A sleek, precise Blanc de Blancs with lovely purity of fruit and floral aromas. Two years of ageing on the lees brings attractive notes of fresh sourdough bread and a subtle creaminess on the palate. A year ago, we offered you an opportunity to buy Doyard-Mahé Champagne that was aged ten metres under open seawater. Expensive? - yes. Interesting? - absolutely. Delicious? - it turns out, YES! Your Managing Directors and eight of their friends bought 'fractionals' of the Coffret Immersion 2002 (Lot 4844). It was delivered several months ago and we held a party to celebrate and taste. The experience was one that exemplified what Opimian represents. Fellow wine lovers connecting through the joy of wine.
Last October, at an Opimian tasting in Toronto, Opimian Master of Wine, Michael Palij, walked a sold-out audience through a tutored tasting of a series of Opimian wines (much to their pleasure we might add). An example of the many ways education is a key component of your Membership. The articles on pages 14 and 18 will also enhance your wine appreciation.
Like to travel? In 2022, Opimian Members enjoyed an escorted tour of France that included The Rhône Valley and a visit to Domaine des Romarins (among many others along the way) where we were treated to an incredible meal and wine-tasting right in their barrel room. In December, Managing Director Michael Lutzmann led another group of Opimian Members on a tour of Germany and Switzerland and the wonderful wines that they produce. Exclusive to Membership.
You may have noticed that the Chablis from Lamblin moved to C320 this year. This was to make room for the unsung heroes that are the white wines of The Rhône. Many of you ordered Chablis. We invite you to 'choose both' and put some Rhône whites in your cellar as well.
For the scotch lovers in the Club, you made it clear how disappointing it was that the Cul Na Creagan 21 Year was missing last year - they simply didn't have any to share.

Toronto-based Igor Ryjenkov MW was the first in Canada to earn the prestigious Master of Wine credential in 2003. The traditional-method sparkling wines of Champagne hail from the region of the same name in northeastern France. The cool climate, chalky soils and gentle hilly terrain here produce elegant, racy bubblies. Chardonnay, Pinot Noir and Meunier (a.k.a. Pinot Meunier) are the major grapes. While most wines are blends, lighter, more floral wines are made using exclusively white grapes, in the Blanc de Blancs styles, fuller bodied, more fruity Champagnes are made from only red grapes, the Blanc de Noirs. The vineyards are divided into five sub-regions, with the best wines coming from its superior premier and grand cru villages.

Most Champagnes are nonvintage, meaning that older “reserve wines” are blended with current vintage wines to make a consistent house style. However, many estates also produce single vintage wine to highlight the quality of the best growing seasons. At Doyard-Mahé, these vintage Champagnes are aged for over four years on their lees, heightening the complexity of their flavours.

Nestled in the heart of the Côte des Bars in the southern stretches of the Champagne region, Didier Ducos is a small grower established in 1946 when Yvonne Ducos married Adrien Didier. The estate’s Pinot Noir and Chardonnay vineyards are planted on rolling hills of clay and limestone soils. Nicolas Didier represents the third generation of his family to tend this certified sustainable estate.

Meunier is a common blending grape in Champagne but is rarely the dominant variety – which makes the L’Ablutien cuvée all the more appealing. Meunier is prized for its overt fruitiness and supple texture. These attributes are definitely on display here in the wine’s light, smooth structure and vivacious citrus, orchard and stone-fruit flavours. Finishes clean and crisp. 2025-2030 –jb
The “Noir Absolu” cuvée is made exclusively from Pinot Noir. This grape yields fuller bodied, more structured styles of Champagne that often feature pretty red fruit notes. This is a nice example with its tangy currant and berry notes, its zingy acidity and its rounded, medium-bodied structure. It drinks much like a rosé Champagne. Long, dry finish. 2025-2035 –jb

