Speaking in Tongues

I

talk English pretty good and am fluent in ig-Latin Pay. Vis-à-vis the French classes I passed in college — some of that merde (French for “ka-ka”) soaked in, but halfstudying Spanish would have been the wiser choice for life in el Finest City de los Estados Unidos. With the exception of the mierda I spewed in Spanish while ordering rolled tacos con extra queso after too many two-dollar drinks in PB (it was the mid-’90s), I couldn’t say nada en español when I first moved to San Diego. And my Français was three years old and fading fast. When I met my wife at Rich’s nightclub in Hillcrest seven years later, I thought she was Italian (she thought I was gay, sometimes still does), but she was actually from Brazil. Simone had recently moved to the U.S. and knew maybe 50 English words at the time. She’s way over a hundred by now. (Só brincando, meu amor.) It took me months of listening to Simone gossip with her girlfriends at lightning speed to grasp where one Portuguese word ended and the next began. But within a year of living with her, I could at least tell when they were talking about me — when they wanted me to, anyway. Today, I speak Portuguese like a sarcastic six-year-old, and Simone speaks English with only a slight accent. And now we have Lex, a binational, two-passport-holding baby gringo of our own. Lex says agua for water, mãe for “Mom” and “quack-quack” for “duck.” He calls anyone with grey hair vô-vô, which means “grandfather” in Portuguese, and screams “Way-oh! Way-oh! Way-oh!” when he sees Shamu. When he slams his finger in the screen door (daily), he yells mão, the Portuguese word for “hand,” and says beijo when he wants us to kiss it and make it feel better. He calls his nanny Tía, the Spanish word for “aunt” (even I know that one), and can count to five in French, that gem courtesy of my college years. As Lex grows, his language will surely be a combination of Simone’s and mine, the Spanish he learns from our friends and his nanny, the French he hears from our Parisian amigo David (Lex calls him “Da-vee”), the Serbo-Croation Uncle Sanel shrieks with sizzle and style, the Cambodian he hears when Rina cuts my hair, the Chinese he hears from the manicurists at Rina’s salon, the Italian

he hears from Joe across the street and the countless other voices he’ll encounter in this most worldly of cities. This International Issue of PacificSD spans the globe without leaving town. Flip through to meet a Slovakian tennis champ who’s looking for a house in Rancho Santa Fe (see “Service with a Smile,” page 64), a Namibian princess who spent a day at SeaWorld (see “Life and Limb,” page 70) and the Eritrean-American Boston Marathon winner from San Diego High School (see “It’s About Time,” page 130). For a global gastronomic adventure that touches down in Bolivia, Brazil, the Caribbean, Ethiopia, Finland, France, Lebanon, the Mediterranean, Mozambique, Nepal, Peru, Poland, Puerto Rico, Russia, South Africa, Spain, Thailand, Turkey, Vietnam and Zimbabwe, see “Abound the World” (page 74). I moved to San Diego for the sun, not for its diverse international cultures and languages. Getting the best of both worlds has turned out to be muy bueno. Please turn the page, et bon voyage!

HOW NOTHING GIVES YOU EVERYTHING

They’re called sensory deprivation tanks, cocoons, float spas... and users report they’re incredible. Despite the nice weather here in paradise, life isn’t always so kind. When work and family life fall out of balance — and stress, aches and pains rule the day — spend an hour in sensorydeprivation to reset the body’s natural equilibrium. Float Sanctuary will offer the otherworldly experience of nothingness. By eliminating 100 percent of external stimuli, Float’s water chambers give customers a newfound sense of serenity and self. Most first-timers report never having experienced such a profound level of calm. “It’s interesting how feeling nothing can make you look at everything in a whole new light,” says owner Brent Laurence, “even when you’re floating in utter darkness.” Call ahead to reserve a first-time float for only $39.

ark owner Pacific Enterprises partnered with Pacific Beach-based hospitality management group Eat.Drink. Sleep. (owners of Tower 23 Hotel and JRDN) to ensure awesomeness around every corner. “Belmont Park is a San Diego gem, although in recent years it hasn’t received the investment needed to operate as a premier attraction,” says Brett Miller, Eat.Drink. Sleep.’s CEO. “When we’re done, people are going to think about Belmont Park when they think about San Diego.” The man-made forever-perfect waves at WaveHouse remain, as does the Giant Dipper Roller Coaster. New additions to the Belmont Park include: DRAFT: With a beer selection surpassing 60 taps and 80 bottles, Draft offers outdoor seating and the perfect perch for peoplewatching along the boardwalk. Indoor sights include a 31-foot video projection wall and the restaurant’s main attraction: a colossal, glasswalled walk-in cooler. ZIP-LINE: Unleash your inner Batman and race a friend (or foe) through the South Mission skyline aboard a pair of side-by-side, 30-foot-high, 250-foot-long zip lines. LEAP OF FAITH: This daredevil’s delight defies fearless beachgoers to scale a 30-foot pole and freefall out into nothin’.

