Ever since I can remember my dad has been teaching me the importance of finances and being smart about how I’m spending my money. I’m not saying that I don’t have the occasional splurge purchase (I’m a sucker for a cute pair of wedges!) but I’m thankful he taught me the basics since they will stay with me forever.

CONTINUING TO EDUCATE AND INSPIRE “have you seen that other health Journal?” my cousin Jason asked during a recent family get-together. “No, I haven’t,” I replied, trying to remain calm. “Another Health Journal? Tell me about it.” Healthy competition in this industry is one thing, but a copycat? “Well, I’m pretty sure they also call themselves the ‘Health Journal,’” my cousin continued, “but it’s more like a magazine, and their editor is a guy. He writes the column up front like you do.” Ahhhhh. It was all starting to make sense. That “guy” my cousin was referring to is actually Chris Jones, whose columns have appeared in this same spot consistently since January. Chris took on my longtime role as editor-in-chief earlier this year and has done a fine job of managing content, mentoring our writers and connecting with readers through his monthly Editor’s Note. And as for that Health Journal imposter? Well, there isn’t one. When we switched formats in January—from nine years on newsprint to the full-glossy magazine you’re holding now—it never dawned on me that not only would readers be surprised by the change but that some might not recognize it as the same publication! So when Chris asked me to pen this column for this Anniversary Issue that marks the start of our 10th year in publishing, I saw it as a chance to share some of the exciting changes happening at the Health Journal. In some ways, this is a new magazine. In addition to our new size and paper upgrade, we’ve added features such as the popular Brain Teasers (p. 46) and re-introduced monthly columns like
“Second Opinion” and “Over 50.” Based on reader feedback, we’ve upped the number of articles relating to food and nutrition in each issue. Just check out this month’s cover—a culinary collaboration with Waypoint Seafood and Grill. You’ll find their mouthwatering recipe inside on p. 31. And your summer is sure to sizzle with the bonanza of grilled delights you’ll see starting on p. 26. Our staff prepared, photographed and taste-tested every recipe in this issue. Get ready to drool. This month’s feature story, “Organic Growth,” focuses on organic food labeling practices and features Virginiabased Whiffletree Farm. The article showcases the work of several artists and reflects the Health Journal’s interactive approach to content. SCRAWNY TO BRAWNY One fitness decision transformed Jim White’s life

as a young teenager, jim white stood 5 feet 11 inches tall and weighed just 135 pounds. Classmates called him “bird chest” for his flat, musclefree upper body. Then White’s older brother introduced him to weight lifting his junior year of high school—and it changed his life. By college, White had packed on 55 pounds of muscle, along with confidence, strength and energy. His future, he decided, would be helping other people harness the power of fitness and nutrition, without pushing exercises they hate, caloriecounting or fear of food. Now 35, the married Youngstown, Ohio, native owns Jim White Fitness & Nutrition Studios, a Virginia Beach, Virginia-based company with two locations and counting. White’s Fit-in-30 plan, which he turned into a book, jumpstarts clients with a month of exercise and meal plans to draw from for life, not just a limited time period. “We’ve determined it takes 30 days for people to develop a habit,” explains White, a registered dietitian. “Once they start seeing results—losing 5 or 10 pounds, having more energy, better sleep and more confidence, and getting compliments—they get hooked.”

‘I have to eat this’ or ‘I should never eat that’, you’re likely to develop a negative self-image.” White’s public platforms include serving as a spokesman for the Academy of Nutrition & Dietetics, health fitness specialist for the American College of Sports
Medicine, sports dietitian for Old Dominion University and on the advisory board for Men’s Fitness magazine. He also uses mobile apps and Internet programs to reach customers outside Hampton Roads. In addition, his Jim White Community Fitness Foundation has supported school programs and offered Boot Camp classes, cooking demonstrations, gym memberships, shoes, pedometers and more to residents with fewer resources, including the homeless. “I see people who are battling depression, disease and obesity; people who are on tons of medications seeing their lives deteriorating,” White says. “The beauty of what I do is that I get to witness lives transforming.” White’s top three tips: find enjoyable ways to exercise, focus on
tackling specific “vices”—latenight snacking or soda drinking, for example—and think of food as positive fuel: “If you’re saying, ‘I have to eat this’ or ‘I should never eat that’, you’re likely to develop a negative self-image.” A distance runner, bodybuilder and outdoorsman, White launched his business journey by helping a cousin lose 30 pounds in exchange for free housing in Virginia Beach after college. As far as he’s come, though, he holds one group of clients particularly dear: the scrawny teenage athlete. “They remind me,” he says, “of where I came from.”

