Christmas entertaining made easy: The Holiday Inn Southend guide to throwing the ultimate festive party!

A

s every good parent, grandparent, auntie and uncle knows, this is the crucial time of year when Santa and his Little Helpers are putting the finishing touches to all the toys for little boys and girls around the world at Christmas. But why should the kids have all the fun? Christmas is for grown-ups too and just as receiving the perfect toy is important for children, having the best bash is important for adults. At the Holiday Inn Southend, Hayley O’Connell is the popular hotel’s expert party planner and here are her top tips for the ultimate Christmas party. “For me, the perfect party is one that lives on in the memory long after the last glass of wine has been sipped and the final mince pie nibbled. If you’re hosting your own event, the key is meticulous planning. Alternatively, you can come to somewhere like the Holiday Inn Southend,” says Hayley.“A party planner like me will help you to coordinate your event, meaning you’re still very much involved with the ideas side of things whilst the practical stuff is taken out of your hands, giving you that all-important time to relax and enjoy the whole process.”

a mixture of new and old friends, makes for a good atmosphere.”

Moderate expectations Rule number two is K.I.S.S – Keep It Simple, Stupid. “Christmas is a time when people moderate their expectations. They don’t necessarily want something too fancy, but that shouldn’t be an excuse for serving boring food. You have to balance tradition with a bit of panache. Our amazing chef, Micky is offering customers a choice between Roast Turkey and all the trimmings, a delicious Roulade of Salmon, Spinach and Hake or a beautiful Vegetable Wellington.” For any party, the music really matters. If your record collection isn’t exactly stellar, or wide-ranging, you can

The first place to start with is the guest list.“Try not to play it safe,” advises Hayley. “Mix the generations, careers and backgrounds. Different personalities and

risk inflicting your musical preferences on your guests. This is where a good DJ is worth their weight in gold. “After a great meal and a good chat round the dinner table, we find that guests really enjoy sliding their chairs back and hitting the dance floor. Our Fire & Ice festive-themed parties have those two essential elements for a great Christmas party - terrific food and cracking tunes.” Here in Britain, Christmas is synonymous with excess. It’s important to be realistic and expect your guests to drink heartily but there should always be a limit, warns Hayley: “The office party is a great excuse to let your hair down and have fun at the end of the year but it is always best to err on the side of caution. Getting blind drunk in front of the boss carries all sorts of perils?! What’s also really good about the Holiday Inn is that we have a secure, well lit car park, so if you do end up having one too many we can call a taxi to get you home safe and sound, allowing you to pick up your car the next day.” Boredom is an often over-looked factor when it comes to enjoying a little too much party spirit. If the conversation is hardly fizzing at the dinner table, guests can feel their moods flatten.“Know your guests and seat them accordingly is a great rule of thumb” says Hayley.“Try to give everyone the best seat for their particular personality but avoid putting couples or best friends together. It’s also worth getting people to move around after each course. For a company event this encourages greater relationship-building and creates a sense of togetherness with colleagues you wouldn’t normally talk to.”

Finally, knowing when to let go is also important. You may have taken the principal role in planning the party but now is your time to kick back, relax and enjoy yourself along with everyone else. At the Holiday Inn Southend you can join a Fire & Ice Party Night from as little as £24.95 per person or hire one of their wonderful function rooms for your own special event – that Hayley will help you make really special. With the food prepared by expert chefs, using locally-sourced ingredients, attentive staff to look after the assembled company and the DJ ready to get them winding their waists to the bassline, you’re assured of a night to remember at the Holiday Inn Southend this Christmas, for all the right reasons.

Save 10% There's a fantastic 10% off the Holiday Inn Southend's 'Fire & Ice' themed Christmas party nights if you book before September 30th. For more information call Hayley on 01702 209 086 / 01702 543 001, or send an email to Christmas@hisouthend.com

Local Issues

It’s good to give T

he majority of us get a great deal of pleasure from giving, whether that’s to our loved ones or giving something back to our local community. And an increasing number of business owners recognise that not only do they have a responsibility to support the community in which they are based, but there are tangible benefits to be gained from doing so.

One of the most important ways a company can engage with their local community is by supporting its young people: becoming a mentor, offering work experience and / or employing apprentices can make such a difference to today’s youth.

