SPECIAL OFFERING 46 New Zealand, Southern Hemisphere wines of Paul Sapin, Bordeaux, Chablis, Cote d’Or, Beaujolais, Champagne, Sherry, Malt Scotch Whisky and Cognac Our Special Offering is a wine anthology that will fill the glass with refined flavours and rich experiences sufficient to delight every palate. From France, the elegance of Chablis, the ethereal flavours of Burgundy, the full-bodied estate wines of Beaujolais and a bouquet of rosés from Château de Sours. This Special Offering would be less special if we omitted Champagne, the perfectly uplifting wine no matter what the occasion. From Spain comes a selection of Sherry, the powerful wine of Andalucía. Further afield we have luscious flavours from New Zealand alongside the Southern Hemisphere wines bottled by Paul Sapin, the “global vigneron”, who with this offering introduces the “Wine for 2” range of 500 ml. bottles. Cognac and brandies along with four golden greats from Scotland complete this year’s selection.

This is a neat wine, its bright, green-tinged, pale straw colour introduces a bouquet alive with fresh gooseberries and the clear mellow fruit tones of kiwis and passion fruit. The palate is tightly focussed on its fine, energetic fruit which is concentrated with depth of flavour and the obvious vitality of youth. Even more impressive is the texture, a seamless sense of smoothness that spreads right through the palate as it complements the weight and fruit flavours. A bouquet of fragrant lime, orange blossom and touches of soft French cheese, it is unoaked and shows both delicacy and depth. The quality of the upfront citric acidity surrounds the flavours, particularly hazelnut, with a smooth, silky texture and the hardcore centre of concentrated peach, apple, nectarine and pineapple; it is a veritable fruit salad smoothed over by a sense of creaminess in the middle palate. The entry to the mouth has a crispness as fresh as the morning dew, yet it is a big wine with lengthy flavours and a style that will give it an enduring appeal. [02] M7 D8

Big, bold and complex, the nose is all about fruit and ice cream, the initial impression being followed by herbaceous pungency and fine lemon zest. The colour is pale, greentinged silver and is matched by a powerful aroma of papaya and tropical fruit with a huge spoonful of gooseberries. In the mouth, the fruit is textured and creamy with a fine shaft of piercing acidity that helps to balance the concentration of the sweet fruit. Fine now, it needs a touch of bottle age to mellow the parts into a harmonious marriage and release even more flavours. [00] M7 D8

The pale, straw colour and ripe, earthy bouquet are the introduction to a full load of concentrated fruit. The fruit, from the Wairau Valley region of Marlborough, is the product of vines planted on north facing slopes in the warmest area. This temperate microclimate, coupled with free-draining soils, provides perfect conditions for bunch development. The ripe fruit was hand-picked and whole bunch pressed which allowed for soft, concentrated flavours while cool fermentation in steel tanks helped to preserve the natural fruit flavours. Post fermentation, the wine was left on yeast lees for a further two months with occasional stirring to help build the smooth texture and richness on the palate. [01] M7 D7

Three decades ago, it was Oregon that made the headlines for Pinot Noir. Now, the spotlight has moved to cool South Island, New Zealand for the finest Pinot Noir fruit. The grapes for the 2009 vintage were sourced from low-cropping vines on the hills outside Marlborough. Traditional winemaking techniques were used, with ten months in barrel enabling gentle tannin extraction and creating the complex foundation of flavours and texture. The palate shows dense, red and black fruits that highlight a combination of balanced tannins with a firm structure, well-integrated oak and a rounded, lingering earthy finish. Ripe and concentrated with appealing plum and cherry fruit, it has a supple mouth-feel and persistent finish. M6 D6

After separate picking and fermentation on the skins in steel tanks, the varieties were blended before bottling. Moderate climatic conditions allowed for the grapes to be picked when the flavour profiles were at their highest level and while still retaining good acidity. This representative wine of the Cape vineyards has a polished, golden colour and a lively, pale green radiance. Fresh orange peel, guavas and youthful aromas appear more clearly cut by a background filled with minerality and flint.

The entry to the palate shows immediacy with fine, orangetinged, slight oak impressions ringed around with nuts and oatmeal and the added clarity of refreshing acidity.

