very year, our August issue, with our Best of Fauquier results, is our biggest and most eagerly awaited issue. This year we had a fantastic turnout: 8,247 voters cast 73,766 votes. That’s a lot of people who cared for their favorite businesses and took the time to go and vote, and we thank them for their participation. Some businesses win their categories year after year, and we support these longtime businesses who have gained such popularity through years of excellent service to the community. Sometimes, though, there is a new winner, either a new business in town, or a longtime business that wins for the first time, and we love those surprises too. But Best of Fauquier only scratches the surface of the wealth of businesses in our community. Often, the votes are so close, and we wish we could recognize everyone who makes this such a business friendly community because there are so many special places here. Many many thanks to all the businesses in the county, and thank you, Fauquier County, for supporting them!

After getting married and planning a family, I wanted to get back to a community like (Clarke County) the one I grew up in. So, Fauquier was the obvious choice. My wife, Michelle, and I brought our family here in 2005. I lend in 14 states, but I drive to serve Fauquier County because it is my county, and I am weird and idealistic like that.

I am happy to be involved and sponsor many things in our county. I support the high schools regularly in activities and donations. I am active in charity events with Realtor partners and have hopes in my empty nest years to start my own charity called, “Flags for Fauquier and Counties of Virginia”. C
hris Melmer has always wanted to be a police officer, but it wasn’t until he began working as a correctional officer for the Albemarle-Charlottesville Regional Jail in Charlottesville that he realized how he could make a difference in people’s lives behind bars as well. “I'm always going to work to help someone through the system because people make mistakes – by breaking the law, you have to atone for that,” he said. “But just because you break the law doesn't mean you're just like a criminal forever.” A Warrenton native, Melmer, 30, said he grew up right off Walker Drive outside of town until he graduated from Fauquier High School in 2010. After graduating, Melmer attended James Madison University where he found his calling in law enforcement after taking an Introduction to Justice Studies course his first year. “I was taking a bunch of 301 classes… they were like white collar crime and global justice… those types of courses…it kind of just broadened the criminal justice world for me,” he said. But after earning his bachelor’s in criminology in 2014, Melmer said it was difficult to find any work in law enforcement because of his lack of experience. Instead, Melmer, who was a part of the cycling team in college, decided to take the opportunity to work for Bob Leftwich at the Bike Shop in Old Town Warrenton. “He was a great mentor,” he said. After about a year, Melmer left to work on Del. William Howell’s campaign, but all the while Melmer said he still had that itch to work in law enforcement. Then in 2016, Melmer was hired to work at Albemarle-Charlottesville Regional Jail as a correctional officer. Melmer said he remembers his first night there, making rounds as a correctional officer right out of training, and there was one inmate covered head to toe in tattoos who was staring him down.

“It wasn't a violent offender,” Melmer said. “He had an addiction to a narcotic and possession was just continuously what he got in trouble for.” Melmer said this specific inmate was in and out of prison for years mostly for possession of narcotics. But one night while making his rounds Melmer decided to get to know him a little better. “And for and so we just started talking about it,” he said. “I don't have kids myself, but he had kids. And so I was trying to show him that consistently [leaving prison] and briefly having time with your kids before coming back for weeks or months…is affecting your kids. And so we kind of connected on that issue.” During his time as a correctional officer, Melmer said one thing that was difficult to reconcile was the vicious cycle that some of these non-violent offenders get caught up in: they get released from prison and then fall back into the same patterns because there are few resources for them before or after they get out. “And he ended up getting released, but a couple of months later, he was back in the same housing unit. I saw him, and I asked, ‘What are you doing back?’ And he said, ‘Well, I got out, I had a job. I got fired from my job. Because you know, I don't have a car. And so I just fell back into drugs and got picked back up for violating my probation.’” Melmer said it was at that point he realized the justice system wasn’t doing enough to prepare these people to be productive citizens after they leave prison. Melmer noted he wanted to do more to equip incarcerated non-violent offenders with the tools to succeed in the real world. After the inmate was released for the final time, Melmer didn’t see him again in his capacity as a correctional officer. Instead, it was a year later in downtown Charlottesville. “I was hanging out with some friends, and I heard someone shouting “Officer Melmer,” which people normally don't do,” he said.
“And I turned around, and it was him. Still identifiable, right? Because he was wearing shorts and a T-shirt, but all his tattoos were showing. But he had his daughter in his arms, his son was holding his hand, and he was with his girlfriend. So he came up to me and told me he'd been clean for 11 months.” Melmer said he believes this experience made him better at his job because he understood the people society stigmatizes are also sometimes victims. After going through the Newport News police academy and working in the city of Newport as a patrol officer for about a year, Melmer was hired at the Warrenton Police Department in April 2020, first as a patrol officer until he was promoted to property and evidence officer. And throughout the last few years, Melmer said he has tried to expand his knowledge of different resources, such as Alcoholics Anonymous, among others, he can refer non-violent criminals when they need help getting sober. “I'm not an addiction specialist. I've never gone through addiction. So I have very limited personal experience with it. But I can connect people to the resources that could benefit them,” he said. Melmer said he takes great pride in helping others, whether or not they have been incarcerated. Because at the end of the day, his job is to protect those who are victims. w

few weeks ago, one of my clients who is over 50 came to me bragging about his golf game. He had recently returned from a trip in which he played three 3-day tournaments in 10 days. He wasn’t bragging about his golf, rather his ability to bounce back day after day without soreness, playing better and better golf each day, and enjoying himself. He credited his strength training for his increase in striking distance and stamina. Which leads me to the point of this writing.