One of the biggest benefits is increased reputation. Well actually, that might be second to how good business owners feel when they are able to “give something back!” Staff will also feel motivated, engaged and proud to work for the company. And for many companies, being able to demonstrate appropriate levels of community support and engagement could even help them win contracts; social and environmental criteria is increasingly being driven down both the public and private sector supply chain.

Businesses are an integral part of the community where they are based, particularly if it is also the same community in which the business owners and many of their staff live. Southend needs thriving, profitable businesses if the borough is to continue to flourish. But equally, if a community is under stress from societal issues, it will negatively impact upon local businesses either directly or indirectly.

Businesses should be creative - community support isn’t just about issuing a cheque! Some companies may be able to offer specific skills on a pro-bono basis; or perhaps have surplus IT equipment or office furniture that a local charity, community group or even school could benefit from. Many companies offer their staff paid volunteering time; or employees might work together on fund raising projects such as a fun run. SEPTEMBER 2014

Stronger together

Businesses and the communities in which they operate are definitely stronger if they work together. A new business award To encourage businesses to support their local community, a Southend Business and Community Charter has been launched which includes a rolling awards system to acknowledge and celebrate businesses that demonstrate appropriate levels of engagement.

www.oraclepublications.co.uk

T H O R P E B AY O R A C L E

9

The project is designed to increase community engagement, ensure it is meaningful, and profile businesses that are making a difference. To ensure that any size business can apply from a tiny business upwards, the award works to the ASTI system: Appropriate to the Size, Type and Impact of the business. The first award winner was Moredge Canine Hydrotherapy Centre consisting of a sole proprietor and one employee. Jacqui Fry, proprietor of Moredge, impressed the Charter Committee with her commitment to supporting young people. Her one employee is a former apprentice and she offers work experience to students on an ongoing basis who invariably thrive under Jacqui’s watchful eye. The award is available at bronze, silver and gold, and we want to see an increasing number of businesses proudly displaying the award logo.

Who operates the award? The Southend Business and Community Charter is administered by the Organisation for Responsible Businesses (ORB) and supported by Southend-on-Sea Borough Council, Essex Chambers of Commerce, Federation of Small Businesses (FSB), Southend Association of Voluntary Services (SAVS), Southend BID, Southend Business Partnership, Southend Adult

Is it easy to apply? The application process itself is easy and companies can apply at any time. But this is a robust two-stage award and businesses will need to allocate time to completing it and ensuring they meet the criteria. As Jill Poet, Managing Director of ORB explained: “We wanted an award to celebrate businesses of all types and sizes that are doing their bit to support the local community. But equally, we also want to help ensure that Southend businesses are robust, efficient and compliant, so that is why we have developed this two stage approach. It does mean a bit of effort is involved, but it also ensures the award has a great deal of credibility. “All the information about the award is on the web site www.bccawards.org.uk/Southend, but I’m more than happy for anyone to give me a call on 01702 468387 and we’ll arrange for me to visit and explain how the process works.”

Community College and Groundworks Essex. All these organisations form the Charter Committee, and it is that committee which decides if an award is given and at what level – bronze, silver or gold.

The team at Pace

Advertorial

Setting the Pace! : Celebrating 20 years

I

t’s 20 years this August since Pace Plc began trading as a private property management company in Southend. Looking back on the last two decades, the company has grown from a small family business to the wellknown and respected property company it is today. The team at Pace has worked hard to build a reputation for excellent customer service and an honest approach. Over the years, many local lettings and estate agencies have come and gone but Pace continues to go from strength to strength.

1994 – Property and Commercial Enterprises (Pace) Plc is founded as a property management company to manage a private portfolio of local flats and houses. 1998 – Pace now owns 100 residential

properties in Southend.

2001 – The company acquires the lettings business of a local agent and begins to let properties for third parties. The company is in a unique position since it now owns a portfolio of 120 properties. Being a landlord itself, the company truly understands the challenges its clients experience. As such, the company takes a proactive role in working directly with local stakeholders and decision makers to ensure the best interests of landlords and tenants.

2005 – Pace establishes an Estate Agency department with the aim to offer the same exceptional service experienced by clients of the PACE Lettings agency for those wishing to sell property. 2005 – Pace relocates to the current larger, modern offices on Southchurch Road.

