n 1981, The Melody Makers, a band comprised of Ziggy Marley and three of Bob Marley’s other children, performed at their father’s funeral. More than three decades later, Ziggy Marley is still making sweet music. And his message remains clear: love. Love for reggae, love for people, love for humanity. The prodigal son of a music god has me beat by two years, five kids and six Grammy Awards. Getting the chance to meet him in advance of his August 31 concert at the Del Mar racetrack was something of a religious experience for me, enhanced by the fact that my birthday is 4/20, I was wearing my Cheech and Chong shirt, and the sweet smell of what I assumed to be cannabis was wafting through the air as we talked. Not that I ever had before, but I certainly didn’t inhale that day and risk botching the interview. Or at least I didn’t exhale... the excitement had me holding my breath. If you’re a fan — of reggae, of Marley, of music — check out the interview (page 56), win one of the thousand tickets we’re giving away to see Ziggy Marley in concert (see page 55) and feel the love in this Music Issue of PacificSD. Rock on. Sincerely,

CORE A FULL-BODY WORKOUT ANYONE CAN STOMACH

By Lauryn Evarts / Photos by Sara Norris

H

ello, fellow fitness freaks. My name’s Lauryn Evarts. I’m the blogger behind lifestyle brand, The Skinny Confidential, a site about living a healthy, happy, balanced life. When PacificSD invited me to call out the workout of the month, my decision was easy — Core40 in Carmel Valley. I taught Pilates at Core40 before I started blogging, and I’m still addicted to these amazing workouts, which were designed to give your body that long, lean Victoria’s Secret model look. You can burn up to 300 calories in a 40minute session, and you leave feeling freaking amazing.

After two months of Core40, my legs are leaner and my arms are stronger. Plus, my posture is improved as a result of my back getting stronger. Engaging my core throughout the workout means my abs and entire midsection feel tighter, too. Take a water bottle and wear workout attire or anything comfortable that you can move in. You can do this workout in socks or barefoot. Either way, you’ll be working all of your muscles, so be ready to sweat. This workout is ideal for body transformation or just staying hot. It’s super fun, so take a friend along and have a blast getting in shape. Core40 12750 Carmel Country Rd., Carmel Valley, 858.956.9500 437 South Hwy 101, Ste. 201, Solana Beach, 858.956.9500 1202 Kettner Blvd., Little Italy 858.956.9500, core40.com (continued on page 48) REVERSE STANDING INNER THIGHS:

Doing any kind of leg exercise on a Pilates machine (versus on the floor) requires an additional degree of balance, which means the core muscles are working hard along with the legs.

Standing Inner Thighs: What I love about the Pilates machine is that it can be used to target specific body parts. This inner-thigh exercise strengthens muscles while boosting flexibility.

Elevator Lunge: Lunge plus balance equals burn. The deeper you go into the lunge, the more you work your legs, and the more your flexibility will improve.

Kneeling Torso Twist: Torso twists on the Pilates machine offer a full range of motion and a great way to work the obliques, creating a more defined midsection.

plank: Planks rock. They work the arms, legs and core at the same time.

ove over (and out of the mall), Tommy Bahama. Macy’s has an edgy new neighbor in Fashion Valley. U.K. retailer AllSaints set up shop this spring, opening the doors to its first standalone location in San Diego. From its raw hardwood floors and exposed brick to display tables made from old school heavy machinery, the London label’s industrialdesigned space (not to mention its clothing) is a far cry from Margaritaville. Founded in 1994, AllSaints sells clothing, accessories and footwear for men and women. Today, store manager Axel Lopez is styling a dude (Christian) to demonstrate how San Diego guys can look sharp in the summer sun while foregoing the beachy, board-shortsand-flip-flops look. “We try to incorporate things that a customer isn’t used to, like a boot as opposed to a flip-flop or a plain tennis shoe,” Lopez says. “Once they get into the clothing, they start to think, ‘I could wear this every day.’” (continued on page 52)

PACIFICSANDIEGO.COM / AUGUST 2 0 1 4

“I make music with a purpose and a message. Grammys is good, but that is not the accomplishment. The accomplishment would finally be people becoming aware of things, becoming conscious, loving, living.”

