or a number of years, I have been very concerned about the revdeclining onworC ynumrreJ yB ber of large-animal veterinarians in my area. For those of us who make a living from livestock production, having the Jerry Crownover farms in Lawrence County. He availability of a physician who is capable and is a former professor of willing to make farm calls any time, and in any Agriculture Education at kind of weather, is essential to our bottom line. I Missouri State University, may have learned the reason why their numbers and is an author and are dwindling. professional speaker. Last summer, a neighbor called my wife to see To contact Jerry, go to if she was still interested in a couple of free kitozarksfn.com and click tens. Since our old barn cat is almost 17 years on ‘Contact Us.’ old, Judy jumped at the chance to get some replacement mousers and give them the opportunity to train under the best. The neighbor brought over two young male kittens, which had been rescued from being dumped in a road ditch by her house, and they soon acclimated to the Crownover farm. Being a responsible pet owner (plus, not wanting the little guys to go AWOL from their farm job for two months every spring), Judy called the vet’s office last week to set up an appointment to get the two young tomcats neutered. When she took them in, the receptionist asked if we wanted them wormed and vaccinated while they were there. Judy agreed, and then sent me to pick them up and pay for the procedure later that afternoon. When I arrived at the vet clinic, the nice lady at the front desk helped me put the drowsy felines in a carrier and we proceeded to the front desk to pay my bill. Presented with the bill, I’m sure I looked as addled as the two drugged-out kitties in the box. “How much?” I asked. — Continued on Page 5

Since I had to work the following day, I figured I had better get something lined out. As I looked in my cabinets, I realized I really needed to go to the store. I had half a bag of sugar, a little flour, a two eggs, some spices and a stick of butter. As I pilfered through my sparse supplies, I saw four little apples on the counter, but what could I do with four little apples? I remembered an apple cake a friend made a time or two. just a thought Across the Fence Continued from Previous Page empty-handed to the annual meeting, I thought I would give it a shot. About halfway through the mixing process, I realized I was missing a couple of ingredients. After a quick internet search for substitutions, it was time to pour it into a pan and bake. After I got the cake out of the oven and found some brown sugar and a substitute for cream for the topping, I was done. It didn’t look too bad, but I worried the substitutions would put it at the bottom of the list. The next evening, I brought in my little apple cake and put it on the table with pies with golden brown crusts, and I admired the cakes with wisps of homemade icing adorning them. My simple cake wasn’t that eye appealing; it was very plain compared to the others. “Yep,” I thought to myself. “I’m beat again.” As the dinner went on, those mouthwatering creations quickly disappeared from the dessert table, but my cake remained with only a couple of slices taken. Family members asked what I made and they came back to our table with a slice or two and complimented me on my cake, but I’ll admit it, I was a little deflated knowing I would once again not savor the sweet taste of victory.
Life Is Simple Continued from Page 3 She repeated the number that I thought I had heard the first time. “Are you sure?” I asked again. She looked over the itemized bill again and assured me that the total was correct. Weakly, I reached for my checkbook. On the way home, I began to analyze the cost of the procedure in my mind. The total cost, per cat, was more than I paid the last veterinarian to drive to my farm, on a Saturday afternoon, in the snow and sleet, to pull a backwards-presented calf…and that was to work on animals that would, hopefully, make some money. DECEMBER 10, 2018
As the evening drew to an end, it was time to announce the winners. The firstplace announcement was no surprise; my sister-in-law Becky. She’s known for her absolutely amazing pies, a skill she has passed along to her daughters, who had also made pies for the contest. I figured it would be a family sweep. Then came the second-place announcement… my name was called. YES! I finally broke my losing streak! I felt like I needed to jump up and give an acceptance speech, but I didn’t want to get too carried away, so I just did it in my head. I can now officially call myself an award-winning baker. Well, at the Farm Bureau annual meeting I can anyway. **** As in years past, OFN has compiled recipes from around the Ozarks for our annual Country Christmas Cookbook. We hope you enjoy perusing through the special portion of the paper and find your holiday meal inspiration. From everyone here at Ozarks Farm & Neighbor, have a very Merry Christmas and a Happy New Year!

A HERI TAGE OF
THE PERFECT PACK AGE I once had aspirations of becoming a large-animal veterinarian because my dad held the good ones in such high esteem, but my first chemistry course in college persuaded me to pursue another vocation. However, had I spent eight years in college and invested hundreds of thousands of dollars on that education, why would I want to spend two hours driving to a farm to perform really hard physical labor, in the most extreme weather conditions, and be in constant danger of getting seriously hurt, to make the same money I could make in the climate-controlled comfort of my office in about 30 minutes? I’m surprised we have any cow vets left, at all. One thing I do know, I can’t afford any more free kittens.

