On the Bay of Biscay in Northern Spain, the Basque Country is close to the Pyrénées Mountains and the border with France. Weather fronts frequently blow in from the Atlantic, and any visitor to the coastal cities of Bilbao and San Sebastian will experience wet and windy weather quickly followed by bursts of sunshine. This region is part of what is known as “Green Spain," making viticulture here tricky. Yet, this is a gourmet paradise: San Sebastian's food market and pintxo bars are filled with excellent ingredients and innovative dishes. The region boasts some of Spain’s – and indeed the world’s – top restaurants. Light, easy-drinking spritzy wines produced from the Hondarrabi Zuri grape are de rigueur in the Basque Country and complement the wide range of seafood and fish dishes on offer. This wine has white fruits and a green leaf character. Hondarrabi Zuri is a vigorous vine that is late budding and resistant to fungal diseases – an essential factor in the damp climate.

Intense grapey aromas combine with leaves, fresh vegetation, and fennel. On the palate, redcurrant, sour cherry, and cranberry flavours show through. The black Hondarrabi Beltza grape bears no relation to the local white – both are named after the local town of Hondarribia; Beltza means black in Basque and Zirri white. Grapes were harvested by hand and left to macerate for six hours, followed by a cool fermentation.

ZARAUTZ Basque wines are light in alcohol at around 10.5-11%, with naturally high acidity and some spritz, reflecting the cool, damp climate. Wines are made from grape varieties not found anywhere else with simply impossible names for English speakers to pronounce. They are perfect accompaniments to the region’s gastronomic delights. Bodega Rezabal is at Zarautz, on the coast to the west of San Sebastian, in the Getariako Txakolina (Chacoli de Guetaria) DO. It is a family-owned winery with 24 hectares of vineyards on the best slopes of Zarautz, Getaria, and Aia, exposed to the sea breeze and salty marine air. Winemaker Ander Rezabal continues the work of his great-grandparents, cultivating Hondarrabi Zuri and Hondarrabi Beltza on traditional hightrellised vines.

Produced from selected Hondarrabi Zuri grapes, it was made using the traditional Champagne method, with a second fermentation in bottle and then matured on its lees for 18 months. It is supple with a creamy texture and ripe white fruit flavours leading to a lingering crisp, sour lemon finish.

However, we are diving deeper into Spain and taking you on a journey through fifteen Denominaciónes de Origen (D.O.), including the fascinating Getariako Txakolina in the Basque countryside, home of our cover producer, Bodega Rezabal. Opimian's largest selection of Spanish grape varieties ever offered to Members completes these regions. On the Diversity of Spain Jane Masters MW is Opimian’s Master of Wine

Spain produces a wide variety of wines from light, low alcohol, crisp whites to the rich sweet fortified wines of the south, and everything in between. The diversity arises as much from Spain’s history as from differences in regional geography and terroirs.

Spain’s wine history dates back to around 1100 BC when Phoenicians colonized the Mediterranean but was rudely interrupted for centuries under Moorish rule. In the Middle Ages, wine production was revived by Christian monks and since has seen periods of ups and downs linked to the Spanish Civil War and rule under General Franco. Today, Spanish wine is most definitely on an upward curve and is one of the most exciting places to explore. After France, Spain is the second-largest country in Western Europe and boasts more land planted to vines than any other country, although low yields mean it ranks only third in wine production volume. The Iberian peninsula is formed by mainland Spain and Portugal, and is almost fully surrounded by ocean and sea. Spain’s geography is dominated by a central plateau – the Meseta – which covers much of the country. The plateau tilts south and west with an average altitude of 600

metres. making Madrid the highest capital city in Europe. A series of mountain ranges – sierras – include the Pyrénées which form the border with France, the Cantabrian Mountains in the north and the Sierra Nevada in the south-east. Rivers play a starring role in wine country, with the Ebro flowing from the north through Rioja and Navarra into the Mediterranean sea. Rivers Tajo, Duero and Miño flow through Portugal and like the river Guadalquivir in Sherry country empty into the Atlantic. Spain’s diverse wine terroirs are a result of the relative influences of the Atlantic, the Mediterranean, local rivers, as well as surrounding mountains and their altitude. The north of Spain, known as Green Spain, is where the influence of the Atlantic Ocean dominates. Rainfall is high, temperatures are low with frequent incoming fronts blowing in from the Bay of Biscay. It is difficult to ripen grapes in the coastal Basque region around Bilbao and San Sebastian. Local grape varieties resistant to disease produce relatively low alcohol wines with tart acidity and some spritz. The northwest

