ecently I learned that November is National Gratitude Month. At first, I rolled my eyes. I mean, aren’t we a little out of control with this national month stuff ? But it makes sense. November is, after all, when we celebrate Veterans Day. It’s also when we celebrate Thanksgiving, the holiday that is the very definition of gratitude. With all that’s going on in the world, both feel weightier to me this year, more precious. I suggest we savor both. Thank a Veteran. Hug your family. Count your blessings. And have a wonderful Thanksgiving!

Helping People “Do Life Better” is the Focal Point At RXR3 Recovery BY JENNIFER WALDERA
T
im Hipp has spent the majority of his adult life dedicated to helping others improve their wellness, from starting his own personal training business while earning a degree in Exercise Science from Appalachian State University to starting Wellness Solutions, an organization dedicated to the sale of workout equipment to places like community recreation centers and colleges. While Hipp is in his 25th year of ownership of Wellness Solutions, he has also branched out into the niche of recovery with his Haymarket-based RxR3 Recovery Lounge, inspired by his own wellness journey and challenges. “In 2008, Lyme disease was getting the best of me, and by 2015, getting out of bed was a struggle, and my mental capacity was a portion of what it used to be. I had been using floatation therapy to help with joint pain, mental fog, and intense heat and cold exposure. At that time, there were no facilities that could take it to the level I needed to; however, I did the best I could,” Hipp said. By 2017, with the help and support of family and friends, Hipp opened RxR3 Recovery Lounge, a space dedicated to wellness and recovery for people of all ages. Led by Recovery Specialists who possess either a National Academy of Sports Medicine certification or an Exercise Physiology degree, guests at the lounge enjoy a range of therapies from flotation and whole body vibration to cryotherapy, red light therapy, and more. Hipp says the goal of the lounge is to “create an environment that would offer the best therapies to eliminate fatigue, pain, and poor performance, whether on the field or in the game of life -- [to] take individuals that were merely existing in life and help them live.” One long-time client credits RxR3 Recovery Lounge with doing just that, saying, “I went to RXR3 several years ago based on the ongoing recommendation by my Pilates instructor. I struggle with balance issues and tremors. Using both PEMF (Pulsed Electromagnetic Field) and red light therapy has assisted me in dealing with these issues. Although I initially went five days a week, I have recently decreased to 2 to 3 times a week. The staff is very knowledgeable and supportive, encouraging me to do some of my physical therapy exercises there.” Another devoted client, Robin Parker of Middleburg, credits RxR3 for the speed of her recovery after a fall from

a horse, as well as her ability to regain mental sharpness after suffering two concussions. “Within ninety minutes of my fall, I arrived, and they went to work. I did a daily PEMF treatment followed by Cryo for four weeks. Within three weeks, I was back to normal activity, including riding. My husband had a similar injury previously and did the typical ice pack/ibuprofen combo, but it took him six weeks -- twice as long -- to get back to normal activity,” Parker said. After her initial recovery, Robin worked closely with the team, adding two other treatments -- LiveO2 Oxygen therapy and also began doing FMM (Functional Mobility and Motion) -- in an effort to strengthen her core and lower body for improved riding. “I had multiple conversations about the biomechanics
Above: RxR3 offers compression therapy in its dedicated lounge. Compression boots inflate and compress the legs to flush out metabolic waste and bring oxygenated blood back to the area of concern. Ultimately, compression therapy increases circulation, helping to reduce muscle soreness and fatigue in the body. Below: Tim Hipp, center, and several of RxR3’s recovery specialists.

