Corlea Fourie, Vineyard Manager, and Carla Bosman, Brand Manager of Bosman Family Vineyards.

Bosman Erfenis was created to honour the arrival of the first-born children of both Petrus and Carla Bosman and winemaker Corlea Fourie. In Afrikaans, Erfenis means heritage and legacy, and the outstanding 2018 vintage of this celebration-worthy wine has been selected to commemorate Opimian’s 50th year. This grand vin is only made in exceptional vintages, meticulously crafted from the cellar’s best barrels of Cabernet Sauvignon, Nero d’Avola and Cinsaut. Its bouquet is intriguing, brimming with a mosaic of smoky plum, clove, vanilla, violet and herb. This wine’s statuesque frame cascades with the taste of plum, blackcurrant, mint and leather. This is a poised wine with a remarkably long finish. It has just started evolving in bottle providing a glimpse into its future development. Raise a glass of Bosman Erfenis to mark this special year and continue to enjoy it over the next ten years or more. 2023-2033+ -lw

As Opimian Members, we have the advantage of planning ahead for the year to come. In this issue, you can choose exceptional wines and spirits from South Africa and Tuscany.

You may notice that the wines of Warwick are missing. They have been ably replaced by Groote Post and Bosman Family Vineyards. If you haven't tried them yet, you are in for a pleasant surprise.

In a time where the price of everything seems to be increasing, there are few wines here that have an even lower price than last year. With the cost of production (and every other aspect of making and bottling wine) rising, we make every effort to keep prices as low as possible and quality high. Our team of Masters of Wine tastes a huge number of samples in Montreal, right here in Canada, before selecting the best of the best for you.

The wines from South Africa are nothing less than stellar. Bosman, Aristea, Richard Kershaw Wines, Groote Post and Vilafonté will provide you with the full range for your drinking occasions. From value wines for weekday dinners to mid-tier wines for a refined palate and special occasions, all the way through to rare collectibles, they are here for you.

Let's not forget Tuscany. With 60,000 hectares under vine, the land of Sangiovese knows how to make wine. Learn more about this romantic region from Philip Reedman, MW on page 42. When we made the decision to give Tuscany its own profile a couple of years ago, we did so because our data told us these were the top-selling wines from Italy.

You have proved us right! Our partners Cinciano, Sorbaiano, Chioccioli Altadonna and Morellino di Scansano have responded as well. They are offering you a wide selection of wines and spirits, in various pack sizes and price points. Stock your cellar and your bar.

We wanted to bring your attention once again to the new White Wine Select subscription that was launched last offering. It opened with great success but there are a few more subscriptions available. Join the hundreds already on the program.

Innovation in South Africa

Situated at the tip of Africa, South Africa has always been resourceful. The rocky past during apartheid and the subsequent sanctions imposed meant that South Africa had to become selfsufficient in all aspects of life, from food production to development in all the relevant industries.

The KWV (Co-operative Winemakers Union of South Africa), founded in 1918, predates the apartheid and sanctions period, but its influence extends into the modern era. Its mandate was to deal with surplus production and unify the wine farmers. To this end, it gave legislative powers to regulate quotas, restrict cultivars and production areas, and control production volumes. There was control over releasing new vine material and

establishing a certification system that traced wine from vineyard to bottle.

As post-apartheid South Africa re-emerged into the international markets in the early 1990s, further challenges arose. Whilst enjoying positive sentiments to start with, the rainbow nation found it hard to innovate once exposed to the international scene. Isolation led to self-satisfaction and an inflated sense of the quality of local wines and the local cultivar Pinotage. Complaints of burnt rubber in wines and bitter acrolein compounds forced the focus on virus-infected vineyards and the choice of cultivars and clones.

As a result, South Africa struggled to find a niche in the early years, and there was a drive simply downward so that cheap bulk wine seemed an easier route.

However, lifting sanctions and abolishing the quota system brought a new dawn of innovation in the vineyard, with new areas open to be discovered and planted with virus-free clones and newer cultivars. Slowly the needle of inspiration and influence shifted from Germany to France and then to the Mediterranean.

