HOW DO ROAST DEGREE AND ORIGIN AFFECT THE The flavor of each coffee is dependent upon the origin characteristics in the roast degree of each coffee. This combination is used to determine the flavor category of each coffee: “Light and Subtle”, “Rich and Smooth” and ‘”Dark and .”Distinctive While the origin characteristic influences the look, taste, and smell of the coffee, the roast degree also influences the final product. As coffee is roasted darker, its origin characteristics become muted. As the roast is progressing the heat accelerates intensifying the flavor by creating caramelization in the bean, which adds a new dimension to the flavor and aroma, not present during the early stages of the roast. While light and medium roasted coffees are more moderate in flavor, and maintain much of the origin characteristics, a medium dark-todark roast coffee is very intense and loses much of the origin characteristics .during the roasting process

TEA & Coffee TEA Our teas are carefully graded for consistent leaf size. The purpose of this is not only to create teas that have a uniform leaf density and appearance, but more importantly to separate larger from smaller particles of leaf since they will extract a different rates when brewed. Grading is often assumed to mean grading for quality, but quality of determined by the taste of the tea, not its appearance. However, the leaf shape and size of the finished tea have much to do with the characteristics flavor of the resulting cup. This is because leaves rolled in a given way adopt a particular flavor that differs from the same leaves rolled in a different fashion. It can also be safely said that the more broken the leaf is, the faster brewing cup, and typically the more body and pungency the tea will have.
Coffee “Fresh Roasts Daily” has been our motto since our founder’s roasted coffee in the back of our first store in Norwalk, California. We roast our coffee daily in small batches at our roasting plants. Our master roaster conducts the process manually, ensuring that each batch is roasted to perfection. We then the fresh roasted coffee to our stores, ensuring the freshest, most delicious coffee possible for you.