There are six foundational movement patterns that we need to master in the weight room to create functional strength i.e., strength that we can apply to our everyday lives.
Tracking loads
It’s hard to remember what we ate this morning, let alone what weight we lifted in our last workout. Write it down or track it in an app! Making small incremental gains is the best way to get strong without injury.
Putting a program together
In order to maximize your time in the gym, work with your coach to pair exercises that utilize different muscle groups. This keeps your workout moving and helps with recovery. Remember to aim for two full body strength workouts per week, and start with very light loads. Of course, before starting any exercise regimen, consult with your physician and get the “all clear.” There are a variety of ways to feel better, look better and live a healthier lifestyle after fifty, but strength training gives you the most “bang for your buck” in terms of time, financial investment, safety, and results. Into the Light The Blu Room at Warrenton Wellness BY PAM KAMPHUIS PHOTOS BY LINDSAY HOGEBOOM
T
o say I was stressed the first time I visited the Blu Room Light Therapy facility at Warrenton Wellness for a complimentary session for this article would be a vast understatement. My best friend had just died a few days before, and I was just coming off of two weeks of watching her go through hospitals, doctors, nurses, treatments, dialysis, and more. My adrenaline was still rushing from being in such a constantly stressful environment. When I arrived, Sarah Shores, the owner, showed me to the light therapy room. It was a small, octagonally shaped space with polished stainless steel mirrors from floor to ceiling which made it seem more expansive. It was lit with a blue-toned light which made it feel bright and welcoming, and the overall effect was futuristic, almost like being in a spaceship. The benefits of the Blu Light room do not only have to do with the actual UVB light, which is actually only turned on for a few minutes during the 30-minute session. The regular visible blue light promotes relaxation, and another component of the whole experience is the music Shores plays. It is instrumental guitar from the professional musicians at Whole Tones, with an almost Native American vibe to it. Before she closed the door and turned on the music and the lights, she explained a little about how to approach the next half hour. To take full advantage of the experience, you can’t just lie there. Shores encouraged proactive relaxation techniques and meditation to raise the mood and re-energize. I’ve never had much success with meditation - my mind always seems to wander. But Shores was encouraging, and reassured me that there is no specific formula. She recommended that I focus clearly on my breathing, which, she admitted, is not as easy as it sounds. To get me started, she suggested visualizing the healing, relaxing blue light coming into the body on inhale, and imagining the stress and anxiety leaving the body on exhale. She also suggested focusing on the hum of the lights and the warm deep sounds of the music. She encouraged keeping focus on the concept of joy, explaining that a positive outlook can become a habit if you work at it. So, after donning the provided eye protection and (reluctantly) surrendering my phone, I lay on the padded table with a pillow and a support under my knees, and I was very comfortable. And it was wonderfully warm, which was a blessing on this snowy January day.

And I breathed deeply and slowly, visualizing the stress decreasing and concentrating on the words of joy. The tones of the music seemed to start at the base of my neck and radiate down my spine and into my limbs in a soothing way. And, as I said, I am no master at meditation. But I did begin to relax, and quite quickly, which surprised me. I think it had to do with all the soothing sensations the room provided, as well as the absence of external distractions that constantly bombard us in everyday life. For the first time in weeks, I had nothing to take care of or think about but myself. There were no emails coming in, no doctors or nurses to question, no illnesses to research, no one that needed comfort or explanations. No one else to take care of for 30 whole minutes. And 30 minutes was enough time to relax, and I found myself thinking back to spending time with my friend when she was healthier, and remembering her laugh and sense of humor instead of the frantic and stressful last few weeks. It’s something that we rarely do today-just be quiet and concentrate on caring for ourselves for a time. Shores welcomed me to the light room for a few more weeks, and it became like a welcome date with myself, time just for me, alone, with positive, warm sensations from all sides. Get to know the Mineras Dr. Soledad Minera, DDS, and Dr. Jorge Minera, MD BY PAM KAMPHUIS
“I
t’s a dream come true,” said Dr. Soledad Minera, DDS, MSD, the owner of Minera Orthodontics in Warrenton. Her husband, Dr. Jorge Minera, MD, a partner physician in the bariatrics program at Piedmont Family Practice, agrees. The couple was thrilled to move to Fauquier County in 2008, and lives in Warrenton with their 17 year old daughter Sofia who is a student at Fauquier High School, and 11 year old Sebastian who attends Warrenton Middle School. The Mineras were both born and raised in Guatemala. They met in medical school when Soledad attended two years as part of her dental education at Universidad de San Carlos de Guatemala while Jorge was also attending. They dated for years, Soledad jokes, and married in Guatemala. Jorge then wanted to do his residency in the U.S. and the couple moved to New Jersey where Soledad attended Rutgers University to finish her degree in orthodontics while Jorge served as Chief Resident at Warren Hospital in Phillipsburg, N.J. After a few years of practice, Jorge was looking to become a partner in a medical practice. They visited several different areas and fell in love with Warrenton when Jorge considered joining Piedmont Family Practice as a general practitioner. “When we came for his interview, we fell in love with everything about Fauquier County,” Soledad said. “The rolling hills, the farms, the landscape. Out of all the places we visited, we chose here.” Jorge practiced primary care initially, but had always been interested in nutrition and exercise due to his own

