A couple of highlights in The Local section this month: in our Character profile, we talk to Markus Edegran, a local kiteboarder who competed at the 2024 Olympics in Paris this summer. Markus tells us he spent a lot of time at Jupiter Beach and Juno Beach training, so if you’ve ever admired those incredible kiters from the sand, you might have seen an Olympian out there on the water and not even known it. Get to know more about Markus’s journey to the Olympics in “Sailing to Victory,” beginning on page 34. We also take a look at the historic Sims House on Jupiter’s Center Street and chat with owner Ernie Fidanza about why he decided to turn the space into a quaint restaurant that really only locals know about (“A Dinner Date with History,” page 29).

Owners Mohamed Alkassar and Chef Niven Patel were kind enough to host me for dinner recently (thank you!), and I absolutely devoured everything—it was so delicious! The pair are partners in a few hot restaurants in Miami and decided to open NiMo up here (in the old Josco Garden space) earlier this year. Chef Niven’s dishes are so flavorful, fusing elements of Middle Eastern, Spanish, Greek, and Italian cuisine. Welcome to our September issue! I hope your summer was full of adventures as well as some relaxing downtime. I certainly enjoyed the slower summer days, but I am now ready for the season to be on its way!
Having lived in the Jupiter area for more than 15 years, I have come to meet so many amazing people and business leaders, many of whom go above and beyond to help the community. In this issue, our special promotional Leaders of Palm Beach County 2024 section highlights many of those wonderful people. This issue also welcomes the return of our Wedding & Party Planning advertising section, which will run twice a year (in September and April). Speaking of weddings… I am officially a mother-in-law! On June 29, our son Alex married Benita—a truly beautiful person inside and out. I am so proud to say my daughter-in-law is an OR nurse (previously a traveling ER nurse). I have always had such respect for our nurses, and some of the stories Benita has shared with us are truly heartwarming. I’d like to say a big thank you to all the nurses out there! Alex and Benita live only 3 miles from us, so we get to see them often and create family memories. They used to live in South Carolina and are so happy to be here in Florida now. We all agree we live in one of the best places in the country.
The planning of my son’s wedding was at times stressful, but in a good way of course. I mention this because I did most of it myself, with the help of some fabulous vendors, and I could not have accomplished my vision without all of them. I hope as time goes on, the Wedding & Party Planning section will grow and provide an arena for many local businesses to market their incredible talents and specialties. It literally takes a team of experts to pull together any type of event, and I am so grateful to everyone who held my hand during the wedding planning.

A Dinner Date withHISTORY

Ten years ago, few would have imagined that the house at 322 Center Street in Jupiter, run-down and so overgrown with weeds it was barely visible from the street, held a long-forgotten place in the town’s history. Jupiter resident Ernie Fidanza would drive by the house and wonder what the story was behind this sad property. One day, he decided to find out. The Mission-style home was built in 1924

down the owners and eventually got them to sell him the property, as well as the one next door.
He petitioned the town for a new ordinance that would allow for adaptive reuse of historical properties, a designation that allows old properties to be used for a different reason than originally intended. The ordinance not only allowed Fidanza to convert 322 Center Street into a restaurant but also paved the way for other historical homes to be adapted and preserved. A passionate advocate for the preservation of Jupiter’s history, Fidanza founded the Jupiter Historical Society in 2016 and was very committed to preserving the history of The Sims House.
After four years of careful renovations, The Sims House restaurant opened in 2021. Inside the original glass-paned front doors, those in the know can now experience the 100-year-old history of The Sims House, including its original floors and fireplace and copies of a 1912 land deed signed by President William Taft that was found in the attic during renovation.
The Sims House kitchen is helmed by Executive Chef Francisco Landin, formerly of Tabica Grill. Fidanza was able to recruit the chef and acquire the restaurant’s muchloved recipes after the popular
dining spot closed. The daily-changing menu includes entrées like locally sourced mahi with housemade mango salsa and churrasco skirt steak with chimichurri sauce. A glass of wine from the impressive wine list curated by sommelier Sophia Crawford can be enjoyed on the quaint, brick-lined outdoor patio.
Fidanza hopes that when people come to The Sims House, they not only enjoy a delicious dinner but also take home a new appreciation for the Jupiter community and its history. “I never could have gotten to where I’m at without community support,” he says. “For me, it’s about the fabric of our history and the memories that are made to last for a lifetime.”

