Step into the restaurant and you will see the architectural influences representing the elements of a sugar plantation. Peruse the award-winning menu and the tantalizing dishes, which highlight the unique flavors of Maui, will jump out at you. With over 90% of fish, beef and produce sourced locally, the flavors of Ko- are as authentic as they are sustainable. Ko- has been repeatedly recognized across the island for its unique and exceptional preparations of seafood, beef, lamb and pork, earning the restaurant the distinction of best Hawaiian Regional Cuisine, Restaurant of the Year, Wine Spectator Award as well as a Lifetime Achievement Award for Executive Chef Tylun Pang. “I went to Maui to stay a week and remained five. I never spent so pleasant a month before, or bade any place goodbye so regretfully. I have not once thought of business, or care or human toil or trouble or sorrow or weariness, and the memory of it will remain with me always.” — Mark Twain

Luaus

ENTERTAINMENT MAUI STYLE By Karee Carlucci

A typical Hawaiian celebration is the lu‘au feast. For the out-sider,

it means a grand hula production with dinner. Did you know that the word lu‘au means to be filled full, but also refers to the tender green leaf of the taro plant? These leaves were used as cooking vessels. ‘Aha‘aina was the original Hawaiian word for feast, which literally means “a gathering of the land.” At one time, the people of Hawai‘i had to find an excuse not to hold a lu¯‘au. Just mentioning it would start everyone gathering the needs for a successful feast.

Wailele Polynesian Luau at The Westin Maui Resort & Spa The Wailele Polynesian Lu‘au at The Westin Maui Resort & Spa is held outdoors alongside the legendary Ka’anapali Beach with a stunning oceanfront backdrop. The dinner show utilizes the elements of earth, fire and water to reflect the rich Polynesian culture through superb performances with vibrant costumes. The newly-revitalized Aloha Pavilion with cascading waterfalls, tropical gardens and tiki torches presents the perfect setting for guests to embark on an exciting journey to the Polynesian Islands where dance was considered not just as a form of entertainment, but as means of telling stories. Highlights iclude the story of Pele, Goddess of Fire and a new performance dedicated to Wailele (meaning waterfalls). The show also features dances from Hawaii, Fiji, Tahiti, New Zealand and Samoa. The breath taking finale is none other than Maui’s only extreme fire-knife dance performance. Enjoy a superb Hawaiian meal served buffet style with tradition- al selections for an authentic experience. The three hour experience includes a free flow of drinks all evening with Mai Tais, signature cocktails, local beers, sodas and fruit juices. Scheduled Tuesday, Thursday and Sunday evenings, additional shows are presented during summer and holiday seasons. Visit westinmaui.com for show dates and details. For reservations, call the resort at 808-661-2992 or stop at the concierge desks at The Westin Maui Resort & Spa or The Westin Ka’anapali Ocean Resort Villas. (see page 39)

From the mountain would come a pua‘a (pig) which was baked in the ground. From the ocean limu (seaweed) was gathered; it was believed to release someone from wrongdoing. And from the cultivated land would come kalo (taro) root pounded into poi and ti leaves to cover a table (or mat) to elicit protection. But the essential ingredient for a truly successful lu‘au is sharing Aloha. Visitors to these islands soon find that the feast accompanied by music and dance is one of the best ways to celebrate Hawai‘i.

