W
ith its world-class cheese, grass-fed beef and numerous organic farms, Marin has quietly become a region revered for its high-quality, sustainably produced food. With as many as 15 farmers’ markets in the county and a seemingly steady stream of North Bay-produced products that include everything from Icelandic yogurt and fair trade coffee, to sparkling mead—it is safe to say this renaissance has reached a critical mass. Perhaps the most telling sign that Marin’s food scene is bursting at the seams is the recent and enthusiastic support for Measure B. Introduced by the county’s Board of Supervisors on the June 3 ballot, the measure proposed building a $20 million, year-round permanent home for the 32-year-old Civic Center’s Farmers’ Market. The planned overhaul entails moving the market to a nearby vacant gravel lot (currently used to sell Christmas trees) and will include an open-air canopy and a 30,000-square-foot building—think Oxbow Market in Napa and San Francisco’s Ferry Building. Portable toilets, rickety tables and getting doused by spring showers will all be things of the past for the 200 vendors who show up to sell their local bounty to 10,000-plus people who flock to the weekly market on Thursdays and Sundays. California’s third largest farmers’ market is well-deserving of a permanent home and structure, but a nod to the pioneering small groceries that came before these farm-driven stalls is in order. Still owned and operated by the founding Canepa family, Mill Valley Market has been around since 1929 and is arguably the most well-stocked specialty retailer in the county—with its vast selection of wines, specialty foods

and locally produced artisanal products. Scotty’s Market in Terra Linda first opened its doors in 1957 and prides itself on quality deli offerings and gourmet products. Point Reyes Station’s Palace Market traces its roots back to 1883, and the owner was an early adopter of organics and locally grown food. Third-generation family-owned Toby’s Feed Barn, also in Point Reyes Station, opened its general store/barn in the mid-70s, and the business has morphed to include a community space and a yoga studio. In addition to these pioneering retailers, newcomers like Dennis Cooper are redefining what markets look like today. Cooper’s Public Market opened in January on Novato’s Grant Street and offers what he refers to as, “staples and delicacies produced within 30 miles of Novato by family-owned sustainable farms and businesses.” Cooper’s small store features a coffee cart with made-to-order espresso drinks, very freshfrom-nearby-farm chicken eggs, and buckets of organic horse manure sold by weight. Cooper’s interest in fostering and supporting small producers is also evident in his deli-case stacked with products boasting hand-printed labels. A homegrown sensibility permeates his cozy space. Maggie Gilbert’s Parkside Bakery in Stinson Beach also promotes a locavore philosophy, but her highly curated offerings include her own favorite chocolate, wines and olive oils that may not be exclusively from the county. Further north in Healdsburg, SHED is cafe, market and community space all in one and recently won a James Beard award for its stunning modern and open-air design. Even restaurants like
Farmshop in Larkspur have plans to begin selling the produce, wines and meats they source for their daily changing menus. With so much activity on the food front in Marin, it’s no surprise the Specialty Food Association has taken notice. Producer of the annual Winter Fancy Food Show in San Francisco, the not-for-profit trade organization boasts as many as 300 members in the North Bay alone. As a result, they have launched a regional initiative that includes networking, education and community-building events scheduled to roll out this summer. The group’s objective is to bring established producers together with newcomers to share ideas and support one another as the industry continues to grow. (Full disclosure: I do contract work for the Specialty Food Association.) It’s an exciting time for the food community in Marin. So often overlooked for its sexier wine county neighbors, the time is ripe to celebrate our own extraordinary farmers, distillers, yogurt-makers and so much more. ✾

ow many cows does it take to make $63 million? According to a recent report released by the Marin County Department of Agriculture, Weights and Measures, somewhere around 33,000. The report logs a record gross value of agricultural production in Marin this year at $84.3 million—up 4.9 percent in 2013 from 2012 when the previous record was set. Livestock and livestock products made up for more than half of the total number at $63 million. From 2007-09, agricultural production in Marin faced a downward trend. But in 2011, the value peaked at a gross value of $56 million, $70 million in 2012 and, again, in 2013 at $84.3 million. And it’s no wonder why the industry is booming, according to officials from the Marin County Department of Agriculture, Weights and Measures—Marin County produces about 20 percent of the Bay Area’s milk. Milk production, which falls under the category of livestock products, precipitated the highest percentage jump in Marin, closely followed by poultry, which includes eggs, with an 89.9 percent jump and a 74.4 percent jump in fruit and vegetable production, according to a county press release. Field and hay crops represented $9.9 million, aquaculture was $5.5 million and fruit, grape and vegetable crops were $5.3 million. Stacy Carlsen, an agricultural commissioner for the Marin County Department of Agriculture, Weights and Measures, said the percentage increases can be largely attributed to a new online reporting system implemented in April 2013 by the California Department of Food and Agriculture (CDFA). The updated system allows for more complete data to be