Exploring the diversity of French Terroir

When the average wine lover thinks of France, they think of the usual suspects - Champagne, Bordeaux, maybe the Rhône. No harm, no foul – these are great regions. When an Opimian Member thinks of France, they have a far broader reach and understanding. Great wines and spirits are made throughout the country, many available exclusively to Opimian.

As you read through this Cellar, keep in mind that our Masters of Wine have tasted and selected each of these wines and, as an Opimian Member, you are one of the chosen few Canadians to know about them, let alone have an opportunity to enjoy them. Long-time Opimian champion and friend, Floris Lemstra, along with his family, have grown Vignobles Canet into a leading winery in Languedoc-Roussillon. Their wines are among Members' favourites every year. Coupled with Maison Le Breton (you'll remember them as BLB Vignobles), you have a wide selection of stellar wines from this region. We'd like to take a moment to congratulate Bruno and Morgane of Maison Le Breton for achieving certification as a 'B Corporation'. This is a highly sought-after recognition of high standards of verified performance, accountability, and transparency around social and environmental change.

We continue to improve your choices from the Loire and Provence. Often living in the shadow of the better-known regions mentioned above, these appellations deliver superb quality and value. While Chenin Blanc from the Loire and rosé from Provence are the standard-bearers, your Masters of Wine have found standout bottles throughout the category.

If you haven't tried them already, it's time to consider the wines of Domaine Orenga de Gaffory from Corsica. These organic wines, from indigenous varieties, benefit from the breezes from the Mediterranean Sea. So unique. So delicious.

DOMAINE CANET MALBEC, IGP PAYS D'OC, 2022

For the first time in the winery’s history, Château Canet winemaker Floris Lemstra has created a 100% Malbec from the tiny .78-hectare plot that he planted seven years ago. Up until the 2022 vintage, Floris has only used this fruit in his estate’s blends; however, over the years, he has noted the increasingly high calibre of the grapes as the vineyard continued to mature and knew it was destined to make something special. In honour of Opimian’s 50th-year celebrations, the entire small batch of Domaine Canet Malbec is reserved for Opimian Members.

Château Canet, located in the Minervois region of the Languedoc, has been owned by the Lemstra-Bake family – Floris and Victoria along with their children Oliver and Charlotte – since 2007. The vineyards, planted on limestone and clay soils, benefit from both the cool Atlantic breezes and the warm Mediterranean winds. The 115-hectare estate is also home to a state-of-the-art cellar, a three-hectare olive grove and a collection of nine guest gîtes. Sustainability and social responsibility are at the heart of the family’s core values. The property has been awarded HVE 3 status, the highest tier of the French Ministry of Agriculture’s sustainability system and has been following the sustainable winegrowing standards of Terra Vitis since 2003.

The deep ruby purple hue of Domaine Canet Malbec leads to a bountiful bouquet of blueberry, plum, mocha, blackberry, blackcurrant and violet. This generosity carries forth on the palate with flavours that echo the aromas. Ripe well-integrated tannins frame the core, providing the structure and balance to allow this wine to continue to evolve over the next five years. 2023-2028–lw

The Sunshine Grapes of the LanguedocRoussillon

Stretching along the Mediterranean coast from the Spanish border to Provence, the LanguedocRoussillon is France’s wine powerhouse. Over one-third of all French wine hails from this warm, sunny area.

The region’s vineyards cover large swathes of land from the flat coastal plains to the foothills of the Massif Central and the Pyrenees. Given the wide diversity in topography, altitudes, and soil types here, the area has been carved out into specific, origin-protected vineyard zones.

The larger, regional designations are called IGPs (Indication géographique protégée). These zones make up almost three-quarters of Languedoc-Roussillon wine production; with the most notable being the vast IGP Pays d’Oc. IGP varietal wines are often excellent value, with plenty of easy-drinking appeal.

