There is an old adage I came across years ago: “What ever you do don’t come up short!” I worry about that often and certainly every quarter when it is time to publish another Greater Heights OurBlok publication. Not only is this an issue of personal pride for me but living and working in the area you publish in could get embarrassing if you were to “ come up short.” This drives us all to produce The Heights best read each quarter. We don’t always get it right but we strive never to come up short. I hope you enjoy our first Greater Heights Foodie Guide. Whether we are producing the annual New Resident Guide, Restaurant Guides or Home Owners issues I like to try and give you a publication that you will want to keep around the home or office. Our office staff often discusses what makes The Heights such a unique area to live and work in. How many parts of town get to put “THE” in front of their name? Can you imagine THE SPRING? Or THE SUGARLAND of worse yet maybe THE DEER PARK! Somehow THE HEIGHTS can pull it off. During these staff discussions we ultimately arrive at a familiar argument. What makes the area special is it the places or the people? When all is said and done it is probably a bit of both but since I personally find the people the more fascinating of the two you often see us feature people on our covers over buildings. Real people doing really cool things and making a real difference in The Heights. At any rate we hope you enjoy reading about two of the the early restaurant pioneers who decided on making The Heights their home. An equally interesting article from Dr. Joan Ifland on Kids, Processed Food Addictions and Eating Out, and a great profile on Miguel Facundo. We always enjoy your feedback and remember at the end of the day we truly hope “we didn’t come up short!”

Early Adapters The center of the Heights growth is certainly the restaurant scene. Heights residents may disagree on a number of the new developments, apartments, and Walmart. But most of us are enjoying the great restaurants that seem to be opening monthly. Early pioneers like Sam Segari of Segari’s Seafood and Mr. Pizzitola of Pizzitola’s BBQ.
K: In fact, for a brief time, our family owned and operated a restaurant, and I guess you could say I kinda got the bug way back then and held on to it.
Two guys have done it up in style and who have made a major commitment to the Heights are Ken Bridge of Delicious Concepts and Gary Mosley of Creek Group. We thought our foodie issue would be a great time to visit with these two restaurant pioneers.
G: When I moved here, houses were $50,000. now they’re a million. Need I say more?
How long have you been in the restaurant business? G: I started waiting tables in DC in Georgetown while in college in 87. When I came home I worked at Quilted Toque, Backstreet Café and Café Adobe. I got to work around some of the best people in the industry. K: I opened Dragon Bowl about a decade ago, with Pinks not far behind.
How has this area changed since you first opened?
K: As most of us in this area know, not only has the number of restaurants grown exponentially, as it is true with variety and selection as well. What makes your restaurant unique? G: I think we are still doing what we’ve always done, which is providing an easy going, relaxed atmosphere where people enjoy themselves.
What was the inspiration behind your restaurants?
K: I try and have a healthy balance of product versus guest experience at my spots and we try to pay attention and offer a little something for everyone.
G: I wanted to create an easy going, laid back atmosphere with no pretense. Come hang out, have a beer, relax and be yourself. Say hi to your neighbor.
When you are not working, what is it you enjoy doing?
K: I think my inspiration with my concepts has always been with fun unique directions, with products that we all grew up on. Like most of us, I like to challenge myself with new concepts that are unfamiliar and require the whole process that can be nervously exciting in some ways.
K: It’s sad, anyone that knows me, knows that I really enjoy working, but family and travel are my immediate future goals.
What made you decide to start in the Heights? G: I’d been living in the Heights since 1999, and I felt I could contribute to and promote growth in a neighborhood. The Heights was hungry for something new at the time. K: I grew up in the Heights for the most part, so the desire to work and live in the same community was always very strong. Was owning a restaurant something you had always wanted to do?
G: I love exploring small towns, driving the Hill Country, spending time with my family.
Has the competition with restaurants in the Heights helped your business? G: I think it’s helped. It’s also fun for the neighborhood, more variety. K: Like everyone, I love choices and healthy competition drives incredible synergy. What is your favorite menu item?