5/23-6/28: “SNAKE IN THE GRASS” BY SARAH JONCAS SUBTEXT GALLERY 2479 Kettner Blvd., Little Italy, subtextgallery.com For her solo show at Subtext, Canada-based painter Sarah Joncas says she wants her work to invoke a sense of mystery among its viewers. Her character-driven narratives are often dark, this time focusing on shaky relationships and betrayal. Her paintings bring together modern symbolism (like the iPhone in “Snake in the Grass”) and a noir, 1940s vibe. side from being adept at virtually every visual art known to man, Tyler Jordan is also the guitar player for local hard-rock band Processor and the new face of GoPro’s latest camera. Dude’s pretty much a creative force of nature. With a GoPro mounted on his guitar, Jordan captured a killer shot while performing with Processor at Rock ‘n’ Roll San Diego, a band rehearsal space near Valley View Casino Center. That photo caught the eye of GoPro execs, who, in early April 2014, selected the image to appear in the company’s advertising for the new HERO3+ Black Edition — a camera that attaches easily to instruments, turntables and mic stands. Jordan’s photo now appears on the product’s packaging; on GoPro’s website and social media pages; and on billboards in Seattle, San Francisco and Los Angeles. “Working with GoPro to launch their new camera has been an

awesome experience,” says Jordan. “To look up and see our band on a massive billboard and to receive emails and tweets from fans all over the country is amazing. GoPro has given us the opportunity to reach a much bigger audience and capture our performances like never before.” For long-time readers of PacificSD, it may come as no surprise that GoPro singled out Jordan’s work. A photo the Coronado High graduate snapped from atop Mission Beach’s Giant Dipper Rollercoaster was featured in the magazine’s photography issue in January, and his painting “Global Warming” won Second Place in the 2010 PacificSD Art Contest. A former beach-area resident, Jordan spent much of the ’90s working at P.B. coffee shops, where he became known for his pastel art on café menu boards. Today, he works on creative projects for Fortune 500 companies and neighborhood eateries alike. Processor’s new album, Innernet, drops this spring. theartoftylerjordan.com processormusic.com

In for a Ride Ten tips for first-time bicycle commuters

JOIN THE THOUSANDS PUTTING THEIR METTLE TO THE PEDAL FOR NATIONAL BIKE MONTH

ust off your two-wheeler, grab a helmet (seriously!) and add Pee-wee’s Big Adventure to your Netflix queue — May is National Bike Month. Initiated by the League of American Bicyclists in 1956, National Bike Month promotes pedal-pushing as an ecologically and economically sustainable alternative to driving. It’s also a great way to get a little exercise without having to worry about the rush-hour traffic distracting you from texting. Offering more than 1,340 miles of bikeways and some of the best weather in the world, San Diego is primo for spokes people. On Bike to Work Day (May 16), more than 90 pit-stop locations around the county will offer motivation in the form of free t-shirts, snacks and heart-felt encouragement to the thousands of San Diegans ditching their whip for a day. For the “I’ll get too sweaty” and “It’s too far” types, San Diego County Bike Coalition (SDCBC) executive director Andy Hanshaw says to stop making excuses. “Even if it’s not the entire way, even if it’s partway, give it a shot,” Hanshaw says. “I guarantee you, you’ll enjoy it. You’ll feel better about yourself and you’re doing a good thing.” So, do as the Amsterdamers do (they ride bikes; see “Oh, Wheelie?” to right) and saddleup on two wheels. The ozone layer, your heart and anyone seeing you in a bikini or boardshorts this summer will thank you. 48

1. Plan your route ahead of time. 2. Practice a dry run over the weekend. 3. Make sure your bicycle is in proper working order. 4. Consider using mass transit for part of the trip. 5. Know the rules of the road. 6. Be visible — reflectors and reflective gear are a must. 7. Slow your pace in the final leg to prevent arriving at work sweaty. 8. Let your employer know you’ll be biking to work and might be a little late. 9. Leave a change of clothes at work the day before. 10. Register for Bike to Work Day at iCommuteSD.com.

f it’s fitness fame you seek, see your name on the big screen, displayed next to your heart rate, at new gyms popping up across the county. The idea behind Orangetheory Fitness (OTF) is to exert energy at 84 to 91 percent of your maximum heart rate for 12 to 20 minutes of an hour-long session, which, proponents say, maximizes the calorie-burn during and after the workout. When you’re in this zone, the light in the box surrounding your name on TV turns orange. “Orange is the color of vitality,” says Hollis Lotharius, manager of OTF’s new location in La Jolla. “It has energy and it’s powerful.” High-intensity, OTF classes consist of 30 minutes of cardio and 30 minutes of strength training, which are broken up between three main components: treadmill interval training, indoor rowing and free weights. After each class, participants receive an email indicating how many calories they burned and how many minutes they spent in and out of the zone. 50