The valley of River Rhône was the third-largest AOC wine producing region in France in 2023 and covers a stretch of land from just outside of Lyon to Avignon – and even further, almost to the Mediterranean coast, if we count Nimes. It grows 37 different grapes spread over 65,000 hectares and has two distinct parts: northern and southern Rhône. The north, between Lyon and Valence, is only responsible for five to six percent of the output and features only
one red grape – Syrah – and three whites – Viognier, Roussanne and Marsanne – which make their true global benchmark expressions. On the other hand, the south has these grapes plus 33 others to play with. While there is a huge range of styles, blends and colours, with 75% of the south’s output as red, the blend of Grenache, Syrah and Mourvèdre is at the core of its most famous wines, culminating in 17 crus (counting the northern ones as well) of which Châteauneuf-du-Pape is probably the most famous. The popularity of the region’s wines in large part can be attributed to the range of prices starting at a very affordable level as well as the overall ripe and generously-fruited style.
The 20- to 30-year-old vineyards this wine comes from have soils similar to Chateauneuf’s with large gravel also known as “pudding stones.” It is deep purple and opaque in the glass. The nose shows medium-intensity multi-dimensional aromas of walnut essence, speck/cured meat, game, lard, black olive tapenade, blood orange and Cornelian cherry preserves and floor varnish. It is dry with a medium-minus acidity, a medium extract, medium-minus fine textured tannins and a medium body with lovely length and intensity of Cornelian cherry preserve, walnut, cured meat, floral notes, black olive tapenade and blood orange, and a medium-plus finish. From the plateau part of the village vineyards, the wine spent a year on its fine lees in 650-litre oak. A deep purple opaque robe here. It opens with medium-intensity aromatic notes: floral/carnations, red plum nectar and flesh, tar, medicinal/roasted fennel, speck, lard and black olive. Dry on the palate, it follows with a medium-minus acidity, a medium extract, medium fine powdery-textured tannins, a medium body and attractive length and fruit with fleshy red plum nectar, tar, medicinal/ fennel, lard, speck and black olive elements leading into a medium finish. 2025-2026 –ir

Domaine de Romarins, located in the heart of Rhône Valley in the village of Domazan, was founded in 1892 and is run today by three generations of Fabre family, with grandchildren of the founder Georges, brothers Xavier and Benoit, in charge of vineyards and winery, respectively. The focus on sustainability led them to receiving a “High Environment Value” (HVE) award every year from 2015 to 2022, with 2023 as their first vintage after the full organic conversion.

This medium bodied rosé from Southern France is vibrant and well balanced. The nose has attractive upfront fruit and refreshing eucalyptus hints. The 2023 Fontnobles Gigondas boasts a fragrant, floral nose brimming with ripe dark fruit and spice. Deep purple in colour with fresh acidity and a firm structure, this is a very youthful wine that needs a little time to unwind. Despite this, the palate is already showing fine depth and complexity of flavour with bold, yet fine-grained tannins and a long herbal, dark chocolate and lively fruited finish. 2027-2040 –jb
Intense, baked dark fruit and baking spice notes waft from the glass of this Grenachedominant southern Rhône red. The palate is quite vibrant with layers of ripe black and blue fruit and a supple, powdery texture. Spiced nuances linger on the finish. Needs a little time for the tannins to lose their slightly astringent edge. 2025-2035 –jb
Les Grandes Serres, owned by Maison Picard from Burgundy, is a respected négociant and vineyard-based winery in the Rhône Valley. Based in Châteauneuf-du-Pape, they produce a wide range of Rhône appellations including Châteauneuf-du-Pape, Gigondas, and Côtes-
du-Rhône. With both estate vineyards and sourced grapes, they cultivate around 35 hectares across prestigious Rhône terroirs.

The Rhône Valley and Southern France are best known for their bold, fruity red wines. However, these areas also produce excellent white wines that rarely get the attention they merit. They are often overshadowed by more famous French white wine strongholds like Bourgogne or the Loire Valley.
In the Northern Rhône, white wines are primarily crafted from Viognier, Marsanne, and Roussanne, producing full-bodied, aromatic wines with notes of apricot, honey, and minerals—standouts include the Marsanne/Roussanne blends from appellations like Saint-Joseph or Hermitage, and of course, Condrieu's Viognier. These wines have the ageing potential and complexity to rival top-tier French whites.
In Ardèche, winemakers often use Chardonnay and Sauvignon Blanc, producing refreshing, fruit-forward whites with crisp acidity and floral notes, a delightful contrast to the Rhône’s richer styles. Moving south,
Southern Rhône whites (Châteauneuf-du-Pape, Lirac, Côtes du Rhône) are usually blends of Grenache Blanc, Clairette, and Bourboulenc. They are broad and textural, with effusive flavours of stone fruits, white flowers, and herbs, ideal for Mediterranean dishes.
The pebbly soils interspersed with red, sandy clays in the low-lying Costières de Nîmes region, on the border of the Southern Rhône and Languedoc regions, offers excellent-value whites. This warm, dry area uses the same grapes as the Southern Rhône, giving rounded, supple, fruity whites.

