A part-time job in high school led to becoming a dishwasher at Hammock Beach. Now he’s the executive chef. JACQUE ESTES COMMUNITY EDITOR

When 16-year-old Jason Stasa came home from school and told his mother he wanted to work as a dishwasher, she was less than enthusiastic. “She told me, ‘You don’t want to work there,’” Stasa remembered. But his friends worked at the Sugar Mill Golf and County Club in New Smyrna Beach, and raved about their jobs, saying they got to eat what they wanted, and had a good time working together. So Stasa washed dishes for a year and a half, moved up to lead cook, and began taking culinary classes at what was then Daytona Beach Community College. “I talked to the chefs and decided to go to culinary school,” Stasa said.

The Atlantic Grille at Hammock Beach is open to the public, 365 days a year.

He received his degree in applied science in culinary management and interned at the Citrus Club in Orlando for six months before moving to Palm Coast. “One of the chefs from Sugar Mill, and the food and beverage director, were at the Grand Haven Golf Club and suggested I apply,” Stasa said. “I started out as a sous chef.” Stasa worked at Grand Haven for six years, until the Hammock Beach Resort offered him the position as a Chef de Cuisine at the Atlantic Grille. The Atlantic Grille is the only restaurant at the resort that is open to the public, serving three meals a day, 365 days a year. The other restaurants on the property are exclusively for members and guests. During the past 4 ½ years Stasa has worked at Hammock Beach Resort, he has worked as Chef de

Cuisine at the Atlantic Grille and Delfino’s, a dinner-only Italian restaurant, and as executive sous chef for the resort. “I was the executive chef’s right hand, and it was a great learning experience,” Stasa said. When the executive chef left to accept a position at another restaurant, Stasa applied for the job. In April, Stasa was promoted to executive chef at the Hammock Beach Resort. Now he oversees the Atlantic Grille, Delfino’s, the sushi bar, Loggerheads sports pub, room service, the coffee bar and the two pool bars. “A resort of this magnitude is a big deal,” he said. “This is the Top of the Mark.” Hayapo Nogaki, corporate director of Food and Beverage for Salamander Hotels and resorts, has known Stasa for more than four years, and said he was pro-

moted because of his commitment, loyalty, and skill in culinary services. “He has stuck with us through good and bad, and appreciates the importance of our membership program,” Nogaki said. “It’s not just a hotel, we are a club-based membership resort.” Overseeing multiple restaurants and room service would be stressful to some, but that’s the part of the job Stasa thrives on. Stasa said the adrenaline rush from multiple tickets waiting to be filled, and cooking within a certain time limit to ensure guests’ food is served at appropriate times during the meal, is one of the reasons he enjoys being a chef. “If you have 40 tables, all being pieced together perfectly, the adrenaline gets going, and you kick it up into another gear,” Stasa

So anything we can do to make our members and guests happy, we do.” Seamless service is his goal. “It’s something in your DNA that wants to make sure that between the time the guest gets his first and second course, time doesn’t lapse,” Stasa said. “If they get their first course, eat it, and if we don’t time it properly, between the front and the back of the house, guests are waiting and getting antsy, and that bothers us chefs in the back.” “There’s more paperwork and I have less time in the kitchen,” Stasa said about his recent promotion. “I walk through tasting, making sure the quality is there. My heart and passion is in the kitchen, and back on the line.”

Stasa is the father of three children: 8, 6 and 2 years old. Having a professional chef for a dad doesn’t mean you have to eat gourmet meals every night. “I do cook at home sometimes,” he said. “But last night I asked the kids what they wanted for dinner and they wanted to order pizza, and wings, and lava cakes.” What does mom think now about his chosen field? “She is really proud.”

