The Sega dance is originated from the ritual music of Madagascar and the mainland of Africa, and it is the Musical Expression of the Mauritian Way of Life: joy and liveliness. The original instruments are fast disappearing, making way for the more conventional orchestra ensemble. However, all along the coastal fishing villages, the traditional instruments such as the “Ravanne”, “Triangle”, the “Maravanne” and the traditional guitar are still being used. WHAT TO DO IN THE NORTH Grand Baie is the Mauritian centre for sailing activities. Visitors can join a yacht tour, a catamaran cruise or even charter a private yacht for a day here. Conditions for sailing are usually excellent and yachts can be chartered to cruise around Mauritius or to visit some of the northern offshore islands. SSR Botanical Gardens are one of North Mauritius’ most visited tourist attractions. Famed for their giant Victoria Amazonica Water Lilies whose gargantuan leaves expand as wide as three meters in diameter, and for the amazing Talipot, a plant that flowers only once every 30 to 100 years !

METHOD Dust the shrimps with flour and baste it in the tempura batter. Deep fry until crispy. Spread the rice on the nori sheet and dispose all the rest of the ingredients on the rice with spicy mayonnaise. Roll it and top with unagi. Cut the roll into 6 pieces.

LEARN MORE ABOUT... BALACLAVA & TURTLE BAY Turtle Bay known to old seafarers since centuries as a safe and secure anchorage where they could replenish fresh water and food on their voyages to and from the east. Between 1598 and 1710, the Dutch tried several times to establish a colony. The captains of the Dutch East India Company gave it the name “Schildpatt’s Baai”. The abundant ebony forests which covered the northern part of Mauritius provided best ship building material to repair broken masts or damaged vessels. In 1735, the first Governor of the French East India Company, Mahé de Labourdonnais, decided to establish Port Louis as the main harbour of the island, instead of Grand Port. Turtle Bay then became more significant. Around 1740, a naval arsenal was built, as well as an iron foundry and a gunpowder factory. In order to procure water for the workshops, a dam was built across the ‘Rivière Citron’ in 1743. This dam is still existent today. 8th May 1748, Admiral Boscawen anchored in Turtle Bay with a fleet of 23 British ships, in an attempt to take over Mauritius from the French. However, they got under heavy fire from the cannons of the Turtle Bay and Tombeau Bay batteries and never managed to land. After 4 days the fleet left, anxious to reach India before the monsoon season. Facing the resort, Turtle Bay was the first zone to be proclaimed a national marine park. Sheltered from the South East trade winds, this part of the island is ideal for snorkelling and diving, given its very rich marine environment. Endless varieties of corals, fish and turtles live in harmony in this underwater protected paradise.

DIVING CENTER Clear turquoise seas, an abundance of live coral reefs and beautiful tropical fish. The west coast of Mauritius is a region with a variety of interesting dive spots, with water temperatures ranging from 22° Celsius in winter ( to 28° Celsius in summer. There is no typical “diving season”. Beautiful conditions exist all year round but the visibility can, of course, be affected by waves, plankton, tides or rain.
