letter from the editor As winter continues to tease us with these warm sunny days immediately followed by torrential downpours, I seem to find myself indulging in the comfort of heavier, fattier and — what I mean to say — tastier foods. The sun’s constant baitand-switch routine is getting a little tired and my emotions have found temporary solace in the comfort of all things starchy. While planning out an outline for this current edition of Chews and Brews, I was sitting in the Glenwood eating a grilled bacon and cheese sandwich with a monster side of french fries as my server graciously kept fueling my Diet Coke addiction. So naturally, thoughts of nutrition, seasonal vegetables and winter dieting techniques were nowhere to be found. As I typed away multiple carbohydrate-loaded pitches to discuss with my staff, flavorful dreams of local stouts, Swedish pancakes and buttered cornbread kept trumping the more sensible food groups. Instead of reeling it back, I took it as a sign that I must not be the only person with these comfort food urges. Thanks to my wonderful team at the Emerald, we have compiled a guide that explores the delectable delights of Eugene’s food scene. bottled brew pairings I’ll be the first to admit it: my knowledge of beer is limited to grabbing whatever IPA happens to be in my fridge. Words in pairing guides like “lacing,” “retention” and “mouthfeel” sound simple enough, but ultimately leave you no more knowledgeable than when you started reading, and I’m probably the last person on the planet who could tell you what they mean. In the spirit of taking on new knowledge, though, I decided to take on the charts, webs and lists that make up the bewildering world of beer pairings. If someone can perfectly couple brews with Girl Scout cookies, I’m certainly capable of finding a beer to sip with my pizza. The result is a mixture of fact and conjecture at best (at worst, it’s straight up, well intentioned fiction –– so sue me, Cicerones!) with some local ales and where to find them to help create some perfect comfort food and alcohol marriages –– all so you can create the luxury of beer pairings in your own home. by erin weaver

The dark coffee and chocolate undertones in most stouts lend another layer of flavor to rich ice creams. Sweeter than most beers, stouts also bring out ice cream’s sugar, but they’re still bitter enough not to be cloying. Ninkasi’s Vanilla Oatis is rich in flavor with hints of chocolate and a developed vanilla flavor profile –– which the brewery achieves by adding whole vanilla beans during the brewing process.

All About the Growler Typically made out of glass or stainless steel, growlers are the eco-friendly alternative to buying bottled beers and are the popular go-to when getting beer from local tap-only breweries like Eugene’s Falling Sky or Sam Bonds. They can be bought at most breweries –– frequently adorned with the establishment’s logo –– and grocery stores, including the campus favorite Hirons. There are also establishments that specialize in growler fill-ups and bring many local kegs under one roof for a convenient growler one-stop-shop.

A rich, chocolatey porter pairs perfectly with equally-rich chocolate desserts. Because the two have similar flavor profiles, each brings out the chocolate in the other! For a bonus layer of flavor, try a porter with a twist like coffee or vanilla brews. The Java Porter from Sam Bond’s Brewing is made using coffee beans from Stumptown –– so its coffee flavor is bold and pronounced –– and can add deeper complexity to any dessert, chocolate or otherwise.
Brown ales often have a nuttiness that can cut through the fat of rich meals like mac and cheese. In this coupling, the slight caramel-like sweetness in brown ales adds a more complex flavor profile to some otherwise one-note cheesy dishes. The St. Bernard Brown is moderately bitter and has sugary undertones that can balance out the richness of mac and cheese.

liquid chocolate They say eating chocolate soothes the soul. However, we take that one step further and say eating chocolate can solve all the world’s problems. In fact, it’s scientifically proven that eating chocolate is good for you; chocolate has antioxidant properties that can you help you in times of stress by increasing circulation, including blood flow to the brain. Chocolate can relax you, make you feel better and increase general quality of life. Although everything in moderation may apply to most things, it does

not apply to chocolate! Here at the Emerald, we can’t get enough of it. Seeking chocolate in more unique incarnations — including drinkable — we sought out different forms of chocolate around Eugene. (We may have been comatose for the next three days but we like to say it was worth it.) So grab your friends, your loved ones or maybe just your loosest sweatpants and go seek out these drinkable chocolate treats!