On a sunny afternoon in mid-July, between smoking what looked and smelled like joints on the back patio of his Beverly Hills office, Marley took a moment to discuss his life and career. As he spoke w ith a thick, Jamaican accent — about his music, his goals his father — the man exuded the love he preaches. And when the reggae legend began to strum his guitar and sing the title song from his new album, Fly Rasta, I got goose bumps… and felt high on life. As for whom Marley would like to get high with, I asked him that, too. PacificSD: How do you describe the music on your new album, Fly Rasta? ZIGGY MARLEY: Reggae music, future reggae music, new wave reggae music. I don’t know what you want to call it or how to describe it. Good music. What’s new about it? Nothing new about it — just that you put the things that have existed always... in a different way, in a different tone, a different frequency. But nothing is new, really, you know? But you can put it together so it sounds fresh, still. So, I think that’s the idea for trying the adventure, or something progressive, with what is my roots. I use my roots, but still it’s not tied or imprisoned to what it was in the past. It can evolve and develop itself. How do you feel about how the distribution of music has changed in recent years? Each generation, each time period, have their own way of getting music. Before records, it was something else, and now it’s something else. But it’s a natural thing; it’s natural for this to happen. As an independent artist, it’s important to have as much access to the people as I can, ’cause I don’t have the resources that a big record label does. This is good for independent artists, but not so good for big record companies. But I like it. Having won six Grammys, are there still things you wish to accomplish with your music, or goals you have for your musical career? I think, as a musician, that I make music with a purpose and a message. Grammys is good, but that is not the accomplishment. The accomplishment would finally be people becoming aware of things, becoming conscious, loving, living — you know, that is a real accomplishment there. That would be the biggest accomplishment. We try to do our part to achieve that. That would be the main goal. You’ve accomplished that to some degree, right? How does it make you feel to have done that? You reach the semi-finals, but that’s not enough. [laughs] You always want the finals, you know?

When you return to Beverly Hills from the Rastafari rock star lifestyle you live on the road, do you take your kids to soccer practice? [laughs] Yeah, me do all of that. I’m kinda very shy, so it’s something that actually I started doing more in the past few years. Usually, I’m very like… you know, like to be by myself and things like that. But it’s really a good experience — to forget yourself and expose yourself and see other people and see all the people exist, in general. It’s a great thing. So for me, to become a part of everyday life of the children is making me grow as a person. Getting out of my box, you know? Bob Marley is larger than life. Can you share a memory that shows how he was a real man and a father in addition to being a music legend? Yeah, sure. I can make you see the whole picture. One time… we were living in [Jamaica] at the time, and we were kids, so we used to play in the streets. All our friends were doing street playing, not play dates. [laughs] But it wasn’t all the time that it was appropriate, according to my father and my mother. So, one day, he told me not to run up and down in the streets. As soon as he left, I jumped the fence and went to run up and down in the streets. But he didn’t leave, he went to visit one of his friends. So, on his way back, I saw his car slowly coming, and I’m like, ‘Oh, no!’ And he looks at me and call me. ‘Go back home.’ So I go down and got a good spankin’. Discipline, you know? [laughs] When him give me a spankin’, he was down to earth. Before performing live in concert two days after being shot in 1976, your father said, “The people that are trying to make the world worse never take a day off, why should I?” Do you have a motto or live your life by a similar sentiment? ‘Love is my religion’ is my motto. How do you think your father would regard your career and the life you’ve led? I don’t know for sure, but I think I’ve done positive things, you know? As an artist, he would love my freedom, my own state of mind in terms of music. I’m not bound to anyone’s idea. In general, that is a good life, for a free-minded person. I think he would appreciate something like that. Is humanity on the right track? And if not, who can fix it? Well, I think humanity is on the right track. It’s politicians and leaders and religious authorities that’s not on the right track. I think human beings really want to live together. The problem is that lack of senior leaders who have the real wish of humanity as a part of what they’re doing. We, as human beings, we’re going the right way, but we are still being misled, and that affects the whole globe. We can do it. The human beings can do it, but we have to get together. We have to find that common goal. I hope one day, you know, enough of us can see — we are the majority. People that have love in their hearts are the majority. Let our will rule. Let we rule. Love is the majority. Hate is the minority. What’s the best thing about being Ziggy Marley? It’s the only thing I know. I’m just who I am, you know? That’s the best thing. [laughs] If you could smoke herb and have a conversation with anyone in the world, alive now or from any time in history, who would you choose? Yeshua [the Rastafari name for Jesus].

OVER THE BORDERLINE This country has zero control over immigration, which makes being in a war on terror even more threatening. This is not your typical media sensationalism. This one’s a real crisis. Living along the border, if it can really be called that anymore, San Diegans need to be aware of how the current illegal immigration crisis will impact life here, as well as on a national level. We are a country built on immigration, and we live in the greatest city on the planet, so it’s no wonder people are trying to get in. But even for people living in situations so dire that risking their lives to escape seems like the only option, crossing the border illegally is not a viable option. Simply put, the stress this mass influx puts on our system is crippling and unsustainable. Almost all people entering this county have good intentions — and who

could blame them for seeking a better life? — but there is a legal system in place that is supposed to govern this process. Those who believe this point of view should not be characterized as bigots, but realists. I believe in securing and enforcing current laws along our borders, especially during a time when conflict is gaining momentum in the Middle East. Declaring to the rest of the world you have an open border while being in a war on terror isn’t exactly comforting to those living in San Diego. The U.S. has shown the world that illegal immigrants can not only walk right in, but also expect support from the ACLU, which is trying to appropriate taxpayer dollars to pay for attorneys for the illegal immigrants. A group called the “American Civil Liberties Union,” pushing for something even U.S. citizens do not get, leaves you scratching your head.

