Even for those who have long prioritized healthy living, the last year has invited a deeper dive into the more complex folds of well-being. Is it enough to go for a daily run, maintain a sensible diet, and make the occasional attempt to meditate? Or is a lifestyle reset warranted? As so many of us rethink what it means to live well and with purpose, it helps to be inspired by the people who have figured it out. Among those are Jennifer and Omer Horev, owners of the Pura Vida healthconscious cafés that have been sprouting across South Florida. The Horevs eat healthfully around the clock but believe strongly that a fortifying breakfast with colorful, nutrient-dense fare is the key to wellness and energy. Jennifer and Omer invited us into their Miami Beach home to illustrate this concept. Jennifer set a welcoming table with spring florals and a fresh green and white motif, while Omer prepared the delicacies their cafés have come to be known for. Some of my favorites: avocado smash toast, chia seed parfaits with granola, and a veggie-packed, kaleidoscopic Israeli salad. See the full spread and read about the Horevs’ philosophy on food and wellness in “Breakfast Bash” on page 56. In this issue, we also contemplate the slow movement and the merits of simplifying and living a truly mindful and sustainable life. From food to fashion and from beauty to home organization, we offer powerful tools to bring more Zen into your days in “Life in the Slow Lane” (page 64). Living well can also mean dressing up and dining out, particularly in a year when restaurants have suffered. In “Feast Your Eyes” (page 70), our model, South Florida influencer Bettina Anderson, visits four restaurants for a stylish takeover. Who wouldn’t want to wear designer dresses while ladling sauce on a pizza or crooning with the piano man? Fashion has never been so much fun. Life lesson: Showing up, leading by example, and believing in yourself is the hustle. The only way you are guaranteed to lose is by giving up or not showing up. Passion, exercise, faith, and believing in what you are doing is everything. The way you do anything is the way you do everything. All I want for Mother’s Day: Spending time with my kids and a card.

The feeling of walking down the toy aisle and seeing something I created still gives me adrenaline. My role model: My mother is truly a combination of strength and compassion. Resilience is her superpower. How I keep a work/life balance: Quality over time, proper prioritization, and understanding that a happy state of mind will translate into a happy life with my daughter. We have 30 minutes a day she calls “my 30 minutes,” meaning no phone, no distractions, and she picks the activity. All I want for Mother’s Day: My daughter knows I love Hamsa symbols and once gave me a necklace with that charm. She knows I love the color red and has given me a red lipstick. I love anything under that thoughtful spectrum.

Former pro soccer player-turned fitness guru Rodrigo Garduño wants to transform your body—and your life As the world entered lockdowns and quarantines during the early days of the COVID-19 pandemic, many of us were left wondering how to go about our daily routines—including workouts—from the confinement of our homes. That’s when former professional soccer player Rodrigo Garduño created a global fitness movement. Every morning (Monday to Saturday) at 11 a.m., Garduño would go live on his Instagram account, offering an intense hour-long class from his home in Miami. Emblazoned on his athletic gear was “54D,” the name of the human transformation program he created in 2012 in his native Mexico City. The rigorous 9-week program combines high-intensity group training with custom nutrition, recovery therapy, and the inspiration to live one’s best life. The livestreams also featured Rodrigo “Rorris” De Ovando, the lead trainer at 54D’s U.S. outpost on Ponce de Leon in Coral Gables, which opened in 2019. Across his five 54D locations—3 in Mexico and one in Colombia—the brand has helped 20,000 members and counting, including former probaseball player Alex Rodriguez. “I thought, ‘If I can help people around the world to have [motivation], to stand up daily, even if they’re locked in their houses—to create energy, to move their body—we can help a lot of people,” says Garduño of his at-home videos. In the beginning, only 54D members tuned in to get their sweat on. Soon, more than 1,000 viewers joined in; numbers grew exponentially in the days that followed. 26

