Sparking Hope for Digestive Disease Research

It’s estimated that more than half a million Americans have Crohn’s disease, a type of inflammatory bowel disease that causes inflammation of the digestive tract. Symptoms can be difficult to live with, including abdominal pain, severe diarrhea, fatigue, weight loss and malnutrition.

“Crohn’s disease has been a part of my life for decades,” says Florida resident Ellen Shulman. “I know firsthand the uncertainty, pain and debilitating effects that accompany it, as well as the emotional impact on those who love you.”

Her own experience with the illness is what motivated her and her husband, Steven Jay Shulman, to make a $5 million gift to Cleveland Clinic Florida in 2022. Their donation is funding research and education in the Digestive Disease Center at Weston Hospital, led by Steven Wexner, MD, PhD (Hon), FACS.

In recognition of their generous contribution, the Center was named the Ellen Leifer Shulman and Steven Shulman Digestive Disease Center.

“For both patients and their families, Ellen and I want to spark hope through action that will yield important results,” says Mr. Shulman, an entrepreneur and veteran of the managed care industry. “With this donation and the world class leadership of Dr. Wexner, we believe that the Digestive Disease Center can achieve new breakthroughs in research and patient care. There will be increased hope both for digestive disease patients and those who love them, thanks to the Center’s work.”

Dr. Wexner (pictured above with the Shulmans) has been helping build the digestive disease programs at Cleveland Clinic Florida for more than 35 years. “Our many achievements have been due to the efforts of our superlative team,” he says. “Since our inception in 1988, we have made numerous advances that have become global standards. Through our teaching, we have disseminated our innovations to our residents and fellows who have become renowned leaders and to colleagues in virtually every country.”

Crohn’s disease has no known cause, although certain factors such as smoking, having an autoimmune disease or a genetic predisposition may increase the risk of developing the condition. And while Crohn’s disease has no cure, treatments and lifestyle changes can keep the disease in remission and prevent complications.

Breaking bread

Nothing brings people together quite like food. In fact, did you know that the word “companion” comes from the Latin “com” (meaning “with”) and “panis” (meaning “bread”)? In other words, having a companion, or companionship, loosely refers to being “with bread,” relating to humans’ long history of dining together with family and friends.

Now that I’ve indulged my inner word nerd... Welcome to our annual Foodie issue! Every year, I look forward to working with the amazing chefs in our area on this issue, learning what they’re passionate about and seeing the incredible dishes they come up with for our features. This year, four talented chefs—Matthew Byrne of Kitchen and Kitchen North, Paul Niedermann of The Jupiter Grill, Jason Stocks of District Table & Bar and CoLab Kitchen, and Kyle Greene of Kyle G’s and Oak & Ember (and more)—headed to their kitchens to whip up some delicious creations for our cover feature, “Chef’s Kiss.” We asked the chefs: If you could eat just one last meal, what would it be? See what they came back with beginning on page 56.

We also caught up with our newest local reality TV star, Ryan O’Sullivan. Chef Ryan recently competed on season 22 of Hell’s Kitchen—and won! While the world now knows him as a television personality, you may know him from The Country Club at Mirasol, where he leads the kitchen as chef de cuisine. Get to know more about O’Sullivan and find out what he really thinks of Gordon Ramsay in “One Helluva Ride!” on page 38.

April is the most delicious time of year here at Jupiter Magazine, when we release our annual food-themed issue dedicated to local restaurants and chefs. Corey Brooks is sincere when he says, “Our school mission is for success to be unavoidable.” And while the Dwyer High School principal has seen successful strides in the more than 2,000 students he leads each year, there was one area he believed needed massive improvement: the school bus for the kids within Dwyer’s Exceptional Student Education program.

Shared among other county schools, the old bus lacked air conditioning and had outdated mechanics (including the brakes), not to mention seats that were peeling and falling apart. In addition, there was no mechanical chairlift to help students with physical limitations board or disembark, requiring these youths to be lifted out of their wheelchairs and carried to their seats, which can feel a bit shameful to some, says Brooks.