G: Depending on which café, I love our Greasy Lips Fried Chicken at Canyon Creek every Tuesday, Onion’s house smoked brisket, which is pretty damn good, I put it up against any BBQ joint. G: Not really. I was in real estate at the time. Kinda goes back to why I made the decision. The neighborhood needed it, and I have a Cedar’s Pig Fries with pulled pork and Dry’s burgers! passion for building and creating, so it just happened. K: There’s so much that I really enjoy on our menus, but I can

never get tired of a slice or a cold pint. What is your most popular dish? G: See above. Apparently people agree with me. K: Popular items would definitely be pepperoni pizza at Pinks, day after Thanksgiving sandwich at Lola and burgers at both Shepherd Park and Witchcraft. Any plans for another restaurant in the near future? G: No comment. :) K: I keep threatening to bring The Bowl (Dragon Bowl) back. I think I’m just waiting on the right space to come along. If you had to do it all over again, what would you change? G: Not trying to please everyone. K: If I got to do it over, I’d probably take more time to enjoy and appreciate it all and take it in a bit more. Biggest mistake you would own up to? G: Making the kitchens bigger (no idea we’d be this popular!) K: Biggest mistake, probably opening The EL a little too soon. Most proud of? G: Our customers, hands down, loyal for 12+ years, and seeing the inspiration The Creeks has had all over town. K: Myself, self- taught, high risk, pretty fair Little bit about your background? G: I come from an entrepreneurial family and worked hard to achieve success. I was taught to never give up! Long way from Johnson Middle School and High School for Health Profession. K: I too was taught at an early age to work hard and respect others, I really do believe if you can imagine it, you truly can achieve it. Favorite restaurant in the Heights other than yours? K: We like to support our local businesses as much as possible. Stand-by’s are the Italian Hoagie at Spaghetti Western, the Midnite Masterpiece at BB’s, the Picadillo at Taco’s a Go Go and the Ciabatta Pizzas at Onion Creek.

restaurant is fairly simple: plenty of capital, impeccable service, and, well, some kickin’ recipes. But where an eatery opens its doors is just as crucial—and it seems that the greater Heights is just the right place. “Location is a pretty significant factor,” says Jennifer Figueroa, who along with husband Greg and friend Tyler Peck recently opened a second Spaghetti Western (1951 West TC Jester) within a mere 2 miles of the first. “We wanted to be even closer to the Oak Forest area, doing what we do, making good food at reasonable prices.” And “good” food is an understatement, according to their vast amount of return customers. “Our favorites change,” says Carol Tosh, whose family has been in love with the restaurant since the first location opened. “Italian Nachos, Chicken Scallopini, the pizza and salad combo...the wait staff is always accomodating!” For further confirmation, just check out the many posts on the Oak

Forest Homeowners Association Facebook page, where you would be hard pressed to find anything but raves about both locations. “The neighborhood Facebook pages can make or break a reputation of any business, including restaurants,” says David Lorms, president of The Oaks Business Association. Just within the Greater Heights area, there are over 10,000 members of neighborhood pages, and the community within this social network is particularly close compared to other areas—both online and in person. Kevin Naderi recognized this tightknit community when he decided to open his second restaurant, Lillo & Ella (2307 Ella Blvd.). His vibrant spot for Asian fusion shared plates pays homage to the neighborhood tradition of renovating existing spaces rather than starting from scratch. “The area is great in the fact that it’s growing yet still keeping its character,” says Naderi, who also owns neighborhood-centered Roost. “I love the idea of folks walking or riding a bike to dinner, dressed comfortably, sharing
food and drinks with friends.” Patrons routinely rave over the 5 spice lamb ribs, unique skewer options and extensive line of infused soju. Even bars and pubs are cashing in on the growing number of self-proclaimed foodies in the area. The Petrol Station (985 Wakefield) owner Ben Fullelove caught on early and introduced pub food to his massive beer menu seven years ago. “We are definitely known for our burgers,” says Fullelove, speaking humbly of Petrol’s beef stacked beauties. The Rancor, topped with bacon, cheese and a gorgeous fried egg is a local favorite, especially when served with a side of feta and rosemary fries. Recently opened Julep (1919 Washington Ave.) also understands the locals’ gastronomic needs, with oysters, scallops and even a white sturgeon caviar service to accompany their spirits and bar menus, and brand-new Coltivare (3320 White Oak) allows patrons to walk through their extensive garden, where many of their pizza and salad menu items are grown.
