Black Pudding & Scrambled Egg

Method Slice the black pudding to the required thickness then gently pan fry until crispy on both sides

Ingredients •

25g Black Pudding

For the poached egg, bring the water to the boil and then turn to simmer; • with the vinegar and salt, stir the water to create a vortex and gently place • the shelled egg into the middle.

Poach the egg for 2 ½ minutes or until the white is firm enough to remove • from the pan.

Sausage & Tomatoes

Method Pan fry the sausages until cooked, golden brown then heat the tomatoes and serve together.

Creamed Mushrooms

Method Put the butter into a large hot pan and as soon as it starts to melt add a drizzle of oil, the mushrooms, sliced onion and a good pinch of salt and pepper. Stir everything around and cook for about 8 minutes, or the mushrooms are starting to caramelise and take on colour. Add the chopped parsley, then pour in the cream. Continue to stir and cook for another minute, until the cream has come to the boil, then turn down the heat and simmer for a minute before removing from the heat.

Ingredients • 2 rashers of bacon Method Grill the bacon until cooked

50g tinned tomatoes


Poached Egg on Toast

Method First bring water in a saucepan to almost boiling. If the water is already boiling, lower the heat until it is no longer boiling. At this point, you can add one or two teaspoons of vinegar to the water, if you want. The vinegar will help the egg whites to congeal more easily. We use seasoned rice vinegar. Working with the eggs one by one, crack an egg into a small cup, then place the cup near the surface of the hot water and gently drop the egg into the water. With a spoon, nudge the egg whites closer to their yolks. This will help the egg whites hold together. Turn off the heat. Cover. Let sit for 4 minutes, until the egg whites are cooked.

Method Grill the bacon until cooked

Scrambled Egg

Method Lightly whisk the eggs, cream and a pinch of salt together until all the ingredients are just combined and the mixture has one consistency. Heat a small non-stick frying pan for a minute or so, then add the butter and let it melt. Don't allow the butter to brown or it will discolour the eggs. Pour in the egg mixture and let it sit, without stirring, for 20 seconds. Stir with a wooden spoon, lifting and folding it over from the bottom of the pan. Let it sit for another 10 seconds then stir and fold again. Ingredients: Repeat until the eggs are softly set and slightly runny in places, • 2 large free range eggs then remove from the heat and leave for a few seconds to finish • 6 tbsp single cream or full cooking. Give a final stir and serve the velvety scramble without cream milk delay.
