A real education A

I believe the answer to this lies with the creation of academy status for various schools. These schools are funded directly by government grant which means by definition they are no longer answerable to the local authority. The academy status is driven by league tables. If local academia cherry-picks star pupils from around the country in order to boost their results it’s not surprising that their league table performance is impressive. But with more than two-thirds of the grammar school places going to out-of-towners it would appear that local parents have a better chance of their children receiving that education if they live outside the borough.

Our primary schools focussed their efforts on the fact that all children could benefit from a good senior education. In fact the primary education was so good there were frequent complaints about insufficient places being available at our grammar schools for local children who had passed the 11 plus examination. We need to ask: a) Are our non-selective schools offering a bet-

ter choice of education? b) Are parents discouraging their children from a grammar school education? c) Are our primary schools discouraging our children from a grammar school education? d) Are children from outside Southend-on-Sea being better educated and prepared than our pupils? Our educationists should be planning 5,10,15 and 20 years ahead, ensuring that our children receive an education to match the job opportunities created from the airport expansion and all ancillary businesses that go with it. Children from our primary schools must be given the best educational opportunities and be able to choose which senior education system they want to enter. It is amazing to me that we have drifted so far away from reality that we have forgotten that the most important thing we have to consider every day is providing the best education possible for our own children. This absurd state of affairs has arisen because of political obsession with league tables. Being voted “The best Council� and getting local schools higher up league tables seems to be all-important, but without the inclusion of local residents children the exercise is vacuous. Why are we educating children who will take that knowledge away from Southend for the benefit of another town? Why are Southend-on-Sea educationists celebrating the increasing popularity of nonselective schools? Are they becoming more popular simply because local children are not entering the grammar schools? In my view local educationists should only be celebrating when they improve the local education standards but, sadly, last year only 45% of Southend children attending non-selective schools achieved 5 good GCSE grades including English and Maths, against a national average of 59%.

Southend-on-Sea has some of the most deprived areas in the country and our ability to alleviate this situation can only come about with decent housing, education and job creation. Unfortunately residents have seen failure in all these areas over the last two decades. This has to change. Education is at the heart of our future prosperity and I have written this article in the hope that it will encourage local debate that might lead to a change of policy direction and create better educational opportunities for local children.

hen I was young, my first experience of a dentist was when I was told I needed to have a filling in my baby tooth. I was absolutely petrified and my friends really didn’t help by telling me it was going to be very painful. And sadly that first dentistry experience lived up to all those bad expectations I had. I remember sitting there in that chair and really wishing there was a gentle, kind and patient dentist I could see who would make all my fears of the dentist go away. I wanted a person who would genuinely understand why I was so scared and do all they could to make my panic vanish whilst also doing their best to make my treatment as smooth and painless as possible.

For me dentistry is all about those little details that make a big difference to a patient’s experience – both my surgeries are designed around that philosophy. I know the sound of drill can be quite disconcerting, but unfortunately for the time being the drill is an integral part of dentistry - so I came up with the idea of providing music headphones for patients which help drown out the drilling sound. Another problem for patients is where to look – you need something to distract

Sadly that never materialised, so as I grew older I became determined that the only thing for it was for me to become that gentle, kind, patient and honest dentist myself. That decision led me to university where I trained as a dentist and I now practise at two clinics in Southend - King’s Clinic in Leigh-on-Sea and Smiles on Broadway in Thorpe Bay. 22

I’ll always ask what you want and based on my findings together we will develop a relationship towards you gaining a healthy mouth.

you and take your minds off what is happening, so on the ceiling above my dentists chair is a TV screen to occupy your eyes and thoughts. I hate injections just as much as you so I go that extra mile to ensure they are as painless as possible. I gently numb the target area of the mouth first with a soft, soothing gel before introducing the needle, so hopefully you will hardly feel it once I inject. X-rays can be really uncomfortable too, having to put quite a big piece of plastic in your mouth, so I will always do a relaxing breathing exercise with my patients first to help them prepare for what is coming and make it less stressful. Also there is nothing worse than holding your mouth open for ages – it hurts! – so I finish off extended treatments with a jaw and neck massage. I also understand a lot of the time the jargon that we dentists say makes no rhyme or reason so I always endeavour to be patient and speak in terms that the patient understands as I explain the treatment and advice. It means I always strive to be gentle and caring - and I think I’m getting there as my patients tell me it is like having butterflies in their mouths!