The restaurant trend in the greater Heights shows no signs of stopping. When asked about Spaghetti Western #3, Figueroa said in jest, “It’s like having kids…once you’ve had two, you may as well have some more!” And while she truthfully has no concrete plans for a third restaurant, we can surely hope. And in the meantime, we can support our local eateries that continue to pop up and satisfy our insatiable palate. It’s a tough job, we know.

Kids, Processed Food Addiction, and Eating Out By Joan Ifland, PhD
We all know the kid who nags or screams for a favorite treat. And, we know the kid who just can’t understand the lesson at school. And the kid who can’t focus long enough to learn. And the kid who always seems to be too tired to do anything.
What do all these kids have in common? It could be processed food addiction.
Research is finding more and more that processed foods are addictive. These foods include sweeteners, flour, salt, dairy, processed fat and caffeine. They appear to cause surges of feel-good dopamine and opiate neurotransmitters in the brain, followed by crashes. During the surges, the brain experiences intense cravings at the same time that learning and memory centers are literally shut down. In the crash, the child is irritable and tired. After repeated surges, the pathways for these neurotransmitter begin to ‘down-regulate’ which means that the child has a harder time feeling good about life. Learning, energy and mood all appear to be affected. Of grave concern, the child does not necessarily have to eat the food to destabilize neurotransmitters. Researchers are finding that a little stimulation can create these surges. Sights, sounds and
smells can cause the reaction, but also ‘reminders’ or ‘cues’ associated with processed foods can trigger the result. For example, a toy brought home from a fast food restaurant can trigger cravings for the food. Cartoon characters that advertise fast food can also cause cravings surges and crashes. Makes sense? Unprocessed foods are meats, poultry, fish, vegetables, fruits and starches. These are foods found in the produce section and the meat/poultry/fish counters. They don’t appear to cause neurotransmitter surges and crashes. Look for restaurants that feature these foods.
Here are tips for finding restaurants that have minimal cravings stimulation: • Avoid food environments where lots of desserts,
breads, sodas and high-fat foods are on display. • Avoid stimulating videos of food at walk-up counters. • Choose a booth that will limit the sight of other people consuming processed foods and drinks. • Look up the restaurant’s menu on the internet and choose healthy meals for your children before going to the restaurant. Confronting a child with lots of choices on a menu is a craving’s trigger. • Make a note of unusual requests for treats, sweets, snacks or sweet drinks following a visit to a restaurant. If the volume is increased, avoid that establishment. It’s not helpful to teach your child how to order healthy, unprocessed foods, just to be thwarted by the stimulation of intense cravings for processed foods once you’re inside the restaurant. If you must bring
home fast food, go pick it up without your child along and avoid processed items. Just pulling up outside the fast food building can trigger cravings. As a clinical and research nutritionist, I feel that these findings of stimulation of unstable brain chemistry point to a role for processed foods in learning disabilities, as well as irritable and even aggressive behavior and, of course, fatigue. By curbing cravings stimulated by restaurant environments, children can become happy with unprocessed foods. You may find a happier, brighter, healthier child. What a joy.

Dr. Ifland is a food addiction professional who is active in both practice and research. Dr. Ifland has maintained a food addiction practice since 1999. Since 2010, she has served as CEO of Victory Meals, a prepared meal service designed to eliminate processed food. She is the author of the popular book, Sugars and Flours: How They Make Us Crazy, Sick and Fat which sold in the top 3% of Amazon books for 12 years. She is the producer of Victory over Food Addiction: Make Meals at Home Video. She is the lead author of the first scholarly description of processed food addiction in humans and the first definition of addictive versus non-addictive foods. She has been invited by Yale University and Georgetown University Medical School to submit chapters to textbooks. Dr. Ifland earned her PhD in 2010 at Union Institute in addictive nutrition. Her MBA was awarded by Stanford Business School and her BA in Economics by Oberlin College. She is the chair of the Council on Food Addiction at the American College of Nutrition. She is one of two authors whose books are approved for 12 Step food addiction groups.

