WELCOME
W
elcome to the February-March issue of Business Traveller India. As we dive into the new year, we move forth with a revived sense of optimism with positive (pun intended) news coming our way. With vaccination en route, the travel industry seems hopeful for a slow but solid comeback. Having taken my first flight of the year (Mumbai-Bengaluru), it’s safe to say that the new normal almost seems like an accepted, regular way of life. And hence, traversing away from pandemic-related stories, our February-March issue brings to you the preferred destinations of Indian jet setters in this post Covid age. This includes the beautiful island nation of the Maldives, which has turned into the “weekend getaway” of India’s wanderlust community — including those who are choosing it for workations. We then shift our focus to Goa, which has continued its streak of being the discerning choice for bleisure sojourns. Both destinations still require negative RT PCR tests to ensure the safety of yourself and the locals. Along with informing you about rules, regulations and places to see, we also handpick hotels for you to stay at in these azure capitals. The worlds of F&B and wellness vacations have seen phenomenal overhauls; and our next two stories engage in the trends that have evolved in both these industries. Those hopeful for more travel this year can also read our aviation story that tells you how airports have evolved from being transit ports into experience hubs. All of the above along with reviews and the latest in aviation, hospitality and luxury makes up this vibrant and hopeful issue of ours. We hope you enjoy reading it, and I wish you safe travels in 2021!

Bandana Jain is an artist, an inventor and a passionate traveller. As an environmentally-conscious individual, she prefers working with recycled material. Jain speaks to Business Traveller India about her art, the environment and travel.
What does sustainability mean for the art world?
10
Sustainability in art inspires social consciousness. With the rise of plastics in the ocean and how harmful it is for our marine life, I got an opportunity to create a public art installation on similar lines. A giant Christmas tree was installed at the time of the festivities to evoke a sense of awakening among the people about the adverse effects of plastic. It was made out of 700 plastic bags. It is through these art forms and installations, we believe to inspire social and cultural change.
Tell us a bit about your journey of becoming a contemporary artist.
Though I studied art, I began my journey as a product designer working for the premium category. It took me years to realise that my medium and I are both meant to cater to the art segment.
Initially, it was all about spreading awareness on this unique material which I had adopted. Now, I am known for the kind of work I do. It depicts my love for recycling, upcycling and my approach towards sustainability.
What led you to choose an unconventional medium like corrugated cardboard for your work? They say, beauty lies in the eyes of beholder. Same thing happened to me when I found a small thrown away piece of corrugated sheet on the street. I immediately fell in love with the touch and feel, its earthy tone and beautiful texture. Next thing, I knew that I would like to explore my relationship with this medium.
What was the most challenging artwork project you pursued?
I did a prestigious project in association
with Terminal 2, Mumbai airport in 2019. The installation derived its inspiration from the doorway of a Buddhist shrine at Ajanta cave, a designated UNESCO heritage site. The structure was made in 16 parts adjoined in interlocked format. More than 10,000 pieces have been put together to make this giant artwork. It consists of 22 statues that depict different phases of Buddha’s life. A huge installation with layered cardboard and interlocking, to have such precision in handcrafted pieces was a huge challenge.
Which is your favourite global destination for art and culture?
There are many, but I found Venice quite intriguing, for its art and architecture. I love to attend Carnevale di Venezia and Venice Biennale that are “must go places” for an art lover.

KEY ISSUES TO WATCH IN INDIAN AVIATION IN 2021 AVIATION CONSULTANCY FIRM Centre for Asia Pacific Aviation India (CAPA
India) has released a report on “Key issues to watch in Indian Aviation in 2021”. The report covers the impact on the industry as well as predicts top trends, among others. Due to the Covid-19 outbreak, CAPA India said that the air travel demand remains “uncertain”, especially when it comes to international air traffic this year. Long haul traffic, in particular, is likely to take some time for revival. The government’s commitment to the privatisation of Air India and airports has been appreciated by CAPA India. The firm has revealed that out of all airlines, Indigo is likely to emerge significantly stronger than the competition from Covid-19, and this is largely due to its strong balance sheet. Regarding the cap on airfares, CAPA India foresees that the government may maintain price floors and caps, at least for the first half of 2021. The latest report also stated that FY2022 is expected to be another year of large losses for the entire industry, especially for the airlines. capaindia.com
VISTARA has announced daily, non-stop flights between Sharjah (UAE) and Delhi. The Indian full-service carrier will operate these flights under the air bubble agreement between the Indian and UAE government. SPICEJET has announced the launch of a daily nonstop flight connecting Delhi with Pakyong (Gangtok), Sikkim. The low-cost carrier was awarded Pakyong under UDAN II. In addition, the airline will add a second frequency on Delhi-Leh-Delhi sector. VISTARA will operate special, non-stop flights between Delhi and Frankfurt from February 18, 2021. Frankfurt is Vistara’s second destination in Europe after London, United Kingdom. SPICEJET has announced the launch of 21 new domestic and international flights. As a part of this new schedule, the low-cost carrier will connect Jharsuguda in Odisha to key metros of Mumbai and Bengaluru. Flights connecting Jharsuguda with Hyderabad and Kolkata have also been announced.

