On the Cover: Foggy Bottom BBQ and Cajun: Built on Faith, Family and Food By Rachael Brice Not many people would link BBQ and Cajun food together, but for Stacy Wilson, owner of Foggy Bottom BBQ and Cajun in Loganville, both BBQ and Cajun food are a way of life. A Louisiana native, Wilson has many fond memories of great family gatherings: children running around the backyard, his dad cooking, and everyone crowded around the TV to watch the replay of LSU’s most recent touchdown while eating copious amounts of crawfish. At a young age Wilson learned that Cajun food brings people together, and he later learned BBQ does the same. Today, Foggy Bottom strives to deliver a unique, memorable experience with their delicious BBQ and Cajun cuisine. In 2012, after working for seventeen years in software sales, Wilson decided to take a leap of faith and follow his passion for food, particularly BBQ, which led him to create the Foggy Bottom BBQ competition team. “I’ve always been a backyard chef and have always wanted my own company,” Wilson said. “I just didn’t know what the avenue or platform would be.” Wilson had all of the necessary supplies he needed – all he was missing was a partner.
After a little coaxing, his friend and neighbor Phillip Folsom decided to team with him. After the first competition, Folsom was hooked. He and Wilson began competing together professionally in BBQ events all over Georgia, bringing home some great prizes, including a few Grand Champion titles. As the business evolved, Foggy Bottom started catering, vending at festivals, and providing fundraisers for local youth sporting programs. With some early credited success, tremendous support from friends and family, and the constant demand for great Southern food, Wilson and Folsom opened Foggy Bottom BBQ & Cajun restaurant in April 2014. The name comes from their logo which depicts a pig (representing BBQ) sitting on a dock overlooking a foggy swap with a Cypress tree (representing Louisiana) and an Heirloom bird (representing Cajun) to connect the two cuisines together. With a focus on faith, family and food, Foggy Bottom offers a relaxed, family-friendly, rustic atmosphere with an emphasis on both BBQ and Cajun experiences for all who come through the door. “We don’t do oven baked BBQ and we don’t reheat BBQ,” Wilson said. “Everything is cooked fresh, and when we run out, we’re out.”

Everything at Foggy Bottom, including their Traditional BBQ Sandwich, Crawfish Po-Boy, and slow smoked brisket topped with pimento cheese, is cooked fresh. As the restaurant heads into its peak season, it will smoke about 2,800 pounds of pork per week and 200 pounds of ribs. All Foggy Bottom meat is smoked over hickory, taking anywhere from 12-14 hours to cook pork and brisket to 3-4 hours to cook smoked chicken, smoked wings, and ribs. “There are really only four ingredients to cooking BBQ,” Wilson said. “A good rub, smoke, meat, and sauce – though good BBQ shouldn’t even need BBQ sauce.” The future looks bright for Foggy Bottom and its staff. Wilson has high hopes to open a second location in the Gwinnett area. He will continue to build a positive brand for the restaurant in the community and shape the restaurant’s catering operation. He would like to participate in more competitions this year, too. “There is always something new to learn and more creative ways of cooking,” Wilson said. “Our customers are always interested to discuss different BBQ techniques and flavor profiles. That is what makes BBQ so special – everyone who loves BBQ have their own techniques that make their product the best.”