More recently, South Africa has faced further challenges, including corruption, running electricity blackouts, constant inflationary pressures, strikes and poor exchange rates. Necessity being the mother of invention, many wineries have risen to the challenge and installed solar panels and generators, negating the blackouts and boosting their sustainability credentials.

In the vineyards, social unrest and the lack of pickers in de-populated rural areas have led to more producers investing in mechanical harvesting, which allows quick night picking when the temperature is cooler.

In the warmer areas, planting more suitable grapes with higher natural acidity retention has taken place as the focus has shifted towards the Mediterranean countries. These include white grapes such as Assyrtiko, Grenache Blanc and Vermentino and red grapes such as Sangiovese, Touriga Nacional, Mourvèdre, Barbera and Petit Verdot.

Much of this success is achieved through the help of Winetech, an independent South-African non-profit that receives and manages the statutory research levy from the South African wine industry. It has four core functions: Research and Development, Knowledge Transfer, Innovation, and Learning and Development. It has three flagship programs: Climate change, Water efficiency and plant breeding.

A further innovation in South Africa is addressing the quality issues in tandem with the advancement of regionality.

The building of the New World's success was initially on delivering consistently good wines with easy varietal signposting

Born and raised in the UK, RICHARD KERSHAW MW enjoyed a successful career as a chef before finding wine. After travelling extensively, he arrived in South Africa in 1999. Now a Master of Wine, Richard is pursuing his dream of making his own wine in the cool climate of Elgin in the Western Cape.

and no fixed abode. A sense of place or terroir was not seen as relevant. South Africa has been formed on the tenet of non-regionality primarily through the cooperative system where grape variety planting was based on the sequential ripening of grapes to allow an extended production period for the winery. This created numerous non-regional wines that fitted price points, often at the lower end of the scale.

South Africa wasn't initially alone, as the New World collective was happy to shun what felt like straitjackets that producers in the Old World had to adhere to specified grape varieties and plantings. Indeed, in the early days, the New World promoted that they could grow anything unhindered by grape

restrictions. However, many New World countries quickly realized that this direction was unsustainable. Since the 1990s, countries such as New Zealand have led the way, focusing on Marlborough being the home of Sauvignon Blanc. Australia joined quickly with Barossa Shiraz, Coonawarra Cabernet and Clare Valley Riesling, whilst more recently, Argentina has become the home of Malbec.

South Africa's long-term success hinges on positioning its wines in this way. By imbuing a sense of place, we will not only add tremendous value to the wines we already produce but give credibility to the differences between our regions.

It isn't a simple process. To take ownership of particular grape varieties or styles and give traction to their region means digging deeper into some of the groundwork that Winetech has done regarding geology mapping and soil types and developing better clonal information. This will enable us to identify subzones better and give each region a more distinct personality. This journey started with areas formulating signature grapes such as Elgin Chardonnay, Hemel-en-Aarde Pinot Noir, Swartland Rhone blends and Stellenbosch Cabernet Sauvignon.

More is needed, but South Africa's resourcefulness will eventually shine through!

SOUTH AFRICA

Just an hour outside of Cape Town, South Africa, Bosman Family Vineyards is located at the foot of Groenberg Mountain in the picturesque town of Wellington. Their second property can be found in the cool climate Upper Hemelen-Aarde Valley in Hermanus. The Bosmans began growing

grapes and making wine in 1888. In 1957, the family decided to focus exclusively on the nursery which to this day continues to provide cuttings for the Cape wine industry. Petrus Bosman, representing the family’s eighth generation, brought winemaking back to the property in 2007. Social responsibility

and sustainable farming are foundations of the Bosman’s principles. Over the past five years, 20 hectares of the property’s vineyards have been organically certified with another 30 hectares currently under conversion. The winery has been a Fairtradeaccredited producer since 2009.