To make the sponge whisk the egg yolks with the sugar until pale and thick enough to leave a ribbon like trail. Using a large metal spoon fold in the lemon zest, juice and ground almonds.

Whisk the egg whites with a pinch of salt until stiff and fold into the mixture in stages. Spoon into a Swiss roll tin 20.5 x 30.5 / 8 x 12in lined with baking parchment making sure it overlaps the edges by about 1cm. Bake for 15-20 minutes until golden brown. When cool turn the roulade out on to a sheet of baking parchment sprinkled with caster sugar. Remove the parchment lining and leave to cool.

Classic Lemon Roulade

T

his is a light, fresh lemony roulade that has a squidgy texture due to the almonds. Rolling a roulade is easier than you think and it always looks impressive especially when entertaining. If you want to add a bowl of summer berries it would be perfect. Enjoy!

To make the filling, mix the mascarpone with enough lemon juice to make a spreadable consistency. Using a palette knife spread the lemon curd evenly over the roulade. Now carefully dot with the mascarpone mixture and gently spread in an even layer. Roll up from either the long or the short side using the paper to help. If you don’t want to make the decoration just dust with icing sugar. For the finishing touch, remove the zest with a zester so you get nice curly strands and then juice the lemon. Put the zest in a small bowl with half a tbsp of the juice. Mix the icing sugar with a little of the lemon juice a bit at a time until you have a glaze that can be drizzled. ( if its too runny you will need to add more icing sugar) Using a spoon held above the roulade drizzle the icing using sweeping movements back and forth across the roulade. Drain the lemon zest and scatter over the roulade The completed roulade can be made a day ahead and stored in the fridge.

Keep it Green O

ne thing (and just the one) to thank this interminable winter for is the delay it has brought to the flowers and blossom, as May is the time when laborious but essential work must be undertaken in order for you to get the best from the two key areas of any garden the soil and lawn. Well prepared soil will not only reward you with more productive, healthier plants but also greatly reduce overall maintenance. The first thing to do is to hoe all bare ground, severing weed seedlings before they mature. Following that you will need to mulch the garden ensuring the soil is moist beforehand. Mulching is the key to a great garden as it feeds your plants, improves the soil structure and suppresses weed growth. Spread any garden compost (organic manure is best and worth the additional cost) across your existing beds whilst avoiding any emerging plants. Be generous - a depth of three to four inches is the norm in any RHS garden. The first thought when considering the lawn is to cut it but grass, like plants, needs to be fed and relieved of any weeds before they are allowed to flower. Try to spread the lawn feed evenly to prevent scorching - some treatments will contain elements preventing this but even

distribution should still be attempted if only to save money. If moss is a problem then a specific product will be required. Once this is done the lawn can now be cut. Fix the blades at a high setting where possible reducing the level over the next few weeks. If there is no setting on your lawnmower try not to 'scalp' it as this results in yellow patches and sometimes bare soil that will be quickly populated by weeds. Mow regularly (at least weekly - not just when you can no longer see your dog) as mature grass will have had time to produce thicker stems which, when cut, will reveal unsightly brown or yellow tufts. Regular cutting also results in a greener and more robust lawn the latter being essential if you have children. As I say boring yet essential work but fun advice from here on in. Promise!

Golden Rules to help you get Fit for Life D

on’t worry if you’ve let your fitness levels drop over time. If you are looking to get back into shape, my ten golden rules will make it more of a pleasure than a chore.

1. Exercise- You can get fitter in just thirty minutes. If you exercise for half an hour every day, you’ll feel the benefits almost immediately. Whether it’s walking the dog or playing tennis, see exercise as essential to your health and well-being. Your body was meant to be moved, so use it or lose it. 2. Resistance training with free-weights or using your own bodyweight will cultivate strength, a leaner body and a higher metabolism, which burns fat faster. 3. Avoid doing lots of long duration, steady-state cardiovascular work – such as jogging at the same pace - and use shorter, sharper bursts of activity. Interval training has been proven to have a markedly more beneficial effect in maintaining health and fitness and burning more calories. 4. Go organic - It may cost more, but it hasn’t been bombarded with pesticides, herbicides, fungicides and insecticides. The chemical residues in the food chain can and will damage your health in the long term.

6.Drink water - Cut down on tea, coffee, soft drinks, fruit juice and alcohol. Our bodies are over 75% water and designed to function best when fully hydrated. You can extend your life and enhance your health by staying as hydrated as possible.

