Imagine a blanket so cozy and so easy to make that you can knit one for the perfect gift this holiday season — even if you’ve never touched a knitting needle. You may even end up keeping it for yourself. Words by Lauren Bruce
First, you’ll start with some yarn. I recommend PremierYarns.com for the cheapest bulk yarn. I chose Couture Jazz Yarn and ordered 8 skeins (another word for rolls). You can also swing by the Eugene Textile Center. Just be sure to pick a bulky yarn.
Step 1
Cast the yarn onto your right arm with a slip knot. The tail of the yarn—the part that’s not connected to the rest of the skein—should be about five-feet long. Tighten the slip knot around your forearm so that the yarn is tense but still flexible
Step 2
Now comes the tricky part. Take the tail of the yarn and hold it in your left hand between your pointer finger and your middle finger. Then, take your working yarn and hold it between your pinky and ring finger. Next, take your thumb and tuck it under the working yarn. Now with your right hand, slip it under the yarn
your thumb just picked up, over the yarn between your pinky and ring finger and then through the two of them. If this part is confusing, check out Simply Maggie’s YouTube video for arm knitting cast on tips.
Step 3
Once you’ve cast on this stitch, repeat step 2 for a total of 18 stitches. Once you have 18 stitches on your right arm, you’re ready to transfer them to your left. The hardest part is over! Holding your working yarn in your right hand, take the first stitch on your right arm and pull it over the working yarn until it is off your hand. Turn that loop towards yourself and slide your left arm through the stitch until it is on your left arm. Make sure to tighten the stitches as you go.

Hold the working yarn in your right hand again and slip the next stitch off, sliding it onto your left arm. Repeat until all 18

stitches are on your left arm. Once they are all on your left arm, transfer them back onto your right just as you did with the left. When the skein is just about finished, simply tie your second skein onto the end of the first one. You can tuck the ends into the blanket later!
Step 5
Once you’ve used up all 8 skeins, or however long you chose to make your blanket, it’s time to cast off. To cast off, knit two stitches just as you have been doing in step 3 and 4. Then take the first stitch you just did and pull it over the second stitch and off your hand. Next, knit one stitch and pull the other stitch over the one you just knit. Pull it off your hand. Repeat this until you have only one stitch on your arm left. Take the tail and pull it through the last stitch and off your arm. Finally, cut the tail about one foot long, wrap it into your blanket and you’re done!

Fear not, veggie lovers—there is still hope! Check out these plant-based recipe ideas for an animal product-free Thanksgiving that will make any vegan’s mouth water. Words by Skyla Patton
Appetizers Oven-Fried Zucchini Crisps

These mouthwatering chips are so guilt-free and easy to make, you’ll want them daily regardless of the holiday. Dry your zucchini between paper towels and sprinkle salt over the top. Dipped in a flaxseed mock egg wash and rolled in luscious breadcrumbs and finished with seasoning of your choice, zucchini crisps are a go-to party pleaser. Bake at 400 degrees for seven minutes, flip, repeat and garnish with your favorite vegan parmesan cheese.

Once you’re done wiping the drool away after reading the title of this amazing recipe, grab a bag of Yukon golds and find that perfect avocado. This recipe combines richly seasoned potatoes squashed on the pan with a savory garlic aioli sauce to create an awe-inspiring side dish. After boiling and flattening your potatoes, season the bad boys up and roast them in the oven at 450 degrees for 25 minutes. While they’re cooking, mince your remaining ingredients in a food processor until smooth and dollop the aioli generously onto your roasted potatoes. Get ready to be chef of the year after bringing this appetizer to your family’s Thanksgiving dinner.

2 cups cubed butternut squash 2 tbsp coconut oil 4-5 portobello mushrooms corn tacos 1 cup black beans adobo sauce 15oz tomato sauce seasoning to taste
If there’s one meal that everyone has universally agreed on, it’s tacos. This recipe will satisfy the cravings of herbivores and carnivores alike with a combination of sweet butternut squash, roasted fresh mushrooms and a mouthwatering adobo sauce to top it all off. Toss your squash with a dash of coconut oil and seasoning and bake at 375 degrees for 20 minutes. In the meantime, get your sauce ready. Stir tomato and adobo sauce over medium heat and add in your taco preferences — black beans, onion, peppers, etc. Blend until smooth and then toss in the mushrooms and saute until tender. Warm your taco shells and stuff them with as much filling and it can hold. Feel free to throw in your favorite greens and veggies to really make it your own!