National FFA award winner Hannah Strain works to help her family produce and market the best forage possible “We care about our farm and we care about the land. We want to do things in the most efficient way possible,” Hannah Strain said when asked about the planning and care which goes behind pasture management techniques for her family’s Red Angus farm. Hannah’s skill in pasture conservation has paid off in more ways than one. The 18-year-old University of Missouri freshman was recently awarded the National FFA Forage Production Proficiency. We believe it’s important for us to be good stewards of the land,” Hannah said. “We take extensive soil sampling, so we know exactly what needs to be put back into the ground.” Nitrogen, potassium and phosphorous are added in the form of fertilizer, as needed. The pride she feels for the part she plays in the farm’s success is evident. Her position on the farm includes forage assessment, evaluating seasonal growth of warm and cool season grasses, soil assessment, all aspects of hay production and the marketing of the farm’s forage product. Hannah also works with customers across the state and takes pride in producing a quality product. She also maintains a positive working relationship with landowners who they lease ground from as well as local ag businesses who help carry out the farm’s operations. Red Angus cattle are also an important part of the family operation. The Red Angu, Hannah explained, was chosen for their docility and the ability of the heifers to produce abundant milk for the calves. The exact number of heifers on the property can fluctuate, but there are usually between 170 to 200 females and calves, in addition to three Red Angus bulls. “Our bulls are docile, good guys. Mostly, they hang around, and do their own thing,” Hannah laughed. Hannah’s father Tom enjoys the commercial side of their cattle operation. “My dad likes to go into our calf crop when they are about 400 to 500 pounds, and pick the ones he thinks look the best, pull out about five bulls and grow them to finish. If there are people in our community that are looking for a Red Angus based commercial bull, he’ll sell those. He likes to watch them go from point A to point B, and he has an eye for picking them out,” Hannah said. Fescue hay is the primary hay used to feed the Strain herd. Orchardgrass,Timothy, red top and white clover are also mixed in with the fescue, as feeding too much DECEMBER 10, 2018
fescue could be toxic to the herd. “Fescue is an excellent grass because it grows so vigorously, and is so strong,” Hannah explained. “It’s important to have those different plants in there as part of their diet, so they get all the nutrients that they need.” Pasture grass generally consists of the same mixture. In order to not over graze the land, Hannah practices the take half, leave half method of cattle rotation. When the grass has been eaten to half of its original height, the cowherd are moved to another area. Hannah enjoys her time at the Columbia, Mo., college campus, but tries to come home as often as possible, so she can help her sister and father with the farm. As someone who loves to learn, Hannah likes all her classes, but her favorite class have been business. Hannah believes the time spent learning about resumes and Linked in will be beneficial in the future. When she has time, Hannah enjoys fishing, and uses the pond on the farm. She likes to travel, and has taken a lot of trips with FFA. “It’s been really cool to travel around the state of Missouri and see the different farms, and the way that they do things, and then be able to compare those,” Hannah related of the time spent visiting different live stock operations. While she recognizes the hard work involved in farming, Hannah believes the time spent on the farm is special. “I know it sounds cheesy, but, I love to work cows. It’s really fun to move cows. They get so excited to go to a new pasture,” she said. They start running and follow you in the truck. I’m smiling thinking about it. Nothing can replace spending time on the farm,” she said. “Even when we aren’t working, just being out there, watching cattle graze, and working cows. There is nothing like it.”

Deep Roots in McDonald County, Mo. By Katrina Hine
Kenny Underwood is known for his family’s long history in the area, and his baking skills that benefit others
Photos by Katrina Hine
Kenny Underwood’s roots run deep into the history of McDonald County, Mo. In fact, he can boast that 12 of his great-grandparents have lived in McDonald County for nearly 170 years. The newest member of the family to relocate to McDonald County was his mother’s father who arrived in 1918, a mere 100 years ago. “We’re pretty root bound in this part of McDonald County,” Kenny said. In fact, Kenny can trace his deepest roots all the way back to 1650 when Thomas Underwood applied for a land grant in Maryland 30 years after the Plymouth Rock landing of the pilgrims. He is able to follow the paper trail from Pennsylvania, Delaware, North Carolina and Tennessee. His DNA results point to ancestors from Scotland, Ireland and England, with a curious amount of Scandinavian.
“I know that there were not any ancestors for generations from Scandinavia,” he notes. “So, I wonder about a heavy Viking influence.” Another great-great grandfather was the county assessor in 1896, as well as, once serving as the Postmaster in Jane until his daughter took over the position making a cumulative 50 years in postal service for the Mars side of the family. Kenny worked for 30 years in the town’s grocery store before deciding to throw his hat into the political arena. It was a trip to Lambert’s Café in Ozark, Mo., known for their thrown rolls, that inspired him to create rolls as a campaign tool. So, it is no surprise that Kenny would go on to become the county recorder, elected for the first time in 2005, he just won re-election in the mid-term election. Entering into the recorder’s office is somewhat like going back into time.
Old maps, pictures and election ballets are scattered along the various walls in his office. And then there is the vault where all the historical records for the county are housed for their protection. The responsibility of the county recorder is critical, not only for preservation of important documents but also for tracking down an individual’s own family history. The office staff “record, preserve and retrieve all records relating to real estate ownership in the county” … issuance and recording of marriage licenses and recording of military discharge papers for the county’s veterans. Additionally, the office records and files any tax liens that may be levied against a property. Unfortunately, marriage and real estate records only go back to 1865 because at the onset of the Civil War many of the counties along the state’s border lost
Cinnamon Rolls Kenny Underwood, Pineville, Mo. 24 Cinnamon Rolls (Basic Hot Roll recipe) 1/4 C oil 4 1/2 – 5 1/4 C flour 1 pint water 2 eggs 1/2 C cinnamon sugar 1 Tbsp yeast 1/2 tsp salt 1/2 stick butter 1/2 C sugar In a large mixing bowl combine 2 1/4 C of flour and the yeast. In a saucepan heat water to just warm, add sugar and salt. Slowly pour the warm water mixture into the flour and yeast, mix with a mixer on low. Add eggs and oil, continue beating, adding remaining flour until it is smooth and pliable. Turn out on floured countertop and knead in more flour until it is soft, slightly sticky and elastic like, roughly not more than five minutes. Place in a greased bowl and cover with a cloth in a warm place to raise about one or one and half hours or double in size. Press dough down and divide into workable sections. Roll out into a rectangle and cover with softened butter. Mix cinnamon and sugar and spread over softened butter. Roll up jellyroll style and pinch ends to seal. Cut into slices 1 inch thick and place in greased pan leaving space to rise. Let rise until doubled, about an hour. Bake at 350 degrees for 15 to 20 minutes until lightly brown. When slightly warm (not too hot, so the icing doesn’t run) mix the icing ingredients and drizzle over the rolls. Serve warm.

