AIR MILES Business Traveller India talks to Vedant Malik and Chef Lakhan Jethani that helm Mumbai's first Izakaya - Mizu about all things food, hospitality and being a restauranteur. Vedant, could you share the inspiration behind the concept of Mizu and how the collaboration with Chef Lakhan came about?

Lakhan and I are school friends and we used to get a weekly allowance from which he and I would save a part to spend on a good meal; hungover breakfast was usually the go-to meal! Lakhan went on to open Ibar and I started assisting with Bollywood films. Throughout our friendship spanning years, Lakhan always cooked great meals but was unsure what he wanted to do with this incredible skill. I then suggested and insisted that we open our restaurant instead of him working for and under another chef. Since Lakhan was an expert in Japanese cooking we decided to take that route. Japanese food and Sushi mostly had just become a popular trend then and that’s how Mizu was born.

Chef Lakhan, Mizu seems to be a unique blend of Japanese and Indian culinary elements. How do you approach incorporating seasonal Indian ingredients into traditional Japanese dishes, and what challenges or successes have you encountered in this fusion?

Yes, it is a blend, but the idea is not to fuse two cuisines. The idea is to be more aware and conscious of our surroundings. Since we are a Japanese restaurant in a different country, we import certain produce from Japan. I often use a fruit or an ingredient which is very similar to its Japanese counterpart that adds value and taste but can still retain the flavours of the cuisine. The idea is to process Indian ingredients the

way the Japanese would and come up with something unique and yet authentically Japanese. The salmon yuzu truffle was a popular dish but during Covid, we couldn't import the yuzu from Japan, so we used the Gundaraj the Indian king of limes which is very fragrant and more cost-effective than the Japanese yuzu. The Gundaraj is easily available and adds a unique touch to the entire dish which our patrons enjoy! Similarly, the Japanese love shaved ice dessert and do a matcha kakigori on the fuyu strawberries or the winter melon. Since Mango is a national favourite and king of fruits in India, we offer mango kakigori instead! In terms of challenges, there are several creative ones, but the possibilities are endless if you apply your ingenuity.

Vedant, as a first-time restaurateur, what strategies did you employ to ensure that Mizu not only offers exquisite food but also operates as a well-managed establishment?

I had no prior experience in the hospitality field, nor did I go to a hospitality school, intern in a restaurant, or get a degree in restaurant management. I came from working on film sets so for me it was a whole new world. I learnt everything on the job. What did help me however were the people skills I learned while working on film sets. I understand people well and can bring out the best in them. We wanted to kill the hierarchy system as much as possible and create a more team and family environment with Mizu. We wanted young and passionate team members who were keen on learning daily rather than the hours they had to work each day. We wanted to create managers, chefs and captains rather than just hiring them. I feel if you manage to create a healthy team culture and your employees feel secure

within their work environment it brings out the best in them. This is beneficial for all.

Vedant and Chef Lakhan, the menu at Mizu is described as fun, eclectic, and flavour-driven. What advice and pointers do you have for anyone looking to step into the competitive culinary landscape on how to ensure they provide a unique and memorable dining experience for patrons?

As a Chef and a restaurant owner, I would advise that you be true to your concept; if you want to open a fine dining restaurant then make the best fine dining restaurant. If it is a QSR-based restaurant or a fast food-based restaurant, stay within those parameters. Be true to your identity and don't try to do everything. The important thing is to trust in yourself and the process. Location is also an important consideration while planning the concept. More than a unique dining experience, you must provide a good dining experience. A renowned Indian Chef said that “good food cannot save bad service”. If the service is bad, the customer is never coming back but if it is a bad kitchen day or the dish is not up to the standard, a bad dish can be saved by excellent service!

IHG ANNOUNCES VOCO AMRITSAR AIRPORT

IHG HOTELS AND RESORTS has announced plans for the fifth property under

its premium voco brand in India, and the first in the north Indian state of Punjab. Voco Amritsar Airport will be located close to the city’s Sri Guru Ram Das Ji International airport and is scheduled to open in December 2024. The new hotel will offer 139 rooms, as well as an outdoor swimming pool, spa facilities, a fitness centre, three F&B venues and 805 sqm of meeting space including a ballroom. Voco Amritsar Airport joins recent signings for the brand in the Indian destinations of Jim Corbett, Gurugram, Mumbai, and Goa. IHG’s Indian portfolio currently comprises 45 hotels across its Six Senses, Intercontinental Hotels and Resorts, Crowne Plaza, Holiday Inn Resort and Holiday Inn Express brands, with a further 45 properties scheduled to open in the next three to five years. VISTARA ANNOUNCES ITS 50TH DESTINATION VISTARA HAS ANNOUNCED the addition

