Thai Dancing and Thai Traditional Costumes
T
hailand is the first international destination I ever travelled to. I had six hours in the Suvarnabhumi airport as I waited for my connection from Bangkok to Koh Samui. I was changing airlines so I had collected my baggage already and was spending time in the lobby. I was astounded at the amount of artwork on the walls. Beautiful costumes in bright colors and shiny gold. Traditional dancers depicted in paintings and sculptures, the hands of the women impossibly flexible in positions I never would have thought possible but I have witnessed it first hand now. The airport literally oozed with artistic talent and after three and a half years in the Kingdom I have come to realize that art is woven into the very fabric of the society of Thai people.
Types of Dance in Thailand There are essentially three types of dance in Thai culture: Khon, Lakhon, and Fawn Thai. The Khon style is more like a play set to music and communicated through the art of dance. The dancers wear elaborate costumes and the cast of characters can be mythical demons, celestial beings, monkeys, buffalo and of course people. There is a distinct storyline told through dance and most feature from the time of Ramakien, Thai style Ramayana, and the Indian Epic. Lakhon style is less formal, and the dancers faces are not hidden by masks as they are in Khon style. Lakhon is mostly performed by female dancers and the movements are more fluid, graceful and even sensual. The dance is performed as a group rather than individually. The last style is Fawn Thai which is folk style dancing and there are further subsets of Fawn Thai that are specific to regions. These are the classic provincial dances. My first job in Thailand was as a Kindergarten English Teacher. In the morning from 8:00 am to 8:30 am the entire Kindergarten student body would gather in front of the flag pole. Approximately 300 students would line up by class in lines to sing the national anthem, and then participate in morning stretches, singing, dancing, and on Fridays Thai Massage. Fridays were my favorite because not only did the kids learn Thai massage techniques but they also wore Thai traditional costumes to school. Students from Teacher Jan’s class on the Friday before Loi Krathong with their Krathong art projects wearing their Thai traditional uniforms for school. These students are in Kindergarten 2 at Supaluck School in Suphan Buri a small suburb about 100 km north of Bangkok. The material for the uniforms is 100% cotton. They breathe well and when one sweats the material will help keep you cool when the breeze hits. The cotton also dries incredibly fast making it an ideal material for working in the rice fields. The style works well in the rivers and lakes as the pants and skirts can be tied up higher to keep out of the water.

As well as the Fridays where the kids wore traditional style dress, there are several holidays throughout the year when both the students and teachers dress up in traditional costumes. Schools typically host a fancy dress day at some point during the year too. This is usually an after hours affair where the staff get together and don traditional garb, or sometimes impersonate Thai superheroes, rock stars and more. Thais enjoy laughing at and with each other and they love to ham things up. I find they are very receptive if you are willing to laugh at yourself and you will score major points if you let them dress you up in their traditional costumes. Fancy Day Supaluck School 2012 Teacher Nuey, Teacher Ri Ri, and Teacher Jan all dressed in traditional Thai costumes. Sportsday is another day where the costumes come out in full force. Sports day is typically a 2-3 day event each school hosts where the schools are broken into teams and they all compete against one another. On a Saturday a parade is held with traditional Thai music and many of the students don special attire that day. The traditional costumes include fancy headdresses, gloves, batons, and lots of shiny fabrics and sequins.
Dance Competitions & Recitals Schools love to host recitals and competitions showcasing Thai dances. Traditional costumes are used and the choreography comes from dances that have been danced for generations. There are dances that call the rain, dances that pay homage to Buddha, dances to thank the mighty river for providing life to the people, and dances done to celebrate when a new monk is raised to monkhood. Dancing takes place at temples, at schools, and sometimes just in the streets or at homes. Thai people love to dance, and they love music, and they love for everyone to participate. Schools will have children perform choreographed dance numbers from the ages of 3 and beyond. Coordinating costumes and dance moves appropriate for the celebration and age group. Each class will perform a routine, and there will also be performances by students who particularly excel. Sometimes this means a solo number with dancers performing behind the soloist, and sometimes this means a dance troupe performing an ancient dance that has been passed down generation after generation. If all the dancing at school is not enough extra curricular dancing is alive and well in Thailand and quite popular. Both traditional and modern dances are choreographed to both modern and traditional music. Some of the music is a mere 100 years old and some reaches much further back into history. Some of these dances actually tell stories and show historical events passed on to the people by the people through dancing. It is not uncommon to find a temporary stage set up near a night market in any small town across Thailand. You will be delighted witnessing dancers of all ages, and some who are quite skilled. The costumes are colorful, the music is fun and fast, and the show is in a word, amazing. Most of the traditional costumes worn by men, women and children consist of pieces of fabric that can be worn in several different ways. The pieces are draped, folded, tied, and pulled into position depending on what the occasion is and who is wearing it. The best places to view Khon style dancing are Thai temples close to major holidays. Thai history and folklore is communicated to the people when they gather at temple with family and friends. There is no need to understand the language of Thai to understand the stories told through this traditional dance style. Regardless of what style you have the opportunity to see Thai dancing is fun to watch especially when paired with the traditional costumes. The art comes to life in Thailand and the people ensure it stays that way.

Thai Superstitions Throughout the world there are dozens of good-luck, bad-luck traditions. In Greek culture, a sugar cube is tucked into the bride’s glove to “sweeten” the marriage. For good luck, Egyptian women pinch the bride on her wedding day. The English believe a spider found in a wedding dress means good luck. Peas are thrown at Czech newlyweds instead of rice. Ancient Greeks and Romans thought the veil protected the bride from evil spirits and brides have worn veils ever since. Also the groom carrying the bride across the threshold does so to bravely protect her from the evil spirits lurking below.
Thai Superstitions about marriage There is a Thai superstition that if you and your lover are born on the correct days then you will have a long and happy marriage. These combinations will succeed: A man born on Sunday and a woman born on Monday (and vice versa) A man born on Friday and a woman born on Tuesday (and vice versa) A man born on Thursday and a woman born on Sunday (and vice versa) A man born on Wednesday and a woman born on Saturday (and vice versa) A man born on Monday and a woman born on Saturday (and vice versa) A man born on Wednesday and a woman born on Monday (and vice versa) A man born on Friday and a woman born on Sunday (and vice versa) These combinations will not succeed at all: People born on Monday and Thursday People born on Sunday and Tuesday People born on Friday and Saturday People born on Wednesday and Wednesday Historically superstitions surrounding the days of the week can be traced back as far as the Romans who marked their lucky days with a piece of chalk and their unlucky days with charcoal. From this custom of marking unlucky days with charcoal

started the phrase "black-letter day." Today, "black-letter days" are generally ones remembered with regret because of some unfortunate occurrence connected with them. The origin of the superstition concerning Friday is traced by most authorities to the crucifixion of Jesus Christ (c. 6 B.C.E.–c. 30 C.E.) on that day. But some writers advance the theory that Friday is regarded as an unlucky day because, according to ancient tradition, it was on Friday that Adam and Eve partook of the forbidden fruit and were cast out of paradise.
Thai Buddha Poses For The Day Of The Week In Thailand each day of the week is associated with a particular Buddha pose, and “your” pose is determined by which day of the week you were born. (The Thai zodiac puts as much importance on the day of the week – Monday, Tuesday, Wednesday, etc. – as on the actual date or month). So everyone born on a Monday would have one special posture, while everyone born on a Thursday would have a different posture, etc. Thus, everyone in Thailand knows which day of the week they were born. If you have ever been to a Thai temple, then you might see an area where there are 8 (not seven) small Buddha statues set aside, often with small bowls next to them where you can make merit by putting money into those bowls. The money is then used to help maintain the temple. You make merit by donating in the bowl of the statue that represents the day on which you were born. Why 8 instead of 7 when there are only 7 days in a week? You’ll see in a moment. Sunday: The Buddha stands with arms crossed over the

stomach, right hand over the left, with the back of the hands facing outward. The eyes are open and this is a pose of mental insight. Monday: The Protection Buddha Tuesday: The Reclining Buddha Wednesday BEFORE Noon: Alms Collecting Buddha (Thai people split Wednesday into two different poses – those who are born before noon on Wednesday and those born AFTER noon). Wednesday AFTER Noon: The Buddha sitting with a Monkey and an Elephant, which are giving offerings to the Buddha. This is a rather unusual pose that many westerners may not have ever seen before. Thursday: Meditation Buddha Friday: Contemplation Buddha Saturday: The Buddha Seated under a Naga (Seven Headed Serpent), again in Meditation. This pose depicts the meditation Buddha being protected from falling rain by the spread out hood of the Naga

