Every corner and detail has been carefully thought through with furnishings crafted in Azueros’s workshop and other materials imported from Europe. Lush landscaping adorns the property and was grown within the Azueros’s own nursery.

Villa Esplendorosa is the vacation destination for those who treasure quality time, comfort, and privacy and expect nothing but the best. All five rooms have king beds and are ample and carefully decorated with soothing colors and equipped with all the modern amenities. The villa is rented exclusively for a single party, with a capacity for 10 people and two additional beds for children and includes a staff of two housekeepers, a cook and a manager. From Playa Arenal, you take a boat to the pristine Isla Iguana, 52 hectares of exuberant vegetation fringed by white sand beaches and surrounded by crystalline waters. Isla Iguana is the best place to scuba dive, snorkel and paddle board in the area.


Playa Venao (Venado):Pale brown sand, there are areas with dangerous swimming conditions, and other areas with calm waters. Venao is the most popular and consistent surf spot in Panama, home to international and national surf competitions. Aproximately 510 km from Panama city to Almirante, where you can leave your car and take a water taxi to Isla Colón. A 3 hour drive from Boquete to Almirante. 45 minute flight from Panama City’s local airport, approximately $240.00 round trip. The water taxi from Almirante to Isla Colón takes 30 minutes and costs $5.00 per person. Bluff Beach: on Isla Colón; is the easiest and nicest beach to reach. Good for surfing with strong tides, exercise caution when swimming. Boca del Drago: is a 45 minute drive from town on the other side of Isla Colón. It is a beautiful palm-fringed white sand beach. Prime for swimming, snorkeling and relaxing. Starfish Beach: Also on Isla Colón and is a great place for swimming. Many starfish hang out near the shore. It can only be reached by water taxi. Playa Wizard: On Bastimentos; offers swimming in certain areas, diving at Dolphin Rock, snorkeling and surfing. This beach is good for learning to surf as there are no rocks and the waves aren’t too high.

The archipielago of Bocas del Toro lies just a few miles from the northern coast of Panama and consists of several large islands and many smaller uninhabited islands and cays. Red Frog Beach: Also on Bastimentos Island is one of Panama’s most beautiful beaches for swimming and surfing. This is the only place in the world where you can spot the red poison dart frog living in its natural habitat. There is a $3.00 charge to enter the park. Coral Cay: also known as Crawl Cay: The small island near Bastimentos is a perfect snorkeling destination where you can see all kinds of coral and fish. Cayos Zapatillas: Offers some of the best skin diving in the marine park, windward from Crawl Cay. The variety of underwater ecosystems includes fan gardens and coral reefs. You can choose from a variety of depths and currents to suit your skill. Cayos Zapatillas is a national park so there’s an admission fee of $10.00.

Wegala

A cool experience from beginning to end.

mein or rice noodles, followed by your choice of protein: pork, poultry or vegetables, then to finish your dish you must choose your sauce: curry-coconut, sweet and sour or teriyaki.

What started as a food car, parked in different locations in Panama City, ended up settling (who knows for how long) at El Apartamento, a very casual rock and roll lounge with a hip twist.

The creative and super popular menu includes pork belly buns, pulled pork teriyaki sliders, Indian chicken wings, curry-coconut shrimp won ton, portobello spring rolls, crunchy satay sweet and sour chicken, siu mae glazed with hot sauce, and tuna mango sushi rolls.

The menu is described as Pan-Asian and was designed by Maito’s Chef Mario Castrellón, one of the most recognized chefs in the culinary scene in Panama. The first thing we noticed when we entered The Apartment was the music from Radio 10, 88.1, and whoever plays that radio station in their venue is a friend of mine. The menu is presented to you on a funky canvas with a section for you to choose and combine, and a section for individual dishes. The choose and combine section allows you to create your dish by choosing your base, there are 3 options: rice, chow 48

We decided to order almost all the dishes on the menu and the overall experience was completely satisfying. Our noodle combination was incredibly good - we combined pork, noodles and teriyaki, and to our surprise the presentation, perhaps new to Panama but standard in USA, was the ever familiar take out container, so A+ for that! The pork buns were very tender and savory, we tried the pulled pork sliders from the comfort section of the menu (arguably the best in Panama), we were blown away by the curry-coconut sauce that came with our crispy shrimp wontons, and we ended on a hot and delicious note with the siu maes.


