A
new business with a great mission, Food and Farm Tours is the brainchild of Elizabeth Hill. She brings her background as chef and U.C. master gardener to operating casual guided trips by van throughout West Marin for 12 to 30 guests at a time. Each concentrates on an element of our food scene—oyster farms, creameries, wine and cheese—with an organic picnic lunch, tastings, walks and talks. A more extensive outing, the West Marin Executive Tour is a trip with seven destinations ranging from a bakery to a meadery; a sit-down luncheon is included. Tours operate Wednesday through Saturday and cost is $152 per person, $134 group rate for five or more (10 percent of profits go to local community groups). It’s not so unlikely when you consider that during the ‘30s the American Distilling Co. in Sausalito became the country’s largest independent producer of hooch (Hence the moniker Whiskey Springs for the condo complex located there now.) Today two county pioneers turn out hard stuff. Tony Magee, of Lagunitas Brewing Company fame, fought hard for the right to distill brandy on his Tomales Bay property. Already a ranch with organically grown hops, English dessert grapes and herds of sheep, the Marconi Cove site now boasts a 1456-square-foot distillery making 280 gallons annually. Tasting is not allowed, but tours and sales are in the works. Stay tuned...Three Marin women with a brainstorm came up with what they say is the perfect margarita—all ready to pour into a salt-rimmed glass. Mill Valley resident Carey Clahan, along with Sydney Rainin and Jill Korst of San Anselmo, produce Laughing Glass Cocktails from all-natural ingredients, including their own tequila blend from a distillery in Mexico. Unimpressed by other ready-mixed drinks, they created their own with depths of flavor and fewer calories. At $20 per bottle, it’s selling out in local markets. A little something to have with drinks (or hummus or dips), Dosa Chips from Larkspur’s Table Café are now available in bright new packaging all over the place. Organic local ingredients
go into the gluten-free snacks based on the café’s’s classic dosas... Equator Coffee and Teas of San Rafael has a new organic, fair trade coffee, Ecuador El Batan, with medium-light body. The women-owned company harvests from its own sustainable coffee farms and pays attention to its home environment, too, using a unique roaster that reduces carbon emission and composting 100 percent of its chaff and grounds. We can't grow exotic spices here but they enhance our best home-produced foods. A company in Bel Marin Keys makes sure we get the freshest, cleanest products by milling and packaging its own stock. Local Spicery has been selling impeccable blends, salts and whole spices at the Marin Farmers Market and online for some time; now the family team of Nick Davoren, Evelyn Wood and their daughter Rachel have a brick-and-mortar site (with milling equipment by engineer Davoren) where customers can visit two days a week to pick up prepaid orders and experience the fragrant atmosphere (176 herbs, 26 dried chile varieties, etc.). The blends are featured in kitchens at top restaurants. Details: www.freshlocalspices.com. Chefs from San Francisco's popular Bar Tartine Nick Balla and Courtney Burns and chef Sean Baker of Gather Restaurant in Berkeley will bring their considerable skill to West Marin June 29 for Field to Farm, a barn supper at Pozzi Ranch. This is one of a series of events celebrating peak-of-the-season produce and other ingredients from nearby farms and ranches for dramatic dining experiences on agricultural lands. Rancher Joe Pozzi will lead a walk where guests can meet his sheep and see how lucky they are to live where they do. Fresh, homemade specialties entice using organic, local ingredients

he cheerful window boxes brimming with bright red flowers beckon passersby in to the inviting atmosphere of Bistro Ginolina. Warm lighting and yellow walls and curtains cast a cheery glow around the dining room while gorgeous Murano glass chandeliers capture your attention. The fragrance of fire from the wood burning oven signals fresh pizza might be a good choice. The menu is chock full of dishes that sing with authentic Italian

