On the Cover: Foggy Bottom BBQ and Cajun: Built on Faith, Family and Food By Rachael Brice Not many people would link BBQ and Cajun food together, but for Stacy Wilson, owner of Foggy Bottom BBQ and Cajun in Loganville, both BBQ and Cajun food are a way of life. A Louisiana native, Wilson has many fond memories of great family gatherings: children running around the backyard, his dad cooking, and everyone crowded around the TV to watch the replay of LSU’s most recent touchdown while eating copious amounts of crawfish. At a young age Wilson learned that Cajun food brings people together, and he later learned BBQ does the same. Today, Foggy Bottom strives to deliver a unique, memorable experience with their delicious BBQ and Cajun cuisine. In 2012, after working for seventeen years in software sales, Wilson decided to take a leap of faith and follow his passion for food, particularly BBQ, which led him to create the Foggy Bottom BBQ competition team. “I’ve always been a backyard chef and have always wanted my own company,” Wilson said. “I just didn’t know what the avenue or platform would be.” Wilson had all of the necessary supplies he needed – all he was missing was a partner.

After a little coaxing, his friend and neighbor Phillip Folsom decided to team with him. After the first competition, Folsom was hooked. He and Wilson began competing together professionally in BBQ events all over Georgia, bringing home some great prizes, including a few Grand Champion titles. As the business evolved, Foggy Bottom started catering, vending at festivals, and providing fundraisers for local youth sporting programs. With some early credited success, tremendous support from friends and family, and the constant demand for great Southern food, Wilson and Folsom opened Foggy Bottom BBQ & Cajun restaurant in April 2014. The name comes from their logo which depicts a pig (representing BBQ) sitting on a dock overlooking a foggy swap with a Cypress tree (representing Louisiana) and an Heirloom bird (representing Cajun) to connect the two cuisines together. With a focus on faith, family and food, Foggy Bottom offers a relaxed, family-friendly, rustic atmosphere with an emphasis on both BBQ and Cajun experiences for all who come through the door. “We don’t do oven baked BBQ and we don’t reheat BBQ,” Wilson said. “Everything is cooked fresh, and when we run out, we’re out.”

Everything at Foggy Bottom, including their Traditional BBQ Sandwich, Crawfish Po-Boy, and slow smoked brisket topped with pimento cheese, is cooked fresh. As the restaurant heads into its peak season, it will smoke about 2,800 pounds of pork per week and 200 pounds of ribs. All Foggy Bottom meat is smoked over hickory, taking anywhere from 12-14 hours to cook pork and brisket to 3-4 hours to cook smoked chicken, smoked wings, and ribs. “There are really only four ingredients to cooking BBQ,” Wilson said. “A good rub, smoke, meat, and sauce – though good BBQ shouldn’t even need BBQ sauce.” The future looks bright for Foggy Bottom and its staff. Wilson has high hopes to open a second location in the Gwinnett area. He will continue to build a positive brand for the restaurant in the community and shape the restaurant’s catering operation. He would like to participate in more competitions this year, too. “There is always something new to learn and more creative ways of cooking,” Wilson said. “Our customers are always interested to discuss different BBQ techniques and flavor profiles. That is what makes BBQ so special – everyone who loves BBQ have their own techniques that make their product the best.”