involvement in athletics and long distance triathlons. He spent those years as a primary care physician specializing and obtaining more education and certifications in the bariatrics field, which is the science and medicine of treating obesity and its associated health problems. Recently, Jorge branched off to found the Bariatric and Metabolic Weight loss Center, a subsidiary of Piedmont Family Practice where he works with patients to manage their weight loss and maintenance goals through evidence based medical principles of nutrition and exercise in an individualized program.

“We fell in love with everything about Fauquier County... the rolling hills, the farms, the landscape. That was the path for Warrenton resident Amy Zwirko, who has lived with her husband Andy and daughter Anna in the county for 20 years, but the surprise is that she has unexpectedly circled back and now enjoys a career in art she never thought she would have. “I was a truly starving artist!” Amy laughed. “I’ve been painting since childhood, and earned a degree in Fine Art

I am almost full-time with art now – going back to my first love after a full-time professional job! from Old Dominion University. Then I was barely surviving working at an art gallery in Norfolk. I have two uncles that are dentists and a cousin who is a hygienist, and they talked me into getting my dental hygiene license at NOVA Community College in Springfield. I’ve been working in that field now for 30 years, in Manassas and also filling in at offices in Warrenton as needed.” When Amy turned toward art again about seven years ago, her sister introduced her to the now-popular “sip and paint” concept. “I thought she was crazy, but I experimented with a group of friends, then another group, then a church group,” she said. In 2017, Creative Crafts with Amy was born, and now she features a full slate of mobile arts and crafts classes. “I am almost full-time with art now – going back to my first love after a full-time professional job!” Creative Crafts with Amy brings the joy of art to the client’s location. Everything needed is supplied, from the canvases and easels, to the paint brushes, paint, and even rinse water. The group chooses a design from Amy’s library, and she walks them through the process of painting it step by step. “We use acrylic paints because they are easy to use and dry quickly,” she said. “We start with the basic shape, but I provide a lot of colors of paint and they have the freedom to customize their own work, perhaps change the type or color of flowers, for example.” Most of the offered projects are on canvas, but other options are also available, such as painting on wine glasses or mugs. Initially a large part of her business was groups at wineries and restaurants. She explained, “When COVID hit, I wasn’t able to do that, so I pivoted and started working with local high schools and middle schools doing fundraisers in addition to art classes through Parks and Rec. For instance, Fauquier High School did a paint night fundraiser for band and orchestra, and the results were amazing! I bring the supplies, we set up in the cafeteria and we work on one picture that I help everyone paint. They usually have a bake sale or pizzas – we make a night of it!” She works with Kettle Run High School as well, with the schools keeping $10 per painter to fund their targeted projects. Amy offers a popular paint class for children’s birthday parties as well. “I bring my daughter Anna, who is a

senior at Fauquier High School, as my art assistant and we use a smaller 10 x 10 canvas. We keep the class length to between 30 and 60 minutes,” she added. “We use an easy design, and the kids and parents love it!” In the early days, one of Amy’s birthday party gigs turned out to be quite memorable. “I was leading a paint class at a large birthday party, and we had maybe 20 kids outside -- ten boys and ten girls,” she said. “The girls wanted to paint unicorns, and the boys wanted to paint sharks. My daughter took the boys, and as the painting progressed, she came running over, saying ‘Mom I need help!’ Turns out the boys were painting blood and body parts coming out of the sharks’ mouths. I have learned that sometimes, you just have to let it go.” “At another party, we were painting old Ford pickup trucks with pumpkins for a pretty Fall scene. The parents were painting perfect trucks, just lovely, but two boys turned their paintings into monster trucks! Their parents were mortified but it was great – we give the kids paint and let them go – they have the best time!” Amy’s work with local seniors is just as rewarding, and she really enjoys the classes she holds at the Rappahannock Rapidan senior centers. “There are five of them I paint with every other month – we do a paint class and rotate through the centers,” she said. “The best part is sitting with the seniors – they tell the funniest, most interesting stories, about kids, cats, anything -- absolutely hilarious!” Creative Crafts with Amy is not just about paint parties; she offers a wide range of craft options, too. “I have classes through the summer and more in the fall through Fauquier Parks and Recreation,” she said. “My silk scarf painting class was very successful, and I offer a giant canvas painting session working strictly with paint pallet knives – no brushes! I may revisit the mosaic class