Most of the competitions Foggy Bottom participates in are sanctioned by the Kansas City BBQ Society (KCBS), a nonprofit organization with over 19,000 members worldwide that is dedicated to promoting and enjoying barbeque. Since 2013, Wilson and Folsom have been participating in KCBS competitions. That first year they finished 2nd in the chicken category, 7th in the ribs category, and 9th overall in the Georgia. Regardless of the hard work and long hours that are associated with restaurant life, both Wilson and Foggy Bottom have been blessed. “It is all about family, friends, and food, but without faith, we would not be where we are today,” Wilson said. “We trust God will continue to bless Foggy Bottom, our customers, our staff, and our community.” Foggy Bottom BBQ and Cajun is open Tuesday through Saturday from 11 a.m. to 9 p.m., and is located at 85 Ray Road, Loganville, Georgia. Nearly everything we read, see, listen to, and watch is tied to media sensationalism. We hear of prison escapes, shark attacks, shootings, health epidemics and many other tensions. Media are programmed to “shock us” into listening. They talk about robbery, murders, assaults, scandals, lawsuits, fraud, arson, and more. Why do we seldom hear about a neighbor helping a stranger change a flat tire on the side of the road, of people helping feed the hungry right here in our community, of community members who have rescued countless animals that have been left for dead, or about the local law and emergency heroes who risk their lives for us each day? Instead of hearing about a teacher who works on her own time to help a student pass a course, we hear of a handful of educators who have messed up. Where are the stories about the great parks and schools in the neighborhood, or about the fact that homes are selling again and more small businesses have started? We hear about various political parties who seemingly argue about everything, when most people I hear from simply want a better life for themselves as well as for their children and grandchildren. People are sick of the negative and sensationalistic news, so let’s give that a rest. The people I meet and know love being a part of this community. Many have amazing stories to share of what they are doing to make our community and world a better place. This is what Our Town is all about. We never focus (and never will) on the negative stories that serve no purpose but to upset others. Does this mean our community is perfect? Of course not. There is no such thing on this earth. However, in all my travels across the United States, I can find few places that have a greater sense of community than we do right here. You should be proud of that. I am. We are defying what the news media says is possible in 2015. Why? From my vantage point, this community does not see “age, disability, ethnicity, gender, nationality, religion, sexual orientation, or skin color.” We see flesh and blood. We see people trying to live a peaceful life and trying to make a difference in this world. We see families who love each other and friends who care for one another. We see people who want to be heard and understood, not judged and yelled at. We see neighbors we care about. You see, this community consists of people of character. This is what I love about it. So, in this man’s opinion, I am thankful for this community and our strong families. We may have our differences, but we look out for one another. Quite frankly, I see a lot more of what we have in common than what we do not. Where we work, live, and play is special. I hope you are as proud as I am. Thanks for allowing us to continue sharing the story or your town, my town, OUR TOWN.

By Rachael Brice In 1996, David and Debbie Bird had a dream – to develop their own sports center where people could come together under one roof to play soccer all year long. In November 2007, their dream became a reality. The Bird’s first realized the need for a sports center in Loganville when their oldest daughter Samantha, now a women’s soccer coach at Georgia Southwestern, was a little girl and they were driving back and forth for her to play soccer at T.W. Briscoe Park in Snellville. During this time, they were also volunteering at the Olympics soccer venue in Athens and raising money for a day camp for the handicapped that was located on a farm owned by David’s parents. This is when the idea for the Creekside Sports Center was born. “I got really enthusiastic,” Bird said. “I realized not all of the property on my parents’ farm was being used, and it was there we decided we wanted to start a soccer program in Loganville for everyone to enjoy and participate in.” “We wanted the sports center to be highly accessible to anyone who wanted to come and join our teams to play soccer,” David said. “Creekside, the soccer, and the athletics became our passion, our business, our livelihood. We just kept growing it from there. Once it catches you, it gets a hold of you and doesn’t really let go.” Eight years later, Creekside Sports Center is flourishing. The center is all indoors, complete with two full-size soccer fields and a soccer specialty shop. It is a place where both youths and Continued on page 9

adults come and play soccer all year long while making new friends and having fun. The center acknowledges approximately sixty adult teams broken into five leagues, and over 120 youth teams. “The number of different groups of people that play here at Creekside is incredible,” Bird said. “When we opened, I had no idea there were so many people from all around the world that live right here in Gwinnett County. We must have groups from every continent except Antarctica who come and play.” Creekside offers a year-round soccer school for youth leagues that enables kids to improve their skills. They discover how to dribble, pass, and shoot, and most importantly, how to control the ball. For the more advanced players, camps are held during the summer, and more rigorous activities are taught by the coaches. Creekside wants everyone to be able to play soccer, so it even offers a three-year-old program, the Kickeroos, and an Over 40 adult league. “Technically, in our Over 40 division, the youngest you can be to play is 40,” Bird said with a chuckle. “To date, our oldest player is 72 years old, and we were proud to have her at our center.” Not only is Creekside devoted to its players, but to the community as well. The center hosts the Special Olympics each year, as well as entertains special needs students from Gwinnett and Walton County Public Schools. It also hosts an annual tournament to raise money for breast cancer awareness. “It’s extremely rewarding to see we put this together and created a space where people could come together for the love of the sport,” Bird said. “Knowing we are able to make a difference, even if it’s small, makes all the hard work worth it.”