MAY 2014

Lotharius says the workouts provide a newfound level of motivation, enabling her to push herself harder than she previously thought she could. “I recognized by looking up at the screen that I had a lot more to give,” she says. “I like that real-time feedback because I can instantly make modifications.” Despite having been in business for only two years, OTF already has more than 200 locations nationwide. Its Point Loma and La Jolla studios are open now. Keep your eyes peeled for more San Diego locations coming soon. 3980 W. Point Loma Blvd., Point Loma 858.216.2020 7734 Girard Ave., Ste. “For several weeks last year, a Parks and Rec. ranger showed up to count people and take pictures,” says Hubbard. “The ranger said our class was violating a municipal code restricting groups to just 49 people.” In July 2013, Hubbard was ticketed twice. He felt compelled to fight the city. “My position was that they didn’t have the right to remove people from a public park,” he says. “Ticketing me was in violation of my free speech and everyone else’s right to peacefully assemble.” When his January court date arrived, Hubbard appeared with a witness, video evidence and a pro bono attorney. “The Parks and Rec. folks were shocked,” he says. “They probably expected me to show up in a loose robe with prayer beads and to start chanting some Sanskrit mantra.” It took 30 days, but the judge ultimately ruled in NamaSteve’s favor, not only dismissing the tickets, but also ruling the municipal code unconstitutional. “It was a long, stressful journey, and I’m embarrassed to say that many times I considered giving up,” Hubbard says. “However, I felt I owed it to everyone who had shown up over the years to support Oceanfront Yoga. I also felt that, in a time where many of our rights are being restricted and taken away, it is extremely important to reaffirm our first amendment rights.” The yogi bending over backwards for his beliefs — poetry in motion. namasteveyoga.com

INK, THINK AND DRINK LIKE A SAILOR Considered by devoted ink-sters to be the godfather of Old School tattooing, Norman “Sailor Jerry” Collins is credited with having created the iconic, nautical image sailors (and other tough characters who hung out by the docks) began making permanent parts of their bodies back in World War II. Norman’s innovative, pioneering and rebellious spirit is captured in every bottle of Sailor Jerry rum, the 92-proof spirit that bears his nickname. “I have the best gig in the universe,” says Paul Monahan, the spirit’s brand ambassador. “I have the privilege of carrying on the legacy of Norman Collins through gatherings that create, inspire and educate audiences across the country.”

To connect Sailor Jerry with other sailor men and women across the country, Monahan hosts events that leave an everlasting mark on attendees. At the Pig & Pig Roast (held April 7 at Bearcat Tattoo Gallery in Little Italy), for example, he watched proudly as guests drank Sailor Jerry rum cocktails, ate roasted pig and had Sailor Jerry-inspired tattoos emblazoned on their body parts. “I can’t even count how many Sailor Jerry tattoos I have,” says Monahan. “Inevitably, this fairytale job will end, and it will be lovely to have a canvas covered with memories that I can sit back and tell stories about when I’m old.” sailorjerry.com

ENTERING PRINTING’S THIRD DIMENSION

P

oised to trigger the next industrial revolution, 3D printing, or additive manufacturing, makes ideas tangible. The technology is already changing the world — doctors are printing tracheas, Dutchmen are printing houses, and some dude on the Internet is printing sex toys. 3D printing works from the bottom up by depositing layer upon layer of superheated, quick-cooling substances to form structures defined by the user on a computer. The printers operate like inkjets, but with a Z-axis. (Don’t try putting envelopes in there.) Using liquefied plastics, metals or organic matter, 3D printers can meet specifications measured to the 1/1000th of millimeter. This degree of precision, coupled with modern computer-aided design (CAD) software, makes it possible to 3D-print nearly anything imaginable. Don’t be in a hurry, though. Even small objects like chess pieces and iPhone cases can take several hours to materialize.

Although 3D printing has been around for more than 20 years, the industry is still in its infancy. But now that consumer-oriented printers are available for less than $300, 3D-printed products will soon be everywhere. They’re already in Kearny Mesa. “Our selling point is that we offer high-quality 3D printing matched with oneon-one service and a quick turnaround, usually sameday or next-day,” says Larry Hagstrom, 3D print manager at The UPS Store in Kearny Mesa. Carlsbad-based MindFlow Design helps its clients put their products into the hands of the masses. This full-service product design and development firm, led by industrial designer Chris Ross and mechanical engineer Andy Moulds, works with Fortune 100 companies and serious startups to develop attractive, functional products that meet users’ needs. 3D printers are a big part of their business. “Our mantra is to prototype everything,” says Ross. “The biggest advances in product development are achieved by repeatedly making something and trying it. It’s an iterative process, and these machines enable us to be more efficient because we can fail quickly and move forward. The more times and the faster we can do that, the sooner we arrive at better solutions.” Though medical-device design constitutes two-thirds of MindFlow’s business, this cutting-edge company has also developed products for local consumer-focused companies, including iPad stands for MOGL and waterproof phone cases for H2O Audio. According to Ross, developing a physical concept involves three components: the people, the user experience and the physical product. “We’re really good at understanding people and the experiences that they should be having with a product,” he says. “People or companies come to us with a product idea, and we take them from initial concept to a final product being shipped by a manufacturer.” Given how many people want to see their ideas prototyped, the MindFlow team has to be selective about the projects they take on. “We get a lot of inventors contacting us, and we pick and choose the ones that we work with very carefully,” says Ross. “Most of them don’t have capital, and since we need money to do our job, we look for inventors with funding and an executive team behind them.” To demonstrate their expertise, Ross and his team developed a 3D version of the PacificSD logo. “We didn’t want to make a logo that just sat on the floor,” Ross says. “We wanted to give it some purpose and make it functional.” The end result was an incredibly cool, Slinky-inspired magazine holder that took 16 hours to print. Ross says this sort of prototype would cost about $1,000, including materials and production. mindflowdesign.com