of riding with my coaches at RXR3, and they developed a program of stretching with bands and weights to help reshape my body so that it functions more efficiently for my particular sport. [An] additional positive outcome of working with RxR3, I lost 15 lbs and got my abs back!” Located just off Route 66, the lounge is convenient to local high schools as well as several 55+ communities. Hipp says that while the location is perfect because of its proximity to Loudoun, Prince William, and Fauquier
counties, there are people who travel to the lounge from Washington, DC, and Maryland as well. While the lounge’s therapies are helpful for anyone from athletes looking to boost their performance or recover from injuries to seniors who are looking for ways to improve joint and bone health, there are a number of other people who can benefit as well. “Since COVID-19, we have seen a large increase [in] clients who suffer from anxiety and the fatigue that comes from that. This year, we have added IV drip therapy and have seen a lot of clients with chronic fatigue and expecting moms who need the fluids and vitamins.” In addition to helping the clients who seek out the lounge’s services, Hipp contributes to the community in other ways. RxR3 supports high school students with scholarships and makes contributions to Willing Warriors, a Haymarket-based non-profit that provides services for injured, wounded, or ill service members and disabled veterans. “Every day, helping individuals feel better and do life better is our focal point -- to make the community better.” L RXR3 Recovery 6614 James Madison Highway, Haymarket rxr3pro.com

Design Tricks and Decorating Treats BY YARON LINETT
N
o need to rummage through your children's stash of candy hoping there is some delicious nugget left. This month we open our own bag and share with you all the tricks and treats you could want.
I love the idea of incorporating vintage or antique furniture into my home, but I'm not sure how to mix it with more modern pieces. Can you provide tips on achieving a balanced and cohesive blend of old and new in interior design? The key to all interior design is intention. Using things that you love and are meaningful to you nearly always works as long as you limit how much of it you do. Start with selecting functional pieces and build around those. You can always tie in lamps with new shades, upholstered pieces with slipcovers, and assorted artwork with coordinating frames. As long as people can see that you chose to use the piece as opposed to simply utilizing what was on hand, you are most of the way there.
Pro Tip: Furniture made from real kiln dried
hardwood is much better than modern cardboard and hot glue "fast furniture," so consider reupholstering these quality pieces.
I want to incorporate more technology into my home, such as smart lighting and automated temperature control. What are some stylish and seamless ways to do so? We always attempt to integrate technolo-
gy in unobtrusive ways. Smart bulbs, small hubs hidden in corners and on lower shelves, speakers integrated into fans and mirrors, etc. Just make sure that your wireless network can handle all those extra connections. Most people don't think about the strain installing twenty four new smart bulbs will put on their existing infrastructure.
Pro Tip: If you’re really serious about adding smart home features, ask your designer to bring a technology integrator on board as part of the team.
My home has a mix of different architectural styles, and I'm unsure how to create a cohesive design throughout. What are some strategies for harmonizing such disparate architectural elements? We had a client whose home was built to resemble a series of different Italian homes that merged into a single mansion. The "story" was of many houses, but one homeowner. We kept the decor choices inside the residence unified within a coordinated palette and utilized items with authentic handmade details to really pull things together.
Pro Tip: Wood, stone, and other natural materials have a timeless quality that helps marry various periods and styles.
I'm redecorating my bedroom and looking to create a serene and calming atmosphere. What are some color palettes,

materials, and design choices that can promote relaxation and better sleep?
The traditional answer is light blue, but really any soft or neutral shade can be relaxing. As for materials, we prefer linen or bamboo for sheets and pillow cases, and cashmere or alpaca for blankets. Wool rugs are great and, if you want to sleep well, limit the noise and blue light, and keep the room cool.
Pro Tip: We install black out curtains in every bedroom. They are especially great in guest bedrooms where travelers might be on a different time until they adjust. What are some of the latest sustainable and eco-friendly building materials and technologies that I can incorporate into my home renovation to reduce my environmental impact?
Eco-friendly is a big category. Some designers look for minimal packaging, others want items free from harmful chemicals. Some want recycled or recyclable material, and there are those who prioritize Fair-Trade sources. Whichever you are interested in, it never hurts to lean into energy efficiency and work with a builder who has experience with the best techniques for your specific climate and site conditions.
Pro Tip: For furniture, look at the Sustainable Furnishings Council website for a list of vendors who have made a commitment to adhere to their standards. L

