More Than Hockey Haymarket Iceplex

Unexpectedly created from the collapse of the Prince William Ice Center located in Dale City in 2010, the Haymarket Iceplex offers the community more than a place for hockey enthusiasts. Since it’s official opening in April of 2011, it has worked to develop programs to include the whole community from beginners to experienced and young to old. Its location in western Prince William County has been influential in its success by bringing opportunities to an area that was once without ice. “We are definitely supported by Haymarket,” Facilities Manager Chris Borner mentioned.

Public Skate nights are very popular for Haymarket and Gainesville residents. 6

With the support from the community the Iceplex was able to make some much needed upgrades to improve the overall look and atmosphere of the rink.

“The facility has been updated with new dasher boards and glass,” Borner said. In addition to the boards and glass, new bleachers were added that didn’t obstruct their spectators view. With clean glass and additional seating the experience is much improved. “Honestly, people have come in and feel like it is a different place; the pieces that we had were used,” Borner said. Regulars and visitors alike have noticed the improvements. Public Skating has quickly become a popular activity offered at the Iceplex. Various sessions are available throughout the week but their weekend sessions are the liveliest. “The Friday and Saturday night Public Skate are pretty busy, and even Sunday really,” Borner said.

Haymarket Iceplex hosts Public Skate multiple times throughout the week. They expect anywhere from 100-150 people during the weekend sessions.

This event is affordable with skate rentals at $3 and admission is $6 for children under 13 years old and $7 if you’re older than 13. Every Friday night around 7:00pm a line slowly starts to form at the door with teenagers, large families, first dates and more. Their website suggests showing up a half an hour early to avoid the long line. The rental skates disappear off of the shelf just as fast as people are checking in. “Typically we have been 100-150 people that are there for Public Skate,” Borner said. “It really depends on the time, usually in the winter we have more skaters because it’s fresh on their mind.” Borner laughed and said to remember the Iceplex in the summer time because it’s a great way to cool off. 8

By 7:15 the bleachers and benches are packed with people lacing up their skates. And right at 7:30 the ice is full of eager skaters gliding clockwise around the rink. Music is played over the system, but it’s faint under the laughter, pleasant conversations and rambunctious screams. There is plenty of bleacher seating available if you would prefer to enjoy from the sidelines. In watching you’ll find couples holding hands, people hugging the wall, experienced skaters whizzing around the rink, tiny hockey players practicing their skate work and teenagers gliding. “Originally, when the rink opened it was run by a private club and we weren’t really doing public skate and for three years now we have been,” Borner wanted to

mention. “I think the people that heard about us three years ago might still think we are private but we aren’t and we are right here.” The Haymarket Iceplex is located at 15155 Washington Street in Haymarket and is tucked behind Piedmont Tire and Auto. Their hours of operation vary due to ice rentals for area hockey teams. The online calendar is up-to-date on their website as well as Facebook. Follow them on Facebook for new events and opportunities on the ice. For more information about Open Skate, Figure Skating, Hockey or parties, please visit www.haymarketiceplex. com or give them a call at (703) 753-4423.

Let’s Get Started! Your new business venture is all planned out. Funding is obtained, sales, marketing and business plans are established and you’re ready to get started. But hold on … there are some more things to consider. Many new businesses aren’t successful because they don’t plan for the “back room” operations. “Back room” operations are the accounting and record keeping side of the business. So much effort is placed on making the sale and little if any consideration is given to the accounting side of the business. Although there are many “back room” considerations, listed below are a few major items that you should address before making your first sale. • Establish an accounting system. An accounting system tracks cash receipts and disbursements, income and expenses and assets and liabilities. Most systems also have the ability to invoice customers and to track who owes you (accounts receivable) and who you owe (accounts payable). Financial reports can also be generated to determine if you are making a profit or not. If you can’t track your profitability, you could be making a lot of sales and still be losing money. The accounting system also provides the data necessary to prepare business tax returns. Accounting systems can be as sophisticated as customized software systems or as simple as excel worksheets. Select the best system that your budget can afford.