Most of the competitions Foggy Bottom participates in are sanctioned by the Kansas City BBQ Society (KCBS), a nonprofit organization with over 19,000 members worldwide that is dedicated to promoting and enjoying barbeque. Since 2013, Wilson and Folsom have been participating in KCBS competitions. That first year they finished 2nd in the chicken category, 7th in the ribs category, and 9th overall in the Georgia. Regardless of the hard work and long hours that are associated with restaurant life, both Wilson and Foggy Bottom have been blessed. “It is all about family, friends, and food, but without faith, we would not be where we are today,” Wilson said. “We trust God will continue to bless Foggy Bottom, our customers, our staff, and our community.” Foggy Bottom BBQ and Cajun is open Tuesday through Saturday from 11 a.m. to 9 p.m., and is located at 85 Ray Road, Loganville, Georgia. I hope you are off to a great May. Can you believe that the school year is about to end? Wow, does time fly. Each month as I write this column, I cannot help but reflect upon the time of the year it is. And it seems like only a couple of months ago I wrote that the school year was set to begin. This makes me realize – more so with each passing year – how precious our time is. My challenge to you this month is to reflect upon your time. What do you spend time on now that needs to go? What do you desire to invest more of your time in? The challenge is simple. We all have 168 hours each week. No more and no less. It is the great equalizer for all mankind and here in Gwinnett. And in my travels across the country and at home I hear things like: “Ryan, I am slammed, buried, covered up, running ragged, drowning, swamped, Oetc.” ld Hw Ouch. You get the idea. Thus, the choice is yours what to do with your time. So y 78 Hwy 78 as we head towards summer – when things slow down a bit – choose some things you will put on your “stop doing”★ list so you can get to the items on your “start doing” list. I LOVE to run at my local park. We are lucky to have such an amazing parks system in Gwinnett and throughout the state. We should all be out taking advantage of them at every opportunity. Spring is a great time to start an exercise program. As with any physical endeavor, exercising outside at the park has safety considerations. Here are some examples:

Walking or running with hand weights - Can cause wrist, elbow, and potential shoulder overuse injuries. In addition, the benefit of the extra weight (meaning the heavier you are, the more calories you can burn) is lost due to the swinging motion used while carrying the weight. Wearing plastic or rubber jog suits to keep the sweat in - While these products are still sold at some large box retail stores, they are useless. The water weight you lose will be regained as soon as you start drinking. Your body needs to breathe and cool off. So go ahead and sweat, and wear sweat wicking clothing. Running on pavement barefoot - The natives who inspired this fairly recent phenomenon grew up not wearing shoes and they do not run on pavement. You are setting yourself up for discomfort and injury. Even minimalist running shoe companies suggest you slowly build up to minimalist shoes. Bike safety - Helmets are inexpensive, and it is GA law for kids under 13 to wear one while biking. Flip flops are not safe biking footwear. Proper bike etiquette is to announce you are passing someone on the left by saying, “Biker on the left.” Dogs in the park - Keep the long extension leashes at home. Keeping furry friends on a shorter leash will prevent them from accidentally getting run over by a biker or tripping an unsuspecting runner. A shorter leash keeps everyone safe.

Getting Schooled with: Trickum Middle School – A School of Engagement By Stacye Carroll It’s one thing to impart information. It’s something entirely different to share information with enthusiasm. That’s what Principal Kay Sands does when asked about Trickum Middle School, which she says is on track to become a “21st Century School of Engagement.” A vast amount of information is available to children today via the internet. Assisting students in using that information requires teachers to act as coaches as well as providers of information. “At Trickum we offer experiential learning and opportunities for students to work collaboratively,” says Sands, who believes students benefit from project-based learning. “The teacher sets up a scaffolding of parameters that the students build upon.” The culmination of their collaboration is then put on display at Student Parent Engagement Celebrations, or SPEC nights. Every academic group participates in what Sands says is an “opportunity to show parents what engagement looks like.” Recently, students submitted entries to the Human Rights Museum at Trickum Middle School. According to Sands, while the subject matter was sometimes difficult, each entry was required to contain an element of hope. Over 2,000 people attended the exhibit of what Sands calls “student produced work for community enjoyment.” Thanks, in part, to a grant from the coun-

