Being in the school of Art & Design I had the opportunity to take a variety of art electives. Performance Art and The Art of the Japanese Tea Ceremony stick out in my mind as classes I would never have taken otherwise, but were extremely interesting and challenging. And of course my summer doing photography in Verona, Italy, is a favorite, as well!

“two o’clock,” the customer service representative muttered. “Two o’clock?” I questioned. “Two o’clock,” he echoed. “That’s the soonest.” It was over. For the first time in my life I would be repeating an academic level. The rub—it was my final quarter before graduation. I dashed through the glass double doors, sprinted across Liberty Avenue, darted up Penn Avenue and into the Art Institute of Pittsburgh. I raced up the five flights of stairs to get to Mr. Easter’s classroom. As I walked in I puffed, “Mr. Easter, I need another extension. Just until two.” He stopped stuffing his soft briefcase. “Noon was the deadline, Chris,” he said. I slumped in defeat. I wanted to blame Washington Reprographics for not getting my project printed fast enough. I wanted to blame Mr. Easter for not understanding that by failing me, I wouldn’t be able to graduate on time. I wanted to blame someone. I could only blame myself. It’s a sickening feeling. But he didn’t fail me. I failed me. I learned a powerful lesson that day. Procrastination truly is the thief of time. One lazy action—putting off my project until the deadline—cost me $3,000 and three months of my life. I live with intention and on purpose now. I’m quicker to make decisions, swifter in my actions and I leap at opportunities. I know what I want now and how to take heavy action to get it. I paid the price of laziness before and I didn’t like the sticker. Since I’m only here once, I want to capitalize on things as they come.
In this issue, I invite you to read about Robert Farmer’s surf school, FarmDog, where he teaches cancer patients how to surf. Despite their diagnoses, these people aren’t putting off living. They’re braving the waters of the Atlantic Ocean in Nags Nead, North Carolina, and loving it. The profile of Anders Jakobsson, an endurance swimmer who has bested the Escape from Alcatraz Triathalon three times and is now taking aim at swimming the English Channel and then around the island of Manhattan, will inspire you. He’s going right at life. Living out his bucket list. How about you? What are you not doing that you really want to do? What is your procrastination costing you today? Putting things off comes at a price (remember my $3,000 learning experience?). In the interim it seems harmless, but the long-time effect of procrastination has the power to suck the life out of us and rob us of our dreams. One day and some day never come. But we have today. lose weight fast, only to slowly gain it all back. People need a realistic lifestyle approach–one that gives the best health outcomes over time.” LWell’s plans emphasize the prevention of age- and weight-related diseases, particularly diabetes. Offerings include exercise classes, nutritional advice, cooking courses, support groups and weekly weigh-in sessions. Staff will develop individual strategies for each Lackey patient—focusing on diet, fitness, sleep habits, stress reduction or some combination—and track lab data, such as blood sugar, cholesterol and triglyceride levels, over time. Lackey patients will mix with paying LWell clients during the eight-week period, says Carol Sale, the clinic’s executive director. “They won’t be identified to other members, or put into any separate group,” Sale says. “This is a terrific opportunity for them to fully engage in a community program that is very motivational. We’d love to build those kinds of partnerships with other agencies and businesses.” The first round of data should be out in the early fall, Fornshell says, with the study continuing into next summer. For James Tugwell—a paying client, not a Lackey patient—the program had an impact on his diabetes within a month. “Everyone there shows a lot of concern, plus they’ll laugh with you,” he says. “You know they care, which makes all the difference.”

After three months of regular exercise at LWell, a Yorktown, Virginiabased health and wellness center, former couch potato James Tugwell didn’t have a dramatic weight loss story: he’d shed a modest 11 pounds. He did, however, have a dramatic diabetes story. Tugwell, 64, a Type 2 diabetic diagnosed in 2012, saw his blood sugar levels decease and stabilize, despite his continuing struggles with a sweet tooth. His energy and mood soared. He’s confident that if he keeps up his regimen of an hour of cardiovascular and strength training several days a week, he’ll be able to reduce the insulin and two prescription pills he takes daily. “I just care about my life differently,” says Tugwell, a retired construction worker and truck driver who lives in Yorktown. “I had been lying on the couch, getting old and stiff and hurting, but these days I feel like I’ve got my life back.” Now, thanks to a $35,000 grant from CVS Caremark, a group of low-income patients from the Lackey Free Clinic in York County will get a chance to see if the same approach can work for them. With the money, Lackey will partner with LWell on a wellness study to measure the clinical effects of strategic nutrition, exercise and lifestyle changes on chronic health conditions, particularly diabetes. Twenty-one clinic patients, almost all diabetic, will go to the fitness club for eight weeks of free coaching and classes; Caroline Fornshell, LWell’s owner and the study’s leader, will then follow them for a year to provide additional support. “Based on my experience, I’m very confident that we’ll get good outcomes,” says Fornshell, a registered dietitian and certified personal trainer who has partnered with Lackey in the past. “We’re not going to starve people so they can