I offered last winter as well, plus wreath making toward the holidays.” Working with vinyl floor cloth is extremely popular, too; participants paint them and then seal with a polyurethane for a lasting look. She is surprised, and pleased, at how fast the business has taken off, and she thinks perhaps people want to learn a new skill and get together with people again post-pandemic. Deep down, what Amy loves best is connecting with her customers and teaching the basics to those with little experience. “I love talking to my customers; I love talking!” she laughed. “I love introducing them to paint and painting techniques -- simple things like mixing colors and types of brushes. I especially love working people who have never painted before, showing them it’s not as intimidating as it seems. Yes, you can paint! ext time you’re at the Warrenton or Marshall Farmer’s Market and you want a delicious frozen treat, look for the cool turquoise and silver Little Pop Truck. Retrofitted to include two large display freezers, a line usually forms as soon as it pulls up. “We've only been to a handful of markets now, but at the last two we sold out of pretty much everything,” says popsicle maker and owner, Stephen Fedore. “My wife, Maria, and I started making popsicles last November or December. At the time, we had two young girls, and we wanted to get them to spend more time with us in the kitchen making food and eating more fruit, and making popsicles was a fun way to do it.” They all enjoyed them so much that this past June, the couple started officially offering their tasty homemade popsicles to others. Many of the ingredients come from local grocery stores, but they’re working with a private family farm in The Plains to incorporate more local fruit. “We want to continue to expand and form more partnerships with local farms,” he says. “We try to do fresh fruit whenever possible, but we’ll do frozen fruit when necessary, especially with hard to find fruits.” One of the most popular flavors, especially with kids, is strawberry, and they often sell out of those fast. The husband and wife also enjoy combining flavors and making interesting and unique combinations. “We do a chocolate-dipped strawberry that is popular, and blueberry lemonade is also a hit, but my personal favorite is the spicy peach,” says Fedore. “It’s spicy, but it's cold, so as you take a bite, you want another bite because you want to cool off your mouth, but then it's hot again, so you have to take another bite, and so on.” Other flavors

include cherry limeade, pineapple coconut, and a mango strawberry, which they call an inside out because there's mango in the middle of the strawberry. One of the most special things about Little Pop Truck, he says, is the truck itself, which took about three months to retrofit. While buying popsicles, people are also usually snapping pictures of it. “We bought the truck a couple of years ago and I’ve always loved taking old cars and odd vehicles and building them into different things. I'm originally from Oklahoma, and I did my undergrad at Oklahoma State where tailgating is really big at football games. I bought an old ambulance and retrofitted it to what we called a ‘tailgate response unit’. It wasn’t saving any lives, but it was making lives more enjoyable.” After retrofitting the truck, Fedore had to buy the large freezers, install an approved commercial kitchen in their basement, and purchase a special popsicle machine that freezes popsicles in about 16 minutes. “One thing led to another and all of a sudden you're like, ‘Oh my gosh!’

Expanding from a hobby into a small business is a major expense.” All in all, he calculates, it added up to around $35,000, if not more. That’s a lot of popsicles! He’s looking forward to bringing the truck to festivals and other local events. “We’re attending the Great Meadow Invitational event at Great Meadows, and we will also be going to private parties. We have a minimum purchase of a hundred popsicles for those, but the client keeps any popsicles that aren’t eaten.” As a full-time data and technology consultant for education organizations, making and selling popsicles was a huge shift for Fedore. “I have a passion for my fulltime job, but the nice thing about Little Pop Truck and making popsicles is working with my hands and getting to hold the product I produce. On a computer, it's all digital work.” He adds, “The other really exciting part of it is seeing the reactions of individuals, especially kids, when they walk up to the truck; they’re really excited by it. Then to see the big smiles on their faces as they walk around the markets eating our popsicles is very satisfying.” His wife often brings their daughters, nine-week-old Mabel, 2 ½-year-old Mildred, and 4 ½-year-old Hazel, to the markets to join him. “We live about a quarter mile from downtown Warrenton in the Old Town area, so she can walk to the market from our house,” says Fedore.

f you’ve been up to Old Town Warrenton on Friday or Saturday nights in the summer, you already know the streets are closed, the restaurants put out tables, and there’s live music. Those that sit outside at Molly’s Irish Pub will also hear Wes McCarville of the Warrenton Hobby Shoppe shouting, “Drivers, are you ready? Go on the light!”, followed by the buzzing of multiple remote control vehicles as they race in the closed street and spectators cheering.