The palate is dry and offers a mediumsized frame: acidity, extract and body with a soft texture and medium-plus length and intensity of yellow apple, goldenrod, dandelion milk, lemon peel and pith fruit closing with a medium finish. 2025-2028 – ir

Usually fermented in barriques and aged in larger, 600-litre oak barrels. Despite its humble designation, and as the price might suggest, it is a seriously good Viognier and could serve as a stand-in for a good Condrieu. A mediumplus golden-yellow robe here. The nose delivers mediumplus intensity, textbook quality Viognier's rich and decadent aromatics of peach yogurt, poached pear, oil/cream, locum, jasmine and fruit tea. Dry, the palate shows a delicate medium-minus acidity, a medium-plus extract, a soft texture, a medium body and lovely presence and flavour-persistence of poached and dried pear, fruit tea, locum and pear blossom, and a medium finish. A lovely Viognier, even if at a price. 2025-2026–ir
Natural wine fans will enjoy the savoury, (think sourdough bread) notes that set this Sauvignon Blanc, Grenache Blanc blend apart from more conventional Southern French white wines. The nose is discreet, yet appealing. The palate is lean and linear, driven by zingy green fruit. Finishes dry and crisp. 2025-2027–jb

This easy-drinking, everyday red wine really impressed me in terms of its value. The nose is highly appealing with its array of ripe, dark fruit, spice and chocolatey aromas. The red wines of Southern France, from the Rhône Valley to the Mediterranean Sea, stand out for their rich flavours and diverse styles. Grenache is often the flagship grape here, complemented by Syrah, Mourvèdre, and/ or Cinsault. These blends produce wines with generous red and black fruit, interlaced with baking spices and dried herbal notes.
Southern French wines from larger appellations like Côtes-du-Rhône, Costières-de-Nîmes, and the regional IGP Pays d’Oc represent good, everyday values. The area is also home to many prestigious villages known for the depth, complexity, and long ageing potential of their wines. In the Southern Rhône Valley, cru appellations like Châteauneufdu-Pape, Gigondas, and Tavel are widely admired.
The warm, Mediterranean climate of the Southern Rhône ensures full, even grape ripening, while the area’s famous Mistral winds keep vines dry and healthy. The soils here are a mix of clay, limestone, and galets roulés (large rounded stones), contributing structure and minerality. What’s more, frequent outcroppings of wild, scrubby garrigue (aromatic Mediterranean herbs) give distinctive notes of thyme, rosemary, and lavender to many cuvées.
The fleshy tannins, bold character, and suave texture of these wines make them incredibly versatile when it comes to food matching. Great pairing ideas include Moroccan chickpea stew, lamb tagine, savoury vegetarian or meat pies, smoky ribs, and more.

LAST YEAR'S COUP DE COEUR IS BACK! A MUSTHAVE WINE.
The efforts of three generations are going into the Domaine’s wines today. They started with four hectares, with part of the crop going to the local co-op. In 1973, Alphonse made a decision to take full control of their grapes and make the wines in-house – and they have never looked back. His son, Philippe, moved to bottling the entire production in 1977, eschewing bulk sales. More recently, his children joined the family business, first Emilie in 2005, with her degree in enology, and then Christophe in 2009 with a viticulture/ enology double major. Now the Domaine’s portfolio consists of Crozes-Hermitage and Hermitage reds and whites, a red Saint-Joseph and a little Vin de Pays, all sourced from the 38 hectares they have come to own.

