gardet in creating Champagnes with personality, using cask-aged reserve wines and long maturation on lees.

Champagne Gardet Brut Tradition, Chigny-Les-Roses Like most traditional Champagne houses, the Brut is produced from a blend of three grape varieties; Pinot Noir, Pinot Meunier and Chardonnay cultivated across the Champagne area, in this case 45%, 45% and 10% respectively. Only the best free-run juice is used by Gardet resulting in fresh, crisp Champagnes. The Brut Tradition has nice fruit. It is dry with a very fine mousse, and was awarded a Gold Medal at the latest Decanter World Wine Awards.

Gardet insists on producing all half and magnum bottles in the final bottle, as opposed to transvasage, ensuring the highest quality; this is not always the case with other Champagne houses.

Champagne Gardet Brut Blanc de Blancs, Chigny-Les-Roses Produced from 100% Chardonnay, the grapes for the Gardet Blanc de Blancs came from specific vineyards classified as Premier Cru in the highly sought after Côte des Blancs. Pale and bright in colour with a lime hue, the Chardonnay expresses itself with lime custard aromas, a soft palate and a fine, persistent mousse with white fruits and a long finish. This is the perfect choice for those that enjoy Champagne with elegance and finesse.

Champagne Gardet Brut Rosé, Chigny-Les-Roses This is a medal-winning Rosé Champagne at both Vinalies Internationales and the Decanter World Wine Awards. Salmon pink in colour, it has earthy fruit aromas of strawberries and raspberries. Champagne Charles Gardet Brut, 2004, Premier Cru, Chigny-Les-Roses Vintage Champagnes represent only a tiny proportion of the region’s total production and Gardet will only produce its Charles Gardet Vintage Champagne in the best of years.

The elegant, fine style of the 2004 reflects its make up; 70% Chardonnay coming from the finest Grand Cru vineyards in the Côte des Blancs, blended with 30% Pinot Noir from Premier Crus in the Montagne de Reims. Light bright lime yellow in colour, it has elegant lime custard aromas and fresh citrus and vanilla flavours. Aged for eight years on its lees, it is complex with fine, persistent mousse and creamy texture.

Château Bellevue is a property of 108 hectares surrounded by 6 kilometres of stone walls. Its façade is adorned with sculptures representing the various activities practiced in the fields – sheaves of wheat, oak leaves and vines.

Vintex et Les Vignobles Grégoire Opimians have been crying out for Cognac, Armagnac and other aperitifs. As my first job in France after university was in the Cognac region, I have fond memories of arriving directly from England in an old jalopy and discovering what lay behind the dark, blackened walls of the ageing cellars; millions of casks full of spirits and history. At Vinexpo in June, Stephen Lemaitre, from Vintex et Les Vignobles Grégoire, and I got down to some serious tasting.

Château Bellevue Virollet Jean-Guy & Bruno Arrivé Château Bellevue, in the commune of Virollet, comprises 108 hectares enclosed within 6 kilometres of an old stone wall. Owned by the Arrivé family (the same proprietors as Château Elisabeth below), vignerons since 1881, they produce, distil and mature Pineau des Charentes and fine Cognacs in the Château’s cellar. The vineyards are planted on 100 hectares. The south-facing slopes consist of chalky clay soils with more sandy clay on the north-facing side.

All Cognac is Brandy, but not all Brandy is Cognac. To

produce Cognac, the grapes must be grown in a delimited area in the west of France in the Charente and CharenteMaritime departments. The spirit must be double-distilled using a copper alembic and aged according to specific conditions.

The initial fiery spirit flowing out of the still is matured in Limousin oak barrels where it can literally sit for centuries (when I worked at Hennessy as a student the oldest barrel had been distilled in 1800!). As it matures, the fieriness is tempered as the Cognac offers up what is known as “the angel’s share”, the small amount of alcohol (2% to 3%) that naturally evaporates each year.

As it does, so the Cognac takes on more amber hues, mellow vanilla notes and complex flavours.

The beautiful region running along the Charente River is subdivided into six “crus” each bringing a different characteristic to the Cognac. Most of the vineyards are planted with Ugni Blanc, a grape of limited interest for producing still white wines, but perfect for eau-de-vie. The grapes are harvested in October, and juice fermented to produce a light acidic wine with around 9% alcohol. This is distilled twice in copper alembic stills producing a colourless spirit with about 70% alcohol. The spirit is matured in barrels made from Limousin oak, wider in grain and at 350 litres larger than those used for wine. The cellar master’s final job is to create the blends.

Château Bellevue, XO Extra, AOC Cognac This is a wonderfully mellow, rich, spicy Cognac. It has been sitting patiently within the walls of the Château Bellevue cellar for over 40 years. This cellar has been used to mature Cognacs for centuries hence its walls are black due to the microscopic fungus, Torula compniacensis, which lives on the stone and feeds on the heady spirit (the angel’s share) in the air. Château Bellevue XO Extra is deep amber in colour with a mahogany tint. It has a concentrated bouquet with mellow oak, vanilla, spice and sandalwood aromas. Full and harmonious in taste, it lingers on the palate and is a Cognac to be savoured. It is best served at 25°C in Brandy glasses to capture the full aroma.