The Feast at Lele at 505 Front Street, Lahaina The Feast at Lele, an elegant pageant of Polynesia, is nestled in an intimate beachfront patio in South Lahaina. Executive Chef Adrian Aina combines fine dining with exciting Polynesian entertainment at The Feast at Lele. Set in an intimate garden setting, private tables are terraced around a raised beachfront platform. As the sun sinks, silhouetting Lana‘i island across the Auau channel, an outrigger canoe paddled by Hawaiian warriors is welcomed ashore with the blowing of the conch. A seamless presentation ensues as the dancers take diners on a tour of Hawai’i, Aotearoa (New Zealand), Tahiti and Samoa. As Polynesia is explored, corresponding cuisine is brought to the table. While the New Zealand Maori frighten their foes with their famous tattooed faces and haka (war dance); a 5 Hour Island Scented Braised Beef in Kiwi Jus and Sauteed Sweet Potato and Mushrooms are served, along with a 3rd seasonal Chef special. And when the sweet romance of Tahiti is presented with the exciting hip movements and regal feathered headdresses, there is Grilled Ginger Chicken with a Tahitian Lime Aoili and Mango Relish and Poisson Cru, along with a 3rd seasonal Chef special. The five-course Polynesian feast orchestrated by Executive Chef Aina will satiate any appetite and please the gourmet palette immensely.“Island grown fruits and vegetables, many from our own organic farm, are incorporated into traditional Polynesian fare,” Chef Aina said. “Complete with tableside service, this is a ‘foodie’s’ luau.” A burst of fire signals the grand finale, a stunning exhibition of Samoan fire knife dancing. tepping onto the property at Hawaii Sea Spirits Organic Farm and Craft Distillery, you are serenaded by rustling sugar cane and panoramic views of both the north and south shores of Maui. A friendly tour guide invites you into the fields, sharing information about the farming of organic sugar cane while walking through more than thirty species of cane including a rare collection of Native Polynesian varietals. From seed to finished spirit, your tour passes the sixty-foot twin distillation columns and continues inside the Craft Distillery. Hear about the complete process of manufacturing alcohol from distillation to blending, then bottling and distribution. And finish the tour with a savored sampling of Ocean Vodka and Deep Island Hawaiian Rum at our Sampling Bar. True to the company’s organic and sustainable commitment, Hawaii Sea Spirits Organic Farm and Craft Distillery educates guests on the importance of organic farming for the conservation of land and ocean, green manufacturing, and the production of spirits. Crafting Ocean Vodka is a family effort and a true labor of love. Three generations of the Smith family have grown up on the beautiful island of Maui. They started Hawaii Sea Spirits, LLC (makers of Ocean Vodka) with the intention of building a business on Maui that presented an agriculturally based, non-perishable consumer product. The business would support the local community, sell product around the world, and be enjoyed by the extensive and ever-growing tourism base. Ten years later, Ocean Vodka is marketed and sold in 37 states and 2 provinces in Canada, expanding throughout North America, South America and Asia. Ocean Vodka has been the exclusive vodka on Hawaiian Airlines since 2007 and is the bestselling spirit from Hawai’i. Ocean Vodka is certified USDA Organic, gluten-free and the only vodka in the world made from organic sugar cane and deep ocean mineral water, sourced from a depth of 3,000 feet off the Kona Coast of the Island of Hawai’i. The Hawaii Sea Spirits Organic Farm and Craft Distillery shares the dream with you. Situated on 80-acres of the breathtaking Mount Haleakala slopes, the home of Ocean Vodka is easily reached from Maui’s international Kahului Airport as well as the island’s world-famous resorts. The Organic Farm and Craft Distillery are open for tours throughout the day, seven days a week. T

he Westin Kā‘anapali Ocean Resort Villas’ newest restaurant, Auntie’s Kitchen, celebrates the melting pot of flavors and cuisine that make up Hawai‘i’s local culinary culture. Auntie’s Kitchen opened in October 2016 and replaced Ocean Pool Bar and Grill in the same venue poolside off of the resort’s south lobby. Under the leadership of Chef Brian Murphy, the ambiance at Auntie’s Kitchen is made to feel as if you’re visiting a friend’s or relative’s house down the street. Auntie’s Kitchen supports local farmers and strives to be as sustainable as possible. “With Auntie’s Kitchen, we aim to deliver a food and beverage experience that highlights the best that local Maui cuisine has to offer in a setting that is relaxed, approachable and evokes a sense of comforting familiarity and a welcoming ‘ohana,” said Brandon Maeda, director of food and beverage at The Westin Kā‘anapali Ocean Resort Villas. “We are committed to serving quality food and drink prepared with care and the best ingredients,” he continues. Some of the herbs are even sourced from the resort’s very own onsite aquaponics garden that’s maintained by Napili-Flo Farms. The result of the collaboration is a menu that reflects an authentic island experience.

Auntie’s Kitchen serves breakfast, lunch and dinner daily. For breakfast, guests can choose either the daily “Breakfast Table” buffet option or dishes off the menu, including Haupia French Toast with Homemade Coconut Jam, Banana Bread Waffle and Auntie’s Fried Rice. Inspired by local favorites, popular lunch and dinner items include ‘Ahi Poke Bowls, Local Plate Lunches, and Uncle’s Prime Rib, served daily after 5 p.m. On Wednesdays, Auntie’s Kitchen hosts Crabfest, all-you-can-eat crab legs, with sides and a limited entrée menu. N