The Languedoc-Roussillon also has a multitude of smaller, more terroir-specific growing appellations, called AOPs (appellation d'origine protégée). Red wine blends based on Grenache, Syrah, Carignan, Mourvèdre, and Cinsault are most common here. These full-bodied wines often boast a pleasingly velvety texture and ripe, heady dark fruit flavours. The dry Mediterranean climate of the Languedoc-Roussillon, buffeted by strong prevailing winds, keep vineyard pests and diseases to a minimum. This has facilitated the transition to more sustainable viticulture in the region. Today, the Languedoc-Roussillon is the largest organic wine producer in France. Numerous grape varieties thrive on the Languedoc-Roussillon’s patchwork of clay, limestone, schist, shale, granite, rocky, and sandstone soils. Let’s discover just a few favourites that you might come across in this cellar offering.

MAJOR RED WINE BLENDING GRAPES OF THE LANGUEDOC Grenache

Grenache thrives in hot, dry climates producing generous, rounded wines with moderate acidity, fragrant red fruit flavours, and smooth tannins. With age, Grenache wines take on attractive notes of fig, prune, mocha, and tobacco. In red blends, Grenache provides body and fruit to counterbalance more tannic, firmly structured grapes like Syrah or Mourvèdre. *** Lledoner Pelut is a mutation of the Grenache Noir grape. It ripens earlier, giving wines with slightly lower alcohol, brighter acidity, and an attractive spicy, savoury character.

Syrah

In warm climates, Syrah produces deeply coloured, full-bodied, and tannic wines. The best examples have excellent ageing potential. Notes of black olive tapenade, ripe dark fruits, violets, chocolate, and spice are common in Languedoc Syrah. Over time, savoury undertones and resinous notes can develop. Syrah’s floral perfume, spice, and tannic framework make it an ideal blending component.

Carignan

The vigorous Carignan grape suffered a poor reputation for many years in the Languedoc as it was primarily used to produce mass quantities of insipid red wine. Now, older vines producing significantly lower yields give attractive peppery wines, with bright red and black fruit flavours, deep colour, and firm tannins.

Mourvèdre

Mourvèdre is bold, tannic grape with black and blue berry aromas, wild herbal notes, and savoury nuances. Its vibrant acidity, full body, and grippy tannins make it a good blending component for structure. As a varietal wine, Mourvère can requires time in bottle to soften.

Cinsault

The Cinsault grape is supple and light, with tangy fruit flavours of strawberry, red currant, and cranberries. Its smooth texture makes it an excellent candidate for rosé production, and a good grape to soften bold red wines.

Grenache

These two white wine grapes are colour mutations of the Grenache variety. They are both drought resistant and can withstand heat, making them ideally suited to the Languedoc-Roussillon. Generally found in white wine blends, Grenache Blanc gives a soft, rounded wine with bright apple and delicate stone fruit hints. Grenache Gris is more voluptuous on the palate with headier apricot / peach flavours and spicy undertones.

Piquepoul

This grape, also called Picpoul, or Picpoul de Pinet, is native to southern France. It is prized for its high, zippy acidity – a rarity in such a warm climate. Piquepoul wines are often citrussy, dry, and crisp. They make for a great summer apéritif.

CELLARING POTENTIAL

Viognier

Beloved for its fragrant perfume and satiny texture, Viognier is a common feature in Languedoc blends and varietal wines. Viognier wines can lack acidity when the grapes are over-ripened. However, when picked at optimal maturity, the variety produces bright, peachy, floral whites with considerable charm.

Rolle

Often referred to by the name Vermentino, this grape can be crafted into a variety of white wine styles depending on how and where it is grown. Light, crisp, unoaked versions are most common. The best among them feature herbal undertones and refreshing hints of salinity.

