Having grown up in Hawaii I have observed many changes from dining to shopping and everything else. Lū‘au

A typical Hawaiian celebration is the Lū‘au feast. For the out-sider, it means a grand hula production with dinner. Did you know that the word Lū‘au refers to the tender green leaf of the taro plant? Ti leaves were used as cooking vessels.

‘Aha‘aina was the original Hawaiian word for feast. ‘aha is gathering place or meeting place, and ‘aina is meal- so the literal translation is meal gathering.

From the mountain would come a pua‘a (pig) which was steam-baked in the ground.

From the ocean i‘a (fish) was gathered; fish provided 90% of the Hawaiian‘s protein diet. And from the cultivated land would come kalo (taro) root pounded into poi and ti leaves to cover a table (or mat) to elicit protection.

But the essential ingredient for a truly successful Lū‘au is sharing Aloha. Visitors to these islands soon find that the feast accompanied by music and dance is one of the best ways to celebrate Hawai‘i.

Kapalua to Lāhainā

North of the landmark Pu‘u Keka‘a and around the necklace of bays of Chief Pi‘ilani (Na Hono-a-pi‘ilani) is Kapalua Resort. In old Hawai‘i, the area was identified by the names of its principal bays, Honokahua and Honolua, which saw the comings and goings of voyaging canoes and fleets of war canoes. In the 1890s, one of Maui’s first missionary sons inherited this land and purchased thousands of acres more to found what would become one of Hawai‘i’s largest corporations, Alexander & Baldwin. As the pineapple crops flourished, Baldwin’s Honolua Ranch grew, importing laborers from Asia and the Azores and building homes in camps, a company store and offices. Some buildings can still be seen around the resort today, including the landmark Honolua Store, built in 1929, which is still in operation. Perhaps Kapalua Resort’s most significant legacy is that of environmental conservation. When the resort was conceived in the late 1970s, owners Maui Land & Pineapple Company instituted conservation programs for a majority of their priceless landholdings: Honolua Bay and Mokul‘ia Bay were designated a Marine Life Conservation District. On the mountainside, the Pu‘u Kukui Watershed Preserve is the largest privately owned nature preserve in the state and home to plant and animal species that exist nowhere else in the world.

T hrough the centuries, Ka - ‘anapali has been revered in legend and is an attractive landscape of natural beauty. This area, which encompasses Hanakao‘o (Canoe) Beach at the south end to Kahekili (Keka‘a) Beach in the north, has always beckoned people to explore long stretches of golden sand, cultivate fertile plains, and wonder at the peaks of Mauna Kahalawai. In ancient times Ka - ‘anapali (then known as Keka‘a) was the site of a thriving fishing village, lush fields of taro, warrior training grounds and a fierce battle between two royal brothers. The resort area was steeped in legends, such as the feats of Maui, the demi-god and Pueo, the guardian owl. The lore from a 15th century high chief who ruled the community at Keka‘a and banished his mischievous son to the neighboring island of Lana‘i to tame its ghosts, to the feats of Kahekili, the Thunderer, a chief who excelled in the sport of cliff diving and was fearless. In modern times, before the development of Hawai‘i’s first master-planned resort, the area boasted a horse race track, and railroad tracks that led to a pier for shipping sugar cane. The early years of Ka - ‘anapali Resort saw the establishment of a convenient airstrip, which guided visitors in prop planes right to their hotel’s front desk.

TEMPURA BATTER/ TOFU/ WONTON STRIPS

1 Egg , beaten

1 Cup ice cold water

1 Cup sifted all purpose flour

-Stir egg into water. Use chopsticks or whisk to gently mix flour into liquid. Cut firm or extra firm tofu block in half lenghtwise and them each half into 6 pieces. Dip tofu into batter. Fry until golden brown in canola oil at 345 degree oil. Then slice wonton skins into thin strips and fry until golden brown in same oil. Season tofu and wonton strips with salt and pepper.