A

teenage boy stood in the hot Cuban sun watching the marathon runners get off the bus. He approached Ralph Dumke. “Can I have your shoes?” he asked. Dumke looked down and saw the young man had cut the back of his shoes off so they would fit, a common practice in Cuba. “They can only get up to size 10 in Cuba,” Dumke, who wears a 13, said. “I told him to meet me at 5 p.m. at the hotel and I would give him the shoes.’’ Dumke’s shoe size continued to attract attention, and he was asked for his shoes multiple times throughout the day. He arranged to meet three young men in the lobby of his hotel — three because that’s how many pairs he had with him: the pair he ran the race in, a back up pair, and an older pair he used for daily wear. “I gave them each a bag with shoes and some Boston Marathon T-shirts,” he said. “I went home in flip flops.” Dumke, who has a home in Island Estates, has stories from all of his marathons. He is a member of the 50 States Marathon Club, having run in at least one marathon in each state. Now his goal is to run the seven continents. He has five to go. Along with North America, he ran in Antarctica.

In 1996, Dumke missed qualifying by a couple of minutes, but he was able to run for the DanaFarber Cancer Institute in Boston. The second time he ran the Boston Marathon was after the bombings in 2013. “The people at Marathon Sports, a running store at the finish line, were granted 50 numbers by the BAA (Boston Athletic Association). You had to write an essay on why you should be in this group,” Dumke said. Dumke had just run his final state marathon (Hawaii) in September, when his daughter suggested the idea of the second Boston Marathon to him. “I did it to make my daughter

“There’s a waiting list for Antarctica, and I was scheduled to run in 2018. Someone dropped out, and I was able to go in March 2015,” Dumke said. “We had to leave from the southern-most tip of Argentina on a Russian ice cutter.” “It wasn’t a cruise,” his wife, Maria Dumke, laughed. On July 30, he will cross Europe off his list, when he runs in Switzerland on his 59th birthday. Dumke starting running, literally, for his life. His doctor wanted him to stop smoking. Dumke didn’t like it when he started gaining weight. “He started running because he had smoked three packs a day from 17 to 34 (years old),” his wife said. How does a man in his mid-30s start running marathons? One mailbox at a time. “I had a friend who taught me, ‘You run from one mailbox to the next mailbox, then you walk to the next mailbox. Eventually you get to where you run two mailboxes and walk one,” he said. After his first 5K (3.1 miles), Dumke was questioning how anyone could run further. Time isn’t his motivation. He enjoys running the different courses (with the possible exception of the one in Sedona, Arizona), and the satisfaction of finishing. “The person who set out the Sedona course couldn’t have been a runner,” he laughed. “The course was like this (showing a 45-degree angle) and it didn’t even level off at the finish line.” Time does matter for the Boston Marathon. Runners have to qualify unless they are running for a charity.

We were trying to raise $500,000 and raised, $980,000.” “I didn’t run, but I got to be a part of that, and it was very rewarding,” Maria Dumke said. Locally, Dumke has been involved with the Summer Series in Palm Coast with Carrie Meng. Dumke said he would like to run the Ocean to Ocean Marathon in South Africa. “It would be great to run from one ocean to another,” he said. “That one is 36 miles.”

From lobbyist to golf pro Brad Myers has had an interesting journey from golf links to Capitol Hill, and back to golf links.

“Bill Clinton made me a golf pro,” Brad Myers, golf pro at Hammock Dunes said. “I was out of a job one night because of a national election.” Myers, a native of Illinois, grew up in Northern Virginia, graduated from the University of Kentucky with a degree in political science, went to work for the Department of Agriculture, and did some lobbying in President George H.W. Bush’s administration. He started playing golf when he was 5 years old, and played through school, but after graduating from UK, didn’t consider pursuing a career in the sport. When President Clinton took office, Myers reconsidered his career path.