where it led me and my father before me: to a place where the newest version and the latest insights don’t quite get it right, but lead us to wanting better and hoping the next version of fatherhood will bridge the gulf that seems to forever divide fathers and sons when men and boys become men and men. began to bring up those topics he would give me a one-word answer, the kind my father used to use. Zack would say, “Dad,” the way my father used to say, “Really?” And I would understand the implication: Don’t pursue that topic. All of which leads me to wonder what Fatherhood 3.0 will look like. Will my son find a way to broach the subjects men and their sons have talked around instead of about forever? Or will his journey lead him

there was a time when i thought my father not only set the standard of parenting, but also had all the answers anyone could ask of a father. He was, after all, an assistant coach in the National Football League for the Baltimore Colts. On Sundays, he stood on the sidelines instructing players, mammoth men who had nicknames like Bubba and Big Daddy. Any problems, like an annoying neighbor, a bad umpire, an obnoxious clerk at the checkout counter, my father could silence with a look or a few loud words. Problem solved. As time progressed, I grew to see the flaws in my father’s approach to parenthood. When I became a teenager and then a man, I encountered the temptations of drinking and girls, questionable friends and worse decisions. I found it impossible to even begin to approach him about how much was the right amount to drink, how to talk to a girl, how to decide whether to get on the back of a motorcycle or to call a cab. I knew each of those topics would generate the same look as the obnoxious fan at a basketball game, the look that said shut up. So I looked forward to fatherhood 2.0, the next generation of parenting, my generation of parenting. From the time my daughter and son were old enough to talk, I made a point of listening. I spent most of the past two decades making sure my children knew they could talk to me—about anything, any time, anywhere. And, probably like my father did too, I felt confident that my version of parenthood was the evolved version, the effective version. Then I found the folly in my thinking that I had begun to approach the zenith of my craft. It struck me clearly during the start of my son’s freshman year at James Madison University. He felt a little homesick, a little out of place during his first few weeks of school. So, as I had throughout my time as a parent, I made sure to make time every day to talk with Zack. It wasn’t until my wife sat next to me one evening during one of our phone calls and reflected back the content of our conversation that I began to see all of the shortcomings of Fatherhood 2.0. Zack and I talked about his intramural basketball team, his Italian class and his opinion of college food. He mentioned his girlfriend, who attends another school, and a party he had gone to over the weekend. But we never broached the subject of sex, how much he did or didn’t drink at parties, questionable friends or poor decisions. I knew if I even

