The thing about HPP is it isn’t often convenient for food manu facturers to use In order to achieve the enormous pressure re quired, huge machinery is required, much too large for a kitchen or restaurant counter, much less the usual food manufacturing fa cility So there are companies at various locations who use HPP for clients Dr Raghubeer expects that companies will be expanding facilities across the country at some point, to open up the technol ogy for more food manufacturers In the process, food in airtight packaging is loaded into baskets and sealed inside the HPP vessel, where water is pumped up to 87,000 pounds of pressure for one to three minutes The pressure is released, the water drained and the food is sent along its way I doubt that there are windows to see the processing in action, but that would be pretty cool, wouldn’t it?

Barely a week goes by without some plant based food manufacturer announcing an influx of investment money Eat Just, which created Just Egg, one of the fastest growing egg brands using all plant based ingredi ents, recently announced a $25 million in vestment from C2 Capital
With backgrounds in finance, the pair often discussed possible ventures, but the pandemic gave them a push forward
Both Yang and Casali grew up loving mushrooms, despite the strange looks they may have received from their friends They discovered their shared love soon after they met and became a couple
Thus, Twisted Thai Chili was created “One of my favorite things is seeing peo ples’ reactions first of all, to the mushroom chips,” Yang said “People are so pleasantly shocked with the texture When you take the first bite, you can hear the audible crunch, which in combination with their reaction is a highlight for me
HPP isn’t a new technology Dr Errol Raghubeer, vice president of HPP and food technology for JBTAvure, the global leading maker of HPP machines, is a foremost ex pert and pioneer on the technology
If there are any down sides to HPP, it’s that it requires machinery on a huge scale to create 87,000 pounds of pressure, which means there are few facilities to handle pro duction, it can be costly and it won’t be the next trendy kitchen appliance
The couple liked the idea of a snack in spired by traditional Italian stuffed mush rooms, with the herbs baked into the
Brands using HPP include Hormel Nat ural Choice, Evolution Fresh, Applegate Hotdogs, Good Foods Guacamole and Pressed Juice
“It’s the ultimate Mediterranean diet,” she said
Once online, the two were surprised and excited to see a growing interest in mush rooms
Pressure cooking methods also are chang ing the way plant based foods are made, something that Good Foods, maker of a new plant based cheese that uses high pressure processing (HPP), values because it doesn’t use heat and cooks the product quickly
“Families have been cooking with other types of pressure cooking, whether it’s a pressure pot or sous vide,” she said “But at
The combination of high quality pro duce there and local spices, such as Greek oregano, which differs from what Ameri cans are used to, along with mint, dill, wild fennel, rosemary and cilantro, also enrich the cuisine
“It’s bringing protein down to its amino acid structure,” Longfield said “That pro tein happens to be better for you
“Plant based cheese is a whole new world here in Wisconsin,” Longfield said “But it’s great to develop products up here, where you can go to the people we work with and say, ‘Give me an honest opinion’ and they say it’s pretty close to being a dairy based queso ”

Raghubeer said more manufac turers are adopting HPP for cheese products and hummus
“It used to be that people would crack an egg and drink it, as the best way to get pro tein in,” she said “In a way, HPP is like that by getting protein into its most optimal state ”
Another factor that has created a plant based diet in that part of the world is the tradition of fasting from animal products, which gave way over time to the develop ment of a variety of plant based meals
By using HPP, Good Foods has increased the shelf life of the plant based cheese from five weeks to 10

While Greek restaurants in the United States are expanding menus to include vegan options, Kochilas isn’t expecting to see entirely plant based Greek restaurant menus anytime soon One Chicago gyro producer, Grecian Delight, now makes plant based Greek food products for food service, she noted

By 1997, HPP expanded into the con sumer market, particularly with guacamole products, ready to eat meats and fresh squeezed juice
“We always associate hummus as a basic, high protein food,” he said “Now, consumers are going to the store to find a lot of hummus without the preserv atives inside Hummus will be the next guacamole, not only in the United States, but especially Europe ”

“We can create finished products using pressure that retain the flavor and nutri ents, without having to use binders or thickeners,” she said
“For instance, with salad dressings, you use heat to treat it in the traditional method with stabilizer gum With pressure, we don’t have to add a stabilizer It’s a win win because the product is not exposed to heat but gets the benefits of pressure cooking It allows us to do things we can’t do to make cleaner, better products ”
“They’re not only good tasting, ‘’ Raghubeer said, “but more natural That’s what consumers are looking for, less chemicals in products and less ingredients Consumers are now buying based on what they see on labels They’re not buying just because it’s sliced ham, they want to make sure it doesn’t have chem icals ”
Raghubeer sees potential for HPP in more beverages, as consumers seek natural ways to boost immunity with ever ything they ingest including juices and better for you beverages