Château Bellevue, Pineau des Charentes, Blanc, AOC A little known speciality outside of the region, Pineau des Charentes makes a great aperitif. It can be drunk chilled on its own or served with Foie Gras or Roquefort. The Charentais themselves often serve it poured into locally grown Charentais Melons. Château Bellevue Pineau des Charentes Blanc is a deep orange colour, with smoky fruit aromas and persistent flavours of cooked peaches, apricots and vanilla. The sweetness is balanced by alcohol and an oaky spice flavour. It is produced from the juice of Ugni Blanc, Colombard, Montils and Semillon grapes which are blended with one year old Cognac and aged in cask.

Château Bellevue, Pineau des Charentes, Rouge, AOC Legend has it that Pineau des Charentes was first produced by mistake. It is alleged that in 1589 when Henry IV became King of France, a vine grower accidently poured unfermented grape juice into a barrel containing some Cognac during the grape harvest that year. It was only years later when the vigneron, being short on storage, needed the barrel and before emptying it tasted its contents. Needless to say he was most pleasantly surprised to find that his mistake had produced tasty scrumptious nectar. The red Château Bellevue Pineau des Charentes is produced using juice from Merlot, Cabernet Franc and Cabernet Sauvignon. Deep tawny ruby in colour, its red fruit and blackcurrant aromas lead to a soft sweet palate with dark fruits and spice.

XO or Extra Old Cognacs have to be a minimum of six and a half years old. In this case the Elisabeth XO Cognac was matured for 10 years taking on a deep amber hue with heady aromas of caramel, vanilla and candied fruits. Like all the Elisabeth Cognacs, it is elegant with mellow candied orange and honey flavours. It is a perfect digestive for the end of a fine meal.

Also owned by the Arrivé family, Domaine Elisabeth is an old family farm where tradition has not changed since 1767. Located in the heart of Cognac, the 86 acre estate has been managed organically since 1997 and produces a range of Cognacs.

Elisabeth VS Cognac, AOC VS - signifies Very Special. This is the youngest Cognac that can be sold and must be a minimum of two and half years old on the first day of October following the harvest. Only the years in oak barrels count to determine a Cognac’s age and once bottled it stops maturing. Elisabeth VS Cognac was matured in Limousin oak barrels for three years. Golden copper in colour, it has grapey fruity aromas with distinctive oak characteristics.

Mellow and smooth on the palate, it can be enjoyed at the end of a meal or as an aperitif with ice, soda or orange juice.

Elisabeth VSOP Cognac, AOC VSOP – Very Superior Old Pale is a Cognac in which the youngest component of the blend is between four and a half and six years old.

Elisabeth VSOP Cognac is a blend produced from Colombard and Ugni Blanc grapes and was matured for over six years. Amber in colour, it has fruity cassis and vanilla aromas. It is elegant with soft mellow flavours and integrated woody notes.

Sauvis XO Bas-Armagnac, AOC, Domaine de Saoubis, S.C.E.A. Les Vignobles de Mandelaëre The Armagnac region situated further south in the Gers, Lot-et-Garonne and Landes departments shares some similarities with Cognac. Both Brandies are distilled from wine produced from a blend of white grapes, Folle Blanche, Baco Colombard and Ugni Blanc in the case of Armagnac. A single distillation is carried out for Armagnac using a column still as opposed to the double distillation in copper alembic required in Cognac. Both are matured in oak casks.

The result is earthier, rustic characteristics. The Sauvis XO Bas-Armagnac has intense, yet nicely integrated oak with flavours of prunes and vanilla.

It is produced from 100% Folle Blanche grapes distilled on the estate and aged in 400 litre barrels for over six years. Domaine de Saoubis is located in the heart of Bas-Armagnac. It is one of the rare estates in the Gers to produce organic Armagnac. The vines are cultivated on maritime sedimentations of clay, sand and gravel conferring a fruity, earthy appeal.

Since Pràban na Linne was established on the picturesque Isle of Skye in 1976 by Sir Iain Noble, Malt Scotch Whisky has become extremely fashionable with specialist shops springing up in cities around the world. New distilleries in Scotland have opened and those older brought back to use to meet the rising demand.

Pràban na Linne is one of the few remaining family businesses in the Malt Scotch Whisky industry and the only one based in the Hebrides. It sources Single Malt Whiskies from distilleries in the Highlands and Islands, each conveying its own characteristics.

Produced from malted barley, water and yeast, the fermented wash is distilled in copper pot stills. The malt whiskies are aged in sherry oak casks and the Master Blender uses them to create harmonious combinations. Many factors influence the taste of Malt Scotch Whisky from the level of malting of the barley, burning of peat, swan neck shape of the pot still, the type of oak used for maturation and the length of time in barrel.

Cùl na Creagan, 12 Year Old Blended Malt Scotch Whisky A perfect combination of Islay peatiness with Speyside sweetness, the Cùl na Creagan 12 Year Old Blended Malt Scotch Whisky is a blend of three Single Malt Whiskies mainly from the Western Highlands giving smooth floral notes, and the Islands contributing smokiness.