corner that sits above Portugal is also exposed to the vagaries of the ocean, wind and rain, although the further inland we go, the lesser the impact. Rias Baixas, closest to the coast, is known for its crisp whites made from Albariño that pair perfectly with the local seafood. Further inland, Godello is planted for whites along the twisty hillside banks of the river Miño in Ribeira Sacra and in Valdeorras. Both also produce quality red wines from the Mencia grape. In Rioja, the impact of the Atlantic Ocean is tempered by the Cantabrian Mountains that lie between Spain's most famous wine region and the coast. The impact is a significant drop in rainfall, to the extent that drought can be a problem! Rioja DOCa vineyards stretch for 140 kilometres of the Ebro Valley as it runs from the mountains south-eastwards to the Mediterranean sea. The climate in the southeastern part is significantly warmer as the Mediterranean influence increases and a higher proportion of Grenache is planted there. Tempranillo, however, remains the dominant grape. Rioja wine styles were heavily influenced in the 19th century when négociants from Bordeaux came knocking as the Phylloxera pandemic had devastated France’s vineyards. Rioja wines became known for their distinctly oaky coconut flavours and light body. Ribera del Duero wines are also based on Tempranillo, locally known as Tinta del Pais, yet its wines are very different. Its vineyards in central northern Spain are located on the plateau, up to 850 metres in altitude on either side of the Duero River. Ribera del Duero has a more extreme continental climate with hot summer days and temperatures reaching 40°C, followed by cold nights, thus producing concentrated, firmer and more savoury red wines than Rioja. As the Duero River continues its journey westwards, Tempranillo has adapted to an even more extreme climate in Toro DO where it produces small thick-skinned tannic berries known as “Tinta de Toro”, and meatier, more rustic wines. Neighbouring Rueda is known for its dry white wines produced from Verdejo, and more recently, Sauvignon Blanc. Spain’s signature sparkling wine, Cava, is mainly produced in Catalonia in the hills behind Barcelona. Macabeo, Parellada, Xarello, Pinot Noir and Chardonnay are cultivated on limestone hillsides under a warm Mediterranean climate. Taking inspiration from the Champagne region in the 19th century, the same winemaking techniques are used. Catalonia also produces highly concentrated alcoholic reds in the Priorato hills, with more restrained reds and whites in Penedès and Conca de Barbera. Like many other regions, there is a revival of indigenous grapes such as Trepat.

Southern Spain is hot and dry with chalky white soils. Palomino grapes are used to produce world-class fortified sherry wines - from pale dry Finos and Manzanillas, whose taste is due to the development of a veil of flor yeast during maturation, to the dark, rich and nutty-tasting Olorosos. Sweet, dark, thick, treacly wines are also made from Pedro Ximénez (PX), not to mention solera aged brandies from Jerez. Spain is indeed an exciting wine country to explore!

WELCOME TO MAURICIO LORCA'S SPANISH WINERY.

In the northwestern corner of Spain, Galicia is known as “Green Spain” for its cool, damp climate influenced by the Atlantic Ocean's proximity. The region is decidedly different in terms of landscape and culture from other parts of the country. Galicia’s wine regions are marked by their distance from the Ocean and by the presence of the slow-moving 340-kilometre Minho River, a part of which forms the border with Portugal. One of its tributaries, the Sil, flows down from the Cantabrian Mountains to join the Minho north of Orense. At the confluence of the two, the Ribeira Sacra DO (“sacred hillside”) region is located on steeply terraced vineyards twisting and turning along the rivers’ banks. Further from the coast, the area has a more continental climate with long, hot summers. The appellation specializes in red wines made from Mencía, with a smaller amount of white wines produced from Godello, Treixadura, and Albariño. Argentinian winemaker Mauricio Lorca was drawn to Ribeira Sacra precisely because of its specialness and utter contrast to Mendoza. Working with two local partners, Noemi Alvárez Blanco and Juan Luis Vázquez, Mauricio’s first harvest was in 2020. Wines were made from a 5-hectare vineyard of 40-year-old vines at Casa de Outeiro winery in Quiroga in the east of the DO. And this is just the start: over the next five years, Mauricio plans to plant 23 hectares, making the project one of the largest in the area, and to build a new winery and tourist centre.

This is a dense wine with intense aromas of green peppers and spices. It is a smooth, concentrated, full-bodied wine with a fine texture and was matured for nine months in oak. Mencía is believed to have originated in northwest Spain and is perfectly adapted to the mountain. It is the same as the Portuguese variety known as Jaen, common in Dao, and it is thought that pilgrims returning from Santiago de Compostela took it back to Portugal with them.

Floral, sweet tobacco and herbal aromas with bitter fruits on the palate. It is light with a chewy, spicy finish and briefly aged in European and American oak barrels. 2021 was a cooler year than average, producing wines with naturally tangy acidity.