KENYA IS INVITING Indian travellers to explore unique tourism products in 2021. In terms of travel and tourism, India is one of
the key source markets for Kenya. As per the official statistics from the Ministry of Tourism and Wildlife, Kenya registered a total of 1,22,649 travellers from the Indian market in 2019. In 2020, the total number of tourist arrivals into Kenya from India was 25,251, for the period between January to October. The decline is attributed to the travel restrictions imposed by both the nations owing to the pandemic. Kenya is a premier destination for wildlife and adventure seekers. In addition to this, the country is also known for its authentic African cuisine, exotic cultures, beaches, and cityscape. As part of the health and safety protocols, passengers travelling to Kenya are required to undertake a Covid-19 test at least 72 hours prior to their departure and further produce the physical copies of the same on arrival. The yellow fever vaccine continues to be a mandate for each Indian traveller visiting Kenya across all age groups. Therefore, travellers would need to have a valid vaccine card upon their arrival into Kenya. magicalkenya.com

Chances are that if you’re flying into the Emirati capital, you’ve chosen to fly on Etihad Airways, the national carrier of the UAE. Known for its characteristic luxury, Etihad Airways has extended its classic service to its lounges at the Abu Dhabi airport. A choice of five stateof-the-art lounges awaits here; with Etihad Premium Lounge at Terminal 1; and Etihad First Class Lounge & Spa (pictured), Etihad Premium Lounge, Etihad US Premium Lounge and Etihad Arrivals Lounge at Terminal 3. Guests flying The Residence on Etihad have access to Etihad First Class Lounge & Spa — which can most definitely be compared to a sophisticated five-star hotel. A range of deluxe spa services at the in-house Six Senses Spa, a signature four-course meal and a fitness room to burn off the calories later are some of the facilities at this lounge. abudhabiairport.ae; etihad.com

ART & DESIGN AT HAMAD INTERNATIONAL AIRPORT The home of Qatar Airways, Hamad International Airport is known for its operational excellence and transit services. However, many aren’t aware of its eminence in terms of design. A stopover at Doha airport for the art and architecture connoisseur is nothing less than a trip to a museum. The exterior design of the Emiri Terminal resembles the curvature of sails and sailboats — elements that are native to Qatar. The airport itself features a curved external design that’s evocative of ocean waves and sand dunes. One of the main features of the airport the canary-yellow “lamp bear” (pictured) iconically sits inside a lamp, reminding travellers of happy childhood memories of their bygone trips. This symbolic bronze piece of art is created by Swiss artist Urs Fischer. The airport has installed unconventional artworks around the space in partnership with Qatari museums including the series of oryx sculptures by Tom Claassen (pictured). dohahamadairport.com business traveller india

CULINARY INDULGENCE AT DUBAI INTERNATIONAL AIRPORT
There’s no doubt about Dubai’s expertise in terms of F&B and the emirate extends this to its airport as well. Apart from its appealing duty-free, the airport’s restaurants and bars spoil you for choice during your stopover. The array of options ranges from well-known chains like Costa Coffee, Baskin Robbins, Shake Shack (pictured), HäagenDazs to international bistros like Le Pain Quotidien and Paul Bakery & Restaurant. There’s no dearth of speciality cuisine restaurants here too; whether you’re in the mood for Indian, Mediterranean, Chinese or some good old steaks — Dubai airport houses it all. For authentic east Indian cuisine, head to Bombay Chowpati located in T2 - Main Terminal; for pan Asian delicacies spanning Japanese, Thai and Indonesian flavours, head to Cho Gao located at Gate A - Departures. Jack’s Bar & Grill located here as well captures the true spirit of Southern United States of America with its tantalising steak offerings. dubaiairports.ae F EBRUAR Y-MAR CH 202 1

NEC: SIGNALLING THE FUTURE OF AIR TRAVEL
It’s safe to say that the entire spectrum of the quintessential airport transit has taken a 180-degree turn following the pandemic. THE HIGH-CLASS INDIAN GETAWAY
34
Snorkelling in cerulean waters to catch glimpses of vivid fish; soaking in the hues of the sunset from your private pool villa; dining on elusive islands as the chef brings you freshly prepared catch — there’s nothing like workation or vacation like this. And turns out, Indians have pursued all this and more in the Maldives, surprisingly when international borders closed and a pandemic was declared in the world. Open up your Instagram feed and you’ll find a number of folks in Maldives ever so frequently. The nation of islands in the Indian Ocean seamlessly became a preferred destination among the jet setters of the Indian upper class. The Indian High Commission in the Maldives released data to validate this — the top source market for Maldivian tourism in 2020 was India, with 62,905 arrivals — accounting for 11.3 per cent of the total share. The country recorded a sum of 5,55,399 arrivals in 2020 (lower than the 1.7 million in 2019, but much higher than the targeted 5,00,000
for the year). For 2021, the tourism authorities are targeting 1.5 million arrivals. Maldives opened for tourism when the world was battling one of the worst pandemics of history, on July 15, 2020, with free visa-on-arrival and no mandatory quarantine or testing on arrival of foreign guests. It was an unquestionable choice for a lot of folks who needed escape from the mundanity of the lockdown India was under. However, “travellers were and are still required to submit an online health declaration form within 24 hours prior to departure, along with a negative Covid-19 RT PCR test that must be conducted 96 hours prior the scheduled time of departure from the first port of embarkation en route to the Maldives,” cites the website of Maldives Marketing and Public Relation Corporation (MMPRC), the national tourism office of the Maldives. Travellers arriving into the nation are granted a 30-day free visa on arrival and are also scanned for symptoms along with a thermal evaluation.