Professional athletes from soccer teams Real Madrid and Juventus and celebs like Adriana Lima joined Garduño and De Ovando’s sessions. “We never expected to have such an explosion,” says Garduño of the nearly 30,000-plus people who tuned in at the same time each morning for more than six months, breaking Instagram records of the most devices connected during a live workout. At the end of the day, each video got nearly 200,000 views. “I think the brand has everything a human being needs to improve their life,” says Garduño, 43. “We start from fitness, from feeling better to looking better, but at the same time, we focus on ‘How can we make the people ... believe in themselves?’” The brand’s philosophies are rooted in attitude, discipline, and commitment— three words Garduño takes seriously. His enthusiasm for empowering others is infectious and is key to 54D’s success. “The way I teach the classes is with a lot of passion, because that’s me,” he shares. “I cannot be without passion in everything I do because I really do believe in what I’m doing and take it seriously.” Last summer, Garduño launched his

app, 54D On, showcasing a sampling of the workouts offered at his physical locations, but tailored for people working out at home. It’s available in 75 countries, and members get access to a food plan, daily one-hour training videos, a global online community, and live guidance from a coach. Garduño also launched the initiative 54D Heroes in March to give away 5,400 54D On memberships to first responders. “It’s an amazing initiative because, for us, we need to help those that are helping us right now,” he says. “I know what my program is capable [of doing] in people’s lives, so if they do this, they’re going to feel more strength and more energy to confront what they’re dealing with every day in the hospitals.” Now, Garduño has plans to open a second 54D facility in the Miami Design District by end of the year and is in talks with additional South Florida locations. He also is working to open an outpost in New York City by 2022. “I think this is the beginning of an amazing journey of this brand in this amazing country,” says Garduño, who is married and raising two young daughters. “This was my dream in the past to come here with the brand because I always thought that 54D has everything to be in the best market in the world, so I’m thankful. I think we’re showing what’s needed to be a brand that competes in the highest level.”

The dirt on pesticides and the war of organic versus conventional By Ivey Leidy Photography by Kent Anderson Research has long shown that pesticide residue can contribute to health issues. These chemicals act as endocrine disruptors, meaning that when they enter the body they can be mistaken as hormones, mimicking and disrupting the endocrine system. The endocrine system is an intricate network of glands and organs that produce hormones that carry out the majority of our

28

bodily functions. The hormones act as messengers to our brains and the rest of our organs and evoke corresponding responses. The hypothalamus gland, for example, controls water balance, sleep, temperature, appetite, and blood pressure. The thyroid is responsible for our metabolism, while the pancreas takes care of digestion and produces insulin to regulate blood sugar. The endocrine system also includes our reproductive organs, as well as our pituitary, pineal, thymus, and adrenal glands. When faced with disruptors, the signals from our endocrine system can become mixed, affecting everything from metabolism to reproductive health. With chronic exposure, they may cause serious health issues. Pesticides collect over time and are stored in the colon. That one piece of conventional fruit is not the problem, but the buildup is. The best way to limit your exposure to pesticides is to choose organic. Almost 70 percent of produce in the U.S. contains pesticides. Luckily, the Environmental Working Group (EWG) releases two lists every year: the Dirty Dozen and the Clean 15. The Dirty Dozen covers the conventional produce that carries the most pesticide residue. No. 1 on the list is strawberries. Studies show that one strawberry can have residue from 20 different pesticides. The Clean 15 outlines the conventional produce that is least likely to contain pesticides.

The benefits of eating organic don’t end at reduced pesticide exposure. Organic produce has 20 percent more antioxidants than conventional and no GMOs (genetically modified organisms), making them easier to digest and their nutrients easier to absorb. Organic farming also produces less greenhouse gas emissions and better soil quality as it doesn’t result in pollution from run-off pesticides. Eating in season can also help you get the most out of your produce. Because it’s being picked at peak ripeness, in-season produce has better flavor. These items are less expensive, given their abundance. They’re also significantly more nutrient dense as they aren’t being transported for weeks. Remember: The longer a fruit or vegetable sits on a truck or shelf, the more nutrient loss. We, as humans, are designed to eat seasonally. In the fall and winter, fruits and vegetables rich in vitamin C grow to strengthen our immunity. In the spring and summer, moisture-packed fruits and vegetables grow to ensure we are hydrated. SPRING VEGETABLE SALAD THIS IN-SEASON, ORGANIC VEGETABLE SALAD MAXIMIZES NUTRIENTS AND ENHANCES HYDRATION INGREDIENTS 3 large handfuls of baby lettuces (such as, arugula or mixed greens) 1 large zucchini 2 radishes 1 bunch of asparagus, roughly chopped

1 tbsp. olive oil 2 tbsp. water 1/4 cup fresh mint Zest of 1/2 lemon 1/4 cup walnuts

LEMON VINAIGRETTE INGREDIENTS 2 tbsp. lemon juice (1/2 lemon) 1 tbsp. Dijon mustard

1 tsp. raw honey 1/2 shallot, thinly sliced and minced (optional) 1/4 cup olive oil Salt and pepper to taste

Whisk together all ingredients, adding in olive oil last and gradually to emulsify.