We have been enjoying Maurico Lorca's fine wines from the Uco Valley in Mendoza for many years. He even visited us in Canada a few years ago and met many of us face to face. In 2017, Mauricio, an avid mountain biker who is always up for a challenge, decided to ride across northern Spain on the famous Camino de Santiago. During this nine-day journey, he and his wife Brenda fell in love with the winemaking region of Ribeira Sacra. It was not just the breathtakingly beautiful views and the outstanding gastronomy that inspired Mauricio; he was captivated by the great lengths required to grow grapes on such extreme terrain. In fact, tending a vineyard in Ribeira Sacra is so difficult that the CERVIM, Centre for Research, Environmental Sustainability and Advancement of Mountain Viticulture, have given grape growing here an official term: “heroic viticulture.” With slopes up to 70°, the vineyards are carved into the hilly topography. Each narrow terrace is the width of two to three rows, making mechanization impossible. Grapes are not only hand-harvested here; they also must be carried down the bluff bucket by bucket. The seed had been planted, and Mauricio started to visualize himself making wine in this fascinating region. In 2019, Mauricio and Brenda, along with two partners, acquired the 600-year-old estate Casa de Outeiro in Ribeira Sacra’s sub-zone Quiroga-Bibei.

The wines from the Casa de Outeiro portfolio provide an opportunity to experience new varieties. Treixadura (trey-sha-dura) is a crisp citrusy white wine, which makes an interesting alternative to Pinot Gris or Viognier, while Godello (go-day-o) is reminiscent of a fruity Chardonnay or refreshing Chenin Blanc. According to Mauricio, the maritime-influenced cool climate and remarkable swing from daytime to nighttime temperatures allow the grapes to ripen slowly, accumulating maximum flavour while maintaining their mouthwatering acidity. He recommends enjoying his white wines alongside a plate of grilled pulpo (octopus), vieiras (scallops) or steamed mejillones (mussels). Mencía (men-thee-a), a black grape, produces wines with a red and green flavour profile that can be compared to a fresh Cabernet Franc or Carmenère. Through blending parcels grown in vineyards with different aspects, Mauricio’s wines offer layers of nuance and complexity.

This grape variety is usually found as part of a blend with other indigenous grapes. This wine has floral, earthy and smoky notes, and is quite broad in structure, with citrus characters, finishing with a sweet-and-sour impression. Virgen del Galir ÉNTOMA

Valdeorras, meaning “Golden Valley,” is the furthest inland of Galicia’s wine regions. It lies to the east of Ribeira Sacra DO and borders Bierzo in the Castile and León region. Its location means it is warmer in summer than other Galician regions with a more continental climate. Vines are generally planted on alluvial soils deposited by the Sil River, which runs through the region. The bedrock is slate with limestone outcrops. Virgen del Galir winery is located in the small village of Entoma in the east of Valdeorras, DO and has been under the ownership of the Urrutia family since 2018. Virgen del Galir has more than 40 hectares of vineyards around Entoma and at As Ermitas in the south of the Valdeorras appellation in the Bibei Valley. Several vineyards have been replanted and old vines recovered. White varieties are planted around Entoma in the Galir Valley on slate soils at high altitudes; reds on more granite soils in Galir and Bibei valleys.

The Godello vineyards are planted on the slate at high altitudes up to 600 metres in the Galir Valley on contoured terraced slopes. Tasted as a youthful, unfinished tank sample, 2021 displayed mineral aromas of wet stone with floral lily and blossom notes. It is medium-bodied with a crisp, limey astringency and some depth. After a cool summer, Godello was picked in the first fortnight of September.

Floral, tea rose aromas and fresh green leaf combine with a hint of creosote, adding complexity. This is a supple light wine. Sweet fruits initially are followed by a grippy finish. Mencía grapes were picked by hand into 15-kilogram cases and underwent cold maceration for 48 hours before fermentation. 2020 saw one of the earliest harvests of recent years, picked in the second week of September. Mencía was grown on granite soils from plots in Galir and Bibei valleys.

RIOJA REGION FOR THIS CELLAR

Spain's Top Wine Region Rioja is historic as Spain’s most famous wine region. Artifacts show that wine was produced as far back as 200 BCE. In the late 19th century, the region benefitted from the demise of Bordeaux vineyards. As these were devastated by mildew and phylloxera, Bordelais négociants came to Rioja to trade. This period influenced the wine style and led to the establishment of many of the important Rioja houses in production today. Rioja has three subregions. Rioja Alta has clay, iron and alluvial soils, often red in colour. Rioja Alavesa lies within the Basque province of Alava with a higher level of limestone. Rioja Oriental (previously called Rioja Baja) is in the eastern part of the region: it has a warmer, drier climate due to the influence of the Mediterranean. Its soils are siltier with less chalk content, and this is where a greater proportion of Garnacha is grown. Rioja DOCa wines can be made from grapes grown across the subregions or from specific sites and individual parcels. Traditionally, oak played a large role in Rioja production. The DOCa classification defines a hierarchy of styles and quality levels that reflects the time in oak. Historically, maturation was in old barrels made from American oak. More recently, wineries introduced French oak into the mix. Style categories start with Joven (meaning young) which spends little or no time in oak. Crianza is aged for at least one year in oak and another in bottle, whereafter it can be released in its third year. Reserva wines spend a minimum of one year in oak but often more and can only be released three years after harvest. Gran Reserva wines are aged for a total of five years with at least two in barrel. However, each winery uses a different combination of old/new, American/French and length of time in oak; hence, “oakiness” can vary significantly between producers within a given category. Similar rules apply for white and rosé wines but with generally shorter barrel time.