On Wan Pôr Hàng Châart a large portion of the Thai population’s garb is comprised of the colour yellow. In case you didn’t already know; in Thailand, each day of the week is represented by a specific colour. Public holiday or not, the Thai people widely adhere to the belief that wearing garments which correspond to a particular day of the week will bring them good fortune. The seven daily colors are as follows: • Sunday is red • Monday is yellow • Tuesday is pink • Wednesday is green • Thursday is orange • Friday is blue • Saturday is purple. All Thais, regardless of their social status are encouraged to wear Monday’s color of yellow, usually in the form of a shirt as a sign of unity and respect to celebrate the King’s birthday. The reason for this is because King Bhumibol was born on December 5, 1927 … a Monday. Hence, the color yellow has become synonymous with His Majesty and that of Thai royalty.

If you hear a gecko between 6 a.m. and noon it means that good news is on its way. If you hear a gecko between 12.01 p.m. and 6 p.m. it is a sign of something bad to come. If you do it there will be bad consequences. The Sanctuary of Truth They say a journey of a thousand miles begins with a single step. Sometimes the reason the the journey takes so long is you forget the goal and do not take the time to complete the journey. One of the perpetual hazards of living in tourist destinations is never taking the time to see the sites. I grew up living this daily conundrum. I lived an hours drive from the Colorado river and the Grand Canyon and I never did see it. How often do you visit the tourist attractions in a town where you live? I have lived in Thailand for three and a half years, Pattaya for a year and a half thus far. Pattaya definitely qualifies as a tourist destination and the Sanctuary of Truth is a very popular tourist destination. So much so that on my first trip to Pattaya in 2012 I looked up things to do and was immediately enchanted by the idea of visiting the Sanctuary built by an eccentric millionaire. In complete Rhiannon fashion I didn't make it. I got a tattoo instead and visited a Go Go bar. Here I am three years later writing for the Pattaya Trader Magazine and I get an assignment to write about the Sanctuary of Truth. Now I have to go and see this place I have been meaning to experience for years. It is a cloudy overcast day with the constant threat of rain. The sky is spitting at me on the way there. The signs are confusing, GPS will lose signal nearby and if you are like me at all you will lap the place several times before finally figuring it out.There is a Family Mart outside the entrance with an ATM machine. I grab 900 baht, my self imposed limit for the day. I love to buy stuff and had I been in shopping mode there would have been many things I would have loved to take home with me. Namely one of the hand carved elephants, and a photo of myself in traditional Thai Dancing garb while seated on a throne. This was my favorite professional photo opp but there were many others to suit all kinds of tastes. Once I made it to the correct location I found the ticketing booth easy enough, there are signs in multiple languages directing visitors to buy a ticket prior to entrance. The entrance fee is 500 baht and there are many different ad for activities you can purchase at the gate or later while you are inside. I opted to just gain entrance to the attraction rather than spend much more

steps are anything but even. The wooden steps definitely add to the sense of adventure.
of my budget prior to going inside. The price for buying tickets online is 450 for adults - a 50 baht discount. The other activities include elephant trekking, horseback riding, speed boat transfer to various locations, horse carriage rides and rowing a boat to feed the sharks. The speedboat transport option is pretty cool and if I had money to burn or was trying to impress a date I would totally do it. You can travel by speedboat from the Sanctuary of Truth to the Garden Beach Resort, Dusit Resort,South Pattaya Pier, Pattaya Park Beach Resort, or the Grand Jomtien Hotel. Rates range from 1200 baht to 3000 baht depending on distance. That would be a really fun activity after spending most of the day on the grounds, checking out all the activities available, watching the afternoon dance at 15:30 and then taking a speedboat off to your next destination. For the ultimate day I think I would cruise by speedboat to the Pattaya Pier and board the Admirillica for a sunset pirate cruise, but I digress. There are also different activities for the kids, such as feeding horses, feeding fish, and a restaurant overlooking the living art that is the temple. A couple of rope bridges, and I mean the real deal. It was all I could do to stay off the stuff. I went on a cloudy crumby day and there were very few people around and the naughty devil on my right was trying to get me to do all kinds of unauthorized climbing but since I was researching for work I refrained. As you continue on your walk toward the temple itself there are plenty of places for killer selfies and group shots. There are professional photographers available for posed shots and rates are reasonable. Some say the 500 baht fee, which by the way is the same whether you are foreign or Thai, (children under 12 are half price), is exorbitant. I disagree, the delicacy of the carvings paired with the close proximity granted to visitors warrants the fee. They need to keep numbers controlled, imagine huge tour buses descending on the temple. If it were 50 baht, the place would get destroyed.
Once you get to the bottom there is a booth off to the right passing out hard hats, which are required apparel while on the site. At the booth there are also a number of guides to assist in many different languages or you have the option to just explore. Since I had already done extensive online research and knew the story of the temple I wanted to just explore on my own. As I approached the temple the first thing I noticed was the state of the carvings. Some were varnished, some were worn away and weather damaged, while others were new boards with nothing more than a drawing stenciled in or with just a number awaiting a stencil drawing to begin the process. Seeing the different stages right next to each other after reading about it really brings to life the never ending cycle this temple goes through just to be. It also causes every visit to be unique. There is no way the temple is ever the same twice for any visitor. The next thing I noticed was that even the platform foundation the temple is on is made of wood and rocks. There is no concrete. As I continued around admiring the artwork I was continually amazed at the amount of detail in the art work. When I got around the north side of the temple I was immediately torn on which way to go, I could continue out to the coast where there was a new looking, small building under construction or I could go up into the temple with the other tourists. Not wanting to miss anything I continued out to the point. In between the temple and the new little building where there was a tropical garden with little places to sneak a shady spot to sit on a sunny day. I got to the little building and there was a ladder leading up to the roof, where there was clearly a lot of work being done.I was alone and unsupervised with a ladder and a building overlooking the crashing sea. Tropical Storm Vamco was giving Pattaya Bay waves up to 3 meters and I climbed up on the wall to discover a stairway leading down to the sea from this lovely little building. The surf was crashing and there was no way I was going down there, but I caught some killer video that you can see on the Trader Facebook page. I then headed toward the temple itself to ascend the steps inside. There is an elevator lift encased in glass and carved with the same detail as everything else so the temple is accessible to all. Once inside I looked up in the center room at the carvings that stretch from floor to ceiling lit up with golden lights and it literally took my breath away. I had to keep looking up and the peace that washed over me while admiring this type of artwork on this scale was moving to say the least. If you have not made it to the Sanctuary of Truth yet, I strongly recommend that you do so, Do so right now, if not sooner. Don’t wait, just do it, go and enjoy it. I did.
The constant exposure to the elements causes the temple to be in a constant evolving state of repair. The wind, the water, the salt, and the sun, all four elements the temple is built to honour will be its very demise if the army of Thai carvers ever cease working. Although this near tragedy could cause some worry it actually fits with the feeling of this magnificent temple by the sea. As you explore there are signs explaining karma, and the cycle of life and the very temple itself is a living example of this cycle. The Naklua Kitchen that overlooks the building site is a great place to stop for a quick bite, a cup of tea, or a cigarette. There is no smoking on the site itself but there are plenty of spots cleared away. Just passed the restaurant is a little souvenir shop and a wooden staircase descending the hill through the jungle on the way down to the site of the carved wooden temple. Grab ahold of the rope railing and watch your step, as you can imagine the

