Bresky's Favorite 2022 Easter Recipes

Pina Colada Eggs

Ingredients:

• 3 Tbsp. crushed pineapple with small amount of juice

• 2 cups sweet coconut*

• 1/4 tsp. Pineapple flavor oil*

• 1 tsp. rum

• 2 Tbsp. clear Karo syrup

• 1 lb. dry fondant*

• 1 lb. Merckens chocolate*

Directions: Mix first 6 ingredients well. Then chill mixture. Shape into eggs and coat with Merckens chocolate coating.

Pineapple Coconut Cherry Dream Bars

Cookie Crust Ingredients

• 1/2 cup butter softened

• 1/3 cup sugar

• 1 cup King Midas flour*

Filling Ingredients

• 2 eggs

• 2/3 cup sugar

• 1 tsp. vanilla extract*

• 1/2 tsp. pineapple flavor oil*

• 1/3 cup King Midas flour*

• 1 pinch salt

• 1 tsp. baking powder

• 8 oz. can crushed pineapple, drained well

• 8 oz. sweet coconut*

• 1 cup walnuts*, chopped

• 1/2 cup maraschino cherries, chopped

Crust Directions

In mixing bowl, mix butter and 1/3 cup sugar. Then add 1 cup flour and mix until crumbly. Pat mixture evenly into bottom of a 9x13 pan*. Bake at 350 degrees for 15 minutes or until golden. Remove to cool slightly.

Filling Directions

In a large bowl, beat eggs well. Then add 2/3 cup sugar, vanilla & flavoring. Mix until well combined. In a small bowl, whisk 1/3 cup flour, salt & baking powder and add it to the egg mixture. Carefully fold in pineapple, coconut, nuts & cherries. Spread over the baked crust, and bake for 30 minutes.

Cool completely on a wire rack* and cut into squares.

Peanut Butter Eggs

Ingredients: • 4 cups 10X sugar* • 2 sticks margarine

• 1 tsp. pure vanilla* • 1 lb. Merckens chocolate wafers*

• 2 generous cups peanut butter (We like Jif chunky or creamy).

Directions: Mix peanut butter, margarine & vanilla until blended. Gradually add 10X sugar. Mix well & chill. Shape into eggs & dip into Merckens chocolate. Makes about 5 dozen.

For a delicious variation, add 1½ cups Bresky’s crisp rice* for peanut butter “crisp” eggs.

Another delicious variation (Linda’s favorite)… dip eggs into white chocolate & roll in toasted coconut*.

Tip: If eggs are oily, adding about ½ cup Graham cracker crumbs to recipe makes them easier to dip.

These eggs are normally soft, but worth the effort.