ince 2017, local veterans from all branches of the military have gathered on July 4 to take a brave plunge about 4 miles offshore in Jupiter, coming face-to-face with sharks. The dive is part of an annual event hosted by the Jupiter-based Shark Addicts ecotourism company, in partnership with the Wounded Veterans Relief Fund. “We do this to give back to the veterans and celebrate America’s birthday,” says Shark Addicts cofounder Mickey Smith.
Participants include Purple Heart recipients, amputees, and vets who suffer from PTSD and traumatic brain injuries—even U.S Congressman and army veteran Brian Mast of Fort Pierce has taken the plunge. “It not only helps me with my shark fix, but it also gives me and the other veterans the chance to get back into the brotherhood,” says retired army sergeant Mike Cain, who was injured in Iraq and travels from Virginia for the annual dive. “Being able to spend time with other military veterans helps me mentally.”
As resilient as servicemen and women are, they still get the jitters before diving with sharks. “It is unnatural for humans to jump into shark-infested waters,” says Mike Durkee, executive director of the Wounded Veterans Relief Fund. “But once they are in, it is peaceful and amazing. The City of Port St. Lucie was recently ranked the fifth fastestgrowing city in America by the U.S. Census Bureau, and the population isn’t the only thing growing. The city recently scored a $1 million grant from the U.S. Department of Agriculture Forest Service’s Urban and Community Forestry Program to greenify the city with new trees.
Over the next four years, 700 native trees will be planted along transportation corridors, at key development sites, and on private property. “The grant focuses on areas of greatest need to expand the tree canopy and provide increased access to nature,” says Shereese Snagg, project coordinator for Urban Beautification for the City of Port St. Lucie.
The trees will not only add beauty and provide shade, but they will also help reduce carbon emissions, dampen urban noise, cool temperatures, and provide habitat for animals. Snagg says they will be planting a mix of flowering trees and bushes including native oaks, the species most requested by residents.
To water and help maintain the trees, five members of the Boys & Girls Clubs of St. Lucie County will serve as “urban forestry youth apprentices” every summer, learning about project management, procurement, tracking, tree species selection, planting, and tree growth along the way. —Paige Feigenbaum

the point of controlled burns in our parks and woodland areas? Read on to find out.

Like a phoenix, new life rises from the ashes following prescribed burns. These controlled fires are intentionally set and closely monitored by a county’s environmental resources department to prevent natural wildfires that could harm our environment and wildlife.
When an area is overgrown with vegetation, it is prone to wildfires, which can cause catastrophic destruction if ignited by lightning, a downed power line, or even a cigarette butt. As a preventative measure, counties conduct controlled burns, since charred and ashy environments are unlikely to reignite.
“Controlled burns remove accumulated dead vegetation, promoting the growth of new plants and rejuvenating habitats,” explains Ethan Brooks, natural resource management specialist at the St. Lucie County Environmental Resources Department. “They also play a crucial role in managing invasive species, controlling weeds, and reducing the risk of wildfires.”