The prices are incredibly affordable, the service was excellent, and the ambiance complemented the whole experience. We will be back soon!

A Fuego Lento:

Yet another creation of one of our favorite chefs Fabricio Torcivia. Originally from Mendoza Argentina, Fabricio brings to the table the traditional cuisine style of his home town in a very straight forward approach offering three different settings - a semi-formal dining room with private rooms for meetings and gatherings, an air conditioned thatched roof tavern, and an open air garden terrace. A Fuego Lento means slowly cooked and that is the standard for their house specialties. In the back yard, you can observe the traditional Mendozan rotisserie racks (traditionally called a la llama or a la cruz) where they slowly roast lamb and pork as well as a brick grill and oven where they use aromatic wood to feed the fire. The menu is very refreshing offering imported meat, lamb, poultry, fish and seafood, risottos, pizzas, very creative starters such as zucchini carpaccio topped with caramelized nut brittle, Vietnamese clams, flank steak or lamb empanadas, scallops, Provoleta (a melted provolone cheese ceramic pot served with a crispy foccacia rubbed with garlic and herbs), and the most delicious flank steak and portobelo mushroom burgers with a fine herb mayonnaise. On this occasion, we started with both flank steak and lamb empanadas with a delicate crust and moist and 50

delicious fillings accompanied by an exquisite dipping sauce. This was followed by the tenderest scallops served over caramelized onions with a hint of lemon oil. The Provoleta was very indulging and fun to eat. Then came the master of the house, a huge juicy and tender ribeye, cooked the way meat was meant to be cooked, with love! A Fuego Lento has one of the best custard desserts in the whole country, and their crêpes are to die for. As Chef Fabricio once told us,

“I bought my first car by selling crêpes outside nightclubs in Argentina”.

So, we trust his expertise.

We ended our meal with what is called a citrus symphony, a passion fruit cream, a lemon cream, the closest thing to drinking a lemon pie, and sweet Monastrell wine.

Rausch

After a few casual and exciting restaurant visits, we decided to share an elegant lunch, so we headed to Rausch located at the boutique Hotel Esplendor in the heart of the banking area. From the moment we stepped in, all the hustle and bustle of the city disappeared and our senses were greeted with a soothing complimentary mushroom cream cappuccino and delightful house bread. We were ready to be pleasantly surprised. We decided to go for several entrées starting with a delicate yellow tail tuna tartar served with an oriental vinaigrette and wasabi mayonnaise, sprinkled with black sesame seeds. We followed this with a generous lobster and guacamole tian, served with a balsamic reduction, mango coulis and grapefruit sorbet. We shared a mushroom and chicken mousse ravioli, topped with an exquisite foie gras sauce. And we finished with soft shell crab served with an amazing gribiche sauce on top of a brioche toast, an artichoke confit, dried tomatoes, avocado and deep fried capers.

On our next visit, we will be sure to try the main dishes and the desserts since the menu looks amazing.

Fenicia

Fenicia is located just a few meters before Rausch and offers the eclectic combination of Lebanese and Japanese food. Initially, we were told by friends that it was a Lebanese restaurant so our minds were already predisposed for Mediterranean food so we stuck to our original plan and we were not disappointed at all. The restaurant offers a variety of dishes and mezzas. Mezzas are selections of various small dishes meant to share and are an excellent choice when you don’t know what to order and, also, the illustrated menu really helps.

We ordered the Mezza Fenicia that comes with hummus, kibbeh, cheese sambusek, stuffed grape leaves, falafel, baba ganoush, tabuleh, fatush, musaka, hot potatoes, suguk, labne, kefta skewers, shish tauk and shish kabob. Well, we didn’t stop there. We also ordered the kibbeh nayyeh and a pickled vegetable dish.