• Open a business bank account. Tracking business activity is easier if you only use one bank account to handle all of your business transactions. Using multiple bank accounts (or commingling personal and business activity) can lead to lost or duplicated transactions. It also complicates the reconstruction of your activity when trying to assemble the data from multiple sources to prepare your financial reports or tax returns. • Maintain good books and records. Examples include keeping copies of customer invoices and receipts for payments of business expenses, tracking business auto mileage and maintaining a formal set of books and records as noted in #1 above. Although your accounting system will track most of this activity (except the auto mileage), having the related supporting documentation is critical. The Internal Revenue Service states that taxpayers need to maintain adequate records and documentary evidence to support business expenses. Without the supporting documents, expenses may be denied if the Internal Revenue Service audits your company and additional penalties could be assessed. Don’t wait until your return is selected for an audit. Start at the beginning by maintaining good books and records. • Make all of the appropriate federal and state tax filing registrations. If you have employees, you will need to

obtain a federal identification number and also register with the state for withholding and unemployment taxes. If you collect sales tax, you will also need to register with the state. Some local jurisdictions may also require registration for their area specific tax(es). Back room accounting functions require time in addition to your normal daily business activities. These tasks may need to be performed at the end of the business day … when you are already exhausted from a strenuous work day. Don’t procrastinate. The longer you wait, the longer it takes to get caught up. Support documents may become difficult to locate or they may even be lost. And low-profit or lost-profit sales can never be recovered. So now that you have your “back room” operations established, let’s get started on your new successful business!!! Tim is a principal with DuvallWheeler, LLP, a local CPA firm located in Manassas. DuvallWheeler offers their individual and corporate clients a wide range of traditional and specialized services, not often found in other local firms. They have a team of highly-trained professionals who are ready to provide guidance and advice regarding your tax or accounting needs.

KEEPING ATHLETES ON THE PLAYING FIELD

and out of the doctor’s office by Colby Schreckengost BS, MS, CPT

At Next Level Fitness & Performance, we train over 600 athletes each year; starting as young as the age of 7 all the way up to professionals and even some master’s level endurance racers. Designing effective training programs for so many types of athletes is challenging, but regardless of who the athlete is, or what level they are at, we always start with one very important goal: injury prevention. The reality is that an athlete on the sideline becomes a confined spectator wrestling with their own strong personal investment in their team and career. Having been through multiple injuries myself, including 2 back surgeries before the age of 22, I now know that my injuries could have been avoided. I realize that much of the

morning pain and limited mobility that I endure today could be non-existent had I been through proper training as a young athlete. What a revelation!!! My personal experience is what drives me to think of all athletes this way: how will they feel in their forties and fifties? I cringe at the site of an athlete standing on the sidelines on crutches due to a preventable injury, watching his/her team playing in the game. Just as success in athletics builds confidence in people, injuries have been known to destroy confidence in even the most accomplished athletes. Tiger Woods and RGIII are prime examples. athletes continued on page 14

Exercises like high kicks, walking toe reaches, carioca, and walking lunges are staples in most dynamic warm-ups.

According to the Centers for Disease Control (CDC), almost 30 million children and adolescents participate in youth sports in the U.S. and the facts they share on is astounding: High school athletes account for an estimated 2 million injuries and 500,000 doctor visits and 30,000 hospitalizations each year.

-

More than 3.5 million kids under age 14 receive medical treatment for sports injuries each year.

-

Children ages 5 to 14 account for nearly 40 percent of all sports-related injuries treated in hospitals. On average the rate and severity of injury increases with a child’s age.

-

Overuse injuries are responsible for nearly half of all sports injuries to middle and high school students.

-

Although 62 percent of organized sports-related injuries occur during practice, one-third of parents do not have their children take the same safety precautions at practice that they would during a game.

-

Twenty percent of children ages 8 to 12 and 45 percent of those ages 13 to 14 will have arm pain during a single youth baseball season.

-

Injuries associated with participation in sports and recreational activities account for 21 percent of all traumatic brain injuries among children in the United States.

-

According to the CDC, more than half of all sports injuries in children are preventable.

