Emergency services, critical infrastructure plan for an onslaught of eclipse visitors On the heels of a July 11 meeting about the upcoming Aug. 21 solar eclipse to discuss the potential problems that the expected influx of visitors will bring, Tillamook County Emergency Management director Gordon McCraw gave an update to members of the Pacific City-Nestucca Valley Chamber of Commerce during that group’s most recent meeting on Aug. 1. He detailed accommodations planned by several community resources, noting that Sheldon Oil will increase their deliveries and top off all tanks. As well, he said Nestucca Rural Fire Protection District will staff their station from 8 a.m.-4 p.m. all week-

end and Tillamook Regional Medical Center will have their clinic open from Thursday through Tuesday and will bring down an extra staff member, giving them the ability to give the same service their urgent care facility provides — minus the ability to do x-rays. The hospital will maintain its normal staffing levels and, as previously reported, will not schedule any elective surgeries or appointments during the eclipse. He also added that Tillamook County Sheriff Andy Long has volunteered to work in Pacific City as operation lead for law enforcement during the eclipse.

BARN HUNT champion Buster struck gold in Carson City, Nevada during a barn hunt competition July 7-11. Buster, who belongs to Barbara Brown, owner of Monkey Business 101 in Cloverdale, competed in 10 competitions during the five day event and earned the highest cumulative score overall. He earned his gold title in Crazy 8s – a competition in which the dog must find eight tubes with a live rat in each tube, which are hidden in a hay obstacle course, in only two minutes. His gold title makes him the only dog in Oregon to have both a silver and a gold title in Barn Hunt Crazy 8 competition. Out of 1,756 mixed breed dogs in the United States who compete in barn hunts, Buster is in the top six in the nation in Crazy 8 competition.

ALMOST ONE HUNDRED runners and walkers competed in the 8th annual Pacific City Beach Challenge July 30, a fundraiser for Nestucca Valley Early Learning Center. The event, which was held on the beach at Cape Kiwanda, tested the competitors abilities on both soft and packed sand during a 5K, 10K and kids half mile run. The top three male finishers in the 5K race were Leon Dean (above) from Urbana, Illinois with a time of 23:14:4; Alister Fenix, from Portland, Oregon, finished in 28:34.2; and Tim Brown from Portland, Oregon ended with a time of 30:42.3. The top three females in the 5K were Erin Moen, from Portland, Oregon, in 29:40.0; Rebecca Oakeson, Lebanon, Oregon, in 30:50.0; and Ella Norby, Portland, Oregon, in 31:11.9. Top male finishers in the 10K were Joe Wilkinson (below), from Neskowin, Oregon in 50:03.6; Martin Thorstensson from Saint Peter, Minnesota in 51:01.0; and James Kimball, Albany, Oregon, 51:23.4. Nestucca Bay Creamery enters the realm of small-scale cheese making By TIM HIRSCH of the Sun Most everyone has a dream. But how many get to live it? For years, Cloverdale dairy farmers Rob and Amy Seymour have dreamed about starting their own small cheese factory. But it was just a dream until this June when they began marketing their first batches of home-grown cheese to area farmer’s markets. While the couple’s business, Nestucca Bay Creamery, may be a new venture for the couple, cheese, butter and ice cream making is definitely not. Amy’s grandparents worked in cheese factories, her great-grandmother made her own butter and cottage cheese and Rob’s grandfather made ice cream commercially. Dairy farmers for more than 30 years, Rob and Amy began the journey of cheese making in earnest about three years ago when they remodeled an old wooden barn into a functioning milking parlor and erected an adjacent building for the cheese-making equipment. Since then, they purchased equipment for the venture from cheese makers that had closed down and have hired two cheesemakers. Now working as full-time cheesemakers for Nestucca Bay Creamery are experienced cheesemaker Eric Schmid, who hails from Wisconsin, and Serene Zwissig, a recent graduate from Oregon State University’s Food Science program where she worked at the OSU cheese making facility. Schmid specializes in hard cheeses such as cheddar, gouda, and Havarti while Zwissig’s focus is on soft cheese like camembert and quark. “We’re making all sorts of (cheese),” said Amy. “We’re really experimenting a lot to see what our milk is good at being made into because different cheeses. You want high fat milk, which is what we have, for certain types of cheese. And other kinds of cheese you want low-fat milk. We’re figuring out what our milk is good being made into and what we are good at making.” “Camembert is something I really wanted to make — and feta — so we followed through with that. I didn’t want to make cheddar simply because I thought Tillamook had that covered. But we are making some just because we want to do fresh curds.” Cheese making starts in their milking