anders jakobsson has a dream… and a plan to achieve it. The Swedish-born Jakobsson isn’t the typical endurance athlete; the three-time Escape from Alcatraz (EFA) triathlon finisher also once deadlifted 683 pounds. His 5-foot-9-inch frame has carried as few as 132 pounds—his Ironman triathlon weight—and as many as 225 pounds—his powerlifting weight. His dream, a solo swim of the English Channel, something Jakobsson calls “the Mount Everest
EFA swim, Jakobsson got stuck in the current around Alcatraz Island. He later said “it [was] like swimming in a washing machine.” After 20 minutes of sprint swimming, he broke free and continued. For Jakobsson, each success is a stroke towards the shores of the English Channel and his dream. Jakobsson cites solitude as a major challenge in endurance swimming, as well as the mental gymnastics needed to break down overwhelming tasks into manageable bites. Despite

Swimming may be pure, but it’s not for the faint-of-heart. Willingness to face and overcome adversity is essential. In the 2013
the solo nature of the sport, Jakobsson knows that no man is an island. “Assembling the right support team is critical,” he notes. Winners need confidence, and Jakobsson has what it takes. “I have never failed a quest I have started,” he declares. He doesn’t consider physical illness to be a failure and accepts when his body won’t cooperate; he regroups, he analyzes and he moves forward. That’s all in keeping with his proud Viking/Swedish roots; Anders literally means “man” or “manly” in his native tongue. The Channel swim in 2017 will be his 50th birthday present to himself
and following that feat Jakobsson plans to complete his “triple crown” by swimming around Manhattan and completing the 21 statute mile swim from Catalina Island to the California mainland. Says Jakobsson of his quest: “Each swim is unique. I have never been a one-and-done type of guy. I see many triathletes do an Ironman
and they are done, the bucket list item crossed off. I’m not that type. I’m the guy who thinks of the next big thing after the one I’m planning. It’s not a 1-year, 3-year or even 5-year plan. It’s a commitment for a long, long time.”

Come into a tabletop position (hands and knees hip-width apart) and curl the toes under as you push back into an inverted ‘V’ shape. Outstretch the fingers, creating an arch within each palm, and push your weight back into the hips and legs. Look directly at your thighs, allowing the neck to hang between the arms but in a neutral line with the spine. Without moving the body, think about pulling your navel into the spine and rotating the thighs inward. For a deeper stretch, come up onto the balls of your feet, then straighten the legs and drop the heels toward the mat. Hold for 30 to 60 seconds. If you need to modify, come to the knees or use a chair for support by placing your hands on the chair seat. An excellent counter-stretch to this is Child’s Pose (featured in our June 2014 issue).

and treadmills, a specialized climbing apparatus called a therapy tread wall. The warehouse-like space also allows therapists to perform running and pitching video analyses. These types of analyses help identify the smallest technique errors that may be contributing to pain, injury or poor performance. Athletes can sprint, kick a
medicine physical therapy supervisor for the Hampton center and for the Oyster Point center in Newport News. Therapists are trained to work specifically with children and tailor recovery tactics toward their growing bodies. Although sports medicine rehab is also offered on the Peninsula at the Oyster Point center, the Hampton center features a spacious gym that gives therapists much more room to work with their patients, Stites says. The gym is full of exercise equipment: weights and balance balls, stationary bikes
soccer ball or throw a baseball into a net and have their form scrutinized. The health center offers analysis services to any young athlete interested in helping his or her form, not just therapy patients. “Although we’re sports medicine, we don’t just treat athletes,” Stites says. “We can help any kid who can benefit from strength and training.” The Hampton health center also offers CHKD’s programs for dance medicine, ACL injury prevention for female athletes, clinics for trainers and coaches, and concussion rehab. Two private treatment

One of the center’s main focuses is sports medicine rehab, and it features a state-of-the-art rehab area. Pediatric sports medicine is unique to CHKD, says Sara Stites, the sports

eebrin bandy was jumping on an inflatable bounce house at her school’s field day in June when it suddenly lost air right as she did a flip. The 11-year-old Hampton, Virginia, girl landed on her back as the vinyl began to deflate beneath her, and she made contact with the ground. A visit to the doctor found she had fractured a vertebra in her back. Next stop: physical therapy. Since her daughter was a patient at Children’s Hospital of The King’s Daughters, Toni Brock expected to have to Norfolk for appointments. She was pleasantly surprised when she was given an appointment at the children’s hospital’s newest health center in Hampton. The May 27 opening of CHKD’s community-based health center on Butler Farm Road marks the fifth for the Norfolk, Virginia-based health system. The other health centers are located in Newport News, Gloucester, Williamsburg and Chesapeake, Virginia. Each of the centers offers a variety of outpatient services for pediatric patients including primary care, specialty medical and surgical care, and rehabilitative and diagnostic services. “We’re really trying to bring the facilities that CHKD has closer to families on the Peninsula,” says CHKD

