What inspired you to bring Spanish food to India?
My wife is Indian and we both felt that Spanish cuisine would be really appreciated in Mumbai. I wanted to showcase the flavours and diversity of this cuisine. That being said, at this moment we are the only Spanish chef-driven restaurant in Mumbai city and that comes with a big responsibility to the gastronomical heritage of Spain.
How did you begin your journey as a chef?
I used to help out at our family restaurant in Toledo where my mother was the chef and that naturally just sparked my desire to be a chef too! After graduating from culinary school I worked with Michelinstar Spanish chefs such as Paco Perez and Sergi Arola.
What are a few things that we would always find in your carry on luggage?
I travel extremely lightly. Just the essentials, my ipad, a change of clothes for longer flights and a phone charger.
How would you say you have inculcated Spanish culture in the dining experience at your restaurant?
We focussed on the menu and interior design. In Spain, tapas are more than just small plates of food; they are an integral part of Spanish culture – an essence of how the Spaniards love to eat, socialise and live life to the fullest. With this inspiration, I have created a Tapas a concept of sharing plates menu where there are small and elaborate sharing plates influenced by Spanish
gastronomy. We wanted to showcase Spanish culture via an artfully conceptualised space and inculcate an old-world charm in the establishment. The first step was to create a colour palette of beige, greens, whites and browns which embodies an old town like Toledo. The natural stone-clad arches showcase elegant murals of Spanish culture and life.
Does travel play a role in your culinary inventions, if yes then how?
Inspiration can strike anywhere! Living in Mumbai has opened my palette to a plethora of flavours and techniques which has given me the opportunity to create the perfect balance between the traditional recipes of Spain whilst keeping in mind the flavourful palette of India.

SINGAPORE AIRLINES AND TATA SONS TO MERGE AIR INDIA AND VISTARA
SINGAPORE AIRLINES (SIA) AND TATA SONS (TATA) million in Air India as part of the transaction. is would give SIA a 25.1 per cent stake in an enlarged Air India group with a signi cant presence in all key market segments. INDIA DISCONTINUES AIR SUVIDHA FOR ALL INTERNATIONAL PASSENGERS
THE MINISTRY OF CIVIL AVIATION OF THE INDIAN GOVERNMENT has decided to li o the mandate to ll up the Air Suvidha form for all international passengers. Air Suvidha is an online system for international passengers to submit a mandatory self-declaration form to declare their current health status. In 2021, the Ministry of Civil Aviation and Ministry of Health & Family Welfare mandated contactless self-declaration at the Air Suvidha portal to ensure the smooth passage of international travellers arriving in India. e revised guidelines for international arrivals state that all travellers should preferably be fully vaccinated as per the approved primary schedule against Covid-19 in their country.