gardasil is a relatively new vaccine, approved for use by the Food and Drug Administration 2006 ago to protect against human papillomavirus (HPV). It’s one of two vaccines available to protect against the types of HPV that cause most cervical cancers. But the vaccine, approved for girls as young as 9, has not been without controversy. The vaccine has generated its share of Internet warnings, even earning an entry on the myth-debunking website Snopes. Some parents don’t want to think about their preteen daughters being susceptible to HPV, the most common sexually transmitted disease. Others fear that the vaccine just hasn’t been around long enough. The Centers for Disease Control says the HPV vaccine is safe, and it’s recommended by the American Academy of Pediatrics. In 2008, the Virginia General Assembly passed a law requiring children to get the first of a series of vaccines before 6th grade. last several decades due to regular screening, according to the American Cancer Society. Gardasil targets the four strains of HPV that account for about 70 percent of all cervical cancers, including the two strains that cause the majority of genital warts. HPV is also linked to anal cancer and rare cases of cancer of the penis. The CDC recommends that everyone between the ages of 13 and 26 get the vaccine, and the American Academy of Pediatrics recommends that it be given to boys and girls at age 11 or 12. The thinking behind it is this: The vaccine works best when given before a person becomes sexually active. According to an April 2013 survey published in the Journal Pediatrics, 48 percent of adolescents have had sex by the time they turn 17. By age 19, the percentage jumps to 71 percent. Giving the vaccine at 11 or 12 makes sense because it’s when children have to get their Tdap booster (which protects against diphtheria, pertussis and tetanus) in order to enter 6th grade, Sommer says. “It’s a safe vaccine,” Sommer states. “Basically, it prevents cancer.” Studies are ongoing, but like any vaccine or medication, there can be side effects and reactions in some people. And the vaccine’s effectiveness over time is still being reviewed. The CDC monitors vaccine safety through the Vaccine Adverse Event Reporting System. From June 2006 to March 2013, about 57 million doses of HPV vaccines were distributed. Of the 22,000 “adverse-event reports,” 92 percent were classified as not serious. The most commonly reported symptoms were fainting (syncope), dizziness, nausea, headache, fever and hives, as well as pain, redness and swelling at the injection site. Studies have shown that serious side effects such as Guillain-Barre syndrome and allergic reactions such as anaphylaxis weren’t any more common with the Gardasil vaccine than with other vaccines, according to the CDC. In the cases when deaths were reported, investigations found that the cause was explained by factors other than the vaccine. “Gardasil...and its benefits continue to outweigh its risks,” the CDC states on the vaccine safety section of its website, cdc.gov/ vaccinesafety. The “FDA and CDC continue to find that Gardasil is a safe and effective vaccine that will potentially benefit the health of millions of women.”

And then there’s the question of whether or not to go with the non-organic Virginia farm or the organic California farm? One has to wonder how many gallons of war-ravaged oil was burned to transport the organic stuff. There’s no question that the organic industry is booming. According to a 2012 Roper survey, one of the world’s leading archives of social science data that specializes in data from surveys of public opinion, 63 percent buy organic foods and beverages at least sometimes. As a result, organic food sales have grown to over $35 billion according to the U.S. Department of Agriculture (USDA). Take note that consumers have been willing to pay up to twice as much for goods with organic labels. So, what does it take to get the organic seal—now celebrating its 12th anniversary? The USDA’s National Organic Program (NOP) has standards that must be verified by a USDA-accredited certifying agent before products can be labeled “certified organic.” For organic livestock, “The USDA organic seal verifies that producers met animal health and welfare standards, did not use antibiotics or growth hormones, used 100% organic feed, and provided animals with access to the outdoors.” The NOP also stipulates that any land used to produce raw organic commodities must not have had prohibited substances applied to it for the past three years. Until the full 36-month transition period is met, you may neither sell, label, nor represent the product as “organic” nor use the USDA organic or certifying agent’s seal. Anything done to the land must be documented. After reams of paperwork there are still the organic certification fees to be answered. These are based
on what kinds of products—whether it be fruit, vegetables, beef, pork, chicken, eggs or milk—are produced. Up to 75 percent of that annual fee—not to exceed $750— is subsidized by the National Organic The Straights admit that the additional fees are the number one reason why they haven’t chosen to be organically certified Certification Cost-Share Program. That’s federal funding administered through state agriculture departments and is part of the Farm Bill. Twenty-five thousand farms produce organic food according to the USDA. California has the most certified organic farms (over 2,800) followed by Wisconsin, which has 1,016 farms. The Midwestern states of Iowa, Illinois, Missouri and Nebraska have some 1,200 organic operations combined. Most of them are small family farms, but food giants like Kraft and Kellogg actually dominate the organic food market and soon Walmart will, too, with their recent purchase of Wild Oats. This will put organic foods at non-organic prices—roughly 25 percent less. Big operations don’t have a problem paying for the extra record keeping and inspections that go along with organic certification. But for small operations like Whiffletree Farm in Warrenton, Virginia, organic certification isn’t necessary. Jesse and Liz Straight began raising pastured broiler chickens and turkeys in 2009. In 2011, they added free-foraging pork, grassfinished beef and pastured laying hens to their repertoire. The Straights admit
that the additional fees are the number one reason why they haven’t chosen to be organically certified. It costs more than double to raise an “organic animal,” and this would be an added expense that would have to be passed down to their customers. “Our customers know us and our farm. They see how we farm. They do not need [to see] a certification to know this. We are not looking to create an empire where we would be providing our food to people who would only know the nature of our work from a label. Rather, we aim to connect directly with our customers who know us, our farm and our practices.” Should you ever have the opportunity to visit Whiffletree Farm, you would see that the poultry is actually on fresh pasture. Pigs graze seven acres of lush woods on the farm, and its cattle are 100 percent grass-fed and are moved to fresh grass every one to three days. Similar to the NOP’s standards, chemical fertilizers, pesticides, herbicides, wormers, washes, preservatives, antibiotics, hormones and GMO grains are not used.