“Hands On the Book” Parent Support for Early Literacy By Tutt Stapp-McKiernan
“Put down the electronics and go old-fashioned: read a book together and have a conversation! I want us to not lose the beauty of connection that can happen when you have hands on the book in front of you, on the couch, with your child.” —Mrs. Sabrina Finn
A
ccording to Mrs. Sabrina Finn, one of two first-grade teachers at Wakefield School in The Plains, Virginia, “We don’t call them ‘sight words’ anymore—we don’t want students to look at a word and try to memorize what it is. We are breaking down the sounds!” Like her fellow first-grade teacher Ms. Kathryn Mullett, Mrs. Finn spends a lot of time talking about and playing with sounds as part of her students’ earliest literacy lessons. “We spend a lot of time on phonemic awareness—learning to recognize the sounds that we hear,” says Mrs. Finn. “We pound out the words and tap out the sounds—we ask ‘What sounds do you hear in that word?’ and ‘What letters represent those sounds?’ I will speak a sentence and ask them, ‘How many words do you hear in that sentence?’” And like Ms. Mullett, Mrs. Finn says the
best help parents can give is to read aloud: “From as young as you can to as old as they want to, I’d say read at home. And read with them! Some of the best things are having authentic conversations about the stories.” Ms. Mullett adds, “My big thing is that parents get so excited when their kids start to read that they stop reading to them! Brain research supports and proves what we’ve always known intuitively: that reading aloud matters, even after children begin to read on their own.” In addition to reading aloud every day, how else can parents support early literacy and early reading? Here are some of Mrs. Finn’s and Ms. Mullett’s top suggestions: Model the habit of reading.Turn off the TV! Let your children see you reading, even if it’s only for 10 minutes (though 30 is better!). If you’re not a big reader—well, “fake
18 Haymarket / Gainesville Lifestyle N O V E M B E R 2 0 2 3
it till you make it!” If you enjoy sports, then just pick up a sports magazine—it can be anything! The point is that they see that you have a passion, and that you read about it. Let your children read a variety of genres, being sure to welcome in books that they like. Dog Man, Captain Underpants—it really doesn’t matter how silly a book might seem, as long as a child likes it. Above all, you want reading to be fun! Explore your public library with your children. Amazing things are going on in local libraries! Being in that environment, choosing their own books and looking after them, teaches respect for books and exposes them to a culture of respect for books. For reading on their own, reading physical books (as opposed to listening to “audibles” on a Kindle or ipad) supports brain development. Your senses are engaged; you physically turn the page to move the story along; you use your imagination to “hear” and picture the story. Audibles are fine for occasional use, say for a long car trip, but they are no substitute for actual reading. Play with language at home. Playing rhythm and rhyming games, clapping along, singing, and hearing poetry read aloud are all ways to help children hear and enjoy the actual sounds of language. “All children will learn to read, because they are motivated to please,” says Ms. Mullett, “but if they don’t actually enjoy it, then after a couple of years their interest can wane. The most important thing is helping your child to associate reading with fun and to find joy in reading!”

Building Leaders and Giving Back Meet Haymarket’s Janelle Taylor BY SUE BALDANI PHOTOS BY LUKE CHRISTOPHER
A
fter spending more than 25 years as a project management professional and a contract manager for various government agencies, Janelle Taylor realized she wanted to dedicate her time to empowering people in their organizations through leadership and sustainable problem solving. She realized she couldn’t do that in a 9:00 to 5:00 job. In 2019, she founded JTOA Corporation, an award-winning management consultancy, to pursue her mission of helping organizations and individuals be successful. “I absolutely love my work because it has purpose and supports our clients in helping them drive real world change,” she said. JTOA, based in Haymarket, provides portfolio management and business consulting expertise with specialties in contract management and project management excellence. “We were recognized as contractor of the quarter by the Department of Homeland Security for expertise and ingenuity,” said Taylor. In addition to being the CEO of her own successful company, Taylor’s passion also extends to the community. She started volunteering in her teens and always remembers what her parents told her. “Don’t just live in a neighborhood, but immerse yourself into the community and be a part of the value that you seek.” She has certainly done that since moving to Haymarket