A massive steel fence jetting out into the Pacific Ocean draws the official line between the United States and Mexico in Border Field State Park.

As empty-suit politicians bicker, and politics continue to trump policy, our leadership’s capacity for failure seems endless — one of the many reasons Congress now has a seven-percent approval rating. (By the way, who are these seven-percenters?) The illegal immigration crisis is putting a huge stress on our economy and the nation at large, and the problem will only get worse. A country without borders, laws, or language cannot call itself a country. While San Diego has experienced an influx of illegal immigrants, it’s ironic that the Sunshine State is also exporting human beings in the sense that high taxation is driving businesses and jobs out of California. We just lost Toyota to Texas, as Governor Rick Perry is running radio and TV ads luring more businesses to his state, but that’s a conversation for another day.

In the meantime, let’s celebrate living in a city so great people are dying just to get into, literally. DOWNTOWN 92101 Incredible 2-bedroom in the urban, concrete and steel Aperture building. Corner unit with floor-to-ceiling windows framing the majestic downtown city and San Diego Bay views. $649,900–$689,900 MARKET WATCH The downtown market continues to be strong as out-of-town buyers and speculating investors prop up activity throughout the ZIP code. Normal homebuyers and empty-nesters are still a vibrant part of the downtown buying population and, as the years continue, more Baby Boomers are choosing to live in urban areas. We predict a strong late-summer and fall, but with new construction still months and years out, downtown has restricted inventory. With the downtown restaurant and bar

scene continuing to grow, there has never been a better time for active residents to choose 92101. IN THE ‘HOOD Every Friday and Saturday, Bite San Diego holds a guided restaurant tour from downtown through Little Italy. Popular stops include Royal India, Berkeley Pizza, Napizza, Karl Strauss and Davanti Enoteca.

FROM WAFFLING TO SUCCESS — A SLICE OF LIFE FOR A BAKER/RESTAURATEUR/MOTHER ON THE RISE By David Nelson / Photos by Sara Norris

t 11 a.m., a few Snickerdoodles still lounged in the nearly empty display case, kept company by one remaining Morning Roll (the flaky cinnamon-raisin pastry didn’t last long), two sugary cream scones, a lonely English muffin and three chocolate-caramel-nut bars, calorific wonders that can be consumed in a slow orgy of enjoyment or just applied directly to the hips, where they’ll settle anyway. (continued on page 94)

Chef-owner Terryl Gavre tends to the display case at her new Bake Sale Cafe & Bakery in East Village.

pening day at Terryl Gavre’s new Bake Sale, a bakery-cafe in a historic building in downtown San Diego, was a sweet success. The question of whether the surrounding neighborhood would respond to baked-that-morning, all-American muffins, cookies and pastries had been answered. And Gavre, an entrepreneur who cannot stop moving, kept busy in the kitchen, prepping lunches of classic, comfort-food sandwiches, none of them creamier, richer or more ABOVE: Outside the new Bake Sale Cafe & Bakery in East Village. thoroughly self-indulgent than two slices of bread swooning around a filling of ultimate egg salad. For a thoroughly modern restaurateur who launched her first place, Cafe 222, by appearing on billboards sporting a waffle as a hat, Gavre had an old-fashioned introduction to the business. Her story used to be a common one. Now, in a tech-driven society, it seems charming but improbable, and as thoroughly old-hat as her waffle was chic. “I grew up in a family of good cooks and bakers,” she says. “I was brought up in an old-