According to Ayrshire Farm’s rep, Vicki Bendure, “It’s the only way people really know and can trust that a farm is organic and is following the regulations that make it organic.” According to USDA data collected, the nation’s certified and exempt organic farms had average sales and production expenses that were higher than those of U.S. farms overall. A USDA organic farm can net $20,000 more than the same size conventional farm. And that figure could save a family farm.

steakhouses are an american institution. They have remained true and predictable, boasting a boys-only appeal with dark mahogany walls, oversized chairs and heavily draped windows. But as our palates have evolved, we’re drawing the heavy curtains to reveal a different type of steakhouse. Offering more than the aged cowboy ribeyes and petit filets, these “modern meateries” are a celebration of carnivorous eating–snout-to-tail feasting– with the whole animal being fair game. With that said, beef isn’t the only thing on the menu either. It’s a cornucopia that also includes game, pork, veal, lamb, fowl and seafood. One of my favorite spots in Williamsburg, Virginia, is Blue Talon Bistro where Chef David Everett serves up pieds de cochon, which are pig’s feet, offered sans hoof to make matters more approachable. Their Sunday special of sweetbreads, which is calf thymus,
is an absolute must-try. These dishes that cause you to take a second glance at while scrolling through the menu, along with the charcuterie boards, like their Butcher’s Tasting Board and daily steak offerings, provide the snout-to-tail cuisine that are the foundation of modern meateries. I love the vibe here, I really do. It’s like a slice of Europe with a side of Manhattan. It’s close seating and vintage décor–which includes Julia Child's cooking show on repeat–pay an homage to times past while your palate travels full circle as you nosh on forgotten cuts of meat that celebrate the entire animal– the norm in most cultures. My culinary wanderlust led me to the Chevy Chase corridor of Washington, D.C., to eat at Range. It is the brainchild of Chef Brian Voltaggio. Its first impression is sleek. As you continue through the restaurant to encounter its open kitchen–the major wow factor–the menu is what modern-day foodies flock
to: pigs cheeks, ears, roasted marrow, an impeccable selection of cured meats, shellfish over ice and wood-fired traditional cuts of steak. Chef Voltaggio offers up a curated menu that boasts a steakhouse without all the fuss. It’s straight up. Well, what more needs to be said with a cocktail on the menu called the Vegan Sacrifice that’s made with beef bouillon ice cubes? This is the stuff foodies today pine over, freak us out, then turn us on. This is “sexy food” if we’re talking à la mode. What’s most exiting about this generation of steakhouses is the incredible amount of thought and ambition in the overall dining experience. Diners are being treated intelligently and honestly– ask your server where the beef came from, you should get a name. In light of this food revolution, the question is how long it will last. At this pace I’m excited to see steakhouses 3.0, which, one day, may serve up the entire animal tableside.
Our love for meat is not disappearing, but the pretentiousness is.

