On the Cover: Graft: Bringing Quality Food, Wine and Community to Grayson By: Rachael Brice Ashley Clemence, Chef and Owner of Graft restaurant in Grayson, is a busy woman. Over the last six months business for the buzzing restaurant in Grayson has not slowed down, and it recently celebrated its three-year anniversary. Her darling husband, Seth, is a steadfast foundation of “behind the scenes” support and help. Clemence continues to create new menu items as she develops new events for the community, carrying on the Graft tradition of providing excellent food and service to all who visit. “This is a unique community that truly supports families and restaurants,” Clemence said. “We have embraced a niche here in the suburbs to welcome all who enjoy creative, local, yet simple foods. Customers know when they walk through our door they will receive a special, unique experience.” While the restaurant was still a budding idea, Clemence realized the importance of supporting local farmers and ranchers in the area. She believes and knows that local support greatly impacts communities, families, and lifestyle choices, which is why this is a part of her commitment as a chef and restaurateur. This unique factor sets Graft apart from other local restaurants. With the exception of the fresh fish she receives from the North Atlantic and Pacific Northwest/ Alaskan coast, the majority of the farmers she has cultivated relationships with are located between Grayson and Athens. Over the years, she has become invested in these families› lives and enjoys procuring Graft’s foods and produce from them. It is interesting that most farmers come specifically to Clemence to offer her the products they currently have in season. She works with about fifteen farmers at any given time to add variety to the selections she weekly offers. “These are real people with real products,” Clemence said. “Developing these relationships makes for a more wholesome process which fundamentally affects the menus, which change every six to seven weeks depending on what the farmers and ranchers have to offer.” Working with multiple farmers and ranchers gives Clemence the opportunity to expand her menu selections as well as her visionary mind. This allows her to create more intriguing dishes and push the limits of what she can do with different types of food. Clemence is currently serving a Nisqually Chinook Salmon caught in the glacier waters of Mt.

Rainier in Washington State on the Nisqually Indian Reservation. She pairs it with local vegetables and hearty whole grains from Moon Farms, Wrecking Barn Farms, and Finchcreek Farms. She is also serving wild Alaskan octopus, Pacific line caught Arctic char, Point Judith calamari, and wild caught Gulf shrimp. She has even put a new twist on a BLT sandwich: Graft’s BELT includes house Darby Farms bacon jam, front yard tomato, fresh lettuce, and Darby Farms fried farm egg served on toasted, housemade sourdough bread with house herbed aioli. Delicious. Not only does Clemence own and cook at Graft, she also frequently caters while offering weekly and monthly events. She definitely keeps the Grayson community hooked on her delicious large and small plate creations, along with a vast collection of wines, cocktails, and craft beers. Each Thursday, known as “Un-Corked Thursdays,” Graft offers $5 glasses of pre-selected wines. The first Tuesday of each month at 6:30 p.m. wine and specific food pairings are available for $20. Plus, if customers stay for dinner, they receive 20 percent off any entrée. Whiskey Wednesday’s are a local favorite, as are her beer and wine dinners, to which she pairs a special three to four course meal with each boutique selection of themed libations. This past year, Clemence started hosting her own secret supper club in Monroe. A private email is sent directly from Clemence to the first thirty guests who sign up, and for $70 per person, guests create memories with new friends for the evening. Guests begin with cocktails and hors d›oeuvres, proceeding into a delectable four course meal with unique wines, live music, and a guided journey of the pairings. Continued on page 13