The Cape is one of few places where Ruby Cabernet really thrives and produces quality wine. This one, all purplish hues and clearly very young, needs a touch of patience to allow it to marry all the components. The variety results from a cross between Cabernet Sauvignon and Carignan, but it shows more of the character of the latter than the Cabernet Sauvignon. Its bouquet is fleshy and forward, lots of black fruit and notes of compost and earth. A full-bodied and layered palate features flavours of dark berry fruit, spicy black pepper and plenty of acidity. M7 D8

Produced by a co-operative in the Robertson area, the huge vineyards, all machine-picked, yield a mighty harvest of small, perfectly ripened fruit. These are the ideal basics for such a well-mannered, ample wine with good length, harmony and accessible flavours. M8 D8

Paul Sapin makes no declaration of which of Chile’s vinecovered valleys provides the fruit for this delicious, fruity red, but it shows much of the style of Curicó. Nicely rounded, it has pleasant fullness in the mouth, the fruit volume providing good structure and combining with refreshing acidity to reveal a delightful, soft texture with a ripe and pleasing finish. For a pink wine from the Western Cape, this Pinotage is impressive. The colour is slightly darker than many other rosés due to the thick-skinned, black grape. The whistling thorn is an acacia tree commonly seen on the savannas of South Africa. The tree protects itself with three inch long thorns. These spines have a hollow bulbous swelling about one inch in diameter at the base which are home to stinging ants that bore small holes in the wood.

When the wind blows, the old and abandoned spines become whistling flutes; hence giving the tree its name. This Shiraz is smooth and elegant with attractive red and black berry aromas and flavours enhanced with warm spicy notes and soft tannins. It is full-bodied, fresh and juicy. M8 D8

It is not all froth and fun; this is quite a package of serious, structured fruit, acidity and balance. The Château de Sours fruit, grown on limestone, is hand-harvested using only the best fruit which produces a modest yield of 100 litres for each 150 kg of grapes. After the initial fermentation, Martin Krajewski, the Château’s proprietor, sends the wine to a specialist “vin mousseux” producer who creates the sparkle, then cellars the bottles for a year to settle and mature. Attractively labelled and dressed, it shows a shimmering, onion-skin pink colour with fine bubbles and a persistent mousse. The bouquet is young and fresh with flavours of pure raspberry and blackcurrant and a lively palate that would leave many famous sparklers standing! [02] M8 D9

Whoever said pink wine was not worth keeping should sip a sample of this world class rosé. Originally produced to ascertain how oak ageing would influence the development of the wine, it has turned into a minor triumph as the liveliness of the fresh Merlot has softened and grown, then fattened by building substantial structure because of the ageing in used oak barrels. It is medium-bodied and multilayered, its youth losing the initial acidic edge and being replaced by a soft, scented, red berry fruit bouquet that precedes the oak and cedar palate with complexity and dry, harmonious balance. Legend has it that Emperor Charlemagne visited the village in AD 775, ordering the planting of seventy acres with vines. That is the history. Gevrey, lying at the northern foot of the Côte d’Or escarpment, is the giant of the wine villages of the Côtes de Nuits. Unique among the villages, it includes twenty-six Premier Crus and eight Grand Crus. Lamblin’s wine displays a more youthful purple colour than those of other communes. With a bouquet made up of many small aromas, none are dominant; all are subtle rather than powerful.

Primarily red and black fruit, there is the inclusion of small notes of bacon, liquorice, pencil wood, raspberry jam and dry toast. In the mouth there’s good balance between modest, grainy tannins and flavourful nuances that include fruit, cocoa, mushrooms and dried moss. M6 D6