Have you ever tasted bourbon-infused watermelon, let alone with garden fresh greens and corn? These flavors will reinvent your idea of a summertime salad.
INGREDIENTS SALAD 2 cups Garden Fresh Salad Greens 6 ears corn, roasted and removed from cob 1/2 cup crumbled feta cheese WATERMELON 2 pounds watermelon diced 2 fl oz Knobb Creek Bourbon 1 T extra virgin olive oil 10 whole basil leaves salt & Pepper to taste TOMATOES 2 pounds local heirloom tomates, wedged 1 tsp extra virgin olive oil
salt & pepper to taste GARDEN BASIL GREEN GODDESS 1/2 cup mayonnaise 1/4 cup yogurt 1/4 cup parsley 2 T Basil 2 T Chives 1 tsp Champagne Vinegar 1 lemon, juiced
COMPRESSED WATERMELON: • Combine all ingredients and allow to marinate for 30 minutes. Strain excess liquid and vacuum pack. • Place in refrigerator and allow resting for at least 4 hours and no more than 12 hours as the melon will begin to loose its texture.

INGREDIENTS BONELESS SHORT RIBS
PREPARATION
6 lbs boneless short ribs 1 chopped Spanish onion
FOR SHORT RIBS:
2 chopped celery hearts
• Preheat oven to 375 degress Fahrenheit
2 chopped carrots
• Season each short rib with salt and pepper and set aside
4 garlic cloves 2 cups tomato paste 3 cups merlot wine 2 cups beef stock 4 oz fresh thyme
• Combine all ingredients in a food processor or blender and process and until smooth. Season with salt and pepper.

ASSEMBLE THE SALAD:
1 cup olive oil
• In a mixing bowl, combine tomatoes, compressed watermelon, corn, and feta cheese. Season with EVOO, salt, pepper, and fresh chopped basil. • Spoon dressing on plate and place mixture on dressing then garnish with seasoned greens.

• In a large pan, add in 1/2 cup olive oil and put on high heat until oil is hot • Add in carrots, onions, celery, garlic and tomato paste and cook until tender • Once vegetables are tender, remove from pan and set aside • Heat remaining oil and sear ribs for 3 minutes on each side • Once seared evenly, place ribs and cooked vegetables into a deep oven-safe pot • Pour in merlot and beef stock, add bay leaves and sprinkle with thyme, then cover with a lid or aluminum foil • Place entire pot in oven and cook for 3 hours, checking periodically • Remove lid or aluminum foil for the last 20 minutes • Remove pot from oven and let rest for 10 minutes • Ribs should be fork-tender but not falling apart– serve with chimichurri and fresh cherry tomatoes * Look for chimichurri in the marinades aisle of your local grocer.

thermometer—it had a little sensor in the nipple and a button on the outside to press. My orally-fixated toddler had no trouble with that. And I was satisfied—until the battery wore out. In the past five years, I’ve bought numerous digital thermometers, ear thermometers and temporal forehead scanning ones, too. I’ve even put them on my Christmas wish list—this is an expensive “hobby” to have. I’d heard such good things about the temporal one, and that’s what the pediatricians use. But, it’s not been great for me. I still get the low readings of 97 degrees. Or, after pressing it against their forehead and counting up to 10, I end up with nothing because it was off. Or, the beeping makes them wiggle. Or I don’t make the right angle turn on the forehead to the hairline quite right. So I’ve done it again. Then, best of three. How about best of five? This is getting ridiculous.
I finally bit the bullet and bought an expensive ear thermometer that some other moms recommended. You just have to pull on the ear lobe and push it in firmly. Ha! Try doing that to a kid with a double ear infection. After several wonky readings, I tried it on my husband. He flinched and yowled and said, “No way!” Can this really be a product designed with kids in mind? Well, there’s always rectal thermometers, I guess—which is the way my mom, who is a nurse, did it for a long time. But I feel that there’s a certain age where that becomes uncomfortable for everyone— somewhere around 1 or 2. Adding in a kid who is not feeling well and it’s really a battle (I’ve never been comfortable with that anyway). So, my collection grows, unless you have any advice? i crept up to the crib and took my sleeping son’s temperature using the ear thermometer—101.8 degrees. Oh my, that’s higher than it was before, I thought, but, it can be hard to get an accurate reading at that awkward angle. Then I left the room and decided to check my own temperature, just to see what the margin of error might be. Beep. Beep. Beep…94.3! Great, so should I add 4 degrees to his temperature? (And call an ambulance?) Or am I subhuman? I was ready to throw the thermometer out the window. This is part of my long journey to find an easy to use AND accurate thermometer. My collection started with my first son, who hated getting his temp taken and would fight me all the way. After the early days of the rectal thermometer— gross, but accurate—we moved on to the 10 second “stoplight” thermometer that turned from red to yellow to green when it was time to read it. I struggled to keep it in his mouth for even 10 seconds. The winner in this case was a pacifier