Aristea Wines

STELLENBOSCH

The collection of premium Aristea wine was born from the collaboration of three friends: Martin Krajewski, Matt Krone and Florent Dumeau combined their vast experience with their dream to capture the wild beauty of South Africa’s Western Cape. The wines are perfectly represented by the breathtaking Aristea flower which adorns the label. Against the odds, this rare blossom rises from the region’s ash soil to bloom for a single day each year.

The 2020 IXIA by Aristea Chardonnay was carefully crafted from hand-harvested fruit in this exceptional vintage. In the cellar, ten months in barrel with regular leesstirring has resulted in a wine with generous textural depth. The bouquet is filled with the scent of apple, toast and vanilla. The body is equally opulent with baked apple, pineapple, citrus, butter and oak character. Enjoy over the next three years. 2023-2026 – lw

Vilafonté

In 1997, founding partners Michael Ratcliffe, Zelma Long and Dr. Phil Freese combined their wealth of expertise to create the worldclass wines of Vilafonté. These very limited-production wines are painstakingly crafted from grapes grown on a 42-hectare parcel of ancient earth found on the benchland of the Simonsberg Mountains. The soil dates between 750,000 and 1.5 million years old – one of the oldest ever documented. From the beginning, Vilafonté has been committed to sustainability and regenerative viticulture.

The Mediterranean microclimate surrounding the Vilafonté vineyards, influenced by the proximity of the Atlantic and Indian Oceans, is ideal for viticulture. The hand-harvested fruit is carefully crafted by winemaker Arlene Mains into one of South Africa’s most iconic wines - Seriously Old Dirt. The 2021 bottling is a blend of 88 % Cabernet Sauvignon, 8% Merlot, 2% Malbec and 2% Cabernet Franc. As with all Vilafonté wines, the first impression is one of fine craftsmanship. The bouquet progresses through tiers of blackberry, cranberry and cedar opening up to the aroma of fresh mint. A sip reveals fine-grained tannins supporting a bounty of black and red fruit. While delicious today a few years in cellar will unleash this wine’s true magic. 2025 -2033 lw

Groote Post Vineyards

DARLING HILLS

In 2001, third- and fourthgeneration dairy farmers Peter and Nick Pentz traded in their Holstein herd to concentrate on winemaking at their property in the Darling Hills on the Cape West Coast. Immediately, their wines were recognized by the press, kicking off a successful transition into the wine business. The history

of Groote Post dates to the early 1800s when it was established to protect the area’s livestock. Today the Pentz family has planted the estate with 122 hectares of vines on the farm’s well-drained clay soils. The vineyards are cooled by Atlantic Ocean breezes allowing the grapes an extended period of maturation for optimal flavour and complexity.

Chioccioli Altadonna CHIANTI

Brothers Niccolò and Enrico Chioccioli Altadonna were born and raised in the lively market town of Greve in Chianti. Their father, Stefano, was (and remains) a highly sought-after consulting oenologist of international repute. With his blessing and guidance, Niccolò and Enrico acquired vineyards including plots in top

Chianti Classico sub-zones: Gaiole and Quercegrossa. Their yields are kept extremely low and vineyard work is meticulous to ensure pure, pristine-quality fruit. Niccolò is the estate winemaker, while Enrico is a master distiller producing artisan gin, vodka, and vermouth from the brothers’ Winestillery project, the first of its kind in Chianti.

Sourced from among Chioccioli Altadonna’s best vineyard plots in the Chianti Classico sub-zones of Gaiole in Chianti and Quercegrossa, the Altadonna Riserva 2018 cuvée has impressive depth and complexity. The nose is quite discreet but slowly develops floral and dark fruit aromas interlaced with licorice and hints of cumin. The palate is crisp, taut, and richly layered with fruity, wooded, and spicy nuances all harmoniously balanced. Finishes long and dry. Needs a couple of years to unfurl but should age well for many years to come. 2025-2040 jb