Cinnamon Roll Icing 2 C powdered sugar 2 Tbsp butter, softened 1 tsp vanilla 1 Tbsp milk Mix the powdered sugar, butter and vanilla together. Adding half the milk (or orange juice) to start with, stir in to make a thick glaze, adding just a drop at a time more until you get a nice thick glaze. Spread or pour immediately over cooled cinnamon rolls. Glaze will form a crust and harden as it cools, but you can spread over warmed cakes and serve that way as well.

ozarks roots their courthouses to mysterious fires and no real proof of who the offenders may have been. Kenny is also known for something else. He can be called a “Cinnamon Roll Master,” of sorts. He is known throughout the county as the man who bakes hundreds of dozens of rolls and cinnamon rolls to benefit different fundraisers in the county. But he was not always the baker extraordinaire, in fact, his wife Kathy used to make rolls for folks working at the courthouse for years and enlisted his help for the larger batches. Word spread and on one occasion they made over 565 dozen cinnamon rolls for the McDonald County High School Band. “I had to translate that into how much of each ingredient I would need for that many rolls,” Kenny stated. “We started at 7 a.m. and by 1 p.m. all 565 dozen orders were baked wrapped and delivered by the students.” Six months later, the students held another cinnamon roll fundraiser and took another 435 orders. All told, the funds raised just from cinnamon rolls was more than $10,000. The band students assisted in the preparation, making for some interesting baking challenges. “The students accidently doubled some of the ingredients, so we had to double all rest,” Kenny adds smiling. “The result was a giant, writhing mound of dough that seemed to have a life of its own.” That one batch made 112 dozen cinnamon rolls. Since most of his baking is for large quantities, Kenny came up with his own recipe to simplify the process and even kneads the triple batches all by hand. He admits that there is nothing extra ordinary about his roll recipe. But residents of McDonald would disagree, since the rolls often become the focal point of competitive bidding at fundraiser auctions. Even though he enjoys baking, he is just as happy when the whole process is over, and he can settle back into going over age old documents that tell the rich history of McDonald County. Kenny and, his wife, Kathy, live in Pineville, Mo and have two grown married sons, Cooper and Conner.

Hirsch Feed & Farm Supply By Laura L. Valenti
Owners: John Williams and the Hirsch Family Locations: West Plains and Thayer, Mo. History: “I am in business with the Hirschs who own the Thayer location,” John Williams, the co-owner and manager of the West Plains store, explained. “We operate two separate stores. The whole business has been going since 1974 and we opened this one in the fall of 2005, 13 years ago.” Products and Services: “We have just about everything for the farm and ranch operation, from tractors to fencing to clothing. We sell Massey-Ferguson, Mahindra and LS tractors, Bad Boy lawn mowers and Bob Cat industrial equipment. We have utility vehicles, the attachments and implements. We sell parts, a lot of parts and of course, we also service those vehicles. We also have livestock equipment and feed. Basically, we have a lot of diversity.” That diversity can be seen in the variety of issues that keep John busy throughout the day as he spends much of his time on the phone, working hard to keep up with his varied inventory, the orders involved, making certain everything comes in the right size, color and amount, as well as coordinating delivery times and places. “I enjoy the people and being your own boss. My wife, Dixie, does our accounting and bookkeeping and helps me keep up with the 47 employees we have here. That’s the key to getting everything done, having good employees and we do. The biggest challenges, are time management and staying current on everything, making sure we offer the best price and the best in customer service. As an independent, keeping up with the big chain stores is also part of it but we are managing to do just that. “As for future plans, we have some that I can’t elaborate on that just yet, but we are always looking for new product lines. Thayer just had a big expansion last year. In West Plains we are probably going to need to add more warehouse space before long because we are already filling up what we have, fast.”