orth of the landmark Pu‘u Keka‘a and around the necklace of bays of Chief Pi‘ilani (Na Hono-a-pi‘ilani) is Kapalua Resort. In old Hawai‘i, the area was identified by the names of its principal bays, Honokahua and Honolua, which saw the comings and goings of voyaging canoes and fleets of war canoes. In the 1890s, one of Maui’s first missionary sons inherited this land and purchased thousands of acres more to found what would become one of Hawai‘i’s largest corporations, Alexander & Baldwin. As the pineapple crops flourished, Baldwin’s Honolua Ranch grew, importing laborers from Asia and the Azores and building homes in camps, a company store and offices. Some buildings can still be seen around the resort today, including the landmark Honolua Store, built in 1929, which is still in operation. Perhaps Kapalua Resort’s most significant legacy is that of environmental conservation. When the resort was conceived in the late 1970s, owners Maui Land & Pineapple Company instituted conservation programs for a majority of their priceless landholdings: Honolua Bay and Mokulē‘ia Bay were designated a Marine Life Conservation District. On the mountainside, the Pu‘u Kukui Watershed Preserve is the largest privately owned nature preserve in the state and home to plant and animal species that exist nowhere else in the world. Through the centuries, Ka-‘anapali has been revered in legend and is an attractive landscape of natural beauty. This area, which encompasses Hanakao‘o (Canoe) Beach at the south end to Kahekili (Keka‘a) Beach in the north, has always beckoned people to explore long stretches of golden sand, cultivate fertile plains, and wonder at the peaks of Mauna Kahalawai. In ancient times Ka-‘anapali (then known as Keka‘a) was the site of a thriving fishing village, lush fields of taro, warrior training grounds and a fierce battle between two royal brothers. The resort area was steeped in legends, such as the feats of Maui, the demi-god and Pueo, the guardian owl. The lore from a 15th century high chief who ruled the community at Keka‘a and banished his mischievous son to the neighboring island of Lana‘i to tame its ghosts, to the feats of Kahekili, the Thunderer, a chief who excelled in the sport of cliff diving and was fearless. In modern times, before the development of Hawai‘i’s first master-planned resort, the area boasted a horse race track, and railroad tracks that led to a pier for shipping sugar cane. The early years of Ka-‘anapali Resort saw the establishment of a convenient airstrip, which guided visitors in prop planes right to their hotel’s front desk.

On the Beach!

“farm to table cuisine with the best view in town”

F

arm to Table is not a new concept, however it is something society has gotten away from and is something we are finally seeing a return to. People have always grown their own food and bought or traded from nearby farmers. They did this knowing the food they put on their plates and into their bodies was fresh, local, and for the most part, organic. This same food can be in transit for weeks now. With the rise of the Industrial Revolution, refrigeration and the general populous moving into more urbanized areas, food is now being transported thousands of miles and is no longer picked from the farm and served within a day or so. This has a huge impact on Hawaii. Bringing quality locally sourced ingredients back to the table proves challenging at times, conversely Pacific’O thrives on doing just that. Ocean front on a white sandy beach in Lahaina, Pacific’O was the first restaurant on Maui to endeavor operating its own farm, O’o Farm, with exclusive use for the restaurant. Our Chef is continuously inspired; poised to make original and exotic dishes, not only delicious, but nutritious. Nutrients and flavor dissipate quickly. So the longer the

time between harvest and your fork, the more quality is lost. It’s not uncommon to have our produced delivered the day it is harvested and on your plate within hours. At O’o Farm we offer guided foot tours of our orchards and gardens, through rows of beets, heirloom carrots, radishes, pole beans, coffee trees etc… In addition to educating our guests on these tours, we often invite them to help gather or harvest our fresh produce and incorporate it into our gourmet lunch. It’s not uncommon for the aromas of our Maui grown coffee beans being freshly roasted, to make their way across the farm. We are proud to showcase our new coffee roasting facility and are now offering a “seed to cup” tour as well. In addition to farm to table fare, Pacific’O has long held a reputation for having the freshest fish around. We maintain outstanding relationships with several sports fishing boats and daily the fisherman bring in their freshly caught Mahi Mahi, Ono, Opakapaka and the occasional 200lb Tuna, in through our front doors. There is never a shortage of exciting seasonably inspired dishes @ pacific’O. We’ll see you soon! (pages 52, 53) MENU-MAGAZINE.COM | MENU

