The beers are made using a wood-fired brewing system as well as a coolship - a traditional Belgian cooling copper pool which helps to collect wild yeast and bacteria to ferment the beer while in oak barrels for up to 36-months or longer. The brothers also make spontaneouslyfermented cider using apples grown 100% in Rappahannock County. The brothers have additionally established a 5-acre permaculture, no spray or chemical orchard where they have planted heirloom apples, pears, plums and grapes.