7. Educate yourself - A lot of health advice you see in the media is well intended but misguided. Do your own research, try the advice out on yourself and then make an informed judgement about what’s right for you.You’re unique, so not everything will produce miraculous results for you. 8. Think positive - Focus on thoughts of success, set yourself realistic goals and tell yourself that you can and will achieve them. 9.Relax - Every day, set time aside for an activity that helps you de-stress i.e. yoga, cuddling your cat or reading a good book. Balance your ‘working out’ with ‘working in’. 10. Get support and expert advice - Surround yourself with positive people who will support and encourage you in your bid to get fit – I offer a free consultation to anyone who is looking to make positive changes to their health and fitness, so please don’t hesitate to get in touch.

5. Avoid processed food! If it came out of a factory, it is not going to be the healthiest thing you can eat. So make time to prepare, cook and eat real food as often as possible. Diversification is the key to successful investment T

is the part of a wise man to keep himself today for tomorrow, and not venture all his eggs in one basket”, or so goes the quote from Cervantes’ novel Don Quixote. And almost 400 years later, the sentiment is as true today as it may have been back then. The discipline of diversification, in a financial sense, is one of which investors are being increasingly reminded given the volatile nature of global investment markets over the past few years. If we take a look back at how various asset classes have fared both before the global banking crisis in 2008 and the period afterwards, it’s all too clear that holding a balanced, diversified portfolio is a key factor in achieving your long term investment objectives.

No-one can predict which investment is going to produce the best returns year after year, but there are two things we can be fairly sure of; the best performing investment in one year can often turn out to be the worst performing investment the next year and, by spreading your money across a selection of asset types, countries and sectors, your investments stand a better chance of achieving more consistent returns. Building a balanced portfolio is a question of managing risk versus return. Risk is not just about potential capital losses – you also have to consider the risk of inflation, for instance, and a reduction in income if circumstances go against you. For example, the derisory rates on cash deposit accounts means that most people’s savings are failing to keep up with inflation. Indeed,

higher-rate taxpayers need to find an account paying 5.33 per cent to keep pace with rising prices (source: Office for National Statistics, October 2012).

An investor’s attitude to risk is a key factor. The sensible investor takes into account the amount of risk they are able to tolerate both emotionally and practically in terms of their individual needs. It is therefore vital to understand the different levels of risk inherent in various types of investments. History demonstrates that investing in equities beats the returns of other assets, including cash, over the long term. According to data from Barclays Capital, over the period since the end of 1899 equities have provided annualised real returns of 5.1% versus just 1.4% for gilts and 1.0% for cash (source: Barclays Capital 2011 Equity Gilt Study, assumes income reinvested). The uncertainty impacting global markets is likely to be here to stay, at least for the foreseeable future. As the bailout discussions in Europe have shown, there is no quick or simple fix. But the same cannot be said for re-organising your investment portfolio and the discussions you might need to have with your financial adviser.

Under The Hammer auction house which had seen it. Bidding's off to a quick start and all three phones are busy. We're quickly up to £1,000 and then coast along til the hammer goes down at £1,300 to a buyer in Thailand. Several other Chinese pieces make serious money followed by lots of good jewellery and watches. A vintage stainless steel gents Rolex romps home at £1,000, well above the usual price for the same item, followed closely by a miniature painted on top of an ivory box at £480.

Auction Action! I

t's about 10 minutes til the auction starts. There are lots of people in the room and we have over 300 registered bidders already online in 14 different countries. I've done an internet microphone check and all looks ready to go. As always there is a sense of anticipation. Basically there's a "buzz" in the room that you can't replicate in the TV programmes even though they do try with the presenters chatting with eager sellers.

It's a long session on the rostrum for one auctioneer at over 5 hours non-stop but the adrenalin keeps you going until the sale comes to an end with over 40 people still in the room. There have been lots of good solid prices achieved and it's all over for now but with sales every two weeks there's no time to rest on our laurels, there's a new one to take in, catalogue, photograph and the whole thing starts again.

Okay, we're off with Lot number 1, a classic BMW Z4, which goes quickly to an internet bidder for about what we expected. The next few lots follow suit and then there are some Chinese ceramics. We have Chinese bidders in the room as well as online in mainland China, Taiwan, Hong Kong and the USA as well as a group of regulars online in the UK. .