2007 – Crystal Horwood is asked to rejoin the family firm as Business Development Director, returns to the UK and becomes a member of the NAEA. Crystal endeavours to improve customer service and grow the business. All senior staff are now encouraged to pass the technical training award and become members of the NAEA and ARLA. 2008 - Marcus James begins working for Pace as a lettings negotiator and Kelly Jenkins, is employed as an Accounts Assistant. Both Marcus and Kelly embark on a series of training

Oracle Hair & Beauty

Right hair, right now? I

t sounds like the beginning of a joke but isn’t. A middle-aged man walks into a hair salon, asking for a cut similar to a leading sportsman’s. He gets it and is delighted. His wife, however, hates it and says it makes him look twenty years younger. So what’s the problem?

Adjust your hair style Of course, had the shoe been on the other foot, there wouldn’t have been an ‘issue’ - but then, just as you should change your wardrobe, skincare, and cosmetics as you age, you also should adjust your hairstyle. Here are my top tips for fabulous age-appropriate hair no matter how many candles are on your cake, baby!

Confident & settled

In your twenties, you can be far more experimental and change your cut and colour almost to suit your mood and outfit but as you enter your thirties, the more confident and settled you begins to emerge and that’s the time to still be creative, but a little less wild. If you’re thirty-something, why not try a sexy, shoulder-length bob with slight layers and a wavy, tousled texture. The short length and angles make it sophisticated, but the bed-head texture keeps it sexy and cool. Think Cameron Diaz.

two options; going for shorter or much longer hair. As the song says, anything goes. However, be careful because the wrong short haircut can have an ageing effect, but by going shorter on the sides and at the back, but heavier on top, will give you the volume you need to help balance out your features.

Look Younger

My advice for ladies in their fifties is simply this: shoulder-length and angled. Wearing your hair shoulder-length can actually make you look younger. Layered and slightly angled cuts help to soften your features. Michelle Pfeiffer is in her mid-fifties, has this cut and looks H.O.T. That said, a short hairstyle can look very chic on a fifty-something woman. Make sure it’s not too severe by keeping more length on the sides and top of the head. This diverts attention away from life’s little imperfections and draws attention up to your eyes - Dames Judy Dench and Helen Mirren are style mavens for this look. by Craig Smith

As they hit their forties, a lot of my clients consider

Café Masala dares to be different A taste of India with a contemporary twist

A

s soon as you walk into its elegant, airy and modern dining room, you know that Café Masala is different. Although it has become a Thorpe Bay institution since it opened its doors eighteen years ago, this is not somewhere to soak up the night's excesses; Café Masala is a destination restaurant for those who appreciate great cooking. The menu is largely based on classic dishes from the Indian continent, using only the best and freshest ingredients. Unsurprising it has won a string of accolades; including back-to-back British Curry Awards in 2007 and 2008.

During the balmy summer days and nights, not everyone wants some of the more traditional dishes, so a special seasonal menu has been introduced. Highlights include lightly spiced, succulent grilled lamb chops and Chicken Tikka Stir-Fried Noodles. Vegetarians are also well-catered for with a Vegetable Biriani fit for a Persian king (where this dish originated), Chilli Aubergine and over ten other delicious choices. With its modern, clean and contemporary décor, Café Masala could be called a ’boutique’ restaurant. Certainly its modest number of covers create an intimate feel; making it perfect for an evening dinner date with your partner, a weekend gathering of friends or business lunch with clients and colleagues.

The main courses offer you a culinary tour of both the comfortingly familiar and completely unexpected. Take, for example, the wonderfully named Rowgoonius range of dishes. Originally from Sylhet in north eastern Bangladesh, the base sauce is prepared using methi paratha leaves, with a little capsicum and a mixture of spices to make it medium hot, then garnished with fried tomatoes and onions. It is a particular favourite with the restaurants most discerning diners, the waiters themselves.

Cafe Masala is open 7-days a week and can be found at 187 The Broadway, Thorpe Bay, Southend-on-Sea, Essex, SS1 3EX. Call 01702 589 494 to make your booking.

However, it is one particular dish for which Café Masala has become famous for - the Special Sizzler Juliet. As it is brought to the table, every diner in the restaurant turns round to see this piece of culinary theatre. Marinated pieces of lamb, chicken or king prawns are cooked in a traditional clay oven over charcoal, lavished with fresh mint and coriander, capsicums, onions and given an exciting kick, courtesy of flaming brandy. This is not just a main course, it is an event!