a y a t t Pa BARGAIN HUNTER GOES GREEN………………………………………………… It is often the case that we ignore things that are close to us and never go to places of interest right on our doorstep. Most certainly that's the case for me, living as I have been in Pattaya for nearly 5 years now. The more exotic and famous Thai islands tend to make us forget that there is a lovely small Island only half an hour or so away from the pier at Bally Hi – Koh Larn. Go right now before it gets too busy take some time out to go explore this lovely small island and it's certainly a bargain day out . Go mid week when the ferries are not so packed as at weekends - for the bargain price of only 30 Baht per crossing and aim to get back mid afternoon, again to avoid a crowded trip. Its really great value and offers pleasant views and wonderful photo opportunities as you head out of Pattaya Bay. I hadn’t been to Koh Larn in years and when I did went once to the busiest beach and the second time by baht bus to the opposite side of the island from the ferry pier. This time however the family hired motorbikes for the day (expect to pay between 2-300 baht) and set off along the peaceful traffic free roads off on “the road less trod”. Certainly in a couple of years and flush with the success of tourists trade from Pattaya the island has developed and become noticeably prettier in its attempts to hold your attention – there are even hotels now for overnight stays. Of course the best reward for exploring the island is coming across a lovely unspoilt and relatively empty little beach or cove – especially if it has the added bonus of having a small bar and sun-loungers close at hand – we don’t want to get too far away from our creature comforts ! Most sun-loungers will only set you back 50 baht for the whole day if you wish and of course food brought to a sun lounger and eaten by the sea is just that bit more appetising. Have a break ! Have a mid week break but don’t forget the sun cream – especially if you’re on deck enjoying the view on the ferry home !

Pattaya International Ladies Club welcomes ladies from all over the world with a common goal:“a wish to create a social network with lots of friendly faces.”
In fact “lots of friendly faces” will be there to greet you whenever you attend a PILC function. Established in 1987 The Pattaya International Ladies Club now has a membership of over 200 women of all ages, from 34 countries, and all walks of life. With the growth of PILC has come the opportunity to offer a wide range of activities and social events, and the ability to raise funds for charitable causes.

There was an excellent turnout at the Amari hotel for PILC’s much anticipated Quiz Night. The ‘contestants’ started gathering at around 7pm and were soon tucking into the sumptuous buffet and partaking in the very palatable beer and wines provided by the Club. The buffet included a wide selection of ‘pub food’ including mini burgers and hotdogs, fish and chips, various pastas, satays and a range of other savouries and desserts. Very nice indeed! By 8pm, the 11 teams were seated in the Rim Suan room and were all focused on the night’s quizzing ahead. Most of us were very soon ‘unfocused’ as round one kicked-off with a very challenging batch of questions on ‘people and quotations’. To give you a flavour of just how difficult it was, three out of ten was a very respectable score! The questions stayed ‘tough’ throughout the evening, but we all persevered. The free-flowing drinks and the sparkling conversation helped to take the pressure off our collective brains. Following six (for some of us) tortuous rounds of questioning, the quiz ended with the runaway leaders, “International Rescue” ending up victorious. Many congratulations to these worthy winners. ‘Father Ra y’s’ team was a gallant second place, with the rest of us trailing in the distance. Despite the assault on our knowledge (or lack thereof), I think everybody agreed that it had been a wonderful evening of quizzing, eating, drinking, chatting and laughing. Our appreciation goes to Oliver for setting the questions, to Roy for taking on the thankless role of quizmaster, to Helle, Sue, and many others from PILC for taking the lead in arrangements and to the Amari for being such welcoming hosts. CHEESE AND WINE EVENING
Our new Year 12 IB students collaborated with St. Andrews staff and community to organise an event which brought together all the facets of our school community.
New parents along with our existing parents and staff were formally introduced to new staff members by Mr Harrison at an informal social gathering arranged and hosted by the IB students. The students learned to make a range of culinary masterpieces such as: a traditional Italian Bruschetta, delicious and moreish Paprika Chicken, an assortment of dips including Pea & Mint and Hummus as well as some very scrummy Sesame Honey Sausages. On the evening there was a cascade of compliments about our handmade, delectable array of finger foods that had left everyone’s mouths watering for more. As students, we faced a litany of challenges prior to the evening as many of us had never cooked before or were even able to recognize some of the ingredients! Fortunately we had the support of Ms Randall, Mr Thorp and Ms McGlasson who guided us through the process of event planning. Throughout the evening there was a spangled cast of performers including Jieun, Jenny, Gridj and Fun, all arranged by Mr Ramsay. The evening was a huge success! Thank you to Khun Manit, the faculty team and Khun Penny for supporting our endeavors. Thanks also to the Marriott, Rayong, and Tabasco Restaurant. We are looking forward to seeing next year’s Year 12 students’ efforts at trying to improve upon what was a fabulous evening of introductions!

urning into Pratumnak Road at the lights from Theppraya and then almost immediately left into Soi 6, I have often seen the imposing large grey building at the top on the right and wondered what was inside? Upon entering I was struck by just how large a concern “Surecell” is! Rather then just a common clinic with a single practitioner, Surecell proved to be a complete Medical Centre with a ground floor general practice for the everyday malaise and a multi-specialty center on the 3rd floor which can be reached by elevator. Here we find a treatment center that focusses on joint and muscle injuries, a cosmetic facility, a health check up center, a hyperbaric treatment and a vitamin drip and chelation department. It also has a sophisticated medical laboratory. My reason for visiting was to interview Surecell’s founder Dr Peter Lewis who visits his new medical center regularly and find out more about him and this company he founded with his Swiss partner Bernhard Schwyn. Dr Lewis, a general practitioner and sports injury specialist, certainly has a fascinating medical background beyond his 25 years experience in his own clinic in Melbourne, Australia. He has worked in post war disaster areas such as Zimbabwe and at the infamous 2004 tsunami disaster zone in Indonesia’s Banda Aceh province. Dr Lewis is also a martial arts trainer and a senior ring-side doctor, supervising world championship fights all over the globe. Dealing with all kind of battlefield, disaster and sports injuries, he became a true specialist in regenerative medicine, developing healing therapies that start with ones’ very own healing cells: platelets in our blood stream and stem cells in the fat that accumulates in our body. Today his Surecell Medical Group has 10 clinics in Australia, Thailand and Bangladesh with more to come. Our Pratumnak medical center however was his first venture outside of Australia, hence my obvious question: why Pattaya ? “As a martial art fan I frequently visited Thailand and especially Pattaya where I own an apartment on Pratumnak hill for almost 10 years now. Thai Massage
T
here are certain things that people think of when they hear the word Thailand. Some of the first things that come to my mind are beaches, coconuts, massage, fantastic food and of course smiles. After spending nearly four years in the kingdom I can see how all of these things are related and every one of them are good techniques for relaxing. One thing Thai people do right is the art of relaxation. Sipping coconut water from a hammock, whilst watching the sunset over the ocean certainly hits the mark when I think about a great way to relax. A luxuriant Thai massage also sounds like a fabulous way to relax and rejuvenate. Beyond relaxation true Thai massage is said to be medicinal in nature.
History of Thai Massage Thai massage dates back to at least 2500 years ago and could possibly go back as far as 5000 years. It is hard to know since the written records kept in the capital city of Ayutthaya burned during the Burmese invasion of 1767. What is widely agreed upon is the fact that Thai massage has been used for centuries as a healing art. It has been influenced by ancient Chinese as well as Hindu and Buddhist traditions. Some refer to Thai Massage as Thai Yoga Massage. Common people passed down the art of massage orally for generations, so even with the great burning of records by the Burmese the art has survived and continues to thrive today. The royal records that did survive were transferred to Wat Pho in Bangkok at transcribed onto stone tablets and these 60 drawings can still be viewed at Wat Pho today. Thai massage is essentially assisted yoga poses designed to keep the energies in the body flowing freely, keeping one in a healthy state of mind, body, and spirit.
Thai Massage in Kindergarten I was lucky enough to witness first hand, students in kindergarten and pre-k, learn traditional Thai massage techniques. Every morning from 8:00 - 8:30 the students gathered at the flagpole for the national anthem, morning stretches, songs, and dance. On Fridays massage was included in the activities. The children all dressed in Thai traditional dress on those days, and learned about traditional things and in their lines in the morning they would all give each other massages then turn around the lines and switch. Every single student and teacher was involved in this ritual. Even Thais that have had no formal training in the healing art of massage have been exposed to it through their very culture. Just like dance, art, and food massage is woven into the very fabric of the Thai culture and its people.