County officials have certain sites on a set interval burn rotation, each burn authorized by the Florida Forest Service before it is executed. “We’re doing what Mother Nature used to do but in a more controlled manner,” says Harper Carroll, fire manager for Palm Beach County Environmental Resources Management. “Florida is actually the prescribed fire capital of the world, and California and Australia look to us as the model.”
Carroll says areas like pine flatwoods, savannas, scrub, marshes, and swamps are burned around every three years, while Brooks has various locations on a burn rotation of every one to 10 years, depending on habitat, and Martin County aims to perform burns at most locations every three years.
Here’s how it works: officials first conduct a test fire to make sure it behaves as anticipated. They then create a perimeter by burning the outskirts or use natural fire breaks such as waterways, marshland, dirt roads, and sandy areas. To ignite a burn, officials use diesel and gas torches, as well as swamp buggies with flame throwers and electric torches. When burning a
very large acreage, they take an aerial approach, dropping “dragon eggs” that resemble Ping-Pong balls from a helicopter.
Suppression crews are present with 300-gallon water tanks to hose down any sparks that may go awry. Prescribed burns are typically left to smolder and naturally fizzle out, but if there is concern that sparks might jump the line, mop-up crews will extinguish the fire with water and the forest service is called in to do a tractor plow. Officials take safety precautions to minimize smoke from impacting nearby schools, roadways, hospitals, and residential communities.
As for wildlife, animals are very smart and can sense the fire and know where to seek safe shelter until it burns out. For example, sandhill cranes build nests on a mound surrounded by water in wetlands, which acts as a fire break. Within 24 hours of the fire, they return to the area to forage for insects. After a couple of weeks and rainfalls, new growth begins, and other animals such as deer return for a feast. ❖
UPCOMING BURNS
Prescribed fires are dependent on factors such as temperature, wind direction and speed, humidity, dispersion index, and rainfall, so it is impossible to commit to a specific date. Carroll relies on forecasts from the National Weather Service the morning of a planned burn to decide whether the mission is a go or needs to be scrubbed. He says he hopes to burn a nearly 300-acre site in Cypress Creek north of Jupiter Farms Road before year’s end. In Martin County, burns are planned for Mapp Creek Preserve, Hawks Hammock Preserve, and Halpatiokee Park when conditions are appropriate. In St. Lucie County, Brooks says he hopes substantial rainfall by fall will allow for prescribed burns in preserves such as Indrio Savannahs, Walton Scrub, Bluefield, and Cypress Creek.

Head out to Jupiter or Juno Beach on any sunny day, and you’ll be greeted by a colorful array of sails stretched out across the blues skies along our coastline. If you’re lucky, somewhere among the sailing enthusiasts skimming across the ocean you’ll spot U.S. Olympian Markus Edegran. You’ll have to look quickly though: traveling at a pace of up to 50 miles per hour, he’s hard to keep up with.
In January, 30-year-old Edegran beat out a field of Americans to win the U.S. Olympic Trials in Miami. Then in April, he placed fourth at the Last Chance Regatta in France, qualifying him for a spot on the U.S. Olympic Sailing Team (men’s kiteboarding is categorized as one of the 10 sailing events). Formula Kite was added as an Olympic sport for the first time this year, making Edegran the first American ever to compete in the men’s category. (Californian Daniela Moroz was the kiteboarder on the women’s team.) In August, Edegran took to the Mediterranean, competing for the gold at the 2024 Paris Summer Olympics.

for Edegran, who began sailing on the Hudson River in New York when he was 8 years old as well as in South Florida, where his family had a vacation home at the time. “My dad grew up sailing, so I was put in summer camp on the water,” he recalls. He started competing when he was 11, sailing an Optimist. Commonly known as an Opti, the small, single-handed dinghy is one of the most popular boats for youth sailing competitions.
Throughout his youth, Edegran progressed to different levels of competition, sailing 420, FJ, and ILCA class boats. After graduating from high school in 2012, he spent two years on the intercollegiate sailing team at the United States Naval Academy in Maryland, where he competed with his older brother, Lukas, now a Navy pilot. Edegran transferred to St. Mary’s College of Maryland in 2014 and joined its sailing team, graduating in 2016 with a degree in economics and moving to South Florida full-time.
In 2015, his brother had introduced him to kiteboarding, and the two would board together from time to time. For Edegran, it was just another fun sport for a while. But as soon as he heard kiteboarding was going to be added to the 2024 Olympics, he set his sights on earning a spot on the U.S. team.
He began training with other kiteboarders, often hitting our local beaches but rotating to different locations every few weeks to experience various seas and weather conditions. On a typical day, he’d spend two or three hours on the water, a couple of hours in the gym, then watch videos of his performance to debrief and figure out what he needed to adjust. The hard work paid off: in 2020, he became the top U.S. kiteboarder, finishing sixth at the worldwide
Hydrofoil Pro Tour, and placed first in a couple of domestic tournaments in 2021 and 2022. Earning a spot at the 2024 Paris Olympics is the latest achievement for Edegran, who is currently ranked fourth in the world. “I’m proud to represent the country at this debut for kiteboarding as a sport,” he says. When we caught up with Edegran for this story back in May, he was still home in Florida preparing for Paris, hitting the local beaches with the many kiteboarders he’s gotten to know over the years. “You see the same people, who come whenever they can squeeze in some time,” he says of the local kiting community. “Everyone shares the same passion. For Stuart native Aiden Natalie, boating and fishing is a way of life—one that he lives proudly on the family boat he inherited from his dad