Sweet Potato Casserole 4 lbs sweet potatoes vegan butter 4 tbsp maple syrup cinnamon nutmeg 1 cup oats 1 cup pecans 2 tbsp coconut oil sea salt
This tempting casserole will please anyone around your Thanksgiving table, and only takes 30 minutes to make! Mash your sweet potatoes together with nutmeg, cinnamon and loads of vegan butter to taste. Then, add in the maple syrup and smooth it into a casserole dish. Crush the oats in a food processor and then stir into a bowl with pecans and seasoning, topping the casserole with the crunchy mix and pouring your remaining maple syrup and coconut oil over the top. Bake for 15-20 minutes at 375 degrees until crispy. Serve immediately!

This naturally sweet dessert is as decadent as it is easy to make! Thanksgiving happens to be right around apple season, and the combination of sweet cinnamon and fresh granny smiths makes for a killer dessert that pleases all kinds of taste pallets. Peel and slice the apples thinly and lay evenly in a glass baking dish. Layer the remaining ingredients over the apples and toss with your hands or a spoon to mix. Bake for 45 minutes, covered, at 350 degrees and then again uncovered for 15 minutes until the apples are very tender. Top off this gluten-free dish with a scoop of non-dairy vanilla ice cream or coconut whip cream for an extra splash of sweetness.

Premade vegan crust 15 oz pureed chickpeas ½ cup of apple sauce 15 oz coconut milk 15 oz canned pumpkin 1 cup brown sugar 2 tbsp cornstarch seasoning to taste
Thanksgiving really wouldn’t be complete without a hearty slice of good, ol’ fashioned pumpkin pie. Pick up a premade pie crust from your local health foods store and keep cool until ready. Mix the chickpea puree, apple sauce and a dash of baking powder until smooth. Add in remaining ingredients and mix until smooth, being careful to whisk out all the lumps. Fill the crust with the mixture and bake at 375 degrees for 30 minutes, or until the crust is brown. Turn down the heat to 350 degrees and bake for another 20 minutes, or until a knife inserted in the center comes out clean. It’s November and we all know what that means: it’s time for another freezing Eugene winter. When my toes are eternally cold and the days seem to get shorter and shorter, the only thing I want after a day of biking and walking in the rain is a cup of hot tea and a cozy bed to curl up in. But how can you make your dorm room or apartment bedroom feel like a place you will actually want to come home to on these cold winter days? It’s easier than you think. Here are some tips for staying cozy and warm at home this winter.
Invest in a good blanket. Pile on the pillows. Be it fleece or flannel, patterned or plain, this is a purchase you’re going to want to make. Try one that matches your bedspread so it’s easy and aesthetically pleasing to keep it at the foot of your bed or sling it over your desk chair. My favorite place to get amazing blanket deals is Costco. If you’re looking to make even more of an investment while helping others, try a blanket from Sackcloth & Ashes, a company that donates a blanket to the homeless for every one you buy. Hang pictures. Nothing makes you feel warmer than seeing the faces of people you love, right? Brighten up the dark winter nights with photographs. You can use a bulletin board, hang them on twine with clothespins, or DIY a little hanging frame.
Throw pillows are functional and fun. Plus, they can add a little more comfort to your day-to-day. Find some soft, fuzzy, comfy, quirky and colorful ones to brighten up your bedroom and make for a cozy reading nook.
Light some candles.
Buy a cute mug. Make it something cute with a sassy saying on it, something that’ll make you feel good every time you pour that afternoon cup of joe. Keep it on your bedside table for an extra bit of decorative flair and make sure it’s never dirty, in case you need it ASAP. I recommend checking out Ross or Target for a budget-friendly find.
My favorite winter scents are apple pie, vanilla, gingerbread and anything with almond or soy. Bath and Body Works has some amazing seasonal scents. If you’re looking for something a little less pricey, Burt’s Bees’ vanilla scented candle is a perfect alternative that can be found at most major grocery stores.
String some twinkle lights. They’re not just for the holidays. They cast a warm glow on the room and make it feel like a cozy winter oasis. String them above your bed for extra light and ambiance. (Target, $10)