It’s one good thing that has come out of the COVID epidemic in Warrenton. In June of 2020, after the pandemic started, McCarville and his partner Lori Gibson received a phone call at the shop from the town. They were brainstorming about keeping Old Town as alive and active as was possible at the time while still remaining safe. They asked an open-ended question: “Can you do something?” McCarville and Gibson, who had only owned the shop for

a month, responded with an equally open-ended reply: “We’ll figure something out.” So, they came up with the idea of racing the remote control vehicles that they carry in the shop and having the community participate. The activity was outside, people wore masks, and social distancing was possible. On weekends, they cordoned off a section of Main Street in front of their shop, built some ramps, publicized it on social media, and welcomed people to participate and watch. It was a hit. The first night they had about 10 people attend, and it’s grown from there. Now, during the warm months, they are out there both Friday and Saturday evenings. The main purpose is to have fun, but there’s a competitive side too, for RCV enthusiasts. Friday nights are “Free Style Fridays”. It’s a BYOC (bring your own car) event, and it’s just for fun, not racing. They put out the ramps and participants come and socialize, talk about vehicles, drive them around the area, and jump (sometimes flipping over) their vehicles. “We even played RCV soccer one time, with the vehicles pushing to ball. That was a good time,” they said. Saturday nights are a little more competitive-that’s racing night. For this, McCa-
rville and Gibson estimate about 60 percent of participants are adults, although the first racing bracket of the night is always the Junior Drag Race for kids 6-13 years old, and the next ones are open to all ages. The races are a distance of 66 feet, and the average speed of the cars is about 40-50 mph. “We thought it would be fun someday to have the Warrenton Police come out with a radar to clock the cars, and the PD seems receptive to the idea, so maybe we’ll do it someday,” they said. Race winners get prizes like a $10 gift card or Hobby Shoppe jerseys. “And the community has responded with enthusiasm. We have people that come from far away, Northern Virginia and even DC and Maryland. There are many “regulars” who come every weekend, and some parent-child teams that are always here. People get so into it that families and friends come to watch and cheer. We even started live streaming races on social media so grandparents and friends from out of state can watch.” Evenings always start with a safety brief for all the drivers. McCarville emphasizes, “We need everyone to be safe, that’s our number one priority. We’re in a populated environment, so the drivers need to maintain control over their cars and keep them in the taped-off area.” Even so, there are

some crashes. “Sometimes it’s just that kind of night, but that’s definitely part of the fun.” The competition always remains friendly. “It’s a community,” Gibson explains. Everyone is very open and friendly. They help each other out, help repair each other’s cars in the event of mishap, and are very friendly to the newbies.” And the staff of the Hobby Shoppe is always supportive. Every weekend night, some combination of their staff is on site to help. Technicians Joe, Brandon, and Adam man the table outside the shop for free advice and repairs (they charge only for parts). “We’ll get you back on the road if we can,” Gibson says. As you might imagine, the variety of remote control vehicles is almost endless, as are the customizations that can be done to upgrade them. The question that’s asked most often is “How do I make it go faster? What tires do I need?” Some vehicles are specifically designed to go fast on pavement, and those are usually streamlined body types, like a corvette. Those are the usual types that race on weekends, although sometimes there are wild cards. “We had a Volkswagen Beetle race last week,” Wes says. Then there are the monster trucks which are designed to run over rocks, hills, grass, and other cars. These have bigger wheels, a wider tire base, and have a higher

