The 2021 Chloss, Arranz’s first natural wine, is made exclusively from handharvested Garnacha grapes, organically grown in the historic vineyards of Ribera Baja, Navarra. No other ingredients have been added.
Chloss is a perfumed and elegant wine recalling aromas of cranberry, red currant and cracked black pepper. Complexity continues on the palate with layers of red currant, raspberry and red plum that culminate in a satisfying peppery finish. With bright acidity and breezy tannin, serving this wine slightly chilled allows its fruit to shine. Spain: A Study in Contrasts
By Michael Palij MWSpain is a study in contrasts: its culture a mix of old-school Catholic conservatism and forward-thinking liberalism, its cuisine a blend of hearty traditional fare and innovative modernism, and its landscape and climate an assemblage of arid sun-baked plateaus and sea-cooled coasts. It’s unsurprising to discover that the diversity of Spanish wine captures this world of contradictions in a microcosm of elaborate diversity.
For many, Spain’s vinous calling card is Tempranillo, a shape-shifting grape that lends itself as well to brightfruited, supple quaffing wines as it does to complex, age-worthy cuvées. The region most strongly associated with this variety in the minds of most wine lovers is Rioja, an eclectic patchwork of terroirs that ranges from the Mediterranean warmth of Rioja Orientale to the more temperate Atlantic-influenced slopes of Riojas
Alavesa and Alta. Sprinkle in a dash of other grapes to add complexity to the blend – Graciano for brightness, Garnacha for warmth and Mazuelo (aka Carignan) for richness – and maturation regimes that range from the youthful unoaked joven styles, through crianzas
and reservas to the long-aged gran reservas, and you have a recipe for broad-ranging appeal.
Tempranillo is the cornerstone of red wines from other regions in northern Spain, too, even if it does travel under an alias in both Toro (Tinta de Toro) and Ribera del Duero (Tinto Fino and Tinto del Pais). In the latter, the grape is often seasoned with so-called international varieties, particularly Cabernet Sauvignon, leading to the creation of dark-fruited, firmly structured, long-lived wines. These international varieties – and others – are also widely planted alongside Tempranillo and Garnacha in Navarra, alongside a range of white grapes, notably some very fine Chardonnays and, perhaps surprisingly, floral Muscat grapes that make luscious dessert wines. This region, arguably the Swiss Army knife of Spanish DOCs in
terms of its versatility, is also renowned for making some of the country’s best – and most refreshing – rosados.
Garnacha – Southern France’s Grenache – is very much at home across a broad swathe of Spanish terroirs, especially in the northwest of the country. The most famous of these wines comes from the arid badlands of Priorat, where slatey llicorella soils force roots to dig deep. Garnacha and Mazuelo are vinified (usually separately, but sometimes blended with each other or with international varieties) in these Catalan hills to create heady, tannic red wines with surprising levels of freshness. Meanwhile, in the craggy sierras west of Madrid, winemakers in the Sierra de Gredos are overturning expectations of Garnacha’s typicity by using it to make bright, aromatic reds that are surprisingly light on their feet for a grape usually renowned for its heft.
You get similar levels of crunch and perfume from reds made from Mencía in Bierzo, a region bathed in Atlantic winds, and the red wines of Ribeira Sacra almost defy description in their idiosyncratic wildness. Oceanic influence also has its part to play in the peppery typicity of Tenerife’s Listán Negro – although, here, volcanic soils and altitude also help to determine style.
But Spain is not just about red wines, even though these tend to be the most visible fruits of the Iberian vineyards. Those
volcanic islands produce salty, smoky wines made from Listan Blanco, while the rain-swept Atlantic region of Rías Baixas is the source of zesty Albariños. Slightly further inland – but still strongly influenced by the ocean – you’ll find richly textured, aromatically restrained Godello in Ribeira Sacra and Valdeorras. This relatively unknown grape is a rising star in the Iberian firmament and, arguably, gives Burgundy a run for its money when on form.
Over on the northwestern side of the country, in Catalonia, diversity is king. Varieties that have long grown here are planted alongside newer international arrivals such as Chardonnay and Riesling. Rioja has its own suite of white wines, ranging in style from crisp neutrality to richly oaked traditional bottlings with layers of oxidative complexity. Viura is the main grape here, aided and abetted by the more floral Malvasia, heady Tempranillo Blanco and a range of other grapes.
That Viura – under its alias of Macabeu – is a critical component of the blend in Spain’s own take on traditional method sparkling wine, Cava, alongside Xarel·lo and Parellada. Quality is very much on the up, and these sparkling wines are increasingly sought after by aficionados of fine sparkling wines for their distinctive character.
This is far from being an exhaustive list of Spain’s vinous treasures – there’s simply not enough space here to delve much deeper – but it would be remiss not to mention Jerez, a region that embodies diversity with a portfolio of styles ranging from bone-dry wines aged under flor to the layered complexity of oxidatively aged olorosos, palo cortados and amontillados and the unctuous sweetness of wines based on Moscatel and Pedro Ximènez grapes. And if you fancy a change from wine, don’t forget that Spain also offers vermouths and gins – just right for a pre-prandial palate sharpener – and world-class brandies too.