“I decided I missed golf,” he said. “My job there (Capitol Hill) and being a golf pro was kind of the same thing. You were always fixing problems, and communicating with people.” He started out working at smaller golf clubs in Maryland, and worked his way up to the premier golf club in the country – The Congressional Country Club in Bethesda, Maryland. After two years as the assistant golf pro, he became the head golf pro, where he stayed for 13 years – until Hammock Dunes called in November 2013. “My general manager at Congressional and the general manager here were close friends,” Myers said. “We had never been to this part of Florida; we really like it. I like the little bit of seasonal change.” Myers and his wife, Corrie, a talented golfer in her own right, and their 2-year-old daughter live in Hammock Dunes. The youngest has also picked up her first golf club, but just for fun, with no instruction from Mom or Dad – yet. He may not have presidents, congressmen, national athletes, or even Justin Timberlake teeing up at either of the Hammock Dunes golf courses, but he has discovered something else – teaching. “I didn’t expect to love teaching,” Myers said. “I love teaching, not only the swing, but the coaching part of it. I have had some good players go onto national championships.” His teaching style isn’t focused exclusively on technique; he sees himself as more of a coach. He wants his players to gain confidence, and he wants to see them succeed in the game. “I tailor clinics to skill levels,” Myers said.

Myers said beginning women are one of the fastest growing segments of the golf community for the past 20 years. He said it has also been the fastest leaving segment for the past 20 years, and that is something he wants to change. “The key to training is to get them with other women of the same skill level, make them feel good,” he said. “That way I can turn them into foursomes, teach them to play better, and help them get out on the course. If they aren’t having any fun at all, or you don’t assimilate them into a group, they are going to find something better to do.” He said Hammock Dunes players want to keep learning, and he was shocked at the demand for lessons. “It’s a hard game. Your muscles change every day,” Myers said. “Even those in the U.S. Open, they have their coaches with them all of the time.” While the oceanside course is closed for construction, the first time since the course was established 26 years ago, Myers and club members are spending their time at the Hammock Dunes Creek Course by Matanzas High School. “They are different courses,” he said. “At the Creek Course, the front nine are through a pine forest and there are tidal wetlands on the back nine. It’s more like Georgia and South Carolina low country; it’s a lot bigger and more challenging.” The oceanside course is expected to open by Oct. 1 — possibly the middle of September if the weather cooperates. Afternoon thunderstorms have slowed the process down a little. Myers said players will see some changes and more challenge when the course is completed.

a student at Florida Atlantic University, where he helped during parades and 5K races. “I was pretty active in college,” Cinelli said. “When we moved here, I joined this group.” A few miles south, the Flagler Emergency Communications Association was conducting similar exercises at the Flagler Beach fire station. As of 10 a.m. Sunday morning, the Flagler Beach group had logged 239 contacts, the furthest being Field Day participants in California and Oregon. The equipment set up was provided by members of the clubs. “We have four radios going,” Merrill Musikar, president of the Flagler Emergency Communication Association, said. “We got a little overzealous this year and put up five antennas.” Musikar said it would be different in an actual disaster situation. “In an emergency situation we wouldn’t have this many radios and antenna set up,” Musikar said. “If all communications are down in the county, there would be one radio and one guy operating it.” Storms came through on Sunday, and Madeline Pepper watched two systems off Florida’s east coast, on the NOAA

t was a typical Saturday. A perfect day at the beach. At the Hammock Community Center, just steps from the sandy shore off Malacompra Road, 25 amateur radio enthusiasts gathered for the annual HAM radio Field Day. They were practicing for a less than perfect day at the beach – the kind that comes with tropical storms and hurricanes. “Two stations are on the air,” Bill Schwartz, president of the Flagler Palm Coast Amateur Radio Club, said. “This is an emergency preparation test with all 50 states. We are exchanging locations and operator classifications.” Field Day is an annual, 24-hour event, billed by the ARRL as “Part educational event, part operating event, part public relations event – and all about fun!” Under supervision, Schwartz’s grandson, Matthew, was making contact with other HAM operators across the country. “You don’t need a license to join the club,” Schwartz said. “And you can participate, under the supervision of a licensed operator.” Anthony Cinelli became interested in HAM radio when he was