SHOPPING TIPS 1. Organic produce is labeled with a five-digit code beginning with nine. 2. Conventional produce is labeled with a four-digit code beginning with a three or four. 3. If the skin/husk is thick and tough like an avocado or a banana, it can be eaten conventionally, as the pesticide sprays are less likely to penetrate that thick skin.

In a lidded sauté pan, add the asparagus, olive oil, and water. Cook on medium for 5 minutes with lid on or until tender but still vibrant and green. Using a vegetable peeler, peel zucchini into ribbons. Using a mandolin or sharp knife, thinly slice the radishes. Arrange salad beginning with baby greens. Add cooked asparagus to the center. Arrange zucchini ribbons and radishes around the asparagus. Garnish with mint leaves, lemon zest. and walnuts. Drizzle with lemon vinaigrette.

In his song “People Up in Texas,” the late country music icon Waylon Jennings croons: “You don’t need no one to tell you when you cross that Texas line. The air starts smellin’ sweeter, and the water tastes like wine.” Jennings could very well have been describing Fredericksburg, tucked in the Texas Hill Country about an hour’s drive northwest of San Antonio. In the spring, roadsides come alive with wildflowers, resulting in colorful waves that beckon locals and visitors alike to pull over and frolic through brilliant bluebonnets and fiery Indian paintbrushes. These blossoms imbue the air with a distinct sweetness, but that’s not where the song’s similarities end. Dripping with Texas hospitality but entrenched in German heritage, the small town of Fredericksburg is full of big surprises. The area is dotted with wineries, restaurants, adorable inns, and a historic Main Street where chains are not allowed and antique stores thrive. Perfect for romantic getaways or vacays with friends, this under-theradar locale has it all. (visitfredericksburgtx.com) WILD ABOUT WILDFLOWERS For Texans, wildflower season is a rite of passage; locals will tell you it’s tradition to dress in your Sunday best and pose in front of the coveted bluebonnets. Depending on the weather, the flowers usually reach their peak by late March

and make a swift exit in May. To peep the ultimate floral kaleidoscope, head to Wildseed Farms (wildseedfarms.com) to wander through 200 acres bursting with bluebonnets, bright red poppies, and more. The farm blooms with various flowers from March through October and also has butterfly gardens, a café, and a store where you can buy seedlings. If you miss the wildflowers, peaches are the top draw from mid-May until August, when stands peddle bushels and orchards offer pick-your-own opportunities. IT’S ALWAYS WINE O’CLOCK Wine flows like water in Fredericksburg, with around 50 wineries and tasting rooms sprinkled along Highway 290. While the region isn’t as wellestablished as Napa or Oregon’s Willamette Valley, Fredericksburg winemakers are cutting their teeth on grapes that thrive in the dry, hot climate, such as Tempranillo, Sangiovese, Viognier, and Mourvèdre—and the possibilities are constantly evolving. “Every time we try to pin one down, we find three or four more [grapes] that do well here,” says Tyler Turbeville of family-owned Narrow Path Winery (narrowpathwinery.com). A seam of solid limestone runs through the middle of Narrow Path’s vineyard, so the vines struggle to break through, a stress Turbeville believes leads to something beautiful. “What happens, I think, is that you