Chardonnay
The 2021 Pearl Morissette Coup de Cœur captures the essence of the Niagara region in a glass. It is a notably aromatic example of Chardonnay made from vines grown in the red clay soils of the 24-hectare Redfoot vineyard. The property, located in the Lincoln Lakeshore viticultural area, is heavily influenced by the moderating effect of Lake Ontario. Here the mild climate and the long growing season allow the grapes time to slowly ripen while they develop maximum flavour. Elegant from the first aromas through to the extended finish, this wine offers an expressive bouquet of honeydew melon, peach, apple and lemon scents that are reinforced on the palate. Elevage in 10% new oak demi-muid and 90% foudre, in addition to eight months spent on lees, adds depth and texture to the wine. Fresh acidity perfectly supports the fruit creating a seamless balance. This wine is immediately delightful but also has the capacity to evolve in cellar. The best part? Opimian Members now have exclusive access to this small-lot Canadian gem. We were fascinated by their passion for Pinot Noir – and the wine lived up to its stellar reputation. We are thrilled to be able to offer a limited parcel of the 2020 Foxly Opimian Special Reserve Pinot Noir to our Members and look forward to sharing more wines from the portfolio as they become available. A swirl of this delicately-hued wine releases a bouquet of cherry, red currant and plum wrapped in the warmth of toasty oak. The palate is notably concentrated with the red fruit profile evolving to flavours of strawberry, cranberry and plum. What is the origin story of Lightfoot and Wolfville? What is the meaning behind the name?
The name of the winery - “Lightfoot & Wolfville” - represents the connection of people and place (Lightfoot is our family surname and Wolfville being the name of the town), a relationship that is at the heart of everything we do. While our journey in wine growing first began in 2009 with the initial planting of grapevines, our family’s farming roots go back eight generations in the Annapolis Valley; four generations on our current home farm land where the winery sits today. Today, we manage nearly 40 acres of estate-owned vineyard and work with a few likeminded local grape-growing partners. Our first wine products were launched under the Lightfoot & Wolfville brand in 2015 to great critical acclaim. The Lightfoot & Wolfville hospitality facility, opened in 2017, features a wine shop, tasting room, restaurant and full-service event venue where we serve our wines alongside local, in-season ingredients, connecting guests with the unique terroir of Nova Scotia.
What makes the Annapolis Valley a great wine region?
The Annapolis Valley is a long, relatively narrow valley located on the western edge of Nova Scotia, situated between two parallel mountain ranges, along the shores of the Bay of Fundy.
Close proximity to the Bay of Fundy and the world’s highest tides creates an incredibly unique growing environment with tremendous potential for the production of distinctive coolclimate wines. Our 38 acres of estate vines are planted on two distinct sites along the shores of the Minas Basin, an inlet of the Bay of Fundy, where hilly slopes extend the frost free period and provide excellent exposure. Natural airflow and incessant saltwater breezes off the basin provide an important moderating effect, especially critical during the winter months when temperatures dip below freezing.
What vinification techniques do you use? Are there any winemaking traditions that you wish to preserve?
Throughout our processes, we constantly strive to strike a balance between respect for tradition and pushing innovation. We identify as winegrowers rather than winemakers and see the vinification process as an extension of our work in the vineyard where our aim is to produce the highest quality fruit possible, allowing for minimal intervention in the cellar.
What is your approach to sustainability?
As multi-generational farmers, it is of utmost importance to us to leave our land to future generations in a healthier state, our soils enriched and free from chemicals. We believe that living soils grow healthy, balanced vines which bear better quality fruit, and ultimately produce wines that convey the purest spirit of place. Our commitment to sustainable agriculture practices has led us to successfully pursue organic certification through Ecocert Canada and Biodynamic certification by Demeter Canada. We are proud to be Nova Scotia’s first biodynamic winery and currently one of just five wineries in all of Canada to carry the stringent Demeter certification.
Which wine(s) are you most proud of? What is your favourite grape variety to work with?
We are proud of our entire portfolio but our sparkling wines specifically have helped to put Nova Scotia on the world wine map as a serious wine-producing region with world-class quality, as evidenced by critical acclaim, awards and representation in international markets such as the UK, Bermuda, Turks & Caicos and Japan.
What does your collaboration with Opimian and its Canadian Members mean to you?
We have long admired Opimian and your focus on celebrating wines of great distinction, and we are honoured to have been asked to collaborate. We hope this feature helps to share the good news story to fellow fine wine lovers that Nova Scotia is making unique wines of exceptional quality.