IN JULY 2012, Hantuchová appeared nude on the cover of ESPN: The Magazine’s “The Body Issue.” Today, the Slovakian tennis star is posing (clothed, sorry) for the cover of PacificSD’s International Issue. She’s in town to make preparations for her upcoming season with the Aviators, San Diego’s new professional tennis franchise. “Being drafted by the Aviators is very exciting,” says Hantuchová. “I’ve never played team tennis before.” One of seven teams comprising the Mylan World TeamTennis (WTT) league — which International Tennis Hall of Famer Billie Jean King cofounded with her ex-husband in 1974 — the Aviators also include twins Mike and Bob Bryan, the world’s leading men’s doubles players. San Diego businessman Russell Geyser bought the team, formerly the New York Sportimes (2013’s last-place finisher), and moved it to San Diego. When competing for the WTT’s coveted King Trophy, the Aviators will play five sets (men’s and women’s singles, men’s and women’s doubles and mixed doubles), facing off against top players in the world, including Andy Roddick, Martina Hingis, sisters Venus and Serena Williams and many others. Hantuchová hired Peter Lundgren, former coach of Roger Federer, who’s currently ranked fourth in the world in men’s singles. “Peter’s the best coach I’ve ever known,” she says. “I’ve wanted to work with him for many years, and this means so much to me.” Off the court, Hantuchová’s service comes in another form — helping children. She established the Daniela Foundation, which supports a Cambodian hospital that cares for 120 HIV-positive children, and also started a children’s charity near her original hometown in Slovakia. “I’m trying to promote a healthy lifestyle for kids from a young age, encouraging them to be active, play sports and follow their dreams,” she says. Trained as a classical pianist and fluent in five languages (she’s a great golfer, too), Hantuchová is something of a Renaissance woman. She’s also single. “I can’t wait to have a family,” she says. “I would like at least two or three kids. Now I’m just waiting for the right husband to come along.” Interested parties (in tennis, not marriage) can catch a glimpse of Hantuchová when she and the rest of the Aviators play seven home games at the Valley View Casino Center in July. sandiegoaviators.com

AN INCREDIBLE JOURNEY AND A GIFT WORTH ITS WEIGHT IN GOLD

Dana Hinton is PacificSD’s advertising director. Her father, Jim Schroedl is a superintendent for B2Gold, a Canada-based gold mining company with operations in Africa and the Philippines. In early 2013, Jim was overseeing the construction of a gold mine in Namibia when he called Dana to tell her about a young girl he had met. What follows is Dana’s account of that phone call and the chain of events it set in motion...

D

ad calls me all the time when he’s traveling… which is all the time. But something in his voice sounded different when he called me last year from Namibia to tell me about a housekeeper girl he saw at the hotel where he was staying. He said, “She’s this shy little gal, an amputee with a crutch, and she’s always buzzing back and forth and just goin’ like a son of a gun.” Dad told me he saw the girl at the hotel every day and that he wanted to help her. Actually, he wanted me to help and asked if I could find a prosthetic leg for this girl. I wanted to say yes, but I was thinking “probably not.” Wanting to make Dad happy but having no idea where to begin, I wrote a list of questions for him to ask the girl. I didn’t even know what to ask. I mean, would a prosthetics company want to know her height? Her weight? When I emailed Dad the list, he said he would find the girl, tell her his daughter in the U.S. might be able to help get her a leg, and then help her answer the questions. When he called me to tell me how it went, he said, “I think she thought I was crazy.” It turns out the girl, Lourentia Kandi, was actually 26 years old. When she was 7, she was in a terrible car accident. At first, local doctors thought Louren, as we would come to call her, would recover completely. But complications arose. An infection developed and the doctors ended up having to amputate her leg above the knee. Louren told my dad that, as an adult, she had always had trouble finding work in her hometown. Her current hotel job was temporary, and with such little opportunity nearby, she had already started looking for work in neighboring villages, walking long distances with just a small crutch. I don’t know if it was my dad or this woman’s story that elicited such a passionate response in me, but I made it my mission to help Louren. Using her answers to my questions and some photos Dad sent, I wrote a brief bio about her and sent it to my friend Nicole Busch, who I had a hunch could help. Nicole forwarded the message to her friend Anthony Valentino, who had a friend at the San Diego-based Challenged Athletes Foundation. With that, the ball was rolling.

