Cases of diabetes and obe sity are on the rise, with nearly 1 in 10 of adults between 20 and 70 diagnosed as di abetic In a first of its kind study, a re search team at Virginia Tech determined the properties of olive oil that make it the lowest cost way to reduce diabetes risks and related weight issues The team dis covered that oleuropein, a compound found naturally in olive oil, boosts insulin levels, supporting better control of metab olism and blood sugar levels.

Previous citizen petitions for Standards of Identity have resulted in the adoption of regulations for a variety of food prod ucts. “American olive oil producers are com mitted to providing consumers with high quality extra virgin olive oil,” said Jim Lipman, AOOPA chairman “This pro posed olive oil Standard of Identity en sures consumers can trust that when they reach for a bottle of extra virgin or any grade of olive oil that it is honestly labeled U S olive oil farmers know that con sumers ’ trust in the olive oil they purchase is paramount to increasing demand, which will spur investment and growth in the American olive oil industry ” GN

The standards, which the FDA would be empowered to enforce following a final ruling and public comment period, would mark the first time the federal government has adopted mandatory regulations for olive oil, which is a key step toward ensuring a more hon est, fair and competitive industry “For the first time, top selling brands such as California Olive Ranch, Pompeian, Bertolli, Filippo Berio, Colavita, Star, Co bram Estate and other major producers have joined forces to drive standards that will help eliminate consumer confusion around one of the healthiest and most de licious foods they can eat,” said NAOOA Chairman Marco de Ceglie “Stricter label ing practices will allow consumers to feel confident that the olive oil they buy will deliver the quality, value and health bene fits they expect ” If approved by the FDA, the standards would give growers, producers and bot tlers an edge in a highly competitive mar ket and will instate practices that drive a more trustworthy industry. FLICK Away from the din of the Summer Fancy Food Show, Amelia Bilbeisi calmly held court at the cozy wine bar Place des Fêtes in Brooklyn, N Y , sitting at a long table of specialty food professionals, teaching us how to appreciate quality olive oil with food pairings from celebrity Chef Jacob Harth Bilbeisi, one of the few leading female certified olive oil sommeliers, demon strated how to examine olive oils from her family’s estate in Jordan, much like wine connoisseurs. Now we know the most im portant thing to find in an extra virgin olive oil is a fresh, grassy smell perhaps a fresh tomato smell If you smell chemi cals such as nail polish remover or plas ticine, don’t use that oil

Two years ago, Bilbeisi signed on as a quality control expert and in 2019, became a certified olive oil connoisseur, one of the few women in the industry with that qual ification, from the Olive Oil Times Educa tion Lab in London She’s the face of the brand as the com pany introduces Onsuri to Americans “It’s fun to get people to try the oils,” she said, “and to see people experience for the first time the smell of a good oil “At our dinner at Place de Fêtes, we did n’t do defective oils. When I trained, we spent two days on defective oils, the smells and tastes and some of them were unbe lievably bad And now I know what causes them to be that way ” Bilbeisi has added master miller to her skills to improve Onsuri’s oils as best as she can, mitigating factors such as climate change that affect the quality of the olives It’s a challenge she thrives on “It’s a fine art,” she said “I want to keep pushing myself more as a master miller.” It’s not a glamorous job, with a great deal of number crunching involved “There’s a lot of data,” she said, “but it brings me lots of joy ” Bilbeisi is also energized by the oppor tunity to present extra virgin olive oil from a region not typically associated with the product to retailers and consumers in the United States Given free rein to do whatever she needs to to ensure the consistency and quality of Onsuri oils, which carr y the ultra pre mium grade that only 5 percent of the world’s olive oils have, Bilbeisi oversees everything from irrigation to pressing time to market needs What worries her most is climate change “It’s a nightmare for ever yone in the world at this moment,” she said. The estate monitors how much water the trees get as well as how much evapo rates on a daily basis “We hold ourselves to a margin,” Bil beisi said “For example, last year, there were 10 very, very hot days right before the season You can use technology and you can use data, but you ’ re at the mercy of Mother Nature If you ’ ve done everything right, the season will grant you some grace.”