The wine world is buzzing about pétillant naturel or “pet nat” wines. In this ancient method of making sparkling wine, the one fermentation finalizes in the bottle, trapping the bubbles inside. It is also common for these wines to be hazy, or have sediment, as they are often not disgorged. The 2021 Lightfoot and Wolfville Small Lot Pétillant Naturel has a cloudy lemon hue and generous complexity. An enticing dance between its peachy, apricot stone-fruit notes and its savoury leesy bread dough side takes place on the nose and the palate. Cava is a sparkling wine produced in the Catalonia region of northeast Spain. Produced in much the same way as Champagne, with a secondary fermentation in bottle, Cava is made primarily from local grapes: Macabeu, Xarel-lo, and Parellada. These signature varieties, grown in a Mediterranean climate, yield traditional-method sparkling wines with a broad, earthy profile and dry finish.
This easy-drinking, orchard fruit and lemonscented Cava features a traditional blend of native grapes Macabeu, Xarel-lo, Parellada. The wine is aged for 18 months to two years on its lees, giving a subtly creamy mid palate and hints of digestive biscuit on the finish. The Proyecto Cu4tro Cava counts a small portion of Chardonnay in the blend, bringing added elegance and lift. This is quite an intriguing wine with very ripe, sweetly scented yellow fruits and spice on the nose. In contrast, the palate is very dry with vigorous mousse and crisp flavours of lemon, green apple and savoury undertones. Nutty, savoury hints linger on the finish. 2023-2026– jb

After a 20-year career managing exports for two important Penedès wineries, Josep Maria Suriol decided to branch out on his own. He began by handpicking interesting wineries from across his native Catalonia with the ambition to grow their sales around the world. Today, Suriol’s company, PepWines, is a family affair with its own exciting wine brands made to rigorous quality standards.
The Leonor de Carrera Cava is lighter than the Tarrida, with a softer palate profile. The nose offers restrained floral and stone-fruit aromas, with hints of fresh hay emerging over time. Bodegas Concavins produces an array of still white, rosé, red and sparkling Cava wines from both local and international varieties. The estate is based in Barberà de la Conca, near the Medieval fortified town of Montblanc. The area is charged with a rich cultural heritage. Viticulture was introduced by the Phoenicians and propagated by the Romans. After several centuries’ decline under Moorish rule, winemaking once again flourished with the Cistercian monks. Bodegas Concavins has a history of grape growing in the region dating back many generations. Their respect for the land and commitment to exacting winemaking standards definitely comes through in the glass.