Viña Lobera is Maria’s personal project, and she produces traditionalstyle Rioja wines from grapes grown in the family’s Rioja Alta vineyards at Torremontalvo, Zarraton and Villalba.

This is a traditional Rioja style with some dusty oak notes and savoury meaty characters, including Mazuelo in the blend. These characters are complemented by dark fruits, blackcurrants and sour blackberry flavours producing a supple, dense wine with fine texture. Grapes were grown in Rioja Alta, fermented, then matured in American oak for 12 months in 3- to 6-year-old barrels. 2018 saw heavy frosts, snow and abundant rainfall in winter followed by a cold and wet spring. A warm summer allowed for a long, slow ripening period, with harvest taking place from September 19 to October 26, producing good quality wines.

Gamey, meaty aromas with dusty oak notes precede a sour and slightly austere palate. It is a blend of 85% Tempranillo, 10% Graciano and 5% Mazuelo from Rioja Alta. 2015 was a hot, dry vintage leading to an early harvest. It was matured in a combination of American and French oak barrels for 24 months using new and oneyear-old barrels. The 2015 vintage is still youthful on the palate, concentrated with sour blackcurrant flavours and a relatively light structure—a classic style.

BODEGAS SOLAR VIEJO Located close to the medieval village of Laguardia, which is the main hub in the heart of Rioja Alavesa. The original winery was founded in 1937 in the centre of the village but is now located on the outskirts. The Ferrer family purchased the estate in 2004. Vanesa Insausti has been winemaker at Solar Viejo since 2007. She characteristically makes wines with succulent midpalate fruits with elegant use of oak from diverse sources and with varying levels of toasting.

Mellow oaky aromas with vanilla and wood complement sour cherry notes – it was matured in barrel for 18 months with a high proportion of new oak. Sweet mid-palate fruits linger in the mouth with sour cherry and vanilla flavours. Tempranillo from Alavesa was blended with 50% Graciano grown in the warmer Rioja Oriental region.

A smooth rosé with a fine creamy texture, it is pale in colour with elegant aromas of talc, rose and red berries. Made from a selection of Garnacha and Tempranillo grapes using the traditional saignée method – the skins and juice were in contact for approximately four hours. Vanesa has been working on making a quality rosé for some years and has finally created a wine she is happy to release.

A medium- to full-bodied wine, it needs some cellaring before reaching its full potential. Aromas of pencil lead, graphite and vanilla are complemented by black cherries. More dark fruits emerge in the mouth with good mid-palate giving way to some powdery tannins and a grainy texture. It was produced from selected Tempranillo grapes from the Los Molinos estate in Laguardia. Grapes were picked at first light on October 26, 2018, into small boxes. A meticulous selection of the best bunches was carried out before fermentation in small tanks. The wine was put into one-year-old French oak barrels for malolactic fermentation, then matured in new oak barrels for 20 months before bottling in July 2020.

BODEGA D. MATEOS Located in the east of the Oriental subregion of Rioja at Aldeanueva de Ebro. The region has a warmer, drier climate due to the influence of the Mediterranean Sea. Soils also differ with lower chalk content and higher proportions of silt and alluvial components. Mateo Ruiz heads up the winery, constructed in 2000, and collaborates with local government and research institutes on developing new vine varieties and clones.

Graciano is an old variety currently rising in popularity and of interest to winemakers for its perfume and high natural acidity – important in the battle against the impact of climate change and warming temperatures. However, the variety is relatively difficult to grow with low fertility producing low yields. Mateo planted Graciano 20 years ago, and he is part of an ongoing research project to identify its best clones. The 2021 vintage has wild herbal and musky aromas. It is smooth with sour cranberry and crunchy redcurrant flavours.

A relatively new grape variety, Tempranillo Blanco is a naturally occurring mutation of black Tempranillo, which shares 97.8% of its parent’s DNA. It was recognized and approved by the Rioja Consejo Regulador to produce White Rioja in 2007, either as part of a blend or, as in this case, a single varietal wine. Inconsciente 2021 has nice nectarine and white fruit flavours, a creamy texture and a crisp finish.

Smoky aromas, cola, graphite and soot are in abundance and mingle with black fruits and blackcurrant flavours. It is a supple wine with light tannins and juicy fruits produced from a blend of 70% Tempranillo, 27% Garnacha and 3% Graciano. All grapes were grown on the Aldeanueva de Ebro vineyards, in the far east of the region, on old vines with an average age of 50 years. Malolactic fermentation was carried out in new oak barrels followed by ageing for a further 14 months in 85% French and 15% American oak.

Tempranillo grapes came from the highaltitude vineyard planted 25 years ago close to Laguardia in the foothills of the Cantabrian Mountains. On the palate, bitter cherry flavours fight their way through. It is medium-full-bodied and concentrated with good potential for the cellar as the oak becomes more integrated.