This traditional method Blanc de Noir sparkling wine is produced from hand-harvested, gently pressed Sangiovese grapes fermented in stainless steel and terracotta egg-shaped amphoras. The still wine is then bottled, without dosage, and aged on its lees for 40 months. Inviting notes of shortbread, yellow pear, stone fruit, and white blossoms feature on the nose. The palate is fresh and rounded with ultra-fine bubbles and attractive anise notes. Very dry and sleek. Drink now. 2023-2025 jb

The Altadonna Chianti Classico is sourced from the same high-premium vineyard areas as the Altadonna Riserva cuvée. However, it is matured for a shorter period in barrel: just one year as opposed to the Riserva’s 18 months of ageing. This gives it a more youthful, fruit-forward appeal. The nose is very aromatic with its baked dark fruit, balsamic, and earthy notes. Initially, the palate is broad and fleshy but finishes firm with bracing acidity and muscular tannins. Great for hearty, tomato-based dishes. 2025 – 2040 jb 14.5%

Cinciano

CHIANTI

Perched atop a hill, on the Chianti Classico border, lies the Medieval hamlet of Cinciano, home to Tenuta Cinciano. The estate once belonged to the Church of Florence, with detailed records dating to 1126. In 1983, the Garrè family acquired the land and began an extensive restoration project: today, the property is a thriving winery and agriturismo, with wellappointed accommodations and a restaurant. The estate's 22 hectares of Sangiovese and two hectares of Cabernet Sauvignon, Merlot and Petit Verdot vines are interspersed with olive groves and cypress trees. This year, the estate also introduced four hectares of indigenous grape varieties such as Canaiolo, Malvasia Nera, Foglia Tonda, Malvasia Bianca and Trebbiano. Single vineyard vinification techniques and long, slow ageing give the wines of Cinciano their distinctive high quality.

Heady notes of baked cherry, plum, and prune fairly leap from the glass, with undercurrents of violet and smoked meat. Aged in small French barrels for just over a year, it has toasted, spicy notes lingering on the finish. 2023-2038 jb

Equally fruitdriven on the palate with generous proportions and a smooth, glossy texture. Finishes dry, with polished tannins that are already remarkably approachable. The Sangiovese character is a little more discreet on this vintage, whereas the dark fruit of Cabernet Sauvignon and fleshy, rounded nature of Merlot shine through. Focus on Tuscany

Is there a more romantic wine region than Tuscany? I doubt there is. Is there a more exciting and diverse wine region than Tuscany? Probably not, and here’s why.

Sangiovese, the “blood of Jove”, forms the backbone of Tuscan wines, but there are whites too: the dry and the thrillingly sweet. Tuscany’s suite of grapes includes the international alongside the local. Diversity creates exciting choices for adventurous drinkers. Whether you’re looking for a bright, young red or a barrel matured, complex and savoury wine, the answer is Tuscany. If you’re looking for one of the world’s most fascinating sweet whites, buy a Vin Santo. For fresh dry whites, well, Tuscany has that covered too.

The town of Montescudaio is a microcosm of Tuscany, so let’s start there. The regional Rosso DOC is made with at least 50% Sangiovese. Winemakers choose the blending varieties from a long list which includes Cabernet Sauvignon, Merlot and Syrah. Varietal Sangiovese is produced too. Thinking you’d like an Italian Chardonnay or a fresh, Lambretta-zippy, bianco to drink with seafood? Montescudaio meets your needs. With dessert?

A Vin Santo. This sumptuous wine is made from Trebbiano Toscano grapes, picked and dried for several months to concentrate the flavours and sugars. Matured for at least four years in small barrels called caratelli. To me, this precious liquid is a “meditation wine.” I revel in the winemaker’s patience that produces this gem.

Chianti Classico, bearing the top-of-the-tree DOCG status, is the flag-carrier for Tuscan reds. The last two decades have seen important changes to the wines. Traditional botti have recaptured the hearts of winemakers who had a brief dalliance with French barriques. Today’s wines are much finer, with elegant black cherry and violets seasoned with savoury tannins. Wines bearing the Riserva label have been aged for you for at least two years in wood, giving additional class. Pasta is the obvious pairing, but don’t overlook veal or Parmesan cheese.

