Tea Basics for Dummies Masters There are 5 major types of tea, all coming from a plant called Camellia Sinensis.

White & Green tea have the highest level of antioxidant and should never be brewed by boiling water.

Oolong is a semi-oxidised tea which turns into a dark twirling shape after processing, that’s why it is given a name Oolong – Black Dragon in Chinese.

Black tea is the most versatile of all, can be mixed with milk, lemon, sugar, or other ingredients. It constitutes around 75% of the world’s tea consumption.

Pu’er is the classic food pairing tea. It contains microorganisms through fermentation which help activating the healthy bacteria in our stomach, hence aiding digestion.

Tea fannings are the tea dust from broken tea leaves, releasing more tannins during the brew, therefore bitterer. On the other hand, whole leaf tea are much more delicate with fuller and subtler flavour.

It’s very common to use flavouring in specialty tea to give it a different dimension. Earl Grey is a classic example. However, make sure the flavouring is from a natural source.

It takes about 2,000 tiny tea leaves to produce 1 pound of tea. It also means around 10 leaves in a bag.

Tea bag was first invented in New York in 1908. It was Lipton who industrialised tea bags for mass market in 1952.

Let the tea tasting begin…. 4 items :

boiling water + teapot + small paper cups + tea

• Open a sachet, smell the fragrance and check the appearance of the whole leaf tea. Brew the tea following the guideline on the tea tag. (TIPS: Boiling water temperature will drop around 10°c every minute. If you need 80°c, just leave the boiling water to cool for 2 minutes.)

When ready, pour a small amount of tea in the paper cups. Remember to use a new cup for a different tea. Scent the brewed tea before taking a sip, try to roll the tea in your tongue to get the most taste out of it.