The 2021 Pearl Morissette Coup de Cœur captures the essence of the Niagara region in a glass. It is a notably aromatic example of Chardonnay made from vines grown in the red clay soils of the 24-hectare Redfoot vineyard. The property, located in the Lincoln Lakeshore viticultural area, is heavily influenced by the moderating effect of Lake Ontario. Here, the mild climate and the long growing season allow the grapes time to slowly ripen while they develop maximum flavour. Elegant from the first aromas through to the extended finish, this wine offers an expressive bouquet of honeydew melon, peach, apple and lemon scents that are reinforced on the palate. Elevage in 10% new oak demi-muid and 90% foudre, in addition to eight months spent on lees, adds depth and texture to the wine. Fresh acidity perfectly supports the fruit creating a seamless balance. This wine is immediately delightful but also has the capacity to evolve in cellar. The best part? Opimian Members now have exclusive access to this small-lot Canadian gem. The term “Blanc de Noirs” on a bottle of bubbly refers to a white wine made from red wine grapes. This 100% Pinot Meunier’s bouquet is a balance of toast and smoky red berries. The fruit-led palate is layered with flavours of cherry, cranberry and red currant. The core is supported by vibrant acidity, making this an excellent food wine. Pair with smoked salmon canapés. Cloudsley Cellars is a boutique winery, located in Vineland, Ontario that specializes in producing Chardonnay and Pinot Noir that evoke a sense of place. Drawing on his 20 plus years of experience as a wine professional, founder Adam Lowy is inspired by his love of Burgundy and his appreciation of the unique Niagara terroir to create elegant wines that reflect the cool climate of the region.

The 2019 Cloudsley Cellars Homestead Vineyard Pinot Noir is a single-vineyard wine crafted from fruit grown in Niagara’s Twenty Mile Bench appellation. This is a Burgundianstyle Pinot with an evolving bouquet of cherry, leather, balsamic and cured meat. Upon the first sip, the palate expresses notes of cherry, strawberry and raspberry framed with fine grained tannin. An excellent match for beef carpaccio. 2023-2025– lw

Although it was difficult for him to land on a single answer, winemaker Derek Barnett shared that Pinot Noir and Syrah are his two favourite red wine varieties. The evidence is in the glass, with both of Meldville’s Pinot Noirs scoring top marks during the tasting. Made from hand-harvested grapes grown in the warmth of the Vagner Vineyards in Niagara on the Lake, the 2019 Meldville Barrel Select Pinot Noir is a study in complexity. The bouquet is layered with aromas of rose, cherry and red currant with a nuance of herb and smoke. The palate is a complement of fruity and savoury flavours with notes of rhubarb, cherry, strawberry, herb, talc and umami. Ready to open with the quality and balance to continue to evolve over the next decade. Four barrels produced. 2023-2032– lw

LANGUEDOC-ROUSSILLON

France’s Languedoc region extends inland from the Mediterranean coast reaching from the northeast border of Spain to the historic town of Nîmes. With an ideal climate for growing grapes, viticulture has been practiced here for 2,600 years. Hot dry summers transition into mild sunny winters while the persistent Tramontane wind cools and protects the vineyards. Soil composition is varied across this large region and includes clay, sandstone, marl, limestone and pudding stones. The Languedoc is known for its red wine blends; however, all styles of wine – white, rosé, sparkling and sweet – are also made here.

Katie Jones’s 12 hectares of oldvine vineyards are spread across low-yielding plots in Maury, Paziols and Tuchan. Katie exclusively grows traditional varieties which she vinifies separately to provide a clear understanding of each harvest’s quality. The wines of Domaine Jones are made in a converted train shed, a cherished landmark which provided accommodations for the Tuchan Express between 1905 and 1935.

In Tuchan, rain showers never seem to last long, and as the locals say, “après la pluie, le beau temps.” This unique blend of Grenache and Carignan has a touch of Muscat. This is a particularly special wine as the Carignan is the last lot remaining from Katie’s late husband Jean Marc. With its light cherry hue and light tannins, Katie refers to this expressive, light-bodied wine as a red rosé or a rosé red. It offers youthful aromas of cherry, strawberry, plum and lavender. A thread of minerality weaves through its core of bright strawberry fruit, tailing off into a slightly herbal finish. Serve slightly chilled to accentuate this wine’s bright red berry fruit. 2023-2025 – lw

Lledoner Pelut, is also known as “Hairy Grenache” due to its down-covered leaves. It is far less common than its non-hairy sibling. The Domaine Jones expression is made from organically grown, 50-year-old vines. The bouquet is a harmony of red berry and spice, underpinned by a hint of black earth and balsamic. Oliver Lemstra-Bake, the son of Château Canet’s winemaker Floris Lemstra, was born at Hospice de Beaune and grew up among the Grand Crus of Burgundy. These early years have influenced his own winemaking journey, with Chardonnay and Pinot Noir taking center stage at Domaine d'O.