Living the Dream Continued from Previous Page Bill also worked for Lazy-Boy in Neosho, Mo., for the first 10 years. “The chicken deal was kinda a rabbit trail,” Bill laughs. “I worked with some guys who were chicken farmers and it sounded pretty neat.” Bill left manufacturing to become a truck driver while Gayle ran the chicken operation, he helped whenever he was not on the road. He has driven for Little Debbie for the last 16 years. Gayle joined him three years ago after completing the truck driving program through Crowder College and securing her CDL license, allowing them to spend more time together as team drivers. They decided to sell their chicken operation and get back into cattle when they made an offer on their new property. It was at the suggestion of Joe Stark and Ronnie Rogers, that they decided to check into the NRCS programs for their cattle operation. “Because we have a small amount of usable land, I just wanted to maximize my ability to raise cattle,” Bill said. Even though there is a live spring and creek on the property, there was only one well, which is across the road from the home on the 75 acres currently being utilized for cattle. The 90 acres behind the house and outbuildings is not devoted to the cattle operation, making it necessary to gain the most efficiency out of the pasture land. However, there are future plans to develop it, as well.
The Hanke’s took advantage of four programs through NRCS services: creek exclusion, timber exclusion, paddock development with electric fencing and water tank installation. NRCS improved the well, allowing it to meet the demand of increased capacity when watering cattle. They helped put in water lines and 11 water tanks spread out among the 11 paddocks to accommodate rotational grazing, planning for approximately 2 1/2 acres per head. “The side benefit of the NRCS programming is the cows are much calmer and easier to handle,” Bill added. “The paddocks create more interaction with the cattle and makes calving season easier, since the cows are not able to hide the calves in the trees.” Moving the cattle from paddock to paddock every couple of days is not that much more work when compared to chasing the cattle all over the property. Though they currently have 25 head of Brangus cross cows and a black Angus bull, the goal is to nearly double the herd in the future. The programs are on a 10-year contract, meaning that the land owner will perform the upkeep on the program improvements and keep the designated areas excluded from cattle access. The Hanke’s have three grown children: Their oldest Julie is married and is a registered nurse at Integris Hospital in Miami, Okla., Johnica, the middle daughter, is a teacher and coach in Gainesville, Mo. and their son, Jamie, attends Crowder College and has plans to raise cattle for an individual near Climax Springs, Mo.

Hometown: Kirbyville, Mo. Family: Partner, Sue Cannon In Town: Roy Doerrer is the president of the Roark Valley Modular Railroad Club, which leases a display at Branson, Mo., at The World’s Largest Toy Museum, where he mans the organization’s display. “I am there for five days a week promoting model railroading and the history of the railroad industry,” Roy said. “The rest of the museum time is filled by other members for half days or full days according to their schedules.” In the Country: In 2014, Roy retired from being a general manager of an RV business in Sacramento, Calif. He and his partner, Sue Cannon, I couldn’t afford land in that area so they moved to Missouri where they purchased 5 acres. “We started with 45 Guinea hens because they’re so good at eating tics and chiggers and keeping snakes away. However, as soon as they could, those silly guineas escaped from the coop, roosted in the trees and were much happier. They’re crazy as lunatics and run as fast as they can to get someplace but then forget why they went there in the first place,” Roy said. Their antics and the antics of the kids from our Boer goats always make us laugh. Our neighbor gave us a big white rooster appropriately named Foghorn Leghorn. We thought it was only right, so we bought him some hens. He got so excited he killed himself. We bought another rooster and now have 60 Plymouth Barred Rock free-range laying hens. They mostly eat bugs though we do give them crack corn and a layer crumble. Unlike the guineas, they love to roost in the coop which is where we collect eggs. They produce a tremendous number of eggs which go to people at the museum and friends of ours in exchange for their help with our animals. We’ve always believed animals are better than people.”