“Hawai‘i’s first Constitution was adopted at Lahaina” 44

MENU | MENU-MAGAZINE.COM

W

by Karee Carlucci

hen the first Polynesian settlers arrived on Maui’s shores well over a thousand years ago, Lahaina offered them abundant freshwater streams, verdant valleys with fertile volcanic soil, a bountiful pristine sea and warm, sunny days. Steeped in a history which documents its progress from one era to another, Lahaina has retained a flavor of each to this day. Once the Hawaiians were settled in Lahaina they established Moku‘ula, the sacred island within a fishpond, which was a royal residence for ali‘i of Maui since the 16th century. After the decisive battle of ‘Iao Valley in 1790, which resulted in unifying the Hawaiian Islands, Kamehameha I made a political move to unite himself with the women of Maui’s royal line. It is with this marriage of powerful royal lines that Lahaina became the first Capital of the Kingdom of Hawai‘i. 1819 was a pivotal year for Lahaina and the Hawaiian Kingdom. Kamehameha the Great died and was succeeded by his son, Liholiho (Kamehameha II). The first whaling ships as well as the first French warship visited Lahaina, marking a sea change in the traditions of old Hawai‘i. By 1823, Christian missionaries arrived in Lahaina, and Keopuolani (Kamehameha I’s sacred first wife) became an early convert. Kauikeaouli (Kamehameha III) succeeded to the throne as a child and was left under the care of Regent Ka‘ahumanu (Kamehameha the Great’s second wife). The first half of the 19th century is filled with “firsts” for Hawai‘i: the peak of the whaling industry impacted Lahaina; a cornerstone was laid for the first church; Lahainaluna Mission School opened; and the first printing press was started there. Hawai‘i’s first Constitution was adopted at Lahaina and a legislative session was held in 1840. But by 1845, the Royal Court left Lahaina and moved the capital to Honolulu. In 1873, Sheriff Smith planted Lahaina’s Banyan Tree, now the largest in the US. And in 1877, the first telephone and telegraph lines in all of Hawai‘i were installed on Maui. The 20th century rooted the plantation era in Hawai‘i. In 1901, Pioneer Hotel opened and remained Lahaina’s only hotel until the early 1960s. By the 1950s, family-owned fish markets, stores and noodle shops were thriving, supplying plantation workers and visitors alike. As Hawai‘i became the 50th State, Hollywood became fascinated with Lahaina and several movies and TV shows were filmed in town. Celebrity musicians, film and TV stars are still f requently attracted to Lahaina today.

Kobe Japanese Steak House & Oku’s Sushi Bar

FEATURE STORY

Happy 30th Birthday!

T

here are a number of types of Japanese restaurants and Maui's KOBE JAPANESE STEAK HOUSE in Lahaina, has been voted #1 Japanese Restaurant by Maui News Readers and is now celebrating their 30th anniversary. Located just off Front Street, the teppanyaki-style steakhouse is an anchor Maui treasure. ROD GARDINER originally started Kobe on Maui in 1986 and MARTHA HALEAKALA came on board as his office manager in October of 1993. Martha bought KOBE JAPANESE STEAK HOUSE from Rod in 2002 and has enjoyed running this fabulous and entertaining restaurant for for 13 years now! Martha's Head Chef Felamor Simon, has been with Kobe since 2002 and has been a teppan chef for 34 years now. Martha's second chef, Silver Agbayani started working with her bussing tables while in high school and has worked his way up to # 2 teppan chef. Perseverance furthers! Many of her employees, Eileen Hirouji, Richard Acosta, Manuel Sanchez, Scot Nakamura, Guadalupe Ilar have been with Kobe for over 20 years. Guada has been with Kobe since Day One! Oku of Oku's Sushi Bar moved to Maui's Kobe in 1996 after having worked for Rod in the Waikiki Kobe for many years. He prides himself in having the freshest fish for your sushi and sashimi dishes! Teppan means “steel grill” and yaki means “grilled” simply making it “grilling on a grill”. In 1945 a restaurant in Japan first introduced the show concept which was as much about the performance skills of the chefs with their fast, clinking, shiny, and very sharp knives and their sense of humor as it was about food. It soon became very popular with the visitors to Japan as an entertaining Japanese dining experience. Teppanyaki-style or “Japanese steakhouses" as they came to be popularly known came to the United States in 1964 with the first opening in New York. “Japanese steakhouses” really took off after a well known food critic with the New York Tribune gave it a rave review. It became the place to go to see and be seen for all the celebreties of the time. Kobe Japanese Steak House in Lahaina continues with the tradition to place an emphasis on the talents of the chef performing a show for the diners, continuing to introduce new variations and tricks. Besides being