fashioned family in which you learned from your grandmother and mother how to can peaches, grow a garden, make sauerkraut. Back then, it was training to be a wife.” So Gavre did what any Seattle-area teen would have done upon graduating high school: she opened a “cooking service,” as she calls it, named The Surrogate Wife. (continued from page 94) “I shopped, cooked and baked for a lot of bachelors, especially professional athletes, their doctors and brokers,” says Gavre. “By the time I was 21, I had eight employees and I attracted so much attention that some Hollywood producers bought the rights to my story and made a movie called This Wife for Hire. The 1985 movie, in which Gavre was played by actress Pam Dawber (“Mindy” on ABC’s “Mork and Mindy,” Robin Williams’ breakout role and a huge hit a couple of generations ago), changed her life by bringing her to Los Angeles for the film shoot and endowing her with $50,000. Gavre dated a San Diego guy during this period, and while the relationship didn’t last, her fondness for the sunshine did. “I was spoiled, I couldn’t go back to the Northwest,” she says. So, of course, she opened a restaurant, Cafe 222, at just the moment downtown south of Broadway began attracting hipsters. She was accustomed to 16-hour workdays from spending nights as a waitress and manager while she operated The Surrogate Wife during daylight. “I used all of the $50,000, which half built-out Cafe 222,” Gavre says. “I did all the cooking in the first years, breakfast, lunch and dinner. I served the tables, and then, late at night, I washed the dishes. That’s how you have to do it, unless something’s given to you.” In this Cinderella story, Gavre was her own wicked stepmother, granting herself only a few hours of sleep in a small studio/storeroom behind her restaurant. After the first year or two, 222 succeeded so well as a breakfast-and-lunch magnet that lines were a daily fact of life (they still are), and Gavre had become a restaurateur to be reckoned with. Since then, she helped ace chef Carl Schroeder open his acclaimed Market in Del Mar (she plays no active role there at present) and partnered with him in Bankers Hill Bar + Restaurant, which rocks the formerly quiet neighborhood nightly. More recently, she opened ACME Southern Kitchen in another historic building, this one near the downtown Post Office in East Village. Gavre searched dozens of aging church cookbooks to glean recipes for ACME — think shrimp and grits, fried green tomatoes and collard greens. The baker that she is, the biscuits melt in the mouth. With its beautiful pastries, Bake Sale (around the corner from ACME) is the icing on Gavre’s multilayer cake of eateries. The name was a no-brainer: she chaired the bake sale committee at her children’s school. She’s never had a business fail, and while she no longer needs to wear a waffle, she’ll gladly make one for you. (continued on page 100)

(continued from page 98) Gavre’s tireless, and her day starts by 5 a.m., when her grade school-aged daughter and son rise to pack backpacks, finish homework and eat a hot breakfast. She says she tries to make her schedule end when they get out of school at 4:30. Except, of course, it doesn’t really end then at all. She cooks dinner, joins her children until bedtime, and then may pop into Bankers Hill for a while. Gavre’s cooking is, more than anything, the kind of food America once took for granted — simple but endlessly satisfying. “I wanted to do food I was capable of cooking,” she says. “Comfort food.” What comforts her? Ajar OPENING THE DOOR TO FRESH SALADS ON THE GO Recipe & photos by Brandon Matzek

anning jars are everywhere right now. Aside from their original intended use (storing preserves), these trendy containers have taken up employment as cocktail shakers, flower vases and lighting fixtures. Recently, my favorite way to utilize a canning jar has been for weekday lunches — particularly, Salad in a Jar. On Sundays, when my free time is a little more abundant, I like to prepare several of these jarred salads to eat throughout the week. Salad ingredients are layered inside a large canning jar in such a way that keeps the greens crisp and fresh. Layer 1: Salad Dressing. Liquid ingredients must stay at the bottom of the jar to keep the greens fresh. Keep your Salad in a Jar upright while transporting to avoid a premature toss. Layer 2: Hard Vegetables. Onion, fennel, bell pepper, carrot and celery can sit in the salad dressing for several days while still retaining their pleasant, crunchy textures. Layer 3: Beans and Grains. Cooked beans add energy-boosting protein and nutrients; while grains like rice, barley and farro provide substance. Layer 4: Proteins. Cured meats like salami and chorizo can sit in the jar for several days. Proteins like diced chicken and hard-boiled eggs should be added the day you plan to eat the salad. Layer 5: Nuts and Seeds. Chopped almonds, walnuts and pistachios add a nice crunch. Sunflower and pumpkin seeds are easy, lower-calorie additions. Layer 6: Greens and Herbs. Soft greens and herbs should be layered away from liquids to maintain their desirable texture.

SALAD IN A JAR INGREDIENTS

For the sherry vinaigrette: 2 tbsp. extra virgin olive oil 1 scant tbsp. sherry vinegar 1 tsp. Dijon mustard 1 dab of honey (about an 1/8 tsp.) 1/2 garlic clove, minced Kosher salt Freshly ground black pepper

Other add-ins: Softer fruits and vegetables (like avocado and tomatoes), plus grated cheeses and croutons, are best left outside the jar. Add them as desired right before eating the salad. Infused with flavors of Spain, the salad I made here is a satisfying example of this layering strategy. But don’t feel constrained by the ingredients I chose. Be creative and have fun with it.