The Art of Cozy: Everything You Need to Know AboUT Do you know that feeling you’re always chasing as the cold winter weather settles in? It’s that satisfied sense of deep contentment, of being warm, snuggled and loved. As it turns out, there’s a word for it—hygge. Hygge (pronounced HYOO-gah) is a Norwegian word that means “well-being.” The Danish use it for anything that makes us feel comforted by our surroundings and connected to those around us. Hygge can be found in favorite places, daily rituals, the company of close friends, comfort foods and adventure. It’s in the things that make us feel most alive and most ourselves. So, how can you invite hygge into your day? It’s already there, whether you realize it or not. Here are a few ways to tune in to hygge. Many involve your home space, but there are ways to be hygge in the wider world, too. Words and Photo by Anna Glavash
Hygge 1. Light candles Instant hygge! If you can’t burn them where you live, try string lights or a few small lamps. You can drape scarves over lights to soften them—safety first, though. Think warm glow. Consider where you place lights in a room to create pools of light. I have at least three lamps in each room—it’s amazing what a difference it makes.
2. Take a bath. If you have no tub, enjoy a hot shower. Afterward, spend time enveloped in a soft robe or indulge in self-care rituals. Physical comfort and wellbeing starts with your body. My favorite way to hygge (yes, it’s a verb too) while sitting at my desk is to do a hot foot soak in a simple plastic dish tub with bath salts and essential oils in the water. It’s seriously the best.

Invite anyone nearby to join. Check out the article on cozy dorm decor for ideas on blankets, pillows, mugs and decorating with photos. If you’ll be spending the next five months inside for the rain to stop, you should make your indoor spaces awesome. Choose things that make you happy and surround yourself with them. I like house plants and diffusers, so you will find these everywhere in my home.
4. Tea is the cure for so many problems. Pick out a few herbal teas that you absolutely love, and brew them often! Tea is cheap if you buy it in bulk. Check out the Kiva Grocery for their bulk teas, or make your own blends. Nothing is better than a cup of tea for warming up and calming your mood. For a boost of energy, I love to blend yerba mate with tulsi, peppermint and honey as an alternative to coffee. Or, if you’re a coffee person, now is the time to lean into that fix, and hard.
5. Bake something. Cake is never, ever a bad idea. Put on your Sunday morning playlist, roll up your sleeves and make some magic happen in the kitchen. This has the added benefit of warming up your whole house. The most hygge thing to do next is to share what you made with someone! Nothing makes me happier than seeing other people enjoying my creations.
6. Have a crafternoon. Gather up supplies for whatever project helps you relax and express your creativity. The more the merrier is usually true when seeking hygge, but solitary crafts like knitting are still fair game. If you’re like me, you might go on an adventure with your camera or bust out a sewing or beading project.
7. Bundle up and go for a walk with a friend. Much of hygge’s magic comes from contrast, such as inside vs. outside, warm vs. cold, shelter vs. exposure. When we dress warmly and go out in the elements, we experience that contrast in a pleasing way. You appreciate the warmth and dryness of a jacket or a home
that much more when you experience their opposite. If it’s an especially nasty day, the warm company of a friend can bring that contrast, too.
8. Be present with someone. Whether you’re doing a jigsaw puzzle, reading to each other, talking on a long drive, visiting with family or even petting your dog, this presence is as powerful for the person experiencing it as it is for you offering it. Authentic connection is more difficult to come by and all the more important for us to intentionally create amidst the allure of social media. Turn off the TV, put away your phone and enjoy the amazing people around you.
9. Invite some people over and cook dinner for them. This is the ULTIMATE hygge scenario. Just picture the combination of hygge lighting, music, games, delicious food and drink, and the richness of company. Afterward, you can all sit around together feeling full and sleepy. What could be better?
10. Do an act of kindness. Try buying a coffee for the person in line behind you or bringing a meal to someone without a home. According to Louisa Thomsen Brits, the author of The Book Of Hygge, “Hygge is dependent on having our most basic human needs met. Without security and shelter, it’s hard to survive.” Do what you can to bring a little hygge to someone in your life who needs it most. Just watch how full it makes your heart feel.