Council News

Keeping you informed T

his month’s main issue is the new Waste Collection and Cleansing Contract and in particular the Council's long standing contractual relationship with Cory. The procurement for the contract was agreed in March 2014 (before my time). Prior to this a cross member working Party were briefed in September 2013 of the procurement process with suggested areas of improvement and value for money opportunities. Companies interested in the new contract were invited to what are called ‘supplier engagement interviews’ from that process it was apparent that tendering for the new contract would be extremely competitive. Unfortunately Cory was not successful as a preferred bidder. I am aware that most of the Cory staff live locally and the Council will ensure that the transfer of all existing staff that are eligible under TUPE is undertaken with any new contractor to try and avoid job losses.

The Royal Hotel It appeared earlier this summer that there could be an opportunity to purchase the Royal Hotel. Having looked deeper into the issue, there is only a small part of the property available on a leasehold basis (my feelings are well known about leaseholds and landlords). I have therefore instructed officers not to proceed.

Some good news Officers have managed to secure £40m ‘Better Start’ lottery funding with the Pre School Learning alliance. What happens in the first three

years of a child’s life profoundly affects their future life chances, and this funding will make a real difference to the lives of families and their young children. Over the next six years we will also receive £50m of Local Growth funding. (LGF) Along with the Nestuda Way Junction improvements that will be completed by April 2015, this money will enable further investments along the A127 and improve our road infrastructure, our public realm and support the work we are doing to create and safeguard jobs and skills in the Borough which will greatly benefit Southend-on-Sea and our future economic prosperity.

Dates for your calendar The final outdoor opera screening outside the Forum, as part of the Royal Opera House and BP Big Screens campaign will take place on 17th September from 7.30pm with Rigoletto being shown for free. Summer Jazz on the Pier - Sunday 21st Sept at the Royal Pavilion at 12.30pm Tickets are £15 which includes pier train fare. Classic Cars on Sea breakfast event – Sunday 28th September on the seafront The rehoused Beecroft Gallery has opened in the former library building in Victoria Avenue. Maldives - More than just beautiful beaches

M

any of you associate The Maldives with beautiful beaches, a haven for couples and relaxation. Lying in the Indian Ocean approximately 11 hours flying time from London, this Island paradise does have the best powdery white sand and the best snorkelling and diving. Scratch below the surface and there are, in fact so many opportunities to explore and probably a holiday for most people.

Heart of the Action Offering world class surfing on both South and North Male Atolls, some resorts are set up for surf and non-surf partners or book onto a surf cruise to get to the heart of the action and find that perfect Maldivian “wave”.

Popular pastimes Sea and Fly Fishing are very popular, there are restrictions in place on most islands to protect the coral, however on a handful of resorts it is possible to fish off the beach. One of these is the new family friendly Atmosphere Kanifushi, sitting 40 minutes via seaplane from Male. There is no house reef so water sports are possible from the beach, diving and snorkelling trips are offered by boat daily. Interconnecting beach villas for families, kids clubs, tennis courts and a quieter area more suitable for couples. Another option is to find an island hopping cruise , an ideal solution for a returning traveller, there are a variety of small cruise ships from The Yazawa Princess to the fabulously luxurious Four Seasons Explorer. Both offering Island hopping combined with fishing, diving and snorkelling. In August and September The Explorer hosts the Manta Trust Expedition a 7 night thrilling insight into the world of manta rays and whale sharks, the trip is escorted by some of the world’s leading experts. Finish your cruise with a stay in one of the many beautiful Island retreats to just enjoy the true beauty of The Maldives.