-

Crazy statistics….right? I am a product of athletics: baseball until I realized that I couldn’t hit the curve ball, wrestling in high school, football in high school and college. I’m a true believer in the virtues that athletics instills in us. Sports help to build confidence and teach us life lessons; like learning to thrive in a team environment and overcoming adversity through losing a game or getting cut from a team. But, we as coaches and parents have a ways to go in helping to build strong athletic bodies that are less prone to injury. So, with the start of spring sports right around the corner, the timing couldn’t be better to share My six critical components of injury prevention strategy that will help keep your players on the field and out of the doctor’s office. athletes continued on page 16 14

· Core Strength: (5 minutes) Most athletes think core strength is having a “six pack.” Although abdominal muscles are important for anterior stability, exercises like plank, side plank, glute bridges and anti-rotational exercises actually give the body the foundation that it needs to avoid most injuries. If the core is weak, it adds extra stress to shoulders, knees and ankles. This piece is huge; If you don’t believe me ask your athlete to shuffle 5 yards and stop as quickly as possible. Look to see how much extra movement happens. · Upper Body Strength & Lower Body Strength: (2-3 minutes) Body weight squats done with hips back, chest up holding a soccer ball or baseball bat or lacrosse stick at arm’s length makes for an excellent lower body strength workout before or after practice. Push-ups or animal crawls help to build upper body strength so that when athletes fall or have to push against a competitor, shoulders, elbows, and wrists remain healthy. · Post workout static stretching: (5 minutes) Often neglected, we have found that using stretching rope or partner stretching has been successful in motivating athletes to take care of their bodies with static stretching. It also gives athletes a little down time to bond together and enjoy their teammates and coaches without the intensity of explosive movement.

The most important thing for coaches to remember is that “if it’s a part of practice, then coach it!” don’t expect your players to do it on their own. · Soft Tissue Work: (2-3 minutes) Muscles that perform well and stay injury free are soft and warm like a garden hose left out in the sun. Utilizing a lacrosse ball, massage stick or foam roller pre-practice prepares muscle tissue for the demands that will be put on them during a practice or game. · Mobility & Corrective Exercises: (2 minutes) Immobile joints limit movement and create stress that cause injury. Exercises like hydrants, sumo squat to stand, and bear crawls for hip mobility and shoulder stability are excellent ways of waking the body up and getting it ready for dynamic movement. · Dynamic Warm-Up: (5 minutes) Exercises like high kicks, walking toe reaches, carioca, and walking lunges are staples in most dynamic warm-ups. The concept of moving through stretches instead of lying on the ground and holding them (static stretching) has been around for a while now, but most coaches just tell players what to do and don’t coach it. There is a right way and a wrong way to do it. One of my mentors once told me: “You can’t expect what you don’t inspect!”

All of these strategies should take a total of 20-25 minutes of your practice time (a small price to pay for a healthy team). It’s also a good time to get your athletes engaged with coaches and learning to take instruction. It’s always a good idea to talk to athletes about accepting coaching and making themselves better players; most of the time the idea of becoming the best player or moving on to the next level in their sport is what motivates them. At Next Level, we believe so strongly in preparation that we have teamed up with two highly regarded doctors in the area to present our 1st Annual Winter Clinic entitled “Coaching Essentials for Athletic Performance and Injury Prevention.” Dr. Scott Ross, a Novant family physician and Sports Medicine Specialist, will present Assessing In Game Injuries: Minor, Serious, or Life-Threatening? History

Portici Plantation: Lost Link to Our Distant Past

Part 1: Historic home was built on ‘King’ Carter’s Lower Bull Run Tract By John T. Toler

Had the mid-18th century Portici Plantation survived the Civil War, it would have provided a physical link to the earliest history of Western Prince William County and the families that lived there well into the 20th century. But because of its strategic location on a ridge overlooking the old Warrenton-Alexandria Turnpike – with views to the east as far as the approaches to the Stone Bridge – Portici figured in two epic battles. Today, all that remains is an open section of the Manassas National Battlefield Park preserved as the “Portici Site,” and identified only by 20

two historical markers, a walled family cemetery, and a commanding view of I-66. The chain of ownership of the property can be traced to Robert “King” Carter (1663-1732) of Lancaster County, agent for Lord Fairfax’s huge Northern Neck Proprietary. A large part of the Lower Bull Run Tract was acquired by his son Robert Carter II (1704-1734), and later, passed to his grandson, Robert Carter III (1727-1804), later known as “Councilor” Carter. Educated at the College of William and Mary and later at the Inner