ty, plans are in the works to make Trickum Middle School a STEM (Science, Technology, Engineering, and Math) school by the 20162017 school year. STEM is an interdisciplinary, applied approach to problem-based learning. Brian Lucy currently teaches STEM classes at Trickum, and other teachers are training now. Sands describes it as “the flip-side of literacy” saying, “For the last few years we’ve promoted literacy and writing. STEM brings balance to this approach.” While current emphasis may be turning more towards science and technology, the arts are alive and well at Trickum Middle School. “The research is clear,” says Sands. “Music education produces rollover benefits to academic education.” On May 7th band students under the direction of Rick Sargent will present their annual “Concert under the Stars” in the outdoor theatre. Trickum Middle School is a recent recipient of a 5-star climate rating by the Georgia Department of Education. “That’s due to our faculty, students, and parents, and it speaks highly of our consistency,” Sands says. “Our staff and leadership are very stable and often don’t leave until retirement. By Jane Bishop, Life Coach/Speaker I recently led a women’s retreat that focused on Living4ward. It was refreshing to hear laughter and giggles while the participants were blowing bubbles. Some of their comments were: “I had forgotten how to play;” “This is forcing me to play again;” “I can’t remember the last time I played!” and, “This is fun!” Play is defined “as recreational activity; especially: the spontaneous activity of children” (http:// www.merriam-webster.com). The activity of blowing bubbles resulted in fun, relaxation, and stress relief! It cleared the brain of chaos and helped each person enjoy the moment. Play is also a great way to trigger endorphins which are “a set of hormones that affect receptors in the brain, often reducing the sensation of pain or stress” (http://www.urbandictionary.com). After the retreat, participants sent pictures of bottles of bubbles they had set out on their desks for bubble breaks at work. One woman emailed this story: “I had a ball blowing bubbles in my driveway when the neighborhood middle schoolers got off the bus! They had to try it, too! I went across the street and down two houses to blow bubbles for a teeny, tiny Chihuahua in its front yard! She barked and trembled and I got to know her Romanian owner. We talked a good bit, and now she says she feels she has made a new friend who will tolerate her struggle with our language. We had to act out several words, and had some good laughs!” All this from blowing bubbles! That’s the power of play. If play is so powerful and triggers endorphins, what prevents adults from playing? Seven Springs: Giving Hope – Encouraging Lives By Rachael Brice Acts 20:35 reminds us, “‘…it is more blessed to give than to receive,’” and for the past five years, Debbie Dowdin, founder and director of Seven Springs Charity in Snellville, Georgia, has been living out this verse to its fullest. Following a twenty-seven-year career in the building products industry, Dowdin knew it was time for a change. She had always wanted to open her own charity organization, so in March 2010 she and her husband opened Seven Springs, a nonprofit Christian organization, committed to helping others in the community, while encouraging self-responsibility and personal and spiritual growth. Seven Springs derived its name from the area located on the north-western shore of the Sea of Galilee in Israel. This region is said to have witnessed the miracle of Jesus multiplying the fish and loaves of bread and also the site of His fourth resurrection appearance. In Greek the site’s name is Heptapegon, or “seven springs.” “We’ve been so blessed,” Dowdin said. “This is God’s ministry. I just work here; He makes it all happen.” Originally housed in a 2,000-square-foot facility, Seven Springs now manages approximately 9,000-square-feet of space containing clothes, shoes, furniture, and household items. It is now seeking to expand in order to build an

education center to teach basic computer skills to all its clients. The organization even has its own Holiday suite which, when completed, will have Christmas, Easter, Fall, the Fourth of July, and other holiday supplies and décor items for sale all year long. Serving all of Gwinnett County, Seven Springs offers clothing items and food to clients. Twice a month 130 clients come for the food Co-op where they fill up boxes with items Dowdin has purchased from Atlanta Community Food Bank (ACFB). About 90 percent of the food bought, both cold and dry storage, comes from ACFB. Clients actually run the food Co-op so Dowdin is able to observe families working together. “The reward of being here is so great and we have been very blessed to have been able to help so many people.” Seven Springs also hosts a huge Christmas Project. Dowdin and her volunteers pack trucks full of donated toys and caravan to a selected location where the items are appealingly displayed. Clients can shop and purchase the gifts for $2.00 each. This gives parents a healthy sense of pride so they can say, “I purchased that for my child.” Parents even have the option to wrap these gifts on site. On their way out, clients are also able to pick up their Christmas food box, brimming with a deliContinued on page 20