PEANUT DRESSING

1/4 Cup peanut butter

1/2 Cup rice vinegar

1/4 Cup brown sugar

1/4 Cup lime juice

1 Tsp ginger root, minced

1/2 Tsp garlic, minced

1/4 Cup honey

1/2 Cup tamari or shoyu

1/2 Tsp sambal or chili paste

4 Ea mint leaves

1 Tsp kosher salt 1 tbs sesame oil

-Put all dressing ingredients in blender on medium speed. Once combined, add 1 ½ Cup peanut or canola oil and emulsify. You can add more peanut butter if too thin or water is too thick. ASSEMBLY:

Toss noodles, cabbage, cilantro, carrots, peanut dressing and chopped peanuts and place in middle of plate. Squeeze peanut dressing around base of the plate arrange cucumber, ginger furikake, wonton strips and tofu on top of noodles. Enjoy!

When the first Polynesian settlers arrived on Maui’s shores well over a thousand years ago, Lāhainā offered them abundant freshwater streams, verdant valleys with fertile volcanic soil, a bountiful pristine sea and warm, sunny days. Steeped in a history which documents its progress from one era to another, Lāhainā has retained a flavor of each to this day. Once the Hawaiians were settled in Lāhainā they established Moku‘ula, the sacred island within a fishpond, which was a royal residence for ali‘i of Maui since the 16th century. After the decisive battle of ‘Iao Valley in 1790, which resulted in unifying the Hawaiian Islands, Kamehameha I made a political move to unite himself with the women of Maui’s royal line. It is with this marriage of powerful royal lines that Lāhainā became the first Capital of the Kingdom of Hawai‘i.

The first half of the 19th century is filled with “firsts” for Hawai‘i: the peak of the whaling industry impacted Lāhainā; a cornerstone was laid for the first church; Lahainaluna Mission School opened; and the first printing press was started there. Hawai‘i’s first Constitution was adopted at Lāhainā and a legislative session was held in 1840. But by 1845, the Royal Court left Lāhainā and moved the capital to Honolulu.

In 1873, Sheriff Smith planted Lāhainā's Banyan Tree, now the largest in the US. And in 1877, the first telephone and telegraph lines in all of Hawai‘i were installed on Maui. The 20th century rooted the plantation era in Hawai‘i. In 1901, Pioneer Hotel opened and remained Lahaina’s only hotel until the early 1960s. By the 1950s, family-owned fish markets, stores and noodle shops were thriving, supplying plantation workers and visitors alike. As Hawai‘i became the 50th State, Hollywood became fascinated with Lāhainā and several movies and TV shows were filmed in town. Celebrity musicians, film and TV stars were frequently attracted to Lāhainā. Our prayers go out to those who lost family members and homes and hope they are starting to recover. Lāhainā holds a special place in our hearts.

Central Maui wailuku • kahului • pai‘a

WAILUKU means “Destroying Water” in the Hawaiian language. Kamehameha was victorious in the battle at ‘Īao Valley which ultimately led to the unifying of the Hawaiian Islands. Located in the foothills of the West Maui Mountains Wailuku is one of the oldest towns on Maui and is the County Seat. The town has a number of interesting shops and excellent restaurants. Hiking up to the‘Īao Needle is a great way to view one of Maui’s natural landmarks, the ‘ĪaoNeedle, while enjoying some of Maui’s gorgeous scenery! The ‘Īao Theatre opened in 1928 and is the only surviving historic theatre on Maui.

Kahului is home to the Kahului Harbor, Queen Ka’ahumanu Shopping Center and the Kahului Airport. It is the largest community on Maui with many retail shops and restaurantss, one of Maui's largest shopping centers and the now closed Puunene Sugar Mill.

Pā'ia is located close to many internationally known windsurfing and surfing spots including Ho’okipa and Spreckelsville.

In the late 1800's Alexander and Baldwin established Pā'ia Plantation which brought in workers from all over the world. In 1930 a fire destroyed most of the town but was rebuilt and thrived until the town had to be rebuit again after a tsunami destroyed much of it in the 1940's. It is now thriving as a retail and dining town located on the Hana Highway as you head to Hana.