The first sparkling wine can be traced to 1531 Limoux, almost two centuries before the making of the first Champagne. The Bulles d'O is a traditional method sparkling wine made from a blend of 90% Mauzac, 5% Chardonnay and 5% Chenin Blanc. Its bouquet is layered with the scent of apple, lemon, chalk and biscuit. Domaine Jouclary

The Cabardès is a small appellation located to the east of Minervois in southern France. Located 10 kilometres north of Carcassonne, Château Jouclary’s 30 hectares of windswept vineyards were acquired by Robert Gianesini in 1969. When Robert’s son, Pascal Gianesini, joined the family business approximately 20 years later, they doubled the property with the purchase of another 30-hectare plot. Today, the wine is made by Pascal from both Mediterranean and Atlantic varieties.

Proprietor Bruno Le Breton’s vision is to create an “everyday Grand Cru” in a socially responsible way. In 2013, the Domaine de la Jasse vineyards were certified “High Environmental Value” – a first in the Hérault department. Two years later, the company would become the country’s first family-owned winery to achieve the AFAQ 26 000 “confirmed” level 3 assessment.

Domaine Peter Sichel is an exciting new addition to the Opimian Wine Club de Vin portfolio. The estate was established by Peter Sichel more than three decades ago in the Cucugnan Valley in the Aude department in southern France. Three generations and several name changes later, Peter’s grandson, Alexander Sichel, took over the reins at the winery. He made several important changes at that time including renaming the winery after his grandfather. He also evaluated the vineyards, keeping only the most suitable. With the property now half its former size, Alexander began its conversion to organic and biodynamic agriculture.

Q&A Peter Sichel

Alexander Sichel tells us about his family winery, the history of his estate and his wines.

How did you and your family get started in the wine industry? Have you always been a wine lover?

The family business was established seven generations ago, in 1883, in Bordeaux. I grew up in Margaux (a village outside of Bordeaux) surrounded by vines and understood the importance of wine in our culture.

Wine represents a place in time, cultural traditions, values, and know-how that are passed on from generation to generation. I inherited my family’s passion and wine quickly became a pillar of my life.

What attracted you to the Vallée de Cucugnan in the first place?

Two things attracted me to the valley of Cucugnan. My grandfather planted these vines in the late 80s. He passed away in 1998, but I still feel a strong connection with him today.

Continuing a project, the vision that he had, is the main source of motivation. Furthermore, I believe with every cell in my body that these mountains have the potential to produce some of the greatest wines in the Mediterranean belt.

That is what’s special about the Valley. because of our mountainous climate, we can leave the grapes on the vines longer.

The longer you leave grapes on the vines before harvest, the more they absorb and reflect the place they come from, and eventually the more unique the wines will be.

How many people work at Domaine Peter Sichel? Which winemaking techniques do you use?

Five of us work in the vineyard or in the cellar on a daily basis. Most of our work is manual. No chemicals are used in the vineyard and we favour organic farming, as well as moon cycle influences and herbal teas to protect and help our vines.

In the cellar, we are very delicate, there’s no recipe, just a lot of attention and precision. the backbone of our reflection is to try to capture these mountains and put them in a bottle.

What is one of your favourite varietals to work with and why?

Grenache.

It is a fascinating grape. Depending on the choices you make, it can offer a very wide spectrum of different styles. Open a bottle of Montanha (Lot 4426 Montanha,

IGP Pays de Cucugnan, 2022) and you’ll be amazed to see how delicate, light and vibrant Grenache can be. You could almost mistake it for pinot noir.

If you open a bottle of Altura (Lot 4427 Altura 350, AOC Corbières, 2017) you’ll see how smooth Grenache can be after a few years.

Have a sip of Amassa (Lot 4430 Amassa, IGP de Cucugnan, 2019) and discover how incredibly profound, dense and complex this grape variety can be.

It’s too early to talk about, but the Grenache from the 2022 vintage that is currently ageing in the cellar smells like fresh roses…but more on that next year! Do you have a tasting room that Opimian Members can visit, should they be in the region?