The last couple weeks of mostly below average temperatures and some winter weather has farmers starting to feed some hay now. The fall pastures are being depleted and diet requirements are increasing. Some areas of the state have already seen four snow events which is very unusual this early. Although they have been short lived it is eating up some of the hay supply in a year that the general consensus is there is not enough for an extended long feeding season. The supply of hay light to moderate. Hay prices are steady. Hay demand is light to moderate. The Missouri Department of Agriculture has a hay directory available for both buyers and sellers. To be listed, or for a directory visit http://mda.mo.gov/abd/haydirectory/ for listings of hay http://agebb.missouri.edu/haylst/ (All prices f.o.b. and per ton unless specified and on most recent reported sales price listed as round bales based generally on 5x6 bales with weights of approximately 1200-1500 lbs). Supreme quality Alfalfa (RFV <185): 180.00-225.00. Small squares 7.00-10.00 per bale. Premium quality Alfalfa (RFV 170-180): 150.00-200.00. Good quality Alfalfa (RFV 150-170): 120.00-160.00. Fluid Milk: Across the U.S., milk production remains slightly lower than expected for this time of year. Although, Western contacts suggest milk is plentiful for processing needs. According to Eastern and Midwestern contacts, poor feed quality is a factor affecting component levels. Bottling demand has lightened in the South-Central and Southeast areas, as well. Contacts continue to suggest plant-based alternatives to milk have taken a toll on demand across the board. Cheese makers who are maintaining busy production activity in the Midwest are receiving discounted milk loads, with prices ranging from $1 to $3 under Class, whereas a number of other regional cheese plant managers have limited production schedules. Cream continues to be tight and loads are not at readily available levels. With that, contacts are seeing a few more offers this week and expect more to come in upcoming weeks. F.O.B. cream multiples are 1.28-1.45 in the East, 1.26-1.35 in the Midwest, and 1.10-1.28 in the West. KML Farms: A Unique Perspective By Michelle DeLong
Monet Lammers’ passion for teaching and riding continues at KML Farms At first glance Steve and Monet Lammers’ KML Farms in Billings, Mo., may seem like just another horse facility in southwest Missouri. However, if you look just a little closer you will find something unique. Monet started riding when she was young. “I had a really awesome trainer in California,” she said. “She did a lot of the showing but she implemented a lot of the basics and the passion; why we like to ride. It wasn’t all about the competing and the ribbons and we did a lot of barn field trips and it felt like a family environment. Definitely I’ve pulled a lot of my program from her foundation. It was great. My second trainer, she was a grand prix rider and just lit up some passion in exploring more into that avenue. I apprenticed with a big barn out there and I kinda worked my way to the top.” Monet then had her son and focused on being a mom for a while before moving to Missouri. “I had kinda given up showing and teaching out in California because the politics were not what I wanted and I didn’t believe that people remembered why they wanted to ride and why they loved horses so much,” she said. “I said if I ever started again I would create something that reminded people that it’s not about the ribbons; it’s about that one on one bond with the horses, the basics and just getting to know your best friend.” Monet couldn’t stay away from horses once she settled in Missouri. “I started out volunteering with therapeutic riding and just realized how much I missed it and I had to get back into horses and little by little I’d run into a kid who just needed a little bit of tweaking in their riding and before I knew it we’re back into teaching again and I bought a farm. “Steve and I bought this place four years ago in May and we just decided that it would be hands on and teach everybody everything. They could learn as much as they wanted to do; we’d have clinics, camps,

field trips, and we will show as much as they want to show but it’s not about the ribbons. I love to have them just come out and hang out with their horses; learn the farrier side, the veterinary side, everything.” Monet enjoys working with kids and young horses. “They have so much passion and no excuses why they can’t give it their all. I love working with the adults too but the kids come out here with this huge smile just to be around the pony and you remember why you started this,” she said. “When I first started I mostly had adult clients and then little by little I would take
In addition to the lessons, clinics, showing and other activities, Monet also started a sport pony breeding program. “I like the Welsh pony; they have a great brain.” Monet explained. “Every horse can have a little bit of a naughty streak but I consistently like them with the kids. They are wonderful. I like to breed the sport ponies; the half Welsh and Warmblood. I think of the quality hunter pony. It’s going to have exceptional movement, a little bit larger size; I think in the area it just kind of just ups the bar a little bit for a quality pony around here. And we like the kids having a lot of hands on with the ponies to kind of Photo by Michelle DeLong

on their children and I just found that that’s get rid of the bad name of the pony. Our powhat I loved. I love working with the kids nies are pretty kid friendly. Anyone can ride and it’s just so fun and doing the summer ours and they’re handled well and I think camps and watching them competing with them and taking them light up with every little around just sets them up for success.” thing that you teach them. They do most of the training at All the kids support each other KML Farms and always prioriat every single level. The top stutize quality, not quantity. dent will teach that first timer ev“Sometimes I’ll send them Billings, Mo. erything. It’s neat to watch them out but if we have enough all work together and cheer each staff here that it can be done other on. I love it. It’s fun.” safely then we’ll go ahead Ozarks Farm & Neighbor • www.ozarksfn.com
and start them here at about 3 years old,” Monet said. “We’ll just go slow; we do a lot of ground driving and we’ll do lunge work and put tack on them and things like that and go slow; we’ll trail ride them a little bit and lightly ride them through the 3 year old and once they’re 4, they can proceed to a little heavier program. We like to make sure that our babies are handled daily and desensitized and shown as well.” The lesson students also benefit from is the breeding program. “I think it is pretty cool for kids to be able to watch the process of how that amazing lesson horse got the way it is,” Monet said. “The couple that we’ve broken out, the kids has been able to watch from the very first ride. It’s neat; they can watch how they progress. Everyone wants to know how that lesson horse got so good. Well, it’s rides like this; patient rides, not pushing it, and the kids have just had a blast watching it. Yesterday we had some fun with a blow up dinosaur. Little things, desensitizing the babies, getting them used to whatever may come their way, that’s how that lesson horse got so bomb proof and so reliable so the parents could trust. When I turn my back to talk to that parent, that pony is not going to bolt away. We trust every one. And these foals that we’ve watched be born and then watch them hit the show ring. It’s just a neat process that I like being a part of.” Monet also said there is much more to riding than winning ribbons in a show. “We are not a big A show barn but my kids, they love their horses, they don’t care about the ribbons but they want to just hang out with their horse whether that be bareback or on trail. They love competing but it’s all about just being out here and learning. “It’s a very tight family. Most of my clients have been with me a very long time. We have an open door policy at our house; everyone can come over for dinner, spend the night; the door is always open. No one feels like they’re intruding on us. It’s fun. I like it like that.” DECEMBER 10, 2018