SEAMLESS CONNECTIVITY
36
Growing connectivity can be attributed to this rise in Indian travel to the Maldives. Five Indian cities — Mumbai, New Delhi, Bengaluru, Kolkata and Kochi — have flights to the country’s capital city of Malé — with airlines such as Indigo, Spicejet and Air India offering direct connectivity from some of the metros, under the air travel bubble established between the two countries. Only recently, Spicejet and Indigo announced the advent of direct flights between Mumbai-Malé and Kochi-Malé, respectively. The two nation’s governments — Indian and Maldivian — also share friendly bilateral relations; and Indian airlines have been encouraged by the ministry of civil aviation of India to add frequent services to the Maldives-capital. In recent news, India has provided financial assistance of $250 million to the Maldives to help it mitigate the economic impact of the pandemic. Along with ease of connections, the wide array of hotel choices from budget, mid-level to premium luxury, has appealed to Indians from different sections of the society. Travel agents have also begun customising all-inclusive and refundable packages which are quite tempting for those looking for a relatively affordable Maldivian experience (yes, this is possible).
AZURE ISLAND NATION
The Republic of Maldives, a small archipelagic state in south Asia, is situated in the Arabian Sea, in the Indian Ocean. Lying southwest of Sri Lanka and India, Maldives consists of 1,192 coral islands grouped in a double chain of 26 atolls (coral reefs). Tourism is the largest economic industry of the island nation, playing an important role in bringing in foreign exchange and employing more than 2,500 in the travel business. Maldives’ tourism industry started modestly back in 1972 with only three hotels at that time. Currently, there are about 100 F EBRUAR Y-MAR CH 202 1
operational resorts; with each resort occupying a whole island. This, in my opinion, is one of the USPs of visiting Maldives — having an entire island resort at your disposal to explore and indulge in. Known for its pristine white beaches with azure waters, Maldives is a haven for nature and water aficionados. Travellers engage in a number of activities around the resorts and natural coral reefs including swimming, fishing, scuba diving, water-skiing, windsurfing and kite boarding. For recreational divers, Maldives is almost paradisal with its clean water and exceptional underwater landscape.

LUXURY LIVING
For the luxury seeker, Maldives is a natural choice with its array of luxe resorts spread across its length and breadth. While some of the resorts are accessible by boat via Malé, others can be reached via a sea plane route from Malé airport. Even in the ongoing scenario of the pandemic, a number of new resorts have sprung up in the country. This includes THE OZEN COLLECTION - OZEN RESERVE BOLIFUSHI that opened in December 2020. This is the second resort by THE OZEN COLLECTION and has been “completely redesigned to enrich guest experiences with a refined aesthetic of timeless luxury, subtle opulence, and Maldivian charm.” Located in South Malé Atoll, Bolifushi Island is just a 20-minute luxury catamaran ride from Velana International Airport. While it’s extremely difficult to handpick hotels for the ultimate Maldivian experience, here are some of my recommendations. Maldives Border Miles
A destination so popular it has its own loyalty programme — that’s Maldives for you. A tourism loyalty programme called Maldives Border Miles now ensures that you earn a little bit every time you visit the island nation. Initiated by Maldives Immigration, together with joint stakeholders; Ministry of Tourism, Maldives Marketing and Public Relations Corporation (MMPRC) and Maldives Airports Company Limited (MACL), the programme was launched in December 2020. Each of the three tiers — Aida (bronze), Anantara (silver) and Abaarana (gold) — are defined by a variety of rewards, services or benefits that increase in value as members progress. Enrol as a member of Maldives Border Miles before your travel to the Maldives on imuga.immigration.gov.mv/mbm. Points will be rewarded if you stay in a registered tourist facility and if you stay at least three nights in the country.