RIBERA DEL DUERO While Ribera del Duero has a long history producing wine, until recently it was relatively unknown and had far fewer notable producers than Rioja. In recent years that has changed. Ribera del Duero is located on the northern plateau of the Iberian Peninsula at an altitude of around 800 metres on either side of the Duero River. The Duero flows westwards through Rueda and Toro and into Portugal to become the Douro. The climate in Ribera del Duero is continental; hot, dry summers with daytime temperatures up to 40°C are contrasted with winter temperatures dropping

to -18°C. Even in summer, temperatures at night drop dramatically, conducive to the development of flavour and phenolics. Seasons can also change suddenly, with early winter frosts sometimes hitting during harvest and late spring frosts threatening budding vines. The wines are Tempranillo based, with the DOC requiring a minimum of 75%. The more extreme climate of Ribera del Duero produces intense, concentrated wines generally firmer and more savoury than those of Rioja. Ribera del Duero DOC regulations also allow for a hierarchy of styles based on time matured in oak.

Rubén Ramos is a family-run winery at Peñafiel, with impressive views of the ancient 200-metre-long Peñafiel Castle. The Ramos family’s vineyards, owned for four generations, sit beneath the castle on sandy clay loam soils with limestone. This is one of the hottest parts of the region. The 2019 Roble has aromas of musk with soot and a touch of sawdust. The wine is aged in new and second-use French and American oak barrels for nine months and is structured, with a grainy texture and sour cherry flavours.

Brimming with fresh fruits – cherries, raspberries, red apple and blackcurrants – Me & You 2021 is medium-bodied with a fine texture. Bodegas Valdubón is located south of the Duero River, and the main hub that is Aranda de Duero in the eastern part of DO Ribera del Duero. One hundred fiftyfive hectares of vineyards are farmed in the area, 50% of which are estate-owned.

A full-bodied wine oozing juicy black fruits with olive, chocolate and cherries. It is succulent and simply shouts class. The winery located in Peñafiel (Valladolid)has vineyards in the west of the appellation at Pesquera del Duero and at a high altitude at Quintanilla de Arriba. Grapes were harvested by hand then underwent cold maceration for 24 hours before fermentation. It was matured for 12 months in new French oak barrels.

LOESS VINOS As a viticulturist, Jaime Saiz de la Hoya believes probably more strongly than anyone that great wines are born in exceptional vineyards. Over the years in and around Ribera del Duero, his work has given him an intimate knowledge of the region and where the best vineyards are located. Loess, which refers to deep sand, silt and clay soils deposited by wind, has six vineyards in and around the village of Roa de Duero. Dense, almost opaque in colour, Inspiration 2020 has ripe black cherry and blackberry aromas with a touch of licorice and spice. It is smooth with good mid-palate fruit and an emerging savoury character leading to a bitter chocolate finish. Different components aged on average for nine months in premium French oak barrels were put together to find the perfect blend. The barrels used were a combination of first-, second-and third-use with different levels of toast. The oakiness is in perfect harmony with the wine's natural fruit.

Land of Verdejo The Rueda wine region lies south of the Duero River and west of Ribera del Duero, a short distance away. Rueda produces delicious dry white wines from Verdejo and Sauvignon Blanc grapes. Verdejo, named after the green colour of its berries, is believed to have originated here. Given the proximity of the two regions, many Ribera del Duero wineries produce white Rueda wines to complement their range.

Cava Spain’s popular bubbly, Cava, can be produced throughout the country. Still, the majority is made in Penedès in Catalonia in the hills behind Barcelona and particularly around the hub of Sant Sadurní d'Anoia. The climate in Penedès is Mediterranean, and the best grapes for sparkling wines are grown on limestone soils at 200-300 metres. Vineyards vary within the hills according to altitude, slope, proximity to wooded areas, and prevailing winds. Traditional grape varieties Macabeo, Parellada and Xarel-lo are the basis of Cava and can be blended with Chardonnay and Pinot Noir. Cava is made according to the traditional method from Champagne. Indeed, a visit in the 19th century to the Champagne region by local Josep Raventós led to the birth of the Cava industry. The Cava DO regulates cava production. The wine must spend a minimum of nine months on lees after the second bottle fermentation for yeast autolysis to add extra flavour and texture. Quality Cavas often spend much longer than this.

The vineyards of Priorat lie on steep terraced slopes in the west of Catalonia and inland from the Roman port city of Tarragona. This is exceedingly dry land yielding little in terms of crop, and without vines it would be barren scrub. For years, the low selling price of its wines meant Priorato was not economically viable, and slopes were abandoned despite a winemaking history reaching to the 12th century. Today Priorato is appreciated for its intensely concentrated, high alcohol, full-bodied reds produced from Garnacha and Cariñena (known as Samsó in the region), in some cases from resurrected vines planted a century ago, in others from more recent new plantings. The most highly prized soils, known as llicorella, are partially decomposed slate and quartz with poor nutrients and very low water-holding capacity.