Where to start? I don’t think I can describe the 18 dishes without exceeding the superlative adjective quota and the space in this article, so I will summarize the experience as a wonderful meal, a voyage through delightful flavors and aromas, an excursion through spices and textures and a very good experience, and would do it all over again…no hesitation! Next time, we will explore their exotic sushi.

In a carefully crafted environment with great atmosphere, sophisticated yet casual, stands the latest creation of David Henessy: Elephant Grill. The moment you receive the menu in your hands, it is an invitation to play. Do you feel like eating with your fingers? Perhaps with chopsticks? Or maybe from a bowl? Perhaps all, let’s share. That was our initial reaction! So….we decided to each choose a dish and share, and exchange thoughts and discoveries. While we decided on the menu, edemame beans entertained our palates.

One has to start somewhere, so let’s start with our fingers: the pork buns were moist and fluffy with tender pork and savory zucchini. The duck tacos were presented flawlessly, generous cuts of duck served with chives, zucchini and plum sauce. Moving on to chopsticks, the gyosas were glorious, simply outstanding. Sometimes delicate simple things open a rainbow of greatness. The scallops were perfectly cooked, tender yet savory, served with a lightly seasoned salad, so delicate yet so flavorful. When you think of a bowl, you automatically think of soothing, calming comforting, and the Pad Thai, was all that and then more, a symphony of aromas and flavors… so many layers to it, so good.

Elephant Grill is the perfect place to transport yourself from the mundane life, and live a little like Asia in Panama City, at least just for a little while.

Smoke Shack

On the corner of the bustling Federico Boyd and opposite to the Double Tree Hotel, you will find the home for all things smoked. A laid back restaurant/cafeteria with inside and outside seating is the home of the famous gator bites, lightly battered and served with the best honey mustard dipping sauce I have tried in a long time. I was especially delighted by the three varieties of wings, and no surprise, they were awarded the best wings at the 2011 BBQ fest. You can try the traditional Buffalo with a twist, the aromatic and delicious lemon-pepper and my favorite the honey wasabi wings…I can’t stop thinking about them. The coconut shrimp were perfectly cooked and served with a delicious sweet and hot sauce. The pulled pork smokiness and the tanginess of the BBQ sauce were very enjoyable; you can also order the pulled pork sandwich if you feel like it. At the end of the meal, we tried one of the house specialties, the BBQ ribs laced with a thick and savory BBQ sauce, slowly roasted and falling off of the bone.

Beer drinkers will be delighted with their international selection of brews.

Smoke Shack serves a variety of interesting choices of starters, a variety of imported meats, sandwiches, creative salads, excellent fries and hearty sides, but the thing I liked the most, was all of their sauces. I think the chef is a sauce artist.

Loreli Kusin is a prime example – a Southern Belle and firecracker of enthusiasm – she started the Super Gourmet because she couldn’t find good cheese in Bocas. “I am not really someone who readily takes NO for an answer,” with her determination Loreli opened up the first location of the Super Gourmet in a garage on main street just over ten years ago. It was there that she sold specialty cheese and meat. “In no time, the food was flying off the shelves and everyone started calling it the ‘Gringo Grocery’,” she said. Loreli recognized that the demand for quality products would expand as Bocas grew. Now open in a larger air-conditioned and fun space further down the road, the Super G’s (a local nickname) deli offers great sandwiches, pizzas, entrees, salads and desserts. The deli at the Super G has recently been voted the number one restaurant in Bocas by tourists on Tripadvisor.

Any customer who meets Loreli is drawn to her bubbly personality and welcomed by her smile.

Super G is one of Bocas’ great success stories. Its specialty products are the source of supply for many of Bocas’ finest restaurants.