Stites says about 25 percent of patients have been transfered from the Oyster Point center—the rest have come from new referrals. Eebrin Bandy was a pediatric patient at Oyster Point when she was referred to the Hampton center for six weeks of physical therapy to treat her back. Eebrin’s mom, who recently watched physical therapy assistant LaChelle Graziano guide her daughter through squats and other exercises, says the location of the center— closer to home—makes it easier to make twice-weekly appointments. And after just two weeks, therapy was already helping her daughter stand up straighter than she had even before her injury. “I love it,” Brock says. “I’m so glad they put this center here.”

Tears occur from overuse and are commonly seen in people over 40, those with jobs that require long periods of standing, runners and the overweight, or in those who do not wear supportive shoes. A stabbing pain in the heel that’s especially severe when walking first thing in the morning is a hallmark symptom of plantar fasciitis. The pain usually decreases somewhat during the day after the plantar fascia loosens with walking, but can worsen with prolonged sitting.
Diagnosis
Plantar fasciitis is diagnosed by physical examination and by questioning the patient about the pain, when it occurs and their lifestyle and exercise habits. No imaging studies are necessary, unless it’s suspected that a bone spur, a fracture or a pinched nerve near the spine might be causing the pain.

Treatment for plantar fasciitis begins with non-steroidal, antiinflammatory drugs, stretching or physical therapy, and using a splint at night to keep the foot in a flexed position allowing the plantar fascia to stretch. For more difficult cases, a steroid injection into the fascia can reduce the inflammation. The use of sound wave or laser therapy may also be helpful. Surgery is rarely indicated to release the plantar fascia from the heel bone. Prevention is the best treatment. A stretching regimen, wearing supportive shoes and maintaining a healthy weight can help to prevent this painful condition.

Robert Farmer’s surf school offers sand, sun and serenity to cancer patients and survivors

at first, robert “farmdog” farmer simply wanted to share the sport that has given him the life of his dreams with people who have faced a disease that has tried to steal away their lives. But as soon as Farmer began teaching surfing to young adult cancer survivors, he realized they had far more to share with him. “They are such battlers–people with gnarly scars, people who were out surfing about a minute after finishing chemo,” says Farmer, a nationally certified instructor and founder of Farmdog Surf School in Nags Head, North Carolina. “The last thing they want is sympathy or to be treated differently. They just want to charge in. It’s pretty humbling. I think to myself, ‘Would I be as amazing as these people?’ I don’t know. You can’t ever know until you are faced with something so completely out of your control.” Farmer, 46, partners with First Descents, a Colorado-based nonprofit that organizes free outdoor adventures for cancer patients and survivors, most ages 18 to 39. Through surfing, kayaking and rock climbing camps, the organization helps young adults rebuild self-esteem, strength and a sense of hope as they connect with other survivors in their age group. Farmer, a Lynchburg, Virginia, native and one-time student at the College of William and Mary, hosts First Descents participants for weeklong summer camps. Last fall, he also took 14 survivors to Bali for 10 days and then he ran the New York City Marathon as a fundraiser for First Descents. He plans to lead another international trip in November, this time to Mexico. Young adult cancer patients tend to face different physical and emotional challenges than children and older adults. As they go through treatments, they might be trying to date, get married, start a family, tackle a new job, raise small kids or generally become more independent. They also can feel isolated from healthy friends. “I hadn’t known other people my age with cancer,” says Britte Roossien, a 37-year-old Massachusetts woman who had Hodgkin lymphoma, a cancer of the immune system, and went to a Farmdog camp in June 2013. “To be able to be so open with it, and even joke about it, was
very comforting. Back home cancer had been the elephant in the room. People didn’t know how to talk about it.”
Filling a gap Brad Ludden, founder of First Descents and a Montana native, has never had cancer. As a teenager, though, he watched an Aunt battle breast cancer in her 30s. “She would call my dad, a doctor, because she really didn’t have anyone else to turn to,” Ludden says. “So we went through it all with her.” A former professional extreme whitewater kayaker, Ludden initially focused his volunteer work on pediatric cancer patients, teaching his sport at a summer camp where his mother also volunteered. Then he did some research into available support groups for all age groups. “I found over 250 pediatric programs around the U.S., but none for young adults,” he recalls. “There was a very complex population that was getting no attention.” In 2001, Ludden, then just 20, ran his first weeklong kayaking program in Colorado after two years of planning. He never expected First Descents—the name refers to a kayaker’s attempt to navigate a new section of a river—to grow into a full-time career. The nonprofit now plans nearly 40 weeklong adventures a year, mostly for first-time participants, along with a growing number of day and weekend programs, a few camps for survivors in their 40s and caregivers, and some special trips abroad. First Descents has partner sites in 16 states and is working to expand its geographic reach (it offers some scholarships to cover travel expenses for now). The core sports offerings—kayaking, surfing and rock climbing—all require participants to succeed on their own strength and skill, although each person has expert support and an individually tailored plan for safety. “If you stand up on a surfboard, make it down a river or scale a rock, you know for sure that you did that,” Ludden says. “Nature doesn’t care what you’ve gone through, so you’re not going to get any breaks. That’s very powerful.” It was for Britte Roossien. When she was diagnosed with cancer in 2010 after months of mysterious fatigue and body aches, Roossien’s children were just 2 and 4 and she was busy running a full-time day care, which she had to
close immediately to protect her fragile immune system. Surgery, chemotherapy and radiation to treat multiple tumors in her chest and neck sapped her strength. “My life went from 100 miles per hour to zero,” Roossien says. “Radiation especially just absolutely wore me out. I had no energy at all. I lost my voice. Even after it was over, it took me about two years to have days where I wasn’t in need of a nap. It was a really, really long road.” A longtime tennis and soccer player, Roossien hated feeling so weak. A doctor who knew of her athletic past told her about First Descents, and when a spot opened up at a camp at Farmdog Surf School, Roossien signed up despite never having surfed before. She was terrified to go. The first couple of days, Roossien fell constantly. But with help from Farmer and other instructors, the newly dubbed