ften referred to as the “Pearl of the Orient” in India, Goa was among the first states to reopen its borders for tourism when India started inching towards the revival phase last year. Tourism is key to the state’s economy as 40 per cent of the population is directly or indirectly dependent on it. Therefore, proactive measures are being frequently rolled out by Goa’s government to speed up the journey towards full recovery. A case in point is the launch of “Coping with Covid-19: Survival and Revival of Goa’s Tourism Industry” report that has been developed with the objective of not only reviving the tourism industry, but also strengthening the sector by eliminating pre-Covid issues in the beach-state. The report estimated that the loss to the industry was expected to be `2,000 crore to `7,200 crore and potential job losses of 35 per cent to 58 per cent. “These statistics have helped significantly to plan ahead in our conscious effort towards mitigating the challenges posed by Covid-19 and further transforming Goa as the ‘Sustainable Tourism Capital of India’”, Goa’s tourism board said in an official release. Besides, Goa Tourism Policy 2020 also outlines well-thought strategies and objectives that aim to make Goa the “most preferred destination around the year for high-spending tourists by 2024” and “a world-class international tourism destination by 2030”. The policy covers valuable insights for the development of coastal tourism, culture and heritage, nature-based tourism, leisure and entertainment and MICE among others. On the safety front, the state has created a safe retreat for visitors by way of the SMS form of travel — Sanitisation, Masks, and Social Distancing. The state received World Travel and Tourism Council (WTTC) Global Safe Travels Stamp, further strengthening its position as one of the top travel destinations in India even in the postCovid scenario. says, “While 2020 was a difficult year for travel where travel dynamics evolved, it is heartening to witness optimism amongst Indians who have demonstrated their travel enthusiasm by booking and searching for domestic destinations and accommodations on our platform. Goa continues to be one of the top searched destinations by Indians travelling domestically and even more so during Christmas and New Year and we see this trend continue in the coming months as well.” Further elaborating on Goa’s tourism demand, Sachit Wadhwa, co-founder, Book My Charters says, “Goa remains to be a top tourist destination in the country and we are witnessing a strong demand for private charters from Delhi, Mumbai and Bengaluru to Goa.”
GOING AROUND
Goa, as we know it, has no dearth of scenic viewpoints and tranquil routes. And to soak in these exhilarating sights, all that one needs to do is hire a bike/car, hop on a cycle or get into one of the flat-bottomed ferry boats for the ultimate Susegad way of travelling. To further facilitate smooth commute across the tropical paradise, the state tourism board has launched GoaMiles, an app-based taxi platform. Services include city rides, booking tours, and airport transfers. Pay securely online and load balance in your GoaMiles account for cashless travel. For a “greener” mode of transport, visitors can opt for B:Live that boasts being India’s first electric bike tour. Take a breezy bike ride across the region and immerse yourself in the local culture, history and heritage of Goa. During the B:Live experience you get to enjoy authentic food, music, and art without leaving behind carbon footprints. The tours are led by Captains who offer valuable insights to travellers about the place and its people.
REVAMPED DINING
Hotels and restaurants are making alterations across their F&B venues to offer a more carefree dining experience to guests who want to know what is being served to them, and how it is being served. Sohrab J Parakh, director of marketing, W Goa says, “Guests across the board are business traveller india
becoming increasingly conscious of the food they consume. Chefs at hotels and restaurants have the added responsibility of being able to provide detailed information on the journey of each food item.” He further adds, “Our all-new beverage ambassador is working on a unique hot beverage infusion using immunity boosters such as turmeric, cinnamon, and ginger. Guests can look forward to some delicious beverage concoctions to be paired with our succulent desserts.” At ITC Grand Goa Resort & Spa as well, the F&B and beverage offerings are being re-engineered to suit the ‘new normal’. Their “Grab & Go” breakfast service offers contactless breakfast experience in the room where the food is delivered to guests with no physical contact with the server. They also have the “Knock n Drop” time saver dining experience, delivered to guest in the privacy of their room, minus any contact with service associates. 47
RESTAURANT HOPPING From local fare to fine dining and its exquisite beachside hospitality, Goa’s dining scene makes the place all the more special. Indulge in some authentic seafood at Calamari in Candolim. Prawn curry, recheado masala, crispy onion rings and calamari seafood platter are a few must-haves. With its strong hospitality-oriented lineage, impressive culinary scene and unique heritage, the beach capital of India sets the right tone for a sophisticated yet extravagant gathering. Adding to this is the great connectivity to the major metros of the country. Elaborating on Goa as a MICE venue, Ranju Singh, complex general manager, Novotel Goa Resort & Spa and Novotel Goa Candolim says, “Goa remains the favourite leisure and MICE destination due to the easing of travel restrictions. We are hopeful that this will make way for the corporates and wedding segments to return back to Goa since, the appetite to go international is limited. Goa, a stressfree destination, is equipped with large banqueting infrastructure and also well connected with all major cities.” In order to further cement Goa’s position in the international MICE arena, the state government has chalked out a few plans and strategies in the new tourism policy. This includes development of international convention centres along with marketing and promoting Goa as preferred destination for MICE and weddings in collaboration with industry members. Mass events would be promoted, primarily during the lean tourist season. Additionally, new events that can become popular Goan attractions over time will be identified and promoted.
EXPERIENCES TO CHERISH From water sports to heritage walks, Goa provides you with great indulgences. One of the popular water sports windsurfing is catching up in the state, and the best place to try out this activity is at Dona Paula. If you are looking to enjoy the beauty of the state from the sky, the Department of Tourism (GTDC), Government of Goa has tied up with Tiger Balloon Safaris to provide a one-hour hot air balloon ride. Here you can fly past through the state’s beautiful fields, beaches, and hills from a peak elevation of 2,000 feet. A balloon can accommodate up to ten people per ride. ven amidst the pandemic, the one industry that was frequently innovating and reinventing itself, was the F&B sector. From new ways of serving and dining to cuisine transformations and chef collaborations, the culinary industry was on its toes, devising new ways to sustain and expand.
Restaurateurs say that there has been an increase in the number of plant-based dishes served
PLANT-BASED MEALS
54
Now, the F&B industry has been experimenting with plant-based products, a concept which has become more mainstream recently. Nicholas Dumbell, general manager, The St. Regis Mumbai says, “We have observed that non-vegetarians are opting for healthier lifestyles and choosing vegetarian options. Plant-based food, faux food or vegetarian substitutes with meaty textures such as jackfruit has seen a rise as well. When it comes to beverages, a lot of guests are enjoying immunity boosting drinks or hot beverages with healing herbs.” A similar trend has been observed at The Leela Palace New Delhi. Rishi Mehra, director, food and beverage tells us that nowadays, immunity-boosting dishes/ beverages have gained attention; it is something that everyone is connecting with and looking for. Back in the restaurant industry, restaurateurs say that there has been an increase in the number of plant-based dishes served to customers. A case in point is Pebble Street Hospitality. Keenan Tham, their director says, “I was pleasantly surprised to know that at some of our outlets, 60 per cent of dishes sold are plant-based. This has inspired my chef team to create more dishes in this space. High protein items such as red bean sesame dumpling and spicy pine nut tofu seem to be gaining popularity amongst our clientele.” Keeping this in mind, the brand is also launching a health- focused menu in mid-2021. Expect healthy options infused with Chinese herbs such as ginseng! Companies such as Impossible Foods might soon be providing their products in India and restaurateurs like Tham plan to create some dishes with these plant-based meat substitutes in the future. Many new distinct retail products are being introduced to the plant-based, vegan, environmentally friendly markets of India. Sameer Uttamsingh, founder, Acme Hospitality and co-founder Bun & Only says that a number of restaurants and delivery kitchens too are stepping up and introducing plant-based dishes on their menu. Last year, the brand launched Atom Box, which includes plant-based dishes such as zucchini pad Thai, Thai curry laksa and vegan toona poke bowl (made with dehydrated watermelon in place of tuna and the mayo is made with soy milk).
There has been a rise in dessert bars and dessert-only restaurants
SWEET CRAVINGS
There has been a rise in dessert bars and dessert-only restaurants. Due to the popularity of shows like Masterchef and Chef ’s Table, there has been an increase in knowledge and intrigue in people about the art of plated desserts. This has brought about a number of pastry chefs creating their own style of presentation. A few examples are, Koi in Australia, Marble Dessert Bar, Jungsik, Chickalicious in NYC, Tickets in Barcelona, room4dessert in Bali, and now Moner in Mumbai, India. Speaking about the newly launched Moner, which is said to be India’s first and only dessert bar and bistro, founder and Chef Freny Fernandes said, “After visiting a couple of dessert bars in NYC, I was mesmerised by the amount of attention to detail in the plated desserts as well as the magic of creating art on a plate. My visit to Noma inspired me to open a dessert bar with an intimate atmosphere, where I could interact with my guests, explain my creations and my inspiration behind them.” Entremets - multi-layered glazed cakes is another trend in the pastry world, said Chef Freny. “You will often see chefs slicing through these glazed cakes and revealing all the layers inside on Instagram. Entremets are cakes that have multiple layers and textures mainly comprising of some kind of mousse and inserts, finished with mirror glaze.” Moner has introduced these entremets on the menu, as well as for special orders, like the chocolate passion which comprises layers of 60 per cent chocolate mousse, cocoa nib praline, salted caramel, chocolate cake and cocoa glaze. SMALL IS BIG
Indian and Asian portion sizes are generally designed to cater to two or three people at one time. However, the menu/portions, be it Indian, Asian, or continental cuisines are now being customised as per guests’ needs. “A single traveller generally wants to try more variety of dishes while dining, this is when we pre-plate Indian or Asian in small quantities,” adds Mehra of The Leela Palace New Delhi. Upping this trend, The St. Regis Mumbai has a “Dine at your Desk” option now. These are curated meals helping those going in to work with packed lunches and meals for their comfort avoiding the whole scenario with the cafeteria or preparing and bringing your own meal. Dumbell says, “We are trying to see how we can make sure that everyone has the same food in front of them when there is an online meeting, much like having a meeting over lunch while at work.”