What is Therapeutic Massage? By Julie D. Mills-Watson, CMT, LLCC Most people have gotten some type of massage at one time or another. It may have been at a spa, at a chiropractor’s office, or while on vacation. What about a therapeutic massage? This type of massage addresses the soft tissues of the body that might be causing you pain. Soft tissue includes muscles, connective tissues, organs, skin, fascia, or most anything that is not bone. It is not so much the modalities used; it is the awareness of what is happening in the body and with the tissues of the body. Nobody knows better how difficult life during and after professional sports can be than those who have actually been professional athletes. They know the trials and tribulations they faced are indicative of the challenges faced by most of their peers. More importantly, having gone through these struggles themselves, they’re well-qualified to help guide the next generation of athletes, hoping to shape them into even better people. To that end, NG3 (Next Generation: Character, Community, and Change) works tirelessly to ensure burgeoning athletes in Gwinnett County become superstars both on and off the field. The organization, founded by Matt Williams in 2011, aims to help mold student athletes into wellrounded people who can achieve and maintain success in the real world whenever their playing days come to an end. “It’s a continuous process,” Jon Stinchcomb, former NFL player and NG3 director of operations, says as he explains what the organization does. “It’s all about building a relationship with these kids and letting them know that they have a strong support system.” Of course, the goals of NG3 go beyond simple support. Character building and development are the two strongest tenets of their process, and the leader at each school works tirelessly to advance the organization’s positive message. NG3 currently operates in four Gwinnett County high schools: Brookwood, Grayson, South Gwinnett, and Parkview. In each location, a member of the organization leads the effort: Williams at Brookwood, Javier Munoz at Parkview, Dustin Mattox at Grayson, and Michael Woelfl at South Gwinnett. It’s no surprise that these schools in particular are so successful when it comes to fielding contenders. The guidance they receive through NG3 has proven to be invaluable time and again. Stinchcomb, a Parkview grad who says “coming home to Gwinnett and being able to work with such a meaningful organization is just tremendous,” attributes this to the strong bonds fostered in the clubhouse. “These kids come from all backgrounds, many different walks of life,” he says. “But when they’re in the locker room, they come together as one. It’s amazing to watch them support each other unfailingly.” Stinchcomb believes that self-awareness is one of the most important traits a young athlete can acquire. “It’s critical to know who you are and whose you are,” Stinchcomb opines. “Having stability during adolescence is key to positive growth. We want to ensure that every student involved in NG3 knows just how important they are in the lives of their family and friends, as well as Continued on page 18

Southern Styles Salon: Where Inspiration Thrives By Stacye Carroll As a kid, Gerald Spivey probably rode past the building now housing his salon, Southern Styles, countless times. His family moved to Snellville from the Avondale area in 1971. His first experience styling hair came while in high school. “I just always did everyone’s hair,” he says. “I was good at it.” He must have been very good. He styled his high school sweetheart’s hair for prom, and they’re still married today. Gerald studied commercial art at Massey Junior College and worked in the field for several months before the business closed, leaving Gerald unemployed. His sister, who had recently graduated from cosmetology school, suggested Gerald study the same. Night classes were a big draw since he now had a family to support. After graduation, he worked at a local salon for four years before opening Southern Styles. Now thirty-three years later, Gerald says the best thing about owning his own salon is not having to answer to anyone else. Calling upon his art education and twenty-nine years of experience as an educator and show artist for Scruples hair care products, Gerald is a color specialist. “Clients come here to fix color,” he says. Continued education is very important to both Gerald and Leslie, a stylist at Southern Styles for over twenty years. Chunky highlights have been popular for some time, but according to Gerald, the trend is shifting toward more natural color. Southern