Louren’s journey would not have happened if not for the generosity of these caring people: B2Gold Sherri and Bill Lytle, George Shimaneni, Glenn Smith Hanger Prosthetics Phil Conley, Nick Roumonada, Carlos Sambrano Friends AND Family Nicole Busch, Anthony Valentino, Nicholas Hammond, Ben Hinton, Elaine and Jim Schroedl 72

I

t was about 10 p.m. on the night after I sent that email to Nicole when I was lying in bed and decided to check my email. And there it was: a message from Nick Roumonada, business development manager at Hanger Prosthetics in Torrance, California. Nick was writing to say that the company’s regional vice president, Phil Conley, had given his support. Hanger would donate a prosthetic leg if Louren could make it to Torrance. I got the chills and began to cry. I couldn’t wait to call Dad to discuss the next hurdle: getting Louren to California. Luckily, the company Dad works for, B2Gold, was supportive of the idea of helping Louren. Dad and his coworkers planned a surprise party for her to tell her the news — that they had found her a leg and she’d be traveling to the United States. In the end, B2Gold not only helped secure Louren’s visa and passport, but also also funded the trip and provided her with a companion and travel guide, George Shimaneni, the company’s corporate affairs manager. Louren and George arrived in San Diego on Valentine’s Day of this year. They stayed with my husband, Ben, and me for nearly a month. My mother, Elaine, also came to stay with us during Louren’s visit. I seriously have no idea what we would have done if it weren’t for Mom’s help. She put her life on hold for two months to be a part of this. When I first met Louren, I remember thinking how shy and innocent she looked, how she seemed like a girl so much younger than her actual age. I sensed she was overwhelmed in the beginning, which made sense, of course. But she warmed up quickly. The entire trip was full of firsts for Louren — her first time on a plane; her first time seeing snow, which happened during a layover in Washington D.C.; her first sight of the ocean. When Ben and I took her to SeaWorld, obviously another first, Louren pet a dolphin and saw Shamu. We also taught her how to play backgammon, which she ended up beating me at. The following Monday, my mom drove Louren to the Hanger Prosthetic Clinic in Torrance, where she was fitted for a leg. The Hanger team, led by Dr. Carlos Sambrano, spent a lot of time with Louren, helping her get accustomed to walking with her new leg. She got the hang of it quickly. I’ll never forget what she said when she looked up at me after taking her first steady steps: “I feel like it’s my own leg. Sometimes I even forget that I am wearing it.” I felt so warm inside, I really don’t have words for it. And then she hit me with something I hadn’t even considered — that giving her the ability to walk without a crutch had an incredible, unforseen benefit. “Now I have both hands free,” she said. On Louren’s last day in the U.S., my family and I took her to the airport. Right before she stepped onto the escalator, she said a final few words to us. She said, “I will never forget this trip until my last day. I cannot thank the people from B2Gold enough for what they have done for me. And I will always remember my new family in the USA.” I had a lump in my throat as I watched her step on to the escalator, standing on her own two feet.

LEG WORK

The particulars of Louren’s prosthetic limb MAINTENANCE: Designed to withstand the environment in Louren’s home country of Namibia, the limb requires minimal servicing. KNEE: The hydraulic mechanism includes a stance flexion feature, allowing a high level of activity and flexibility, even on uneven terrain. SOCKET: The customized technology contours around Louren’s specific anatomy, making the leg feel as if it’s part of her. SKIN: Created and hued by prosthetist Carlos Sambrano to match Louren’s physique and skin tone. COST: A prosthetic leg of this variety typically costs about $35,000.

an Diego’s dining compass points in all directions to international meals that venture far beyond pasta, sashimi and tamales. Until this longtime food writer for PacificSD is assigned to eat with the locals in unlikely places like the Himalayas, Poland or southeast Africa, I can savor what’s cooking in those regions (and others) without packing a suitcase — or cajoling the publisher over a bottle of Russian vodka to foot the travel expenses. have a crystal ball, but the cost of homeownership is incredibly inexpensive in the current market. This won’t last. Renting a home can cost the same as owning, and even more. If you’re paying rent anyways, why not pay a mortgage instead? Can people with bad credit still buy a home? Years ago I built a credit firm, so I know the space. It can be tricky! It’s not something you necessarily learn about in high school or college. There is a difference between a bad score and not being credit worthy. You can’t look at credit score alone as there are other compensating factors that might help you qualify. What are your tips for home sellers in today’s market? There are 17,000 real estate licenses in San Diego

County alone. There’s a difference in getting a license and being great at what you do. Do your homework to find someone who is qualified to help you with your biggest investment and pick an agent who specializes in your community, who knows the opportunities and challenges of that niche market, and has had success in selling property in your particular ZIP code. We’re happy to refer an agent to anyone who inquires at craigsewing.com. How can I improve my credit score? Improving your credit score really is a Rubik’s cube type situation, everyone has a different equation that will work better for them. I will say this – the bureaus don’t make money on creating accurate credit reports or scores, they sell your information! Did you know Equifax owns freecreditreport.com? What a scam.