WHAT’S TRENDING?
Food on the wheels: With buffet being minimum, à la carte or buffet on the table has become part of the new normal. But what’s new is the concept of food on the wheels. A case in point is “Brunch on Wheels” at The Leela Palace New Delhi. It is a concept where they have moving trolleys of the cocktail bar, salads, desserts that are wheeled around the restaurant and reach the guests at their table itself. Restaurants, points out that the pandemic has given a chance to people to learn to cook or cook a lot more often than they did before! Local and familiar flavours and regional cuisines are what restaurants are now trying to focus on, while there is some amount of experimentation, it is also about presenting familiar flavours and ingredients in a more elevated restaurant-style format. Elaborating on this, industry expert Tham says, “The trend I feel is picking up is regional cuisine from different parts of India which is now being made more available pan India. A slightly modernised version in a nice slick ambiance is on offer at some new restaurants.” Middle eastern cuisine is a winner: The demand for eastern Mediterranean and Levant cuisine seems to be catching up, as indicated by Hyatt Regency Delhi. “Many people are now familiar with middle east food from their travels to the UAE - this was the perfect combination for SYRAH (the new restaurant at Hyatt Regency Delhi) with a mix of indoor and alfresco seating and very unique cuisine,” adds Julian Ayers, general manager, Hyatt Regency Delhi. Similarly, at The St. Regis Mumbai, guests have also shown an interest in Greek and Lebanese food. From kitchen to table: Nick Harrison, co-founder, Slink & Bardot and Soufflé S’il Vous Plaît in Mumbai says, “All dinner plates come out of the kitchen covered by a retro stainless-steel cloche. We decided to introduce this as a hygiene measure,

however in doing so, we discovered that covering dishes naturally shields garnishes and leaves from wind and helps keep them in place. Furthermore, it adds a healthy degree of anticipation flare for the diner as he/she awaits their plate to be uncovered.” Breaking the pattern: When it comes to fine dining, the fixed structure of a starter, a main course, and a dessert is not the set norm anymore. At Ziya, The Oberoi, Mumbai, Twice Michelin starred Chef Vineet Bhatia launched a shared plates menu — Earth, Land and Sea, where guests had the freedom to dine the way they like. The menu was broken down into an easy and understandable set up, where guests could actually control or dictate how they want to eat. Digital acceleration: To ensure the safety and wellbeing of customers, brands have limited human interaction with them and are promoting QR codes for orders and payments. Some are separating groups with barriers at the table as well. Let’s keep an eye on what’s next! business traveller india