clearance. And, of course, there’s everything in between, and you can also choose practically unlimited upgrades and modifications to improve performance. Since the evenings are BYOC, most bring their own vehicles. But the Hobby Shoppe also has RCVs for sale, and can get you on the road in a half hour or less. “You can get started with a $200300 vehicle and have a good time with it, but to be instantly competitive you have to be in the $400 range,” Gibson advises. The most expensive car in the shop runs about $1,000, but, she says, “That’s a little overkill for racing. It’s a ginormous car, powerful but not as fast. It will tow a full size Nissan Sentra.” As well as ready-to-go RCVs, you can also buy them in a kit to put together yourself. Some are relatively simple, but some are quite technical. They advise that you choose carefully, since some are too complex for kids to put together which can get frustrating for them even if an adult is helping. Whether you buy your RCV assembled or pre-assembled, Gibson emphasizes that they try to make sure that customers get the right vehicle for what they want to do with it. And the shop staff is always there for support. “We are open seven days a week, and we get calls all the time for advice. If we can’t help you over the phone, you can come in and we’ll help you here,” they say. “It’s just good, family fun,” says McCarville of the races. “Coming from a dude standpoint, when I hear someone tell me something is family-friendly, it usually means there will be a lot of activities for kids, but not a lot of fun for the adults and the dads just end up standing around. This is different; there’s something for everyone in Old Town on weekends: shopping, restaurants, music. The RCVs appeal to all ages. I’m a true believer in Old Town Warrenton, and this is a unique draw that contributes to the Warrenton mystique. What is Bubble Tea?
“N
o matter how old you are, you still have a princess, or a kid who likes to have fun, living in your heart,” Lucky Zhu said. As the owner of Bubble N N Bubble on 2nd Street in Old Town Warrenton, she reflects on the fun nature of the bubble tea she offers. The chilled fruit-flavored milk tea is popular among children (and adults) who are drawn to the colorful jelly-like spheres served in the bottom of the drink, which are the inspiration for the restaurant’s fun name. Not just a tea shop, Bubble N N Bubble sells a wide array of food including sweet and savory crepes, noodles, dumplings, and other Asian cuisine. Ingredients are always fresh and homemade. Fill your lunch crepe with chicken, beef, or vegetables. After lunch, choose a dessert crepe with either Nutella, strawberry, or mango. Bubble N N Bubble’s menu also includes the milk teas and slushies. Customer Jamie Brumbaugh says, “The ramen and dumplings were so good! Probably some of the best dumplings I’ve had. Super fruit tea was delicious as well.” The super fruit tea Brumbaugh enjoyed, one of Bubble N N Bubble’s most popular items, includes tea, passion fruit, raspberry, and lime. Another customer, Michelle

Clark, says, “I particularly liked the strawberry slushie because it was fresh and refreshing and it didn’t have all the added junk that a lot of other places have. It was just good old-fashioned strawberries and ice.” Bubble N N Bubble’s menu is concise and lends itself to quick, reliable service. Clark also says, “It's a very cute, clean, and comfortable small business. Everything was made fresh and quickly.” The shop is small but cozy, with a couple of tables inside and outside on the porch. The concept of Bubble N N Bubble came from Lucky’s now-adult son who has a passion for crepes and bubble tea. Opening the business was Lucky’s husband, Tony Lee’s idea. A chef for 30 years, the majority of Tony’s experience is in Asian cuisine. He makes fresh dumplings and noodles in a flash, getting food to customers efficient-

ly. The recipes he uses originate mostly from China, while some are family recipes. While Tony does the cooking, Lucky runs the rest of the business, takes orders, and oversees the tea. Her bubble tea recipes were given to her by her sister, an owner of a popular restaurant in China, and include jasmine green tea and oolong tea flavored with homemade strawberry or mango jams. All the ingredients are carefully researched. Lucky put a lot of effort into selecting the boba, which are the jelly balls, actually made of tapioca, in the bottom of bubble tea. After trying many options, she decided on one with the right texture. She says, “I have tried many other ones and the bubbles are hard. My bubbles are soft and easy to digest. I also tasted many teas before making a final selection on what to serve.” The couple currently live in Fairfax. Although this means they have to commute every day to the shop in Warrenton, Lucky thinks the drive is worth it to be in our quaint town. She and her husband discovered Warrenton one day driving back from Shenandoah and were attracted to our tight-knit community and smiling faces. She enjoys the friendly greetings she gets from her customers. Lucky feels at home in Warrenton and hopes to move here and become more a part of our community.

Lucky and her husband are both hard workers. Although starting their business has been demanding, Lucky and her husband are well suited to it given the strong work ethic they learned growing up in China. “Most Chinese people work seven days,” Lucky says. Currently, Bubble N N Bubble is open every day, meaning she and her husband work lots of hours. Lucky and Tony work sixteen hour shifts and sometimes more. She says, “Working too hard is sometimes not good. But when you first start out, sometimes you have to.” But, she says, “We just have fun every day with teas and food. kyline Hydroponics co-owner Robert Stephens wants reluctant gardeners to know “how simple it actually is to grow plants.” “A lot of people are scared of doing something wrong and I’ve never understood that because while I was learning, I punished some plants… like, let’s not feed it at

all or let’s throw seven times the amount of nutrients and see what happens,” Robert laughed, concluding, “Don’t be scared of it.” That’s the way he learned. With no formal horticulture education, Robert just gained the expertise he has now through working in his own garden and doing meticulous research to find out what works and what doesn’t.
The Beginning
A veteran, Robert was a senior estimator for some of the biggest electric companies in the nation with a top-secret security clearance before he retired. Health issues complicated his life. “I went through eight spine surgeries and two shoulder surgeries in five years,” he said, “I’ve got 56 pieces of metal holding my spine together.” The surgeries left him with chronic pain, addicted to narcotics, and struggling with the nerve medications. Robert had always been an enthusiastic gardener, but it ended up becoming part of his healing. The marijuana plants he legally grew helped him manage his pain and his passion for the process helped him kick his narcotic addiction two years ago. “Gardening is medicinal because it’s good for your mental health, so it’s an all-around good thing to do,” his wife and business partner Kristina stated. He became equally passionate about sharing his knowledge with others interested in growing plants, and Robert and Kristina opened the garden supply shop in the bottom level of the John Marshall building in Old Town Warrenton this year where they offer gardening related