With its stunning design—and nontrivial $60,000 price cut—Karma Automotive’s new GS-6 is HARD TO RESIST By Howard Walker Forget that this curvy, sinewy-bodied Karma is a plug-in hybrid. Or that there’s a fully electric version around the corner. Or that its dashboard can be made from timber salvaged from California wildfires. No, what will have your head rotating like the gal in The Exorcist is the car’s breathtaking shape. The most beautiful vehicle in the world? This is surely one of them. Maybe it’s all those rollercoaster swoops and sweeps over the giant 22-inch wheels. Or that raked-back windshield or ski-slope-like rear screen. Or the way the body looks like it’s been stretched like a dollop of Play-Doh. Remember, this is a car that’s almost as long as a BMW 7 Series but as low as a Porsche 911. Gaze at it in profile and it resembles a hip-high Italian supercar—with four doors and a trunk. But first, a little history lesson. Back in 2011, the LA-based Danish car-designer-turned-entrepreneur Henrik Fisker began building his 52

Fisker Karma plug-in hybrid. Before the company went belly-up in 2013, he’d made around 2,450 cars. Enter the Chinese Wanxiang Group, which snapped up the assets, kept the gorgeous design, and renamed the car the Karma Revero. The corporation started producing the modified version at a new factory in Moreno Valley, California, in 2016. Alas, a crazy-ambitious $130,000plus price tag, a punishing safety recall, and constant funding challenges meant the car never really gained traction—or sales. Fast-forward to 2021 and all has changed. After a $100 million cash infusion last summer, a solid business plan, and a ramp-up in dealers—we now have enthusiastic Karma retailers in Boca Raton, Fort Lauderdale, Miami Beach, and Naples—Karma is back. Arguably the biggest news is the smarter pricing. The newly launched Karma GS-6 plug-in hybrid has a starting sticker of $85,700.

That’s down nearly $61,000 from the previous $146,600 asking. And when the highly anticipated, all-electric, 230-mile-range GSe-6 arrives toward the end of the year, it’ll have a base price of $81,700. These totals are before any electric vehicle tax rebates from Uncle Sam, which can add up to $7,500, plus up to $1,000 off your electric bill. To talk technical, this 2021 GS-6 is classified as an extended-range electric vehicle, or EREV. It has two highoutput electric motors spinning the rear wheels, juiced by a 28-kWh battery packing an impressive 536 hp and 550 lb-ft of torque. Pedal to the metal, the GS-6 can whizz from standstill to 60 in 4.5 seconds, or 3.9 seconds for the uprated GS-6 Sport. As for going the distance, it has an EPA-rated, pure-electric range of around 60 miles, though Karma claims it’s more like 80 in real-world driving. While that might not sound like much, the GS-6 comes with a BMWsourced 1.5-liter turbo 3-cylinder gas motor under the hood. It’s the same one BMW used in its rakish i8 two-seater and Mini still has in its Countryman. When electric power is spent, the gas motor fires up and acts as a generator—it has no connection with the wheels—giving the Karma a total range of up to 360 miles before you need to top off the 10-gallon tank. Or simply plug into a standard Level 2 charger and you’ll have a full battery in four hours. A DC fast charger will deliver 94 percent in 34 minutes. For anyone who suffers from range anxiety—the fear of an electric car running out of juice in, say, stop-start I-95 traffic—this is a great solution. Yet the GS-6 drives just like a feisty pure-electric, with necksnapping off-the-line acceleration, thrilling mid-range punch for safe passing, and easy, relaxed cruising. And that BMW motor is so hushed, you’d never even know it’s there. Couple all this with a four-seat interior that’s pure luxury, with rich Bridge of Weir leather, carbon-fiber trim, lovely fit and finish, and plenty of standard equipment. As for driving one of the most beautiful cars around? Prior to creating such iconic brands as Donzi, Cigarette, and Magnum out of his gritty Thunderboat Row factory on 188th Street in North Miami, Aronow—the undisputed king of go-fast boats—founded Formula Marine in 1962. He sold the company two years later, but not before his groundbreaking 23-foot needle-nosed Formula 233 had dominated the Florida powerboat circuit, winning the 54

grueling Miami-Nassau and Miami-Bimini offshore races. Aronow lived and breathed high horsepower, so the mere sight of this new $2.8 million Formula 500 SSC would have had him salivating. That’s because hanging off the back of this sleek, stylish, XXL-sized bowrider is a quartet of 600-hp Mercury Verado V-12s. The 500 SSC has the distinction of being one of the first boats to not only be designed around these truly revolutionary outboards, but to offer them at all. These V-12s boast two-speed automatic transmission and a steerable gearcase—the en-