So let’s say you did not grow up in Thailand and you didn’t have the opportunity to teach and be taught by the students of the land. Where else would one learn the ancient art of Thai massage? L Atelier Bangkok’s hippest new restaurant that sadly didn’t live up to expectations. Well it was my birthday and we were spending the weekend in Bangkok, so I thought “What the heck. Let’s push the boat out and celebrate”, and after hearing great reports about L Atelier located on the 5th floor at Mahanakorn Cube on Narathiwas Ratchanakharin Road, Silom, we decided that was the place to be.

The restaurant is part of the famous chain of restaurants of the same name and run by no other than, the even more famous chef Joel Robuchon, the winner of more Michelin stars (25 in total) than any other chef in history. In 1989 Joel Robuchon was named as “Chef of the Century” by the Gault Millau guide, so to say I was a little excited about the evening was an

Which is fine if you are a couple or even three diners who can comfortably sit on a corner table. However we had a party of 6 so this wouldn’t work for us as. I mean how on earth could you have a conversation other than with the person immediately next to you? So we booked the private “Mahanakorn room” expecting special treatment but sadly we didn’t get it. Still we will get to that later. Four of our party wanted to try the tasting menu, whereas Pepsi and I opted to go A la Carte but this seemed too much for the ordering staff and we were told that either everyone had to have the tasting menu or everyone had to choose A la Carte. We couldn’t see how this made any sense but in the end all opted for A la Carte, which I am sure must have been more difficult for the kitchen and service staff. But considering the prices they charge and their reputation, we thought they should be able to manage the 7 different courses each that we ordered.

Once our extensive order of 42 dishes was taken the sommelier, wearing a silver grape pin ( A good sign) came to recommend the wine. Fair to say this was an impossible task considering how many different kinds of starters we chose, anyhow he did a great job and the wine was fantastic, even though he stuck to old world wines such as Rieslings from Germany. This I confess had me worrying that it might be my parent’s favorite as drunk every Christmas back in the UK but luckily the bottle of Mother’s beloved Blue Nun never materialised ! Our various appetiser courses arrived and apart from the Alaskan king crab and avocado dish, served with a grapefruit jelly (described as delicate but in fact more overpowering than delicate) everything was extremely high quality and presented as one would expect in an establishment of this caliber. It was now unfortunately that things starting to take a turn for the worst and the evening quickly went downhill.
The service was almost nonexistent, we (all six people) waited for 25 minutes with empty wine and even water glasses and without so much as a waiter putting his head in the room.Later we found out that apparently some Hi-so Thai movie star was dining at the bar and had the entire service staff at their beck and call, while we sat unattended and dehydrating at a critical rate. Well it proved enough for my good friend, who boldly marched into the bar area and had a quiet word in the managers ear. But fair play to the manager, he quickly recovered and more wine and fluids arrived in time for the main courses. My bold friend ordered the Bresse chicken which although looking delicious, was tough and dry and can only be described as “road kill”.What an utter waste of time and good money to import quality poultry all the way from France only to crucify the meat beyond recognition.We all agreed that the local road side Gai Baan was cooked with more loved and care than the poor specimen that landed on our table. Another disappointment was the Lobster salad “Monte Carlo” that one of our group ordered as an appetizer. This came in a bland mild curry mayonnaise at 1,300 THB , very similar to coronation chicken but with lobster, so quite an unimaginative dish for such establishment.However quite frankly what really insulted me, was the lobster main dish, which was identical in size to the appetizer but came with a pepper sauce that simply didn’t compliment the lobster in any way and at an exorbitant charge of 2,500 THB. That’s an increase of almost 50% for just a seriously wrong sauce! Both items by the way, have now both been removed from the menu so what does that tell you? However my main courses of black cod and Pyrenees rack of lamb were more than acceptable and my other friend ordered a Dover sole which was immaculately deboned and filleted at the table. I doubt there are many waiters in BKK that could perform such a task, so hats off on that point. Two of our female companions ordered different Wagyu beef dishes, both were inedible, once again the flavors overpowered by strange tasting sauces which ruined the otherwise good quality produce. When it came to dessert, frankly we had had enough of the place and just wanted to pay the bill, leave immediately and Never ever return, Never ever ! Upon hearing that we were about escape, the manager once again, tried his best to put things right, by offering us a selection of 8 different desserts to share from the sweet trolley, compliments of the house. Ok so being a pushover, my sweet tooth softened my heart a little and I decided to give the restaurant one final chance to redeem itself. But sadly, although the sweet trolley look enticing, each of the 8 different desserts on offer tasted processed and even a little like plastic in some cases.Sorry to say, we left the restaurant feeling extremely disappointed in the food and service, plus financially raped to boot.
Will I return? No certainly not. Even if they offer me a completely free dinner.
Will the restaurant be a success? Certainly it will, due to all the hype and notoriety of being “the place to be seen in BKK”. People, like sheep (or Sheepeople as we like to say) will herd themselves through the doors hoping to sit next to some TV personality whilst updating their facebook with images of the food they didn’t enjoy..
Will the restaurant improve? I would certainly imagine so and definitely if the “Culinary Grand Master” Joel Robuchon pays a surprise visit and finds his reputation being dragged through the mud.

Finally the legendary “Hooters” hits Bangkok. When the editor of Pattaya
Trader asked me to rush up to
BKK for my next assignment at
short notice, frankly I was a
little flustered at first but when the new “Hooters” in BKK, well I
she mentioned the venue was could hardly refuse, could I?
“Hooters” is conveniently based Sheraton Four Points hotel great place to stop in for a quick or as a meeting point to start a

Basically the day I visited this establishment, it was their soft opening and being punctual as always, I was probably within the first ten customers to walk in the door at 12 noon. The first thing I noticed was that the place was wall to wall with women, this may have been due to the fact that I received an elbow to the ribs from my “better half” as soon as we walked through the door. The next thing I noticed was that everything ran to clockwork, orders were taken quickly and professionally, repeated back to you so as to avoid mistakes and all the girls seemed generally happy and excited about their new job. A very refreshing change from some of the tired out, bored looking service staff you encounter regularly while dining in Bangkok, who seems to go out of their way to mess your order up. Why don’t they ever write your order down? Is ink and paper an expensive commodity these days? Anyhow we ordered two cocktails to start with from our waitress, the “Drop Dead Gorgeous” Khun Neera, “ouch” another elbow to the ribs was silently delivered and well received. We choose “The Hootie” and “The Hooties Margarita” both included good shots of alcohol, whilst still being light and pleasant enough to drink comfortably without overpowering the food.