parlor where they milk eight cows at a time and 16 to 24 each day, depending on how big a batch of cheese they’re making that day. The milk is then turned to cheese via either their 150-gallon vat pasteurizer that enables the creamery to both pasteurize the milk and make cheese in the same vat or by a small 12-gallon vat that they use for smaller batches and for trial runs. The creamery also boasts a small aging room. Thus far, they have been making 40- to 80-gallon batches, which translates into 40- to 80-pounds of cheese a day— each pound of milk creates about one pound of cheese. Amy said that one thing she feels sets her cheese apart is the cows. They carefully selected their 24 “cheese” cows from their main dairy herd of 280, looking for cows that produce the most fat-rich and protein-rich milk. As well, she said

that the fact that their cows are mostly grass fed at this time of year also makes a difference. “We milk test, and we can see the fat and protein that each cow is producing,” explained Amy. “Our whole herd is high in fat and protein, but we picked out especially high ones (for the cheese making).” The cheese is currently being marketed at farmer’s markets throughout the county, one per a weekend. Amy plans on being at the Tillamook Farmer’s Market on Aug. 5. As well, they are developing a retail center in Cloverdale where they bought the old Shell Game building. Currently, they plan on debuting the retail center in September, which will likely be open a couple of days a week. While cheese is their focus, Amy said she also plans to make ice cream and, eventually, butter. T

here’s a new game in town to tempt your taste buds when you’re looking for something to fill your belly and satisfy your hunger cravings. Thanks to Beach Wok, which opened in July, Pacific City now has Asian-inspired cuisine to add to its list of dining options. Run by the husband-and-wife team of Timm and Tammy Lakey, the venture marks the third restaurant the couple has owned during their 22 years of marriage. Previously they have owned an American-style food establishment, and, more recently, a Mexican restaurant in Hood River. Longtime visitors to Pacific City, the couple bought a home here four years ago and have lived here full-time for the last two years. The menu owes a partial credit to Tammy’s mom, who is Vietnamese. Timm said it was thanks to her that he learned to cook Asian food. Though all menu items have been met with rave reviews, the restaurant’s ribs and chicken wings are amongst the most popular. “Timm’s wings are kind of known,” said Tammy. “They were buffalo that were known, but we wanted to put an Asian spin on it. Our ribs are fall-off-thebone Vietnamese style ribs.” Other popular items include the restaurant’s Thai Curry, its noodles and their barbecue pork fried rice. The restaurant’s menu is also sensitive to those with special dietary needs. Whether a diner is vegan or has a food allergy, the Lakeys have made an effort

to offer alternatives for those that need them. There are several gluten free items on the menu and potential food allergens are pointed out. “If you have dietary needs, you shouldn’t have to suffer,” said Tammy. “You should have choices, and it should taste good.” Ditto for those who don’t want their meal with veggies or rice. “Hold the pickles, hold the lettuce. Special orders don’t upset us,” said Timm. And though the 40-seat restaurant does have a small kitchen, the Lakeys say they’re doing their best to maximize its use. “We tried to make as big of a menu as we possibly could with as many healthy items as we could with the limitation (of the small kitchen) we have,” said Tammy. “I’m really happy with what we’re doing. It’s all white meat, it’s wild shrimp, it’s flanked steak, lean fresh vegetables cut daily, vegetable stock and coconut milk versus water. It’s all really good ingredients.” While the fresh food is what’s bringing people in, it’s not the only thing that’s noteworthy. The atmosphere and décor, too, are worth mentioning. Of particular interest is the trim that highlights the restaurant. During the two-month remodel of the building, the couple purchased wood from an old dock at Nestucca Adventures and repurposed it for trim around the windows and photo frames. owboat Gallery in downtown Pacific City will be hosting a special exhibit that surveys five decades of print making and drawing by Robert A. Nelson. The artist will be feted at an opening reception on Saturday, Aug. 5, 5-8 p.m. The public is welcome. Nelson’s detailed lithographs and colored pencil and gauche drawings are billed as intense, immersive graphic narratives, full of mythic drama and the ironic juxtaposition of animal and human protagonists and villains, often aided by oddly ingenious mechanical accessories. Born in 1925, Nelson has drawn on rich and varied life experiences —serving in the US Air Force, working as a herdsman, meatpacking plant tour guide, cartographer and book illustrator, and culminating in a long teaching career. As a teacher, his influence has been profound and far-reaching. He

