Editor’s Message Were you aware that a child is abducted every 40 seconds in this country? Moreover, did you know that over 40% of these children are African American? If not, you are not alone because few people are aware of this epidemic. The truth is that African American children receive limited media coverage when they go missing. Sadly, without this exposure it is less likely that they will be safely found. The staff at Peas In Their Pods works diligently to spread awareness about this issue by alerting media outlets as needed when African American children are missing or abducted. Our mission is to make communities aware of the plight of these children, and to make them a national priorityIt still takes a village‌!!! One year ago Peas Magazine came into existence, the contributors during this entire year have given resources, opportunity in providing means in addressing issues that communities and families face daily, we thank you for being in agreement about having a presence. It has been an honor for me to be apart of this publication, the Peas In Their Pods organization have given me the opportunity in providing our readers with information about their ongoing mission, the faces of children who continually go missing daily. The Cornel West Academy of Excellence (CWAE) is a non-profit organization started to address many of the needs of minority at-risk male students in the 2nd - 6th grade. The academy works to address various issues affecting young boys. Academics, Self-Esteem, Strategic and Critical Thinking, Philanthropy, and are key areas that will be addressed. The academy currently provides its services to 35 young minority male students ranging from the 2nd thru 6th grade from Wake County. The program is open to young men from surrounding counties. The academy will use innovative programs and curriculums to challenge the young men and to raise their academic achievements. To improve the students' comprehension and writing skills, the Hip Hop Educational Literacy Program (H.E.L.P.) is a literacy program that uses Hip-Hop music lyrics to capture and hold the attentions of students. The program meets all the standards of the National Education Association. To improve critical thinking, self-esteem, and cognitive skills, the academy will form the Sankofa Chess Club. The club will serve as the foundation for the students to learn and compete at the game of chess. Studies have shown that chess increases student achievement and thinking skills. The club will work towards participating in local and statewide chess tournaments. The Dare To Be King Mentoring program will be used to help the young men deal with violence and other emotional issues affecting them. The mentoring program will serve as an anti-gang, anti-gun, and anti-violence prevention tool. The Self-Esteem Through Culture Leads to Academic Excellence (SETCLAE) curriculum will be used to teach the boys the positive aspects of their cultural heritage and simultaneously increase their self-esteem and their desire to excel.

This to me is a staggering amount of people unaccounted for. If you find it hard to be majority of missing people receive little or no media coverage. The public at large di what sells newspapers and why we tune into the nightly news.
I rarely watch the news. Or I should say, that I don't tune in on a regular basis. I scan which stories look interesting enough to read. Nothing has given me more pleasure than your presence in my life. I can honestly say that you are without a doubt, the most amazing part of this journey called my life. I have learned that every moment spent with you, watching you and listening to you, are counted blessings. That every bit of knowledge gained from this interaction is on purpose, an arming if you will, for your problems’ solution ….down the road a bit….a certainty…for sure. National Council On Educating Black Children In the late 1960’s and early 1970’s, education in the United States focused on the “disadvantaged” and everyone worried about why “Johnny” could not read. From this framework, the idea emerged that urban Black and poor children could not learn and that their schools were in shambles. However, the late Dr. Ron Edmonds, then Professor of Education at Harvard University, found in his urban school visitations that some schools were effectively educating Black and poor children. During these visits, he ascertained that these successful schools shared certain similar characteristics. These characteristics became a set of five correlates that Dr. Edmonds believed to be necessary for a school to effectively educate African-American students. He insisted that these characteristics or principles of successful schools should be adopted and implemented by staff in all schools at all grade levels. Dr. Edmonds’ five correlates require schools to implement the following strategies: 1) Have a principal who is a strong instructional leader; 2) Provide a safe community-like climate conducive for learning; 3) Be staffed with professionals who have high expectations for all students; 4) Provide a curriculum that relates to the experiences of the learners; and 5) Maintain constant evaluation with remediation for mastery of content. The National Council on Educating Black Children has based its "Blueprint for Action" on the research pioneered by the late Dr. Ron Edmonds. This "Blueprint for Action" embraces Edmond's concept that "all children can learn" and provides a framework for collaborative community partnerships with public school districts to solve problems and accelerate achievement for all children, Black children in particular.