HEALTH & WELLNESS The menu is typical American fare, seafood, steaks, ribs, etc, etc you can even build your own burger. I opted for the other thing (apart from the girls) Hooters is famous for: The chicken wings which come boneless, naked or breaded and available in 12 different flavors ranging from the mild lemon pepper, BBQ and Parmesan Garlic to the fiery Daytona, 911 and for a real mouth burning experience “The Triple Dog Dare”Even though I knew a vicious elbow attack was looming, I joked with the waitress that I fancied going “naked” and opted for the “Triple Dog Dare” to prove my manliness in the heat department. My “better half” exhausted from dishing out a barrage of brutal elbows strikes choose the “Shrimp Po Boy” which is basically 5 good size shrimps (that are big enough to be considered prawns in Europe) served in a hot dog bun with shredded lettuce and thousand island sauce, simply delicious. For dessert, they also have American favorites like pecan pie, apple pie, chocolate brownies and ice cream sundaes; sadly we were beat by the huge portions served, but vow to return to sample the pecan pie someday soon. Try reading the history of “Hooters” on the back page of the menu, some quite amazing figures here, pardon the pun.For instance did you know that “Hooters” have hundreds of restaurants in up to 30 different countries? And an even more impressing statistic, they employ over 300,000 “Hooters Girls” worldwide. The mind boggles. Last but by no means least; I have some truly great news for all “Pattaya Trader” readers as “Hooters” will be opening a new branch in Pattaya before Christmas this year.So if you haven’t the time to venture to Bangkok before Christmas, rest assured as “Hooters” is coming your way soon.

An Expat Cooking in Thailand
My friend Joshie, the ultimate foodie and I were talking about cuisines from around the world. He was giving me the rundown for the who’s who for national cuisine. For royalty the cuisines of choice are Chinese, French, and Indian. I excel at exactly none of these styles of cuisine. Then he says to me, and the great PEASANT cuisines of the world are of course, Italian, Mexican and Thai! This resonates with me as I know how to cook all three of the great peasant cuisines of the world. I am anything but an aristocrat. No wonder I get along so well in Thailand. I recall when I first arrived here and went to the market to buy local Thai ingredients. I found it was quite easy to duplicate many Italian and Mexican dishes with Thai ingredients. When I arrived here I knew absolutely nothing about Thai cuisine except that I had heard it was spicy. What I have since discovered is that I love it! The explosion of salt, bitter, sweet, sour, and spicy combined in so many dishes in different amounts is literally a party in my mouth. Food plays such a huge part in Thai culture. I learned how to say, “Have you eaten rice already?” (gin khao young?) before I learned the phrase “How are you?” (Sabai dee mai ka?). I lived in rural Thailand for two years in a small town called Suphan Buri. There were very few foreign nationals in Suphan and I learned Thai rather quickly, mostly inspired by my love of spicy food and my dislike of fried rice. When a Thai spots a farang and they can’t speak Thai you can almost guarantee they want to feed you kao paht mai pet (fried rice with no spice).
and beef (ngua) which I still to this day can not pronounce. We sampled Namtok Ngua (Waterfall Beef) and Panang Moo (Red Curry with Pork). We were also taught how to order spicy (pet), not spicy (mai pet), and very spicy (pet maak maak) and after learning that we learned the most important thing when ordering spicy food, how to order a bottle of water (nam pao) or beer (beir). Thank goodness beer and beir are so close you can order in English or Thai without issue.
The Induction Burner Once I moved from Koh Samui to a condo in Suphan Buri the first purchase I made was an induction hot plate. I had never used induction heat before and let me tell you, if you have never used induction heat to cook you will burn something the first time or two. The heat goes from cold to nuclear in about 5 seconds.
Learning the basics of Thai Cuisine I took a TEFL in Koh Samui and at the end of the course we got to take a food class. We learned the difference between kao swoy and kao neaw (jasmine rice versus sticky rice). We also learned the words for egg (kai), chicken (gai), pork (moo), shrimp (kung)

bowl and continue grinding until it is small enough to go through the sifter.
So the very first dish I mastered was Namtok Moo. I didn’t learn to make good curries until some months later when my Thai friends took me through it step by step. I learned how to make Green Curry with Chicken first or Gang Keow Wan Gai. “Gang” literally translates into a gang of ingredients, this dish is great because you can throw whatever you have in the fridge into it. Almost like a garbage can soup. It never turns out the same twice, but is always delicious. Be mindful when adding the curry paste, if you add too much this dish will be the hottest dish you will ever eat in Thailand.
Comfort Food
Once mastered there is no better way to cook, (except real fire) which is totally not allowed in a condo so induction is awesome. So I had a makeshift kitchen with my burner and my pan and after about a month I was able to figure out the heating so as not to charr my bacon or eggs. Now I needed to figure out how to prepare this wonderful peasant cuisine. I had already eaten Namtok Ngua and Panang Moo. I loved both equally, however just by looking at them I felt the Namtok would be an easier undertaking to cook for the first time.
Another staple dish I learned to make was Pahd Krapow Moo Kai Dow. Stir fried pork with holy basil and a fried egg over jasmine rice. This dish has absolutely become comfort food for me. There are certain dishes like spaghetti, and chicken burritos that are my staple comfort foods, and Pahd Krapow Moo has become my Thai staple comfort food. This dish is so simple and quick. I have learned to cook it as a single portion or in huge batches and my
The first Thai Recipe I learned
I set about finding a recipe, I Googled both “Namtok Moo” and “Waterfall Pork”. Each yielded several results. I went through all the recipes posted and then figured out which ingredients were critical to the dish and the amounts I wanted for my spicy level. I have been known to cook Thai food so hot Thai people have a hard time consuming it. I can proudly say I can eat the spiciest of foods including Som Tam with 25 chiles so it is dripping bloody red, YES PLEASE! I think in Namtok Moo and Larb Moo my all time favorite ingredient is the toasted rice. I had none of this magical ingredient, however luckily several of the recipes I looked up had instructions for making it from scratch. It is so easy, and such a great workout I will never ever buy it. All you have to do is put dry uncooked rice into a dry skillet on low heat and brown it to a toasty golden brown. Then transfer the rice to a mortar and pestle and grind it down to dust. I made my sister do this in the US and I had her squat down like a traditional Thai would do, and once her legs were screaming at her she stood up, asked to put it on the counter, I told her go ahead and first words out of her mouth were, “Whoa, I had more leverage on the ground!” and back down she went! It was the most fantastic thing I have ever seen in the kitchen. The final step is to sift the dust into a separate
favorite part is using the holy basil that grows right in my yard. I love adding mushrooms to it, and I always make it very spicy.
Cooking with Kindergartners Thai teachers taught me how to make fried rice that is worthy. We discovered that through fusing my American foods with Thai rice we could make Kao Paht Americana and it is delicious. The kids loved it. The key ingredient in my special fried rice. BACON! Cuz bacon makes everything better. This was an enormous hit. When you add mushrooms, baby corn, carrots, cabbage, paak boong (morning glory) krapow leaves, green onion, cilantro, tomato and limes and an egg or two you really have the best fried rice in the world. How can 100 kindergartners be wrong? Peasant food or no I have become a food snob. After years of eating nothing but fresh food from Thai markets I can no longer eat anything that has ever been in a can as it now tastes to me like I am licking tin, and I will never be able to eat calrose rice again. Jasmine rice is the only way to go. The fragrance alone of the Jasmine rice cooking now smells like home to me. Thai food is wonderful, flavorful, and I can understand now why Thai people do not like many cuisines that are not there own. What I have discovered though is even the most rural Thais who will never leave the Kingdom can still enjoy a good Italian or Mexican dish if there is not too much cheese and when it is made a bit spicy. Greatness knows greatness. Bon Appetite !

Muay Thai is considered the most effective stand up martial art today. With the constantly growing number of MMA gyms there's an increase in the interest of learning Muay Thai, since it's an essential part of the stand up game. It is simply amazing to see how many MMA practitioners seek out the roots of learning Muay Thai in Thailand. Many think coming to Thailand will teach them to "just" learn how to kick and punch. As any experienced fighter will tell you that's just barely scratching the surface. There's so much more to Muay Thai, which many people have now experienced in the home and birthplace of the ancient art. MMA on the other hand is far away from from being an artform in itself and has merely borrowed techniques from the ancient Thai martial art. Don't get me wrong MMA is complete as a fighting sport, standup and ground game combined.