in 2014. She became involved with the Prince William Chamber of Commerce in 2021 after receiving a flyer in the mail. “I attended one of their sessions and really loved the team - we just had instant chemistry.” Taylor shared her expertise, and afterwards, she and the Chamber began recruiting speakers to talk about contract management. “We used all of the current resources that the Chamber had and just rounded them up to talk. People found it very informative.” JTOA has also been a sponsor of the Prince William Chamber of Commerce. “I just want to say how grateful I am for the Chamber for really augmenting my own awareness and allowing me to do so through the Government Contracting Council.”

It’s a really cool way to be a mom and a business owner at the same time and give kids opportunities. In addition, Taylor volunteers with the Project Management Institute, a U.S. based not-for-profit professional organization for project management. “I’m a training and development coordinator,” she said. “There's a lot of people with a lot of certifications, but my focus is experiential learning. Can they actually do the work?” She is also the past president of the National Contract Management Association for the Tysons chapter. “It is the largest and most robust Association in Tysons Corner. It was an awesome experience leading them through a pandemic.” In addition, JTOA is a SPARK (Supporting Partnerships and Resources for Kids) partner. “It’s a work-based learning partnership between companies and schools in Prince William County,” said Taylor. “If we have a job, I’m going to go to the high schools and tell the students about it and give them some kind of work study. It’s a really cool way to be a mom and a business owner at the same time and give kids opportunities.” She has also inspired her children, 10-year-old Lauren and 9-year-old Leighton, to help others. “My daughters and husband actively participate in helping with special projects and some work projects through JTOA Corporation when we have workshops for project managers and operation sessions.” Lauren and Leighton are Girl Scouts of the Nation’s Capital with Service Unit 90-04, Troop 90064. As a Girl Scout troop leader, Taylor, along with her co-leader and an amazing group of parent volunteers, do a lot of good in

the community, including collecting food for the Haymarket Food Pantry. The family looks forward to doing even more for Prince William County, and feel relocating from the Northeast to Haymarket was a great move. “My husband and I wanted to find a community that we could grow with intentionally as professionals and parents and, in the years ahead, retirement. Most of all, it really mattered to us where we would be raising our family along with the available school programs and resources that we could both contribute to and enjoy in the future.” The Haymarket /Gainesville area, said Taylor, provides a wealth of activities, workshops and resources along with opportunities for people of all ages, including children and senior citizens, to get involved in the community. Lauren and Leighton enjoy taking lessons at Battlefield Jiu Jitsu, and the entire family loves to hike. “We go to the Blue Ridge Mountains and, while we didn’t tackle Old Rag Mountain this year, last year it took us about eight hours!” L To learn more about Janelle Taylor and how she and her team at JTOA can help your organization, go to JTOACorporation.com.

Lean on Them American Legion Post 1799 helps veterans, neighbors and the community BY SUE BALDANI PHOTOS BY LUKE CHRISTOPHER