Beaujolais is beautiful countryside, an undulating panorama that climbs from the NÉGOCIANT banks of the Saône to the summit of towering uplands. Between the foot of the hills and the summits, hidden in the folding landscape, lie tiny hamlets, ancient farms and vineyards whose greatest wines are too rarely seen. The guide EN VINS through our journey is Bernard Perrin, vigneron and négociant; his own vineyard produces one of the finest of all the wines of Beaujolais. Bernard’s first release of his quality sparkling wine, Crémant is the French description for sparkling wines made outside Champagne, although made in much the same way. The 100% Chardonnay fruit was sourced in Beaujolais where it was whole bunch pressed, fermented and bottled with a mixture of yeast and sugar to create the fermentation inside the bottle. After ageing on the lees, the sediment was removed and the bottles re-corked. As natural as the idea is to make an attractive alternative to Beaujolais, there will not be much competition as this newcomer will not be permitted to be sold as “Nouveau”. Bernard suggests that this will be a particularly “senior” vintage. His wine, made from the Chardonnay grape known locally as the "Perle Blanche" (white pearl), will develop on the subtle perfumes that were evident at harvest. The Perrin family’s Milhomme estate is unlike most Beaujolais vineyards which are frequently planted on heavy soils close to the River Saône. At Milhomme, the even rows of vines stride across the summit of a steep hill, far above the narrow valley that funnels cold winds each winter to buffet the dormant vines. It is a difficult terrain, but the clay, limestone and broken flint soil is free-draining and produces wines ranked among the finest of the entire appellation.

The twenty-four acre Domaine, owned by Muriel and Gilles Aujogues, is one of the leading properties in this most southerly of the “Crus” which spreads like an outstretched skirt around the slopes of the extinct volcano, the Montagne de Brouilly. The diverse extraction from the volcanic soil adds nuances of mineral to the red fruit. Produced from hand-picked whole bunches, the grapes were macerated under pressure for eight days prior to pressing. The fermentation was completed in steel tanks at low temperatures which assisted in the development of the ripe, aromatic bouquet. Of the ten “Crus” of Beaujolais, all made from the Gamay grape, Morgon is perhaps that which has the closest affinity with the schist and granitic soil which carries through the fermentation and makes itself known in the glass. The pivotal secret of these wines lies in their pressurized fermentation, a technique known as “macération semi-carbonique”, in which gas induced pressure, in sealed tanks, fractures the skin and grape cells to release colour, aroma and flavour without adding greatly to the tannin levels. Bottled in the spring following the vintage, it will become notably plump, already offering deep, black fruit aromas with ample flesh and a generous palate. The fruit for this fine cuvée came from the three best regions of Champagne. Chardonnay grapes are brought from the Côtes des Blancs to be blended with red wines from the Vallée de la Marne and the Montagne de Reims. The young wines are combined with those of the previous year, with the addition of 15% reserve wine from an earlier, great vintage.

Bottling is merely a step on the way to fulfilment as the filled bottles are stored below ground to allow a second fermentation to take place in the bottle, a process which keeps the wines fresh and creates the fine “mousse” of bubbles when opened. During two additional years of storage, power and depth of flavour develop with apple, small hints of candied fruit, ginger, vanilla and lemon. [02]

TOMÁS ABAD Jerez de la Frontera Throughout past centuries no wine has been more regularly written about nor idolized in literature. Today, it is no longer the ubiquitous wine that graced the front parlour of millions of homes, reposing in a decanter for offering to guests or to the priest when he came to call. No longer served in large glasses in every bar, sherry lives on to refresh the palate of true aficionados at noon on summer’s hottest days or to warm the heart and dispel the chill, icy fingers of cold through the winter months. We have offered the wines of this small producer for many years and though the company was swallowed by one of the Sherry giants some years ago, the stocks of old, favoured wines remain, for our use, in the Tomas Abad bodegas.

There are two types of Amontillado, one made up of cheap wines blended to achieve the desired sweetness, the other a blend of aged Fino Sherry that is entirely dry, intensely flavoured and powerful on the palate. Our wine is definitely of that style. Following the pattern of previous years, there is the retention of the walnut and roasted almond complexity of the bouquet together with neat smoky aromas, touches of Muscat-like fruit and hints of caramel toffee.