Also impressive is that the engine is made to run 200 hours between oil changes and routine servicing, as well as a staggering 1,000 hours (or five years, whichever comes first) before more in-depth maintenance is required. enowned chef and culinary explorer Anthony Bourdain once asked a simple question: “What nicer thing can you do for somebody than make them breakfast?” For Jennifer and Omer Horev, a healthy breakfast has become a way of life, a business venture, and an opportunity to entertain friends and family. “Breakfast for us is the most important meal of the day,” says Jennifer, who serves as chief brand officer of Pura Vida, the couple’s health-conscious cafés with locations across South Florida. “We sit down with no electronics and enjoy family time in our home.”

Omer and Jennifer worked together to organize the festivities, with Omer leading the kitchen and Jennifer working with Liz Ryan of Orange & Rose Events on the design. The meal began with passed hors d’oeuvres, including chia seed parfaits with granola (opposite page), and ended with croissants in flavors such as goat cheese, Nutella, and pistachio hazelnut.

Omer, Pura Vida’s chief executive officer, says that starting with healthy, casual food is at the center of everything—in his restaurants and his home. “It is most rewarding to get together with family and friends and start the day with a healthy meal,” he says. “That is very important to me.” Both Omer and Jennifer grew up in homes filled with food and entertaining. Born and raised in Israel, Omer recalls that, thanks to his mom and grandmother, cooking was everything. “We grew up in the beach town of Netanya near Tel Aviv,” says Omer. “For Friday night Shabbat, we had an open-door policy for neighbors, friends, and my grandparents. So food and hospitality are a natural for me.” Jennifer was born in Chicago (her grandparents owned a restaurant in Skokie) and raised mostly in Weston, Florida.

She learned about hospitality from her mother. “My mom taught me how to create comfortable spaces with a feminine touch and insisted I learn to put things back where they belong,” she says. But food and hospitality wasn’t the first career path that either Omer or Jennifer took. Instead, the Miami real estate market beckoned them. Good thing, too: The pair met when they were realtors working opposite ends of a transaction. Jennifer brought the buyer; Omer was representing the seller. “I believe Omer got the best deal of his life that day,” quips Jennifer. With the sale complete, Jennifer and Omer soon became a couple. But they’d had it with real estate and wanted a new adventure. So they pivoted, pursuing a healthy dining concept Omer had been conceptualizing. “I was looking for a great healthy breakfast place in Miami for myself and could not find one, so I thought about creating my own,” he says. “With the natural colors and vegetables that I loved in Israel, the idea of locally sourced, organic foods in a wellness hub concept was a no-brainer for me.” Omer started Pura Vida Restaurants—serving healthy breakfast options all day—in 2014; Jennifer joined the following year. The first location opened on Washington Avenue in South Beach, followed by outposts at the University of Miami in Coral Gables, Edgewater, the Miami Design District, MAY/JUNE 2021

Guests chose from a variety of libations, including Lulu’s Lemon mimosas, topped with blueberries and rosemary. The meal also featured a platter of soft-boiled eggs and salmon, as well as appetizers of hummus with pita.

West Avenue in South Beach, and most recently Rosemary Square in West Palm Beach (with new spots in Aventura and Fort Lauderdale coming soon). So when the couple recently invited a small group of friends to their waterfront home for a party, they decided to serve the most important meal of the day: breakfast. While Omer handled the bar, moved the furniture, selected the music, and took care of the dishes, Jen designed the decor, selected the flowers, and whipped up the eggs. Their home is airy and open, an indoor-outdoor masterpiece with whitewashed oak floors, lots of stone, plenty of natural light, and a backyard pool and patio area that overlooks the Intracoastal Waterway. “When we bought this house, our thoughts were about entertaining friends and family here,” says Jennifer. This includes regular visits from Omer’s two children, Emma, 9, and Adam, 7, from a previous marriage. Jennifer and Omer

Jennifer offered a choice of drinks: Lulu’s Lemon mimosas served in coupe glasses with fresh blueberries and a rosemary sprig; white wine; Champagne; green deluxe juice; and Flu Shots with ginger and lemon.