Garrut is the Catalan name for the Monastrell grape, referred to as Mourvèdre in France. This classic red variety has distinctive meaty, herbal aromas and chiselled tannins. A full-bodied Tempranillo blended with a 15% Cabernet Sauvignon to reinforce its tannic framework. Ripe dark fruit features on the nose, with subtle underlying florality. The Bodem Bodegas winery, owned by the Geirnaerdt/Van Ekeris family of Axial Vinos, is located in Almonacid de la Sierra at the foot of the Algairén mountain range: the region specializes in Garnacha which has been grown here for over 2,000 years. The hot summer days cool off dramatically at night, allowing the grapes to retain their acidity while they ripen. A strong wind called “El Cierzo” blows through the vineyard, naturally eliminating pests. The family owns seven hectares of vineyards and works closely with local growers to source fruit from an additional 55 hectares. The wines of Bodem Bodega are vegan and have a net zero impact on the environment.

Rioja – Onwards and Upwards
By Giles Cooke, MWMy first professional visits to Rioja were in 1994 & 1995, coinciding with two vintages that were subsequently highly lauded, and still capable of delivering delicious wines today. I vividly recall stepping off the plane at Bilbao airport and being greeted by that unmistakably Spanish waft of rich, musky tobacco. Those visits were the catalyst for a career-long love-affair with a region that many call the most under-valued fine wine region in the world.
Much has changed since then, including the ubiquitous presence of tobacco, and in Rioja too, things are changing for the better. This beautiful region which spans 120 kilometers West to East, defined by the Sierra Cantabria to the North and by the Sierra de la Demanda to the South, has a winemaking history that dates back to the bronze ages. Divided by the mighty Rio Ebro, it possesses a unique light which, when the vines are resplendent in their autumnal hues, provides some of the most breathtaking views in the world of wine.
Its modern history has been built upon a quality system which relies on time in barrel rather than quality or provenance of fruit sourcing. This time-honoured system has, without a doubt, produced many world-class wines from revered producers steeped in history – but it has not necessarily highlighted the incredible diversity that this region could offer.
While consumers were trained to buy solely on age and time in oak, the need or in fact the ability, to say anything more
detailed on fruit quality or sourcing was restricted. With very few single estate wines and most producers relying on a mention of zone ( Rioja Alta, Alavesa or Oriental) at most, there was little opportunity to provide more detailed information, as one might find in Burgundy for instance.
That has all changed now, with the Consejo Regulador, finally giving in to calls for much greater detail to be allowed on labels. Now, we are allowed to mention the name of a single vineyard or the village (pueblo) from which the fruit
was sourced. Indeed, some of the most exciting wines in Rioja are now coming from producers who are eschewing Rioja’s traditional quality system and concentrating more on beauty of individual sites.
Of course, provenance doesn’t always guarantee quality, and there will continue to be world-class wines made from the traditional producers, but with this new exploration of Rioja’s diverse terroirs, it is not unreasonable to think that the best wines from Rioja are still to be made.
BODEGAS MARQUÉS DE REINOSA
The vineyards of Bodegas Marqués de Reinosa sit in a natural amphitheatre created by the Sierra de Yerga and Peña Isasa. The winery is named for D. Joaquín Garralda Oñate, Count of Autol and Marquis of Reinosa. The town of Autol, where the winery is located, was established by Oñate and is recognized as the first in the country to export wines outside of Spain.
As the wines of Rioja scale the quality ladder, the minimum time that they are required to age also increases. Red wines labelled Crianza may be released in their third year, if they have spent at least 12 months in barrel. Reserva reds must mature for a minimum of three years including at least 12 months in barrel and six months in bottle. The highest quality classification of Rioja is Gran Reserva: red wines in this category must be matured for a minimum of five years including at least two years in barrel and two years in bottle.