FEELING ADVENTUROUS If run-of-the-mill races bore you,, try these body beaters
looking for a challenging form of exercise that will keep you motivated and let you experience amazing outdoor locations? Then it’s time to get off the sidelines and try out adventure racing. But be warned: this is one of the most addictive sports out there. Once you step onto your first obstacle course or backcountry trail, you’ll only want more. WHAT IS ADVENTURE RACING? Adventure racing is basically a multisport race that combines a physical challenge with lots of fresh air, and often a good dose of dirt or mud. At the bare minimum, you should expect trail running and mountain biking, and often flat water sports like kayaking or canoeing. But that’s not all. Depending on the race, you might also find yourself zip lining, rappelling off a rock face, rock climbing, inline skating, rafting or tackling obstacle courses. Races vary from a few hours to several days and may involve set courses or orienteering in the wilderness. You can enter many events solo, but the support

and teamwork of racing with others is often one of the biggest draws of adventure racing. HOW DO I PREPARE? You’ll need at least a basic level of fitness, especially if you want to enjoy yourself. Shorter events cover less distance, which makes them more attractive to newcomers, but they may involve more sprinting. Longer races require more endurance, but you may be able to move at a more comfortable pace. In addition to running and riding, you may also need to develop more specialized skills like rappelling and rock climbing. If the course involves orienteering, you should be comfortable navigating with a map and compass. For flat water events, you’ll need to work on your paddling skills. When training, focus first on the primary events like running and bicycling, so you can gain the most ground there. You should try to do at least one multi-sport training session

Active seniors who want a bigger but still manageable dog might be happy with a boxer or a golden retriever. Seniors should consider a few size-related factors when selecting their companion. Snowbirds who winter in Arizona or Florida will appreciate a dog small enough to carry on a plane. There might be times when you need to pick up your dog, especially in case of medical emergencies. If you’re 65 now and get a young dog, will you be able to lift it in 10 years? However, tiny dogs are easy to trip over, especially if your eyesight is failing.

Puppies are adorable, but they can be costly and require a lot of work. An adult dog will be calmer, and it’s easier to see if your personalities jive. Older people might be better off with older dogs. If you’re over 75, consider a dog who’s seven or older and enjoy your golden years together. Older dogs are often overlooked at shelters, so you’ll be doing the dog a big service. And your dog will return the favor.

It’s important to make sure that both the person and the dog do not feel overly taxed by the other. “A dog that requires hours of brisk walks, or might be a strong puller on leash, is not a good match for a slower walking senior person.” Want a lapdog with low exercise needs? A French bulldog, Yorkie, Boston terrier or pug could be a good match. These are small