Temple of the Royal Courts of Justice in London, Robert Carter III grew up to be a wealthy, cultured gentleman, and owned ironworks, textile and flourmills. He lived at Nomini Hall, in Westmoreland County, which he inherited from his father’s estate upon reaching majority in 1749. Also included in his inheritance were other plantations and land holdings totaling 40,000 acres. In 1754, Robert Carter III married Frances Anne Tasker (1738-1787) of Baltimore, the daughter of Benjamin Tasker, a former governor of Maryland. portici continued on page 22 Haymarket Lifestyle

management of his estates to his children. He later divided his holdings into ten roughly equal lots. “In 1798, each of his ten surviving children chose their respective share. A nominal yearly rent was paid by each child, who was now a tenant of their father,” according to Portici: Portrait of a Middling Plantation in Piedmont Virginia, written by Kathleen A. Parker and Jacqueline L. Hernigle for the Manassas National Battlefield Park (1990).

ROBERT ‘COUNCILOR’ CARTER 1727-1804

It is interesting to note that Robert “Councilor” Carter got his nickname in 1758, after he was appointed to the Virginia Governors Council by King George II (1683-1760).

The portion selected by his son George Carter (1777-1846) consisted of 3,400 acres in Loudoun County, where he built his home, “Oatlands.” He also owned 330 acres in Fairfax County, and 1,000 acres in Prince William County, including a 350-acre tobacco farm north of present-day Manassas called “Pohoke.” In 1799, George’s sister, Elizabeth “Betty” Landon Carter Ball (17681842) and her husband Spencer Ball (1762-1832) moved to Pohoke.

During the American Revolution, Councilor Carter’s sympathies quietly moved from loyalist to patriot. He supplied Continental Army troops with arms and provisions as the war continued, and as a result, British warships raided his properties along the Potomac River.

A lawyer, Spencer Ball was immediately faced with evicting the existing tenant, Aminidab Seekright. What followed was an ugly, lengthy legal process that dragged on until 1805, when the court ruled in Seekright’s favor, and awarded him the remainder of his lease, plus damages.

With the death of his wife in 1787 and the effects of advancing age, Councilor Carter retired to Baltimore. In 1791 he wrote a “Deed of Manumission,” directing that all of his slaves – over 500 men, women and children living on 17 plantations – be freed. Completed in phases over the next few years, this action was not popular with many of his friends, and even some members of his family. But he was recognized as “The First Emancipator,” by biographer Andrew Levy.

But Seekright never returned to Pohoke; he briefly rented a 200-acre farm owned by Priscilla Carter Mitchell (another of Councilor Carter’s daughters), but was evicted from that property as well. Again, a legal dispute over his tenancy went to court, which was also settled in Seekright’s favor.

A detailed listing of the slaves that Councilor Carter freed, their ages, and the plantations where they lived can be found in Sarah Turner’s book, Haymarket, a Town in Transition, published in 1998.

Early days at ‘Pohoke’

While living in Baltimore, Councilor Carter turned over

22

Despite the legal problems, Spencer and Betty Ball built a farming operation at Pohoke, which by 1802 was known as the “Ball Plantation.” In 1811, they purchased the property, then consisting of 762 acres, from George Carter for “$6,174.72 in current money.” As the agricultural economy shifted from tobacco to cereal crops, the Ball Plantation prospered. “They sustained a combined average of 20 slaves and 18 horses or mules during their 33-year occupancy,” according to Portici: Portrait of a Middling Plantation in Piedmont Virginia.