Pets Perch: PAWfest 2015 – Lilburn City Park Goes to the Dogs! By Stacye Carroll Those who know that Lilburn was recently named one of the 10 most pet-friendly places near Atlanta will not be surprised to hear that Lilburn City Park is going to the dogs! On Saturday, May 16th, the Gwinnett Humane Society, in partnership with the City of Lilburn, will host the 22nd annual PAWfest. The festivities kick off at 9:30 a.m. when Atlanta’s very own “dog whisperer,” Angie Woods, will lead participants on a 3.5 mile hike on the Greenway Trails. Leashed dogs walk free with registered humans who will receive a moisture-wicking PAWfest 2015 t-shirt, as long as supplies last. Walkers can register online for $20.00 until May 15th or at the event for $25.00. In the interest of having something for everyone, PAWfest will feature vendors such as Rainbow of North Georgia, Tastefully Simple, and Thirty-one Bags, in addition to Good Dog Coaching and Pet Care, Atlanta Area Rescue Friends, and Funnybones. K9Einstein will hold Frisbee demonstrations, and for the first time, Home Depot is offering craft-building workshops for children. Starting at 10 a.m., animal communicator, Tim Link, will be on hand to help owners understand how their pet thinks. Appointments for consultation are encouraged

The silent auction opens at 11 a.m. Bids can be placed on such items as restaurant gift cards, pet boarding packages, grooming services, a variety of gift baskets, and handmade items. Judges will also decide which dog and owner look most alike. If you’ve always wondered if your dog might be a good therapy dog, PAWfest is the place to find out. Both Therapy Dog and Good Citizen testing will be available, and qualifying dogs will receive certification. Low cost rabies vaccines and microchips will also be available. Dessert can be purchased at the Gwinnett Humane Society Bake Sale, which will feature treats for both 2-legged and 4-legged guests. Of course, no festival would be complete without music. cious meal and goodies to celebrate the season. “It is an incredible process to witness,” Dowdin said. “We are here to enable and empower people to do and think for themselves. If we are able to inspire our clients, in turn they can do the same for their children.” Last summer Dowdin developed and launched a plan to provide lunches to children in nearby extended stay hotels. Over the course of the summer, Dowdin and her team of 10 volunteers served lunch to 28 children five times a week. This year, Dowdin plans to serve 60 children five times a week, and is in desperate need of lunchmeat and cheese. She also hopes to provide backpacks full of school supplies as school starts in August.

In order for families and individuals to be supported, Seven Springs is always in constant need of monetary donations as well as thrift store items including clothing, shoes, dishes, paper products, sandwich bags for the summer lunches, and gas cards. Dowdin is also searching for 10 more volunteers, 18 years and older, to help distribute summer lunches. “We are here to be a blessing to everyone who walks through our doors, whether for a customer or a client,” Dowdin said. Wellness and Injury Prevention The job of a physical therapist is to reduce pain and help restore or improve mobility. Physical therapists are able to recognize an issue at the impairment level and provide the correct treatment approach before surgery or medication is needed. Medically, there are services that can provide injury prevention that fall under the scope of wellness care through which a physical therapist can perform. There are several effective wellness programs out there, such as circuit training, aerobic programs, and home workout routines. Nonetheless, prior to starting one of these programs, an assessment should be done by a physician or a trained medical professional to avoid injury. An extensive sports physical can be difficult to find and schedule within a reasonable time. With this “Go, go, go” society, people would prefer a sport physical/assessment to be quick, accessible, and evidence-based with measurable outcomes. Functional Movement Screen (FMS) examines fundamental movements, motor control within movement patterns, and the performance of basic movements uncomplicated by specific skills. This is done by taking a client through seven specific movements, with the individual examined for deficiencies or asymmetry (imbalance). Data is collected and provided from a 21 total-point scale. Several studies have been done that examined a cut off score < 14, which is strongly associated with injury.

Individuals going through FMS can have three possible outcomes: a high score without asymmetry, asymmetry requiring corrective exercises, or pain during the test requiring medical screening. Consequently, if a physical therapist is taking someone though the test, he/she will be able to provide the necessary rehabilitative services to address any pain and dysfunction that could be occurring. So before starting that workout routine or season, stop by your local physical therapy clinic and inquire about a FMS screening. More information at www.functionalmovement.com