Here are five hikes, walks and hot springs sure to make the most of your weekends before the end of term. A good friend once said, “Some people dance in the rain. Terwilliger Hot Springs
Spencer Butte watches over Eugene day and night, and if you like to watch night turn to day, this is the place to do it. Climbing up usually takes about 20 minutes and the views at the top are panoramic. On a misty morning in Eugene, hike up through fog and look out across an ocean of clouds. Or, watch the sunset from this excellent vantage point and be home in time for dinner. Don’t forget a head lamp.
If you like gentle walks in lush forests:
Picture four cascading pools surrounded by boulders and evergreens. Steam rises from their surfaces, each one hotter than the last. Just above Cougar Reservoir and beyond Terwilliger Falls is the parking area and fee station for this clean and clothingoptional natural hot spring. $6 is what you pay to soak for the day. The pools are closed at night and cleaned on Thursday mornings, so don’t visit then. Any other time, including those dreary days when most outdoor activities don’t appeal, is the perfect time to take a dip in some hot water.

Alsea Falls
A pretty hike at any time of year, Alsea is a spectacular autumn adventure when the birch and aspen are golden among dark evergreens. The rolling trail follows the Alsea River past Alsea Falls, and if you keep going you’ll come to the taller Green Peak Falls. There’s a picnic area and campground if you feel like pitching a tent and toasting some s’mores.

Clear Lake
Getting there: 1 hour 26 minutes Trail: 4.5 mile loop This breathtakingly blue lake is worth the drive up scenic Highway 126. Eugene’s drinking water source is the McKenzie River, which first bubbles out of lava rocks here at the foot of Mt. Washington. The shores are ringed by a mostly flat hiking
trail that takes you through forest, as well as across an unearthly lava field. Bring your camera to capture the fiery maples and jewel-like waters. On a clear day, you’ll get views of the Three Sisters too.

Salt Creek Falls and McCredie Hot Springs Getting there: 1 hour 10 minutes Trail: 3.4 mile loop
It’s three for one when you drive out Highway 58 along Salt Creek. You can park right at Salt Creek Falls, Oregon’s second highest single-drop cascade at 268 feet, and just admire it, or take the loop trail to Diamond Creek Falls for a hike. On your way home, pull into McCredie Hot Springs next to Salt Creek and choose from several pools of varying temperatures alongside the river.

Easy DIY Bath Bomb No one needs a day at the spa more than a college student entering the last few weeks of the term. So what if you can’t afford a trip to Lush or Bath & Body Works every day? We compiled a list of DIY bath bomb blends that will be kind to your body and your bank account, too!
INGREDIENTS 1 cup baking soda ½ cup citric acid ½ cup epsom salt
DIRECTIONS
¼ cup coconut oil
1. Mix together dry ingredients.
20 drops essential oils
2. In a separate bowl, combine melted coconut oil and essential oils, then add to dry ingredients.
(Avoid minty oils. They will burn!) Food coloring (optional)
3. Press the mixture into a mold or into small balls. 4. Let sit for at least 12 hours, or until hardened. 5. Place in bathtub and let fix prior to getting in.
SUGGESTED ESSENTIAL OILS Sore Muscles Blend: Combine 15 drops of eucalyptus and 10 drops of lavender essential oils for a healing, soothing blend. Calm & Collected: Combine 15 drops of lavender and 10 drops of rosemary essential oils for a post-midterm, relaxing bath. Up & Energized: Perfect for a quick morning pick-me-up, combine 10 drops of wild orange and 10 drops of lemon essential oils for a rejuvenating morning bath.