Haleakala - , “House of the Sun”, is a dormant volcano and the tallest peak is 10,023 feet. Haleakala - holds a sacred place in Hawaiian history and became part of the Hawaii National Park in 1916, branching into it's own park in 1961. The Hawaiian people sought the isolation of Haleakala for ceremonial purposes, instruction and personal reasons.

There is a wide spectrum of native island ecosystems which is protected and preserved by the national park system. The park includes Kipahulu Valley on the south east and Ohe‘o Gulch. There are two main trails leading into Haleakala - : Sliding Sands Trail and Halemau‘u Trail. The last time Haleakala erupted was over 200 years ago. It is still dormant.

Along with their honey, they also have fresh produce you can purchase at their Health Food Store right off of Kula highway in upcountry Maui. If you are curious about where this delicious honey comes from, the “Bee Museum” provides a closer look at the bees hard at work behind a glass wall looking into two hives while learning about the inner workings of the hive! If you could not get enough from the museum, a Bee tour is the way to go!

Istarted my Alpaca journey four years ago and was still determining what I was in for. My idea was to get one alpaca, but I quickly learned that you need to start with three or more since alpacas are herd animals. I was hooked once I discovered that alpacas are used for their fleece and fiber. I learned to process their fiber, spin on a wheel, and knit! Oh, what fun! I now have thirteen Alpacas. I added Angora rabbits to my herd once I found their fur the softest I have ever felt.

The journey has expanded into farm tours, picnics, and classes with the Alpacas and Angora rabbits. Animals bring people such joy, and the good old days of making things by hand seem to be in full swing right now. We offer daily tours that require reservations.

Kihei to Wailea

Most of south Maui’s history lies along its coastline. From the shores of Ma‘alaea Bay to the beaches of Makena are heard past echoes of Hawaiian fishing villages, busy harbors, sugar plantations, WWII military exercises and cattle ranching. Captain George Vancouver set anchor in Ma‘alaea in 1793 and is best known for his numerous, but unsuccessful attempts to bring peace between Kings Kamehameha of Hawai‘i and Ka‘hekili of Maui.

On the way to Kihei, is the Kealia National Wildlife Refuge boardwalk on North Kihei road, Hwy. 310. Large sea turtles use the area to cross the road to the pond to lay their eggs.

At the Kihei Memorial Beach is the historic Kihei Landing, where a 200 foot wharf, used for many years by interisland boats shipping freight and produce. Due to increases in sand accumulation, it became impossible for the larger sea vessels to reach the wharf and the usage stopped around 1915.

As early as the 1800’s, before the southern slopes of Haleakala - became farm and ranch land, the southern coast of Maui is said to have been lush rainforest, with coconut and Kou trees, taro and ‘ape. There were clear water pools found at the end of freshwater streams. The continued deforestation, erosion and atmospheric changes in rainfall averaging only 13 inches annual, led to the dry landscapes of Kihei, Wailea and Makena.

Kama‘ole I, II and III Beaches are great picnic areas. You can still see remnants of concrete bunkers, left when the beaches and land parcels on the coastline were confiscated by the government during WWII for military training exercises.

Charley Young Beach, also known as The Cove, was named after a military reporter named Charley Young who purchased the property in the Kama‘ole area just before WWII. The “Cove” is a favorite spot for novice surfers and when tide is out, it is wonderfully shallow for kids and adults! The original Kihei Boat ramp was located here but closed in 1983 and moved a bit further down the road.

The beaches of Ma‘a‘laea, Kihei, Wailea and Makena became mock "enemy beachheads", complete with demolition and reconnaissance. South of the Kihei Boat Ramp, Keawekapu Beach begins. You will find some great snorkeling here and is famous for its manmade reef installed 400 feet offshore in 1962. At Makena Beach, also known as “Big Beach” is a few miles south of Kihei and Wailea and boasts one of the best beaches on Maui. Known for it's white sand and lack of developement, the waters are pristine. Watch out for the shore break as it can be quite dangerous! Never turn your back on the ocean.