BRITISH AIRWAYS RESUMES ITS THIRD DAILY FLIGHT FROM MUMBAI TO LONDON
FOR THE FIRST time since March 2020, British Airways restarted a third daily ight on 12 December 2022, BA134 from Mumbai to London Heathrow, adding to its two-a-day schedule. e airline has worked to create an extensive schedule to give customers more choices and availability. British Airways will be operating this ight on its state-ofthe-art Airbus A350 aircra , which features the Club Suite – the airline’s latest Club World (Business) cabin. e newly designed Club Suite o ers directaisle access, a suite door for greater privacy and luxurious at-bed seats in a 1-2-1 con guration. MELIA HOTELS INTERNATIONAL TO EXPAND LUXURY PORTFOLIO
MELIA HOTELS INTERNATIONAL has announced plans to expand its luxury portfolio by 40 per cent in the next three years. VIRGIN RED HAS unveiled its latest redemption partners, with members now able to spend points on visits to three cinema chains. A total of 140 Cineworld, Picturehouse and Showcase cinemas have joined the scheme’s redemption portfolio. Last year, Virgin Red added 56 new retailers to its online points earning programme, including technology company Dell, home improvement retailer Homebase, fragrance and personal care brand Molton Brown, and tickets sale rm Ticketmaster. JETBLUE REVAMPS TRUE BLUE TIER STATUSES
JETBLUE HAS UNVEILED its revamped True Blue frequent yer programme, which includes members now earning Mosaic tier status through a combination of travel and credit card spending. Mosaic Qualifying Points are being retired from spring 2023, to be replaced by a new system of ‘Tiles’ and four Mosaic tier levels. e entry-level Mosaic 1 includes two free checked bags, in ight alcoholic drinks, priority security and upgrades on the Heathrow Express, while Mosaic 2 also includes seats with up to seven inches more legroom at no extra charge during booking and is subject to availability. When I think of Singapore, bright, colourful images of an extravagant city ash in my mind. e urban metropolis located at the southern tip of the Malay Peninsula is the largest port in Southeast Asia and one of the busiest in the world. Its position as one of the most popular tourist destinations in the world has only strengthened over time primarily due to its technological and architectural evolution. Singapore recorded its highest-ever number of visitor arrivals (19.12 million) in 2019, before the onset of the pandemic. However, at the top of this list of marvellous structures that one shouldn’t miss out on, is a visit to the Esplanade. A worldclass performing arts centre made up of two rounded glass domes tted with over 7,000 triangular aluminium sunshades, the locals fondly call the iconic 60,000 sqm Performing Arts centre the Durian, as the venue’s twin structures resemble the spiky tropical fruit that is predominantly found only in this part of the world. Designed by leading local rm DP Architects, the space features a 1,600-seat Concert Hall where the Singapore Symphony Orchestra and other local, regional and international music acts regularly perform. If one wishes to indulge in a cultural night out, the performing arts centre hosts a wide range of events from Shakespeare plays to modern dance performances. e centre also houses a recital studio, theatre studio, an outdoor theatre, annexe studio and visual art exhibition spaces that round o the arts o erings. A plethora of cafés, restaurants and shops are dotted around the complex for visitors to relax, feast and enjoy. GARDENS BY THE BAY
An iconic landmark in the city’s skyline, the majestic Gardens by the Bay is a sight to behold. Gardens by the Bay pays homage to the magical world of horticulture and garden artistry and presents the plant kingdom in a whole new light. e aim of the gardens are not merely to entertain visitors with an aesthetic appeal but to also educate them about plants seldom seen in this part of the world, ranging from species in cool, temperate climates to tropical forests and habitats. e tropical paradise nestled in the heart of the city is surrounded by exotic foliage comprising three distinctive waterfront gardens — Bay South, Bay East, Bay Central and a marvellous 35-metre-tall man-made waterfall. e largest of the three gardens, Bay South, opened in 2012. With its award-winning cooled conservatories and iconic Supertrees, Bay South is a source of national pride. Within the Flower Dome, one can marvel at the beauty of the ever-changing oral displays, including crowd favourites such as Tulipmania, Orchid Extravaganza and Blossom Beats. In the park, there are plenty of vantage points present for visitors to admire all the stunning sights from di erent angles.
HAWKER CENTRES
Arguably one of the most prominent elements of Singaporean culture, the hawker centres in the megalopolis o er jaw-dropping varieties of cuisines at humble prices. e centres are dotted across the city and cater to thousands of hungry tourists and locals on a daily basis. One of the most popular ones is Newton Food Centre in the centre of the city which is a buzzing hawker centre and is home to approximately 100 hawker stores. Another centre in the central district of the city is Maxwell Food Centre which is renowned for serving popular local dishes like Hainanese Chicken Rice as well as Eurasian meals like shepherd’s pie and devil’s curry (spicy curry avoured with candlenuts and vinegar). In the southern part of the city, Tiong Bahru Market is highly recommended. e market resides in a heritage neighbourhood of art deco-style apartments. One can feast on local delights such as wanton mee (egg noodles with dumplings) and chwee kueh (steamed rice cakes topped with preserved radish), and the famous roasted pork buns at Tiong Bahru Pau.

IFLY SINGAPORE
Launched on 18 May 2011, one of the world’s largest indoor skydiving centres, iFly Singapore is located beside the Beach Station in Sentosa. e state-of-the-art wind tunnel allows anyone from rst-time yers to professional skydivers, the opportunity to y in an easily accessible, realistic, and safe setting. At a height of 17 metres with a diameter of ve metres, iFly Singapore is one of the world’s largest wind tunnels and can accommodate up to 20 professional yers at any one time. e wind tunnel facility is the current holder of ve Guinness World Records. e experience lasts for about 2 hours; which includes a preparatory brie ng before the ight and the necessary gearing up. A ight suit as well as helmet and goggles will be provided. A ve metre tall acrylic glass wall allows yers to enjoy an unparalleled view of the South China Sea and Siloso Beach.