Interview with Pura Vida Tequila Founder Stewart Skloss First of all, how did you wind up in business with Rock and Roll Hall of Famer Billy F. Gibbons of ZZ Top? Well, Billy and I have been friends for many, many years, and when I first mentioned the idea of building an ultrapremium tequila company, he told me he turned his back on tequila when he was 20 years old because tequila turned its back on him! (Laughing) I think I had a similar experience when I was about that age. You’re not alone, that’s one of the biggest challenges we face here in America. Getting people to understand Pura Vida Tequila is nothing like what they remember from growing up. In fact, when Billy said what he did, I told him all I wanted him to do was just smell the aroma of Pura Vida, and if he liked what he smelled then all I wanted was for him to just taste it. Like a lot of other people who thought they didn’t like tequila because of a bad experience, he quickly found out Pura Vida Tequila doesn’t smell or taste like any tequila he’d ever had. How did you ever find yourself able to create such an unusually smooth and aromatic tequila? To answer that question we have to roll back the clock about 25 years, when I started my first tequila brand. I was in my early 20’s and back then I had the attention span of a Mexican jumping bean, so needless to say it didn’t work out. Since then, I’ve owned several businesses and had

a lot of success, but my heart has always been with tequila. Sometime in 2008 after a discussion with JP DeJoria (Patron) about an investment we shared, I decided it was time to quit thinking about it and just do it. I’ve got a lot of friends around the world and they were all very supportive. They knew how important this was to me. It wasn’t long before I found myself in the Highlands of Jalisco, where the blue agave grows best, and where I knew I would find the kind of man who could help me create the perfect tequila. I needed the best Agavero (agave producer) I could find, and I got lucky when I met the Vivanco family. I already knew what pieces I needed to create the company I’d always dreamed about, I just had to put them together. I knew a fourth-generation Agavero would be instrumental in realizing my vision. Known as the “best damn tequila you’ve ever tasted,” what makes Pura Vida Tequila stand apart from the other tequila brands on the market right now? It’s a lot of little things, really, the details make a big difference when you’re making tequila, and of course having an ultrapremium tequila at such an aggressive price point doesn’t hurt either. What are some of those little things you mentioned? First we begin with pure spring water from deep underground, which we then filter through one of the world’s finest purification systems. Water is the foundation of all spirits, so naturally the first step in making a perfect tequila begins with a perfect foundation. Next, we use only 100% Blue Weber Agave specifically from one area within the Highlands of Jalisco. Due to the rich regional soil, the agave in this one region produces a more robust flavor with a higher sugar content than the others. The sugar content is critical,
and each step is absolutely essential in creating a perfect tequila. The third thing we do might seem a little crazy to some, but it’s a tradition with our Agaveros and I don’t argue with success. During fermentation, we play classical music directly at the tanks, the Agaveros say it makes the tequila dance. I just know it’s one of the many things we do to create the ultimate tequila. Finally, we use a specially crafted triple distillation process incorporating our unique combination of both copper and stainless steel distillation equipment. It all works together to create the finest tasting tequila I’ve ever had, and I’ve tasted them all, all over the world. We all know your line of ultra-premium tequila is comprised of four labels: Blanco, Reposado, Añejo and Extra Añejo, but what about this new product launch of yours, Naranja? Can you tell us about your secret ingredient to making the perfect Margarita? I’d love to, it’s something margarita lovers need to know, and it’s the best news they’ve ever had. We all know the best margaritas come from Mexico, but the thing is if you want to make a perfect margarita, you need more than just an ultra-premium tequila, what most people don’t know is you also have to stay true to the same orange liqueur they use in Mexico. It’s made from all Mexican ingredients, the company’s been around forever. In fact, it is the very same orange liqueur that was used in the first margarita ever made at Husong’s Cantina in Ensenada, Mexico by Don Carlos Orozco back in 1941. It’s sold under a different name over in Mexico, but now we have the distribution rights here in the U.S. so margarita lovers everywhere can finally have the last piece of the puzzle in building the perfect margarita. There’s no longer any need to substitute any ingredients, it was a long hard battle but NARANJA is finally here to stay! Now I understand Billy Gibbons of ZZ Top is just one of the many celebrities who back your line of tequila? That’s true, Billy is an investor, not a spokesperson. Another huge name in rock and roll that’s part of the Pura Vida family now is Sully Erna, Godsmack frontman and rock icon. Then we’ve also got Mike Hampton (MLB Retired), US Ambassador Tony Garza (Retired), Chester Pitts (NFL Retired), Tom Wood (Retired INDY Car Driver), etc. All are investors, not paid spokespersons. Investors, not spokespersons, I guess that says a lot about how much they actually believe in this tequila?