Styles offers Balayage, a highlighting method in which color is painted onto the hair for a more natural, sun-kissed appearance, and Baby-Lights, a micro-painting technique many celebrities use for a more delicate look. “The right cut and color can actually make a face look more symmetrical,” says Gerald. Before making major changes, he guides clients through a “self-tour” and uses a swatch book to match color to skin tone. By Perry Rosenbaum Sports as a conduit to professional success is a process that takes on many different forms. Finding success IN sports can lead to becoming a professional athlete, but what many may not realize is that simply being involved in sports, even at the amateur level, can help create connections that will come in handy in the working world. Sean Moynihan of Avison Young Real Estate, an international real estate firm, parlayed his love of soccer into a job he loves. “I never could have imagined that soccer would help me gain a position as a tenant advisor helping companies control their real estate costs,” Moynihan says. “But the relationships I built through coaching led to this wonderful opportunity.” Moynihan, a New Jersey native who attended Monmouth University on a soccer scholarship before playing professionally for the New Jersey Stallions, is eminently grateful for the family and friends that helped him along the way, attributing the bulk of his successes to coaches who encouraged him to follow his passion, teammates whose parents were always willing to drive him to and from practice, and friends made through playing and coaching. “Without each and every one of those people who have been there for me throughout my lifetime, I know I wouldn’t be where I am today.” “My greatest passion above all else is teaching,” Moynihan opines, “whether it’s guiding someone on the soccer pitch or in the office.” He was a captain on Monmouth’s soccer team, was named Volunteer of the Year for the Carl Sanders YMCA last year, and led his son’s GSA team to an undefeated season, helping them get promoted from Classic 2 to Classic 1. Moynihan points to the latter as his greatest personal accomplishment, saying that getting through the season without a single loss was “not only gratifying, but a tremendous effort by everyone involved.” Seeing himself as a “goal-giver,” or someone who helps others identify and then reach their goals, Moynihan’s wealth of experience has helped him fulfill many dreams other than his own. When asked how he manages to balance his time between work, coaching, and leisure, Moynihan explains that he has one vice. “I get up early and take Five-Hour Energy in the afternoon to get through the second half of my day.” Of course, he also runs upon waking, oversees high-intensity deals at work, and coaches energetic soccer players before he gets to relax at home with his family. “Coaching helps me take my mind off the workday in a constructive forum, which puts me at ease and allows me to enjoy spending my free time with my wife and kids,” Moynihan says. With so many plates spinning at once, it’s a wonder that Moynihan has any free time at all. However, you made the mistake of hitting the snooze button or sitting down on the couch. The workout isn’t going to happen today. So how do we keep motivation alive? Find a workout buddy! Being accountable to another person can make you lace up your running shoes. Have your buddy light a fire under you on the days you don’t feel like working out, and then make sure you return the favor. The small group training environment fosters a sense of camaraderie and friendly competition, and can potentially lead to friendships. If you skip a session, know that you will have people asking “Where were you?” at the next session. Plus, you won’t want to miss out on the fun! Are you over-training? Following an intense training regimen can take a toll on your body. Training while overly fatigued can actually put you at a greater risk for injury because it is harder to maintain good form. Honor the recovery days in your plan. Listen to your body. That being said, very few of us out there are training for marathons or the CrossFit Games. How do we mere mortals stay motivated? Quiet the negative voices in your head. Dig deep, call your buddy, pull yourself off the couch and out the door. You will thank yourself later, I promise. Get moving! Can’t By Jane Bishop, Life Coach/Speaker Certain four letter words were not allowed in my family when I was growing up. Profanity was the main category, and then there was “can’t.” My parents did not tolerate a first response of “I can’t.” When faced with something difficult