Authentic, traditional, really beautiful Muay Thai can only be enjoyed in Thailand by those fortunate enough to be able to spectate in the real Muay Thai stadiums. In MMA there's a stare down before the fight, to intimidate the opponent often in a disrespectful way, complete with trash talk etc. Personally I dislike it as it’s not sportsman like behavior in my book. In stark contrast Muay Thai is the exact opposite, you pay tribute to your gym and show respect for everyone including your opponent. A traditional "dance" or ceremony begins wai Kru /'ram muay before each fight by both combatants to show respect and honor for your gym and

It also has roots in the ancient kingdom as well as buddhist beliefs. Muay Thai used to be exclusively for fighters only, often the underprivileged had no option but to fight to get a meal ticket, Muay Thai gyms did not charge their students as you would train to fight and then the day of the fight would be the payday for both gym and fighter alike.Now you can get memberships weekly, monthly, yearly and it's acceptable to use Muay Thai training as a way to stay fit and learn self defense at the same time, it's now "clean" and ok to practise Muay Thai for everyone no matter what your social status.It has actually become a hip thing and a status symbol to have a memberships at a gym. Since it's now an accepted sport my hope is that more people will pick up some gloves and try to train at a gym nearby. It’s great because now everyone can practise Muay Thai regardless of social status and today there are many gyms with " fitness" classes based on Muay Tthai. Yes in many gyms it's watered down, so that everyone can enjoy the basics and still get a good workout. Muay Thai today is a way to stay fit, whilst learning a great Martial art and self defense at the same time. If you haven't tried it yet, you should.

i Folks, I left last month’s article half way through a 9 day fishing holiday in Phuket. My fishing buddy and I after 6 days of bad weather finally got on a boat that cost 1,200 Bht each. We did not know but it was fish, swim, lunch and fish on the drift back. It was a boat for the tourists and they had a good time.
So we booked up for the next day on our own charter. Frank speaks Thai excellently and he had no problem in telling the owner what we wanted to do and how. It started badly as the flooding held up the captain and the prime time in the morning was slipping away. The first 6 days waves over 3 metres had stopped boats going out and this day as we headed out the swell was over 2 metres. As we cleared the second island (30 mins out) the swell picked up to 3 metres with the odd 4 metre. The idea was to motor out fast (over 5 knts) and when the captain got to his spot we would slow to 4 knots as we would we trolling with light lines, one rod a piece. As we got close to the far island the deck hand said we would go back to a grouper and snapper spot close to the second island. This was ok as the lines were airborne a lot of the time and no bites. When we got to the spot I looked at the sheltered bay and saw loads of pleasure boats. We had ended up on another “tourist trip” ! We got a couple of 1lb snappers straight away and then it was quiet. Catching red sand fish (bpla sai deang) told me we were over sand and not coral. You do not lose any bottom gear but the best fishing is over and around coral. Frank asked the captain if we could go back to trolling as the sea looked like calming down, “we have used enough gas”. This was confirmed when he went for a nap and left the deck hand to move the boat. The last spot we ended up at produced small fish, fish like horse mackerel. The deck hand let slip that these fish were worth 180 Bht a kilo as oppose to tuna which was worth 30 Bht a kilo. That was the reason we were there! After waiting 6 days to get out we were going to go fishing the last three days but I said to Frank that I was not going to pay another 4,500 Bht when I had caught more fish close to Koh Larn. So we spent the last day trying to hunt down a decent boat around Chalong Bay where most of the fishing boats were. I did not like Patong where we stayed or the rest of Phuket. We will be back though, the chance of getting a 1kg plus tuna on 6 lb line is one of my goals. The next trip we will stay at Chalong Bay, go visit the local tackle shops and talk to longtail boat captains. It took a while to get what I wanted here in Pattaya and it will take a while to crack Phuket. Ah to be back home in Pattaya / Koh Larn, great to be back on my own boat. The last couple of years I have been catching small queen fish by trolling. Each year they have been getting bigger, 4 or 5 inches long, now I am getting a lot around the 11 inch mark. These guys are fun to catch, sometimes they jump like their parents do. And they are getting chunky, just one fish is a good meal. The one thing about small queens is they have toxic dorsal spines, they crisscross just behind the head. Not a day ender but painful, and they do wriggle when you try to remove the hook. I catch them using the same trolling tactic and tackle (6lb fluorocarbon to 4 lb braid) as I use for horse mackerel. The last trip out Frank and I got 46 queens (bpla salat) south of Koh Krok and 5 horse mackerel (bpla thoo) south of monkey beach on Koh Larn. Life is full of suprises, I went to pull up the anchor and I saw a small yellow green snake go into my engine. When I went to weigh anchor after motoring it out the snake had turned around and was resting on the fuel line. I used a stick to knock the engine out of gear, pulled up the anchor. I was too late with the camera, he was gone. I thought the snake had gone back to the sea, but the next day while trolling for squid near Naban I felt something touch my hand. As I flicked up my hand I turned around and saw the snake fall into the sea!

hailand’s fast emerging racing sensation, Pasin Lathouras, recently scored a huge win in the “24 Hours of Spa”, one of the world’s most prestigious endurance motor races. That was one of the biggest triumphs by a Thai driver for a long time and put the country firmly on the international motorsport map.
Just a few weeks after that dramatic win, Pasin was right back where it all started: Pattaya’s Bira International Circuit, to meet the media and pay respects to the inspiration for all Thai drivers, Prince Bira. The 67th edition of the world-famous 24 Hours of Spa turned out to be one of the toughest ever and the competitors were lashed by rain from the moment they lined up on the grid. Treacherous weather was a theme of this year’s race and in the end there were no less than ten Safety Car periods. Pasin Lathouras, sharing a Ferrari 458 Italia GT3 with Italians Alessandro Pier Guidi and Gianmaria Bruni as well as Belgian journalist-racer Stéphane Lémeret, battled non-stop all the way to the checkered flag. Combined with some really good pitwork from his AF Corse team and a car that ran reliably under extreme pressure they were able to pull off a stunning victory in the highly competitive Pro-Am class. “Winning the Spa 24 Hours was an amazing experience, my teammates and I pushed and pushed all race, the rain kept coming down and early on we often had no idea where we were in the classification as the Safety Car kept coming in and out,” Pasin recalled in the hot, dry, and much quieter, confines of Bira Circuit where he also displayed the majestic winners’ trophy. In racing everyone plays a key part in putting a win together. “The team did an amazing job to turn the car around so quickly at every pitstop and really every second we gained helped an awful lot,” he added. “Spa is an awesome track, it lives up to the legend, I certainly love the highspeed tracks but racing at night in fog is something else, something to experience and learn from.” Spa-Francorchamps has a real resonance in motorsport. Seven kilomteres long and with 20 corners, it’s one of the world’s most demanding racetracks with section names, such as Eau Rouge and Raidillon, that have entered racing folk law. It’s a track that sorts out the men from the boys, just to lap it bang on the pace is only for the bravest drivers, and that’s before you even think of winning – or just surviving to reach the finish.