Learning and Growing By Julie Turner-Crawford
MSU Conservation Coordinator says agriculture and conservation go hand in hand The donation of the more than 3,000-acre Journagan Ranch in Mountain Grove, Mo., to Missouri State University by the Leo Journagan family in 2010, presented an opportunity for students to get hands-on experience and put the skills they learned in the classroom to work. In the fall of 2014, the university began a collaboration with the Missouri Department of Conservation with a multiyear program to improve wildlife habitat on the ranch for the bobwhite quail population, which intern has improved ranch’s grazing operation of nearly 1,000 head of Hereford cattle. Clint Dalbom, MSU Conservation Project Coordinator, said agriculture and conservation go hand in hand. “Our message has been that it’s not that we’re sacrificing anything to do wildlife habitat management; we’re actually streamlining the cattle operation by fencing woodlands and glades, and providing water on the upland so that grazing can be done more efficiently

woodland and native grass pastures, with three of the burns done as part of the university’s restoration program. Cool-season grass management and a managed grazing system have also been incorporated. “Incorporating legumes like red clover, white cover, Korean lespedeza, common lespedeza, that type of thing into our grazing system not only has a big impact on the agriculture side of the grazing operation, but it’s adding habitat for the wildlife, not only for the bobwhite, but for turkey, and anytime you increase clover and lespedeza in your pastures, you increase the number of insects that habitat that area. Insects are the most important things that young quail and turkey poults feed on. Legumes are also a good source of food for rabbits and deer.” In addition to improved forages, water quality and availability has also increased. The university is working to fence cattle away from creeks and streams to create a riparian barrier corridor along Cliffy Creek, which is a losing stream that does not flow year-round, DECEMBER 10, 2018

explained that there has been a steady increase, even in years where the weather has played a role, in the population of the game bird. “It’s increased fivefold,” Clint said. “The areas where we started didn’t have any habitat at all. The first year, we did the practices where we had the lowest population, and the following year we had the highest population. This year, the population has taken another jump and the data is telling us if there is a seed source for quail and the habitat is there; their population is going to explode. When we started, we had less than 1 quail per 20 acres. “Now we have one quail per 4 acres. I expect we can double what we have now with one quail on 2 acres with a little management, but we’re not managing the whole area, we’re just managing a little area here and there not in the same ballpark as a conservation area where the entire area is managed for wildlife. Not bad for a cattle ranch. If we could spread that type of management across the Ozarks, look at the impact that can have on the bobwhite quail and rabbit numbers that exist here and the overall health of the environment.” While the research and improvement projects benefit the university, its students, the Journagan Ranch and the cattle that roam it, the program has served as a demonstration area to show farmers what they can do on their own property. “One of the original ideas for the project was to have a place where we could have conservation practices on the ground as a demonstration so that people could see exactly what we were doing,” Clint explained. “Most all of these practices have cost-share attached to them through the Missouri Department of Conservation, the Natural Resource Conservation Service, the USDA or a soil and water conservation district. We wanted to show people what they can do and the program available to help them do that.”

and seven alternative livestock watering locations have been developed. “That has greatly improved the efficiency of the grazing of the forage that is produced,” Clint said. “The nature of cattle is to be a little lazy; they will only, generally, make good use of a forage a certain distance from a water supply. We’re still working on that and we’ve got some fields that we’ve split up and portions of those fields are over a quarter of a mile to water, and those areas on the fringes of the fields don’t get grazed very heavy because there’s enough forage closer, particularly our warm season grass fields. There is so much forage there that the cattle don’t have to walk very far.” Adding solar power and a pump to an existing well and additional water lines to warm-season grass fields will mean additional paddocks for the grazing system. A wildlife-watering pond has also been installed with the overflow from a watering tank that was installed from a ground seep. “The frogs, toads and everything in that area still use it, but it’s also feeding a water tank,” Clint said, adding that a spring has also been developed that produces three to five gallons of water a minute and provides water for three large livestock watering tanks via a gravity flow system. “We haven’t done anything to the hydrology of the area because we tapped the water out, then put it right back… During the drought, it looked like we needed to put trout in there because the water was crystal clear and really cold. Not only does providing more water make better use of the forage, it also gets the cattle out of the creek.” As for the wildlife, Clint, who worked for the Missouri Department of Conservation for 32 years before coming to MSU, said the project has seen the results intended with an increase in the bobwhite quail population, but it isn’t the only species that benefiting from the conservation measures. “We’re dealing with rabbits, butterflies, songbirds, deer, turkey and everything, but it just happens that the bobwhite quail is our banner species because we’re keeping tabs on,” Clint said. Each fall students from the university conduct a quail covey count and Clint