The history of Panerai dates back to 1860 when Giovanni Panerai opened his rst shop in Florence, which served as a watch shop, workshop and as the city’s rst watchmaking school. On 11 January 1949, a patent was approved for use by Panerai with the name Luminor due to all the luminescent and self-luminescent materials used in the construction of the watches. Giuseppe Panerai realised that the link with radioactivity had to be handled delicately since at the time the world was witnessing an expansion of military and civil atomic technologies. The origins of the brand are rooted in 1860 when a 20-year-old called Edouard Heuer opened a small workshop in Saint Imier, Switzerland. In 1887, Edouard invented the oscillating pinion, an invention which continues to be used in many chronographs to this day. Heuer created the Solunar in 1949 after a request from Abercrombie and Fitch for a watch capable of indicating the tides. Jack Heuer, who was only 15 years of age at the time, spoke to his physics teacher, Dr. Heinz Schlit, who performed all of the necessary calculations to bring the watch to fruition. A noteworthy landmark in the history of the brand was the decision to make the rst self-winding chronograph. Jack Heuer was very aware that the research and development costs of creating this movement would be colossal. He approached Willy Breitling and they agreed to share the development expenses between both watch companies. Project 99 was the codename for the movement, which later was named Calibre 11 at the time of its launch in 1969.

Indian single malt whisky brands have recently come of age and are giving sti competition to their erstwhile Scottish ancestry. Homegrown premium brands now account for more than a third of the market compared to just a few years ago and are expected to increase further. ere are several factors that contribute to the propelling sales of Indian single malts, such as evolved tastes and a changing mindset of a new generation of single malt drinkers who are not xated on the superiority of imported brands. An increase in brand reviews in local languages and the low pricing compared to imported counterparts have helped not only to increase the popularity of Indian single malts but also created a space for a new audience.
Indian single malts that were earlier launched in international markets are now extremely popular and grab a large share of the domestic market. GODAWAN
A single malt whisky that is available in two expressions namely rich and rounded and fruity and spicy, Godawan uses the sixrow barley grown in India, instead of the two-row barley used in Scotland, with a higher protein content giving it a unique avour pro le. It goes through a long fermentation cycle of about 55 to 65 hours to get the maximum malt character out of the barley. e high temperatures in Rajasthan where the whisky is made help towards a faster maturation process and add depth to the avour. Indri single malt is distilled in Indri, near the Himalayan foothills and the River Yamuna basin. It is made from indigenous six-row barley grown in Rajasthan. e yields are smaller but lend a deliciously fruity and oral avour. Matured with care for over a decade, this whisky is the rst in India to be produced in three di erent wooden barrels; in ex-bourbon, ex-wine, and PX sherry casks which embellish the malt with the nest shade of Amber, a whi of caramelized pineapple, vanilla, hints of black tea, raisins, citrus and subtle nuttiness. e smoothness and avours linger on the palate for a long time.

Brilliance is nutty, with buttery peanuts, cashews, sweetened dried coconut and an with caramel sauce. e nish is medium-long, spiced again, with cinnamon, clove, dates, and pistachios and fades with some oaky resin. Several drops of water muddy the aroma, requiring rest in the glass. e water pulls out a banana note and seems to mute some of the complexity. e palate is a little livelier, as is the nish. distillery was founded in the late 1820s by Edward Dyer who chose this location because the climate in this area of India was quite similar to his native Scotland and because the British troops in nearby Punjab had a taste for Scottish-style whisky. It is blended with mature malt spirits produced using traditional Scottish methods of malting, kneading, and distillation on vintage copper pot stills and aged in oak casks. It has a nice fruity nose, with sweet woody, oaky, apples, dry spice, and pleasant palate, and a memorable nish which is a warm spice burn. Water enhances its taste.

Solan No 1 is a delicious orange- avoured, full-bodied whiskey that comes with an amazing and rich history. It is golden amber in colour, the liquid is light and doesn’t seem very gelatinous. e initial smell is fruity; very heavy on the orange, with a bit of cinnamon spice in the background and some vanilla mixed. e rst taste is of caramel, strong and sweetly delicious. As the avour develops, a bit of nutmeg and a small touch of liquorice in the background kicks in. e overall e ect is unusual and delicious with a strong orange a ertaste that accompanies a good level of alcohol burn which lingers.