For Pasin it represented his biggest career win to date as well as one of the most important by a Thai driver in living memory. He’s still just 21-years-old ! To further his racing career and compete in Europe, Pasin switched his university studies from Bangkok to London at the beginning of last year, so he’s been away from Bira Circuit for quite sometime. But this is where his career started and quickly began to blossom, on the kart track, as a very raw child. “It’s great to be back, Bira is where it all began for me, coming here to learn to race in karts with my Dad,” he said. “I won the 6-hour kart endurance race here very early on, in 2007, so that’s eight years ago now, and that really cemented my love for racing and the desire to succeed and become one of the best.” As well as his winning spree in karts, Pasin also drove here on the main circuit in 2013 when he raced a Ferrari 458 GT3 in Thailand Super Series, taking a victory and breaking the official track record. “I spent about four years racing karts and learning so I was continually here, I had many happy times at the Bira kart track and many successes,” he noted. “I also spent a year in Super Car and raced here on the main track, but that’s my only time on the circuit, I hope to be back though in the future. But it was a good year as I got a win here and set a new lap record.”
Clearly he loves cars and loves to race. He has the quiet confidence and calm demeanour of a successful sports ‘pro’. The motivation to be amongst the best is there, as is the quiet but ruthless dedication needed to succeed. Swapping his life in Bangkok to go to Europe and try his hand against the world’s best drivers, to be the little fish in the biggest motorsport pond, demonstrates that he’s ready to give everything. He also admits that flying the flag for his country drives him on, something that’s been a constant since his days in karting when he was chosen to represent Thailand in the world finals on several occasions. “The support I have been getting from people in Thailand has always been amazing and it keeps helping to push me on.” The setting is perfect too. Prince Bira towers above Thai motorsport as a shining example of what can be achieved if you really give it everything and in the long leafy shadows of the circuit that bears his name, Pasin is following in mighty footsteps. It’s a very tough call, but so far he’s on track.
With a victory at Spa now under his belt Pasin has proved, not least to himself, that he can race with the best in the world in the biggest endurance races. Although he’s still a youngster with an awful lot more to learn and still needs to gain a lot more experience – he's clearly capable of reaching the top and fulfilling his dreams. “[Winning the Spa 24 Hours was] certainly the high point of my career so far and it really confirms to me that I can keep pushing on towards the top, aim for Le Mans in two or three years, and most importantly that I can successfully fly the flag for Thailand,” Pasin says.

However, while he’s starting to work his way up the racing ladder, Jakraphan has a track on his CV that the majority of drivers here don’t have on theirs, that’s Silverstone Circuit, one of the world’s most famous and historic grand prix venues. And his ‘road’ to Silverstone was also a slightly unusual one too – that’s because he was one of the five finalists last year in the Thai division of the ‘Nissan GT Academy’. The Nissan GT Academy is a driver discovery and development programme, which is a collaboration between the carmaker and the popular ‘Grand Turismo’ computer game. The ubiquitous simulators have been seen around Thailand at events such as the Bangkok Motor Show where thousands of hopefuls have tried to set a laptime that would see them shortlisted for the finals. The first stage consisted of an online qualification process and that sent the winners to national finals where they were put through their paces as drivers with not just skill but fitness and other metrics being measured before the top entrants from across Europe, North America, Asia and other international regions were sent to a ‘Race Camp’ at Silverstone. For Jakraphan being one of the Nissan GT Academy finalists was a good chance to progress his career upwards. “I first started racing around four years ago, starting from club race events,” he said. “In 2014 I have a good chance in the Nissan GT Academy event in Thailand and I’m one in five representatives from Thailand to go to Silverstone circuit for [the] international race camp reality event.” Last year he also drove the Brio amaze in some club racing events with good results and that, together with the additional training from the Nissan GT Academy, set him up well to join Super Eco. And it seems to be paying off too, Jakraphan has nailed down three third place finishes from the first four Super Eco races of the year – already he’s established himself as one of the front-runners in the highly competitive and fast growing arena of ‘eco’ car racing.

It was March of 2012, I was to be leaving for Thailand on the 1st of April. I had never had a passport before and my first one arrived a whopping 8 days before departure. I really didn’t even know where Thailand was on the map. I didn’t bother to look either until I had been in Samui for a few weeks and felt an earthquake and finally decided it would be a good idea to find out where I was. Turns out I was close enough to feel a huge earthquake that happened off the coast of Indonesia. Anyway just before I was leaving I chatted with a coworker at my firm who had lived for six years in the town of Phuket. I will always remember that conversation. He asked me what my mode of transportation was going to be in Thailand and I told him I had planned on walking or using public transport. He laughed and said I would be doing one of two things. Riding a motorbike like everyone else, or using a Tuk Tuk. He followed up by asking if I’d ever ridden a scooter before. Nope, never in my life. Then I asked what else did you say? He replied with, “I said Tuk Tuk.” Then I followed up with, “All Right Brandon, what on earth is a Tuk Tuk?” He proceeded to tell me about this crossbreed vehicle that was half motorbike and half car. Or more like a trailer being pulled by a motorbike. I kind of laughed it off and didn’t really think much more about it. When I arrived in Samui I ended up using a motorbike, and really didn’t see many of these mythical Tuk Tuks running around. However that was all about to change drastically once I accepted my first teaching position in the country. The town I moved to called Suphan Buri is about 100 km north of Bangkok. It is a rice farming suburb with about 50,000 people but very spread out. There is not a lot of traffic, save two times a day, when school begins and when it lets out. All the schools for the town are right near each other so everyone in the world is trying to get to the same place at the same time, it is pure Thai chaos. In between the cars, and the motorbikes are tuk tuks, some are filled with a handful of teachers on their way to work, some have students, and some have families just trying to get where they need to go. There are virtually no taxis in town, the tuk tuk drivers do everything a traditional taxi would do, short of taking you to the airport, they will take you to the bus station and stick you on a van for that. One great thing about a good tuk tuk driver is that if you have a need for transportation they will help you work it out. You tell them where you need to go and they will find a way. I had to get to a town about 30 km away to say goodbye to a friend of mine. It was late, buses were not running, no taxis, the baht buses didn’t go that far but I rode the whole way in the back of a tuk tuk for 500 baht. On the open road, in the rain, and we did it! Tuk tuks make great designated drivers and in every small town you will need the phone number of a day time driver and a night time driver. You call them, and they will pick you up. You will find them near bus stations and also near large big box retailers like Robinsons Mall, Big C, and Tesco Lotus. I had my own motor scooter but when I made my monthly shopping trip to the Tesco I used a Tuk Tuk to get my purchases home. One time it was a bicycle for my neighbors son and for 50 baht I had instant delivery of the gift. I used to visit Ayutthaya every 90 days for my address check in. When I got there I noticed the tuk tuks look amphibious. So

cool are those boats??? No they are not, although I did believe it the first trip. I found out later that they are like that there because Ayutthaya used to be known as the Venice of the East and to keep the water culture alive they made the tuk tuks into little boat looking vehicles. You have to see them!
Well after two years in the country, and a few trips to Bangkok where I used tuk tuks to get myself and my luggage to the train station on time when a car would have been impossible I find myself in Pattaya and missing the tuk tuks. Where have all my Tuk Tuks gone? They just are not used in Pattaya. Too much fast moving traffic maybe ? There are a few hotels that use them as courtesy vehicles now such as The Mercure that ferries guests from the hotel just behind The Avenue to Walking Street but you just don’t see them very often and I think it’s a shame. I think they are a fantastic way to get around.

A Network of Eyes Be My Eyes is an app for iOS that connects blind people with volunteer helpers from around the world linking via live video chat. Download this app from it’s official website http://www.bemyeyes.org/ and you can start helping blind people right from this moment. Developed in Copenhagen by an energetic group of entrepreneurs lead by Hans Jørgen Wiberg, who is visually impaired himself. Hans came up with the idea for an application that promises to resolve most of the hurdles visually impaired people have to face everyday. Be my eyes is a non-profit organization, the project is mainly crowd-funded, the software is open source and built entirely on the idealistic concept that people (normal, everyday people from all over the world) want to cooperate for no other reason than to help one-another.
Just like that, this project embodies what the internet should really be about:
Creating the perfect environment for the infinite development of an idea or concept that helps us remember that we are humans, empathetic, creative beings that collaborate in order to fix meaningful issues in the world. Notice the fact that no one is mentioning money or profits and that my friends, is true development.