For the salad: Sliced fennel Sliced red onions Cooked white beans (rinsed if from a can) Sliced Spanish chorizo, casing removed Chopped Marcona almonds Baby arugula (or other salad green) Fresh parsley leaves

PROCESS

Shake it up. Add extra virgin olive oil, sherry vinegar, Dijon mustard, honey and minced garlic to a small canning jar. Season with 2 pinches of salt and several turns of black pepper. Cap the jar, and then shake until ingredients are well combined. Add additional salt and pepper to taste. The vinaigrette should be a bit oversalty since it will be providing the salt for the other salad ingredients as well. Layers of flavor. Place 2 - 4 tablespoons of sherry vinaigrette in the bottom of a large (26 - 32 oz.) canning jar. Add ingredients to taste in the following order: sliced fennel, sliced red onions, cooked white beans, sliced Spanish chorizo, baby arugula and fresh parsley leaves. You’ll want about 1/3 of the jar filled with toppings (like the fennel and chorizo), and 2/3 of the jar filled with greens (arugula and parsley). Cap the jar, and then store in the refrigerator for up to 3 days. Simply served. When you are ready to eat the salad, shake the contents in the jar, and then transfer to a large plate. 104

ROLL LIKE AN UNRULY RICK JAMES WITH THIS COLD BLOODED COCKTAIL By Michael Benninger Photo by Paul Body

What did the five fingers say to the face? If you don’t know the answer, then you probably haven’t seen comedian Charlie Murphy’s “True Hollywood Stories” sketch from Comedy Central’s short-lived, but much-loved and critically acclaimed series, Chappelle’s Show. The infamous sketch, which first aired in 2004, satirizes Murphy’s early-’80s interactions with the King of Punk Funk, Rick James. Best known for his hits “Superfreak,” “Give it to Me,” “Baby” and “Cold Blooded,” James provides commentary to a series of reenacted flashbacks in which he’s portrayed by Dave Chappelle. According to Murphy, James was a “straight player” and “habitual line-stepper” with “mad pimping skills.” In the skit, James is depicted as a hard-partying instigator who doesn’t give a second thought to sucker-punching Murphy or grinding his grimy boots into a suede couch owned by the comedian’s superstar sibling, Eddie. And now, a decade after James reentered the public consciousness — and, unfortunately, a decade after his passing — San Diego’s The Shout! House invites guests to embody the spirit of the Superfreak with a Rick James cocktail. Served in a pint glass over ice, the Rick James combines cranberry and orange juices with Southern Comfort, Amaretto, Myers’s Platinum Rum and

FINEST CITY BEER — SCENE AND HEARD By Brandon Hernández

DO ME A FLAVOR NEW BEERS TO CHEERS AND BREWS TO PERUSE

Coronado 18th Anniversary Specialty Ale: What started as a tiny Coronado brewpub has grown to become the world’s reigning mediumsized brewery. The first-place winner at the World Beer Cup (essentially the Olympics of beer) Coronado Brewing Co. now has an additional brewing facility within San Diego proper and will soon open a second breweryrestaurant in Imperial Beach (the first remains open on Orange Avenue in Coronado). To celebrate 18 years in the brew biz, the company is going big, releasing a double IPA packed with plenty of Citra, Mosaic, Nugget and Simcoe hops. Get a sip at the brewery’s anniversary event, August 2, at its mainland tasting room. 1205 Knoxville St., Bay Park, coronadobrewing.com Stone 18th Anniversary IPA: Another brewery, San Diego’s largest, is celebrating the big oneeight, and doing it in grand fashion on the campus of CSU San Marcos. At an August 15 reception, beer nuts can rub elbows with brewers before the next day’s gargantuan, dualsession festival — California’s largest annual fermentation fête. Throughout this two-day affair, the gargoyle clan (see Stone’s logo) will be pouring a celebratory imperial brown IPA, dry-hopped with an abundance of lemony El Dorado hops. 1999 Citracado Pkwy., Escondido, stonebrewing.com 108

Bagby Beer Company: While working for Pizza Port, Jeff Bagby amassed more medals and awards than any brewer in the country. Soon, he’ll be striking gold, silver and bronze under his own flag as the owner and brewmaster of a massive, two-story brewpub installed in a former Coast Highway automotive dealership. A garage has been converted to a brewery and cellar; a showroom and offices into a restaurant complete with multiple bars, a patio and an ocean-view balcony. This place will be nothing less than San Diego’s next beer Mecca. 601 S. Coast Hwy., Oceanside, bagbybeer.com Toolbox Brewing Company: In a day and age when it seems a new brewery is opening almost every week, this one has generated serious buzz behind a bevy of bugs. Brewer Peter Perrecone plans on featuring an “American farmhouse” line of brews made dry, tart and funky by wild yeast and bacteria such as Brettanomyces and Lactobacillus. Those creations will share tap space with hoppy IPAs of varying strengths (one of which will also be dosed with Brettanomyces), and an imperial stout for good measure. 1495 Poinsettia Ave., Ste. 148, Vista, toolboxbrewing.com (continued on page 110) A U G U ST 2014 / PACIFICSANDIEGO.COM

BREWMASTER Q&A

DEVON RANDALL

Pizza Port Solana Beach 135 N. Highway 101, Solana Beach 858.481.7332, pizzaport.com