Two lesser-known varieties deserve a mention. Vermentino is a white variety on the up. Tuscan Vermentino is at home in coastal regions such as Costa Toscana: refreshingly dry, it is served in the beachside trattoria. Ciliegiolo is a rediscovered red. Pronounced “cheeli-a-jolo” this grape used to be blended into Chianti. As Sangiovese rose in status, Ciliegiolo fell from grace. Restored to its pedestal by winemakers in the coastal district of Maremma, Ciliegiolo makes bright, fruit-filled wine with distinct cherry flavours.

So, if the question is “What am I drinking with tonight’s dinner?” the answer can always be “A bottle from Tuscany.” It won’t let you down.

Vignaioli del Morellino di Scansano

SCANSANO

The co-operative winery Vignaioli Morellino di Scansano was founded 50 years ago, and today this wine-producing group counts 170 members. Their combined vineyards make up 700 hectares of vines, primarily located in the Morellino di Scansano appellation within the Maremma region of coastal Tuscany. The co-operative members work in tandem to craft top-quality wines with marked terroir typicity. As in much of Tuscany, Sangiovese is the major grape variety planted here, but the sunny, dry climate allows a wide range of cultivars to thrive. Vignaioli Morellino di Scansano produces a diverse range of white, rosé, red, and sparkling wines.

Viognier is a famously aromatic white grape variety and the Vignaioli Morellino di Scansano Scantianum cuvée definitely meets this expectation. The nose brims over with perfumed notes of yellow pear, peach, and mango. The medium-weight palate is equally flavourful, with a certain softness in terms of its acidity and structure. Finishes dry with a very subtle, refreshing bitterness. This is a wine to drink in its youth, while the fruit remains brash and bold. 2023-2025 jb

London Dry is a classic category of gin with no artificial flavours or sweeteners. The aromatic character of these gins is derived from an infusion with natural botanicals during the distillation process. This is the traditional choice for gin-and-tonic lovers, with juniper as its primary aroma. The Winestillery London Dry Gin is produced in small batches using a 500-litre pot still. It has a clean, classic gin signature with bright juniper, citrus peel and herbal aromatics. The palate has a smooth, almost satiny texture with very pure, layered flavours of mixed, fresh herbs, lemon and juniper. Finishes dry and subtly warming, with refreshing minty nuances. Textbook London Dry gin with fragrant, multifaceted flavours. Great on its own or in any number of cocktails. jb

The Old Tom style of gin is slightly sweeter and richer than London Dry Gin. This type of gin was popular in 18th-century England but since fell out of favour. In recent years, Old Tom has been making a quiet comeback as craft gins proliferate around the globe. Winestillery makes small batches of excellent Old Tom gin in their 500-litre pot still. The nose is very fragrant with pleasing notes of lemon verbena, cucumber and nutmeg to complement the classic juniper aromas. Very lively on the palate with a smooth entry and excellent depth of herbal, orange peel, honeyed flavours. Finishes dry with a lingering fiery, peppery hint. A really flavourful gin that holds its own served neat or on the rocks. jb

Trebbiano is a common white grape variety in Tuscan vineyards. Its bright acidity and fairly neutral character make it an excellent base wine for vermouth production. Enrico Chioccioli Altadonna is the master distiller at his family’s Winestillery project. To make this dry vermouth, he first fortifies the fermenting Trebbiano with a neutral grape spirit before infusing it with traditional Tuscan botanicals and ageing the wine in seasoned French oak barrels. The exact mix of botanicals used to aromatize the wine is a carefully guarded secret. On the nose, intriguing notes of orange marmalade, Earl Grey tea, stone fruit and white spice feature. The palate is warming and broad, with mouthwatering grapefruit pith bitters that give lovely freshness to the finish. 2023-2026 jb

Italian Gin, Where Have You Been?

“Isn’t that the stuff that tastes like Christmas trees?” Is a common question bartenders will get when explaining a gin cocktail to newcomers at their bar. But is it true? Does gin taste like trees? The short answer is yes. Gin does taste a little like Christmas trees, but it has so much more to offer!