Laura Kay was born in the Canal Zone of Panama but moved back to Washington at a young age. Although entrenched in the US for an extended period, swinging from mango trees and the ocean were not far from her mind. Rather than waiting for retirement, Laura returned to Panama and opened Bocas Yoga over three years ago. “It’s a job and a business, the hardest one you will ever love.” Bocas Yoga has become a destination for yogis from all over the world. Bocas Yoga is Laura’s home as well as her studio. Each day she aims to open the hearts and minds of students exposing them to positive energy with the hope that they bring it with them to the streets of Bocas once they leave.

“See Shri first, I tell people that when class is over. Seeing shri is about how you put out positive energy and in return you get back good things.” Emanating positive energy is key to the success of all of Bocas’ businesswomen. When you meet or are introduced to any of them, you will be inspired. Each one sparkles with her own unique energy. Walking from the Super G down main street one might stumble into Bri Bri, a gift shop that was built to share art from the surrounding indigenous communities. The owner, Gloria Bonza De Uran, originally from Columbia, has watched Bocas Town grow around her, seen it fill with tourists and immigrants from all over the globe. She attributes her success to perseverance, consistency and a positive outlook.

“Work hard and stay focused on your goal, put your mind to it and step forward to do whatever you have to do,” said Gloria,

Look up from the shop and see a whimsical balcony lit with dim candles, an ideal spot for a late afternoon beverage or evening watering hole. The Bocas Wine Trading Co. and Lounge (known as “The Wine Bar”) is owned and run by Christin Fjeld Roberts, originally from Norway. She has been in Bocas since 2002 and has never been disappointed with the life she has created here. Christin has owned and operated several businesses in Bocas. Her first was a restaurant above a dive shop called Cocina Del Mar and second a coffee shop. She’s an expert at restoring struggling enterprises and assisted many throughout the years. The Wine Bar is her first solo venture in a long time. Locals and tourists flock to the balcony for a taste of her tapas and sips of quality wine.

“You put out positive energy, you respect the people around you and good things happen. Respect where you are at. I didn’t come here to change anything I came here to be a part of it.” There are a number of businesses that attribute their success to the men and women behind the scenes – their staff. Bocatoranians now fill the offices of Hotel Bocas Del Toro, The Wine Bar and others. Super G even still has five of its original employees. Women and men are learning skills they would not have been exposed to were it not for the strong willed businesswomen of Bocas. Carla Rankin, owner of the Hotel Bocas Del Toro on the waterfront of Main Street, has trained her team to manage the boutique hotel. It overlooks the water and is home to 11 rooms - each one unique.

“I do my best to coach, develop and hire the right people. Word of mouth and repeat business is the best form of advertising and therefore excellent customer service is important to me and my staff!” Carla learned a lot about business operations from previous employment with Disney and Tiffany & Co. and she has implemented and passed on to her staff everything learned in previous jobs with luxury brands. 60

standing on opposite ends of the island. Owned by two East Coast American women, Donna Manfrino and Katherine Dukehart, share the gift of education and training Bocatoranians in the restaurant and esthetics industries respectively.

“No matter what kind of person you are, you can come down here to Bocas and be yourself, for better or for worse,” said Katherine Dukehart

owner of El Ultimo Refugio. Katherine came to Bocas in 2006 on a vacation with a friend. She fell in love with the climate, the laid-back lifestyle and living by the ocean. “I really love food. It really excites me to cook,” said Katherine. There are many recipes that remain on the menu since the day it opened including devilled eggs, seared tuna (when it’s fresh) and chocolate peanut butter pie. “I work with a team of women that have been with me since Refugio opened,” she said. “We are like a sisterhood; we’ve all learned from each other and have grown from success together.” Donna Manfrino has trained more than a dozen locals in different trades and professions, having owned a spa, a gym and laundromat prior to the Lil’ Spa Shop. All of her former employees have a good work ethic and have been employed in long-term positions in other businesses. She continues to teach massage, esthetics and hair techniques to locals and to others who have moved to Bocas from abroad.

For Donna, Bocas is a place where her own dreams have come true..