John Davis, an English schoolteacher, was hired to instruct the seven children of the Ball family. He established a small schoolhouse in one of the cabins at Pohoke, where he also taught children living on nearby plantations. According to his account in Prince William, the Story of Its Places and Its People (1941), Mr. Davis enjoyed his time at Pohoke. “The work of the slaves was light, and punishment never inflicted,” he wrote. “After a runaway slave was returned to Pohoke, Mr. Ball questioned him about why he left the plantation. He replied, ‘Because I was born to travel.’ And that was apparently that.”

Portici, Stepney and Snow Hill

In 1820, construction began on a large new mansion house for the estate, and the earlier residence was absorbed into the farming complex. According to family legend, the house and property suffered several fires, prompting Spencer Ball to rename the plantation “Portici,” after a village in Italy that he visited on an overseas trip. Situated near Mt. Vesuvius, Portici, Italy was destroyed in an eruption in 1631, and in later years plagued by other fires. A “story without a moral” in Prince William, the Story of Its Places and Its People tells about a memorable fire at the Ball family’s Portici. “An overseer who advocated both piety and preparedness used to keep on his table a Bible and a pair of pistols. The Ball Family Cemetery at the Portici Site

The Ball family cemetery is located northwest of the Portici Site. Enclosed by a red sandstone wall, the cemetery has several graves marked by head and footstones, and possibly others marked by native stones. Buried beneath the gravestones and remembered by their epitaphs are: ● “Sacred to the Memory of Spencer Ball, who was born Aug. 6, 1762, and died at Portici on Feb. 28, 1832. Our Dear Father.” ● “Sacred to the Memory of Betty Landon Ball, born at Nomini Hall, Westmoreland County, Virginia, October 15, 1768, died at Portici on January 4, 1842.” ● “Sacred to the Memory of Alfred Ball, born April 19, 1798, died at Portici, March 14, 1853.” ● “Sarah Carter Ball, Wife of Alfred Ball, died May 6, 1875, age 72 years.” ● “Louisa Ball Ware, sister of Alfred Ball, and married to William J. Weir, died in 1879.” ● “Francis Waring Ball, born Feb. 19, 1795, died May 12, 1838.” Many of the Lewises were buried in the family cemetery at Stepney. When the property was subdivided several years ago, the cemetery was cut off from the main house at Stepney by a new road, and is now on private property. According to Ms. Elizabeth Cross, the owner of Stepney, the gravestones were removed to the Sudley Methodist Church Cemetery, but the remains were left behind, and still rest inside the small enclosure marked by an old iron fence. Among those buried there are Rev. John T. Lewis (1785-1862) and his wife, Fanny Tasker Ball Lewis (1792-1853); Francis W. Lewis (1822-1913) and his wife, Fanny A. Stuart Lewis (1830-1899); Rose B. Lewis (1869-1927) and John Beauregard Lewis (1861-1889). February 2014

While Alfred Ball was mainly focused on acquiring land for Portici, he did sell some of his holdings. In 1851, he sold Avon Farm to Abraham Van Pelt, a former New Jersey resident. The clapboard-over-log house on the property was built about that time, and survived the Civil War. This photograph was taken about 1900; the house burned in the early 1930s. Library of Congress.

his gunpowder in 10-pound kegs, and stored them not far from the Bible and his pistols. “One day, the overseer’s house caught fire. After the explosion of the powder, the table was found in the yard, standing upright, with the Bible and pistols still side-by-side. No one, it seems, was ever able to decide whether the Bible saved the pistols or – as has been irreverently suggested – that the pistols saved the Bible.” Spencer Ball died in 1831, and Portici and all of his possessions were left to his wife Betty. She continued running the plantation until her death in 1842, at which time ownership of Portici passed to their only surviving son, Alfred Ball (1793-1853). Ownership of the slaves at Portici was divided between Alfred and his four sisters – Fannie Tasker Ball Lewis, who had married Rev. John T. Lewis, of Stepney in 1810 (see Haymarket Lifestyle, Oct. 2012); Elizabeth Lucy Ball Carter, Louisa Ball Weir and Adeline Ball Best. Once established as the owner of Portici, Alfred Ball began adding to his land holdings, and between 1847-49, the property grew to 1,022 acres, and 24