“Big Red”—everyone at the camp got a nickname, hers for her red hair— gradually got the hang of standing on her board. She also got to share her story and struggles with other cancer survivors as they bobbed on the waves. “Surfing changed everything,” Roossien says. “It gave me back the confidence I had lost. To know my body was strong enough for me to do this was so empowering. It became a new starting point for me.”
The draw of the ocean Farmer isn’t surprised that surfing has such power. He first fell in love with the sport more than 20 years ago on a trip to the Outer Banks. He liked that even though he was athletic—he had been a talented basketball player and was on the track team in high school—surfing was a challenge.

“It takes a long time to get good,” he says. “Every day is different, every wave is different; the ocean is always throwing something new at you.” The wipeouts didn’t bother him, though: “Even when you’re learning, it’s just so healthy to be outside, to feel the sun and the salt water on your skin. It’s so immersive—a full-body experience.” Farmer has based his life at the ocean since 1992. He had spent two years at William and Mary, where he considered an anthropology major but could never settle into the academic lifestyle. “I was the worst student imaginable: a merit scholar who couldn’t stand being inside on a sunny day,” he says. He laughs that he’s “like a semester away from a degree in about four different subjects” from his time at William and Mary and as a part-time student at Christopher Newport University. As he tried to plot his future in Williamsburg, Virginia, Farmer worked at a natural food grocery store and deli and later launched a delivery service for organic produce and milk. He drove a rented truck to a warehouse in Washington, D.C., filled it with supplies and provided them to co-ops and stores from Richmond to Virginia Beach, Virginia, as well as to people’s homes in the Williamsburg area. After just a few months, the business had grown so fast that the produce distributor cut Farmer off and started its own route. They offered to hire him as a truck driver. “It just wasn’t me,” he

explains. “I was young, naïve and pretty self-absorbed. I wanted to surf, so I said, ‘Screw it,’ and I moved to the beach.” Down in the Outer Banks, Farmer worked in surf shops, opened a shop with several business partners in 2002 and started his surf school there in 2007. Farmdog since has moved to a freestanding location, where Farmer partners with two longtime surfers from Australia and one of his college roommates. With certification from the National Surf Schools & Instructors Association, Farmdog offers lessons in surfing and stand-up paddle boarding in private, group or adventure camp settings. The company also rents surfboards, wetsuits, bikes, kayaks and beach gear and runs three beverage bars—coffee, fresh-pressed organic juices and fruit smoothies—and a natural foods store. Farmer and his wife, fellow surfer Rachel, are now happily settled in Kill Devil Hills, North Carolina, with their infant daughter, Mae Love. “This sport has literally given me everything: my health, my career, my wife,” Farmer says. “I would rather teach people how
When First Descents initially contacted Farmer in late 2011, he was suspicious that the email was spam. After he checked out the group’s website, however, he was sold on the idea. “I was immediately certain I wanted to work with them,” he remembers. Farmdog hosted its first camp in 2012. Cancer survivors come at various stages of recovery: some back in good shape and looking perfectly healthy, others still extremely weak. One 30-something woman who stands out in Farmer’s mind had fought various forms of cancer since age 9 and had lost part of her scapula, a major bone that forms the back of the shoulder. With limited use of that arm, she could only master riding waves lying down on her board during her first summer at Farmdog. Determined to stand up on a return trip, the woman spent a year swimming and lifting weights to build strength. “When she got up and rode waves, it was one of the most moving things I’ve ever been a part of,” Farmer says. “Surfing can make people push themselves.”