master chefs, each Teppanyaki Chef is an entertainer. Each Chef has his own table-side manner and unique sense of humor making every trip an experience. The talented chef might juggle utensils, flip a shrimp tail into his/her shirt pocket, catch an egg in their hat, toss an egg up in the air and split it with a spatula or flip flattened shrimp pieces into the diners' mouths. The Kobe Japanese Steak House & Oku's Sushi Bar has nineteen teppans or grills, with ten downstairs and nine in the upstairs dining room as well as the great Oku’s Sushi Bar. There is a full Island cocktail bar featuring many great specialty drinks. These include saké (in English) which in Japanese, saké or o-saké refers to alcoholic drinks in general. The Japanese term for this specific rice wine, which is brewed more like beer than wine, is Nihonshu, meaning “Japanese saké”. At Kobe Japanese Steak House & Oku's Sushi Bar, though the entertainment factor is high, the quality of their food is just as important. You can start with the Spicy Tuna Roll and the Shrimp Tempura Roll from the sushi bar followed by the Nova Scotia Scallop Appetizer and Shabu-Shabu soup. One choice for your main course is the firm-fleshed cold water lobster and steak combo which can be upgraded to the tender aged beef filet. You can opt for the regular white rice or garlic fried rice. The fresh shrimp is delicious and entertaining and the tail provided our chef an extra prop to flip around and finally end up on his head hidden in his chef’s hat or toque. Hopefully he found it later that night. I shared the teppan (grill) with a friendly local Japanese family. They said they had been to Kobe Japanese Steak House before on a karaoke night with the always entertaining Toddy Lilikoi, Friday and Saturday evenings from 9:30 pm until closing. If you have secretly always wanted to be a singer or a Rock Star, Karaoke is a form of interactive entertainment in which amateur singers sing along with recorded music using a microphone. The music is typically a wellknown pop song minus the lead vocal with lyrics displayed on a video screen. It is loads of fun to participate or even just watch. If you have not experienced it you should do it at least once and your vacation is as good a time as any. (see pages 50 & 51)

KOBE JAPANESE STEAK HOUSE AND OKU’S SUSHI BAR

Located in Lahaina, Kobe Japanese Steak House and Oku’s Sushi Bar remain one of the best fun filled evenings around. Teppanyaki means grill cooking in Japanese and at Kobe, it means the type of dining where you receive service with fun as your meal is prepared. Enter and see tables of people who have just met chatting and Teppan Yaki chefs cutting and cooking table side with the occasional flambé adding to the festive atmosphere. In addition to the fine tender aged beef, succulent shrimp and lobster, Kobe also has Fish Combos and healthy Tofu dinners. Uncle Oku’s fabulous sushi creations can either be savored at the Teppan Table or at the sunken sushi bar. Sushi Chef Oku prides himself on having the most fresh and highest quality seafood available.

FEATURE STORY

O

n the misty northwest slope of Haleakala, in the Upcountry farming community of Kula, lies O‘o Farm’s eight acres of sustainably maintained and naturally cultivated land. Owners Louis Coulombe and Stephan Bel-Robert, surfing buddies turned successful restaurateurs, started the farm in 2000 to supply quality local produce for their restaurants, and deliver a true farm-to-table experience. The two partners own Pacific’O Restaurant, Feast at Lele, and two ‘Aina Gourmet Markets, all located on Maui’s west side.

A decade ago, Louis’ passion for coffee compelled him to attend a school in Portland operated by Sherri Johns, head judge of the Alliance of Coffee Excellence’s annual competition, who is considered a coffee guru. Armed with a wealth of knowledge, Louis returned to Maui determined to create a farm-to-table experience with coffee.

In 2008, partners dispatched O’o Farm’s manager to the neighboring island of Moloka‘i to purchase 1,000 coffee trees. It was a great deal since the trees were a bit past their prime, but they had only a forty percent success rate with them. Their first challenge was weed mitigation. Once that was under control, the trees began to shrivel and die from sun exposure. The solution was to plant artichokes, which grew quickly, and provided desperately needed shade, and begin a seedling operation to produce healthy young coffee trees with good root stock. By 2014, both of the farm’s hillsides were filled with coffee trees. That same year, they also completed construction of an on-site coffee roastery, and launched a coffee tour.

58

MENU | MENU-MAGAZINE.COM

In 2015, O‘o Farm’s coffee production had progressed far enough to enter the Hawai‘i Coffee Association’s Annual Statewide Cupping Competition. Although their coffee didn’t place, it was gratifying to have produced enough “good” coffee to actually enter. But what a difference a year can make. In the 2016 Cupping Competition, O‘o Farm Coffee placed third in Maui County, and tenth in the entire state!

All of O’o Farm’s coffee “cherries” are hand picked, and go through a multi-step of depulping, drying, milling and roasting process. O’o Farm’s ‘Aina Gourmet Coffee comes in four varieties: Red Catuai, Yellow Caturra, Mokka, and Typica. It’s available for purchase at their restaurants and markets, plus online. O‘o Farm’s Estate Coffee is a specialty blend of primarily Red Catuai, with hints of Yellow Caturra, Red Bourbon, Typica, and Maragogipe, also knows as “elephant bean.” It’s currently available for purchase only at the farm.

What makes O‘o Farm’s Coffees unique is the roasting process. They really take an artisan approach, using sight, smell, and a clock. The details of every roast are documented on a large chalkboard. Every cup of coffee served at their restaurants and markets, as well as on their tours, has been roasted at O’o Farm. (ad page 61)

O‘o Farm offers its breakfast and coffee tour Monday through Friday from 8:30 to 11:30am. The tour includes a gourmet breakfast prepared on site by farm chef Daniel Eskelsen. Reservations are required: (808) 667-4341. For more info: www.oofarm.com.