Waves crashing to shore, seagulls cawing, children laughing, and the sound of a bagpipe could be heard at the Malacompra Beach entrance. Standing under a picnic pavilion at the Hammock Dunes Community Center, John McDonald played his bagpipe. “I come here to practice and stay sharp,” McDonald said. McDonald, of Irish and Scottish decent, is a retired firefighter with the New York City Fire Department. He began learning to play the instrument when he was in his late 20s. “I was always around them, at parades and funerals, so I thought I’d pick it up,” he said. “I played for a few years, but life got in the way, and I didn’t play much.” After he retired and moved to Palm Coast nine years ago, McDonald started to play again —

McDonald has played for a variety events, including locally at funerals for police and firefighters. “I am a member of two bands,” he said. “I play with the Daytona Beach Pipes and Drums, and the Jacksonville Fire and Rescue (Department) Pipes and Drums.” Recently he played at the International Association of Firefighters Convention in Jacksonville, and on July 21 he will play for new firefighters graduation in Jacksonville. The learning process begins on a charter, a plastic pipe used for eight months to a year, before moving on to the bagpipe. Musical aptitude does run in his family. His grandmother played the accordion at his wedding. “The most memorable place I have played was on Fifth Avenue in Manhattan during the St. Patrick’s Day Parade more than 20 years ago,” McDonald said. “It’s something every bagpiper should do.”

The Hammock Beach Resort was the place to be the weekend of June 3, for national premier beach volleyball competitions. Teams from around the country battled the heat and humidity, and each other, to the final show down on Sunday, June 5. The EVP Pro-AM 2016 tournament was the second hosted at the Hammock Beach Resort. “This event is all-professional, and enlists participants based on exceptional performance and tour standing. It is the premier competition of the EVP Pro-Am 2016 tour, and it’s our second time hosting,” Matt Dunn, Director Tourist Development, said in a press release. The final women’s match had Team Cleveland facing off against Team Hammock. The four women were equally matched, providing thrilling sports action. Team Hammock, consisting of Kelly Schumacher, of Miami Beach, and Chibuzo Aguocha, of Houston, were the ultimate winners against Krissy Sokol, of Akron, Ohio, and Katie Yanesh, of Wickliffe, Ohio. The men’s final match had Team Charlotte’s Marc Fornaciari, of Charlotte, North Carolina, and William Chenoweth, of Orlando, winning over Jacksonville, and taking home the trophy. EVP Beach Volleyball tours support beach volleyball and attracts families and fans, as the athletes compete for the top prizes. EVP Tour commissioner Ross Balling said the athletes and fans were excited to be able to come back to the Hammock Beach Resort. According to Balling, 250 tons of sand were added, and the schedule of games was the best to that point in the season. During the Hammock Beach event, players interacted with the fans with contests and opportunities for autographs and photo sessions. The teams who finish first are awarded a bid to compete in the EVP World Championship, which will be played at the Paradise Ocean Club in Hampton, Virginia, on Aug. 12 and 13.

The University of Florida Whitney Laboratory for Marine Bioscience Sea Turtle Hospital released sea turtle, Cisco Kid, at 10 a.m. on June 20 at the River to Sea Preserve beach, known as Marineland beach. This was the Sea Turtle Hospital at Whitney Lab’s first release of a turtle treated for fibropapillomatosis, which is a disease that causes internal and external tumors to grow on the sea turtle, inhibiting normal functioning. Cisco Kid, a juvenile green sea turtle, was found stranded on Hammock Beach, on Jan. 29, 2016. Cisco Kid was anemic when he arrived at the hospital, and also had several large fibropapillomatosis tumors. By April, Cisco Kid was healthy enough for surgery, and a carbon dioxide laser was used to remove the tumors, making Cisco Kid the first patient, at Sea Turtle Hospital at Whitney Lab, to receive such laser surgery.