Clos Montblanc In the northeast of Spain, Catalonia stretches along the Mediterranean coastline towards the Pyrénées and the border with France to the southwest of the Roman city port of Tarragona. Its industrious capital, Barcelona, a major Mediterranean port, bustles with activity. Its food market, La Boqueria, is one of the most exciting I have ever visited. It is believed that viticulture was introduced to Catalonia through trade by the Phoenicians and Greeks around 400 BCE. It is famous for its sparkling Cava as well as a number of other appellations, including the rich full-bodied reds from Priorat and more restrained wines of Penedès and Conca de Barberà. Clos Montblanc, located in Conca de Barberà DO, has 80 hectares of land planted with 15 grape varieties, including indigenous local and international varieties. Owned by the Carbonell family, the family had been grape growers in the region who believed it could produce more than just base wines for sparkling. To prove it, they developed the winery in 1988 where Winemaker Josep Vadrí makes a range of still wines as well as Cava.

Garrut is a synonym for Monastrell, indigenous to Catalonia and found in other hot regions of the Mediterranean, California and Australia. Trepat, on the other hand, is local to Conca de Barberà and not widely planted elsewhere. Together they create a mediumbodied wine with good mid-palate and some firm chewy tannins.

A deliciously oaky white with toast and vanilla cream combined with pineapple on the nose. It is mediumbodied with a harmonious balance between fruit and oak and lingering flavours. Produced from Chardonnay grown on the family vineyard in the foothills of the Sierra de Miramar Mountains planted 21 years ago. CONCA DE BARBERÀ Conca de Barberà, in the hills behind Tarragona in southern Catalonia, was a region little known to consumers until recently. Planted by Cistercian monks centuries ago, it has been highly sought after by the trade as a source of quality grapes for Cava production. It means basin in Catalan and describes the area's geography formed by the valleys of the Francoli and Anguera rivers, surrounded by hills and low-lying mountains. The valley floor is at 350 metres with vineyards up to 600 metres. In higher parts, slate-rich soils can be found similar to Priorato.

A distinctive succulent wine which immediately stood out in the tasting. Deep brick ruby in colour, it has intense aromas of spices, green bean, herbs and incense. It is supple, medium-bodied with blackcurrant flavours showing on the palate amid more herbal fruits. It has a fine powdery texture and is well balanced. In 1988, the Carbonell family, owners of Clos Montblanc, planted six hectares of Cabernet Sauvignon and four hectares of Merlot on steep east-facing slopes at 700 metres. This wine and the skill of Josep Vadrí is the result: a blend of 70% Cabernet Sauvignon with 30% Merlot. Drinking deliciously now, it should continue to do so for the next 5-7 years.

Cariñena is a small DO in the northern province of Aragon south of Rioja. Vineyards are located on a relatively high plateau at between 400-800 metres. The region has a continental climate with large variations in seasonal and daily diurnal temperatures. Garnacha was, and is, the most widely planted grape despite recent introductions of international varieties. Bodem, in Cariñena, was founded by Dutch couple Louis Geirnaerdt and his wife Eugenie Van Ekeris. Both have a passion for Garnacha and believe its birthplace was in the Sierra de Algairén in Cariñena. Brandy de Jerez is a specialty of the Jerez region. Amerigo Vespucci is a deep amber mahogany colour. It has mellow caramel and chocolate aromas. Sweet raisiny fruits with a touch of smoke come through on the palate. It is smooth with some alcohol burn countered by sweet fruits. Wines made from local Palomino grapes were distilled, then the grape spirit matured in a solera in American oak barrels previously used for sherry maturation. The average age of the spirits is ten years, with a small percentage of 50-year-old brandy and a dash of sweet PX wine added for complexity and sweetness.