While First Descents does pay Farmdog instructors for their time, they clearly aren’t in it for the money, Ludden notes. “They work so hard to make sure the participants have a good experience,” he says. “They put so much into it every time they go out into the ocean. Of all the programs we run, we get some of the best feedback from that one.” The surfing camp has created a lasting support network for Roossien, now working in sales and marketing and cherishing time with her son Jace, now 8, and daughter Wylie, 5. She keeps in touch with fellow surfers online and by phone and, along with her husband, Tony, ran the New York City marathon with some of them in November. In February, she went ice climbing on another First Descents adventure in Colorado. “I’m always looking for more and more challenges,” she says. “I’m not afraid anymore.” Farmer is ready to help as long as there are young cancer survivors who want to ride some waves. However, he’s quick to deflect any personal attention or praise. “The participants in First Descents,” he says, “are way more inspiring than some ridiculous old surf instructor.”

The way we spend our recreational time constantly changes, and to spice it up we often return to old classics, like lawn bowling, badminton, croquet and kickball. People are looking to socialize and be active without the intensity of other sports, which may be why there’s renewed interest in retro sports. Less taxing and more relaxing are great reasons to seek a slowerpaced game. Joe Flannery, a physical therapist from Tidewater Physical Therapy, says that as we age, risk of injury increases every year. “Sports that involve rapid starting and stopping places increased forces on our bodies thus increases risk for injury. Golf, lawn bowling, pickle ball and bowling leagues are team sports that are less stressful on the body,” he says. Another benefit is the intergenerational play—with a slower-paced game, there’s the opportunity for older people to share a beloved sport with their grandchildren. Behind the Williamsburg Inn, there is a beautifully kept bowling green for lawn bowling. The green has been there since 1966 and the local lawn bowling

The cornhole game history is older than many people know. It is also a history that is much disputed. It is believed that when the Germans first immigrated to the United States of America that they brought the game here. Over time the game has gone through some transformations, but it basically is quite similar to the original game. It is also said that the game was “rediscovered” in Kentucky in the 1900’s.
Kickball
Invented 1917 in Cincinnati, Ohio. Originally called “Kick Baseball” American World War II correspondent Ernie Pyle reported it being played by U.S. soldiers during the Tunisia Campaign, 1942-1943.

Talk about retro—there’s historical evidence that bowling was played in Jamestown and Williamsburg in the 18th century! “One of the best things about it is that it’s a very gentle sport. You don’t have to be big, strong or fast, it’s a game of finesse instead. It can be played well by older or very young people,” says Jack Edwards, the vice president of the Williamsburg Inn Lawn Bowling Club. A greenkeeper from the Williamsburg club staffs the green every day from 3 p.m. until 6 p.m. at the Inn during the season. “We show them how to play and get out of their way. They don’t need a lot of instruction or time. Plus, there’s no new skills, equipment or instruction needed,” says Edwards. The social aspect of retro sports seems to have huge allure. “That’s the appeal—lawn bowling is fairly easy to play competitively and socially. They play, converse and laugh at the same time. There are not a lot of sports where you can do that,” Edwards says. For younger people, joining a kickball league may be a throwback to the playground, but it can also be a social event to meet others in their 20s and 30s. Five years ago, James Maxlow, 37, of Newport News, Virginia, went to see a kickball game with friends who played—and the next season, he joined.

Racquetball
Joseph Sobekis is credited with inventing the modern sport of racquetball in 1950. The court’s walls, floor and ceiling are legal playing surfaces. It is very similar to 40—20 handball, which is played in many countries.
Badminton
The beginnings of badminton can be traced to the mid1800s in British India, where it was created by British military officers stationed there. Early photographs show Englishmen adding a net to the traditional English game of battledore and shuttlecock.
Bocce Ball
Throwing balls toward a target is the oldest game known to mankind. As early as 5000 B.C. the Egyptians played a form of bocce with polished rocks.
Lawn Bowling
The sport of lawn bowling can trace its North American beginnings to the 17th Century when English Colonists brought the game to the new land. A bowling green was built in Williamsburg in 1632, where the game is still played today behind the Williamsburg Inn. In 1670, Colonel Hoomes built a green on his estate at what is now Bowling Green, Virginia. Many of the new states named a town after this ancient sport played in England since the 12th Century.
Horseshoes
Modern versions of this classic sport use a more stylized U-shaped bar which is about twice the size of an actual horseshoe.