Udderly Delicious Delicacies

Say

“CHEESE”!

Looking for a new twist in their lives, the Kafsacks decided 18 years ago to move to Hawaii and practice the art of gourmet cheese production, a far cry from their previous occupations of leading a software company or teaching high school German. While Thomas went to work on the financial planning, while Eva set out to learn the craft and secrets of cheese-making from Europe’s best dairies; interning at and visiting dairies throughout Germany, Austria, and France allowed her to develop a mental image of the type of dairy that she wanted to run and the type of cheeses they wanted to produce. An image that the two of them made a reality over the past 15 years. The Surfing Goat Dairy makes fresh Chevre and the flavors run the gamut from “Udderly Delicious” (plain) to exotic varieties like

When on Maui, visit our Surfing DAILY Goat Dairy, and experience fun like no where else!! Pet, feed, herd and even milk one of our sweet goats! “Mandalay” (apple bananas and curry) and Perigord (black truffle shavings from Perigord). The Dairy also produces several soft cheeses, including ones ripened in wax, in olive oil with different spices, along with salt water brine-ripened feta cheese. The Kafsacks started out selling their cheeses at local farmers markets, but their products were soon picked up by a variety of retail locations, varying from wine stores to delis to locally owned grocery stores. Quickly thereafter, many of Maui’s gourmet restaurants voiced interest in using the Surfing Goat Dairy cheese on their menus. It can now be found crumbled on salads, on pizzas, stuffed inside ravioli, or simply making an appearance on a dessert cheese platter in almost every restaurant and hotel on Maui along with several locations on the other islands as well as on the mainland. In the last few years they have added “Oh My”... goat Cheese Truffles to their product line, and they are the only commercial facility making these in the Nation. At first the Kafsacks found that milking their goats only once a day was more than adequate to cover the demand for their cheeses, however as word spread it became apparent that after the next dry period they would have to switch to milking their does at night, as well as in the morning. Over the last few years they have selected several kids to keep to expand their herd by a significant amount. Their herd currently consists of a conglomeration of Saanens, Alpines and La Manchas. Although the herd has grown over the years, each goat still has their own name and the milking staff know them all. They were also the first Certified Humane farm in the state of Hawaii.

long Maui’s northeastern coast, caressed by the trade winds, two acres of historic ruins and lush tropical gardens rise dramatically against a Hawaiian sky. The Haiku Sugar Mill, also known as Pua Le‘a (“blossoming passion” in Hawaiian), blends the stunning natural beauty of Hawaii with the Old World elegance of Europe. In 1858, when the Haiku Sugar Company was chartered, construction began on the Mill. Upon completion three years later in 1861, the Mill processed its very first crop using the leading edge technology of the time: a steam engine to grind the cane. This marked the beginning of nearly 20 years of successful sugar cane production in Haiku. In 1879, after years as a hub of sugar production, the Mill was abandoned, left for over a century to gently decay into ruin. The vines and lush vegetation grew and covered the thick stone walls, turning the Mill into the beautiful structure we see today. 20 years ago an immense restoration effort to revive the true spirit of the Mill began. They transformed the abandoned ruins from a decrepit sugar factory into the blossoming hidden treasure it is today and renamed it the simpler, more poetic “Haiku Mill”.

Old Mill Entrance Haiku Mill has launched its all-new Mango Lilikoi Preserve in partnership with Maui Preserved, handcrafted to perfection using mangos and lilikoi grown on property. Available only at Haiku Mill, individually or in packages, this delicious preserve comes in 2oz and 8 oz jars. Contact Haiku Mill to purchase.

At the Kihei Memorial Beach is the historic Kihei Landing, where a 200 foot wharf, used for many years by interisland boats shipping freight and produce. Due to increases in sand accumulation, it became impossible for the larger sea vessels to reach the wharf and the usage stopped around 1915. As early as the 1800’s, before the southern slopes of Haleakala- became farm and ranch land, the southern coast of Maui is said to have been lush rainforest, with coconut and Kou trees, taro and ‘ape. There were clear water pools found at the end of freshwater streams. The continued deforestation, erosion and atmospheric changes in rainfall averaging only 13 inches annual, led to the dry landscapes of Kihei, Wailea and Makena. Kama‘ole I, II and III Beaches are great picnic areas. You can still see remnants of concrete bunkers, left when the beaches and land parcels on the coastline were confiscated by the government during WWII for military training exercises. Charley Young Beach, also known as The Cove, was named after a military reporter named Charley Young who purchased the property in the Kama‘ole area just before WWII. The “Cove” is a favorite spot for novice surfers and when tide is out, it is wonderfully shallow for kids and adults! The original Kihei Boat ramp was located here but closed in 1983 and moved a bit further down the road. The beaches of Ma‘a‘laea, Kihei, Wailea and Makena became mock "enemy beachheads", complete with demolition and reconnaissance. South of the Kihei Boat Ramp, Keawekapu Beach begins. You will find some great snorkeling here and is famous for its manmade reef installed 400 feet offshore in 1962. At Makena Beach, also known as “Big Beach” is a few miles south of Kihei and Wailea and boasts one of the best beaches on Maui. Known for it's white sand and lack of developement, the waters are pristine. Watch out for the shore break as it can be quite dangerous! Never turn your back on the ocean. MENU-MAGAZINE.COM | MENU