People can always go to my site for more information and I will help connect them to a professional who can help. short-term future, we believe this spells massive opportunity for sellers. Smart home-buyers are taking advantage of this small window to use low rates to upgrade their home searches and they are now heavily in the spring market. That being said, few sellers have realized how low inventory is. These spring markets typically only come along every five to seven years, where inventory is so low countywide. We believe this is the best time in years to sell and either upgrade or downsize, taking advantage of a strong market and low rates when securing a new mortgage.

rawing inspiration from our neighbor to the south, this recipe for carne asada is perfect for kicking off this year’s grilling season. Spanish for “grilled meat,” carne asada is made by marinating thinly sliced steaks in a flavorful bath of garlic, jalapeño, cilantro, spices, citrus, vinegar, olive oil and Mexican beer. After a rest (four to eight hours), the steaks are thrown onto a searing hot grill and cooked until tender and smoky. The finished meat is incredibly flavorful with a bold, citrus punch Once chopped, it can be used in tacos or burritos, or scattered over a cheesy plate of nachos. Carne asada is one of my favorite meats to grill when throwing a summer barbeque party. Simply set up a topping station with salsa, guacamole, chopped white onion, chopped cilantro, chopped radish, grilled scallions and lime wedges. Cold beers and margaritas are a must (obviously). The meat cooks quickly, so you don’t have to spend the afternoon tending to the grill. Warm tortillas on the grill while the meat cooks, and then wrap them in a clean towel to keep them from drying out. Finally, let your guests build their own tacos while you enjoy a frosty beverage. All ingredients used in this recipe can be found at most Mexican markets such as Gonzalez Northgate Market or Pancho Villa Farmers Market. 100

ROELLOW ME!

Carne Asada Ingredients

F

5 garlic cloves, minced 1 jalapeño, minced Handful of cilantro leaves, finely chopped 1 tsp. ancho chili powder (or any other chili powder) 1 tsp. ground cumin 1 tsp. Mexican oregano, crushed using your fingers Juice of 2 limes Juice of 1 orange 2 tbsp. cider vinegar (or white vinegar) 1/2 cup Mexican beer (I used Pacifico here) 1/4 cup olive oil Kosher salt Freshly ground black pepper 2 lbs. thinly sliced shoulder steak (flank or skirt steak would work well here, too) 1 white onion, peeled and sliced 1 orange, sliced For serving Corn tortillas, heated on the grill. Optional toppings: pico de gallo, guacamole, chopped cilantro, chopped radish, grilled scallions and lime wedges.

Process Mix and Marinate. In a large bowl, combine garlic, jalapeño, cilantro, chili powder, cumin, oregano, lime juice, orange juice, beer and olive oil, whisking to combine. Add salt and pepper to taste (I added several pinches of salt here). Add steak to a baking dish or large bowl and tuck slices of onion and orange between the layers of meat. Pour marinade over the meat, cover, and let rest for at least 4 hours (up to 8 hours).

Fire It Up. Take the steaks from the refrigerator and let sit for 30 minutes before cooking. Meanwhile, prepare an outdoor grill (charcoal or gas) to high heat. Transfer steaks from the marinade to the grill in an even layer. Sprinkle each steak with a salt and pepper. Grill the steaks for 1 minute per side, turning once, until about medium-rare. The steaks shown on the previous page are very thin, so the cook-time is quick. Larger, thicker steaks may take longer. Transfer the steak to a cutting board, let rest for 5 minutes, and then chop into bite-size pieces. Taco Time. Place chopped carne asada along the middle of a warmed tortilla. Add toppings to taste and garnish with a lime wedge.

Flight Path’s cosmopolitan menu of appetizers and small plates globe-trots as freely as its wine list, which equates to exciting wine/food pairings like the four shown here: The wine: Podere 72 from Italy’s Marche region, comprising a blend of Sangiovese and Montepulciano grapes. It’s dark in color and offers a long, licorice finish. The dish: Deconstructed bruschetta. The wine’s smooth tannins balance the acidity of the tomatoes.

102

PACIFICSANDIEGO.COM

The wine: Ch.H. Berres Riesling from Mosel, Germany. Its bone-dry character is unlike other rieslings, offering intense flavors of green apple and tropical fruit. The dish: Bacon-brie sliders. The wine’s bright acidity cuts the fattiness of the meat and curds.

MAY 2014

The wine: Sherwood Sauvignon Blanc from New Zealand. Expect undertones of gooseberries and zesty lime. The dish: Kale slaw with honey and apple cider vinaigrette. The grassy notes of the wine complement the earthy pith of the raw kale.