But all of that will change this summer, thanks to local philanthropist Rob Thomson. The owner of Waterfront Properties and Club Communities donated and raised funds to purchase a brand-new vehicle for Dwyer’s ESE students, complete with air conditioning and a chairlift. A supporter of various community organizations (including Big Dog Ranch Rescue), Thomson also donated and raised funds for Jupiter Community High School’s new ESE bus back in 2020. He says it was upsetting to see that “the most challenged kids were getting the worst transportation,” and he decided to do something about it.

It’s generosity like this that will help make success unavoidable for so many kids. —Nila Do Simon

BRITISH-BORN GOLFER LUKE DONALD RETURNS HOME TO JUPITER AFTER LEADING EUROPE TO VICTORY AS TEAM CAPTAIN AT THE RYDER CUP

Professional golfer Luke Donald returned from Italy last October with the Ryder Cup trophy and a newly acquired taste for the Negroni. Captain of the 2023 European Ryder Cup team, he is thrilled not only to bring home the championship but also to have his new favorite Italian drink on the menu at 1000 North, where he is an investor.

Donald has a storied golf career, including being ranked number one in the world for 56 weeks in 2011-2012. But captaining the European Ryder Cup team to victory was the proudest moment of his career. “It just seems to be in our DNA, especially for the Europeans, that the Ryder Cup means a lot,” says the 46-year-old Brit. “It has great history and a great rivalry with the U.S.” He has already been named team captain for the 2025 Ryder Cup, becoming Europe’s first repeat captain since 1995. The golf tournament will be back on U.S. soil in 2025, making a repeat win for Europe more challenging. “You have the crowd against you cheering for the U.S., so winning is more difficult,” says Donald. “Over the next year, I’ll be figuring out how to do that.”

Local students will rock the runway during Loggerhead’s Earth Day celebration in outfits they created from recycled materials

The business of fast fashion has contributed to a global epidemic of textile waste. Besides eventually ending up in landfills, the mass production of clothing pollutes air quality, and whenever we do a load of wash, chemicals seep into our waterways.

For the past 12 years, local students have been learning how sustainable fashion can help alleviate the problem. Through Catwalk, a program run by creative reuse center the Resource Depot, middle and high school students are encouraged to use upcycled materials to design an outfit, a sort of green junior version of Project Runway. They enroll in workshops at Resource Depot, where they have access to instruction, sewing machines, tools, and materials.

This year, Catwalk has partnered with Loggerhead Marinelife Center, and students will show off their creations at a fashion show during Loggerhead’s Earth Day celebration April 20. “Since 2013, Resource Depot has attended sustainability workshops at our junior marine biologists summer camp,” says Hannah Campbell, VP of education at Loggerhead. “That’s where the relationship grew, and I’m so glad it has bloomed into a full collaboration in 2024.”

This year’s designs will tie into marine conservation. “I am encouraging the students to participate in Loggerhead’s beach cleanups,” says Odum. “They may want to use some of the reclaimed items from the beach in their designs.”

Following Catwalk, the pieces will be displayed at Resource Depot’s GalleRE May 1 to June 8. Select outfits will then go to Loggerhead for their monthlong World Ocean Day celebration in June.

In Hobe Sound, The Pine School runs

its own similar program to teach kids about the importance of green fashion. At its annual Recycled Runway Fashion Show, students in grades K through 12 use recycled materials to design accessories, tops, bottoms, dresses, and more. “It is our goal to prepare students to navigate a complex and changing world,” says Emily Faehnle, director of fine arts at The Pine School. “Teaching students about the fashion industry, fast fashion’s environmental effects, and sustainable fashion is just a small part of that curriculum. Every year, the show is the culminating event in a series of Earth Week activities. We want to teach kids the importance of taking care of Earth and our environment.”

This year’s runway show at The Pine School takes place April 26. ❖

One Helluva Ride!

LOCAL CHEF RYAN O’SULLIVAN COOKED HIS WAY TO FAME ON TV, EMERGING VICTORIOUS IN JANUARY AS THE WINNER OF HELL’S KITCHEN

In October 2020, Ryan O’Sullivan received a message on Instagram: I love your page. You’ve got pretty food, blue eyes, and an Irish flag on your profile. It wasn’t from a secret admirer or a bot—it was from a Los Angeles–based

agent, who was casting season 22 of the Fox television competition show Hell’s Kitchen

When he learned he was being offered a spot on the popular show starring Gordon Ramsay, O’Sullivan walked to his favorite local pub, Paddy Mac’s in Palm Beach Gardens. “Give me two Guinness and a whiskey,” he told the bartender in his charming Irish accent.