Agustin Maillo is a third-generation restaurateur, a business that began with his grandmother, Quica, in 1974. The family has always made wine but previously only for friends and family. Mauricio Lorca
For many Opimian Members, the name Mauricio Lorca is synonymous with Argentina, as we have been enjoying his wine from the Uco Valley in Mendoza for many years. However, in 2017, while traversing northern Spain on the Camino Trail, the beautiful Ribeira Sacra region also caught Mauricio’s attention. The terrain here is so hilly, the slopes can be up to 70 degrees. Tending the region’s vineyards is such a challenge, it is referred to as heroic viticulture. In our 2022 Spanish Cellar, we introduced Mauricio’s wines from Casa de Outeiro. This year, we are excited to be able to build upon this offer with the Opimian premiere of Mauricio’s second winery Viñas de Belesar.
Casa de Outeiro’s Origen wines are light and fresh, reflecting the land on which the grapes were grown while the select fruit of the Escudo wines provide this range with additional complexity and intensity.

Bodega El Lomo
Félix Rodríguez created the Bodega El Lomo in 1989 in the heart of Canary Island wine country, the ancient valley of Tegueste. The winery focuses on native grape varieties, grown and vinified to express the best of their terroir and varietal character. The wines are made with wild yeast and minimal sulphur additions. They are all certified vegan friendly.
The Listán Blanco grape was brought to the Canary Islands by 18th-century Andalusian conquerors. This same grape is called Palomino Fino in the Jerez region where it is used for sherry. The Höpler winery is located 45 minutes southeast of Vienna along the northwest shore of Lake Neusiedl. Here the family’s 50 hectares of vines thrive in the mineral-rich soils of the Leithaberg Hills. While the Höpler family has been making wine in Austria since the 1860s, it was Jost Höpler who
established the modern winery in the 1980s. In 2007, Jost handed the reins to his son, Christof, who took over as owner and winemaker. The Höpler winery is certified by Sustainable Austria. The vines are watered exclusively by rainfall, and they do not use pesticides. Höpler wines are vegan.

West Coast Distillers is a story of two long-time friends with a common thirst for adventure. In 2017, Shane Bebington, former bar owner turned craft gin producer, and Shane Smith, owner of a sailing tourism company, created the distillery. Nestled in the idyllic town of Langebaan on the Western Cape of South Africa, West Coast Distiller makes a distinctive range of gin, vodka, bitters and liqueurs.
Don’t be alarmed by the ominous name. This fullbodied, highly aromatic gin is made with the edible black nightshade berry (Solanum nigrum) – not the poisonous and deadly nightshade (a.k.a. Atropa belladonna). The berries are infused after distillation, imparting a subtle sweetness and tart fruity flavours that compliment the classic juniper and spicy orris root notes nicely. Great over ice or add tonic to see the light lilac hue turn a vibrant raspberry colour.– jb

The Tronk Voël Naartjie vodka from West Coast Distillers is infused with the local naartjie fruit: these orange-skinned citrus fruits are reminiscent of mandarins. This is a smooth, rounded style of vodka with fragrant citrus flavours and a fresh, fruity finish. According to the distillery, Naartjie Vodka is great in a Vodka Rock Shandy (lemonade, soda, bitters) and makes a very refreshing Cosmopolitan.

Tronk Voël is the term for “jail bird” in the Afrikaans language. The name refers to the extended prohibition that South Africa underwent during the Covid-19 pandemic. The distillers at West Coast spent this time perfecting their premium vodka recipe. Clearly it was time well spent! This classic, slow-distilled vodka is very easy drinking with its clean, pure, ultra-smooth taste. You’ll also love the whimsical packaging that perfectly captures the jail bird spirit.