Chef Johnny Arabatzis of Pita Paradise and Isana Brave Fish

Chef John and Christine Arabatzis grew up on Maui and opened their first restaurant, Pita Paradise, when they were just 23 and 24 years old! Having both grown up working in restaurants, their concept is providing a top quality, fresh and flavorful cuisine at a reasonable prices. Combining friendly staff and passionate cooking, this combination is the secret to their 25+ year success. Pita Paradise cuisine is a compellation from John’s Greek and Italian heritage, utilizing recipes handed down from generation to generation with new innovative dishes.

It all started with an 800 sq. ft. location hidden in the back of the Kihei Kalama Village. They built their restaurant clientele up slowly, winning over one customer at a time. Chef John purchased a small 24’ fishing boat shortly after opening pursuing his other passion of fishing. He started to provide the all the fresh fish for Pita Paradise Johnny had many friends that were local commercial fisherman and he learned the Hawaiian style techniques and trade secrets to deep sea fishing in Hawaii. He became an avid fisherman, catching various fish including Opaka paka , Onaga, Lehi, and many other types of deep sea bottom fish. He also trolls for a Big Eye Tuna, Mahi Mahi, Ono, Shutome, and Marlin. As he became more successful at fishing, he wanted to fish long range buoys and purchased a larger 34’ locally made Force marine boat that was better suited for the rough Maui Ocean. He often fishes though the Alenuihaha Chanel, which has extremely high wind and sea conditions, fishing on the way and on the Big Island. Word spread and customers loved to come in for the fresh Mediterranean food and especially enjoyed the owner caught fresh fish.

After decades of sushi’s mass-popularity, many diners are still unsure of how to eat it properly and what to do with those chopsticks. Here’s an informal guide to good chopsticks etiquette and sushi bar do’s-and-don’ts: While it’s not expected that all Westerners learn and remember all the rules to sushi dining etiquette, you should at least try.

At most establishments, wooden chopsticks (hashi) are presented. They come in one piece, and will need to be split in two. Once they have been broken, please do not start sharpening or rubbing them together - this implies that they are cheap and may insult the host. It’s best to lay them with their narrow, rounded tips in the hashi oki, a small ceramic block made for holding chopsticks, or put them in front of you on the placemat or dish with the tips pointing to the left. Lift plates with your hands and take food for yourself with the chopsticks, then set down or pass the plate. If you take food from a shared plate, use the reverse ends of your chopsticks to pick up food, rather than the ends which go in your mouth .

In Japan where the sushi is generally smaller in size, it is expected to be eaten in one bite. Here in America we tend to stuff sushi into super-size rolls, making it difficult to eat in one bite, so it’s acceptable to take more bites. Even though it’s tough for a novice to pick up some foods with chopsticks, it’s a no-no to stab your food with them, and an even bigger faux-pas to shovel rice in your mouth with the chopsticks attached to the edge of the bowl. And, don’t leave any rice after a meal, it’s considered especially rude.

So what about “disintegrating” sushi? Why does it start falling apart when you dip the rice-side into the shoyu (soy sauce), and on its way to your mouth you find dark flecks of rice littering the table and your clothing? It’s because of the rice dipping. The Japanese understand that the purpose of soy is not to flavor the rice, but the fish. Therefore, nigiri sushi should be dipped fish-side into the shoyu.

Good sushi should be savored slowly. It can be seductive in eyeappeal with its texture and colors, and should dissolve in your mouth in a sublime explosion of flavor. CHICKEN & GARLIC PENNE PASTA

INGREDIENTS:

Cooked PENNE Pasta 8 OZ

Garlic Cream Sauce 4 OZ

Chicken, diced 5 OZ

Sauteed Mushrooms To Taste

Parmesan Cheese 1 OZ.

Chopped Italian Parsley 1/4 OZ.