Many of the featured dishes are available at Pura Vida, which has locations in Miami and West Palm Beach, with new outposts in Fort Lauderdale and Aventura in the works.

The decor pulled the inside neutrals out with pops of color from Japanese blue tweedia, Italian ranunculus, dahlias, tulips, sweet peas, and blackberries. “I picked flowers from Anthology Floristry that speak to spring for the table’s centerpieces,” says designer Liz Ryan of Orange & Rose Events. “Breakfast should always feel bright and fresh.” On the tabletop, pops of green came from the linens by Freshly Set, with natural flatware from Pialisa, dinnerware from A Different Look, patterned green tumblers from Tavola Tabletop, and menu cards by Callie Buck. “To tie everything together, we pulled elements from the table linens onto the menu cards,” says Ryan. The menu of fresh, clean daybreak delights included avocado smash on toasted multigrain sourdough atop a wood board; smoked salmon, soft-boiled eggs, feta cheese, and tomatoes presented on a white ceramic platter; bagels and sliced sourdough in a black wire basket with spreads

of cream cheese and avocado smash; Jennifer’s herb salad, a blend of arugula, walnuts, dried cranberries, scallions, and cilantro with a honey lemon dressing; and an Israeli salad made of diced red onion, cherry tomatoes, Persian cucumbers, cilantro, and green pepper tossed in olive oil and lemon. What’s better than a breakfast party? A breakfast followed by desserts. Devoured by all, the sweet and savory offerings included goat cheese, Nutella, and pistachio hazelnut croissants from Pura Vida served on a threetiered gold stand, as well as a white cake with florals from Earth & Sugar displayed on a marble base. As the breakfast came to a close and Jennifer and Omer’s sated guests said their farewells, Scott Harris, a food entrepreneur and founder of Deliver Lean, summed the event up beautifully. “Omer and Jen are generous hosts who know how to take care of family and friends,” he says. “Real soulmates who work and share a life together, they are a very special couple.” « MAY/JUNE 2021

The CLOSET Your closet should be organized like your favorite boutique, so you can showcase and “shop” your clothing. The overall goal is to make the space both functional with organizing systems and stylish with design elements. Hang clothing on matching hangers and organize by type, then color. You’ll be able to see what you own so you can put together fabulous outfits.

following these basic decluttering steps can help even the most precocious packrat pare down. Step 1: Define it. Minimalism means intentionally living with only the things you need. As you try to discern which items in your home you truly need, ask yourself: • Is this item useful to me? • Is it the only one I own? • Does this item bring me joy, usefulness, or meaning? A “yes” means the item can stay. A “no” means it’s time to let it go. Step 2: Organize it. Once you decide which items you would like to keep, organize them in a way that works best for you. Step 3: Maintain it. Belock warns clients of seeing their newly decluttered spaces as opportunities to acquire more stuff. Once you’ve done the work of paring down, it’s time to maintain it. “Be cognizant of your purchases and how you would like to invest your time, energy, and money,” Belock advises. “Minimize the clutter to maximize your quality of life.”

Minimalism is about living with less—things, expenses, waste, stress. Sure, you can read Marie Kondo’s classic tome, The Life-Changing Magic of Tidying Up, to make your space look like something out of a Zen photo shoot. But Korinne Kubena Belock, founder and owner of Urban Simplicity, an organizing service based in Palm Beach and New York City (urbansimplicity. co), says the philosophy behind minimalism is even more valuable than the visual reward. For Belock, minimalism is also about finding more in life beyond material goods. “Adopting this lifestyle can help foster healthy relationships with the people who are most important to you and help you focus on experiences and relationships,” she says. “When you eliminate the clutter that surrounds you, you can focus on doing more with your time and life.” So how do you become a minimalist? Belock says the process looks different for everyone, but

The KITCHEN Every member of the family uses the pantry, which means it tends to get disorganized quickly. Pull everything out and eliminate any dishes that are chipped, mismatched, or no longer used. Highlight what you love. Maybe baking or entertaining is your passion. Figure out what’s important to you, group all related items together, and make space for them. When in doubt, look up. Utilize vertical space inside cabinets with stacking bins or tiered shelves.