products and supplies, a friendly community, and a place to learn about all types of gardens and plants. “When you know better, you grow better,” Kristina said. Whether they are making Facebook posts, answering questions in the store, or organizing an occasional growing class, Skyline Hydroponics is in the business of helping growers of all ages know better. Prior to launching the business, they did months of research looking for products they believed in and that would make them different from other shops. As if the hydroponics aspect wouldn’t differentiate them enough. But more on that in a moment. Robert checked out nearby gardening stores to survey their products and prices, talked to experts about efficient inventory, and Kristina joined relevant Facebook forums. Kristina said it was also about finding what worked for their garden at home in Amissville.
So, what is hydroponics?
Hydroponics is growing without soil, letting water do the work. “The nutrients will last longer. You get a faster effect out of it and higher growth rate. There’s a learning curve that goes along with hydroponics, but once you have the equipment then you’re not buying soil over and over,” Robert explained. “It’s just a matter of replacing pots and soil with an ebb and flow system. It’s the same process but now you’re controlling the nutrients and monitoring it more,” he summarized. “You have absolute control over what you’re growing and how it’s growing,” Kristina added. If that intimidates anyone, Robert mentioned AutoPot systems that combine soil-growing and hydroponics with a water reservoir that automatically feeds soil-filled pots and makes transitioning to hydroponics easier. Skyline Hydroponics aims to minimize the learning curve so people can comfortably move towards the system. “It’s clean growing. Virginia has great soil but you’re also going to run into pests, clay, rocky soil, and it takes a lot of time and effort to amend it,” Kristina said. Robert noted that hydroponic nutrients are more affordable and accessible. It also comes down to space, since hydroponics doesn’t require a yard. “People who want to garden can do it in the comfort of their home and don’t have to try to find somewhere to plant. They can do hydroponics or container gardens, and we have everything they need for either one of those,” Kristina said. “Growing your own food, flowers, medicine—it’s all encompassing,” Kristina said. And with hydroponics, “You can grow things much faster.”

Kristina advises people interested in gardening to “ask questions—you have to know what you don’t know.” Robert’s expertise comes from asking one question: ‘why?’ If someone in one of the forums suggested growers avoid something, Robert would research why it didn’t work. If growers use a certain nutrient, Robert would ask, “why?” and find the science behind it. Skyline Hydroponics’ posts on Facebook openly share the science behind the products they highlight. Almost every customer review describes Robert as knowledgeable and helpful. “We’re here for gardeners at all levels. I have

Robert and Kristina have bigger plans for Skyline Hydroponics, as well. “We’d like to pair up with food banks in the area and donate as much food as we can.” To do that, the couple recently completed a new rooftop garden and is in the process of expanding it. Melt butter in a small pan over low heat. Add the hazelnuts. Cook on low, stirring, until nuts are lightly browned. Remove from heat. Make the zoodles using the spiral cutter. My favorite way to use up the thousands of cherry tomatoes in the August garden. Tip: Use a food mill (not a food processor or blender) to separate the juice from the tomato pulp. You want juice, not puree. No food mill? Using a fork or spoon, press the tomatoes through a sieve held over a bowl to catch the juice. MAKES 1 QUART INGREDIENTS
8 cups cherry or other red tomatoes ½ cup water 3 Tablespoons white vinegar 5 teaspoons Old Bay seasoning ¼ teaspoon salt teaspoon pepper DIRECTIONS

Over medium heat, cook tomatoes and water together in a large (partially covered) pot till mushy – about 5 minutes. Cool. Using a food mill, separate the juice from the tomatoes to yield 4 cups of juice. Discard pulp. Return the juice to the pot. Stir in vinegar and spices. Partially cover and bring almost to a boil. Remove from heat. Cool. Refrigerate overnight to blend flavors. For serving, add ice, spirits and garnishes.
Cook's Tip: For best color and eye appeal, any juicy, red tomato or combination of red tomatoes can be used, but avoid plum type tomatoes which have little juice.

Cheesy Enchilada Hot Wraps So addictive I’ve been known to scrape the bottom of the pan for smidgeons left behind. A real crowd pleaser that uses up odds and ends from the garden. SERVES 4 INGREDIENTS
Fresh Dill Pickles This no-can recipe is so quick you’ll be out on the porch with a cool drink and a steamy novel before your homesteading pals have finished boiling their jars. Use any quart-size glass jar (even a recycled one) but not plastic. Garlic seeps through plastic. MAKES 1 QUART INGREDIENTS
cups white vinegar 1 ¾ cups water 1 ½ teaspoon salt 1 ½ teaspoon sugar 4 to 6 pickling cucumbers (about 1 pound – each approximately 5 inches long) 2 large cloves garlic 3 (3-inch) sprigs fresh dill DIRECTIONS

Over medium heat, cook the vinegar, water, salt, and sugar together till the sugar dissolves. This is your brine. Cool, cover, and refrigerate overnight. Next day, cut the cucumbers in half lengthwise. Tightly pack into a quart size glass jar along with garlic and dill. Pour brine into the jar covering the cucumbers completely. Cap. Refrigerate at least three days before eating. Store in the refrigerator for up to 3 months.
Cook’s Tip: Pickling cucumbers are short, stocky, and unwaxed with lots less water than salad cucumbers.