or Carlos Collat of Haymarket, joining American Legion Post 1799 was a way to give back to his fellow Veterans living in the community. Having spent 31 years in the United States Army, he has the experience and knowledge to lead others to do the same. Today, he is the Post Commander, and oversees the 130 members who represent all four of the original military branches – Army, Navy, Air Force and Marines. “Our oldest member is a World War II Veteran who’s 101 years old and fought in the Battle of Okinawa,” he said. “The youngest member is about 55.” American Legion Post 1799 was officially chartered in 2005 and services Veterans and other residents living in Haymarket, Gainesville and Catharpin. Members, called Legionnaires, attend official General Membership and Executive Committee meetings usually on the fourth Saturday of the month at 10:00 am at the Marsh Mansion at Heritage Hunt. There’s also an informal
gathering every Thursday morning at 9:30 at the local IHOP. “We have a good group of people who bring so much to the Post and who we rely on to get things done,” said Collat. And, they get a lot done. “There’s a huge program called Wreaths Across America that goes from coast to coast laying wreaths on Veterans’ graves. We’re taking part in a large ceremony at Stonewall Memory Gardens cemetery on December 16, and through their program, we came to find out that there were 32 graves there that had no markers. That didn’t sit right with us.” So, they started the Respect Our Fallen Vets program and have joined with American Legion Post 10 and VFW Post 7589, both in Manassas, and VFW Post 12282 in Haymarket, in order to provide markers for these graves. So far, they have raised enough to purchase two grave markers, and they hope to raise at least enough to purchase two more in time for the ceremo-
ny on December 16. At a cost of $1,300 per marker, it’s going to take time to provide one for every unmarked grave. “This is not a race to the finish,” he said. “This is a program we want to establish to go on in perpetuity. People can contribute right to the cemetery, or they can contribute to us or the other three posts.” Another program is Sweats for Virginia Vets, which supplies warm, comfortable clothing for Veterans at the local VA hospital and other assistance facilities. “Members of the Post have also participated in the Honor Flights at the National WWII Memorial, welcoming Veterans brought in from around the country to see this memorial established in their honor,” said Collat. Since its beginning, a key focus of the Post has been how they can best help Veterans who require direct assistance. “By leveraging the resources, talent and expertise of the Post’s Service Officer (PSO), Veterans are being assisted in their quest to be recognized in terms of their respective
disabilities with both national and state Veterans Affairs offices.” The Post also provides “Buddy Checks” with those Veterans viewed as needing additional assistance. “It can easily be said that the PSO in conjunction with the Post Chaplain are key pieces to having a holistic approach to making progress in the interest of the American Legion’s number one pillar ‘to support Veterans and their Families,’” he said. Members also raise awareness about the 988 Suicide Prevention Hot line. Other activities supported by the Post include the Boys State/Girls State programs. “The Post has been instrumental in financially supporting young men and women in this incredible civic endeavor.” Initially, the Post was able to support only one, then two young people, but in 2023, it was able to fund two young men and two young women from Battlefield High School, Gainesville High School, Trinity Christian and a home-schooled student to attend events.

The Post is also involved with the “Vettes for Vets” car show held annually at the nearby Willing Warrior Retreat facility, and it biannually sponsors a community blood drive with a local church. Additionally, it provides local and national election support and focus in its “Get Out the Vote” project. “A big thing in our American Legion post right now is a program called ‘Be The One,’” said Collat. “So, be the one that helps others; be the one that’s ready to assist. Be the one to help change things and be the one to be there for others who need you. I’ve unofficially named our Post the ‘Lean On Me Post.’ If you have a problem, you lean on us, it's that simple.” Of course, to make these and their many other programs successful, American Legion Post 1799 needs active members, those who are willing to get involved and make a difference. “Recruiting more members is very important for our Post right now, because the older we get, the less people we have available,” he said. “Veterans who are interested in joining can come and have breakfast with us at IHOP and scout us out. If they feel comfortable, they can join us. If not, we understand. We don't put any pressure on people.” Another way to support the organization is through financial donations. Some people present them with checks at IHOP or at their monthly meeting, while other prefer to mail them. “I think about where I am in life, what I've done, and what I can still do,” said Collat. “Somebody said to me a long time ago, ‘You've done so much in your life, but you reach a point where it's time to give back.’ Those words are so meaningful to me.” L To find out more about American Legion Post 1799, to become a member, and/or to provide assistance, go to ALPost1799.org.

