GOING THE EXTRA MILE! A team of eight from the Paraffin Lamp in Livingston, led by Manager Diane Allister, walked the not so short distance of 96 miles on the West Highland Way this month. Once they arrived, they were looked after by Anne Cameron and her team at the Ben Nevis Bar in Fort William. According to Diane they “excelled themselves and made my team feel very welcome”. As is the Orchid way!!

TOP DOGS! June & Richard Ogden at the Priory in Wellingborough treated their staff to a quality night out at the dogs. With their pub closed for a refurb, June and Richard took the opportunity to get the whole team together for a night of celebration. They even treated their staff to two hummers and one limo so they could arrive in style. It was an early retirement gift from them to the team, proving to us all there’s still life in the old dogs yet!

A fundraising quiz and raffle night was held at the Frogshole Farm to raise money for the Teenage Cancer Trust Unit at the Royal Marsden Hospital. Ben Bland, one of the pub’s regulars, is due to have a bone marrow transplant and Ben’s mum Catherine asked for the pub’s help to buy outside furniture for the unit. A superb amount was raised, congratulations on their achievement!

The simple rules that we follow at the Haywain are to post a couple of status’ each day (one in the morning and one in the afternoon/evening), usually accompanied by a picture. We then also cover customer birthdays, silly events, etc. If we have absolutely nothing to say, we put up a weather update or just a general picture of our pub! We currently have over 300 followers so it must be working!!!

I’ve found that one of the best ways to spread the word about our page is by running competitions that offer prizes like free drinks or pizzas. One of my Facebook competitions is ‘Guess the Minute when the First Goal will be Scored’ in any chosen EPL football game. I then like to attach a photo of an offer or something we're doing to the competition so the people who don't enter still see an advert. I’m a big fan of attaching links and photos to pretty much all updates as it offers greater opportunities for more people to see our page!

We run a quiz every Monday and Friday and I post something called ‘TFI’ on Fridays - I have to come up with something different every week with the initials ‘TFI’, for example Tasty Fish Indeed, Treat Friends Inside and so on. Our New Website
IS LauNCHed! With all the excitement of this year’s activities, including investments and the prestigious Investors In People accreditation, it was time for us to showcase Orchid with a brand new website that is more people-focused and user-friendly than ever before! The site is now live at www.orchidgroup.co.uk Having used a mixture of JavaScript and a heavily customised installation of WordPress and PHP, the new content management system makes the site easier to use for internal staff and more accessible for the end user! This new site also fully integrates our social media streams including Facebook, Twitter and Instagram, encouraging users to interact and post their images alongside those of the Orchid team. On the first day of launching the site, we recorded over 600 visits with the most popular pages being ‘Our Story’ and ‘Join Our Team’. There are many new features to the site including Rufus’ Blogs, Photo Libraries and the back catalogue of OMG! magazine. All of these items contribute. All of these items contribute to the success of the new and improved site. We are proud that our new website showcases Orchid in such a positive way. If you haven’t done so already, take a look!!!

OMG! Recipe Time! Stilton, Asparagus and Red Onion Tarts Ingredients
Method
For the pastry:
To make the pastry:
• 400g of plain flour • 200g of unsalted butter, cold and diced • 2 eggs • Iced water • 1 tsp of milk • Pinch of Salt
For the filling: • 1 egg • 100ml of double cream • 1 tsp of chopped chives • 4 asparagus spears • 1/2 red onion • 115g Stilton, cut into 4 slices • Salt • Freshly ground black pepper • Olive oil
To serve:
COCKTAILS
• 40g of rocket • Olive oil • Balsamic vinegar

• Sift the flour and salt in a mixing bowl and add the diced butter. • Rub the butter into the flour with your finger tips until it resembles fine breadcrumbs. • Add 1 egg and mix well. Add some iced water, a spoonful at a time, just until the pastry comes together. Wrap the pastry in cling film and rest in the fridge for 30 minutes before rolling out. • Preheat the oven to 170ºC/gas mark 4. • Roll out the pastry to 4mm thickness. • Line two individual 10cm tart tins with the pastry, making sure the pastry goes right to the edge of the tins. • Cover the pastry with parchment paper & fill with dry rice. Bake in the oven for 15 minutes then remove the rice and parchment paper. • Whisk 1 egg with the milk and brush the egg wash over the tarts. Place back in the oven for 2 minutes or until golden brown. • Remove from the oven and turn the oven up to 190ºC/gas mark

For the tart filling: • Slice and sauté the onion in a pan with a little olive oil for about 5 minutes. • Crack the egg into a bowl and whisk together with the double cream and chopped chives. Season with a little salt and pepper. • Lay the asparagus tips in the tarts and add the red onions. Carefully pour the egg mixture on top and place in the oven. Cook for 10 minutes, or until set. • Remove from the oven and place the Stilton slices on top of the tarts. Place back in the oven until the Stilton just melts. • Serve the tarts warm with some rocket drizzled with olive oil and balsamic vinegar.