Absolutely it does. Anyone can endorse a product when they’re picking up a check, but to put your money where your mouth is, so to speak, says a lot more about the quality of Pura Vida Tequila than any amount of paid endorsements ever could. How did you get such an eclectic group of celebrities to come together like this?
In the liquor industry today, it takes about $10MM to start a liquor company and even with that much money, there’s no guarantee it’ll succeed. We decided to grow our brand organically through six degrees of separation, that’s why we have investors from different professions, geographies and demographics. The one thing that ties everyone together is a passion for perfection. From lawyers to rock stars, doctors to IT legends, each of our investors are perfectionists in their own right. That’s part of what made them famous to begin with. Pura Vida is just another way for them to enjoy their passion for perfection and living the good life, that’s what it’s all about. Can you tell us a little bit about Radio Pura Vida.mx? I understand it was the first radio station owned and operated by a liquor company, is that right? It is, and I have to tell you this has been such a fun project. We were first approached by Pat Fant, the DJ that first played Billy Gibbons first single in Houston, to do these stations. These guys have built radio stations for NASA, Ford Motor Company, and now for us. It’s the first time they’ve ever done anything like this. We are the first liquor company to have its own radio station. We’ve had fantastic feedback, so much so we even had to add an extra station, a double shot, if you will, of Pura Vida radio. People love it, and it’s just another way we bring the good life to our customers. I know Pura Vida translates to “Pure life” in Spanish, but can you tell us how this name for your tequila came about? Pure life is a direct translation, but it’s more than just that. It’s also the good life, living life to the fullest, enjoying and appreciating every day for what it has to offer, that’s what Pura Vida means, and I wanted a toast other than just “Cheers” and by saying “Pura Vida” when a glass is raised, it’s truly a toast to life. Pure Life says it all to me, it means so much in so many ways. It’s something I strive for personally
and professionally, living the good life, the pure life, Pura Vida! Tell us about the bottle design, I know there’s some backstory there. Well, I first wanted to create a bottle that was a true piece of art, something that totally represented Mexico and Tequila to me. The colors remind me of Mexico as I remember it when I was a kid. I always loved the cobalt blue glass and shiny silver balls in so many stores. The lower shape represents the part of the Piña (Agave) that the tequila comes from, the part that’s underground, similar to a pineapple. That’s the art part, but I’ve been on both sides of the bar, so I also wanted a bottle designed specifically with bartenders and mixologists in mind. It’s shaped so it doesn’t slip out of your hands, no matter how big or small they may be. I also had the glass made twice as thick as your typical bottle. You can feel the quality when you hold it. If you happen to accidentally drop one, no biggie. Precious cargo deserves an appropriate package. Industry insiders appreciate it on a professional level, regular people enjoy the aesthetic quality. Something for everyone. I see Pura Vida has won an awful lot of awards, taking the industry by storm a little, huh? Well, the awards are important, no doubt about it. We couldn’t get this far without the experts agreeing Pura Vida is one of the best, but what means more to me, and the average consumer, is that we crafted a line of tequilas that are truly the smoothest I’ve ever tasted. And perhaps more importantly, we’ve done it for such a great price. Our Silver retails nationally at an average of just $32 a bottle, $34 for our Reposado (Gold) and $38 for our Añejo. Where a lot of tequila companies go wrong is by charging $40 or more for something that costs them next to nothing to make, just because they can hammer their suppliers down through volume. I’d rather produce better tequila for less profit than