The secret of delivery lies in the way the food is packaged, delivered, and presented to the guests
AT-HOME DINING VS OUTDOOR CULINARY SOJOURNS
Both home delivery and dining-out can offer great experiences, says Ayers, but they are very different and have to fit your mood. They are not in competition with each other. He says, “Some days you want to curl on the sofa, and enjoy a movie with a homedelivered pizza or you have a few friends around, and you order in Chinese banquet so not to spend your whole evening in the kitchen - and now with so many super apps delivery is easy!” Since lockdown, dining at home has become a popular trend. Everyone in the hospitality industry came up with innovative concepts in the segment of food deliveries which are different from regular packing and ordering. Mehra says, “The trend of DIY food kits were also explored wherein raw or semi-cooked ingredients are prepared, packed and the guest finishes the dish at home. Now, nearly after four months of opening up, we do see a lot of guests coming back to the restaurants but a good CLOCKWISE FROM TOP LEFT: Pizza served at Hyatt Regency Delhi; The St. Regis Mumbai offers enhanced home delivery service and dining at Soufflé S’il Vous Plaît business traveller india
number still prefer ordering/ preparing food at home.” When it comes to offering its patrons an enhanced dining experience in the comfort of their homes, hotels like The St. Regis Mumbai make sure that everyone from their culinary team to the hosts who deliver the food to the guests are safe and stay at the hotel itself. Dumbell says, “I do think the secret of delivering an enhanced experience lies in the way the food is packaged, delivered and presented to the guests. Presentation is everything, and when the food reaches their house spill-free and piping hot, you’ve won a happy customer.” Some restaurateurs believe that dining at home is a great idea, but after a point, the experience does get boring and monotonous. Expressing his view, Chef Gresham says, “This is why restaurants exist; it’s more like a community space where you share a table with friends and family and enjoy a meal cooked and served by someone else making it a hassle-free dining experience. I believe restaurants are a vital part of the community and food should be shared. Also, in today’s time and age, restaurant experiences have become so personal, with the use of highquality produce and creating an experience that may not be easy to create at home.” BTI F EBRUAR Y-MAR CH 202 1

he year 2021 is all about restoring and reviving the wellness routines that were derailed last year. With the world limping back to normalcy, we are experiencing a major changeover in the way people are approaching their physical, emotional, and spiritual wellbeing. As Neha Bose, director of rooms, Four Seasons Hotel Bengaluru rightly puts it “Wellness is not a new concept, but the approach has changed post-Covid.” There is a strong inclination towards guilt-free self-care that is leading the introduction of several new products and experiences in the wellness industry. Bose says, “The last year has really made us turn inward and focus on our health. A holistic, mind-body-soul approach is on the rise. Instead of working out to the point of exhaustion, there is a sense of wellbeing that is being embraced. Mindfulness has become more than a watchword. Redemptive time in nature, eating clean, getting quality sleep and breath-work are some key pivots.”
In addition, wellness focused-travel is also gaining momentum.
WELLNESS TOURISM
Last year, when the unlock phase began, I remember taking my first trip, almost after eight months, to a tranquil wellness resort in Maharashtra, as I was seeking a place where I could regain my stability, maintain my equanimity, and explore a new sense of living — something that is a priority for many individuals now. Wellness tourism is on a rise across the globe with long vacations, nature-centric excursions, fitness holidays, sustainable and eco-tourism, and digital detox widening the scope and range of this form of travel. Speaking about wellness travel in India, Sabina Chopra, co-founder and chief operating officer, Corporate Travel and Head Industry Relations, Yatra.com says, “In 2021, with various trends picking up in demand, travellers from across the country are planning wellness retreats at exotic locations to break free from the monotony and hustle of city life. Due to this increase in queries, our hospitality partners are curating

Popular wellness retreats in India include Mercure Goa Devaaya Retreat, Svatma, The Malabar House and Purity.
MENTAL WELLBEING
A holistic wellness approach ensures an ideal balance between physical and mental wellbeing. However, many times, people tend to ignore their mental health concerns. Fitness celebrity coach, Shivoham says, “Mental fitness is as important as physical fitness because our mind and body are one. What goes on in our mind affects every cell of our body. Every lifestyle disease is connected with excess stress. Hence, it is absolutely vital that just like we set a daily routine for physical fitness routine, we need to dedicate at least 20-30 minutes every day for our mental fitness which can be a combination of meditations, pranayama, and positive affirmations.” Furthermore, Vinaya Jadhav, spa manager, Spa by JW, JW Marriott Mumbai Sahar elaborates on the importance of a good diet and workout to build better mental health. “Diet plays an important role in your mental TOP AND RIGHT: Spa ingredients and a counselling session F EBRUAR Y-MAR CH 202 1

wellbeing as what you eat, helps to make your mind stronger and sharper. Exercise is another important method for better mental health. Performing a few breathing exercises at the beginning of your day will make you stay focused and energetic throughout the day. A cultivation of positive thoughts helps to impact mental wellbeing and embrace a healthy lifestyle.” We as individuals as well as society should promote good mental health as it ensures clarity in thoughts, reduces anxiety and risk of depression, increases productivity, provides a greater sense of calm and inner peace, and improves self- esteem.