SOUTHERN HOSPITALITY - Sharon Fox Greetings Friends! It's SPRINGTIME again!!! A time of renewal and awareness. There have been so many terrible things happening in our country recently. The economy has been in trouble for quite some time, people are losing jobs, and violent crimes like abductions, rape, and armed robbery have really been on the rise. I was speaking to a friend a few weeks ago and he shared with me some tips from a police officer in his community. These tips may prevent YOU from becoming a victim of a terrible crime! I'd like to share them with you. 1. Your elbow is the strongest point on your body. Use it... if you're ever close enough to an attacker! 2. If a robber asks for your wallet, toss it away from you. Chances are, he's more interested in the wallet than he is in you. When he goes for it, RUN in the other direction! 3. If you are ever thrown in the trunk of a car,kick out the tail light, stick your arm out the hole and start waving like crazy!! The driver won't see you, but everyone else will!!! This has saved many lives!! 4. Women have a tendency to get into their cars (after shopping, eating, working, etc.) and just sit there doing their check book, making a list, fixing make up or whatever. DON'T DO THIS! This is the perfect opportunity for a preditor to catch you off guard and attack! When you get in your car, LOCK THE DOORS AND LEAVE! 5. A popular tactic that criminals are using now is THE WATER SCAM! if you wake up in the night to hear your tap water outside running full force DO NOT GO OUT TO INVESTIGATE! Criminals have been known to turn the water on outside so that you will come out and then they attack! Be alert, keep safe, and look out for your neighbors! 6. And finally, THE CRYING BABY SCAM... Criminals have played a recording on the doorsteps of women at home alone at night. Almost every woman will heed a crying baby! When they go out to see what's going on, the crime begins! Be aware!! All crimes can't be prevented, but most of them can be if we are only aware of our surroundings. Take note of these tips and share them with your friends, family, and neighbors! CARROT SALAD 4 carrots - shredded 1 red bell pepper 2-4 scallions - chopped 1/2 brunch Italian flat leaf parsley olive oil and lemon - or your favorite vinaigrette Peel and then shred your carrots with a peeler. Seed your red pepper and slice it thinly. Chop your scallions and your parsley. Combine all and toss with 2-4 tbls of olive oil and a squeeze of lemon or your favorite vinaigrette. Mound in plates. The crunchy sweet texture of the carrots is a nice change from the lettuce base of most salads. The carrots pair well with any meat - the mellow sweetness does well with fish and chicken. While it's earthiness stands up to lamb, beef and pork.
SEAFOOD SOUP 10 1/2 oz. mixed seafood 3/4 cup veggie stock 2 tomatoes, diced Small red onion, chopped Half juice and zest of 1 lemon 2 tsp fish sauce 1 tsp parsley Dash of saffron Dash of cayenne pepper 1 pre-packed puff pastry Bit of milk or beaten egg for pastry glazing (optional) Put a saucepan on a low heat and add the seafood, tomatoes and onion. Cook for about 5 minutes. Pour in the stock, followed by the rest of the ingredients. Leave to simmer for about 20 minutes, stirring occasionally. Meanwhile, preheat the oven to 350 degrees. Cut your pastry into squares. Glaze with milk or some beaten egg and bake for 15 minutes. Divide the seafood soup into two bowls and sit the pastry pieces on top. 29
GINGER-SESAME SALMON 4 onion slices, sliced thin 2 carrots, shredded or julienned 1 pound salmon fillet (to 1 1/2 lbs) 2 teaspoons fresh grated ginger 2 tablespoons seasoned rice vinegar 2 teaspoons dark sesame oil Center onion and carrot on foil sheet. Top with salmon fillet. In small bowl, combine ginger, rice vinegar and sesame oil. Pour over salmon. Season with salt and pepper. Wrap and seal foil to form a packet. Cook covered, 20 to 25 minutes on medium-hot grill or until fish flakes easily with a fork. Baking instructions: Preheat oven to 450 degrees; bake for 16 to 20 minutes on a cookie sheet. Serve salmon topped with onion and carrots on a bed of spinach. Sprinkle with additional seasoned rice vinegar, if desired LAMB CHOPS AU POIVRE 1 teaspoon whole black peppercorns 3 (3/4- to 1inch-thick) rib lamb chops (1 lb total), bones frenched if desired and fat trimmed *You may use pork chops or steaks if you don't like lamb! 1 tablespoon vegetable oil 1 medium shallot, finely chopped 1/2 cup chicken broth 1 tablespoon Cognac or balsamic vinegar 1 teaspoon unsalted butter Coarsely crush peppercorns with a mortar and pestle or wrap in a kitchen towel and press on peppercorns with bottom of a heavy skillet. Pat chops dry and season with salt. Rub one side of each chop with peppercorns, pressing peppercorns into meat to adhere. Heat oil in a 12-inch heavy skillet over moderately high heat until hot but not smoking, then cook chops, peppered sides up, 2 minutes. Turn chops over with tongs and cook, pressing down on each chop with side of tongs to help pepper adhere to meat, about 2 minutes more (for medium-rare). Transfer chops with tongs to a plate and let stand while making sauce. Pour off all but 2 teaspoons of fat from skillet if necessary, then sautĂŠ shallot, stirring, until golden brown, about 30 seconds. Add broth and Cognac and boil until reduced to about 1/4 cup, 302 to 3 minutes. Remove skillet from heat and swirl in butter. Add any meat juices that have accumulated on plate and season with salt. Serve sauce over lamb.