Treasures from Jerez by Louise Wilson MW

If you’re like me and get excited about wines that punch above their weight, Sherries from the Jerez region in southern Spain are worth exploring. Sherry is often underestimated, yet it delivers great quality and outstanding value for money. At the same time, an overly narrow perception of the “style” of Sherry may be the result of the omnipresence of entry-level examples in the category. In actuality, one of the most intriguing aspects of Sherry is its diversity: from ethereal sea-kissed expressions to luxuriously rich dessert wines. The unique signature of authentic Sherry begins with the use of indigenous white grapes varieties: Palomino Fino, Moscatel and Pedro Ximénez (PX). In the winery, base wines are fortified and matured in a system of barrels called the solera. This bespoke aging process allows young fresh wines to be blended with more mature wines to achieve maximum depth of character. Within the barrels, the presence of an ambient yeast called flor results in the production of pale-coloured, protectively-aged wines with a characteristic tang. Wines raised in the absence of flor take on a toasty hue and a dried fruit and nut character. Wines from Sherry can be bone dry to lusciously sweet, presenting an option for all palates and occasions. Manzanilla is the lightest of the styles. It is the perfect opener with its fresh minerality and clean dry finish, calling out for a plate of Malpeque oysters. Fino, also matured under flor, has a dry finish too, but slightly more body. A chilled glass of Fino served with green olive tapenade on sourdough crostini is a wonderful way to practice self-care. In contrast, Oloroso is matured without flor, exposing the wine to oxygen. Full-bodied with notes of walnuts, figs and toffee, dry Oloroso and its sweet Cream counterpart are a clever pairing for duck confit. Amontillado is initially developed under flor and then matured oxidatively. Lighter than Oloroso, Amontillado is delicious with a board of cured ham, Oka cheese and almonds. The most opulent of the Sherries are made from soleo (sun-dried) PX grapes, resulting in decadent sweet wines. Think molten chocolate cake or bacon-wrapped Gorgonzola stuffed dates. This mouth-watering discussion offers but a glimpse into the possibilities with Sherry. If you consider yourself a wine lover searching for new experiences, then the Sherries of Jerez are not to be missed. Salud!

Rías Baixas is Galicia's most coastal region and has a longstanding reputation for highquality dry white wines made from the Albariño grape that perfectly match all manner of seafood. A thick-skinned variety, it resists the fungal disease pressure inherent in such a damp climate. Bodegas Vionta in Rías Baixas is in the Val do Salnés subregion; with 11 hectares of vineyard, the winery also buys grapes from small growers in the surrounding vicinity. Albariño grapes were handpicked, macerated for six hours then gently pressed. The free-run juice was fermented at low temperatures, producing a crisp white with fresh apples and other seeded fruits.

A rare variety cultivated in León; Prieto Picudo is the passion of Pedro González who is on a self-made mission to raise its status. El Aprendiz 2019 has sweet tobacco, floral and herbal aromas with dried fennel and wild scrubland. It is medium-bodied with some firm chewy tannins evolving on the palate leading to a firm, bitter finish. Grapes came from organically farmed, low old-bush vines growing close to the ground to protect from the wind in deep acid soils. It was matured for six months in 75% French Allier and 25% American oak barrels from Missouri. The Magnums (lot 3326) will be signed by the winemaker

Intense plum in colour, 2020 4 Rosas is a dense, concentrated wine with chocolate and dark fruit aroma. This is big, bold muscular Toro with succulent fruit and a long, bitter cherry finish. The region of Toro, in northern Spain, sits west of Rueda, just 40 miles from the border with Portugal. It produces big meaty, full-bodied reds from Tinta de Toro. In fact, Tinta de Toro is nothing other than a local strain of Tempranillo adapted to the hot desert-like conditions of Toro in summer and cold winters producing small, deeply coloured thick-skinned grapes with lots of tannins. This was produced with grapes from 60-year-old vines planted on sandy soils and spent four months in new French and American oak.

Pagos del Moncayo Bodega is in Campo de Borja in north-central Spain, southeast of Rioja and south of the river Ebro as it continues its journey towards the Mediterranean. Produced from Garnacha and Syrah grapes from the Aibar family’s vineyards at 350-400 metres. Grapes were picked by hand and crushed by foot in open vats.

Intense savoury and spicy aromas with celery salt and a touch of smoke. Listán Negro is indigenous to the volcanic island of Tenerife off the west coast of Western Sahara, Africa. The largest of the Canary Islands owned by Spain, it has a hot, dry climate. Produced by Suertes del Marqués, the Listen vineyard was planted approximately 80 years ago in the Valle de la Orotava, north of Tenerife, with 11 hectares at between 300-750metres. The vines are cultivated in the traditional braided or "multiple cordon" system unique to Tenerife, which captures moisture and protects the vines from prevailing Saharan winds. Similar spicy flavours follow through onto the palate, which is relatively lightbodied, leading to some grippy tannins and a long spicy finish. It was fermented by wild yeast in concrete tanks followed by maturation in a mix of old wooden foudres and concrete tanks.

The Burgenland region, south of Vienna, is close to Hungary on Austria's eastern border. The region's climate results from the Pannonian Plain to the east, tempered by the body of water that is the shallow-reeded Lake Neusiedl. The region has the highest average temperature in Austria. It is a region that produces whites as well as some of Austria's best red wines. Christof Höpler farms 50 hectares of vineyards in the rolling Leithaberg hills behind the shore of Lake Neusiedl at Breitenbrunn and Winden facing eastwards to the lake. While the lake provides moisture, the hills offer protection from the wind. A range of soils with clay, limestone, gravel or prehistoric rocks produce complex wines.

This fiery, irresistibly fragrant shrimp dish will have your mouth watering. Tear up some crusty bread, pour yourself a glass of Grütner Veltliner wine by Höpler, and enjoy!

• 2 lbs (900g) shrimp 31-40, with tails, peeled and deveined

Heat olive oil in saucepan over medium-high heat.

