LIVE FULLY SEGA SHOW The Sega dance is originated from the ritual music of Madagascar and the mainland of Africa, and it is the Musical Expression of the Mauritian Way of Life: joy and liveliness. Many singers had thought of also bringing forward the English version of the Sega songs but later resolved not to proceed with it so as to preserve the uniqueness and cultural richness of the local music of Mauritius. The original instruments are fast disappearing, making way for the more conventional orchestra ensemble. However, all along the coastal fishing villages, the traditional instruments such as the “Ravanne”, “Triangle”, the “Maravanne” and the traditional guitar are still being used.

Melt the dark chocolate and mould in a very thin layer into two hemisphere and leave to set in fridge Heat the puree Soak the gelatin leaves, melt and add into the puree and cool at 32ยบ C Whisk the egg yolk and sugar in a water bath till it become like a mousse And then add the whipped cream and the puree to the above Fill in the both hemisphere, and stick together Set in fridge and spray with red chocolate
METHOD
Melt the dark chocolate and mould in a very thin layer into two hemisphere and leave to set in fridge Heat the puree

Soak the gelatin leaves, melt and add into the puree and cool at 32ยบ C

Whisk the egg yolk and sugar in a water bath till it become like a mousse

METHOD
Melt the dark chocolate and mould in a very thin layer in two half ball and leave to set in fridge Heat the cream, add the milk chocolate and salted butter, mix with a spatula Fill in the two chocolate balls and stick together Set in fridge and coated with cocoa powder
3. For the white chocolate balls 20 Gms white chocolate 120 Gms white chocolate 20 gms cream 1 vanilla stick 60 Gms whipped cream
And then add the whipped cream and the puree to the above Fill in the both hemisphere, and stick together Set in fridge and spray with red chocolate
4. For the crumble pearls 20 gms flour 20 gms butter 20 gms almond powder 20 gms sugar
METHOD Mix all together
Roll on in small beads and cook at 150 deg C for 10 mins Dress the sphere, the balls, the pearls like in the picture, with red berries, fruit coulis and fresh mint

RESORT Spread over 10 hectares in the quiet Turtle Bay, the resort is bordered by the reef and ocean nature park on the coast and lush sugar cane fields behind. Water sports and diving complement the two stunning swimming pools and a natural sandy beach facing the oldest protected marine park.
LEARN MORE ABOUT... BALACLAVA & TURTLE BAY Turtle Bay known to old seafarers since centuries as a safe and secure anchorage where they could replenish fresh water and food on their voyages to and from the east. Between 1598 and 1710, the Dutch tried several times to establish a colony. The captains of the Dutch East India Company gave it the name “Schildpatt’s Baai”. The abundant ebony forests which covered the northern part of Mauritius provided best ship building material to repair broken masts or damaged vessels. In 1735, the first Governor of the French East India Company, Mahé de Labourdonnais, decided to establish Port Louis as the main harbour of the island, instead of Grand Port. Turtle Bay then became more significant. Around 1740, a naval arsenal was built, as well as an iron foundry and a gunpowder factory. In order to procure water for the workshops, a dam was built across the ‘Rivière Citron’ in 1743. This dam is still existent today. 8th May 1748, Admiral Boscawen anchored in Turtle Bay with a fleet of 23 British ships, in an attempt to take over Mauritius from the French. However, they got under heavy fire from the cannons of the Turtle Bay and Tombeau Bay batteries and never managed to land. After 4 days the fleet left, anxious to reach India before the monsoon season. Facing the resort, Turtle Bay was the first zone to be proclaimed a national marine park. Sheltered from the South East trade winds, this part of the island is ideal for snorkelling and diving, given its very rich marine environment. Endless varieties of corals, fish and turtles live in harmony in this underwater protected paradise.

The resort is situated right on the natural marine park of Turtle Bay, which offers unsurpassed snorkelling, watersports and scuba diving. DIVING CENTER Clear turquoise seas, an abundance of live coral reefs and beautiful tropical fish. The west coast of Mauritius is a region with a variety of interesting dive spots, with water temperatures ranging from 22° Celsius in winter ( to 28° Celsius in summer. There is no typical “diving season”. Beautiful conditions exist all year round but the visibility can, of course, be affected by waves, plankton, tides or rain. CHOCOLATE MARTINI Enjoy this Special Chocolate Martini
INGREDIENTS :
All you need for a chocolate martini is: 2 ounces of vodka 2 ounces of chocolate martini mix 2 ounces of coffee liqueur Chocolate garnish of your choice
PREPARATION :
Add Chocolate Martini • So first you start with a shaker filled with ice. Add two ounces of vodka. You can use the top (of the shaker). 2 ounces of chocolate martini mix, and now add two ounces of baileys, for some extra flavor, make it a little bit thicker. Shake and Serve • Once you have everything in, you shake it up for about 7 seconds. And then pour into a Martini glass.