The market with good ears At United, they really listen to their customers and work hard to meet their requests
flavor. Gino LaMotta adds a dash of his native Naples to the seafood soup, using a host of shellfish, calamari and salmon in a light, delectable broth. The house made gnocchi, is sure to please, as is the sautéed baby octopus with tomatoes and both dishes are baked in the wood oven for that signature smoky flavor. Spring artichokes are on the menu with house made green and white tagliolini and lobster in a saffron cream sauce and also topping the Pizza Capriciossa along with mushrooms, prosciutto Cotto, tomatoes and mozzarella. Marinivores will be glad to know that ingredients are sourced from local farms and purveyors and many of the vegetables and greens are organic. Chicken from Mary’s, beef from Painted Hills and eggs from Chasey Farms contribute the clean flavors of their pasture raised, grass fed upbringing. The mouth-watering menu changes every 2 or 3 days and there are always 7 or 8 specials each day so LaMotta can capture the essence of the season. His partner, Lina Rossotti, tends bar and serves up some scrumptious cocktails and deals on wine and beer during Happy Hour, Monday to Thursday from 5-6:30. In addition, a menu of small plates and salads with bargain prices makes for an easy dinner. Think piping hot margarita pizza, kale Caesar salad and a chilled glass of Pinot Grigio for less than a round trip ferry ticket. he bright yellow sign was a beacon welcoming customers to the Rossotti Ranch booth at the Sunday farmers market in San Rafael. The eye-catching Grown Local Marin sign let customers know that Rossotti’s goat and veal was produced right here in the county. The year-long pilot project is meant to shine attention on farmers and producers from Marin; as every good Marinivore knows, spending dollars on locally grown food supports the county’s agricultural community and its economy. There are many benefits to supporting the Grown Local Marin campaign by buying members’ products. The food travels less distance from field to table, cutting down on fossil fuel use
and lessening the impact on the environment. Vegetables, fruits, dairy and meat that are grown and raised in our community are healthier for our bodies and buying it helps farmers to grow their businesses and maintain agriculture in Marin. Getting to know the folks that grow the food you eat is an important building block to learning about nutrition and staying connected to the seasonality of food systems. Keeping dollars in the local economy creates jobs, sustains vibrant communities, fosters entrepreneurship and supports product diversity. The pilot project was inspired by the successful Sonoma Go Local campaign, a cooperative of businesses, residents and non-profits inspired to come together and promote made in Sonoma products and merchants after a Sonoma State University study was published. The study analyzed the benefits of buying Sonoma-produced goods at Oliver’s Markets vs. buying national brands from chain stores and found that tax revenue, job creation and business income doubled when consumers supported the local goods. The Grown Local Marin project hopes to expand and eventually partner with local retailers and restaurants. ✾

ut in the wilds of Tomales, a refugee from Silicon Valley has formed a dairy to make mozzarella di bufala, the traditional cheese of Italy. This cheese is made from the milk of the water buffalo, a very large breed with dangerous looking horns. The endeavor is not to be taken lightly as everything from milking the beasts to creating the cheese’s ethereal texture is unimaginably difficult. Still, the delicate nature and addictive flavor of mozzarella di bufala is enough to drive the most practical people to drop everything and acquire a herd of water buffalo. Craig Ramini began this endeavor in 2009, buying five pregnant water buffaloes from a dairy that went bust in southern California. The road has been long, with some twists and turns

but cheese production is finally starting to amp up. With a herd off 44 now in place, the first hurdle was to figure out how to milk the animals. They don’t take kindly to getting their udders vacuumed of milk so he had to redesign his barn and milking stalls to hold only two buffalo at a time. Then milk production was hideously low due to noisy distractions, so he had to seal the windows and move the milking motor outside to foster a quiet atmosphere. Once there was a quantity of the high fat milk, Ramini started making the cheese. His first attempts were rubbery and tasteless but after training with an Italian cheese expert, he started to get the hang of it. His goal is to get 79 gallons of milk per day from his animals and produce mozzarella di bufala year round. The essence of farm to table shopping Market farm crops, ultra local honey and community spirit spell success
F
or 17 years, the Canepa family has been growing organic produce at the Mill Valley Market Farm in Glen Ellen. On four acres, they raise a bevy of vegetables and fruits across the seasons. Right now, the market bins are bursting with four types of tender lettuce, including gem, red butter and red leaf, fennel, crunchy radishes and nutritionpacked Dino kale. Coming in the summer are juicy heirloom tomatoes, bunches of fragrant basil and four types of zucchini, including eight ball and the flavorful striped romanesco variety. The Canepas till the soil plant the seeds and harvest the vegetables at their peak and within 6 hours they are in the produce bins at MV Market with the dew drops still on the leaves. Fresh produce from the farm to the market in the same day: a Marinivore’s dream. In addition to super-local vegetables and fruits, the market’s aisles are chock full of goods from around Marin. This year they will be carrying honey from three VERY local apiarists as a response, in part, to customers asking for local honey to help their allergies. One of the beekeepers is co-owner David Canepa and another is Dave Justice from the MVM produce department, keeping supply in the neighbor-
hood. The shelves are stocked with a large selection of granolas from Marin makers as well as hot sauce, pasta, pesto, breads, cheeses. All over the store labels designate items from Mill Valley and Marin. The market has an innovative beer and wine club which introduces members to select and unusual varieties. Carefully chosen by the staff, the selections are delivered to members on a regular basis. The clubs are yet another exceptionall offering that sets MV Market above their competition. In addition, the store has a donation program called Shop and Give, which collects funds for over 140 local nonprofits. A percent of customers’ purchases are given to the organization of their choice, which, since 1992, has raised over $900,000. rake’s Bay Oyster Company is an operation full of superlatives: the largest producer of oysters in California providing 40% of its shellfish production, the last oyster cannery in California and producer of the only shucked product made in the state.