The Slow Movement: The slow living concept is all about embracing a natural flow—and eschewing the waste and stress that accompanies “faster” lifestyles filled with reflexive multitasking, breakneck pacing, and competitive consumerism. First given a name in journalist Carl Honoré’s 2004 book, In Praise of Slow, the movement doesn’t ask us to chuck our overly speedy lives and start from scratch. Instead, it suggests that we take the time to be present in our daily activities, enriching our lives by savoring what matters most (thrills over things, health over hurry, planet over profit) and not trying to impress ourselves or others with what we can buy or achieve. t’s been said a thousand times that the human body is a well-oiled machine. We’ve heard it, we process it, and we move on with our lives, expecting the body to support us and function at its peak. We pop a vitamin, partake in the occasional downward dog, but generally, we’re so busy managing daily lives within vastly altered socially distanced schedules, we don’t realize that just as a car engine can overheat when the cooling system goes haywire, so do we. If only steam would pour from our hoods, it could be a simple fix. Instead, inflammation within our bodies is much more insidious, and damage can run deep–from rheumatoid arthritis and lupus to fibromyalgia and heart disease. Beyond genetic predisposition, preventing inflammation is largely within our control. To get to the bottom of the inflammation enigma, we asked local experts for their insights into preventing and addressing it and returning the body to the purring Lamborghini it’s meant to be.

Easy, says Moreno, ticking off anti-inflammatory foods faster than a machine gun round: nuts, seeds, Asian mushrooms, chickpeas, avocadoes, olives, tofu, edamame, anything pickled, yogurt, kefir, and small, wild fatty fish, including salmon, mackerel, anchovies, sardines, and herring. Another do: drink tea. “Like vegetables, tea is a plant, and you should drink

it daily for its antioxidants,” she says. As for red meat, eat grass-fed organic meat once a week as well as venison and bison, which Moreno calls “cleaner meats” for being less commercial and thus raised in healthier environments. She prefers chicken and “any non-breaded protein over a vegan protein patty with 17 ingredients.” Pro tip: dark meat has all the fat-soluble nutri-

ents. Above all, avoid processed meats, margarine, and artificial sweeteners. Moreno says bread isn’t bad; it’s the white, refined starches she finds objectionable. During what some call “the lost year” when COVID-19 first hit the U.S., gyms closed, and many were trying at-home fitness routines sans instructors. SUSAN B. FOX, DO Susan B Fox, DO, RPVI, FSVM, DABVLM, has been treating vein and vascular disease for the past 20 years and is a pioneer in her field. She was one of the first physicians in the United States and the first in Cleveland to perform endovenous laser ablation of varicose veins. Dr. Fox has partnered with various corporations on ongoing studies, most recently, a funded hair restoration study using microneedling and stem cell therapy to help regrow thinning hair. Now, a laser can perform 90 percent of the procedure flawlessly in about 30 seconds. This painless procedure takes only five minutes, which includes implantation of an intraocular lens (IOL). There are no shots, no stitches, no patches! The patient can resume normal activities the very next day, including driving, working, and exercising. The laser cataract procedure is significantly safer and provides far more superior vision than does the older, invasive techniques. North Miami Beach rarely appears on the foodie radar, but that’s recently changed thanks to Isaac Perlman, a noted private chef who has introduced fine-casual dining to the neighborhood with his brick-and-mortar debut, Perl by Chef IP. Combining Mediterranean, Asian, and local influences, the restaurant showcases an impressive, eclectic menu with a high design to match. All meals begin with grilled, fresh focaccia before moving on to flavor-rich apps like hamachi crudo, cured in Florida citrus, jalapeño-herb emulsion, and yuzu, and the PERL baby gem Caesar salad, delicately tossed in a wasabi-truffle dressing. Next, it’s a tug-of-war between crave-worthy entrees such as the Faroe Island salmon, coated in citrus ponzu and topped with blistered cherry tomatoes, and the red miso–marinated, kosher bone