FEATURE STORY

Three’s Bar & Grill

“3 Chefs. 3 Cuisines. 1 Great Restaurant.”

W

hat do Kula strawberries, Kumamoto oysters and Kalua pig have in common? They’re all on the menu at Three’s Bar & Grill in Kihei!

“We’re proud to have something for everyone at Three’s,” explains chef/co-owner Jaron Blosser. “We’ve got an epic breakfast that’s offered late on weekends, lunch options that even include a raw bar, two award-winning happy hours, and a diverse dinner with plenty to choose from!” Blosser and his two best friends, Travis Morrin and Cody Christopher, started Three’s in Kihei’s Kalama Village in 2010, along with an event catering company. Surfing brought them together as friends, and continues to unite them to this day. They tout three different types of cuisine — Hawaiian, Southwestern and Pacific Rim — in three unique spaces; a roomy Surf Lounge with four television screens, intimate dining area and outdoor patio space, where live music plays from open till close. “The vibe at Three’s is fun! That’s what we’re known for,” says chef/ co-owner Cody Christopher, who handcrafted the new wooden bar in their recently-expanded Surf Lounge. “We welcome families and groups, and just want people to come together, relax and enjoy some top-quality food at reasonable prices!” Speaking of that top-quality food, chefs utilize as many local ingredients as possible, from produce to meat to fish. Three’s has racked up honors such as Best Happy Hour and Best Pupus on

Maui, and the restaurant captured national attention in July 2017 on Food Network’s Diners, Drive-Ins & Dives. “We were so excited to welcome Guy Fieri and the crew into our restaurant ‘ohana,” says Travis Morrin, who worked in the kitchen as host Fieri observed. “It was amazing to share some of Three’s longtime favorites, like the Traditional Ramen, Beer Can Chicken and Bacon Wok-fried Brussel Sprouts, with a national audience!” Three’s is grateful for its dedicated team of employees, who helped in the rebuilding process after a kitchen fire almost destroyed the restaurant in October 2016. Three’s Catering is also going strong, providing fresh food at an array of events, shows and weddings, along with meals on Pacific Whale Foundation boats. You may also notice Three’s food truck serving up customers around Maui! The restaurant features some perks you don’t find elsewhere, like breakfast served until 2 p.m. on weekends, freshly-shucked oysters and sushi available at 11:30 a.m. daily, and double happy hours every day of the week from 3 to 6 p.m., then again between 9 and 10 p.m. Three’s even hosts comedy nights, live piano and jazz, along with salsa dancing on a weekly basis! “Whether you feel like enjoying some great music, tipping back a few drinks or savoring some great food, just know that quality is our priority,” Blosser says, “and having a great experience with your loved ones is what really matters!” (see ad page 69)

beauty body health from body maintenance and services, to pampering yourself at the spa, let the following pages guide you to your new favorites.

T

he Spa Industry is a wellness movement that does not only educate and enlighten the consumer, but also carefully cradles the balance between ancient and modern healing therapies. In earlier years, the Spa Industry’s focus was about returning to the basics; simple relaxation, and completely letting go. More recently, a noticeable shift in the spa lifestyle has developed, where spa goers want the ability to choose authentic experiences unique to the spa location, and want customized spa treatments that have been perfectly designed to tell a story. These original customized treatments enable you be a part of that story, while honoring the host culture at the same time. Spas on Maui have respectfully replicated treatments local to Hawaii, with products that use popular local ingredients such as alaea clay, raw volcanic salt, virgin coconut oils, and island flower extracts. Most spas on Maui utilize and promote eco-friendly ingredients with real benefits, and exercise genuine ancient practices that will leave you more enlightened coming out than when you went in. Multiple spas on Maui give Spa goers the flexibility to customize treatments to their needs at the time of the appointment, and are given a way to re-create these experiences in their everyday lives. Other spas offer experiences with advanced relaxation technology, used to enhance your spa journey with a sophisticated, futuristic spin. Some of these luxury advances include color therapy tubs, where colored lights illuminate your therapeutic bath for total relaxation, and rainbow rain showers, where soothing water jets glowing with gentle light can go from a gentle rain-like spray, to a vigorous downpour. No matter what experience you choose, Maui Spas offer an escape from the stresses of reality, and giving us the ability to infuse wellness in our lives by focusing on creating a “Spa Haven” in our own space. Spa living allows us to bridge the gap between our at home care, and our next spa visit. Photography by Rachel Olsson Photography Compliments of Fairmont Kea Lani's Willow Stream Spa