Onsuri also was not immune from the hardships of the pandemic, including a se vere lockdown in Jordan The family took the risk of planting a new variety of olive, which Bilbeisi is enthusiastic about using for a new oil in the future Onsuri makes four extra virgin olive oils Arbosana is a fruity, pepper y oil with notes of green apples and tomato leaf Arbequina is a milder oil with hints of grass, herbs and florals and delicate spicy flavors In contrast, Koroneiki is robust, with a high polyphenol level mingling with herbs and banana Onsuri’s Signature Blend, with its but tery tone, is intended for everyday use At Place des Fêtes, Chef Harth used Ar bosana for P E I mussels en tinta; sardine toast with smoked butter and green man darin; winter flounder with tomato gelée and celtuce; striped bass with horseradish and bamboo; and longfin squid with salted gooseberry and romano beans He used Arbequina for Otway bread, Don Bocarte anchovies, tempestra mor tadella, Mixed Single cow and sheep milk from Vermont and salt cod fritters with saffron

The Bilbeisi family has been cultivating olive trees “beneath the Jordanian sun and above artesian wells feeding still reser voirs,” as the Onsuri website says, for a dozen years, led by patriarch Zia Bilbeisi

The brand is familiar to Middle East and European consumers, but Amelia Bilbeisi’s appearance at the Summer Fancy Food Show heralded the company ’ s push into North American retailers and restaurants

It wasn’t a role Bilbeisi envisioned for herself previously With an arts degree from Ruskin University in Cambridge, England, she worked in digital arts in Jor dan before embarking on a career in cor porate training and development that led to forming her own company, which she sold to start a family She hesitated when her father and brother, Firas, who works for the company out of London, approached her about join ing the family business While she was proud of Onsuri, she was fully aware that the centuries old Middle Eastern industr y was dominated by men and she sought to educate herself about the olive oil industry

Delay Benjelloun said they are not using “light” in the literal sense of the word, rather to mean the olive oil is “ a light for your body, a source of light that enters your body and is really healthy for you. ”

The packaging of Noor Fès features a beautiful, sweeping golden Arabic callig raphy with a background of a starburst golden mosaic pattern inspired by the style of zellige the traditional Moroccan mo saic tilework made from individually hand chiseled pieces The golden artwork of the packaging symbolizes the essence of the “ sun rising on the city of Fès,” Delay Benjelloun said GN Chef Harth used Koroneiki for cavatelli with morels and English peas, swordfish chop with poblano and green strawberry and Berkshire pork countr y rib with green pepper and dried clam For the ever yday sensor y blend, Chef Harth created lit tle gems with green goddess, fiore sardo; Japanese cucum bers with spruce and Meyer lemon; and grilled artichokes with smoked egg yolk. As an avid cook, Bilbeisi enjoyed the chef ’ s offerings that night “I wouldn’t have thought to do some of the pairings, but I loved ever ything he came up with,” said Bilbiesi, who discussed the On suri oils with the chef, but had no say in the tasting menu Clearly, though Bilbeisi hadn’t purpose fully set this path for her life, it’s one she clearly embraces, often using the word “joy” to describe the estate, the oils and her role in creating the oils. Loosely translated from Persian poetry,

Onsuri means outsider, which Bilbeisi re lates to not only for the path she’s cho sen, but the path that Onsuri is on to attract consumers “We’re focusing on making the best oils we can, which can make a difference and hopefully, attracts clients “The olive oil industr y is so small, which is lovely,” she said “People are pas sionate about it And within the food industry, they’re the nicest people We’re all fo cused on doing the best we can ” Bilbeisi said the best ad vice she can give to anyone wanting to discern the qual ity of extra virgin olive oil is to trust your own nose. “You can read as much as you can about it, but at the end of day, just smell it,” Bil beisi said “If it reminds you of nature that’s fantastic! If you ’ re smelling something chemical or industrial, that’s probably not a good oil “Invest in extra virgin olive oil,” she said “It’s wonderful for your health, so it’s an investment in health, and also better for your food and taste ” GN

Lisa Delay Benjelloun, export manager of Noor Fès, said the first har vest “ was good, but we wanted to improve ” Thirteen years after they started the project, they began to win awards and medals It was important to Dakir to reach this point of quality, to achieve a tradi tional Moroccan olive oil while using so cially responsible and sustainable farming practices such as water conservation an issue of great concern in an area prone to drought and dramatic temperatures Noor Fès is fortunate to be at the base of the Atlas Mountains and have access to water, which it shares with nearby villages

The second year of the partnership kicked off with the announcement of an expanded Community Cleanup and Beautification grants program with Pompeian increasing its commitment from 2021 to $30,000 Additionally, Pompeian will be re adopt ing Mr Trash Wheel and Professor Trash Wheel, now on track to remove an addi tional 220 total tons of waste from the Bal timore Harbor by the end of 2022 In 2021, the beloved interceptors donned new looks with olive green eyes and large spinning olives all of which are staying through this extended partnership “Pompeian has been a committed and generous partner to the trash wheels and our Healthy Harbor programs over the last year, and we are thrilled to continue work ing with them to build upon our long standing commitment to better Baltimore’s neighborhoods and improve water quality through community led improvement projects,” said Adam Lindquist, vice pres ident of programs and environmental ini tiatives at Waterfront Partnership of Baltimore.