As the world returns to a more familiar pace, the Food Network & Cooking Channel South Beach Wine & Food Festival (SOBEWFF) gears up for its twentieth annual edition, taking place May 20-23. The beloved five-day festival once again welcomes a roster of high-profile chefs, rising chefs, TV personalities, and noted sommeliers to lead tens of thousands of foodies and fans through 100-plus hosted dinners and events. A LOW-PROOF GARDEN MOJITO Ingredients (serves 1) 1 jasmine tea bag 1 oz. dry vermouth 3/4 oz. silver rum 1 oz. lime juice

honey syrup 3 oz. sparkling water 8 mint leaves for garnish 4 basil leaves for garnish

Steep the tea for 3 minutes in boiling water. Discard the tea bag and let cool to room temperature. Add all of the ingredients except the sparkling water, mint, and basil into a mixing tin with ice. Shake well and strain into a highball with fresh ice. Top with the sparkling water and garnish with mint and basil leaves.

SAVOR the State Discover FLORIDA’S homegrown craft distillers

By Mark Spivak If you want to visit a distillery, there’s no need to hop on a plane to Louisville and drive across the Bourbon Trail. Around 40 distillers currently belong to the Florida Craft Spirits Association, and they produce everything from rum and vodka made with local ingredients to aged expressions of whiskey. Here, we present a subjective list of the best. Florida Farm Distillers: Marti and Dick Waters craft their awardwinning Palm Ridge Reserve whiskey on a small cattle farm outside Umatilla. This bourbon-style spirit is handmade in small quantities, aged in charred-oak barrels, and bottled at 90 proof (“whiskey the way it’s supposed to be,” according to Dick). Despite the low production, Palm Ridge Reserve is available at select Florida retailers. (palmridgereserve.com) Manifest Distilling: Located in downtown Jacksonville’s Sports District, Manifest is a full-scale organic distillery producing regular and barreled gin, potato and Florida citrus vodka, rye whiskey, coffee liqueur, and fernet. The facility includes a bar and tasting room. Tours are offered, as well as a monthly Discovery Series that allows consumers to get hands-on experience in the blending and formulation of spirits. Kozuba & Sons Distillery: Zbigniew Kozuba began making cordials and single malts in the Polish village of Jablonka. In 2014, he relocated the business to St. Petersburg with his sons, Matthias and Jacob. The family still makes cordials (ratafia, triple sec, quince, and cranberry) along with vodka, straight bourbon, and high-wheat rye whiskeys. Visitors may observe the production of spirits in the copper stills brought from Poland. (kozubadistillery.com) Loggerhead Distillery: Named for Florida’s endangered sea turtle species, this Sanford distillery draws on local sugarcane, citrus, grains, and botanicals to create three varieties of moonshine, regular and sweet tea vodka, a key lime gin, bourbon, rum, and single-malt whiskey. Visitors are welcome every afternoon except Monday. (loggerheaddistillery.com) St. Augustine Distillery: Situated in a historic FPL ice plant originally built in 1907, St. Augustine Distillery is committed to community preservation as well as sustainability: They source Florida-grown agricultural products to make their vodka, gin, bourbon, and pot-distilled rum. Steel Tie Spirits Company: The Etheridge family has lived in West Palm Beach since the late 1800s and helped lay the tracks next to the distillery (hence the name). Steel Tie’s non-GMO, pesticide-free, and locally sourced spirits include vodka and three Black Coral rums, all made in a still hand-built by Ben Etheridge. (steeltiespirits.com) Tarpon Springs Distillery: Where else can you find ouzo but in the largest community of Greek Americans in the country? In addition to Papou’s Ouzo, the distillery produces Gramling Woods High Rye Moonshine, Anclote Very Small Batch Gin, and Claresso, an espresso-based spirit. (tarponspringsdistillery.net) Wicked Dolphin: Founded in 2012 in Cape Coral, a few miles from the sugarcane fields, Wicked Dolphin distills local ingredients in southern Florida’s largest copper pot still. Their Reserve rums (spiced, silver, and gold) are aged for a minimum of three years in barrels that once held Kentucky bourbon. Free distillery tours are offered by reservation. (wickeddolphinrum.com) Winter Park Distilling Company: Hometown natives Paul Twyford and Andrew Asher make everything from vodka and white corn whiskey to beer-barrel-aged rum and Florida’s first single-barrel bourbon. Tours may be reserved on the website, and aficionados can mash bourbon with the distiller and “adopt” their own five-gallon barrel, whose contents are bottled for them when ready.