The game started during the summer of 1965 on Bainbridge Island, Washington, by Congressmen Joel Pritchard, William Bell and Barney McCallum. After coming home from a game of golf one day to find their kids bored and restless, they set out to create a game that would engage them through the lazy days of summer. They handed the kids ping-pong paddles and a wiffle ball, and lowered the net on their badminton court.
“In the initial season, the strongest draw for me was the social bond in our team and with the other teams; it would be a few seasons before I came to love the game itself by appreciating it on its own merits,” says Maxlow. Maxlow, a member of the WAKA kickball league in Newport News, says that teams have a wide range of ages and athleticism. “Most teams have a mix of those that play for the athletic experience and those that play for the social experience. The nice part is that anyone that can comfortably run around a field can play no matter their age,” he says. While kickball, and sister sport dodge ball, hail back to gym class, other classic sports, like badminton, croquet and archery, enjoy sporadic popularity. James City County Sports and Athletic Coordinator Angie Sims says that patrons have requested family kickball, as well as senior dodge ball. Sims says that racquetball, bocce ball, horseshoes and cornhole are other slower-paced sports back in vogue. Sometimes it’s a pop culture influence that leads people to a new way to play. “Archery is huge right now—mostly due to the Hunger Games and Brave—but also due to the outdoor/ environment movement that is sweeping the nation,” she says. MAPLE SYRUP A snippet of this historical elixir’s sweet story and how it’s being done here in Virginia

The third moon of the year is known as the “sugar moon” to First Nations, the native Canadians. When sap from the trees began to flow, families would migrate to the sugar bush to set up wigwams—the original sugar shack. For several days the tribe would tap into maples and collect sap. The First Nations drank the watery sap, which would probably compare to an energy drink today, and coated popcorn—another First Nations discovery—an early version of kettle corn. They also reduced the sap beyond the syrup stage until it crystalized into maple sugar. Today the process of making maple syrup has been revolutionized with processes such as reverse osmosis, which draws most of the water from the sap before it is boiled. This alone saves manufacturers up to 70 percent in fuel costs of this already very laborious process. V-shaped gashes and metal taps that used to be corkscrewed into the bark have been replaced by plastic tubing allowing for the sap to be vacuumed out, which replaces the romantic sound of steady drips into metal buckets. In Berryville, Virginia, Joyce and Travis Miller make syrup out of hickory bark they
forge in Virginia forests. The owners of Falling Bark Farm—most appropriately named—“wildcraft” their syrup. They harvest, clean and toast the bark to enhance the flavor. It then undergoes an extraction process, is aged and then filtered before minimally refined cane sugar is introduced. What does it taste like? “The taste is somewhat similar to maple in that it is very earthy. Some say ‘smokey’ tasting,” says Miller. “You can use it in all the same applications as you would use maple, only it has no distinct flavor. It is just a different culinary experience. More subtle in flavor— it lends itself to both sweet and savory dishes.” As true syrup die-hards, the Millers make sure they’ve got a bottle handy for those breakfast moments, “[It] just makes for an overall feel-good start to the day.” For some, the average cost of $70 per gallon for real maple syrup or bark syrup versus $16 a gallon for what French Canadians call sirop de poteau or “telephone pole syrup,” is a hard sell. But bark syrup’s complex flavor along with its healthy proteins, minerals and antioxidants, cannot be imitated.

in my home, we don’t take maple syrup lightly. And that goes for pouring it on pancakes, French toast and using it to cook with. My husband is from Vermont, which produces twice as much maple syrup as any other state. And as a Canadian, well, I’m pretty darn proud that we are producing more than 80 percent of the world’s maple syrup. Like the leaf on our flag, maple syrup is a symbol of Canada, along with the word “eh?” So, sorry Aunt Jemima, your high fructose corn syrup, water, cellulose gum, caramel color, sodium benzoate and sorbic acid syrup isn’t on our table. I recall the legend of the discovery of maple syrup told to me during a school field trip to Quebec. While showing my classmates and me how to roll hot maple syrup onto a wooden stick off a bed of snow to create a fresh maple syrup lollipop of sorts, the guide told a tale of an Algonquian chief. While hunting in the woods, the chief ’s tomahawk wedged into the trunk of a maple tree. A clear liquid bled from the bark and the chief collected it. His wife used it to boil the venison from the hunt. To her surprise, the clear liquid turned into a thick syrup and that was the beginning.

there is to be an excited energy flittering around the farmers market on this cool morning. The humidity has fallen, much to my surprise. A score of vendors flank Merchants Square, adorned in a festive medley of summer produce and garnished with the tantalizing smells of nearby cooking food. Locavores relish this sort of close-to-home adventure, peppered with a hint of spontaneity. We’re investing in our community, meeting the people who are feeding us and supporting them and enjoying the freshest produce possible. Canvas bag looped over my shoulder and money beginning to smolder in my pocket, I unfold a small paper list. A brief glance over my meal plan reminds me of my intentions and I step forward to begin. I’m making pan seared chicken breast with a white wine cream sauce, sauteed green beans and whipped bleu cheese russet potatoes – and I’m going to show you how.