• 2 tbsp extra-virgin olive oil

Pour in celery, fennel, garlic, shallots, chilli pepper.

• 1 bulb fennel, finely diced (finely chop fennel fronds)

Sauté vegetables until lightly golden brown and fragrant.

• 2 shallots, finely chopped

4. Deglaze pan with white wine and Ricard. Cook alcohol out for 5-8 minutes until slightly reduced.

• 1 red scotch bonnet or habanero pepper, seeded & finely chopped

Pour shrimp into pot. Pour in 1 cup water (or vegetable broth).

• 4 cloves garlic, minced

Simmer for 10 minutes or until shrimp are pink and cooked through.

• 1/3 c. (80ml) Ricard (Pastis Liqueur)

Season to taste with salt & pepper.

• 1/2 c. (120ml) white wine

8. Off-heat, stir in the butter, fennel fronds, parsley and green onions.

West Coast Distillers SOUTH AFRICA West Coast Distillers is an artisan distillery on the west coast of South Africa at Langebaan, approximately 130 kilometres north of Cape Town. It was started in 2017 by two long-time friends, Shaun Bebington and Shane Smith. Shaun is the Master Distiller; Shane is the man on the ground running the day today. Shaun was born and raised in South Africa, went to London in his mid-twenties, and worked up the hospitality ladder. Having had enough of the bustle, he moved to what could hardly be a more remote corner of Cornwall. Tinkering for fun with a little copper still at home, he became hooked and set up a craft distillery. On the other side of the duo, Shane is a sailor who travelled far and wide before settling in Langebaan. This is a beautiful natural spot with white sand beaches, rock pools, over 300 species of birds around its saltwater lagoon, whales and stunning fynbos vegetation and flowers unique to the Cape; in fact, the distillery uses foraged fynbos in the distillation process.

Craft Spirits from South Africa West Coast Distillers

It all started on a plane. Shaun Bebington and Shane Smith, long-time friends, were on a four-hour flight together and ordered a couple of gin and tonics. Having loosened up after a few drinks while on a flight, friends Shaun and Shane made the committment to open a small distillery in South Africa. Before they knew it, they were working on their plan and from there, West Coast Distillers was born. That flight has since been dubbed “The Gin Plane.” At the end of 2018, they started selling their products and hit the ground running; they quickly acquired a following, generated some buzz and won a few accolades. However, 2020 rolled over, and the pandemic hit. “Over the last two years, we have fought and survived four prohibitions and forced lockdown of the business. But we are still alive and once again building momentum! Crazy Times!” Shaun and Shane keep their techniques secret, but they use many indigenous South African botanicals in their spirits: local fynbos, rooibos and honeybush, as well as a shrub called pelargonium citronellum. Nightshade Gin also has a magical infusion of a berry called black nightshade. The distillery is based in Langebaan, South Africa and boasts a beautiful lagoon that inspires much of their products’ personality. Their ethos is simple: to produce good quality, greattasting spirits with a passion for keeping it unique and interesting at every turn. The unusual names of their products all have a story: Caspyn gin was born in Cornwall, UK, and the name was actually a mistake: Shaun thought it was the name of a

beautiful stone circle, but it was actually the acronym (that he spelled wrong) for the Cornish Ancient Stone Preservation Network. They adapted the recipe in South Africa and made it an international brand. No Frills Gin was conceived to produce an “affordable quality” gin, in their own words. A gin that is all about the liquid inside the bottle and not the packaging. Just greattasting gin at an affordable price. Belladonna Night Shade Gin is shrouded in mystery and danger: it is a play on the stigma of the Deadly Night Shade Berry (Atropa Belladonna). Translating to “Jailbird” in English, Tronk Voël Vodka was born in the prohibition that was lockdown in South Africa during the COVID pandemic. Putting the downtime to good use, Shane perfected this buttery smooth vodka to represent the resilience of all South Africans while they united to fight the pandemic and adjust to new ways of life. The day eventually came when the jailbird got to “spread her wings,” as the lockdown and alcohol ban was lifted. Shaun and Shane are G&T aficionados but recommend you try Caspyn in a martini, Belladonna Night Shade in a gin sour, Tronk Voël Vodka in an espresso martini and Tronk Voël Naartjie in a Cosmopolitan. Every cloud has a silver lining, and for West Coast Distillers, South Africa's government ban on alcohol during COVID lockdown gave the team an opportunity to experiment and perfect the distilling, resting and filtering process. Counting down the days for the ban to be lifted, hoping the business would survive, they couldn’t wait to introduce their prohibition-born Tronk Voël, meaning “jailbird” in Afrikaans.

This is a rich, structured wine with lots of delicious tertiary flavours. Bright lime yellow in colour, it has lime, flint, smoke and floral aromas reminiscent of aged Riesling. The palate is mellow and rich in structure. Grown in the Kirchberg vineyard on 45-year-old vines, this land was originally planted in 1203 by Cistercian monks from Burgundy.