One Man’s Opinion By Ryan T. Sauers

@RyanSauers

Why does modern media fail to cover good people and positive news? Why do we seldom hear about a neighbor helping a stranger in need, of local volunteers feeding the hungry in our community, of people rescuing animals left for dead, or about local law and emergency heroes who risk their lives for us each day? You see, the media feeds on negative-focused sensationalism to garner attention and gain a following. We don’t hear about a teacher working extra hours to help a student pass a course, but we do hear of the handful of educators who have messed up. We do not see news about our schools, but instead hear what is wrong with them. We hear about political parties who seemingly argue about everything, when most people I hear from simply want a better life for their family. People are sick of the sensationalistic news, so let’s give it a rest. People love this community. They have amazing stories of what they are doing to make our community a better place. Our Town never focuses on negative stories that serve no purpose but to divide us. Does this mean our community is perfect? Of course not. There is no such thing on this earth. However, in all my travels across the globe, I have found few places that have a greater sense of community than we have. From my vantage point, this community does not see “age, disability, ethnicity, gender, nationality, religion, sexual orientation, or skin color.” We see flesh and blood. We see people trying to live a peaceful life and trying to make a difference. We see families who love each other and friends who care for one another. We see people who want to be heard and understood, not judged and yelled at. We see neighbors we care about. You see, this community consists of people of character. Our community may have our differences, but we look out for one another. You should be proud of that. I am. Quite frankly, I see a lot more of what we have in common than what we do not. Where we work, live, and play is special. Have a great month and as always...this is your town, my town, OUR TOWN.

Senior Corner: Prescription Cascade By Joy A Tekobo PharmD CGP Medication mismanagement is a huge problem. Twenty-nine percent of Americans take five or more medications. Seven hundred thousand ER visits and 120,000 hospitalizations annually are due to Adverse Drug Events. Three and a half billion dollars are spent annually on unnecessary medical costs. Many seniors have multiple chronic conditions and multiple prescribers. They have multiple prescriptions and sometimes have multiple pharmacies. Every prescription taken has both beneficial effects and negative side effects. There are also interactions from taking multiple drugs. The patient experiences adverse effects that seemingly present themselves as new symptoms. Because the patient does not connect the symptoms to medications, he/she goes to the doctor to complain and then gets more medications. This vicious cycle is a common occurrence. What was described is called a “Prescription Cascade” Individuals with a prescription cascade have a reduced quality of life. They are on a variety of medications, but remain unwell. Their minds and bodies are traumatized, and they also have unnecessary expenses. Fatalities have been recorded. It is a widespread but preventable problem. What are some evidences that you might be experiencing a Prescription Cascade? • Taking five or more medications. • Taking twelve or more doses of medications per day. • Taking medications for three or more medical problems. • Regularly getting prescriptions from more than one physician. • Finding it difficult to follow your medication regimen. • Being on certain high risk medications. • Taking medications without knowing the reason for taking them. If you are experiencing four of these, the symptoms you have may be due to a Prescription Cascade. The only way to know is to have your medications reviewed. The Review ensures that doses used are appropriate for the organ function of the individual patient. It identifies inappropriate medications, interacting medications, duplications, needs for potentially beneficial medications that are not prescribed, as well as adherence issues.

Do You Know the Square Footage of Your Home? Size Does Matter! By Mike Harper One of the questions most frequently asked by a potential home buyer is, “What is the square footage?” It’s a valid question, and it can have huge implications for both buyer and seller. But unfortunately, the methods used to measure and report square footage vary significantly – so much so that reported square footage is frequently unreliable. Standards for measuring square footage are published by the American National Standards Institute (ANSI). But those standards are not mandatory, and lack sufficient detail in some areas of residential square footage measurement. As a result, the determination becomes subjective, often varies by locality, and may be significantly different when reported by a builder, lender, appraiser, real estate agent, or taxing authority. For sellers, the temptation is to report as high an amount as possible, thus increasing the apparent value of the home. However, the homeowner takes a risk because the appraiser may not calculate in the same manner, causing the sales price or the financing to differ from what is desired. One such case is the measurement of basements. Appraisers do not usually treat finished basements in the same way and at the same value as “above ground” space, even if finished to the same level of quality. The primary reason is that the cost to finish a basement is much less than the cost to construct the above ground levels; therefore, appraisers generally assign a reduced value to finished basements. Since the measured areas of a home can be so subjective, the best advice for both buyers and sellers is to talk with a real estate agent about the most accurate measurement of a seller’s current home, or how to assess the accuracy of reported square footage of homes a buyer is interest in. Mike Harper is a Realtor with Virtual Properties Realty. Call 404 218-7124 for more information