included Avon Farm, to the northeast. He also managed several thousand acres in Loudoun and Fauquier counties, and three plantations in Fairfax County totaling 3,043 acres. Alfred Ball was married to Sarah “Miss Sally” Caroline Carter Ball (1803-1875), and both were active and highly respected in their community. Alfred was an elder in the Sudley Methodist Church, and Sally was remembered for her kindness and charity. However, Alfred and Sally had no heirs, and when Alfred died in 1853, the terms of his will divided his property in Prince William County between his wife and his four sisters in a manner similar to how the family’s slaves had been divided by his father years before. Sally Ball received 350 acres and the house at Portici; Fanny Ball Lewis, 146 acres; Elizabeth B. Carter 250 acres; Louisa B. Weir, 31 acres; and Adeline B. Best, 283 acres. Francis “Frank” Waring Lewis (1822-1913), the fifth and last child of Rev. John T. and Fanny Ball Lewis of Stepney, was the person of the next generation who was to acquire Portici.

An adventurer, Frank W. Lewis had gone to California during the 1849 “Gold Rush,” and returned to Stepney in 1851 a rich man. Ready to settle down, Frank began courting Miss Frances “Fannie” Adeline Stuart, the daughter of Dr. Charles Baynes Stuart of nearby Snow Hill (see Haymarket Lifestyle, March 2012). They were married in 1853, and in 1855, Fanny Ball Lewis sold Frank W. and Fannie A. Stuart Lewis her part of the Portici property for $100 – which by then included her original 146 acres, plus 100 acres and the main house that had been giver to her by her mother. “Over the next four years, Frank W. Lewis reconstructed the Portici plantation that his uncle, Alfred Ball, had so carefully divided in 1853,” according to Portici: Portrait of a Middling Plantation in Piedmont Virginia. “He achieved this goal by purchasing the acreage his aunts had inherited from Alfred Ball. By 1859, Portici encompassed 769 acres.” Portici was a working farm, where the Lewis family – with the help of 12 slaves and one freedman – raised grain portici continued on page 26 Haymarket Lifestyle

named him John Beauregard Lewis (1861-1889), in honor of the General.

tradition holds that he later served as a scout for Col. John S. Mosby.

Flight from Portici

After a brief stay at Snow Hill, Fannie and her children spent the rest of the war at “Carter’s Green,” a house she rented in Loudoun County off present-day U.S. 15. Frank returned to Portici, where he witnessed the First Battle of Manassas, a Confederate victory. Afterward, he enlisted for one year in Co. B of the 8th Virginia Army, and was assigned to Gen. Eppa Hunton’s command. Family

After their hasty departure on that hot summer day in July1861, the Lewis family did not return to Portici until the war was over, and by then, the main house had been destroyed.

On July 18, 1861, a prelude to the First Battle of Manassas took place at nearby Blackburn’s Ford on Bull Run, with a skirmish between Confederates under Brig. Gen. Pierre G. T. Beauregard, and Union troops approaching from the north. Frank W. and Fannie, who was nine months pregnant with their fourth child, were warned by Gen. Beauregard that a significant battle was going to take place in the immediate area, and they were in great danger. They quickly packed up what they could, and set out for Fannie’s parents’ house at Snow Hill. Heavy items they could not take from Portici were moved to an upstairs room, and the door nailed shut. Gen. Joseph E. Johnston set up his field headquarters in Portici, and promised the Lewises that the property would not be otherwise disturbed while his troops held the position. The stress of the evacuation caused Fannie Lewis to give birth to a son in a gully along the road to Snow Hill. They

Part 2, to be published in March, describes the battles that took place at and nearby Portici; the return of the Lewis family; and the fate of Portici in the 20th century.