Burning Up the Charts With the success of her debut single, “Take a Number,” rising pop country rapper Livvy D. is on her way to #1 BY JENNIFER WALDERA PHOTOS BY BACINI BOUDOIR
B
efore she was even a year old, Olivia Dunbar was singing along to the radio from her car seat, and as she grew a little older, she began creating her own tunes from the backseat. Now, the talented Gainesville-based performer known as Livvy D, is belting out bold and sassy songs in her signature pop-country-rap style while sporting sparkly boots and plenty of pink. From playing the maracas, dancing, and singing on an at-home karaoke machine to performing in band, orchestra, or chorus at school, Dunbar has always been musically inclined, attending multiple talent conventions and, at 18, getting her biggest break – meeting a producer with whom she wrote and recorded several songs as well as the accompanying music videos. “I love being on the stage and making music,” Dunbar said. “It’s my happy place.” Dunbar is in the process of making her second album and is learning even more along the way. On a daily basis, Dunbar takes vocal lessons, and she’s taken up guitar, as well. While Dunbar says her genre is pop-country-rap, she also offers this overall description of her music. “I would describe it as fun-loving, creative. It’s different, it’s out there, it has a blend. [I like to make] a fun song you can jam out to with your girls or guys.” Dunbar is mindful in her approach to music, with the goal of making it relatable. Her own life experiences, feelings, and lifestyle inspire her lyrics with messages that range from being confident and wanting to be respected to taking on topics like disappointing dating experiences, all in a fun way. She also says she wants to be a role model -- particularly someone that girls can look up to. “I’m very genuine, I like to be very real, I like to connect with people on a personal level.” And while music may have always come naturally to Dunbar, extroversion did not. Dunbar describes herself as shy when she was growing up and lists being vulnerable and putting herself in the public eye as the greatest chal-

lenges she’s faced so far. However, she has loved having the opportunity to grow and have a platform and an opportunity to speak out. Furthermore, she tries to use that platform as a way to spread the word about causes that she’s passionate about. “I like to use my platform to support animals. I also like to talk about things that people don’t like to talk about, like mental health.” Dunbar is also committed to helping within the community. There’s no denying her love for Gainesville, and she has worked to give back as well. From rescuing horses and adopting her bunny from the Fauquier SPCA to volunteering through the Girl Scouts and with the Northern Virginia Therapeutic Riding Program, Dunbar’s made numerous meaningful contributions to local causes. While Dunbar exudes passion when she talks about her music, community service, and love for animals, she’s also deeply devoted to her family. She names her brother as her best friend, and when asked what she is most proud of, she doesn’t skip a beat when responding that it’s her family and points in particular to her mother as inspiration. “My mom is a boss business lady, and I want to be just like her!” And that admiration doesn’t go unrequited. Dunbar’s mother, Teresa, says the entire family is incredibly proud of Dunbar and her hard work. “I’m her mother, manager, and promoter, and I’m honored to be all of those things in her life. We’ve watched in amazement as she’s grown into the person she is today. She’s passionate and determined. This is a remarkable entertainment journey.” Family friend and ardent fan Shelley Scheerschmidt is also enthusiastic about Dunbar and her music, which she describes as edgy, catchy, and empowering. “I know her background, and I love her whole story. She’s the embodiment of female empowerment,” Scheerschmidt said. Meanwhile, Dunbar’s photographer Michelle McCrady, who is a crucial part of helping Dunbar with images for many projects from merchandise and album covers to social media, says that one of the best parts of her career is working with the spunky singer who oozes both confidence and creativity. “She is just an amazing person to watch come into her own and break so many stereotypes and societal boundaries that are placed on women. It’s inspirational,” McCrady said. As Dunbar continues to push forward in her music career, embarking on her second album and soaking in all of the new experiences, in her signature optimistic style, she encourages others to pursue their dreams, too. “You get told no so many times. Keep trying out, keep at it -- keep your head up high. If you know you’re great, someone is going to see it. Follow your dreams, follow your heart, follow your gut, and work hard -- you’re the only one that can make it happen.” L

hen we walk onto the open fields in the rural areas of our county and embrace the changing winds, we remember. The way the trees looked when the last of the leaves fell, before the cold pushed us indoors. How the hillsides hollowed out to reveal the deer in the meadow. The sun sets ever slowly, stealing color with it as it goes, but before it fully takes leave, we’re allowed a moment to breathe it all in. All this, while resting together on our old stone fence. This Thanksgiving season, let us take note of the beautiful landscape we are blessed with, and the history of those who made it so. For my part, I will keep this memory by sharing with you a cocktail that has its origins in the Revolutionary War. The night before the capture of Fort Ticonderoga, it is said that Benedict Arnold, Ethan Allen and his Green Mountain Boys drank heavily of this notably “savage mixture” of New England rum and hard cider. After centuries of development, it has transformed into a “suave and smooth” bourbon cooler, and today I present it to you with ingredients sourced locally as much as possible. For a drink to remind us of where we’ve come from and what we’re to be thankful for, here is The Stone Fence. L