extracted from producers. In the past, surveys were filled out online on a volunteer basis—yielding results as low as 30 percent. “My appreciation goes to the many growers, producers, individuals and organizations for their cooperation in providing the information necessary for this report,” Carlsen says. A county press release attributes a large portion of the fiscal jump to increased egg production. Egg production boomed in 2013, mostly from chickens raised on pasture, according to the new statistics. Officials add that Marin’s registration numbers for egg operations and producers may have doubled in 2013, since the state now requires any person engaged in business as an egg producer or handler to be registered. “[Producers] are required to register,” Carlsen adds. “But we knew we had a growing industry over the past few years, and the stats finally caught up with the actual numbers.” Carlsen also attributes the industry’s boom to Marin’s role in organic food production as a “forefront leader” when it comes to supporting locally produced food’s sustainability in the community through approaches like the farm-to-table movement. “Farm-to-table is a term that’s analogous—selling to the farmers’ markets or directly to restaurants. We have a very vibrant agricultural
community and are willing to share when it comes to tours,” Carlsen says. “I think that’s the newer way than farm-to-table. I know who my farmer is, and not many can say that. There’s a higher order—it’s not just the product, it’s the person who grew the product.” As for what’s in store for the future, Carlsen expects that the industry will experience “modest growth in 2014.” He adds that market growth is dependent on demand. “It depends if more people get into it. But with some things you reach a capacity for all [the market] can handle.” Regardless, the growth bodes well for the county and with trending topics like the farm-to-table, or farm-to-fork movement, there’s no shortage of demand in sight. But don’t rush out to buy cattle just yet. Carlsen reiterates that the numbers in the county’s report are gross value, not profit. Farmers and ranchers still must pay their bills and make cost deductions. The report, which was shown to and accepted by the Board of Supervisors on June 3, also includes information about organic farming, pest detection and exclusion, biological pest control, livestock protection from predators, invasive weed management and sudden oak death. lizabeth Hill places a cheeseboard containing five different types of Cowgirl Creamery cheeses on a picnic table—speckled with sun and decorated with books full of history, maps, stories and old photos of West Marin—outside Tomales Bay Foods in Point Reyes Station. She then presents a challenge to the group of five friends that has traveled to the area for the weekend: Name your favorite cheese. “Daunting,” is the first response, followed by laughter. “I know it’s hard to narrow it down,” says Hill, founder and operator of West Marin Food & Farm Tours. “It’s like choosing between children, right?” Naming favorite edibles and introducing new ones is all part of the dream job Hill has created for herself: guiding groups of people through West Marin (or the “Wild West,” as she calls it) on gourmet adventures by van to sample the best local cheeses, baked goods, grass-fed meats, produce, wines and oysters. This one, on the Friday before the unincorporated town celebrates the annual Western Weekend, is the seven-stop “Flavors of West Marin” tour. “It’ll be a lovely day,” Hill promises, after an engaging rundown of the area’s long history as an agricultural center, rich tales of the people who worked hard to preserve the land and insight into the flourishing sustainable food movement—sprinkled with encouragement to “dig in!” and countless “mmmmm’s” from the satisfied group. The first stop of the tour sets the tone for a day full of behind-thescenes glimpses of the processes behind the region’s most beloved edible creations.

“We’re sneaking in the back,” Hill says, leading the group past a pile of almond wood used to feed the fire at Brickmaiden Breads. Inside the small bakery, three women—veiled by a cloud of flour—are swiftly kneading, rolling and pinching the dough that will later be placed in the oldfashioned brick oven to become crunchy-on-the-outside and softand-fluffy-on-the-inside loaves. “You can see how much effort goes into one baguette,” Hill says, before passing around a warm one for the group to yank pieces from. “It’s definitely a labor of love.” Hill’s admiration of and appreciation for the hard work behind the culinary gems that she reveals throughout the day is contagious. Her love of not only the food, but the community that fosters it, shines through in everything she does—from waving to fellow locals on the street, to wishing someone a happy birthday and another congratulations, to slipping homemade cookies to employees (“You are such a doll,” they tell her). A certified natural chef with a master’s degree in education, Hill says that her tour company—which was born after friends she invited to the area were so impressed by her hospitality and knowledge that they convinced her to write up a business plan—is the perfect combination of her love of food and her passion for teaching. And the East Bay native’s fondness for the area sprouted when she was young, visiting her grandparents in West Marin every summer. “I just fell in love with it,” she says, sharing the history of her great grandparents settling in Inverness in the late 1800s, and reminiscing about sailing on Tomales Bay and picking huckleberries. “Let’s wander to our next destination,” she says, shimmery angel wing earrings swinging above her crisp white chef’s coat, and food-lovers in tow, munching on bread. Past what will soon be a community farm stand, she introduces the group to the popular Bovine Bakery, opened in 1990 and famous for using local organic ingredients. “It was kind of an overnight hit,” she says, describing the scene on weekends, when swarms of cyclists line up outside. A ride in Hills’ big white van—adorned with a hand-painted-on-wood dashboard ornament that reads, “We [heart] Drake’s Oysters” (protecting the land has not been without challenges, she explains)—leads to Marin Sun Farms, founded by a fourth generation Point Reyes rancher. The shop/eatery, which offers year-round, 100 percent grass-fed meats, displays bags of hickory smoking chips and a beef chart next to a large