Choosing a diamond or a semi-precious stone would leave most of us at a disadvantage. The colour of a diamond will affect the price of the jewellery item therefore it is extremely important to have a knowledgeable and trustworthy jeweller talk you through the whole process. Lyons Jewellers offers this along with a stone approval service. They are able to source the precious stones that you are looking for and have them couriered to the shop for your inspection with no obligation for you to buy. Bring a smile to your face

There is nothing that brings a smile to a face than a pretty ring, jangly necklace or some sparkly earrings. Big, small or overstated, jewellery lifts the spirits. No matter what your preference is Lyons Jewellers offers an array of different pieces to suit all styles. Personally, I think you ought to pop-in at the shop the next time you are passing and take a good look for yourself, as I know Aaron would make you feel extremely welcome and is eager to show off his new premises. recipe of the month

Ingredients 300g caster sugar plus 3 tbsp extra 5 large egg whites ( about 150g in weight) 50g dessicated coconut 50g natural pistachios, chopped 500g strawberries, hulled and halved if large 500g raspberries Juice of ½ lemon 300ml double cream 100ml Greek yoghurt

In the Kitchen with Judy Barden

1. Preheat the oven to 200c/fan 180/gas 6. Tip the 300g sugar into a small roasting tin and place in the oven for 7 minutes. Remove and turn the oven down to 110c/fan 90/gas ¼ 2. Whisk the egg whites with a pinch of salt in an electric mixer until frothy. Tip all the hot sugar onto the egg whites and put on high speed for 10 minutes until the mixture is stiff and glossy. 3. Using a large metal spoon, fold in the coconut

and half of the pistachios. Line two baking sheets with baking parchment and then spoon the meringue into 8-10 portions. Cook for 1hour 45mins, remove and allow to cool (The meringues will keep in an airtight tin for up to a week).

Pistachio & Coconut Meringues

I

don’t think there is a more popular dessert than meringues with cream and berries. This is a slightly different method as the sugar is heated first so that the meringue is slightly cooked to begin with. It is very easy to do and the meringues can be made up to a week ahead.

4. One hour before serving place all the berries, lemon juice and extra sugar in a bowl and mix lightly. This will macerate the fruit so that the juices start to run. Whisk the cream and yoghurt until it is a soft whip and then top each meringue with a spoonful of the cream and top with berries and finally the remaining chopped pistachios. Next month’s recipe: Vegetarian Pasties

The macerated fruit is lovely as the sugar and lemon really bring the flavours out, so worth doing even if just serving with cream or ice cream. This is a perfect summer dessert. Enjoy! Pistachio & Coconut Meringues with Red Berries

Cloudy2Clear Windows – Service With A Smile! It’s been a crazy few months for Cloudy2Clear Windows. The company which specialises in repairing windows which are steamed up, broken or damaged by replacing the panes – not the frames has grown rapidly as homeowners take advantage of their services. Managing Director Chris Miller feels that it’s all about service. ‘Our product is simple. If your double glazing is misted up we can replace the glass at a fraction of the cost of a new window, in any type of frame, and with a new 5 year guarantee. But it’s not just about saving people money, although

that obviously helps. Many tradespeople have struggled since last year and I honestly feel that during the good times a minority perhaps didn’t focus on customer care as much as they should have done. We make sure we turn up when we say we will, do the job the customer requires and leave their house as clean as a whistle. I often get comments back from customers on how they really didn’t expect that sort of service which, in a way, is very sad for the service industry as a whole.’ Cloudy2Clear service the Southend, Leigh on Sea and Thorpe Bay areas DQG &KULV LV ÀQGLQJ WKDW his approach is a major

factor in his success.‘The truth is that it’s not just the personal satisfaction that I get from doing a good job but also it makes good business sense. I get a huge amount of business from friends and family of people I’ve done work for,

which just goes to show how much a little bit of effort is appreciated.’ So, if your windows are steamed up, broken or damaged give Chris a call for a free quotation on 0800 61 21 118 and he’ll be happy to help!

Oracle Gardening

What can you do if your garden is waterlogged? Try not to walk on the soil as this can make the situation worse. The compacted soil will affect the drainage. This can lead to garden fungal diseases and phytopthora (a type of water mould, known as ‘The Plant Destroyer’) growing. Dig up plants damaged by waterlogging and replant them in free draining compost. If you have non-clay soil, encourage drainage by pricking the surface of your lawn with a garden fork and filling holes with horticultural sand. If you have a clay garden, a drainage system will need to be installed.

How to clear a waterlogged garden

T

he recent rain has caused waterlogging in gardens across Essex. Fortunately, there are some simple steps you can take to help your garden make a full recovery and prevent waterlogging from reoccurring.