A plethora of new spa and wellness services are being introduced to accommodate the transitions occurring in the health sector. Hospitality chains and wellness retreats are moulding their offerings in a way that they involve limited physical touch, but assure a well-crafted service amidst a safe environment. Commenting on the transition, Jadhav says, “There is no doubt that the wellness and spa industry has and will experience an immense transformation as a result of the pandemic. While masks and gloves have become an integral part of the uniform, the post-Covid spa industry won’t just be about being clean, but being seen as clean. We have taken care of aligning the cleanliness protocols with our hotel’s procedures. The safety measures are communicated to the guests to instil a sense of safety in them. business traveller india

Marriott International’s Commitment To Clean initiative takes our existing practices a notch higher.” Accor’s Mercure Goa Devaaya Retreat focuses more on implementing and practicing Ayurveda, naturopathy, and yogic practice through adding therapies which require minimum touch. Talking about the social distancing aspect, Sanjay Pagi, general manager, Mercure Goa Devaaya Retreat says, “To make it as simple as possible for guests and staff to follow this new rule, we ensure a one-way flow. We have prepared a system to monitor the entrance and exit within the spa. Appointment timings are planned accordingly, on which the allotted therapist escorts and guides the guests further.” Therapies offered at the retreat include pranayama breathing techniques to strengthen the connection between body and mind; shirodhara relaxation therapy which helps in calming the body

TECH SUPPORT
Wearable technology is gaining popularity. As per the American College of Sports Medicine’s (ACSM) “Worldwide Survey of Fitness Trends for 2021”, wearable tech ranks second on the list of top 20 worldwide fitness trends for the year. People are investing in fitness trackers and gadgets manufactured by brands like Fitbit, Samsung, and Apple to keep a tab on their daily lifestyle and track heart rate, body temperature, calories and sleep time among others. The report states how initially, there were some questions raised about the accuracy of wearable technology, but the business traveller india

issues seemed to be resolved well enough as it has been estimated to be about a US$100 billion industry. In this era of social distancing, technology is also playing a key role in the overall functioning of hospitality brands that wish to offer an elevated wellness experience to their patrons. A case in point is Four Seasons Hotel Bengaluru, where guests get to control their engagement with employees — by limiting face-to-face interactions, while indulging in signature service, through Four Seasons App and Four Seasons Chat. “Spa appointments can be easily made via Four Seasons Chat as there is real human interaction and not a bot answering queries. spa questionnaire and spa waiver remotely, prior to appointment with the help of chat. Touch-less treatment menu is available by QR code. Payment is encouraged through payment link, or by touch-less methods. An iPad is available to scroll through treatment options,” explains Bose.
EATING CLEAN
Today, people are interested in food more than they have ever been. The pandemic has induced a significant behavioural change in terms of diet with people focusing more on healthy, mindful, and clean eating. Thankfully, restrictive diets and quick weight loss programmes are expected to fall out of favour, this year. Instead, the focus will be more on consuming immunity boosting
ingredients, growing one’s own produce, supporting local labels and up-cycling food. An increased awareness about foods with the highest and lowest environmental impacts is also a key component in an individual’s journey towards sustainable living. Expressing views on mindful and sustainable eating in this ongoing scenario, K. Sridhar, general manager, Svatma says, “Wellness through the eyes of ancient Indians, Greeks, Chinese, and Egyptians was a daily ritual that contributed to the purification of minds and bodies. The ritual of healthy eating is central to this and we aim to invoke changes in the diets of our clients that are sustainable far beyond their PICTURED: Healthy eating

ear 2021, a new page has opened in the book of time for us to write our success stories. 2020 was an extremely difficult and challenging year for our industry and for many of us also on the personal front. We were shaken up, stirred and taken completely unaware. We learnt the essence of our mere existence, what mattered most and took vows to rescript our future making it more meaningful. If there is one important lesson we have learnt from the wisdom left behind by 2020, it would be to cultivate an immense sense of gratitude for everything in life. Gratitude to our families for their continuous support throughout the pandemic. They deserve special recognition being the silent backers of our successes. Our industry is barely recognisable from only nine months ago and we’ve made it through 2020. But not without a lot of mental scars, pain, frustration, and in some cases pure exhaustion. The human toll is tragic. Losing colleagues and friends not merely by attrition but by the pandemic and having to accept a new economic reality on sustaining our livelihoods. But we have also learnt to embrace a more positive mindset, spending more time with family at home, re-establishing relationships, finding joy in focusing inward reflecting upon ourselves – taking a breath, taking stock and appreciating the simpler things in life. ovid-19 has greatly hampered travel, resulting in the shutting down of most airport lounges. However, with travel resuming gradually, many lounges have started to reopen and are restructuring their operations. Many travellers who were regular at these lounges whether for business or for personal travels, saw these as their shelter while waiting for their flights. One can easily enjoy exclusive, warm spaces with delicacies and other services, whether through their air ticket, card’s loyalty programme, or otherwise through the pay-in-lounges. Airport lounges have always offered an elevated travel experience where travellers get to unwind in comfortable and luxurious spaces during their transit or before/after their trips, and also get access to free wifi, complimentary food and beverages and much more. Around 60-70 per cent footfall has returned now. Travellers are keen to travel, although their expectations from the lounge operators are very minimalistic such as having high standards of safety and hygiene. As a matter of fact, the majority of the travellers feel safer than ever before at the lounges as here the norms of social distancing, safety and hygiene are followed extensively. Another trend that’s on the rise is the concept of staycation weddings versus a destination wedding or a non-residential one where the wedding parties can look forward to cocooning themselves in a safe haven within the comforts of the hotel. As for corporate events, conventions, expos, and MICE events, getting back to normalcy will take some time. However, in the interim, one can expect more sophisticated virtual participation options driven by technology. Through the course of 2020, Covid-19 has led to an en masse shift towards the use of digital solutions and it is likely that events in this post-pandemic world will adopt a hybrid model, with organisers bringing in speakers and attendees both in-person and virtually. Event organisers will no doubt identify potential in these hybrid event formats to elevate the production value of virtual events. After all, we are highly social beings and the serendipity of face-to-face meetings and interactions is something that virtual platforms cannot do complete justice to. If anything, this new normal has taught the importance of fostering connections. The key is to find the right balance that serves towards satisfying our fundamental need for human connections whilst making upgrades to accommodate this new reality we find ourselves in. increaseD focus on tier ii markets As
the international markets will only gradually open up, the major weight of the recovery in 2021 will rest on domestic traffic within the country. Airlines are placing a higher emphasis on connecting regional destinations, depending on traffic demand and possibility of creating domestic connections and traffic flow, catering to train travellers who can be persuaded to shift to air travel. Air travel recovery will be driven primarily by VFR (visual flight rules) traffic, followed by leisure travel, owing to pent-up demand. These segments of traffic typically require connections between tier II/III markets with metros, or tourist destinations, vis-à-vis business travel which is primarily between metro cities. This pandemic has also given people a great chance to explore their own country, with a sudden boom in “staycation” and “workation” travel trends. India, with demographics that support high consumption trends, has the potential to recover on the back of domestic demand. Even a fraction of the 1.6 billion train travellers shifting to air travel can significantly drive the recovery for the sector in 2021. In conclusion, the aviation industry will continue to evolve this year, with the implementation of technology, expansion of domestic networks, and introduction of innovative products and services, as it recovers from the after-effects of the pandemic. As Maxwell Maltz famously said, “Close scrutiny will show that most ‘crisis situations’ are opportunities to either advance or stay where you are”. So, the pandemic has proved to be an opportunity to accelerate future-readiness for the Indian aviation industry. BTI f ebruar y-mar ch 202 1