Aiden Natalie’s deep love of fishing and boating began at a very early age. As a youngster, the now 23-year-old Stuart native spent a great deal of time fishing locally and island-hopping with his family on their 41-foot Intrepid cabin model. However, it wasn’t until the family traded the boat for a 30-foot Cobia center console that a career path would emerge from his obsession.
While in high school, Natalie took great pride in maintaining the family vessel to the highest standard. From detailing and polishing to systems maintenance, he always kept her running and looking tip-top—enough so that his father entrusted his teenage son to take the boat on solo fishing outings with friends.
Natalie spent many a memorable day on the water with his father, Bill, as the two shared an intense interest in fishing. Sadly, his dad lost his battle with cancer a year ago. He left the family boat to his son, and Natalie continued his pursuit of boating and fishing, taking the knowledge he

Whether it’s working the deck with any number of local fishing teams, helping organize local fishing tournaments, working with local boating manufacturers, or simply fishing for fun with friends, Natalie is deeply entrenched in boating on many levels. Currently residing in Palm City, he is part of the team at Deep See Visuals, where he works as a filmmaker, editor, and media strategist devoted to promoting and marketing within the boating and fishing industry.

In his spare time, he can often be found offshore fishing on the faithful vessel that he once enjoyed with his father—the Cobia 296CC center console. The boat (a model that the company has since replaced with the 301CC) has been appropriately outfitted to suit Natalie’s requirements primarily
as an offshore fishing platform. Lightweight carbon fiber outriggers are mounted to a smartly styled fiberglass hard top, and a pair of 30-gallon live wells spanning across the transom perfectly serve the heavily live bait–dependent fishery enjoyed locally. For convenience while fishing with electric kite reels or powered bottom-fishing outfits, multiple 12-volt outlets are located around the entire interior beneath the gunwales. A suite of Garmin electronics, including matching multifunction display units, are flush-mounted at the helm. For power, this model features a maximum-rated 600-horsepower, provided by twin Yamaha F300 engines. The entire cockpit sole is outfitted with gray SeaDek trim for grip-sure footing. ❖

Tiki culture has captivated the imaginations of cocktail enthusiasts for decades. With their kitschy glassware and lavish garnishes, these tropical libations have been transporting us to a land of sunny escapades and palm-fringed beaches since the 1930s. What started as a fascination with Polynesian culture and exotic escapism has sparked a second wave of modern tiki cocktails. This recent resurgence honors the original flavors while incorporating contemporary techniques and artisanal ingredients, breathing new life into a nostalgic cocktail genre made famous so many years ago by such institutions as Don the Beachcomber and Trader Vic’s. Celebrate the indelible charm of tiki culture with these five recipes.

With its sweet and smoky notes, this boozy blend has all the creamy and aromatic components necessary to elevate any pool day
Matcha powder, toasted coconut, and kiwi slices for garnish
« To make the infused vodka, steep 3 teaspoons of loose-leaf Lapsang Souchong tea in 6 ounces of hot water for 3 minutes. Drain the tea and transfer the wet leaves to a glass container and fill with a 750-milliliter bottle of vodka. Allow the tea to steep in the spirit for 7 minutes. Drain and discard the tea leaves, decant into a clean bottle, and store in a cool, dry place.
« To make the matcha syrup, combine one part matcha tea and one part simple syrup. Shake to combine and store in the refrigerator for up to two weeks.
« Add all ingredients to a blender with ice. Blend for 10 seconds and pour into your favorite vessel or coconut shell. Sprinkle with matcha powder and garnish with toasted coconut and kiwi slices.