What is a waterlogged garden? The term ‘waterlogged garden’, simply means a garden that has been overcome by heavy rain. There may be puddles resting on the top of the soil, and plants will look like they need water, with yellowing leaves and black soggy roots. Other obvious signs include lots of mud and squelching underfoot.

What conditions encourage waterlogging? Some gardens are more prone to waterlogging than others. Conditions that encourage waterlogging include: n Homes built on clay (common in South East Essex), as water cannot drain away as easily. n Poorly planted lawn and turf. n Homes situated at the bottom of a hill.

48

T H O R P E B AY O R A C L E

Drainage solutions An effective drainage solution is a soakaway. This simple system takes water away from your garden to be pumped out. Another solution is building a trench or ditch, lined with hardcore. If the area you live in is prone to flooding, consider growing plants that do well in wet conditions. Salix, Conrnus and Betula thrive in moist areas. Why not cultivate a bog garden? This is great for attracting wildlife and makes an unusual garden feature. Whatever you decide to do, don’t leave waterlogging to chance. Long term effects can lead to permanently damaged lawns and shrubs, leaving you frustrated and your garden looking sad.

Advertorial

Paige Dadds, Year 9 I have enjoyed taking part in drama productions, the Duke of Edinburgh Award scheme and being a prosecution and defence lawyer on the Mock Court Trial team, in the regional final for the fourth year and just missing out on the nationals. I’ve completed my Duke of Edinburgh Bronze Award, my Silver Award being next year. This has been most inspiring, encouraging my continued volunteering for ‘Glo’, a local project to give girls support through life’s struggles. Paige Dadds

Life at Shoeburyness High School Jack Edge

I

t is often said that school days are the happiest days of your life. Here, students from Shoeburyness High School tell us why.

Jack Edge, Year 7 I love music and play three instruments; piano, guitar and drums. In music classes we can learn through ‘The Band Method’, giving good musicians a wind instrument, lessons and the chance to play in an ensemble. I can even be part of a rock band during my music lessons, supporting my aim of a music career. In academic mentoring (from 8.30am every day), students discuss and review academic progress with their learning mentors. This has improved my work standards. My Individual Challenge Plan sets me ambitious targets to reach with help from my personal mentor, Deputy Headteacher Dr Haddock. This great school, Shoeburyness High School, has developed my learning and my results have really improved. 56

Jack Reason, Year 9 In Years 7 and 8, I participated in the Shoeburyness Debate, which allows students to discuss issues affecting both school and their local area. This year I participated in the Mock Court Trial, as a defence lawyer. I’m aiming for next year’s Jack Petchey Speak Out Challenge, hoping to emulate Year 10’s James Davey by reaching the final. I am also a member of the School Council. Through belonging to Southend-on-Sea Youth Council, I’ve participated in the British Youth

Council and am working to raise the profile of privileged to say I attend Shoeburyness High citizenship in the KS3 PSHE curriculum. I sing in School. Southend Boys’Choir and Brentwood Cathedral George Groves & Lizzie Welsh Choir and I am learning to play the piano.

Cavan Beck, Year 10 Sport is my passion; I play in both the school’s basketball and cricket teams. Last year I won the Jack Petchey Award for my primary school basketball coaching at weekends and holidays, when I help children with physical and learning disabilities. I escort them to various venues, assisting them with everyday activities. I am a national open water swimming champion and also volunteer to teach young children swimming at my local club as I love to see them grow in confidence. Jack Reason

Lizzie Welsh, Year 12 Head Girl

George Groves, Year 12 Head Boy Since joining Shoeburyness High, it has lived up to its outstanding reputation. I now feel I truly know how the school runs and how teachers interact with students. I have always felt encouraged, helping to shape me into the person I am today. Before, I was shy, not socialising, but this has changed due to the teachers’ constant reassurance and encouragement and the friends I have made. I’ll finish with this: I never thought I would achieve what I have and feel SEPTEMBER 2014

Shoeburyness High School has given me the opportunity to study enjoyable subjects and participate in a range of extra-curricular activities: the flute group, concert band and Jazz band, and cross-country and athletics teams. I played for the school show ‘Copacabana’ in December 2013, judged Best Youth Production in the South East, reflecting our commitment to achieving outstanding results. The Shoeburyness High School staff’s support has really helped motivate us to achieve our best as individuals and as a school.