Soon he was on a flight to Hollywood to begin taping the show, where he would compete against 17 other chef contestants to win Chef Ramsay’s approval. He recalls preparing his first dish for Ramsay. He had only one thing on his mind: “Just cook a good dish and don’t go home first.”

He made a veal tenderloin with heirloom carrot puree, baby turnips, and rosemary jus—and it was more than good. In fact, Ramsay called it “one of the best dishes I’ve ever had on Hell’s Kitchen.” Aware that O’Sullivan had been watching the show with his father since he was a kid, Ramsay added: “I wish your dad were here to taste it. It’s delicious.” O’Sullivan cooked his way to the final round and ultimately was named the winner of season 22.

Growing up in Cork, Ireland, O’Sullivan has always loved the art of cooking, preferring cooking shows over Nickelodeon. “My father is a chef, and his grandfather was a chef,” says 30-year-old O’Sullivan, who now resides in Palm Beach Gardens. “We used to hunt and go fishing a lot. We’d take what we caught home, and my dad would show me how to clean and prepare it.”

After graduating from Cork Institute of Technology in 2012 with a culinary arts degree, he enjoyed a three-month holiday in California before returning to Ireland to focus on his professional career. He joined The River Lee hotel in Cork as a junior chef and worked his way up the ranks in the kitchen.

In 2017, a U.S. recruiter contacted him about opportunities in Florida, and he accepted a line cook job at Admiral’s Cove in Jupiter. Recalls O’Sullivan of his decision to move stateside: “[The recruiter] showed me photos of the clubhouse and I was like, hold on—you can drive your boat up to the back of your house from the ocean?” He was sold. The following season, he began working at The Country Club at Mirasol in Palm Beach Gardens during season and spent the summers working in Martha’s Vineyard. Then he received that fateful Instagram message.

Chef Ryan says his experience on Hell’s Kitchen taught him a lifelong lesson: “Don’t drop your standards for anybody, no matter what. If you let people serve your food wrong, it’s taking away from you.” He implements those standards today as Chef de Cuisine at Solstice, Mirasol’s elegant fine dining restaurant, while waiting to see what’s next. Most memorable show moment: “Chef Ramsay’s reaction to my first dish. He was blown away by it, and I could tell it was a legit reaction.”

Biggest mistake: “In the ‘black jacket’ round, I ended up choosing the wrong ingredients for a dish. I told Chef Ramsay, ‘I would much rather smash this off the wall than give it to you.’”

Fiercest competitor: “Johnny [Benvenuti]. We formed such a strong friendship. I would have been just as happy to see him win.”

On Gordon Ramsay: “He’s everything you want in a chef—driven, passionate... He wants to teach, but he also wants to learn. And he’s a really, really nice guy.”

Favorite spot to dine locally: “Home. My wife, Jennifer, is a fantastic cook!”

SUNFEST 2024 IS RIGHT AROUND THE CORNER! THE FESTIVAL’S NEW EXECUTIVE DIRECTOR, DIANNA CRAVEN, GIVES THE LOWDOWN ON WHAT TO EXPECT.

Dianna Craven has been attending Palm Beach County’s annual music festival since she was in high school. “I was born and raised here, my mother was born here, and SunFest and the community are dear to my heart,” she says. As SunFest celebrates its fortieth anniversary this year, Craven finds herself at the helm, stepping into the role of executive director last July when former director Paul Jamieson retired.

The news shouldn’t come as a surprise to anyone who knows Craven’s history—the 54-year-old has been on staff with the music festival since 1996. Over nearly three decades, her responsibilities have included sponsorship management, program creation, hospitality, ticketing, and marketing. “SunFest started for economic impact and to revitalize downtown West Palm Beach,” she says. “It’s truly remarkable how it has lasted over the years and grown to what it is today.”