Originally served as a welcome drink at the Aviary Bar at the Hilton Hotel in Kuala Lumpur, Malaysia, the halfcentury-old Jungle Bird tiki drink brings together the unexpected punch of Campari, rum, and pineapple. This riff replaces the rum with a bolder bourbon that is then softened with exotic notes of passion fruit.
INGREDIENTS
1 ½ oz. Four Roses bourbon
1 ½ oz. fresh pineapple juice ¾ oz. Campari
1 oz. fresh lemon juice ¾ oz. passion fruit syrup (passion fruit purée and simple syrup) Pineapple leaves for garnish
To make the passion fruit syrup, combine two parts passion fruit purée and one part simple syrup. Shake to combine and store in the refrigerator for up to two weeks. Add all ingredients to a mixing tin, shake with ice, then fine-strain into a glass. Garnish with pineapple leaves.

Sliced grapefruit for garnish
Fill an extra-large ice cube tray with coconut water and freeze overnight. Add all other ingredients to a mixing glass and stir over ice. Strain into a rocks glass and add one large coconut water ice cube. Smoke your glass and garnish with a slice of grapefruit.

Tropical juices, spicy shrub, ashen notes of mezcal, and the assertive taste of Oaxacan rum come together seamlessly in this refreshing concoction
RED LAYER INGREDIENTS
1 ½ oz. Tso'ok Oaxacan rum
¼ oz. simple syrup
1 oz. raspberry juice
½ oz. fresh lime juice
ORANGE LAYER INGREDIENTS
½ oz. Cuentacuentos mezcal
½ oz. passion fruit liqueur
¾ oz. mango juice
1 dash habanero shrub
FIRE SHOW INGREDIENTS
½ oz. lemon extract
Dry lime shell
Sugar cube
Ground cinnamon powder
Combine red layer ingredients in a shaker with ice. Shake and strain into a tall glass with pebbled ice. Repeat with the orange layer, topping the glass with extra pebbled ice and garnishing with a lime shell and a cherry.
For the fire show, add a sugar cube soaked in ½ oz. lemon extract to dry citrus shell (pulp removed) and light with a chef’s torch. Sprinkle ground cinnamon powder over the drink for lively sparks.

Lime zest, sliced dragon fruit, and edible flowers for garnish
To make the green tea syrup, combine one part green tea and one part simple syrup. Shake to combine and store in the refrigerator for up to two weeks. Combine all ingredients in a container and stir to mix. Decant over ice into a tiki vessel or punch bowl of your choice. Serve with straws and garnish with freshly grated lime zest, slices of dragon fruit, and edible flowers.

Ron and Gail Fink grew up as friends in a small town in New Jersey. Stepping into NiMo is like going on a visual and culinary journey through the Mediterranean coast. Calming hues of orange, green, and yellow combine with natural light and artwork, while the menu is filled with unique dishes meant to be shared tapas-style. “Order lots of food and experience it together—that’s how we want guests to enjoy NiMo,” says Chef Niven Patel.
NiMo—which opened in February in the old Josco Garden space in Tequesta and also offers alfresco dining in its gorgeous courtyard—is the latest venture from FEAL Hospitality, the company behind Miami’s Ghee Indian Kitchen and Coral Gables hot spots Orno and Erba. The name comes from a mixture of the coowners’ names, Chef Niven Patel and Mohamed “Mo”

Alkassar, and the blending of their talents and cultures is evident on the menu, which is bursting with Middle Eastern, Greek, Spanish, and Italian flavors. Even the “classic” dishes on the menu pack a special punch. “When you read our menu, it may sound very familiar,” says Patel. “But when you eat, there are a lot of flavor bombs.”
The chef says he leaned into his Syrian-born partner’s background. Alkassar spent part of his childhood in Madrid and ran restaurants in Dubai, Qatar, and Saudi Arabia before moving to the United States. “Mo told me about his favorite dishes from childhood, and I recreated them how I saw it through his eyes,” Patel says. “He sent me grainy footage of lamb chops he grew up eating in Spain, and my butcher and I dissected it and tried different cuts of lamb
and thicknesses. I created a rub that’s a little smoky and salty and blends spices including cumin, coriander, paprika, and dry mustard.”
Many of the ingredients used in NiMo’s open-concept kitchen are grown on Patel’s residential farm in Homestead, and he and Alkassar take great pride in presentation—so prepare to be wowed. “You first eat and drink with your eyes,” says Patel. “We put emphasis on our presentation of everything.” That includes decadent desserts like the 12-component Sundae Circus and the Instaworthy signature sangria and NiMorita (their take on a margarita). nimoeats.com ❖