Beginning Farmer and Lending Opportunities By Jessica Allan
F
or the past few years, a regular discussion topic in the agricultural community has been the hurdles facing the next generation of farmers. The industry has a high barrier for entry when considering the cost of land, crop input, equipment and livestock. Some young farmers are able clear these hurdles through the family farm or perhaps a mentor, but others not so fortunate need to start from scratch. Still, one of the greatest challenges young farmers face, and arguably the most important, is the acquisition of a finite resource – land. Jessica Allan is an Purchasing a farm is different than purchasing a agricultural lender and house in town. Those requirements include the test of credit (cannot get traditional financing), multiple years of management experience in the industry, and using the proceeds to purchase real estate, among others. One such program is the beginning farmer down payment loan. This requires a minimum cash down payment of 5 percent from the borrower. Farm Service Agency will finance 45 percent of the loan, up to $300,000, at a low interest rate – currently less than 2 percent – up to a 20-year term. The remaining 50 percent (or more) is financed by the bank at its own rate and terms. Another program is the direct farm ownership loan joint financing, or 50/50 program. While a cash down payment is not required, additional collateral will most likely be necessary. The bank will again finance 50 percent or more of the loan at its own rate and terms while the Farm Service Agency finances the other 50 percent up to $300,000 at a fixed interest rate – currently less than 3 percent for up to 40 years. If you are a young farmer looking to enter the agricultural industry, but cannot seem to meet traditional lending requirements for farm real estate, consider talking with your lender about your options and ask if you qualify for any programs. These programs were created specifically for young farmers who might not have the cash flow or down payment requirements necessary for traditional lending.

Making farming a little easier
Programs for Small Farmers By Klaire Howerton
Producers looking to start CSAs for their farm have options In today’s agriculture scene, more and more small farmers are making an impact on their communities and coming up with creative ventures to make an income on their farms. From CSA (Community Supported Agriculture) programs to value added product to agritourism, there are a number of ways that small farmers are living their dreams. Most dreams can benefit from a little help, and that is where many of the Natural Resource Conservation Service (NRCS) programs come in. There is an enormous variety of programs that small farmers can apply for. Visiting a local USDA Service Center to get the farm registered and to discuss goals and problems with the staff is the best place to start. “We always encourage people to stop in and visit,” said Curt McDaniels, NRCS Assistant State Conservationist-Programs. “We want to give people the best experience we can, and it starts with a conversation.” Once the relationship has been established, NRCS professionals can aid small farmers in picking the best programs to fit their needs. For farmers who grow vegetables for a CSA, farmers market sales or local restaurants, the High Tunnel Initiative through the Environmental Quality Incentives Program (EQIP) offers a way to extend the growing season, and help increase winter and early spring income. This program also offers environmental benefits through improved soil and plant quality in area where the high tunnels have been constructed. For farmers who wish to enter the niche market of organic products, the Organic Initiative, also through EQIP, offers assistance to producers to install conservation

practices on agricultural operations related to organic production such as certified organic producers, producers who are transitioning to organic production and certification exempt producers, according to the USDA-National Organic Program. If farmers have livestock are raised for meat or for sale, the NRCS can help improve pasture and forestland for both domestic and wild animals. Through the Conservation Stewardship Program (CSP), which McDaniels said is one of the flagship programs of the NRCS. Improving crop rotations to reduce water erosion, planting cover crops to reduce weed pressure and break pest cycles, and creating silvopsture for both livestock and wildlife are just a few of the projects that can be funded and achieved with the help of the NRCS through the CSP. Anyone interested in participating in NRCS programs can visit the website at any time, www.nrcs.usda.gov. McDaniels noted that producers can easily access state specific NRCS site by typing the state’s abbreviation into a search engine, followed by NRCS (so producers living in Missouri would type MO NRCS). “It will be the first result, every time,” he said. Another website tool is the Field Office Locator – this search feature helps locate local USDA Field Offices by county. Producers already working with the NRCS on a program can utilize an online portal called the Conservation Client Gateway. This tool allows users to request technical assistance, apply for financial assistance, view, sign and submit applications and other documents, and track payments.
“I think the largest benefit cost-share provides to farmers is the ability to accommodate the high cost of production. Farming can be an expensive practice but the use of cost-share agriculturalists can lessen that burden.”
“It allows you to try new practices and hopefully adopt them in the future for your farm. I’ve done a lot of them over the years.”