The Toro appellation lies to the west of Ribera del Duero, along the Duero River. This small vineyard region is known for its particularly bold, dense red wines. The star grape is Tempranillo, though it is referred to by its local name, Tinta de Toro. The Alma de Gildo 2020 Toro is made from venerable old vines, between 40 and 90 years in age. The high-altitude vineyards, perched at 700 to 800 metres, boast diverse soils of sandy loam and calcareous clay. The result is a powerful, tannic red wine with intense dark fruit and cedar and spice notes from wellexecuted ageing in French oak barrels. Priorat is one of only two Spanish wine regions to hold a DOCa appellation status, alongside Rioja. This is the highest quality ranking for the country. While Tempranillo is the major grape in many of Spain’s best red wine regions, Priorat’s fine wines are produced from Garnacha (a.k.a. Grenache) and Samsó, the local name for Carignan. Located inland from the Catalan city of Tarragona, Priorat boasts a hot, dry climate with high-altitude vineyards and signature llicorella soils (a mixture of decomposed slate and quartz). Olim’s Trosset de Porrera 2018 is a fine example with its weighty, dense character and heady notes of ripe fruit over complex spiced, floral and savoury nuances. The Bodega Pagos del Moncayo Prados Fusión is a blend of Garnacha and Syrah. The Campo de Borja appellation is located in Aragon, southeast of Rioja. Garnacha is the major grape here, grown on limestone-rich slopes. The 2022 cuvée is weighty and firm, with an interesting transition from vibrant red fruit and spice notes on the nose, to headier dark fruit, herbal, mocha tones on the palate. This Rueda was carefully crafted from a blend of 50% mature bush-vine fruit and 50% grapes of younger cordon-trained vines. The grapes harvested from the bush vines were fermented in oak and then matured sur lie in French and American barrels for four months. The fruit of the cordon-trained vines was fermented at a cool temperature before resting on its lees for four months in stainless steel. The result is a wine nuanced with layers of flavour and texture. 2023-2026– lw
The El Aprendiz Blanco from Leyenda del Páramo is made from the rare Albarín Blanco grape. This indigenous grape had almost disappeared from the Castilla y Léon area but is slowly making a comeback. The Seekat gin features an enticing blend of eleven botanicals, including some uniquely South African additions. Floral notes from local fynbos (South African shrubland vegetation like rooibos and honeybush) and hibiscus mingle with citrus hints and spicy undertones. This is a highly aromatic gin with a spicy, lifted finish. Drinks very well on the rocks.

Bodega Gómez de Segura is a 53-hectare estate in the highly esteemed Laguardia municipality, in the high-altitude Alavesa sub-zone of Rioja. Established in 1948, the third generation of the Goméz de Segura family is now running the winery. The family attributes their success to their old-vine plantings of Tempranillo and Viura, which thrive in the Mediterranean climate of Rioja Alavesa with its warm days, cool nights and freedraining clay-limestone soils. This Tempranillo-based Rioja is made using the carbonic maceration technique. The grapes are not crushed before fermentation which allows an intracellular reaction within the grape gradually causing them to burst, mixing with the yeast and starting fermentation in the traditional manner. This process gives vibrant fruit flavours and softer tannins. The 2021 is medium in body with mouth-watering acidity and a fine, chalky texture. The Vendimia Seleccionada (or harvest selection) red is very youthful, with its deep purple colour, tangy acidity and pronounced fruity flavours. The Reserva de la Familia is a premium Tempranillo-based Rioja from Goméz de Segura. The wine is aged in new French oak barrels for 12 months, followed by over 24 months in bottle. This extended ageing period allows the wine to harmonize before release. The 2017 is a powerful wine with excellent depth of flavour. Notes of dark fruit, bright citrus hints and subtle barnyard hints bring a lot of complexity to the nose. Very fresh with fine-grained yet still tightly wound tannins. Decant an hour and serve with boldly flavoured (though not spicy) dishes. 2024-2036–jb
The Finca Ratón Reserva Rioja is made from a unique, south-facing vineyard slope of stony clay-limestone soils, boasting 65-year-old Tempranillo vines. The southerly exposure and low yields from this site ensure optimal ripening of concentrated, flavourful grapes. Aged 12 months in new French oak barrels and over two years in bottle, the 2017 is weighty and moderately firm with a dense, layered texture. Intense aromas of ripe dark fruits and floral nuances give way to herbal, savoury nuances on the long finish. 2023-2037– jb