With fewer than 150 cases produced, we are thrilled to be able to offer the celebrationworthy 2019 Amassa to Opimian Members. This single vineyard wine was carefully crafted from 100% Grenache grown in clay and red marl 400 metres above sea level. In the winery, natural yeast fermentation took place before one year of aging in barrel and amphora. In the glass, a deep ruby-purple hue foreshadows the luscious dark fruit that weaves from the nose through the core to the lengthy finish. The bouquet is perfumed with the scent of plum, blackcurrant, anise, olive, black earth and clove. The palate opens with pure blackcurrant and blackberry flavours that culminate in a refined finish of mineral and oak. PROVENCE

Provence is considered France’s first wine region with viticulture dating back 2,600 years. For many of us, the mention of this sun-kissed appellation conjures up images of the pretty pale pink rosés it is famous for, but the region also produces a small amount of red and white wines. More than a dozen grape varieties, including Grenache, Syrah, Mourvèdre and Cinsault, thrive in Provence’s poor but well-drained soils, soaking up an average of 2,800 hours of sun annually. The warm Mediterranean climate is moderated by the strong Mistral wind which blows from the north towards the sea.

CHÂTEAU SAINTE-CROIX

Situated between Lac de Carcès and the Abbaye du Thoronet in the Var department of southeastern France. Château Sainte-Croix was first established by Fernand Pélépol with the purchase of five hectares of vines in 1924. One century and four generations later, the vineyards have expanded to 50 hectares with siblings Florence and Stéphane Pélépol now at the helm.

This pale peach rosé is a blend of Merlot, Grenache and Muscat. A juicy pour with cranberry, raspberry and red currant flavours. Mouthwatering acidity and long finish make this a great choice for food and wine pairing. Match with caramelized onion, olive and anchovy pissaladière. 2023-2024–lw

In this Cellar, we are pleased to broaden the selection of Provence wines with the introduction of awarding winning producer Château Sainte-Croix. The Réserve des Anges is named for the “Angel’s share,” the term that describes the wine that evaporates during barrel aging. The angels, it is said, are known to take the best part, therefore an appropriate reference for the estate’s flagship wine which has matured in oak for 12 months. A blend of 70% Syrah, 20% Cabernet Sauvignon and 10% Grenache. Everything about this wine says luxury, from its deep ruby hue to its enduring finish. Pink Wine for Everyone

The world of French rosé is vast, with Provence the tip of the iceberg. Although often thought of as a singular category; rosé is a colour with multiple styles from all around France: dark or pale, easy-drinking or complex, dry or fortified styles, plus many regional varieties. Modern winemaking has raised the quality to ensure freshness and balance as well as greater longevity.

Before Provence-style was all the rage, the rosés from Anjou were popular, even being drunk by James Bond! These coolclimate wines have superb acidity and plentiful fruit thanks to their long, slow ripening. Rosé de Loire (dry) is made with varieties such as Gamay, Pinot Noir, Cabernet Franc and local varieties. To balance the vibrant acidity and enhance the fruit, a small amount of residual sugar is traditional in Rosé d'Anjou (off-dry) based on local variety Grolleau and Cabernet d'Anjou (sweeter off-dry), showcasing the violets and red berries of Cabernet Franc or the darker fruit notes of Cabernet Sauvignon. Hot, sunny and dry Provence produces elegantly bone-dry rosés with ripe fruit and soft acidity and is identified by its extreme paleness. Currently the on-trend rosé, its association with glamour and the Mediterranean lifestyle has contributed to its success over the past 20 years. These Grenache-based wines are blended with floral Cinsault, fresh Rolle (aka Vermentino), fruity Syrah, structural Mourvèdre or rich Tibouren in supporting roles. The key appellations are Côtes de Provence, fuller-bodied Bandol, fresher Luberon, Coteaux d'Aix and Coteaux Varois and regional IGP Méditerranée. Top wines show greater structure and complexity through time in barrel, concrete eggs or amphora.

France's largest rosé producer is, however, the LanguedocRoussillon consisting of a mosaic of rosé appellations, including regional Pays d'Oc IGP, weightier Côtes du Roussillon (near Spain) or Languedoc AOP, to highly localized, such as the historic rosé cru of Languedoc-Cabrieres, closer to the Rhône. The Languedoc shares Provence's Mediterranean varieties, often for a fraction of the price, with Pays d’Oc specializing in single varieties such as Petit Verdot, Syrah or Grenache, or atypical blends.