From the live video the volunteer can help the blind person by answering the question they need answered. Why is the iPhone the main platform for this App? The iPhone has a feature called VoiceOver which enables people with impaired vision to use an iPhone with synthetic speech and touch-based interface. iPhone has therefore been perceived as one of the best assisting devices for the visually impaired. It has been widely used as a GPS, to get information about transportation, receive news and much, more.

HOW TO HIDE BUTT SWEAT
S
weating while riding your bike is an unavoidable thing. Butt sweat, in particular, can be especially problematic. Because your seat comes into contact with your rear end, there is a lack of air flow to your tush, meaning sweat has a hard time evaporating. Instead, it tends to soak into whatever you are wearing, potentially creating a fashion disaster. Unfortunately (or fortunately, depending on your point of view), looking like you peed your pants in public tends to be frowned upon. As butt sweat tends to be both unavoidable while riding a bike and socially unacceptable when you get off of it, I will give you some tips and tricks to help you with this problem. First of all: While I’m typically a fan of riding in whatever you happen to be wearing, for longer rides it makes sense to have a more thought out outfit. Avoid wearing plaincolored cotton bottoms on your bike, like jeans. Cotton soaks up the sweat and holds it. It takes a long time for jeans and other cotton clothes to dry in comparison to other types of fabrics. Also, plain colors make the color change from wet to not wet very obvious. Method 1: Get a pair of workout specific bottoms made of sweat wicking material. The wicking action will help move the sweat away from your butt to allow it to evaporate more easily. Black is also the best color to get, in my opinion, as it is difficult to see a color change from wet to not wet. Alternatively, you could also get a pair of padded bike shorts. The chamois padding inside is designed to soak up the sweat caused from riding. Method 2: Get a colorful small print size patterned bottom. The pattern will hide the boundary between wet and not wet, and the colors are more fun to wear than black. Colorful bottoms also hide dirt better than solid colors, so you can get away with wearing them more times between washes. Other tips: A sweaty butt (or any other place) is more than just a fashion offense: it can be a haven for bacteria, and cause you some nasty problems with infections. Powder is your friend. Powder up before you head out and whenever you feel like you are getting excessively swampy. A dusting anywhere skin touches skin is a great idea: Butt crack, butt/thigh fold, under the boobs, in the armpits. I actually use mentholated powder here in Thailand. It is cooling and feels very nice. I’m not sure how easy it is to find other places in the world, so the picture to the right is of another highly recommended (from other bikers) brand for the purpose. If you are going to be taking a break for 30 minutes or more, I suggest getting out of your sweaty bottoms as quickly as possible and letting them dry out in the sun. A loose flowing skirt pulled over your riding pants provides the modesty you need to slip them off if there is no bathroom to change in. If possible, rinse the area off or use a baby wipe to get some of the sweat and salt off before powdering up again. Going commando allows things to air out better also, and should be seriously considered if you are comfortable doing so. Having a sweaty butt can be a nuisance, but it can be managed with the right kind of bottoms and sanitary techniques. You’re Pudding Me On
A
pparently, October is the month to talk about tradition. It is a subject I know very little about so I decided to combine it with a subject I know a lot about; food. In particular, traditional English food. The first ‘traditional’ English food that came to mind was Yorkshire Pudding, but is it really a pudding and did it really originate in Yorkshire? The answer to the first part of the question is “no”. It is not a “pudding”. A “pudding” is a dessert served after the main meal, usually with custard, ice cream or whipped cream. Christmas Pudding and Treacle Pudding are two fine examples. As for the second part of the question, after conducting exhaustive research I can tell you that Yorkshire Pudding was actually invented by the Scots. This dates back to 1342 when the Scottish clan McMorrow was soundly beaten by a numerically inferior English militia at the infamous and bloody Battle of Mrs Miggins Pie Shop. The Scottish leader, Caspian McMorrow, was captured and paraded naked before a bevy of English prostitutes who mocked him for having such a small male appendage. Apparently he died of shame in an English prison some days later. It appeared that after the defeat of Caspian McMorrow, there was nothing to stop the English from pillaging the Highlands and raping Scottish women and sheep. The Scots decided to try and poison the English by feeding them haggis. This was not successful because, after only a few hundred dysentery casualties, the English commanders forbade their men from eating anything Scottish. This is when the clan leaders sought international help to devise a sneaky way to poison the English with their own food. They first came up with cold, greasy ‘English’ pork pies but it wasn’t long before their French advisers calculated it would take 438 pork pies to kill the average Englishman. They said the average English stomach was so full of crap already they had built up immunity. Interestingly, the Scots used Irish chemists jointly funded by the Welsh and the French to produce the first “Pudding”. It was then field-tested on three English prisoners of war. After three days of being fed nothing but the ‘pudding’, the English prisoners committed suicide. The Scots then went into mass production and, in a brilliant display of misleading advertising, called the product “Yorkshire Pudding” to fool the English. Containing 90% saturated fats and 10% cholesterol, the canny Scots saw “Yorkshire Pudding” as a way to kill their English enemies by giving them heart disease. Although they didn’t know it at the time, the scientific name is 1,3,6-triglycol-2,4metafooktheenglishbenzoic acid, which means it is only o n e molecule away from being plastic. But there is another famous English ‘pudding’ that is not really a ‘pudding’. Black Pudding is made from pork blood and oatmeal. It is often grilled, fried, baked or boiled in a skin and can be served

hot or cold. Today, Black Pudding is part of a traditional full breakfast in much of the UK and Ireland in spite of being described by one critic as “the Marmite of the meat counter – dark, salty and you either love it or hate it.” Not surprisingly, Black Pudding was also invented by the Scots, albeit accidentally. During the 1400’s, the English occupation of Scotland was less than benevolent. Armed English troops would scour the countryside demanding “taxes” from the locals and, since the Scots were very loathe to part with any money, food was often confiscated instead. This meant that food became scarce under English rule. One day a Highland housewife slaughtered a pig for the family dinner and some of its blood dripped into her oatmeal. Rather than waste her precious oatmeal, she got the idea to add more blood, pack it in the pig’s intestine and boil it. When her husband came back from his day of claymore-rattling, she cut up the sausage she had made and asked him to taste it. His reaction was immediate as he spat it across the room. “Wha’ ya doon’ woman? Tryin’ ta poison me?” She then told him what had happened and a broad smile appeared upon his face. “Can ye make more o’ this, woman?” he asked. “Aye, but I thou’ you dinna like it.” “I don’, but its nay for me. We’ll feed it to the English!” Word spread quickly through the Highlands and glens. Pig’s blood was cheap and plentiful, as was oatmeal. Every household made a stockpile of the black sausage so when the English soldiers came, that was all they would see. The real food was kept well hidden. The Scots even called this new food “pudding” because they knew Englishmen were very fond of puddings. Finally, how did that other famous English delicacy, “mushy peas”, enter into all of this fascinating history? I am glad you asked. Interestingly enough, “mushy peas” did not come into existence until about 100 years later. In 1572 the Scottish border was roughly where it is today - just south of Grimsby - and the Scottish insurrection was still far from over. Produce from the south of England had to be transported north to feed the English army who, by now, were totally forbidden from eating Scottish food. Green peas were grown in Dorrrrset and packed loosely in barrels to ship to the English troops. Slave Welsh labour was used for this process and, since the Welsh slaves hated their masters and sympathised with the oppressed Scots, before the lid was placed on the barrels, they would jump in the barrels with bare feet and crush the peas just like crushing grapes. (There is evidence to suggest they did other things as well but we won’t go into that.) The lid was then sealed and the English were none the wiser. When the peas reached their destination, the English officers were furious but were told, convincingly, that the peas had become “mushed” because of the long bumpy road journey. In order to get the troops to eat the peas, they were given the name “mushy peas” and told it was a new dietary supplement. The name caught on and the soldiers used them on their greasy pork pies.