Slightly sweetened at the time of bottling, it is full-bodied and smooth, the dried fruit and apricot flavours ever present and wholesome. It finishes with a dry, nicely rounded structure that offers fading hints of orange peel and molasses. At the table, it marries well with foie gras and many Asian dishes. [02]

SHERRY TOMÁS ABAD

This style of sherry gained its name from the historical use of filled Sherry Butts as ballast in old sailing ships on voyages between the Spice Islands of the East Indies and Spain. On the return of the ships the wine was found to have darkened in colour and developed fuller, broader attributes. Although this is now a rich Oloroso from a top rated producer, it started life as a light white wine made from Palomino grapes before the addition of neutral alcohol spirit. It is the long ageing in the cathedral-like bodega that allowed for the development of the deep colour. Sweetened during the final blending, it is filled with pleasant fruit depth. Apricot, peach, banana and vanilla lead to a warm roasted walnut complexity and enticing flavour length in the mouth. It is the perfect companion to light desserts or blue cheeses. [09]

The finest and lightest of all sherries, Tomás Abad ages the Manzanilla in oak until it can be described as a “Pasada”, the extra age giving more body to balance the salty tang. It comes from Sanlúcar de Barrameda, a small port in the south-eastern corner of Spain where, as the evening light fades, the gypsies play sad tunes on their guitars while the young dance the haunting flamenco. Filled with great pungency, the chalky characteristics come from the dazzling white limestone terroir. It is traditionally served in a long glass, on a bed of crushed ice, but can also be paired with seafood, oysters and sushi and sashimi. [00]

Mystery and legend surround the origins of the Pedro Ximénez vine, some suggesting that it was brought to Jerez by a German mercenary soldier and is, in reality, a clone of Riesling.

Nothing in its form today could be further from the truth.

Produced from grapes which are laid out on mats and left in the sun for as long as possible to dehydrate before pressing, it was once used for sweetening the finest Cream Sherry. Utterly rich and profoundly dark in colour, it tastes like a liqueur and is similarly expensive. Its pronounced dried fruit aroma is sweet, smooth, luscious and everlasting. Serve it iced cold in a long glass to allow the bouquet to develop or use it as a topping over vanilla ice cream. [10]

They say that the word “whisky” comes from the Gaelic “uisge beatha”, meaning “water of life”, but more importantly on Skye they claim that the Gaelic islanders invented whisky, making theirs truly authentic. Cùl na Creagan translates as “the cleft in the rocks” where it was originally distilled to avoid the prying eyes of the English King’s customs officers. It is fine and unfiltered to retain all flavours, an aristocrat with a powerful, pungent, peat-smoke aroma. Robust, well-balanced and smooth, it has light sherry notes on the palate.

Visitors to Normandy, the home of Calvados, are invariably impressed by the attractively decorated, half-timbered farmhouses, many dating back three to four centuries.

Practically all are surrounded by an orchard, which, as summer turns to fall, produces miserable, misshaped fruit. This green and red horde is transformed by distillation by pot still into Normandy Calvados, the quintessential partner for use in the kitchen. Armagnac is distilled in Gascony in south western France, usually from vineyards hidden in the deep forests. There are few large producers as most Armagnac is distilled in pot stills by the vigneron’s wife in farm outhouses. The brandy is eventually sold to visitors who know where to look to find the best. The closest relative is Cognac, but though there is often confusion between the two, Armagnac is very different; different grapes, soil, distillation process, aromas, taste and textures. Our Armagnac selection is amber gold with fine aromatics that suggest almonds with vanilla and smouldering oak chips. In the mouth, the vanilla returns with the addition of spice and an enduring, subtle honey flavour.

Famous throughout France, the River Charente would be considered by Canadians to be little more than a serene brook, but flowing through the vineyards of the Cognac region, it acquires a magic associated with the brandy produced on its banks. The area is split into six districts, but only the two best make the wines that after distillation may be called Fine Champagne. This one has an inviting, deep golden colour with pleasing apple, caramel, warm spice and some chocolate and vanilla on the nose. In the mouth the first impression is pungent, but is rapidly followed by soft textures, mocha and finally a rich mouth-feel with length on the palate counted in minutes.

The wine for distillation comes from three different vines, Ugni Blanc, Colombard and Folle Blanche. As wines they are thin, acidic and practically undrinkable, but distillation magically transforms these ugly ducklings into beautiful swans. Ageing in oak completes the transformation. The greatest skill of the Cognac distiller is to know just when to take the best part of the distillation, known as the “heart”, leaving the early and final parts of the process for blending with less important brands. Once the best has been isolated it is racked into dark, old oak barrels in above ground warehouses [chais] for many years to soften, concentrate and take on the desired characteristics of the “Roi des Rois” label. This is one of the finest “XO” blends, no part being less than eight years of age and many parts being much older.