Outside of these main regions, France is home to an incredible wealth and diversity of rosés including Châteauneuf-du-Pape’s sister appellation, historic Tavel, with its darker pink, bolder structure and ageing potential; silky Pinot Noir rosés from Sancerre, Burgundian Marsannay and rare Rosé des Riceys in Champagne; Cabernet and Merlot-based pale rosés and darker clairet from Bordeaux; fortified ambré Rasteau and pale pink Muscat-de-Beaumes-de-Venise in the Rhône and, of course, sparkling pinks from Champagne and regional Crémants. There really is a rosé for everyone.

ELIZABETH GABAY has been specializing in the wines of southern France since the mid-1980s and has lived in the region since 2002. A Master of Wine since 1998, she was joined by her son Ben Bernheim in 2020, expanding the business of working with producers, education and writing about the wines. They have published a number of books on rosé including "Rosé, understanding the pink wine revolution" (2018) and "The Rosés of Southern France" (2022).

Domaine Orenga de Gaffory

Corsica is a French island located in the Mediterranean Sea, due north of Sardinia. Patrimonio, situated at the northern end of the island, was its first official appellation and has been making wine for more than 1,100 years. Patrimonio’s mild, temperate climate is influenced by breezes from the nearby Gulf of Saint Florent.

In 1967, Domaine Orenga de Gaffory was established by the Orenga de Gaffory family in Patrimonio. The winery specializes in indigenous varieties such as Vermentinu for white wine and Niellucciu for red. They also make a regional specialty, the sweet, fortified Muscat du Cap Corse from Muscat Petits Grains. The wines of Domaine Orenga de Gaffory have been produced organically since 2019.

Vermentinu

Made from the perfumed Vermentinu variety, the Orenga de Gaffory Blanc offers an alternative to the aromatic wines of Riesling or Gewürztraminer. The nose is floral and fruity with scents of orange blossom, cantaloupe, peach, apricot and nectarine. On the palate, generous flavours of lemon, lime, peach and orange zest trail into a mineral finish. 2023-2025

This Niellucciu-Grenache blend offers a maturing nose of leather, dried and fresh cherry, violet and balsamic. The palate remains youthful and layered with mineral, raspberry and cherry flavour. Its savoury bouquet, red fruit and fine lacy tannin make the Orenga de Gaffory Rouge an interesting alternative to Burgundian

The Orenga de Gaffory family are sweet wine masters. Their 2013 Muscat du Cap Corse is a truly delightful way to end a special meal. The bouquet overflows with the aroma of candied citrus peel and baking spice. While the palate is showing the beginning of evolution –with flavours of dried and fresh orange, quince and lime zest – it remains vivid and perfectly balanced. The long finish is adorned with notes of honey, clove and nutmeg. Outstanding value. 2023-2024 – lw

Maison Foucher

In 1921, Paulin Lebrun founded Maison Foucher in between PouillyFumé and Sancerre in France’s Loire Valley. Since 2013, the estate’s wines have been crafted by Marc Vappereau, a Dijon-trained winemaker who joined the winery in 2001. Marc creates wines with his heart and is on the constant lookout for special plots, or lieux-dit.

The vineyards of the Loire Valley stretch along their namesake river, the longest in France. While the region produces sparkling, white, red, rosé and sweet wine from several different varieties, the wines of the Loire are known for their crisp style, moderate alcohol and the ability to reflect a sense of place.

Maison RystDupeyron ARMAGNAC

Armagnac is more prestigious than one might think. It was one of the very first regions granted Appellation d'Origine Contrôlée (AOC) status in 1936 and, with a 700-year history, is actually the oldest recorded brandy in the world. Production is mostly shared between small, artisan distillers in contrast to Cognac’s more corporate canon of producers. Perhaps most reassuring is the fact that the French vouch for it – half of production never leaves Gallic shores.

A Maison of impressive heritage, Ryst-Dupeyron have been operating for 120 years, with cellars of similar vintage. Jacques-François Ryst keeps the family name alive; indeed, this is still very much a family business. The substantial paradis cellar guards Armagnacs over half a century in age.