h 2020! As if the jokes, memes, serious pieces, fleeting opinions and drawing room conversations weren’t enough. So, I’ll try to share my observation on what 2020 meant for many and what we may learn from it. Why you ask? Well, I’m a life coach and thinking about actionable learnings and using them as strategies to grow is basically what I do for a living. But even if I was still practicing law, as I did before I wore my coaching hat, the year 2020 would have still made me pause and take stock of the myriad of lessons it has bestowed upon us. The worst fears of modern-day humans are centred around uncertainty and instability. And the virus brought both in massive amounts. So now, on one hand we had a situation where people were unsure of the hows, whens and whats of not only their careers but also their industries; whereas on the other hand, the industries’ top priority became survival (much like the virus itself ). Then there’s also the catch-22 that for the industries to survive, the people constituting them had to brave the storm and sail through, despite having to see fellow sailors been thrown overboard on account of unprecedented times. B A C K G R O U N D ITC Maratha is a five-star business hotel in Mumbai combining the grandeur of the Victorian era and the roots of the Maratha dynasty. W H A T ’ S I T L I K E ? As I drove closer, I could see the domed roof, the main identity of the hotel, which is inspired by Chhatrapati Shivaji Maharaj Terminus. The hotel champions Indian and British history and pays tribute to the great Marathas. I noticed several Maharashtrian elements in the lobby including Shivaji Maharaj’s portrait. Another striking feature is the glass sheet etched with the “Tree of Life” motif and a poem in the ancient Modi script. My check-in was relatively quick and easy, with friendly staff (clad in neat Paithani sarees). I was asked to fill an online health and travel declaration form that was sent to me via email. I could see the sense of revenge tourism as the hotel was packed with guests. ITC also has adopted a series of safety and hygiene measures including, temperature check, social distancing and mandatory face masks, to curb the risk of the virus spread. W H E R E I S I T ? The décor had a purple and golden colour theme throughout and the room came with a king-size bed, a small sofa, a smart work desk, a tea and coffee table, an in-room refrigerator, a flatscreen, international plugs by the bed, and a small box (for a good night sleep) featuring products such as pillow mist, eye masks, earplugs, and stress relief mist by Forest Essentials. The bathroom was modern and functional and was done in golden hues and featured luxurious Essenza Di Wills toiletries. The room resonated with the brand’s ideology of “Responsible Luxury” extensively.
F O O D A N D D R I N K I was eager to experience the F&B, as the hotel boasts some of the best rated restaurants in the country. A meal at Peshawri, a northeastern frontier restaurant, was one of the highlights of my stay. I enjoyed the homely ambiance here. My lunch started off at one of the low seating tables with the main course. I tried the home dish – dal bukhara, a blend of black lentil, tomatoes, ginger, and garlic. I was told that

it has been slow-cooked on a charcoal fire for 24 hours, and trust me, each spoon of the dal gave that rich and heavenly creamy taste. It was giving the smoked flavour, and was served alongside pudhina paratha and tandoori naan (bread). Slider dish tandoori aloo was simply great. My dinner experience at Dum Pukht was royal. This restaurant specialises in Awadhi cuisine. I indulged in à la carte menu and opted for shorba timater, a comforting tomato soup with cumin and green coriander. The crackling wheat crips added that extra flavour to the dish. For mains, I ordered aloo bukhara, mande (paper-thin whole wheat bread), and dum pukht biryani served with raita (curd dish). The fragrance from the biryani was magical, and every morsel burst with flavours. My meal ended with “meetha” (dessert) – mouth watery malai kulfi.