Brandon Hernandez: What do you like most about brewing? Devon Randall: Everything. I am completely in love with brewing. Seriously, I would marry it if I could. The romance of tasting special beers and learning their history is intoxicating. And brewing is a multisensory process — the sounds of the fermenting beer bubbling away, the feel of mashing-in and minute temperature changes, the smell of grain meeting water first thing in the morning, the aroma of each hop addition bursting from the kettle. And then there’s the yeast, the living organisms that produce the alcohol. Someone once told me I sound like I’m talking about a pet when I describe my relationship with yeast. It’s sort of like a pet, needing to be fed, put to sleep, woken up and looked out for to ensure its overall happiness

and comfort. And, of course, I love interacting with people at the bar who are enjoying my beers. As a woman, you are in the minority in the brewing business. What’s that like? Women in the brewhouse are definitely getting more attention lately. When I started, there were hardly any. If anything, it has probably worked to my benefit. Sometimes people remember you because you’re different from the norm. While I think there should be more women brewing — seriously ladies, this is one awesome job, and you can totally do it — I want to be seen as a brewer first and foremost. We don’t call women ‘female chefs,’ ‘female accountants’ or ‘female doctors.’ Brewing should be no different. What should people wanting a quintessential taste of your beer and brewing style order when they visit Pizza Port? Solana Beach is IPA town, so I would recommend one of the house IPAs I keep on rotation: Solana Beach IPA, The Kook, Whale’s Tails Rye, McFly and Citra-r-Ama. We get so busy in the summer that a typical batch of IPA lasts less than two weeks,

so they’re always incredibly fresh. I’m also proud of two of my award-winning brews, May the Port Be With You Imperial Porter and OATS Oatmeal Stout. Ideally, our house beers suit a variety of beer moods. What’s new on the horizon for you and Pizza Port? Our Bressi Ranch brewery recently increased capacity to produce more of our core beers — Swami’s IPA, Ponto Session IPA and Chronic Amber Ale. We’ve also started a small oak-aging program, so we get a chance to play with sour bugs and bourbon barrels. Look out for those beers in about six months. What San Diego breweries are tops on your list? Societe is putting out some awesome beers, and I really like their crew. Alpine will always hold a special place in my heart; their Duet IPA is total bliss. Automatic has the coolest brewhouse in town, and brewmaster Lee Chase is full of knowledge and has a fun outlook on brewing. I’m also stoked on Rip Current. The owners are former homebrewers who definitely deserved to go pro.

Brandon Hernández is a native San Diegan with a fervent passion for craft beer and the talented individuals who produce it. A Senior Communications Specialist for Stone Brewing Co., he’s also an editor for Zagat and has served as a consultant to Food Network. an Diego native Trevor Easter is a rock star behind the bar. The former professional wakeboarder and drummer of S.D.-based punk revival band Off By One (which toured the nation, played the VANS Warped Tour and opened for Jewel, among other stars) set the tone for an illustrious mixology career by taking a bartending gig at Henry’s Pub in the Gaslamp. He was 21 years old at the time. “I was making really bad margaritas and totally blowing it,” Easter says, “But that’s where I learned to make party drinks like Sex on the Beach and Surfers on Acid. Every bartender has to go through those steps. Otherwise, they miss a part of drinking culture.” Easter eventually floated over to downtown’s original craft cocktail hub, El Dorado Cocktail Lounge, where his

126

coworkers included celebrity mix-masters the Stanton Brothers and Anthony Schmidt. (Schmidt would go on to open Noble Experiment as general manager.) Easter’s drink-making path would soon lead him north. While working at The Shady Lady in Sacramento, he discovered what he describes as “the nerdy world of classic cocktails.” Next, he managed the acclaimed Rickhouse in San Francisco, which was named Best High Volume Cocktail Bar at the Fifth Annual Spirit awards in 2011. While these names may not have significance for non-cocktail buffs, they mean a lot to the biggies in the beverage game, including Beefeater Gin and Plymouth Gin — companies which, in 2012, hired Easter to travel the world as their brand ambassador. After “pickling my liver with gin,” as he describes it, Easter says he returned to San Diego

and struck an agreement with Consortium Holdings to supply its local ventures (currently nine of them, including Noble Experiment, Craft & Commerce, Soda & Swine, Ironside Fish & Oyster Bar, Polite Provisions) with bar syrups and cold-pressed juices. Shortly thereafter, Easter would receive an offer to become GM at Noble Experiment, the still hidden (despite the secret’s being out) bar behind a false wall of kegs inside Neighborhood in East Village. “I’m taking many of the techniques I learned from traveling and integrating them at Noble,” Easter says. “The opportunity will allow me to cultivate young, talented bartenders who are all fired up for success.” Marching to the beat of a different drum took Easter around the world and back, which makes it high time to get amped for a new tippling tempo at Noble Experiment. Cheers!

t’s the second day of horseracing season where the turf meets the surf — and the first-time meeting for this evening’s blind daters. Chris stands 19 hands high (6’ 4”), and Missy is about 17.5 hands (5’ 10”), making both of them nearly as tall as two jockeys stacked on top of each other. Before this picture-perfecta* couple arrives for a glamorous day at the track, replete with a post-race concert by hip-hop hotshots Jurassic 5, let’s review their pre-date interviews.