Prior to joining SunFest, Craven worked as director of marketing and public relations at Ballet Florida and in the community events division in the West Palm Beach mayor’s office, where she was the city’s liaison with SunFest. Joining the SunFest team allowed her to use her event management skills to support both a beloved event and the community it serves. “The most exciting part of working at SunFest is bringing people together to help achieve a common goal,” she says.

We caught up with Craven ahead of SunFest 2024 to find out what’s in store and learn a little bit more about her personal musical tastes.

Who is your favorite artist who has performed at SunFest? Lenny Kravitz in 2000—he’s a phenomenal performer and

musician. Right before the show started, he pulled up in a limo wearing this flowing coat and just ran right up on stage.

Who has taken you by surprise?

Lukas Nelson & Promise of the Real in 2018.

Lukas is Willie Nelson’s son, and he has a raspy tone like his dad. I immediately recognized it and stopped what I was doing to listen. I never would have come across him had he not been at SunFest, and now I’m a fan.

What kind of music do you listen to?

My favorite band is R.E.M. I love ’80s alternative rock. I’m also more prone to country now. I view it as the new pop, a genre that, as a parent, everyone can enjoy. And I think Lizzo is phenomenal! She performed at SunFest before hitting it big.

What are some of SunFest’s biggest challenges?

We’ve had to deal with inflation and the rising cost of talent. As a nonprofit community festival, there’s only so much funding available to keep the event affordable for the fans. Another challenge we face is the heat. We have an on-site field hospital just outside the gate to treat attendees who are dehydrated.

What’s new this year?

We’re adding our Community Stage, which will showcase the talent Florida has to offer. It’ll have school groups, South Florida bands, vocal ensembles, dance troupes, and more. We’re also bringing back our Creative Art Village for artists to showcase their work and an immersive art experience for fans.

Who are you most looking forward to seeing on stage this year?

I’m excited about the all-female group The Aces and country up-and-comer Hailey Whitters. ❖

A MEAL AND STAY AT THE INN AT LITTLE WASHINGTON CONSTITUTE A RITE OF PASSAGE FOR FOODIES

Ranking travel experiences can be a challenge, especially when privileged with a job seeking out the world’s best. But after a recent stay at The Inn at Little Washington (a 23-key Relais & Châteaux property with an eponymous restaurant), I can confidently say that it represents the pinnacle of food travel in America.

In 1978, Chef Patrick O’Connell opened The Inn at Little Washington in Washington, Virginia (current population: 83). Since then, O’Connell has developed an entire campus of restored historic buildings, including a

main inn, a restaurant decorated with three Michelin stars, an 1850s Victorian house, a 1740s cottage, and Patty O’s Café & Bakery. Three themes prevail throughout: food, theatrics, and perfection, a trifecta most palpable over a languid dinner at The Inn’s restaurant, where you’re likely to interact with “the Pope of American Cuisine” himself, who won the James Beard Foundation’s lifetime achievement award in 2019.

set designer Joyce Evans, who also imagined The Inn’s guest rooms and suites. Then (by advance notice), enter Chef O’Connell’s showpiece gilded kitchen, aka his “Cathedral.” Chanting altar boys will escort you to a baronial fireplace for a fireside chat with the “Pope” over truffle-heavy popcorn, caviar-laced bites, and fine wine.

Next, it’s time for the main attraction. Opt for a table under moonlight in the conservatory, nestled among a circus of big-top umbrellas and towering potted plants. Choose wine pairings alongside either The Gastronaut’s Menu (nonvegetarian) or The Good Earth Menu (vegetarian). Regardless of which route you take, you’ll embark upon a multicourse meal likely to go down as the best of your life.

There are six official courses, but a surfeit of amuse-bouche, bread service, and post-dessert treats renders it more like 10. Each ingredient-driven dish is thoughtfully and beautifully composed, mingling flavors familiar and new, demonstrating a mastery in classic and modern cooking techniques. Despite all this Michelin-worthy excess, O’Connell maintains a delightfully unstuffy ambience at his restaurant, where guests can choose to dress to the nines or not; the official dress code is “anything but wet bikinis.”