The wine: Viento Old Vine Tempranillo from Spain’s La Mancha region, lauded for its spicy finish. The dish: Peppadew cheese dip. Those zesty peppers lurking in the cheese meet their match in the vibrant-tasting black grapes used for making the wine.

he “Seatbelt” sign is off at The Flight Path. So sit back or move about, and savor a vintner’s journey that touches down in 10 different countries. No passports or body scans required. “We want people to visit different regions around the world through wine and food without having to leave San Diego,” says Tammy Hoops, owner of the new wine bar and café on Kettner Street (near downtown’s Santa Fe train station). The Flight Path spotlights an international wine collection hailing largely from Europe, South America and New Zealand. Stateside offerings accounting for about 25 percent of the inventory originate from Napa Valley, Paso Robles and Santa Barbara. Previously a wine broker who sipped her way through Europe and South America, Hoops now purchases wine from niche vendors keen on small-production releases, some of whom are natives of the countries whose exports they represent. Her distributor for French wines is from Burgundy, France; the Italian wine vendor is from Rome. “It’s nice to be working with people who can pronounce the grape varietals and vineyards,” Hoops says. While Paris in the Spring may be a longshot this year, a virtual trip across the pond is available in the form of a glass of Terroir de Courgis, an obscure French Chablis by Patrick Piuze ($20 per glass; $59 for a bottle). Hoops swears by the stuff… in French, no doubt. “Because of the bright citrus notes, especially lemon, it’s one of those wines that wake you up,” she says. “And almost nobody offers Chablis by the glass.” 1202 Kettner Blvd., Ste. 104, Downtown theflightpathsd.com

hanks to a years-long series of megastar DJs performing on the city’s most celebrated rooftop, America’s Finest City is now offically the nation’s rockin’-est. At the 2014 Nightclub & Bar Convention and Trade Show (see sidebar), held in Las Vegas in March, Hard Rock Hotel San Diego’s over-the-top Intervention Sundays pool parties earned the supreme national distinction of Promo, Party or Event of the Year. “Our mission is simple,” says Andy Hersch of Gramercy Management Group (GMG), who books the talent for Intervention. “All we want is to give our guests the best time of their lives.” Mission accomplished. GMG runs Intervention Sundays, which attract more than 1,500 people to the Gaslamp every Sunday during summer (end of April through mid-September). The group also operates Hard Rock Hotel San Diego’s überpopular venues: Float, the pool deck and rooftop; and 207, the street-level, LED-walled nightclub on Fifth Avenue. Hersch, who says equal credit for the historic win goes to his GMG business partners Joe Barbour and Justin Zotts, promises another winning line-up for Intervention Sundays 2014. This season’s roster already includes:

ezcaliers are a rare breed. They are the academic aficionados of mezcal, a high-octane spirit that, like tequila, is distilled from agave plants (see sidebar for distinctions). San Diego mixologist Jen Queen is a full-time bartender at Little Italy’s new Juniper and Ivy and a part-timer at Puesto in The Headquarters at Seaport Village. She’s also one of only 14 people in the world who carry the Mezcalier title. In California, she’s the only woman to hold it. Queen earned her “Level 4 Master” status through CONOCER and COMERCAM, governmental organizations in Mexico focused on the nation’s educational and economic development. The process involved learning about mezcal’s 27 varietals, pairing them to cuisine and then undergoing a labor-intensive practical in Mexican agave fields. “I play with mezcal wherever I go,” says Queen. “People expect that from me.” In addition to having tended bar at La Puerta (Gaslamp), Monello (Little Italy), Prepkitchen (Little Italy) and Saltbox (downtown), Queen is also a partner with San Diego mixology consulting group, Queen.Conner.Ward., which has developed spirits programs for Searsucker (Gaslamp), Blue Ocean Sushi Bar (Carlsbad) and Puesto (downtown), among others. She’s also president of the San Diego Chapter of the United States Bartender Guild. “I don’t get a lot of downtime,” she says. Queen was working at a celebrated restaurant and tequila lounge in San Francisco nearly 10 years ago, when the owners took her and some of the other bar staff on a mezcal tasting tour in Jalisco, Mexico. “I loved their big, bold, smoky flavors,” she says, recalling that the “sweeter, softer flavors of tequila” ultimately became the gateway to her love affair with mezcal. At Juniper and Ivy, Queen introduces new mezcal cocktails daily to match what the chef is creating. At Puesto, which carries five varietals from Oaxaca, she spearheaded “mezcal Mondays” (4 p.m. to close), when the boozy fluid takes center stage in margaritas, flights and a select trio of cocktails. When pressed to name her favorite of all the mezcals she pours, Queen pauses. “That’s like choosing a favorite child,” she says, and then finally admits being smitten with a new varietal called Arroqueño, which has “honey, green apple and floral notes.” “It just came on the market,” she says. “I fell in love.”