SPECTACULAR ORANGE CHEESECAKE Crust Ingredients: 1 1/4 cups graham cracker crumbs 3 tablespoons sugar 4 tablespoons butter Filling Ingredients: 3 packages (24 ounces) cream cheese, softened 1 1/4 cups sugar 2 tablespoons corn starch 4 eggs 8 ounces sour cream 1 tablespoon vanilla 2 egg yolks 1 tablespoon orange extract 1 tablespoon orange zest 3 drops red food coloring 12 drops yellow food coloring To prepare crust, combine graham cracker crumbs and sugar in a bowl. Melt butter and stir thoroughly into crumb mixture. Lightly grease a 9-inch springform pan with butter. Press crumbs into bottom of the springform pan, working them up the sides if desired (the bottom of a 1-cup measuring cup works well for this). Bake crust at 325 degrees for 8-10 minutes. Cool completely. Begin making the cheesecake filling by placing softened cream cheese into a large bowl. Mix sugar and corn starch in a bowl and then add to cream cheese; stir until smooth. (You can also use an electric mixer on the lowest speed, but doing so will add extra air into the cheesecake and increase the chance of cracking during baking.) Crack 4 eggs into a bowl; add eggs one at a time to the filling mixture and stir, scaping down the sides after adding each egg. Mix in sour cream. Place two cups of cream cheese mixture into a second bowl. In the original bowl, stir in vanilla and set aside. In the second bowl, add 2 egg yolks, orange extract, orange zest, and the food colorings, and stir. Using a 1-cup measure, pour mixtures into the center of the springform pan by alternating white and orange filling. (To create a "perfect" swirl, pour batter directly into the middle of the pan. Each additional pouring will form a new circle inside the last.) If desired: When finished pouring fillings into the pan, very slightly swirl the top of the cake with a knife to achieve a gentle marbling effect. Place into preheated oven (325 degrees) and bake for 80-90 minutes or until almost set. Sides should be set with a slight rippling effect at the center of the cake (the cake will completely set as it cools and is refrigerated). Remove from oven and place on a cooling rack. After about 30-60 minutes you can remove the outside of the springform; you may need to run a knife around the edge of the cheese31cake to loosen the sides before removing the springform. After cooled, place uncovered cheesecake in the refrigerator for 6 hours or overnight before serving. Slice into 12-16 slices.

Monthly Tasty Treat - by Pat Holmes GINGERBREAD WITH WARM BUTTER SAUCE ½ Cup butter 1 Cup sugar 2 eggs ½ Cup molasses 2 Cups flour 1 tsp. baking soda ½ tsp. Cinnamon ½ tsp. nutmeg ½ tsp. ground allspice 1 tsp. Ginger ¼ tsp. salt 1 Cup buttermilk Preheat oven 350. Prepare baking pan 13x9 or a little smaller. Cream together the butter and sugar. Add the eggs, one at a time, beating after each. Add the molasses and mix well. In a separate bowl, sift together the flour, baking soda, spices and salt. Gradually add to the creamed mixture, alternating with the buttermilk, until everything is combines. Bake 35-45 minutes until tested with toothpick that comes out clean. BUTTER SAUCE 1 Cup butter ½ Cup cream 1 tsp. Vanilla 1 Cup plus 1 Tablespoons of sugar Cook the butter, cream and sugar until clear. Stir in the vanilla. Pour 40 over Gingerbread.

We may not be able to understand why things are the way that they life, but He never said that it would be. However, we must remember that God will handle the situation that you're dealing with, He already knew that you could. Trus that God has done this to us and that we can't handle it, but I 'm a living witness tha He wants you to be in, but He never left you even when you were going through.