Importance of Preconception Counseling and Early Prenatal Care By Bimbola Abodunrin, MD Pregnancy can be a very happy, but also very complicated time in a woman’s life, especially for first time mothers. Most pregnancies are uncomplicated, but there can be some adverse outcomes. Some of these complications can be avoided with the help of preconception counseling and early prenatal care. Preconception counseling involves evaluating and optimizing risks that patients may have prior to planning a pregnancy. Some of the issues that could be discussed include undiagnosed or poorly controlled medical conditions such as hypertension and diabetes, immunization history, medication and radiation exposure in early pregnancy, nutritional issues, family history and genetic risk, tobacco/substance use, high-risk behaviors, occupational and environmental exposures, social issues, and mental health issues. If addressed prior to pregnancy, complications from these issues could be easily avoided. . About 50 percent of pregnancies in the United States are unplanned, which makes preconception counseling sometimes difficult. For such patients, early prenatal care (care in the first trimester, especially prior to ten weeks gestation) is another opportunity to address and optimize a lot of concerns that could cause complications later in pregnancy. Patients also have the opportunity to get early genetic testing. Preconception counseling and early prenatal care are important for all patients regardless of age or current health status. Women of childbearing age who are not taking birth control or are currently considering a pregnancy should also start taking daily prenatal vitamins. Doing these could allow for a greater decrease in possible complications that could be associated with the pregnancy and increase the likelihood of a positive outcome for both mother and baby at the end of the pregnancy. Dr. Morgan and Dr. Powell Join the Team at Dr. Chris’ Natural Remedies in Snellville By Heidi Campbell For ten years, Dr. Chris’s Natural Remedies of Snellville has helped patients ease their suffering, determine causes of ailments, and learn to live healthier, drug-free lives. They do this using a combination of chiropractic services, holistic approaches, and naturopathic practices. They have recently added iridology and DNA testing to their total wellness services. Three months ago, the practice expanded and welcomed two new doctors: Dr. Kriscinda Morgan, a certified naturopathic doctor who handles nutrition and health assessments, and chiropractor Dr. Kerith Powell. When Dr. Powell began looking for a practice, he had no idea that he would end up in such a unique situation. After visiting Dr. Chris, he recalls, “I had never been in this sort of practice before, but I sat and watched Dr. Chris work back in December. Everything was in smooth order, and I had a sense that everyone felt at home here.” The Snellville office is divided into a retail store and the provider office. The retail store carries a host of natural supplements, including the “Standard Process” and the “Triple Flu Threat,” both popular with patients. “The brands we sell are not synthetic vitamins you can buy anywhere,” Dr. Chris explains. “The primary lines that we sell are food-based, not USP Pharmaceutical Grade.” The provider office accepts walk-ins and appointments. “We accept patients on any level of the ‘road to recovery’ scale,” explains Dr. Powell. “They may come in suffering from a physical, chemical, or biological event, or they could have emotional stress. Many visit in a state of total health, and they are just looking to maintain that. Our goal for each patient is complete wellness. We use nutrition, supplementation, chiropractic, and whatever other activities we give them to do at home. Everyone gets an individual care plan.” Continued on page 13

God Foods: Getting the Most Bang for Your Calorie Buck By Kelly Farris, ACSM CPT I’m not a nutritionist, but I do hold several certifications in nutritional counseling. I daily advise clients on nutrition. However, I do not endorse crazy diets and gimmicks. Those types of diets do not work. You must eat a balanced diet that includes ALL food groups. A real diet consists of real foods that I call GOD foods. These are foods that have been provided for us on God’s earth, not processed in a factory. Have you ever eaten an entire sleeve of crackers, only to still be hungry? How about realizing after cookie number ten that you could eat ten more and that you really, REALLY want to eat ten more? Processed foods are, by design, addictive and NOT satiating. Potato chips are air with a LOT of empty calories. Even the advertising tells you, “No one can eat just one,” and “Keep eating, we’ll make more.” Here are two examples of how some God Foods stack up against processed foods: Broccoli v. Spaghetti Pasta: Broccoli (30 cal per cup) naturally contains every vitamin and nutrient except fluoride and Vitamin D. Spaghetti (220 cal per cup), which is “enriched” with vitamins & minerals, is a processed food. You can eat 7.5 cups of broccoli to every 1 cup of spaghetti. Zucchini v. ten Saltines: Zucchini (20 cal per cup) naturally contains all vitamins and nutrient minerals. Ten Saltines (260 cal) are “enriched with iron” and are a processed food. You can eat 13 cups of zucchini to every ten saltine crackers. The numbers don’t lie. Eating real food is a way to get FULL with very few calories, and with calories that are loaded with nutrients and vitamins. This is too easy! GO FOR IT! Kelly Farris is the owner of Ladies Workout Snellville and the President of KLF Fitness. More information at ladiesworkoutsnellville.com.