If you’re visiting Washington, D.C., it’s possible to visit The Inn for dinner only— it is only 75 minutes away, after all—but the property merits a two-night getaway. The rich design of the rooms and cottages channels Americanameets-Victorian floral fairy tale, while decadent breakfasts, picnic lunches, and afternoon tea presentations are nothing short of epic. A second night grants

ample time for dinner at Patty O’s, where the chef showcases his definition of casual comfort food (think: a Champagne-brined ham sandwich with shaved Comté cheese and whole-grain mustard on a sweet onion roll) and spins some of his greatest hits (hello, whole-roasted quail with mushroom-apple stuffing and braised fig). Plus, the extra days allow for more opportunities to work off some calories in the form of exploring the mountainous surrounds and hiking the trails of nearby Shenandoah National Park.

In short, The Inn at Little Washington is a small-town epicurean utopia, documented as my superlative dining travel experience in the lower 48. Steven Fondu spent his childhood in New York, where his father owned restaurants. Working with his dad in kitchens as a youth, he grew to love the industry, and as soon as he was old enough, he began taking on jobs as a bartender.

Like so many others, Fondu decided to move to Florida during the pandemic. “I knew it was the right time to leave the city,” he says. “My parents bought a place here several years ago, and my grandmother has been a

local in the West Palm area for the last 35 years.”

He settled in Jupiter, thriving at Pushkar Marathe’s then-new hit restaurant Stage, where he worked as head bartender and assistant general manager. After a couple of years, however, he felt it was time to branch out on his own—and he found that opportunity when someone purchased the building that used to house Crosby Kitchen & Bar and suggested Fondu open a new restaurant at the site. “Frank Seminara has helped make my dream come true,” says Fondu, referring to the former Major League Baseball player who bought the building in August. The two had met at Stage and became fast friends. Fondu even named the restaurant after Seminara as

a nod of appreciation. “Ara is the last three letters of his name,” notes Fondu.

To lead the kitchen, Fondu tapped into the culinary genius of Kayla Casale, now Ara’s executive chef. Casale hails from renowned restaurants like The French Laundry in Napa Valley and Wolfgang Puck and Eiffel Tower in Las Vegas. The cleverly crafted menu at Ara is inspired by the southern Mediterranean and includes a Spanish carabineros prawn linguine and a “not so classic” beef carpaccio, which features a thinly sliced fillet of beef draped over a salad of watercress and arugula on a bed of goat cheese. “We encourage each guest to embrace their own personal eating style,” says Casale. “Let’s take a journey together around the Mediterranean Sea!”

The dining experience at Ara is elevated by the ambience—a relaxing aesthetic of deluxe gold and pewter accents combined with fresh, sophisticated elements of nature created by Anna Woodman Interior Design. “Designing a space that combines elements of both elegant royalty and the natural world has been an exciting challenge,” says Woodman.

Hudson’s on the River is a popular meeting spot for Stuartarea residents, and now it has extended its great vibes, cuisine, and cocktails with the addition of an outdoor tiki bar—Harlow’s Hideout.

Named for the daughter of owners Michael and Leanne Matakaetis, the tiki bar opened in December, offering scrumptious cocktails, live music, and supreme waterfront views. Snuggled at the base of the southeastern corner of the Roosevelt Bridge, it fits perfectly just behind the Hudson’s on the River restaurant.

Originally from Lawton, Oklahoma, Chef Vincent Trupia moved to South Florida over 20 years ago. Having worked his way up the kitchen ladder at Jonathan’s Landing, he found his calling in the kitchen and enrolled himself in Florida Culinary Institute in 2003. Since joining Guanabanas in 2008, he has been leading the culinary team as well as helping to develop the menu for Guanabanas’ sister restaurant TideHouse that opened in Stuart in 2019. Chef Vinny and his team of chefs work tirelessly to maintain quality under the pressure of the volume that Guanabanas experiences. “It’s all about the freshness and quality, that’s the key to our success,” he says.

After entering the industry at 17 years old, Chef Kevin has worked in a variety of country clubs and restaurants throughout the Treasure Coast for the past 20 years. He joined the team at TideHouse in 2019 where he showcases his passion for food and his desire to share his passion with everyone.