Nothing says delicious like grilled tuna and fresh summery vegetables. Dress up these flavors even more with a side of jasmine rice and a sprig of oregano.
INGREDIENTS 1 cup Italian salad dressing
SERVINGS: 2
PREPARATION
2 tuna steaks 1 green or yellow pepper
• Preheat grill
1 or 2 yellow squash
• Squarely mold a sheet of aluminum foil by bringing the edges up and pinching. This keeps in the veggie juices.
1 large tomato 1 Vidalia onion 2 tablespoons olive oil
• Fill a large storage bag with 1 cup of Italian dressing. Add tuna steaks, seal bag and cover steaks in dressing. Refrigerate for 30 minutes. Cut veggies into bite-sized pieces. • Place foil pan on the hot grill. • Add 2 tablespoon olive oil to foil pan along with fresh veggies. • Cook veggies until slightly tender, stirring often and remove from foil when done, set aside. • Place tuna steaks in foil pan. • Slightly pink in the middle will be medium rare. • Plate the tuna and spoon veggies with juices on top.

Redshirting is twice as likely among boys than among girls.
Redshirting Kindergarteners Wanting the best for kids or wanting them to be the best?
when parents make a choice for their child, it’s an individual decision. But when numerous parents make the same choice, it becomes a trend. The trend of not sending eligible 5 year olds to kindergarten, known as “redshirting,” is now at about 9 percent of kindergarteners in the U.S., according to the National Center for Education Statistics.
Is Kindergarten Harder or are Parents Being Unnecessarily Cautious?

Parents delay entry for their children for perceived social, academic or physical advantages. Some want to give their child more time to mature. Others feel that the rigors of school can wait. They feel that an additional year will help the child be “more ready.” But is there any evidence that it helps them with academics in the long term?
Redshirted children may behave better in the classroom and may initially score better on tests than their younger classmates. But those early advantages may be misleading. Several studies show the advantages of being older disappear as children continue their education. A 2013 study from Teachers College Record states that “by third grade, the difference in test scores are negligible.” In fact, in the long term, being older may be a disadvantage—by high school, redshirted children are often less motivated and their performance dips. Neuroscientists Sam Wang and Sandra Aamodt wrote about school’s positive effect on brain development in their book, “Welcome to Your Child’s Brain.” “Parents want to provide the best environment for their child, but delaying school is rarely the right approach. Brain development cannot be put on pause so the critical question is how to provide

the best possible context to support it,” say Wang and Aamodt. “We talk about this with families… if a child doesn’t feel challenged, they may run the risk of becoming a behavior problem because they are bored,” says Williamsburg-James City County Schools Early Childhood Supervisor Renee Dino.
A Kindergarten Arms Race?
Some parents worry that kindergarten has changed significantly due to testing pressure and longer school days. While policy changes like the No Child Left Behind Act have pushed more academic content into kindergarten, another factor shaping kindergarten today is the increasing number of students who’ve attended one or two years of preschool. Many students are reading or “ready to read” by kindergarten, pushing the academic level up.

The Wisconsin Center for Education Research study says: “Students in kindergarten classes are increasingly likely to be 6 years old, bringing with them the skills and expectations that another year of life experience provides.” They coined this trend “the graying of kindergarten.” This often leads to a more advanced curriculum, which other students may not be ready for—and the advanced pace makes kindergarten appear even more challenging.
Not Apples to Apples
Research on this topic is challenging because those who choose to delay their children’s entry into kindergarten are not a random sample, those families are more likely to be white and have higher socioeconomic status. These same factors may influence their academic achievement. Poor children are the least likely to be able to afford to wait until age 6 to begin school due to the additional child care costs or time spent out of the workforce by their parents. Hampton City Schools says that rather than having an issue with redshirting, they have demand for “greenshirting” kids, allowing those past the deadline (September 30th in Virginia) to attend kindergarten.