Garlic knot 1 Piece

GARLIC CREAM SAUCE:

2 TBSP Butter

2.5 TBSP Flour

1 Cup MILK

2 TBSP shredded Parmesan Cheese

2 TBSP Minced Garlic

Salt & Pepper to taste

Sweat onions over medium heat in a pot for 3-4 minutes. Add butter. When butter has melted, add garlic. Stir for another minute or two then add flour and cook over low-med heat until it smells lightly nutty (4-5 minutes). Gradually add milk while whisking to prevent clumping. Add parmesan cheese, stir and bring to a low boil, stirring constantly. Lower heat and simmer until thickened, but no flour texture. Remove from heat then blend until smooth.

METHOD:Place penne into strainer drop strainer into hot water for 1 minute. Pull strainer from water. Place 4 Oz cream sauce into a saute pan add chicken. Toss penne into saute pan with chicken and sauce. Place penne with chicken and sauce into a large white bowl. Sprinkle pasta with 1 TBSP parmesan cheese and ltsp chopped parsley.Place garlic knot on top of the plate as shown.

MOROCCAN HARIRA SOUP

Ingredients:

• 2 large fresh organic tomatoes, chopped

• 1 large onion, finely chopped • 2 stalks celery, diced

• 1/4 cup fresh cilantro, chopped • A pinch of saffron

• 1 tsp salt (or to taste) • 1/2 tsp black pepper

• 1/2 tsp ground ginger • 1/2 tsp cumin

• 1/2 tsp paprika • 3 diced cloves garlic

• 1 diced carrot

• 1/2 cup lentils (soaked for 30 minutes)

• 1/2 cup garbanzo beans (pre-cooked or canned)

• 1 tbsp cornstarch mixed with water (for thickening)

• 6 cups water or vegetable stock

Adjust ingredients to your taste.

Method:

Start by sauteeing the onion, carrots and celery with olive oil in a heavy-bottomed pot with a lid. Add a pinch of sea salt and cook on low heat for 5-10 minutes until soft. Add in garlic and spices then turn up the heat and cook for 3-5 more minutes until fragrant. Add the tomatoes, stock, lentils and allow to simmer before turning down the heat and covering. Allow it to cook for 45 minutes, stir occasionally, add water as needed. The soup is done when vegetables are cooked through and lentils are tender. Blend and return to pot and add garbanzo beans. Cook for another 10-15 minutes and serve. Garnish with cilantro and serve piping hot.

Hawaiian Pohole Ferns

Pohole ferns are edible species found in the rain forests of Hawaii, growing wild since ancient times, and were a favorite meal of the Piliwale sisters in the Hawaiian legend of Na-Piliwale. The ferns have an earthy, nutty, semi-sweet taste suited for fresh and cooked preparations. The ferns must be cleaned thoroughly before use and are typically trimmed and scrubbed to remove dirt and fuzz. Traditionally blanched for around 30 seconds prior to eating. Once blanched, the ferns can be incorporated into salads, chopped and mixed into side dishes, or tossed into a light vinaigrette for a delicate flavor. Many Hawaii recipes use Pohole ferns combined with shrimp, seaweed, onion, and tomatoes into a salad.

• 1 Lb pohole (ho`io)

• 1 Lb cherry tomatoes

• ½ small Maui onion, thinly sliced

• 4 green onions, chopped green only

• 1 ¼ tbsp fish sauce

• 1/2 cup shoyu

• 3 1/2 tbsp rice vinegar

• 3 tbsp sesame oil

• ¼ cup sugar

Prepare ice water bath.

Wash and remove any hairs from the pohole fern shoots. Cut shoots into 1 ½” segments and blanch for 1 minute in a pot of boiling water. Drain the Pohole in a colander and transfer them to the ice water bath.

Once cooled, drain the ferns and place in a bowl with the tomatoes, Maui onions, and green onions. In a small bowl, whisk together all other ingredients until the sugar is dissolved.

Pour mixture over the vegetables and toss gently. Cover the bowl with plastic wrap and refrigerate for several hours before serving.