Garden

grow & create sip & savor I really enjoy eating food that I have grown myself. From the radishes I grew when I was a child in a three foot allotment in my parents’ garden to last summer’s bounty of tomatoes and sweet potatoes grown in our own garden. It all represents a job well done, with fabulous flavor and the satisfaction that comes from knowing exactly what it is made of and where it came from. Even if you only have room for a strawberry jar or a basil plant; those turn out to be the sweetest, juiciest berries ever and the most flavorful green leaves that ever teamed up with a tomato and some mozzarella. Another great way to eat something that is honest and flavorful is to create your own tea. Technically, tea must contain tea leaves to be called that. When a brew is made up of other

herbs and spices it is called a tisane but for simplicity’s sake I will continue to use the word tea. Making your own is as easy as setting a fine mesh tea strainer on top of a mug or, better yet, a lovely china cup; followed by filling it with various pieces of herbs and spices, pouring boiling water over the whole thing and letting it steep for a minute or two. Empty the tea strainer into your compost pail and inhale the aroma of your very own hand-crafted drink. Several herb plants that make delicious teas are also the ones that are easiest to grow. Some of them are such vigorous plants that unless you have LOTS of space it is best to grow them in pots. All of the mints are yummy. I have recently found interesting additions to the usual spearmint and peppermint. There is chocolate mint

which is milder and sweeter than the previous two, pineapple mint has a lovely variegated leaf and orange mint is sometimes used as an alternative to bergamot, the citrus oil that flavors Earl Grey tea. Several years ago I planted peppermint by the small footbridge that crosses a portion of my streambed and it has wandered all over the place. I love to pull off a leaf and suck on it while I walk around looking at all of the rest of the plants on the land. I am constantly cutting back lemon balm in client gardens. It is easy to trim and fun to do because it smells so good. That plant may look small at the garden store but it will get big fast so you don’t need two. Rosemary thrives in our area as well as thyme, lemon thyme and catnip. Yes, catnip. It may make your cats screwy but it has a wonderful soothing effect on humans. It is a great addition to a before-bed brew. Stevia plants are becoming easy to find and easy to grow. Try a single leaf for sweetness because it is amazingly powerful. Lavender flowers are delicious. Pick a stalk, strip off the flowers, put them in a strainer with about 4 rosemary leaves, Mint leaves and/or lemon balm and brew up a delicious drink of your own making. In the winter months, a broken up stick of cinnamon, a couple of cloves, a piece of ginger or a strip of orange peel will be just as rewarding.

Indulge yourself with a cup of your own tea, a comfortable chair and take the time to read John Toler’s fascinating histories of our Haymarket area. Lynne Galluzzo and her husband, Gary, moved from Centreville to Haymarket eight years ago. They live on ten acres where they garden extensively. Lynne applies what she learns in her gardens to her garden maintenance business - The Garden Lady. Contact her at: Lgalluzzo@comcast.net or www.TheGardenLady.biz.

STUDENTS LEARN FROM THE SMITHSONIAN The Smithsonian’s Natural History Museum opened the doors of its brand new interactive learning laboratory facility Q?rius (pronounced as “curious”). Battlefield High School students of Forensic Sciences classes were the first to attend, experiencing the excitement of the opening day press and publicity. Guided by experienced anthropologists, the students were asked to apply their knowledge of human skeletal remains to build a unique biological profile solving a forensic mystery “Grizzly Discovery.” Afterwards, the group visited the “Written in Bones: Forensic Files of the 17-th Century Chesapeake” exhibit that will be closed and returned back to Jamestown early this year. By all means, this was a one-of-its-kind educational experience!

El Tio Tex-Mex Grill Gainesville and Haymarket residents have been enjoying El Tio Tex-Mex Grill’s sassy dishes for over six years. Owned and operated by the Majia family, El Tio embraced their family foundation by creating a casual and friendly environment with homestyle meals. Their open floor plan, friendly staff and highly recommended dishes make for a quality dining experience. “We treat you like you are at your house, Oscar Majia, restaurant Manager explained. “We want you to be comfortable.” Their menu is expansive with offerings from soups to salads, burritos to tacos and enchiladas to fajitas. They also offer small plates during happy hour and entrée specials on the weekends that will surely please any guest. Appetizers are known for getting conversation flowing at the beginning of any meal. The Sample Platter is ideal with plenty to talk about, featuring a combination of chicken wings, steak nachos, a chicken quesadilla and a beef taquito all garnished with sour cream, guacamole and pico de gallo. The Guacamole or Queso Dip are always sharable and served with crispy flour tortilla chips. The Camarones al Ajillo are flavorful sautéed shrimp sprinkled with Spanish herbs, fresh garlic and Sherry wine served on bread. Quesadillas, soups and salads are excellent options for a lighter meal. Order a chicken, shrimp or steak quesadilla as well as meatless options like spinach or cheese. They offer four soups with their Chicken Tortilla being a customer favorite. It is a vegetable soup base with fresh chicken, tortilla chips, cheese and cilantro. Each salad here is served with homemade dressing,