Mexican cheese blend or Velveeta Optional add-ins (to taste): shredded cooked chicken, cooked ground beef, cooked sausage
Enchilada Sauce MAKES 2 CUPS INGREDIENTS
¼ cup olive oil 2 Tablespoons flour 1 Tablespoon chili powder 1 teaspoon cumin ½ teaspoon garlic powder ½ teaspoon oregano teaspoon cinnamon ¼ teaspoon salt teaspoon pepper 2¼ cups vegetable or chicken broth 2 Tablespoons tomato paste 1 teaspoon apple cider vinegar DIRECTIONS
In a medium pot, whisk together olive oil, flour, and spices. Cook on low 3 minutes. Whisk in broth and tomato paste. Simmer (partially covered) 10 minutes. Remove from heat. Add vinegar.

Preheat oven to 400 degrees. Grease a 9 x 13 inch pan or coat with baking spray. Cut veggies into bite sized pieces. Over low heat, saute in olive oil until softened – about 10 minutes. Moisten tortillas under gently running tepid tap water. Portion beans, sauteed veggies, and any desired add-ins on half of each tortilla. Fold the other half of each over its filling. Place filled tortillas down the center of the prepared baking pan, overlapping them to fit. Pour the enchilada sauce over all. Cover the pan with foil. Bake until hot and bubbly – about 25 minutes. Remove foil. Top with cheese. Return to the oven (uncovered) till the cheese melts – about 10 minutes.

U.S. 17 intersection safety improvement proposals scrapped after receiving criticism from residents While the Fauquier County Board of Supervisors approved a resolution July 14 supporting several VDOT projects, several proposed long-term safety improvements at the intersection of Old Tavern, Enon Church and Winchester roads were withdrawn from the county's application after several residents expressed their opposition. The two suggested improvements included an R-Cut and a Split Intersection, either of which would improve safety and ultimately reduce crashes according to two separate studies by VDOT. However, residents were not convinced that either would be effective enough. “I just can't support spending millions of dollars on something where, frankly, two-thirds of the people are not at all convinced that it will work,” Scott District Supervisor Holder Trumbo said. Marshall District Supervisor Mary Leigh McDaniel also noted that she was willing to scrap the two projects if the county does everything it can to come up with a solution before the next round of Smart Scale applications.
Veteran Fauquier County teachers thankful for pay raises but argue it’s not enough FCPS teacher Chad Patterson said he was relieved when he heard Fauquier County Public Schools included a 13 percent average pay raise for teachers in its adopted fiscal 2023 budget. For him, a pay raise means he may be able to stop picking up part-time jobs, and he'll get to spend more time with his two children, at least for now. One teacher told FauquierNow, “I was born and raised in Fauquier. Went to elementary, middle and high school in Fauquier. I came back after graduating college to teach in Fauquier. I have 16 years of experience as a teacher … all of those years in Fauquier. I have two degrees. The sad thing is I cannot afford to live in Fauquier even though I teach here." According to Janelle Downes, Fauquier’s director of human resources, there have been 124 “teacher separations” during the 2021-2022 school year. Currently, she said, there are 51 teacher vacancies. An important factor is that teacher salaries are higher in neighboring counties, which makes it harder to keep teachers here. Superintendent Dr. David Jeck told FauquierNow that he and the School Board acknowledge the challenging situations teachers have had to face, especially over the last few years. And rewarding teachers with pay raises, he noted, is not just about compensation but also about respect.
Fauquier County residents opposed to Dominion transmission line take the fight to Warrenton Worried an above-ground transmission line could be built in Fauquier to service a proposed Amazon 33-acre data center in Warrenton, county residents are asking town council members to oppose the project. Scott District resident William Ziegler noted that he is worried the data center would negatively impact the rural character of Fauquier and people's property values. Suggestions include having Dominion build the power lines underground, or stopping the data center from being built, likely eliminating the need for them. But several council members are asking everyone to be patient while they deliberate the issue. “ ... as the process moves forward, we will be in careful deliberation very cognizant of the concerns that were brought forth,” Mayor Carter Nevill said. “But we will reach an informed decision. And that decision will be driven by our care, concern and love [for the town]. “ Unless something changes, the public hearing on the data center should be on August 16.