Niyati Rao is a 26 year old chef who has made a mark in Indian ne dining. With Ekaa, her main goal was to give traditional ingredients from the Indian subcontinent a platform to showcase themselves, peppered with global in uences. She has an extremely innovative, scienti c way of thinking wherein she aims to create a blueprint, an entirely revolutionary, new recipe with a handful of ingredients, as opposed to simply altering some aspects of a pre-existing dish. Rao’s focus on Research and Development in the culinary sphere is very apparent from her approach towards curating dishes. Her philosophy is to not restrict herself to any particular cuisine or culture, to view local ingredients in their rawest form, and employ her creative prowess to build them into a wholesome dish. Sure enough, Ekaa presents an ingredient-forward menu where dishes are given quaint names like eggplant, pumpkin, ocean, and coconut, playing into a mysterious aura, whilst masterfully retaining the ability of ingredients to set the mood of a dish. Niyati Rao is truly a chef with a phenomenal vision, one which provides an incredibly unique and whimsical take on cooking.

A spirited and passionate chef, Anahita Dhondy had her rst encounter with cooking at the tender age of ten. She was inspired to cook by her mother, who specialised in catering Parsi food and baking cakes. Anahita pursued a culinary arts degree from IHM-Aurangabad and went on to train at Taj, JW Marriott, and acquired a grand diploma from Le Cordon Bleu, London. By the young age of 23, she had joined the iconic restaurant chain SodaBottleOpenerWala in Delhi, a place she refers to as her second home. Whilst, domestic tourism has spearheaded the revival of the hospitality industry in India post-pandemic, not only have popular domestic destinations seen an increase in footfall, but have also seen the emergence of more and more travellers spending to experience luxury. Luxury travel has always been a key segment targeted by destination and tourism stakeholders for the revival of tourism at large. So also, in the recent past, this segment emerged as a life-saver for many. Whether there is a recession or a pandemic, avid travellers will always indulge in luxury experiences and that has been the reality.
As per a recent survey, 74 per cent of luxury travellers said that they’re willing to pay more to travel sustainably if they know where their money is going, since that enhances their vacation experience. 70 per cent of frequent flyers make bookings online and their choices are based on convenience, availability, preference for brands, and past experience. Similarly, they value a hassle-free post-booking experience. An element that particularly amused me was the fact that none of the rooms are designated numbers but instead are labelled with quintessential Victorian names. For example, the name of my room was George. The other category of rooms available is The Lakefront Room with Balcony which is located on the second floor of the resort and stretches across 41 sqm.
FOOD AND DRINK The hotel only serves a vegetarian menu with the exception of eggs however, one is spoiled for choice with the assortment of cuisines on o er. I began my day in Mayfair, the all-day multi-cuisine diner where I relished a hearty portion of a French mushroom omelette, toast and a refreshing plate of fresh fruits. The elegant interiors punctuated by verdant foliage; petalled-flower pendant lighting; comforting neoclassical furniture; and floor-to-ceiling bay windows allowed me to enjoy views of the lake whilst I indulged in my breakfast. The highlight of my culinary experiences at Zana was a lakeside, candle-lit dinner in a beautifully decorated gazebo. The picturesque setting was further elevated with the servings of an assortment of dim-sums, tandoori tikkas, curries and Indian bread. Station and the towering skyscrapers of Shinjuku. The snow-capped Mount Fuji can be seen in the distance. I stayed in the Mandarin Grand Room. With panoramic views of Mount Fuji, this spacious 60 sq m room was a traveller’s delight. The room’s decor featured intricate headboard artwork, including embroidery of weeping cherry blossoms. The carpet design was inspired by authentic Japanese ink and brushwork. The room had a spacious sitting area with a sofa, comfortable goosedown bedding, and a 4k HDR television.
FOOD AND DRINK The hotel o ers Cantonese cuisine at the restaurant Sense. Sense Tea Corner is an ideal place to relax on the 37th floor, sipping a cup of fine tea. Signature o ers bespoke French dining, while Sushi Shin by Miyakawa is a must-visit. It features an over 350-yearold Hinoki cypress sushi counter. I had a classic breakfast at K’shiki, which consisted of a bu et and a hot breakfast menu. I had a healthy bowl of freshly cut fruits, muesli and a cappuccino. The service was excellent, as was the quality of the ingredients used.

The Spa utilises traditional Eastern as well as modern treatments to provide a truly enriching experience. Treatments include a 24k gold age-defying facial and a Shiatsu massage.