Haydee Turcio, Xenia Cseren and Manager Oscar Mejia always greet guests with a kind smile.

try the El Tio Salad packed with a spring mix, avocado, red onion, and cherry tomatoes. Add chicken salmon, shrimp or steak for additional flavor and drizzle with raspberry vinaigrette. “People come for our margaritas and fajitas,” said Mejia. Sizzling with savory ingredients their fajitas are a popular menu item with plenty of variety. The Seafood Fajita boasts shrimp, salmon, and scallops with Mexican butter. The Ribeye Fajita is highly recommended with 10oz steak. Mix and match with their combination fajitas like BBQ Ribs and Shrimp or Chicken and Steak. Each of their fajitas are served over a bed of sautéed green peppers and Spanish onions and garnished with flour tortillas, Mexican rice, a la charra beans, lettuce, pico de gallo, guacamole and sour cream. Burritos, Chimichangas, Enchiladas and Fish Tacos are all memorable. The Shredded Beef Burrito is mouthwatering with a rolled flour tortilla stuffed with juicy beef and topped with melted cheese and a

red chili sauce. Grab a Chimichanga like the Grilled Chorizo rolled in a large flour tortilla and pan-fried to perfection. Two corn tortillas rolled with Spinach or Cheese make for great meatless Enchiladas. They are covered in melted cheese and served with a green tomatilio sauce. Originating as a special the Fish Tacos officially make the menu after numerous customer requests. Made with broiled tortilla crusted tilapia, the Fish Tacos are served on soft flour tortillas with Mexican rice refried beans, lettuce, pico de gallo, sour cream and guacamole. El Tio Tex-Mex Grill is located at 7527 Linton Hall Road in Gainesville near the Giant Shopping Center. They are open seven days a week Monday through Thursday 11:00am to 10:00pm, Friday and Saturday 11:00am to 11:00pm and Sunday 11:00am to 9:00pm. THE WINERY AT LA GRANGE Oh the Taste of a Local Wine! If you’re looking for a nice place to sit and relax or take the family to that’s local, look no further than The Winery at La Grange. Located on Antioch Road, it sits on an old estate. Local winemaker Chris Pearmund started the winery in 2005, planted vines and built a new facility behind the existing house. The result is an estate house and surrounding grounds where visitors can come to relax and taste local wines. The 2012 purchase by a Hong Kong based corporation injected new capital to update and repair the facilities. Original General Manager, Fletcher Henderson, returned as winemaker with help from Doug Fabbioli. Henderson notes that the winery has grown and thrived under the new owners, enabling the planting of additional acreage of Petite Verdot and Petite Mensang to supplement the Cabernet Sauvignon already planted.

The wines reflect Henderson’s goal of creating a softer European style. He admits that the higher quality of local grapes means a better wine that is unique to Virginia. Fletcher’s Chardonnay, for example, does not have any buttery finish, making it a perfect complement for shellfish, boiled shrimp, crab and omelets. Viognier and Cuvee Blanc provide softer, sweeter tastes, which are great for warm evenings on the patio or with lighter dishes. Red wines include Merlot, Cabernet Franc, Virginia’s own Norton, Tannat, Meritage and the acclaimed General’s Battlefield Red. To finish off your tasting, try the port-style Snort with dark chocolate. Visitors are encouraged to come and stay. Picnic baskets, children and dogs are welcome. Summers feature sangrias and the winter months feature mulled cider spiked with wine.