Community Member Spotlight on Jamey Toney: A Life of Service At fourteen, Jamey Toney went to work at Glenn’s Open-Pit Bar-B-Que in Snellville. That experience, combined with the example set by his father, a lobbyist and businessman, inspired Jamey to run his own business. But rather than barbeque, Jamey’s observation of the bills inside the cash register sparked a passion for finance. After six years in Lawrenceville, Jamey returned three years ago to open a Country Financial office on Main Street in Snellville. Besides handling insurance and wealth management, Jamey is also a Certified Financial Planner, and while the business provides his living, it’s not all about sales and commissions. According to Jamey, the insurance business and financial planning are tailor-made for someone looking to give back to his community. “I’ve always been a helper,” says Jamey, who credits his mother, a veteran teacher, with instilling in him the importance of service. “There’s nothing like the feeling of helping a client get a new car after an accident, a new kitchen after a fire, or money to help with expenses after the loss of a family member.” According to Jamey, insurance and wealth management go hand in hand. He feels many people put off seeing a financial consultant due to fear and a lack of education, which is why he offers a complimentary insurance and financial review. “In the insurance business, the person whose picture is on the sign is often not involved with clients. That’s not the case here,” Jamey says. Clients meet with him one-on-one and receive support from team members who are heavily involved in day-to-day operations. Trudy Lamont and Keri Simmons are both licensed insurance agents. “My team has just as much passion for helping people as I do,” he adds. A past president and Rotary Club member for ten years, Jamey believes strongly in their motto, “Service Above Self,” and carries it over into his business by helping each individual client. While the eradication of polio is the main focus of the Rotary Club’s charitable work, the Gwinnett Sunrise Rotary Club also collects breakfast items for distribution at the Southeast Gwinnett Co-op. They and two other civic associations sponsor Snellville’s Casino Night. Proceeds helped build a pavilion at the Snellville Community Gardens and supported various local charities. The Georgia Rotary Student Program sponsors international students for one year of education at the University of Georgia. According to Jamey, many of the students go on to continue their education in the US, or return at a later time to start a career. Jamey is also on the board of Snellville Tourism and Trade, an organization working to bring people and events to Snellville. Popcorn in the Park, the Around the World International Festival, and the Annual Snellville Christmas Tree Lighting are a few of the events they coordinate. Members are involved in everything from planning to setting up stages and chairs for audience members. “Whether by financial contribution or sweat equity, it always makes you feel good to make someone’s life better,” says Jamey. “I want to be known as someone who volunteers in the community.” Jamey Toney owns Country Financial in Snellville. Dr. Chris’ Natural Remedies

Continued from page 11

Part of their approach involves assessments of health. They do muscle testing, saliva hormone testing, and hair analysis. “Hair analysis allows us to check for excessive minerals in the hair shaft,” explains Dr. Morgan. “When that’s tested, you can see the history three to six months back. If they have lots of copper, for instance, there are lots of natural treatments we can put in place. We look for root causes. We like to find the ‘why.’” Dr. Chris recalls seeing amazing transformations over the years, particularly one of a sevenyear-old autistic child. He was non-verbal, did not read, and could not complete everyday activities. After nine months of treatments, he could say his alphabet and work on a computer. His grandmother videotaped his continued progress as he began bike riding and reading at a gifted level. “It was a true testament to these natural approaches,” Dr. Chris says with a smile. Graft

Continued from page 5

As our brisk autumn approaches and the holiday season draws near, Clemence is excited about the updates of the green space and patio. After repurposing the back garden, Graft now has a small event space for corn hole, live music, and horseshoe tournaments. With a seasonal fire pit, picnic tables, and patio fans, Graft continues to invite the community inside its doors. “When people come into Graft, I know they’re here to hang out for a few hours, and if they leave with a smile on their face and give us big hugs on the way out, I know we’ve done something really great,” Clemence said. “It shows that we’re doing something right and gives me joy and fulfillment deep down.” More info at: http://www.Graftrestaurant.net/