Sipping Dreams: Drinking Chocolate This chocolate is described as sipping and drinking chocolate, but a more accurate description would be chugging chocolate. Sipping Dreams is one of the first companies to popularize drinking chocolates in the PNW (as it’s still relatively unknown everywhere but Europe.) This particular drinking chocolate utilizes 72% dark bar chocolate rather than powder, making it particularly decadent. Check online for purchase locations
Barry’s: The Dirty Christmas Morning When it comes to treats, no one does it better than Barry’s, so we went in looking for drinkable chocolate and were not disappointed. The baristas there whipped up a particularly naughty treat that we would have never thought to ask for. The Dirty Christmas is white hot chocolate with chai and espresso. They also recommended trying the

Goody’s Chocolates: Chocolate Shake Ask anyone what the OG form of liquid drinking chocolate and they will instantly respond, “Duh, a milkshake!” Goody’s makes a great chocolate milkshake and the setting is nice, too. Forget about math and soak up their cute decorum, or just zone in on sucking up the chocolaty shake. Eugene is known for its mellow hippy vibes and earthy hole-in-the-wall businesses. The Eugene food culture is an experience within itself, able to satisfy every type of foodie from vegan to carnivore. Among the hypnotic donuts and cheesy tater tots lies the unique Cornbread cafe, which features an entirely vegan comfort food menu. Want the comfort of your mom’s mac and cheese without the lactate pills? The Cornbread Cafe satisfies the restricted diets and appetites of adventurous
foodies. Located on 7th and Polk, this vegan oasis is one of Eugene’s prized culinary spots. Owner Sheree Walters, after working in the restaurant industry for over 25 years opened the Cornbread Cafe’s diner doors about six years ago to a very welcoming community that was hungry for the vegan dining experience. Walters gained the inspiration and love of food from her grandparents who have lived a

vegetarian lifestyle since the 1950’s in Canada. The immensely positive influence from her grandparents and their cooking created the template for Walters to create the 1950’s nostalgic dining experience at Cornbread Cafe. Walters says, “Long before I became a vegetarian, I was going to open up a vegetarian restaurant and then when I became vegan, I started veganizing recipes.” She believes her heart and soul belong in the era of Grease even though she never lived in the decade. Taking her love of the 50’s and strong desire to recreate a day in her grandma’s kitchen, she opened the doors of Eugene’s first and only all-vegan comfort food restaurant. Walters
“long before I became a vegetarian, I was going to open up a vegetarian restaurant.. ” lovingly says, “I set out to create a community space where everyone feels welcome no matter what their background, their age, whatever… everybody feels comfortable in here and that makes me feel really happy when I look out and see a variety of people, it makes me want to cry.” Without any meat or animal products on the menu, the Cornbread Cafe offers a wide variety of comfort food that will satisfy even the most carnivorous appetites. Ninety percent of the menu is made in-house, and most of the sauces she features at the restaurant took her years to perfect while others were staples in her grandparent’s vegetarian kitchen. an overwhelming majority of their food products in-house has allowed Walters to eliminate unwanted allergens and low quality additives in her loved dishes. Not only do they take pride in creating tasty food, they also make sure to eliminate as much waste as possible and food scraps are composted. The signature and most requested dish remains the Eugenewich, which after being featured on Diners, Drive-Ins and Dives with Guy Fieri has made them add it to their breakfast only menu on Sundays because of the amount of hungry travelers stopping off I-5 just to taste the famous vegan masterpiece. It consists of a “southern-fried Surata tofu patty topped with melted Daiya cheddar, deep-fried carrot slices, hand-breaded onion rings, lettuce, tomato and a smoky sauce on a grilled bun.” Is your mouth watering yet? Their Mac Uncheese, which is smothered in their cashew-based “cheese,” remarkably tastes like the lactose original. The store-bought vegan alternative does not compare to the thoughtful recipes found at the Cornbread Cafe.
On Saturday and Sundays, the Cornbread Cafe opens its doors for the hungry morning breakfast crowds looking to find yummy bacon and sausage substitutes to start off their days. Walters is very proud of her breakfast menu, touting the omelette as one of her favorite morning creations. It comes with a variety of fixings that successfully taste like the egg protein original. The morning menu is filled with the classics like French toast, biscuits and gravy, chicken and waffles and even an Egg McMuffin for those who enjoy the traditional McDonald’s staple without the high caloric price tag. If you resolved to be vegan for the new year or just want to embrace the unique Eugene food culture, Cornbread Cafe is the place for all appetites.