The Pig ‘N Ford races feature racers in stripped down Model Ts, who have to do three laps around the arena, each time with a pig weighing up to 50 pounds in their arms while they crank start the car and drive a lap around the track. After each lap, the contestants must turn off the car, grab a different pig, crank the car and do another lap, all without letting the pig loose. Horsemen will be vying for a total of $77,000 in purse money during the four days of pari-mutuel horse racing. Jockey’s will also be competing for bonus money from the Oregon Racing Commmission for competing in the race meet. The Demolition Derby, hosted by Havoc Productions, marks its 17th year at the Tillamook County Fair. This event is billed as fun for the whole family, though earplugs for the smaller children might be a good idea. The Courtyard Stage is the “hub” of the fair and offers multiple entertainment options including TCF Talent Show, The Birdsong Family, Oregon Coast Dance Center, Alex Zerb, Jeff Martin, The Maniac, a magician, a hypnotist, and Brad’s World of Reptiles. Admission prices for adults (12 and over) are $10 per day or $30 for a season pass; Children’s tickets (ages 6-11) and seniors 62 and older get in for $6 a day. Parking is $5 a day for public parking and $10 for premium parking; a season pass is available for $15. A

t this year’s Tillamook County Fair, set for Aug. 9-12, one of the most popular events is the Pig ‘N Ford races. The Averill Arena is always filled to capacity for the race. The race has been featured in many national publications, including the front page of the Wall Street Journal in 2014. The origins of this unique tradition depends on who you talk to, but the gist of the origin is as follows. JA Bell and a friend were driving in an old Ford Model T truck down Latimer Road back when it was still a gravel road and saw a pig running along the road. They thought it belonged to a neighbor, Rusty Bell. They grabbed the pig, tossed it in the truck and drove back to the owner. Later, enjoying a drink, probably bourbon, they talked about catching that pig, thought it was a funny process and would make a great race. Drivers of Model T’s in the Pig ‘N Ford races belong to the “Model T Pig ‘N Ford Association.” One must be part of the club to race. The Association has 35 members, 10 racing franchises and 10 cars. Membership is a lifetime affair. Cars and memberships are passed down through families or sold to close friends. Some of the first racing cars are still on the track today. Each vehicle began as a produc-

tion model, but in the 1940s the club decided to remove the bodies that were hard to maintain and obscured vision. What was left was a stripped down car with just wheels, frame, engine, gas tank and steering. The car is little more than a drive train and a buckboard seat. Drivers draw lots for heats and starting position. It is not safe for more than five cars to be on the track at one time. Five cars are lined up at the starting line of the horse-racing track. Drivers stand next to the grandstands. When the starter pistol fires, the drivers run to the opposite side of the cars and grab a 40- to 50-pound pig from the bin. They must hold the pig while hand-cranking their car. They need to hop aboard the car before it stalls, and drive it around the track with the squirming pig in their lap. They stop at the finish line, kill the engine, get off and retrieve a different pig from the bin. The first driver to complete three laps without losing a pig is the winner. The T’s can speed up to 50 mph, driving on narrow tires. They slip and catch in rutted tracks while clods of dirt fly in the driver’s face. The drivers wear goggles, but no helmet or seat belts. Sometimes the pigs get away and need to be chased. The pigs were greased in the early days of the race. The crowd loves it when the pig escapes. This event has been entertaining fair-goers for more than 90 years.