Come for Coffee! BY KARLA JONES SEIDITA, HOME ECONOMIST
H
ow about some easy entertaining to kick off the holiday season? Simple, no stress entertaining that doesn’t break the bank, with make ahead party fare that jump starts your Christmas baking. Sound good? Great! Invite your peeps for coffee and let’s get into the kitchen!
First the Coffee
Get fancy and serve a signature coffee. It’s a fun change from everyone’s day to day cup. Plus, there’s sooooo much you can do with coffee! Flavored creamers, caramel sauce, chocolate syrup, spices, spirits. If you crave it, you can make it. Here’s some ideas... Start off by brewing your favorite coffee. Perc-ed. Dripped or however you like it. Regular and (purists will cringe) decaf. Serve in big mugs or tall, heat safe glass cups. Get creative with your choice of ad ins to taste. No exact recipe needed. Let your guests stir in the optionals as desired. Café Cinnamon - Black coffee with a cinnamon stick. Cream and sugar optional. Peppermint Stick - Black coffee and a peppermint stick or candy cane. Sugar optional. Honey Bee - Black coffee, honey and a sliver of orange peel. Milk or cream optional. Pumpkin Spice - Black coffee, pumpkin pie spice. Milk and sugar optional. Maple - Black coffee and maple syrup. Cream optional. Café Mocha – Equal parts black coffee and hot ½ & ½, two or three Tablespoons of chocolate syrup. Sugar optional. Café Caramel - Equal parts black coffee and hot ½ & ½, a Tablespoon or two of caramel
ice cream topping. Sugar and whipped cream on top optional.
Spiked
Spirited Coffee - Black coffee, a jigger of spirits – Cointreau, Southern Comfort, Irish Whiskey. Sugar and whipped cream on top optional. Café Brandy Alexander Black coffee, brandy, a slash of heavy cream, sugar. Hot Buttered Rum Café Black coffee, rum, a little sugar
34 Haymarket / Gainesville Lifestyle N O V E M B E R 2 0 2 3
and a pat of butter. Cafe Italiano - Black coffee and anisette. Sugar optional. Toasted Almond Café - Equal parts black coffee and hot ½ & ½, Amaretto. Bee Sting - Black coffee, honey and Southern Comfort or bourbon. Cream optional. Santa’s Candy Cane Coffee - Black coffee, peppermint schnapps, whipped cream on top and a candy cane.
Now the Food Inviting guests for coffee is easy because you only need a few simple sweets for nibbling. Compare that to inviting guests for tea with it’s made-at-the-last minute array of sandwiches, scones, and tarts. These three cookies are makeahead magic. Why not get a head start on your holiday baking by making an extra batch or two? They freeze great!

MAKES 3 DOZEN (2 ½ INCH) COOKIES USES COOKIE SHEETS AND BAKING PARCHMENT INGREDIENTS
3.
1 stick butter (melted) 1 ½ cups old fashioned oatmeal (uncooked) ¾ cups sugar 1 teaspoon baking powder 1 teaspoon all purpose flour (Yes - only 1 teaspoon!) ½ teaspoon salt 1 egg 1 ½ teaspoons vanilla DIRECTIONS
1.
2.
BAKER’S TIP
If the mixture seems dry, mash it together before adding more rum. It may surprise you. If it’s still too dry to hold together, add more rum. If too moist, add more crumbs.
DIRECTIONS
3.
Position oven rack so cookies will bake in center. Preheat to 325 degrees. Cover cookie sheets with baking parchment. Set aside. Mix all the ingredients. Use 2 teaspoons of dough for each cookie, drop onto lined cookie sheets - 6 cookies per sheet leaving space between. They spread a lot. Bake till golden on edges – about 10 minutes. Cool on pan 5 minutes. Slide baking parchment (with the cookies) onto a rack to finish cooling and crisp.
BAKER’S TIP
Only a small amount of dough is used for each cookie. Use a measuring spoon or a 2 teaspoon size scoop to portion.