For those of you who haven’t dappled in a gin & tonic or sipped a more classic stirred gin martini, gin is a spirit distilled (or steeped with) a selection of botanicals that is most often juniper heavy.

Juniper is the berry responsible for the Christmas tree-like taste, but distillers often put other botanicals like lavender, lemon peel, cardamom or horus root to balance the flavour.

Several different types of gin exist but two of the most popular are Old Tom Gin and London Dry Gin. And as far as history goes… gin's roots date back to the Benedictine monks in Italy, which gives these Opimian products such a great story.

From where the Chianti wine tradition was originally born, Winestillery brings two new gins to the Opimian lineup that I’d love to introduce you to, because Chianti has so much more to offer than just wine!

The first is the London Dry Gin which comes in at 42% ABV (just a little extra kick). Underlying notes from the original wine distillate are prominent (and beautiful), but the gin also showcases a complex mix of cardamom, citrus, juniper and orange blossom. A classic Martinez, mixing 1.5 oz. Winestillery London Dry Gin, 1.5 oz.

Winestillery Tuscan Dry Vermouth and a bar-spoon of maraschino liqueur stirred on ice serves this gin to perfection.

The second gin, Old Tom, also comes in at 42% but packs a more delicate bouquet of honey, winter spice and mature oak. With a mildly sweeter palate, this gin makes for a perfect Gimlet by mixing 2.5 oz.

Winestillery Old Tom Gin, ½ oz. simple syrup, ½ oz. lime juice.

While the first gin is a perfect bottle to keep in the freezer and sip on ice or enjoy in more classic cocktails, the second is more suited to the modern cocktail and mixed drink.

So one bottle to hide in the freezer for yourself, and the other to share and enjoy with company…if they are so lucky!

A blend of 50% Malbec, 36% Merlot, 12% Cabernet Sauvignon and 2% Cabernet Franc that highlights the plush, fruit-led style of wine produced from the grapes grown on a portion of the Vilafonté vineyard. High density planting of the vines results in lower yields and optimal concentration. This is a rich wine overflowing with ripe black-fruit character perfectly offset by the warmth of barrel influence and smooth well-integrated tannins. A showstopper wine that will continue to evolve over many years. 2023-2037 lw

VILAFONTÉ SERIES C, PAARL, 2020

Cabernet Sauvignon, Merlot, Malbec, Cabernet Franc

Both the Series M and Series C wines are crafted by renown winemaker Chris de Vries. The 2020 Vilafonté Series C is a blend of Cabernet Sauvignon (58%), Merlot (24%), Malbec (10%), and Cabernet Franc (8%) that highlights the more muscular style of wine produced from the grapes grown on a portion of the Vilafonté vineyard. This wine offers the perfect balance of power and elegance with layers of blue and black fruit flavour supported by judicious oak and exceptionally well integrated tannin. 2023-2035 lw

54 CELLAR 301 — COLLECTOR’S CORNER VILAFONTÉ WAS NAMED OUTSTANDING WINE PRODUCER OF THE YEAR BY THE IWSC. 3880 VILAFONTÉ SERIES M AND SERIES C CASE, WOOD CASE $ 183 $ 549

Poco per Pochi is a blend of native Italian grapes, Sangiovese and Ciliegiolo, with international varieties Merlot, Cabernet Sauvignon and Syrah. The cuvée is an ode to both the traditional winemaking practices and spirit of innovation espoused by Vignaioli Morellino di Scansano. The grapes are vinified separately to allow their individual character to develop, then aged in five different types of barrels.

The result is a union of these unique components. From its deep ruby colour to its dense, full-bodied structure, this heady red wine has a commanding presence. Ripe dark fruit aromas mingle pleasantly with mossy, floral and tobacco-spice notes on the nose. The palate shows fine depth of flavour, lifted acidity and weighty, yet fine-grained tannins. Should cellar nicely for 15 years or more. 2025-2040 jb