Hermitage is one of the most famous names in the context of Rhône wines – in French wine nomenclature and in the wine world. The best reds of this AOC are a pinnacle of Syrah expression, but it also offers equally impressive whites from Marsanne and Roussanne grapes (a small amount of these – 15% – are allowed in reds if co-fermented, but many use Syrah alone). The poor, granitic soils of the Hermitage hill were known to produce quality wines eons ago; by the 17th century, the red Hermitage was an official court wine of kings Louis XIII and XIV. The area took its name from the legend of knight Gaspard de Stérimberg, who reputedly became a hermit and lived on this hill after the crusade of 1224: the famous hermitage chapel is still perched on the hilltop, this one built in 1864 on the site of the original 13th century structure. Both red and white are usually robust, structured and capable of decades of ageing.
Sourced from 40-year-old vines, the wine had 15-18 months of new oak ageing. It is a blackpurple, opaque pour. On the nose there are medium-intensity aromas of toffee, cream, brandied prune, tar/smoke and lilacs with an overall polished and classy impression. The appellation of CrozesHermitage surrounding Hermitage and also on the east side of the river– all others are on the west bank – is much larger and more varied in soils, topography and range of qualities than its famous neighbour.
However, the top wines are still very compelling examples of the Syrah grape, and the whites are also a blend of Marsanne and Roussanne (a small amount of which are allowed in reds here, as in Hermitage, if co-fermented). Both whites and reds develop much quicker here, but even the top wines of the appellation can still offer a good insight into what the grapes are capable of at the fraction of the price of the more hallowed names.

From vineyards with 55-year-old vines, the wine spent 12 months in used oak. It shows a very deep ruby, near opaque, robe and medium-intensity multi-facetted aromas of crushed black peppercorn, tar, cold hickory smoke, speck, lard/oil, black olive tapenade, black plum/mulberry preserve, lilac and sorrel. Châteauneuf-du-Pape is one of the most recognized names in the world of wine. Even those who know little about wine have likely heard of Châteauneuf and know that it is not cheap which makes it a popular gift idea that communicates specialness even without the price tag. It can be a blend of up to 18 red and white grapes allowed in both reds and whites but without requirements of proportions; the wine can be made from a single variety, too. The area was first planted by the Romans, but the wine takes its name – and some of its acclaim – from the time when the Papal seat was in Avignon in the 13th century. It is also famed for its “pudding-stone” soils, as well as the birthplace of French Appellation system in 1936. The wines have the common Rhône theme of ripe and generous fruit but with a finesse and an elegance not usually expected from such big wines.

Founded in 1976 by Sir Iain Noble, the Gaelic Whiskies company is located on the Sleat Peninsula of the Isle of Skye and is one of the very few remaining independent businesses in the Scotch trade. Their brand family includes the famed Te Bheag. “Pràban Na Linne” is a Gaelic expression describing the enterprising “small smugglers’ ventures on the sound of Sleat.” Sir Iain was an early proponent of keeping their whiskies “unchillfiltered” – that is, not subjecting them to low temperature prebottling to stabilize them and instead allowing them to keep their inherent properties resulting in a softer and smoother palate.

This has a medium amber color. On the nose it has a medium-plus intensity with notes of butterscotch, smoke, golden raisins and malt/bread. It eases onto the palate with a soft attack, followed by a glycerol feel, and shows a mid-weight presence and almost perfume-like flavours of malt and smoke. It warms the tongue rather quickly as it moves towards butterscotch, oily and a warm-coating long finish with malt/bread and butterscotch notes.– ir

Côte-Rôtie – literally “roasted slope” – is the other most revered name for fans of Syrah and the top wines of the world. It starts just outside of Lyon and has steep-terraced vineyards, most facing south, thanks to the bend of the river that runs east to west here. Only red wine is made – with up to 20% of Viognier allowed, if co-fermented – it is the core grape in neighbouring Condrieu and Chateau Grillet. The wines, even if made entirely from Syrah, while also very age-worthy and powerful, tend to have more polish and finesse than those of the Hermitage further down river. There are two recognized subzones within the appellation: Côte Blonde with lighter (and lighter-coloured) soil and more elegant and earlier developing wines; and Côte Brune, with darker soil and more structured wines.
Vignoble Deleu is a passion project of Brian Deleu who, having studied architecture, took a step as far away from architecture as he could. Having spent two years with Yves Culleron, a respected producer in northern Rhône, and then two years with a high-quality producer in New Zealand, Brian returned to Rhône and bought his first plot of land in 2018. Only four vintages later, he now has eight hectares with vineyards in Condrieu, Saint-Joseph and Côte Rôtie – and the recognition of his abilities from discerning consumers, including a number of top-tier European restaurants.