PacificSD: Where are you from and where do you live now? MISSY: I’m from Los Angeles and I live in Pacific Beach. CHRIS: I’m from the Bay Area and I live in Mission Beach. What do you do for a living? MISSY: I work at Everyday California as a Brand Manager and am a server at Duck Dive in PB a few nights a week. I work a lot. CHRIS: I’m an aerospace system architect. I work on design and architecture of unmanned aerial systems. What do you do for fun? MISSY: I love the ocean, surfing, kayaking, body surfing, running, watch sunsets and being outside as much as possible. CHRIS: I like to stay very active. I surf, swim, run, yoga and bike. I also like to cook and go out with friends to San Diego’s local festivals and bars. What are you looking for in a

date, physically and/or otherwise? MISSY: I’m not sure; I’m still figuring that out. Height is kind of important to me, because I’m tall. CHRIS: I like girls that are in shape, not overly so, but definitely fit. Girls that have an easy and effortless smile, with warm eyes. Describe your special brand of sex appeal in five words or less. MISSY: I love life. CHRIS: Tall, dark and handsome. What do you like least about yourself? MISSY: My voice. Hearing it played back kills me. CHRIS: My nose and sunspots on skin. Also, at times, I can be impatient and need to be more understanding and compassionate with others. Rate yourself on a scale from one to 10 for looks. MISSY: Haven’t ever done that before and I am not starting today. CHRIS: Eight.

Rate yourself on a scale from one to 10 for personality. MISSY: Same answer. CHRIS: Eight, when you get to know me. Sometimes it takes a minute. How many people have you slept with? MISSY: Does anyone ever answer this? CHRIS: A gentleman never tells in a questionnaire… or on a first date. Fill in the blanks: I want my blind date to be “blank” and “blank.” MISSY: Grown-up and internally motivated. CHRIS: Fun and hot. Will the night end with a kiss, something more or something less? MISSY: I have no idea. CHRIS: Well, I’ll take a kiss, but wouldn’t necessarily be opposed to something more. But then again, that’s entirely up to my date.

What’s the most important thing in the world? MISSY: Relationships and people. CHRIS: Personal relationships with fellow people. When their Epic Limo drops them off at the track, Missy and Chris head inside to the new Blue Moon Celebrity Grill. Chris glances at the race program while they talk, and then walks to the betting window to wager on the next race. *Perfecta is a term used in horserace wagering. THANK YOU! urf ’s up for Missy and Chris, whose next stop is a finish-line feast at the Stretch Run Grill. This exclusive section of the grandstand offers cocktail and food service, and great views of the horses thundering across the finish line. The crowd roars as the ponies pass, but Chris’ bet wasn’t a winner. After their meal, the couple is escorted into the paddock, where they get a behind-the-scenes view of the horses in the winners’ circle. Next, Chris places another bet before he and Missy head down to the “rail” (the fence surrounding the track) to watch the day’s final race. As the horses round the final turn, thousands of screaming spectators jump to their feet. Go, baby, go! Chris’ horse doesn’t place, but he and Missy win a privileged moment on the finish line, where they pose for selfies before having to dodge an oncoming tractor. (continued on page 134)

Then, with the summer sun drifting down for the day, the couple is split for mid-date debriefings. PacificSD: How’s it going so far? MISSY: Good. Fun. I came to the track for Opening Day yesterday, and I’m back again today. Chris knows a lot more about horse racing than I do, so that’s kinda cool. Learning something new is always fun. CHRIS: She’s super hot and seems pretty mellow and low-key. We have a lot in common, that’s for sure. What were your first impressions? MISSY: He has a job and he’s tall, so that’s good. He’s very nice and he brought me flowers. My first impression was that he’s smart and cool. CHRIS: When the limo got to her place, I jumped out of the car and went to her door. She has one of those metal screen doors. I couldn’t quite see through it, but I could see an outline

134

PACIFICSANDIEGO.COM / AU GUST 2 0 1 4

of a tall, leggy blonde, and I was like, ‘Score!’ It was a good impression. Is this the type of person you’d normally date? MISSY: Not sure — I haven’t dated much in the past two years. I’ve been focusing more on work and “me” time. CHRIS: Yeah, for sure. She’s super athletic, loves water sports and she’s tall. How was the Blue Moon Celebrity Grill? MISSY: The Blue Moon Celebrity Grill is actually a really nice little place, and I love Blue Moon, so that worked out really well. CHRIS: It was really cool. They have a great beer selection. What did you think of the Stretch Run Grill? MISSY: Our table was nice. I liked that view quite a bit. Being right there at the finish line was amazing. For food, we just took the waitress’ recommendations, which were good. CHRIS: I’ve seen it before, but never actually experienced it. I gotta tell you, it’s pretty awesome getting served food and drinks right there at the finish line. Usually, I’m scrambling around trying to find a drink. Definitely an awesome experience. I made a few bets for myself and Missy; unfortunately they were all losers. Describe your experience in the paddock and at the finish line. MISSY: The Winner’s Circle was really cool. Getting to be so close to