Virginia Oncology Associates Dr. Heather Jones received her Bachelor of Science in Physiology from the University of Toronto where she also received her Master of Science and Ph.D. in Biostatistics and Epidemiology. Dr. Smerlis, an expert in the field of hand surgery, joined Tidewater Ortho in 2007 after completing his fellowship training in hand surgery at Wake Forest University. Prior to his fellowship experience, Dr. Smerlis attended University of Rochester School of Medicine and Dentistry for his residency and internship and the University of Maryland for medical school. Upon completion of fellowship training, he moved his family to Hampton Roads to join Tidewater Ortho to build a subspecialty practice in hand surgery. • Lay four unhusked ears of corn on the grill over medium heat, turning periodically. • Once the husks begin to brown and dry, remove from heat and allow to cool for a minute or two. • Once the cobs have cooled enough to be held, remove the husk and garnish. -or• Lightly brush four husked ears of corn with olive oil and lay on the grill over medium heat, turning periodically. • Once the cobs begin to burn, remove from heat and garnish. • Garnish Ideas: butter, salt, pepper, dried herbs, shredded cheese or wasabi mayo. • Wasabi Mayo: 1/2 C mayonnaise mixed with 1 tablespoon wasabi paste. Combine well and spread a small amount over corn.
• Marinade: Mix 4 T olive oil, 5 t kosher salt, 2 t chili powder, 2 t smoked paprika, 2 t chipotle powder, 2 t brown sugar, 2 t fresh thyme, 2 t black pepper and 2 cloves minced garlic. • Rub this mixture over four to six chicken quarters, cover and allow to marinate overnight. • Honey Glaze: Combine 1/2 C honey, 2 T soy sauce, 2 T ketchup, 4 t dijon mustard, 4 t Worcestershire sauce and 2 t cider vinegar. Separate into two containers, one for brushing over the chicken as it cooks and one for using as a dipping sauce. • Place chicken pieces over high heat on the grill (450°F) with skin-side down and cook with the grill lid closed, checking periodically and turning over when chicken is browned and released easily from the grates. (5-10 minutes) • Flip the chicken pieces, and brush with the honey glaze, allowing to cook for another 15-20 minutes, brushing more glaze on every five minutes. • The chicken is done when a meat thermometer inserted into the thickest part of the chicken reads 165°F. • Allow the chicken to rest for five minutes and then serve with the reserved container of honey glaze.
• Combine 1 lb ground beef, 1 T chipotle powder, 2 minced garlic cloves, 1/2 t onion powder, 1/2 t coarse sea salt and 1/2 t black pepper in a bowl. Mix very well. • Avocado Cream: Cut, skin and de-seed two avocados, combing in a food processor with 1/2 T lime juice, 1 t lemon juice, 1 T hot sauce, 1 t chipotle powder, 1 t olive oil and a pinch of salt. Thouroughly mix and place into a container for serving. • Patty out ground beef, slice four circles of cored pineapple and slice a yellow onion. • Place burgers on the grill over medium-high heat and cook to desired doneness. • Place pineapple circles on the grill and cook for 2-4 minutes per side, remove when grill marks appear. • Once burgers are done, place on a pretzel bun, garnish with avocado cream spread, onion and a grilled pineapple ring.

SERVES 4-6 • Gently wash and pat dry romaine hearts, removing any wilted outer leaves. • Balsamic Reduction: Combine 2 C balsamic vinegar and 2 t sugar in a small sauce pot over high heat. Whisk constantly until balsamic vinegar is reduced by half. • Brush olive oil over the entire romaine heart and place on the grill grates over medium heat. Turning periodically. • Once the romaine hearts begin to wilt and are warm, remove from the grill, place on a large plate, drizzle with balsamic reduction and garnish with blue cheese. • Cut in half or thirds and serve.
VANILLA BEAN ICE CREAM
CUCUMBER SALAD STRAWBERRIES AND FETA SERVES 4-6 • Wash and slice one medium cucumber and 1 C of fresh strawberries. • In a large bowl, toss together cucumbers and strawberries, dividing portions onto small salad plates. • Sprinkle with feta cheese and drizzle with a fruity poppyseed dressing.
SERVES 4 • Gently wash and dry four peaches, cutting each in half and removing the pits. • Place the halved peaches cut side down on the grill grates over a medium heat, cooking until peaches begin to show the grate-lines. • Remove peach halves from grill and place two per bowl, garnishing with two small scoops of vanilla ice cream. • Photography by Liz Lane and Brian Freer