4.
Position oven rack so biscotti will bake in center. Preheat to 350 degrees. Line cookie sheet with baking parchment. Set aside. Mix sugar, oil, eggs, vanilla, zest and almonds. Stir in baking powder and flour. Dough will be heavy and slightly sticky. Put dough onto prepared cookie sheet. Dampen hands with water and form dough into a loaf measuring 3 inches wide X 12 inches long X 3/4 inch high. Bake till light brown on top – 35 to 40 minutes. Remove from oven. Immediately cover loaf completely (still on the cookie sheet) with foil. Let rest 10 minutes. After 10 minutes, remove foil and put loaf on a cutting surface. Using a serrated knife, cut loaf into ½ inch thick slices. Put slices, cut side down, back onto cookie sheet. Return to oven for 10 minutes to dry a bit. Remove from oven and cool on rack.
CUTTING TIP
To prevent crumbling edges when slicing, put the knife across the top of the loaf and, using a sawing motion, cut straight down. L

repare for competing “interactive experiences” at Tysons Corner Center this winter, when the year of Mattel will continue with the worldwide debut of its Hot Wheels Champion Experience. After making its mark on the summer box office with Greta Gerwig’s “Barbie,” the toy company will venture into immersive entertainment with a 16,000-square-foot exhibit and play area based on its 55-year-old model cars and race tracks. The experience will open on Dec. 8, around the same time that the retailer Camp will unveil a new, permanent store and temporary “Encanto”-themed display at the mall. The attraction will be on the mall’s second floor next to Barnes & Nobles, a space previously filled by this summer’s Dr. Seuss Experience. It will stay at Tysons Corner Center for a limited time before moving to other locations.
OVA Wild in Reston recently announced the arrival of two adorable two-toed sloths who are now ready to meet zoo-goers. Two-toed sloths are native to Central and South America, including Brazil and Peru, according to the Smithsonian National Zoo's website. And of course, they're known for moving slowly. "Sloths have leafy, low-calorie diets and very slow metabolisms to match. Their metabolic rate is only about 40-45% of what would be typical for their body weight," the zoo writes. "Because of this specialized metabolism, sloths need to be frugal with their energy use. So, they move slowly and tend not to wander far from their small home ranges." The sloths' newly built, interactive habitat is designed to provide an immersive and educational experience, allowing guests to be up close and personal while learning about sloths' natural habitat, behaviors and conservation status. For an extra $100 beyond admission, you can meet and interact with the new sloths one-on-one at Nova Wild through a zookeeper guided tour.
A $100M indoor sportsplex? Prince William County leaders are considering it
P
rince William County is considering the purchase of an indoor athletics facility that would feature an indoor pool, a hydraulic running track and hard-surface courts for basketball, volleyball and pickleball that could be utilized by public schools and youth sports groups. The board held a public comment session to solicit input from residents on the proposal. Those who spoke – including high school student athletes, an Olympic gold medalist in track, local coaches, sports league organizers and members of the pickleball community – endorsed the project. Several public school student athletes and coaches spoke of the lengthy travel times they endure to attend track meets since there isn’t a facility nearby. The proposal states the developer intends to meet with Prince William Public Schools officials to provide opportunities to host sports competitions and events both on weekends and weekdays. Other youth sports groups, including wrestling and soccer, are also mentioned as potential users of the facility. Beyond sports, the developer said the complex could be used for events like conventions, trade shows, graduations and community meetings. If the project comes to pass, the complex could be the largest of its kind in Northern Virginia.