Marché - French onion soup There’s nothing more satisfying than punching through that top crusty layer of a French onion soup, and the one served up at Marché definitely delivers. Conjuring visions of Paris (as opposed to the Knight library), Marché’s French onion soup is made from caramelized onions and a rich meat stock, and is served with cheese, croutons and a large piece of crusty bread to soak up all that buttery, garlicky goodness. 296 E 5th Ave #226, Eugene, OR 97401
Sweet Basil - Thom Kha Gai Sweet Basil is the perfect place to slip away for a little pick-me-up, and it offers the ultimate warmed-fromthe-inside-out experience: sipping on some Thom Kha Gai soup. The spicy chili base is even rumored to melt away colds and the winter’s seasonal depression! Thom Kha Gai (or chicken galangal soup) is based in a creamy coconut milk and expertly mixes flavors of lemongrass, fresh ginger, lime, chili, basil and cilantro. Chapala - tortilla soup Chapala has a delicious take on a traditional Mexican staple. The soup is based in a spicy yet savory, superrich chicken broth that Chapala makes themselves, and includes tortilla strips and notes of garlic and onion. Featuring subtle notes of dill, garlic and pepper, the soup is somehow both rich and light at the same time and is comforting without weighing you down — and it’s all made in-house! Soup Nation - the sampler After seeing Soup Nation on an episode of Diners, Drive Ins and Dives, we have to thank Guy Fieri for bringing us to such a “dynamite” spot. Soup Nation makes everything in-house, including their whole wheat sourdough bread, which is the perfect consistency for dunking. We chose the sampler platter of Grandma Ruth’s Chicken Noodle, Caribbean Yam and Thai Coconut Veggie after consulting with the knowledgeable staff. cheese class of 2016 We’re a little early for National Grilled Cheese Month (which is in April for those of you who don’t have your calendars marked accordingly, you heathens), but if there’s anything we crave during Oregon’s rainy, freezing winters, it’s some good ol’ fashioned carbs and cheese. The grilled cheese is arguably one of America’s finest and most beloved staples, and though the average college student can throw one together for less than three dollars, there are several establishments around Eugene that have taken the sandwich to elevated, sexier heights. To help soften the bite of Eugene’s cold winters (get it? Bite?), we’ve compiled a list of some of the city’s most unique grilled cheeses. by Erin Weaver
The Inventive Rebel Sammitch Food Truck CheezyMMMitch This is by far one of the cheesiest sandwiches this city of ours has to offer. Layered with feta, dill havarti, cheddar, provolone, mozzarella and brie (that’s a whopping six cheese varieties for those who weren’t counting), Sammitch’s CheezyMMMitch also packs in strips of bacon and tomato that lend some serious flavor and saltiness to this already-explosive sandwich. Toss the sweet potato disks in olive oil, rosemary, salt and pepper and arrange on baking sheet. Bake for approximately 20 minutes (or until sweet potato is tender and punctures easily with a fork). While sweet potato is cooking, place butter in small saucepan and simmer over low heat, swirling the saucepan until butter is browned (approximately 5 minutes) be careful not to burn the butter to the bottom of the saucepan. 4. Remove butter and set aside. In same saucepan, heat olive oil over medium heat. Place onions in

To make the grilled cheese, layer onions, cooked sweet potatoes and sharp cheddar cheese between the bread slices. Grill the sandwiches for 2 minutes on each side, or until the bread is sufficiently browned.