MAKING A DIFFERENCE

Distilling the distinctions between mezcal and tequila Mezcal refers to any spirit distilled from agave plants. By Mexican law, tequila, a form of mezcal, can be made only with Blue Agave. Mezcal and tequila are produced in different but overlapping regions in Mexico. Mezcal’s smoky flavor stems from its agave’s being fire-roasted in an oven. In contrast, plants used to make tequila are cooked in autoclaves, enormous pressure-cookers that use water. 118

BINATIONAL BLIND DATE BEGETS BEAUTIFUL BRIDE By David Perloff Wedding photography by Marvin Tsai Photography, marvintsai.com Blind date photography by Greg Ramirez ian and Nami met on a blind date published in the March 2009 issue of PacificSD. At the time, Rian, a native San Diegan, was a chef at the new Tender Greens at Liberty Station. Nami, who had moved to San Diego from Thailand three years prior, was the office manager at Pacific Beach Bar & Grill. The two met aboard an Epic Limo Bus in Balboa Park, where they talked over champagne and an appetizer arrangement provided by Firehouse American Eatery + Lounge in Pacific Beach. (That place is famous for fostering love connections, or at least sexual ones, anyway.) After drinks at NuNu’s in Bankers Hill, the daters took a romantic stroll along the downtown waterfront — Rian’s arm already around Nami’s waist — before heading to dinner at Red Pearl Kitchen in

the Gaslamp (RIP, RPK, we really dug you). By the time the camera crew left, they were holding hands, hugging and squeezing, the whole nine. Today, the couple is living in Los Angeles, where they both work for Tender Greens. They’ve been together for the past five years. Last spring, Nami surprised me with a phone call, telling me that she and Rian were engaged and would be getting married in San Diego in about a year. She asked if I would perform the wedding ceremony because I had introduced them. I smiled and said yes. Fast-forward to right now — I’m standing before a crowd of 100 of Rian and Nami’s friends and family, holding a microphone and wondering why I chose this as the moment in my life to save big on a new suit. Does this quasi-burlap/silk nightmare look as plastic/royal blue and shiny to everyone else as it does to me? Why am I wearing this damn thing? Oh, god. Here we go. Deep breath...

Welcome, everyone. Please be seated. The ceremony will begin shortly.

Please rise for Nami. (Nami walks down the aisle.) Please be seated. Good afternoon, everyone. Thank you for helping Nami and Rian celebrate this joyful day. Before the ceremony begins, I’d like to tell you the story of how the bride and groom met. My name is David Perloff, and I stand before you today because I had the good fortune of introducing Nami to Rian on a blind date that was photographed and published in a local magazine. I knew Nami as the cute chick who wrote checks at Pacific Beach Bar & Grill. I knew Rian as the chef from the veggie place I wanted to sell magazine ads to. He never bought one. As soon as Nami and Rian met on a limo bus in Balboa Park, you could see there was chemistry. Ninety minutes later, when the two were split for mid-date debriefings, I asked Nami what she would do if Rian tried to kiss her. She said, and I quote: “If he tried, and you guys weren’t here, I would kiss him back, of course!” When I asked Rian a similar question, I think I remember him sort of salivating when he said, “She is very hot and very cute and very bubbly.” By the way, I think that’s how he describes the soup at Tender Greens. That magical night did end with a kiss… and Nami singing the 2009 Estelle/Kanye West hit, “American Boy,” which played over and over on the limo bus:

“Take me on a trip, I’d like to go some day. Take me to New York, I’d love to see L.A. I really want to come kick it with you. You’ll be my American Boy.” (continued on page 124) 122

Nami and Rian, you have now sealed your relationship with the giving and receiving of rings. Today this relationship is further symbolized by the tying of a lover’s knot. Rian, take these cords [the best man hands me two short ropes], which represent the bond between you and Nami, and tie a knot to signify your intentions for your gathered friends and family to see. Nami, please express your feelings by tightening the knot, representing that you will always hold Rian’s heart to yours. Rian and Nami, these two cords represent your pasts, your individual and separate lives before today. As you intertwine your pieces, you are joining your two lives into one, representing the present. The finished knot symbolizes your future, and how your love and marriage will continue to be strong despite any trials life may throw your way. Your bond is not formed of the knots of this cord, but instead by your pledges to one another. May your bond never be broken. Now that you have joined in holy matrimony and become one, may you strive all of your lives to meet this commitment with the same love and devotion that brought you here today. GO, DAVE, GO! Local nightlife hero Dave Renzella (the “D” in RMD Group, which owns and/or operates FLUXX, Side Bar, F6ix, Ciro’s Pizzeria, Don Chido and other popular San Diego venues) ran the Boston Marathon on April 21, finishing in 4:38:31. “It was my slowest marathon ever but the best experience I have ever had running one, as it was a very special day in Boston,” says Renzella, who has completed 23 marathons and ran this one to support Boston’s Dana-Farber Cancer Institute in loving memory of his parents, both of whom passed away from cancer. “I hadn’t run a marathon in seven years, but wanted to come back this year to show support for my hometown.
