TALENT SHOW

WALRUS RODEO IS A NEW, CHEF-DRIVEN HOT SPOT FOR MIAMI’S IN-CROWD

Whimsically titled, stylish newcomer Walrus Rodeo proves you can never have too many great cooks in the kitchen. Chefs and co-owners Luciana Giangrandi and Alex Meyer (of Michelin-starred Boia De fame) are joined by rising star chef Jeff Maxfield, who previously worked alongside Brad Kilgore at his award-winning concepts. Together, they deliver a fabulous shared-plate destination, rooted in the magic of a central wood-fire oven and the possibilities of the gastronomic ingenuity that lies therein.

Start with the charbroiled oysters, a half-dozen fresh Island Creeks on the half-shell, bubbling with Franciacorta cream, jalapeño hot sauce, and brown butter brioche crumble. Next, indulge in the tender potato gnocchi, seared to perfection, topped with a creamy reduction featuring celery root and charred leeks, and then blanketed in black truffle shavings. Alternatively, discover the mustard green lasagna, layered with stracchino bechamel, lamb ragu, and grana padano. Finish with the one—and only—dessert on the menu: Bust a Rhyme, a heaping plate of graham churros, wood-fired birch marshmallow, and Oaxacan chocolate drizzle. (walrusrodeo.com) —P.R.