Spa Helani Spa Helani, a Heavenly Spa by WestinTM Introduces the Nanea Ritual and Nanea Aromatherapy Oil Blend With a lapping stone water feature in the lobby, natural earth tones, subtle décor, gentle music and cool, soft, white linens on a plush treatment bed, Spa Helani, a Heavenly Spa by WestinTM greets guests into a tranquil setting made for ultimate renewal. To engage all five of the physical senses, as well as the psychological senses of emotion and meaning, Spa Helani has introduced the Nanea Ritual that incorporates a new, custom organic aromatherapy Nanea Oil made with a special combination of three native Hawaiian botanicals that grow in the cool, upcountry mists on the slopes of Maui’s Haleakala- and Hawai‘i Island’s Mauna Loa. Nanea means “state of relaxation in Hawaiian” and the new oil blend was created exclusively for the new Nanea Ritual by Hana Nai‘a Aromatherapy in celebration of the resort’s sister property, The Westin Nanea Ocean Villas, which recently opened next door on April 15. The Nanea Oil base is organic jojoba oil and Royal Hawaiian Sandalwood that is found on Hawai‘i Island and nowhere else in the world. The fragrant, harmonic base notes are grounding, centering, soothing and relaxing. Subtle essences of Hawaiian Gardenia and Hawaiian Tuberose that are sweet, uplifting, and purifying, influence the emotions and inspire compassion and creativity.

The 80-minute Nanea Ritual begins with a customary casting away of negative energies using a ti leaf to clear the space. Guests will be able to customize the Nanea Oil by adding in their choice of gardenia and tuberose florals. The customized aromatherapy oil is then massaged onto the body with a rhythmic pattern using heated Lava Shells®. The smooth, warm surface of the shells with this special Nanea oil blend will melt tension, calm restlessness and allow guests to achieve deep relaxation. The 80-minute Nanea Ritual is also available as a couples massage and is offered in one of Spa Helani’s beautiful, 13 treatment rooms at The Westin Ka-‘anapali Ocean Resort Villas. Spa Helani offers a full range of spa and beauty services, steam rooms, separate indoor relaxation lounges for men and women, as well as two outdoor treatment cabanas, a shared relaxation lounge and an outdoor lanai setting. For more information, call 808-662-2644.

MAUI HEALTH

New Technology for Non-Invasive Healing Compliments of Dr. Ian Cholewa

”ONDAMED® is the most advanced sports injury technology in the 21st century“ Ondamed was invented in Schwanau, Germany by Rolf Binder, electronic engineer. The technology is the result of 25 years of research in biophysical medical testing and therapy that resulted in the development of several well known and sophisticated therapeutic devices. On the basis of this experience, Rolf Binder discovered how to interrogate the body’s communication systems and introduce signals that stimulate the natural healing process. Medical professionals worldwide have been using Ondamed with remarkable success for over a decade. Over 50 years, scientists and engineers have developed various techniques for “looking” inside the body to diagnose disease and trauma. Examples include X-rays, CT scans, MRI, Ultrasound, etc. Likewise treatments are provided by the energy from lasers, the Gamma Knife and so on. Pulsed Electromagnetic Fields (PEMF) are yet another non-invasive breakthrough treatment modality. Ondamed combines PEMF with biofeedback system to enable the practitioner to relieve pain, improve cell function and circulation, and promote relaxation. Ondamed is based on the principle of electromagnetic induction. The device produces a highly focused pulsed electromagnetic field that penetrates deep into the target region of the body to painlessly stimulate tissues and “jump-start” cellular activities.

The Ondamed system complements other treatments such as pharmaceuticals, homeopathic medicines, nutritional supplements and other therapeutic modalities; patients respond faster and the effects are longer lasting. A unique feature of Ondamed is to enable the practitioner to monitor patients’ responses to a wide variety of subtle electromagnetic fields introduced through a neck applicator, and select which frequencies or frequency programs are most appropriate. These signals are then introduced with a hand-held applicator and/or larger matrix applicator. A typical treatment lasts about 30 minutes. Patients consistently report leaving a session feeling less pain, more relaxed and refreshed, able to think more clearly and better prepared for life’s challenges. MENU-MAGAZINE.COM | MENU