“I always wanted to do hair over the water in a garden. Dreams for me have come true. I put each dream into action and now here I stand, seaside in the garden cutting hair.” Through education she also is helping others fulfill their own dreams. “You step into Bocas and you feel peace. I felt it since I was a little girl. People want to stay and bring their lives here from other countries to keep the feeling,” said Lilia de Munro of Lily’s Café. Lily grew up on mainland Panama in nearby Almirante and took day trips to Bocas for picnics with her family for holidays. As a child, she wandered to Las Cabanas beaches that at the time was a field of sugar cane. It was then that she dreamed of living over the water in Saigon Bay. Nearly nine years ago, Lily opened a restaurant on Main Street’s waterfront. She had gained management experience by working at other restaurants. Lily brought her own pots and pans from home and opened Lily’s Café, where she served breakfast and lunch on homemade bread. When the food was ready, she rang a bell to alert passersby. Lily made $100 her first week – a huge accomplishment!

“You have to have patience to have a restaurant. Without patience and good luck you can’t make it stay. I am not a millionaire but I don’t owe anyone.” Today Lily’s sits in the same location. She serves breakfast, lunch and dinner. Her food can be seasoned with her own recipe for hot sauce “Killin’ Me Man” to enhance the Caribbean spice. There’s live music every Saturday. She plans to expand the dance floor to make room for the crowds that gather on the dock.

Steps away from Lily’s, more dreams have come true at “Virginia’s Office”. Virginia Vasquez grew up on Main Street in Bocas Town, in a home that has since been converted to a hotel. Overlooking the water, “Virginia’s Office” is a breezy Caribbean style building with brightly colored walls and an upbeat energy.

“I don’t know how to describe my business. I am a General Manager, a Business Administrator, a Property Manager. Oh! And I am a home economics teacher every morning throughout the school year. I also work with charities to teach English to children on five different Bocas islands,” said Vasquez in a breezy manner.

“Virginia’s Office” started when she picked up Malcolm Henderson at the airport. At that time, Virginia’s English was top notch on the island so she was his greeter. When she first met him, she never would have dreamed that he’d become her mentor. She told Malcolm to call her if he needed help with something and in those days, he did, every day.

“You’d have thought that you buy chicken and eggs in a grocery store, so that’s where Malcolm was looking. But one had to know Bocas to know where everything was. At that time, chicken and eggs were sold at the casinos. I showed him around and helped him navigate Bocas.” Virginia is now a business consultant and property manager for about 80 clients. Her business grew through word of mouth and she is the nucleus of many Gringo businesses. Virginia employs five people, the majority of whom were her students in high school. “I hand picked my staff from my best students,” she said. “I am trying hard to work with young people so that they learn the importance of education and professionalism. I am also making an effort to help preserve the Bocatoranian culture I grew up with so that our voice isn’t lost in the melting pot in which we live.”

“It´s not easy to come to Bocas and start a business on your own, it’s even a challenge for those who were born here. Finding support, friends and community is a necessity,” says artist Julie Jorgensen.

Julie, moved to Bocas in 2005, originally from Nebraska, inspired by Malcolm Henderson. “Most people come down with a partner and one sticks and one goes away – these woman are all stickers,” said Julie. “You’ve gotta be able to make it with yourself, before making it with someone else.” Julie’s art is represented in businesses all over Bocas. When walking through town, Julie is most proud to of her logo for “Gringo’s Mexican”. Julie finds the humor in a lot of what goes on in Bocas and is able to create art with a laugh from that. A modest businesswoman, Julie has said “I am not a business, I am just me. Doodling.” She does what she says she’s going to and that’s what makes her so successful – and of course, her amazing artwork.

“To be happy in this world, you have to love your life. Women need to learn to love themselves so that they can be happy and enjoy life,”

said Lily.

This is a philosophy that is shared by all of the successful businesswomen in Bocas. They love what they do, they love life and they keep smiling. Even when it rains. 64