Who Needs to be Ready? Kids or Kindergarten?
Educational experts say it may be counterproductive to wait, and parents who are concerned about kindergarten readiness may want to look at the bigger picture. Interaction with peers in a school setting can improve maturity and younger children often excel by having classroom role models. “It’s the community, family and school’s shared responsibility to make sure kids are ready. They should all support programs that help kids’ experiences and early conceptual skills,” Dino says. For parents worried about getting the timing right, the research should be reassuring—the stimulation from school and their peers can help students’ minds grow—whether they wear red shirts or green shirts!

Remember when the only gym you knew was of the jungle variety? It didn’t feel like work, but all that climbing and hanging torched tons of calories while strengthening your muscles. Return to recess and make the most of these last few weeks of summer. Crank out these moves midway through a park run or do them in place of a regular sculpting session—and put the fun back in your fitness routine.
What you will need: A playground that has a
bench, slide, swing and monkey bars (or pull-up bar).
How it works: Perform 15 repetitions of each
exercise. Once you have completed one set of each exercise in the circuit, rest one minute. Repeat the circuit 1-2 more times, resting one minute after each complete circuit.

Choosing the Right Bike “if you’re brand new to mountain biking, you should know there are a couple different types of mountain bikes,” explains Matthew Bailey, service manager at BikeBeat, which has several locations throughout Hampton Roads. “Those choosing a bike need to determine where they are going to ride the bike and what the bike needs to be able do, they need to look for a bike that fits them comfortably, and they need to decide their price range.” In addition to these parameters, Barry Herneisey, owner of Bikes Unlimited in Williamsburg suggests new buyers look for a 29er, or a bike with 29-inch wheels, which typically start around $600. “The 29er really helps absorb impact better, corners better, brakes better, accelerates better and goes over obstacles better because of the bigger wheel” Herneisey says. “A 29er really smoothes the trail out a lot. It’s bike that you’ll have a lot of fun with on the trail.” Mountain bikes come in all different shapes and sizes, so consulting with experts at your local bike shop will help to ensure that you’re on the path to finding the right bike for you.
Additional Gear for Riders It is imperative to find a great helmet. According to the Bicycle Helmet Safety Institute, 90 percent of bike injuries and deaths could have been prevented if riders had been wearing helmets. Helmet shapes vary so it is useful to try on a couple different styles to see which type conforms best to your head shape. You should look for a helmet that offers a snug fit all the way around your head with little variation in movement from side-to-side or front-to-back. Correct eyewear can also help with a slew of problems, like sun glare, muscle fatigue and bad weather conditions, and a basic lighting system is recommended. Whether you plan to ride at night or not, you should purchase a headlight and taillight set. Learning the Ropes It’s easy to get intimidated by the vast amount of information available about mountain biking. Therefore, Bailey suggests linking up with more experienced riders to learn the basics. “Trying to teach yourself can be a very trying and treacherous task,” Bailey says. “Someone that knows how to ride will be able to teach you the basics and suggest beginner trails.” Additionally, Herneisey recommends new riders look into area riding groups, such as the Eastern Virginia Mountain Bike Association, which organizes weekend rides at different parks for riders of all ages and abilities. Riding in groups also helps to increase safety measures. As with any sport, accidents can happen—you don’t want to be alone should an injury or emergency occur.

mericans have a reputation for being defined by their careers. Despite planning, saving and looking forward to retirement, many people are unprepared for a peculiar side effect of leaving the workplace: your identity may suddenly seem to evaporate. So how do you fill those freed up hours?
For most people, retirement as endless vacation is not enough, says Jenny Gallagher, a life integration specialist in Sarasota, Florida. To decide what you really want to do, Gallagher suggests thinking back to when you were a kid. “If you liked playing with dirt, you’re probably an outdoorsy person,” she says. Gardening or camping might appeal to you. Gallagher also emphasizes the importance of activities that give retirees at least a little
structure, motivating them to get dressed, leave the house and interact with others. Hobbies are good for your cognitive skills, self-esteem and confidence. Researchers at Concordia University in Montreal, Canada, found that cognitively demanding activity helps retirees stave off depression. Possibilities are endless, but here are a few ideas.

Dr. Brent Segeleon, owner of Colonial Eye Care, is a graduate of Gannon University and received his doctor of optometry degree from the Pennsylvania College of Optometry in 2005. He is proficient in comprehensive optometry, including the diagnosis and management of ocular diseases, as well as low vision. Dr. Segeleon has experience in fitting simple and complex contact lenses for complicated, diseased and post-surgical corneas. Dr. Segeleon is a member of the American Optometric Association, Virginia Optometric Association and vice president of the Tidewater Optometric Society. In 2013, the Virginia Optometric Association named him Young Optometrist of the Year. Originally from Pittsburgh, Pennsylvania, Dr. Segeleon calls Williamsburg home. He lives here with his wife, Brooke, and daughter, Gwen. He enjoys sponsoring the Williamsburg Youth Baseball League and working with William & Mary athletes.