of Doha (Qatar), its 50th destination, to its growing network. The airline started operating direct, weekly flights between Mumbai and Doha, starting on December 15, 2023, using its A321neo aircraft. Bookings for the flights are being progressively opened on all channels, including Vistara’s website, mobile app, and through travel agents. Vinod Kannan, Chief Executive Officer, Vistara said, “We are thrilled to introduce direct flights between Mumbai and Doha – the capital of Qatar and a burgeoning financial hub in the Middle East. Given the city’s growing economic significance, this move not only further solidifies our presence in the Gulf region but also enhances our network offering from our Mumbai hub. The program aims to reduce the language barrier that often impedes deeper cultural immersion and equip travellers with essential language skills to enhance their appreciation and understanding of local customs and traditions. The spike in language learning on Duolingo perfectly aligns with the increased searches for local stays on Airbnb, demonstrating a desire amongst Indians to break down the language barriers and engage in more meaningful connections with the local communities while travelling to Japan or South Korea. Recent Airbnb data has revealed a significant uptick in travel interest to Japan and South Korea. We have seen an almost 75 per cent growth in searches for Airbnb stays in Korea and almost a whopping 300 per cent increase for stays in Japan. Concurrently, Duolingo has reported a notable trend in language learning preferences among Indians, with Japanese and Korean emerging as some of the most popular languages learnt on the platform. Globally, Japanese ranks as the fifth most learnt language, while Korean has jumped to the sixth position, as highlighted in the 2023 Duolingo Language Report, which tracks the world’s biggest trends in language learning. Indian celebrity couturier Manish Malhotra has designed the new clothing including ombré sarees and bandhgalas for cabin crew, and double-breasted suits for pilots. The junior female crew will sport ombré sarees in “vibrant red-to-purple”, matched with red blazers, while the senior crew will wear sarees in aubergineto-burgundy, combined with aubergine blazers. There will be the option to wear the sarees with trousers, which Air India said, “provides greater flexibility to female cabin crew to choose the style they most identify with and brings a unique East-meets-West look”. Meanwhile, the cockpit crew will wear new black double-breasted suits, featuring “a print inspired by the Vista, signifying professionalism, timelessness, and the gravitas of the flying profession”. JAPAN AIRLINES ACCEPTS MAIDEN A350-1000

TOKYO-BASED JAPAN AIRLINES (JAL) has taken delivery of its first A350-1000 from Airbus’ delivery centre in Toulouse,

France. The A350-1000 is set to become the oneworld member carrier’s new long-haul flagship aircraft, initially flying on the Tokyo Haneda – New York JFK route, followed by Dallas. JAL’s A350-1000s are configured in four classes – six in first class, 54 in business, 24 in premium economy and 155 seats in standard economy class. JAL has ordered 31 A350 aircraft, comprising 18 A350-900s and 13 A350-1000s. The carrier has been operating the A350-900 on high density Japanese domestic routes since 2019. that it has introduced a range of exceptional wines on board its global flights this month. It added that its previous year’s investment into wine and champagne crossed Dhs186 million. Emirates says that it has the most extensive wine cellar of any airline with dedicated facilities in France which currently house around 6 million bottles of fine wine, some of which won’t be served until 2037. At present, Emirates offers 36 different varieties of French wines and Champagnes on board its aircraft. Over the coming months, it will introduce a selection of white Burgundy wines, including Premier and Grand Crus wines such as Montrachet 2011, Chevalier-Montrachet 2013, and CortonCharlemagne 2014, as well as red Burgundy wines, primarily Grand Crus like Échezeaux, Clos Vougeot, and Chambertin. has released its latest figures for the expected production of Sustainable Aviation Fuel (SAF) in 2024. Around 1.875 billion litres of SAF are expected to be produced next year, triple the 600 million litres produced in 2023, which in turn was double the 300 million litres produced in 2022. But IATA stressed that the 2024 figures equate to just 0.53 per cent of the aviation industry’s fuel needs and warned that SAF output is expected to account for just 6 per cent of all renewable fuels produced next year, with 94 per cent going to other sectors. Over the years of being a hotelier and an avid traveller, I have witnessed the traditional transactional approach evolve into a more personalised approach where hotels strive to create an emotional connection with the guests, going beyond meeting their basic needs, aiming to make them feel valued. While hospitality was still unfolding the layers of intuitive service and genuine care, the world swiftly moved towards experiential stays, where every journey is expected to become a remarkable experience. In recent years, the world experienced seclusion, quarantine and various restrictions on travel, changing the entire outlook of how people travel. The journeys became a means of self-exploration, immersing in unforgettable experiences and creating lifetime memories. The concept of experiential stays has gained tremendous popularity, while the hotels and resorts geared up to offer unique and immersive activities to their guests that showcase the local culture and heritage. A culinary sanctuary that elevates the art of Cantonese cuisine to unprecedented heights of plump succulence and explosive flavour that served as a tantalising introduction to the culinary delights ahead. The attention to detail in presentation and the impeccable freshness of the ingredients were testaments to the kitchen’s unwavering commitment to quality. For the main course, my choice was the Hong Kong Chicken with egg-fried rice. The dish emerged as a harmonious blend of textures

and tastes, with the tender chicken dancing in tandem with the savoury notes of the expertly prepared egg-fried rice. Each mouthful was a celebration of Cantonese culinary mastery, leaving an indelible imprint on my palate and a yearning for more. To accompany this culinary symphony, I opted for a Red Wine Malbec. The sommelier’s recommendation proved to be a stroke of genius, enhancing the flavours of the Cantonese dishes, and adding an extra layer of sophistication to the overall experience.

The King of Rongai Pride Meet Lorkulup, the Living Legend and King of the Rongai Pride in Masai Mara. As the second largest living cat on earth, the lion's supremacy is earned through force and fierce battles, showcasing remarkable hunting skills. Renowned for his ability to take down large prey and even multiple prey simultaneously, Lorkulup is a true beast of the wild. One morning, after tracking the Rongai Pride that had covered around 10 kilometres in search of prey, Mayura Kulkarni, Senior Solution Consultant (IT), captured a powerful moment as Lorkulup approached a bush for a drink.
