The two things that probably everyone knows Southend for is of course the Pier and Adventure Island. Sir John Betjman once said “the Pier is Southend, Southend is the Pier” so I can’t be far wrong. It is of course iconic being the longest pleasure pier in the world and a Grade II listed building to boot. Whilst Adventure Island has grown to be one of the best loved theme parks in the Country located right by the Pier. Our sea front literally stretches for miles and has some gorgeous views across the Thames Estuary, especially at sunset. We have our gardens and the Cliff Lift, which is unique and dates back to 1912. Of course Southend is about more than just the Pier and the sea front. Away from the sea front we have some wonderful parks and for recreation of a different kind 18

others have moved into the area fairly recently. The Airport is expanding rapidly and proving increasingly popular with people who don’t want the hassle of some of its’ larger competitors. Alongside that we are seeing the start of the business park that will bring other businesses into the area. As someone who has lived and worked in the town for many years it saddens me to read some of the comments we see reported in the local press and on social media. A town is what you make of it and we all have a stake in its’ future. So let’s stop carping and work together for a change.

Greggs may have stolen headlines with their vegan ‘sausage’ roll (other bakeries are available) and the ‘Flat White with Oat Milk’ might well be the go-to drink for the cyclists hanging out at Birdwood Café in Leigh-on-Sea, but newcomers to the lifestyle might still be trying to replace their regular beauty products with those that don't contain any animal-based ingredients. With summer fast approaching here’s some handy advice to help you stay on track with swapping leather for pleather and eating plants not pigs.

'Cruelty free' products First, avoid the mistake of buying ‘cruelty free’ believing its vegan. In the strictest sense, 'cruelty free' means that the products and ingredients of that particular product have not been tested on animals at any point during their production. Agreed, it is a big plus point but do check the list of ingredients. You’ll be amazed to see just what some firms use as ingredients – from insects to part of fish - in lipstick and makeup. The reason why I suggest this is because not all animal-derived ingredients are listed on the packaging as such. Some are often given scientific names or referred to as an E number. So, look out for Carmine (also known as cochineal, crimson lake, natural red 4, C.I. 75470, E120, carminic acid) – which is composed of crushed insects – traditionally known as cochineal. It’s also one of the most common non-vegan ingredients used in makeup production.

Beeswax (also known as cera alba, cera lava) regularly found in lip balms and mascaras - is considered vegetarian, but not 100% vegan by others. This is because some vegans regard it as a naturally-occurring animal product, meaning it will depend entirely on your own personal choice. The bi-product used to create the shimmering effect in certain beauty products could be Guanine (AKA CI 75170), or better known to most of us as fish scales. If that hasn’t put you off your chips, then consider Lanolin. It’s the oily secretion found in wool. However, Collagen is a little tricky. You can buy a synthesised version (the label will state 100% vegan, if that’s the case) but otherwise ‘natural’ collagen can be a cocktail of animal and fish bones, connective tissues and even skin.

Makeup accessories Don’t forget to consider your makeup kit’s tools and accessories. The heads of brushes can use fur from animals such as squirrel, mink and sable. Goat and horse hair are also commonly used for brushes. If the fur industry horrifies you, then make a stand by buying synthetic versions. Ham cheese and chive muffins

FOOD

This is such an easy savoury muffin to make. They are lovely warm with a bowl of soup or with a salad. You can take them to work as part of a packed lunch or on a picnic. Freeze them on the day they are made and then just warm through in the oven. I have used chives but rosemary works as well. Enjoy!

Ingredients: 225g/8oz plain flour, sifted 1 tsp baking powder 1 tsp vegetable stock granules Âź tsp cracked black pepper 75g/3oz gruyere or emmental cheese, cut into tiny cubes Small handful of chives, finely chopped 2 large eggs 150ml/ Âź pt milk

You will need a 6 hole muffin tray, oiled and lined with non stick paper cases

Method Mix all the dry ingredients into a bowl, reserving a little of the cheese and chives. In a separate bowl, whisk together the eggs, milk, oil and 1 tbsp of cold water. Preheat the oven to 200c/fan 180/gas 6. Stir the wet ingredients into the dry, including the ham and mix to form a moist lumpy batter, ensuring there are no pockets of unmixed flour. Spoon the mixture into the muffin tray, scattering with the reserved cheese and chives. Bake for 30 minutes until the muffins are browned and crusty. Serve with extra butter if you like.

This isn’t the first time we have run outreach sessions with other local schools at Shoeburyness and once again it has proved to be a huge success. Bringing science out of the books and physically placing it in front of our students, to be explored and observed by them, is often the best way both to teach and inspire them.