glass case containing things like Hawaiin-style short ribs, pork garlic sausage and beer bratwurst. “I want to grill ALL of this,” a wide-eyed guy on the tour says. Lunch on the lawn, at a table with hay bales for seats, consists of brussel sprouts flash-fried in pork lard, four different kinds of beef burgers and water buffalo milk gelato for dessert (the announcement of one exotic flavor— “candy cap mushroom”—garners a loud, collective, “Whaaaaaaa?!”). With full bellies, the group heads to the roadside Table Top Farm, “a cute little organic farm” that greets visitors with mason jars full of brightly colored flowers, bins of fresh produce and a whiteboard that reads, “Thanks for eatin’ your greens.” “It’s all on the honor system,” Hill says of her friend’s farm. “You take what you like and put your money in the slot.” She tells the group to feel free to wander through the field, where one woman discovers ripe raspberries. She holds one up to the sky and then savors it. “These taste better than the ones back home, and not just because I handpicked them,” she says. In the van, Hill’s love for the natural landscape is evident at every turn—from the way she admires the hills and the grazing animals to the way she wistfully glances across the bay at the beaches she swam at as a kid. “Here are some of the bees,” she says, pulling into Heidrun Meadery, which specializes in the production of naturally sparkling meads using honey sourced both locally and from places like Hawaii and Oregon. Tastings—which take place in a greenhouse lined with California natives, succulents, edibles and herbs—are followed by a tour of fermentation equipment and a visit to the hives. “The bees are happy,” says Carly Verhey, director of sales and marketing. “They’re really productive these days.” Back on the road, the skies turn from sunny to foggy as we approach Hog Island Oyster Company, the last stop on the tour. Hill pulls into a space marked by a giant rock engraved with the words “live to shuck.” “Let me tell you guys a little about the oysters,” she says, holding up a book titled Oyster Culture. Two “big old batches” arrive to a table the group has gathered around, and slurping from shells begins. On the way back, Hill points out the dairy farm where they make a favorite blue cheese, and explains how the tides affect the oyster beds that line the marshes. Her passengers are full of good food, laughing and feeling connected to the land. “Back to the big city,” Hill jokes, heading into Point Reyes Station. I
n Marin, there’s more to the word “organic” than meets the eye or, er, mouth. Home to endless rolling hills, open spaces and Kodak moment-certified national parks— Marin County’s greenery is just as striking as it is renowned. And, with its abundance of unscathed space and locally operated farms, it’s also known as a leading proponent of the farm-to-table movement. For centuries, farm-to-table thrived throughout the nation without its (currently trending) coined concept. But, what exactly defines farmto-table? Lucky for those of us not well-versed in the foodie realm, the definition lies at the surface of the term: producing food locally and distributing that food to local consumers. But what originally swept the nation in its earliest stages of settlement and development as the most sensible way to dine, soon became ousted at the turn of the century. With the popularity of importation of goods and packaged products rising during the World War I era, families were prompted—and encouraged—to prepare for the unknown. Mass production and culinarygone-corporate bloomed, leaving small farms feeling the heat in the, well, kitchen. Restaurants looked for affordable and convenient goods, even if it meant that the quality of the food would suffer. The push to return to traditional locally grown goods kickstarted the farm-to-table movement by those who felt that the culinary world was in need of a little revolutionizing. And in Marin, this movement sprouted into action, evolved and swelled, thanks to organic farming initiatives, sustainable agriculture and a plethora of community-based support for agriculture. Changes in food safety laws also piqued inter-
est. And suddenly the food industry’s “mystery meat” lost its luster and there was more demand for fresh food. The Bay Area’s first taste of the movement was in Berkeley, Calif., in 1971, thanks to Alice Waters. Waters’ first step in the culinary revolution was the opening of her restaurant Chez Panisse, which embraced the locally grown- and-produced product ethos. Today the movement has grown beyond its borders in the bay, and has reached nearly all corners of the country and the world. And it didn’t take long for the farmto-table movement’s mark and momentum to cross the Richmond-San Rafael Bridge; Marin has its fair share of farm-to-table supporters. The Lark Creek Inn, now known as Tavern at Lark Creek, has embraced the concept since its opening in 1989, and today, various spots around the county proudly advertise a list of local goods you can find on their menus. It’s no shock that the movement hit Marin—our open spaces are scattered with farms, ranches and farmstays: from Devil’s Gulch Ranch to Marin Sun Farms.