136

PACIFICSANDIEGO.COM / AU GUST 2 0 1 4

the horses, it’s like a whole different world. Horse racing is super foreign to me, so all of this is very exciting. I’m from L.A., and we barely have grass where I grew up, so getting up close to any animals is a real treat. CHRIS: I’ve never actually been right at the finish line before. You get a different feeling of how fast, how close the horses actually are. The paddock is another aspect of the track that I’ve definitely walked by, but never got to see it first hand. It was really cool.

What’s the most attractive thing your date has done so far? MISSY: Bringing flowers was really cool. He’s polite, which is nice. He’s a nice guy. CHRIS: There’ve been so many; it’s hard to tell. I think that after some personal discussion, we just kinda connected. Missy said she felt the same way — like we have a bit of connection. What would your parents say if you brought your date home? MISSY: My dad’s 6’ 6”, and everybody in my family is really tall. They’d probably intimidate the hell out of Chris. What my family would think of him would be entirely based on his reaction to meeting them. CHRIS: They would be ecstatic. My mom’s tall, my whole family is tall, and they always like tall girls.

Plus Missy seems really sweet, and she’s a beautiful girl. Rate your date on a scale from one to 10 for looks. MISSY: Eight. CHRIS: Ten. How about for personality? MISSY: Eight. CHRIS: Eight. Do you want to kiss your date now? MISSY: No. CHRIS: Yes. Does your date want to kiss you? MISSY: Most likely. CHRIS: I don’t know. The last race complete, Missy and Chris walk to the track’s concert area to catch a live performance by Jurassic 5. (continued on page 138)

THE DATE GOES FROM CLIP-CLOP TO HIP-HOP

A

s six-piece alternative hip-hop group Jurassic 5 takes the stage, and throngs of concertgoers sing along to old-school earworms, the couple is finally set free to enjoy the rest of their evening away from the magazine crew. The next morning, we call to see what we missed.

PacificSD: How was the Jurassic 5 concert? MISSY: It was awesome and had a great vibe. The concert definitely gave me flashbacks to high school, and I loved the venue, too. This was my first time seeing a concert at the track, and I will be going back. CHRIS: It was mellow and chill, just like J5. How long did you stay, and what did you do afterward? MISSY: We stayed at the concert for an hour, then headed back to PB, where went to Duck Dive for a drink. We chatted there for over an hour. We were the best-dressed people there. CHRIS: We spent about an hour there, and after that went out in PB for a little while. What time did you get home? MISSY: Before midnight. I had to work the next day.

138

PACIFICSANDIEGO.COM / AU GUST 2 0 1 4

CHRIS: About 11 o’clock. Was there a kiss or romantic exchange? MISSY: Yes, there was a very sneaky kiss. I wasn’t expecting it, and my brother was watching. It was a little awkward, but I give Chris props for going after it. It’s nice to see a guy that can be a gentleman, but still have some grit. I like a real man. CHRIS: There was a kiss. How did the date end? MISSY: We ended at my house, because I had to work the next day. Chris dropped me off at home, and we both agreed it was a great night. CHRIS: I dropped her off at her house, saw her place, met her brother and some friends who were there. We said goodnight outside, and kissed. We also made tentative plans to hangout again.

What are your date’s best qualities? MISSY: He’s smart and has a great sense of humor. He can change a tire, he has a job and can do man sh!t. CHRIS: Missy’s very easygoing and not high-maintenance at all. The fact that she’s super active with water sports is a huge plus. And, by the way, she’s also gorgeous. What’s the funniest thing that happened during the date? MISSY: We walked onto the actual track and were checking out the sunset and talking, totally oblivious to the massive tractor steaming our way. Running in heels in dirt is pretty funny. CHRIS: Meeting a jockey and both of us feeling like giants since we’re so tall relative to jockeys. We had a good laugh, more about us being Amazons than the jockey being short, of course.

Will there be a second date? MISSY: Maybe, we will see. I would hang out with him again. CHRIS: I hope so, but we shall see. I think we have a lot in common and could share a lot of fun experiences together. We have personality types that work well together. AFTERMATCH: Before the date, Chris said, “I’ll take a kiss,” and it turns out he really meant it. Good thing Missy likes, “a guy that can be a gentleman, but still have some grit.” While Chris’ horse wagering didn’t result in a win, his gamble on the “very sneaky kiss” paid off — and a second date sure seems like a safe bet.