Enrolling in the CRP Program
By Klaire Howerton
Utilizing the Conservation Reserve Program assists in erosion control, vegetative improvements and provides rental payments There are numerous benefits to implementing conservation practices on an agricultural operation. With the help of the Natural Resource Conservation Service and the Farm Service Agency, producers can explore these benefits through the Conservation Reserve Program. This unique NRCS program helps farmers and ranchers preserve valuable resources on their property while earning a paycheck and being able to participate in cost share opportunities. The goal of the CRP program is to preserve land that is environmentally sensitive (such as forest and wetland areas that offer valuable wildlife habitat) or tracts of land that are at risk for issues such as soil erosion or increased sedimentation in nearby streams, rivers or lakes. NRCS staff work with program participants to address soil, water, and related natural resource concerns on their lands, and to create a long-term management plan – contracts for approved applicants are 10 to 15 years in duration. Some of the practices that the NRCS assists producers in establishing for the CRP include planting grasses or other vegetative cover, browse for wildlife and trees, to conserve valuable soil that might otherwise erode under more traditional farming practices. Through the CRP, participating farmers receive an annual rental payment for the duration of their contract for managing valuable natural resources. According to the American Farm Bureau, for the 2017 fiscal year the Conserva-
Ozarks Farm & Neighbor • www.ozarksfn.com
tion Reserve Program average rental rate was $76.73 per acre, up 6 percent from the prior year. On top of the rental payment, farmers can also receive further financial help to preserve their land’s natural resources through a CRP cost-share program to establish their vegetative cover practices. The FSA works closely with the NRCS to administer the funding for the rental payments and cost shares through the Commodity Credit Corporation. Participating in a program such as the CRP has more than just financial benefits for producers, explained Curt McDaniel, NRCS Assistant State Conservationist – Programs. One benefit is that the producer gets protection of the natural resources on their farm or ranch – which is quite a large benefit considering that natural resources are not typically something that can be reproduced once they are gone. The second benefit is that the producer will hopefully see an increase in production from properly implemented practices through NRCS financial assistance programs. The third benefit from participating in these programs is a little broader. “Society gets an environmental benefit,” McDaniel said. “These programs are also beneficial to rural communities.” When producers utilize the financial assistance they receive from the NRCS, they are purchasing supplies from their local communities and making every dollar count, while also making production practice choices that help safeguard not just their natural resources, but their neighbors as well.

Applying for Disaster Funding By Klaire Howerton
Producers are encouraged to investigate options before a disaster hits In today’s changing climate, natural disasters, and the severity and frequency with which they occur, seem to be becoming more commonplace than in the past. Wildfires, tornadoes, flooding and drought can all wreak havoc on a farm. One of those disasters recently hit close to home – here in the Ozarks. This year was marked by a severe drought that caused many agricultural producers to have to make tough calls about their operations. Through the USDA, producers can apply for financial assistance in the wake of a natural disaster. Just a few of the disaster assistance programs available to producers include the Emergency Conservation Program, the Livestock Forage Program, the Livestock Indemnity Program, the Emergen-
cy Livestock Assistance Program and the Tree Assistance Program. Producers who are determined qualified by the Farm Service Agency will receive compensation (financial assistance varies by program) for livestock or crop loss, assistance to conserve water, remove debris, or replant orchards, depending on which program they are participating in. In order to apply for funding, producers will need to visit their local FSA office to register their farm and set up an account. This process includes basics such as name, address and Social Security number, as well as providing documentation that the producer either owns or leases the land affected by a natural disaster. While everyone hopes they won’t require disaster assistance, it is a practical measure to visit the FSA and provide records
before a disaster occurs; then the producer’s information is already in the system and that is one less thing to have to worry about if the unthinkable occurs. Once the producer’s account has been created and the application processed, county FSA committees will visit the site for an inspection to determine program eligibility. Each program has different requirements – visiting the USDA website at the Disaster Assistance Programs page will help determine what the requirements are and what farms fall under what program. Once funding has been received, participants must be prepared to keep careful records of funds spent, and accurate accounting and reporting on the progress of the program. Producers should visit their local FSA office today to establish an account and a relationship.
Organic Cost Share Programs By Klaire Howerton
NOCCSP is available to organic producers in all 50 states Many consumers are seeking out organic options these days, so many producers are working to fill that niche by becoming certified organic through the USDA. This process can be expensive, but there are cost share programs available to help. The Farm Service Agency (FSA) offers two cost share programs; the National Organic Certification Cost Share Program (NOCCSP) is available to producers in all 50 states, and the Agricultural Management Assistance (AMA) Organic Certification Cost Share Program is available in 16 states. These programs provide organic producers and handlers with financial assistance to reduce the cost of organic certification. The program reimburses producers and handlers who are obtaining or renewing their certification for a portion of their paid certification costs. Once certification DECEMBER 10, 2018
is obtained, organic producers are eligible to receive reimbursement for up to 75 percent of certification costs each year, up to a maximum of $750 per certification scope – crops, livestock, wild crops, handling and State Organic Program fees. Certified organic producers and handlers who have paid certification fees during the 2017 or 2018 program year may apply for reimbursement of the incurred costs and interested producers can visit one of over 2,000 FSA offices to apply. The Natural Resource Conservation Service (NRCS) offers an Organic Initiative through the Environmental Quality Incentives Program (EQIP). Through this program, the NRCS will provide technical and financial assistance to eligible producers for installation of conservation practices on organic or transitioning agricultural land. The assistance provided helps producers plan and implement conservation practices
to achieve increased conservation benefits on their operations. EQIP is primarily used to provide financial and technical assistance to implement conservation practices that address soil, water, air, plant, animal and energy resource concerns. Some examples of practices that fall under this initiative include planting cover crops, establishing integrated pest management plans, constructing seasonal high tunnels, or implementing nutrient management systems consistent with organic certification standards. The first step for producers, said Curt McDaniel, NRCS Assistant State Conservationist-Programs, is going to the local USDA field office and providing documentation that they either own or lease the land that the improvements will be made upon. If the producer is deemed eligible for the program, there is a ranking system applied to determine which applicants will receive the funding.