or new, rather than allow me to defer to a feeling of initial inability, I had to make an attempt. I often heard “can’t never did do anything” as an encouragement to try! Little did I know what a life lesson that prohibited word would teach me. “Can’t” is the negative form of can. It sends a message to our brain that we are incapable of a task, or that we do not have permission. That message triggers negative emotions, and we begin to believe we are incapable and disempowered. Think of a time you voiced, “I can’t.” How did it make you feel? What message were you sending yourself? How much did you buy into it? This also applies to self-talk. The words we use verbally and non-verbally transmit cues to our brain. The impact of saying “I can’t” vs. “I can” can be the difference in the level of self-esteem that impacts self-confidence that impacts effectiveness that…you get the idea. If “can’t” is common in your vocabulary, try word replacement therapy (WRT)! Each time “can’t” shows up, replace it with another word, depending on the situation. “I can’t get into that” may become, “I am not interested in that.” Or, “I can’t do that,” may become, “I will try.” I recall many times in my life when WRT served me well. A Little is Usually Just Enough By Chrissy Thomas, RN There are a lot of misconceptions about the anti-aging business. When people think of Botox or Juvederm and other injectable fillers, they think of overstuffed lips and cheeks, and frozen mask-like faces. Though there are some who like a fuller or more frozen look, most prefer a fresh and very natural style. Most sixty-year-old women don’t want to look twenty again. They want to look like an incredible sixty–year-old. As the female face ages, “everything” droops in and down. The cheeks lose volume, making the face lose its youthful roundness and creating the look of jowls. The marionette area loses volume, creating an angry or sad appearance around the mouth. The lips lose the natural fuller border and slide down into the mouth with the loss of cheek volume. At the same time, the muscle between the eyebrows begins to tighten, creating a permanent frown, and the forehead muscles lengthen, making the eyes appear smaller. It sounds disastrous, right? Never fear! We have solutions! There are many options for correcting these issues non-surgically and with no downtime. Botox is a product that many people may not completely understand. When a small amount is placed in the frown lines, it gently relaxes the crease and gives the eyes a slight lift. In the forehead and crow’s feet areas, this product will soften the creases. Botox may be customized to fit the needs of the consumer. If you want a glassy smooth effect, you would need more units of Botox. Most customers simply want to look fresh and rested. By Ayodele Tekobo PharmD, CGP As we age, all organ systems in the body undergo changes. For this reason, seniors are at increased risks of multiple disorders and chronic health problems. In the course of treatment, doctors sometimes prescribe two or more medications for each disease. Many seniors take an average of five or more medications. Changes in organ systems affects the way the body processes drugs and increase the risks of harmful effects. Some helpful tips: u Take medications as prescribed. Consult your health care provider when experiencing side effects. Do not discontinue the medications prescribed for chronic conditions. This is especially important with blood pressure medications. The prescribed medicine might make you feel worse at first. Stopping your medications could increase your risks for complications. Use pill boxes and reminders to help you stay on track. u Let all your healthcare providers know all the medications you take. Include over-thecounter medicines, vitamins, and herbals. Keep a list with you at all times. Take note when medications are changed or stopped, or when doses change. u Be an active player in taking charge of your health. Have a good knowledge of what each medication is meant for, when you should take them, and how. Ensure that your lifestyle and dietary habits work hand in hand with your medicines. u Some medications are inappropriate for seniors. OTC medications such as Naproxen (Aleve,) when used long-term at full dosage, could cause intestinal bleeding and kidney failure. Using Diphenhydramine (Benadryl) as a sleep aid could cause confusion and falls, especially in frail older seniors. Seek the advice of your pharmacist when making OTC choices. u As much as possible, use only one pharmacy. This ensures that duplications, overlaps, and harmful drug combinations can be caught.
